the River Valley

This year, like most, has rushed along at a rapid pace. It hardly seems like we’ve enjoyed spring or summer and then, wham, it’s already fall. Like many of you, I’ve lost track of time. I’m ashamed to say I still have my spring wreath hanging on my front door. (Something I hope to have remedied after this issue goes to print.)

Besides being heralded as the midpoint of the fall season, October is recognized as Cancer Awareness month. For many years, it was just a note on my calendar... until our family began our own journey down its ugly path. We lost my grandfather Archie to lung cancer in 1987 and my grandmother Edna to colon cancer in 2008. Prior to that, we lost our dear Cajun cousin Betty after nearly a decade-long battle with ovarian cancer.

Almost everyone I know has experienced the trials of a loved one dealing with cancer.

The stories are all very personal, some similar, some varied. Each case and its subsequent treatment can be as different as the individual it affects.

Cancer is a teacher. It can throw us a curve ball. It shows us that we are not in charge of our destiny but it teaches us a great many things. It can sneak up on us or rear its ugly head in full vengeance. It can be frustrating or it can encourage us to develop patience.

And almost always, it can show us the beautiful spirit of those who touch our lives.

At times, the support of family and friends can be overwhelming. One can anticipate a certain amount of caring from close family members but when individuals whose paths you’ve crossed reach out unexpectedly with kind deeds and thoughts we’re often at a loss for words.

Recently I was sitting in a fast-food restaurant reflecting upon the chemo treatment I had received earlier that morning when I heard a sweet little voice say, “I really like your earrings.”

I realized this little girl was talking to me.

When I began my cancer treatments in late July, I cut my hair short, up over the ears, not knowing whether or not I’d lose my hair. It’s often recommended to reduce the stress of hair loss due to some types of chemo. While I have not lost my hair, I’ve enjoyed the shorter hairstyle which allows me to wear larger earrings. I’ve taken a fancy to my three favorite pairs, silver, turquoise and pearl crafted by local artisan Janelle Collins Lang. It was the turquoise and silver I’d worn that day that caught the eye of this precious young girl.

“And I love your black polka dot dress,” I replied. She grinned and skipped on by.

Mountains, situated on Lake Greeson’s shore. ATVs, mountain bikes, dirt bikes and hikers can utilize the nearby 31-mile Bear Creek Motorcycle Trail.

Poison Springs Battleground State Park, situated 10 miles west of Camden, is one of Arkansas’s three state historic parks that commemorate the “Red River Campaign” of the Civil War (Spring 1864.)

Outdoor interpretive exhibits and picnic sites mark the area where Confederate troops captured a supply train and scattered Union Forces.

Travel east and you’ll experience the beauty and natural sounds of the headwater swamp of Louisiana Purchase State Park which stands at the junction of Lee, Monroe and Phillips counties. A granite monument marks the initial point of the first surveyor mark in the monumental task of surveying the entire Louisiana Territory, the vast territory including the present Arkansas and 12 other states, an area stretching from the Gulf of Mexico to Canada.

Arkansas has a history of strong capable women featured in the national press.

U.S. Secretary of State Hillary Clinton, Wal-Mart heiress Alice Walton and poet Maya Angelou are among many contemporary Arkansas newsmakers, as was fictional Yell County native Mattie Ross of True Grit fame a few years ago. But for real life grit, a proper group of Presbyterian Church ladies from Dardanelle captured the nation’s attention one hundred years ago.

In 1912, the Ladies Missionary Society of the First Presbyterian Church of Dardanelle made national headlines for “picking cotton” as a way to raise money to build a new church, according to a pamphlet on the church compiled by member Betsy Snyder Harris.

What made this event nationally newsworthy was that many of these “money making ladies” were from “the best families” and had never done anything more strenuous than embroidery and flower arranging.

This labor of love, sweat and tears began after the congregation decided it needed a more spacious and centrally-located church. The new building would replace the church it built in 1872 after their 1856 church, the first in Dardanelle, was destroyed

by Federal troops during the

War Between the States. Decades later, the U.S Government gave the congregation a few hundred dollars in reparations for the original church and with “bulldog determination and the help of the Lord.” the ladies were each given a quarter dollar of reparation money to invest “in ways to make it multiply” as it says in the Bible.

After the ladies exhausted traditional fund raising activities like bake sales, sewing aprons and selling manufacturer’s samples, they took the Ola train to Clarksville to pick peaches, but they were still short on funds. Then a prominent farmer and member of the congregation jokingly offered them the backbreaking job of picking cotton as new way to make money for their building fund. >>

Fortunately, their efforts caught the sympathetic eye of New York philanthropist, Ferdinand T. Hopkins, who sent a substantial donation to fund the new building which laid its cornerstone on Thanksgiving Day, 1912.

“Somehow, the ladies got it into their minds that Mr. Hopkins was a member of the distinguished Hopkins family who had built the famous medical center,” said Harris.

“In reality, Ferdinand Hopkins owned a pharmaceutical company that specialized in ladies nostrums and his claim to fame was a product called, “Mother Sills Seasick Pills.” The ladies never found out the truth,” she added.

On the day of the event, local businesses closed so the men could come out to watch the “ladies” work and a photograph of the women working in the cotton field was taken by the town photographer. This photo subsequently appeared in numerous state and national publications and became so popular it was made into a postcard.

To put the ladies’ cotton picking event in historical perspective, these genteel southern ladies were not only unfamiliar with the hard manual labor of picking cotton, they were still a decade away from getting the vote in Arkansas, so the exploit was newsworthy as much for the group’s steadfast determination as for their departure from established social protocol.

Women of the Presbyterian Church, its female members still rank among the cream of Dardanelle society and continue the legacy of fundraising.

“We hold raffles and bake sales and two years ago we published a cook book, River of Life, which quickly sold out,” noted Harris, daughter of Harold Snyder, the man credited with bringing the poultry industry to the River Valley.

The church will be celebrating the 100th Anniversary of the construction of its present building with an open house from 2 to 4 p.m. on Saturday, Nov. 17, and a re-dedication of the church at 2 p.m. on Sunday, Nov. 18, with a reception to follow in their Fellowship Hall.

A Brief History of the First Presbyterian Church The First Presbyterian Church is the oldest church building in Dardanelle, Ark. and is listed on the National Register of Historic Places.

The history of the church reads like a who’s who of the River Valley. The congregation’s first minister is unknown, but it’s likely that Cephas Washburn frequently filled the pulpit. He was ordained a missionary to the Cherokee Indians and put in charge of the Dwight Mission at Norristown, where he gave the first sermon ever preached in Arkansas.

Records show the Norristown church he started in 1843 grew rapidly and in 1856 the church was organized in Dardanelle.

Washburn’s son, Edward Payson Washbourne (Edward changed the spelling of his last name), later became famous as the painter of “The Arkansas Traveler”, a painting made into a popular lithograph of historic significance on permanent display at Crystal Bridges Museum of Art in Bentonville. The painting has long been celebrated in stories and melody and Arkansas Traveler is the official state song of Arkansas.

The church building also honors the life of many notable Dardanelle area residents and prominent members of the congregation through its many beautiful stained glass windows. Located throughout the sanctuary, the windows were installed during the original construction of the church at a cost of $750.

Among those memorialized in 1913 were major donor Ferdinand Hopkins; Miss Annie Kimball, who donated the property where the “new” church was built; Dudley

D. Mason, the first Elder ordained in the Synod of Arkansas which then included the Territory of Arkansas and the Choctaw Country; Captain H.P. Barry, an elder of the church and Editor and Publisher of the Arkansas Transcript; J.K Barry. a partner with J.L. Gault and Co, one of the largest mercantile establishments in western Arkansas; Robert Berry, a druggist and member of the Dardanelle School Board; E.W. Cunningham, a prominent merchant who fought for the South with an Arkansas regiment during the War Between the States; Major W.H. Gee, a church Elder who fought in the Battle of Pea Ridge, the Siege of Vicksburg and the Battle of Big Black; Ray Davis, Clerk of the Session when the present church was built.

Three more stained glass windows and a new cornerstone will be dedicated in November during the church’s centennial celebration. New honorees include long time church organist, Lola Boyce McCray, who passed away in 1944 after serving 45 years in this position; Nina Boles Hunt, a Dardanelle teacher and former music student of McCray who took over as church musician after McCray’s passing and who kept the job for more than 50 years; Barney McKenzie who, along with his brother Sid, built the church and laid it’s cornerstone.

The century old cornerstone contains many interesting local artifacts including a Bible from the 1840’s, coins dated 1812,

1848 and 1912; a copy of a letter from benefactor F.T. Hopkins of New York; century old newspapers; photographs of the old church and the Ladies Aid Society; Masonic items; and a piece of Olive wood sent by Rev. Dewitt Talmage.

Although the old cornerstone will not be removed due to concerns about the structural effect on the building, a new cornerstone with more “exciting” contents will be added for the centennial, said church member Bonnie Brown Ring.

According to Pastor Kelly Pearson, the congregation of First PresbyterianDardanelle speaks to “resiliency.”

“This church’s organization goes back to circa 1850. Our present 100-year-old sanctuary, parlor, and offices comprise the third location and structure within a circumference of four blocks. So, there is a deep history of persons and families who were faithful to Christ. For instance, the church endured to overcome the loss of the first building to the Civil War.” “It is a joy to preach and be a partner in leadership to many generations after those first members who began this legacy.

Worshiping and serving God through Christ is what it is all about. To have a place with such a deep history to gather leads us to give our honor and reverence to the God who so loves us and has abundantly blessed.”

“This celebration is an opportunity to give our concerted praise to God,” said Pearson.

Age is an assigned number that coincides with the year a person is born, but sometimes youth has nothing to do with age.At the age of 84, Jim Setters is one of the most youthful people around. According to the World English Dictionary, youth is the characteristic of freshness, vigor, or vitality.

While he’s been many places and lived a very full life, Mr. Setters continues to do so.

Setters, a native of Nashville, Tenn., grew up in “Music City” before country music was king.

“When I was there, Nashville had the Grand Ole Opry, but it more of a ‘big band’ city, not necessarily country,” he said of his childhood, “When I was a teen, I’d work at the drug store ‘til ten, and then go down to the War Memorial building and listen to the Opry. It was more ‘hoe-down’ music, or a ‘come on in and give it a try’ kind of place.

I had friends that could barely play, and they’d play the Opry. They needed acts to fill in between the big name people.”

Setters left Nashville and enlisted in the Marine Corps in the 1940s and served during World War II. His older brothers had been drafted into the Air Corps and the Navy and he knew he wanted to enlist.

Growing up, his father was an alcoholic and was not around much, so he looked up to his brothers and mother. He says his mother, who raised he and his brothers pretty much by herself paid the biggest price of the war: all three of her sons had to leave. He says, “There should be a mother’s 12 ABOUT | October 2012

veterans day. People expect mothers to die for their children, and in the end the children give their lives for their mothers.”

After his tenure in the Marines, he decided he wanted to stay in the military on commission. He enrolled at what is now Wichita State University, and joined the Reserved Officer Training Corps. He became platoon leader in the Army from his ROTC commission during the Korean Conflict.

While in Wichita, he decided to take a chance on radio.

“While I was attending, I saw a marquee that said the university radio station was trying out people for announcements. I was taking speech, so I talked to the guy, and I told him I worked with the Armed Forces Radio Network. I lied my way into it. He was very impressed and I had never even listened to the AFRN,” Setters laughed.

“At the time I had a very limited vocabulary, and I can remember making a lot of mistakes.

They gave me a small minuet program, a 15 minute thing, and one day I called a ‘caricature’ a ‘cari-catcher.’ I had never seen the word!”

However, the love of radio overshadowed his inexperience, and he took a job in Guymon, Okla., as an announcer and he and his wife, Dana, moved there in 1949.

Setters found his way back to Nashville working in radio in 1974. He was then involved more in management, but the majority of his career was in news on the cutting edge of radio.

When the Federal Communications Commission began freeing up frequencies, radio stations had to begin playing music or subscribe to a recorded program, and “radio personalities” became popular until music completely took over. Independent radio also brought about on-the-scene reporting as two-way radio began to be used.

He laughed as he said, “You had to do some bad, bad driving to get there, and a lot of police had to turn their heads. I enjoyed a career where everything was progressing and changing. You could bring a different sound and a different approach to everything.”

The Setters moved to Boulder, Colo., when their daughter gave birth to twins to be there with the new grandchildren. Their son-in-law at the time had owned and sold the Beckham Creek Cave Lodge in Newton County, Ark. The buyer had gone bankrupt, and so their son-in-law was again in possession.

The Setters were given the opportunity to move to Newton County and bring the lodge back up to par in 1995. After it sold, they moved back to Boulder for a year before moving to Bella Vista, Ark., and then back to Newton County. As they got older, they decided to move closer to town. After considering towns in Missouri, Tennessee, and Oklahoma, they decided to move to Russellville.

“It had everything we needed and most of what we wanted: the lifestyle, the church, the culture, the attitudes. Russellville had it.”

The Setters have lived in Russellville for six years now. They attend the West Side Church of Christ, which is where Jim met his now piano teacher, Beth Sorrells.

He began taking piano lessons in April of 2012. He says taking piano is “a very interesting procedure for older people, especially older men. We want to standardize or be in control or be definitive about things and once we take a tool out of the box it should work, but piano isn’t like that. You take it out of the box and it’s like a handful of mercury, but I’m getting close.”

“I know it will come, just like typing. I find myself where my fingers will proceed in the music, but I’m still fighting measure by measure. I’m a very symmetric person, and music, the piano, isn’t like that. It’s very continuous.”

For an upcoming recital, Setters chose to play Frank Sinatra’s “I Did It My Way” though he says, “I really shouldn’t have! It’s a very vocal piece. It’s noted because of its lyrics.

The words are the more dominant part of the piece. I’m not like Sinatra, I’m not a ‘my way’ kind of guy.” He joked, “And I may have selected it because it’s simple to play.”

With a more serious tone, he added, “At age 84, we tend to think, we are old faded paint or we’re not taken seriously, old

fashioned, all the cliches. A lot of us - if we’re not careful - begin to think of ourselves of useless or ignored. We hear about our ‘wisdom’ but we hear it as hollow words, as if we’re in the way. If we’re not careful, we’ll drift into the thinking that we are invaluable, and the ‘wisdom’ we hold is just decadence.

That’s why I’m learning to play the piano.”

“Once I learn, I’ll be able take this ability with me. I won’t be able to hand it off to someone. But I still want to play because I enjoy it! I usually get up before Dana, and I’ll sit down at the piano and play softly to be her alarm clock.”

He and Dana have been married for 62 years and he constantly smiles as he speaks of her. The couple has a daughter and son.

The Setters met during his college years in Wichita. One Sunday, he attended the local Church of Christ, and as he walked in the Sunday School classroom, “there she was.

I knew within three weeks she was the one.

After 62 years, we’ve become a unit. I’m as much a part of her as she is a part of me.”

While he spoke a good deal about the past, he admits that he tries to not live in “yesterday,” but refuses to forget it either.

“It’s forever in your thinking. My generation goes back to where things are more basic.

We had no electricity or running water

growing up. Now with nanotechnologies and little robotic things, there’s so much change! Mostly for the good I think. My generation has gone from kerosene to LED lights, from no space exploration to a robot on Mars. We are products of our circumstances. We are who we are because where we have been placed, and our generation has had a great time.” n

Opps! There’s ‘That Word’ Again They say confession is good for the soul so I am going to try a little of my own. As a warning, I am also going to throw in some blame and justification, as well. Now before I begin, I am already thinking, “I bet I am going to regret putting this in print.” But here I go anyway.

The other day I was walking at the Lake Dardanelle State Park and a squirrel startled me. No big deal, right? Well, that would be true except for the word that came out of my mouth. It is a word that I cannot put in print, but it begins with an “s” and it ends with a “t”. Yes, that word!

Now here is the really crazy part, right before I said that bad word I had been singing the old hymn, “He Lives.” I had just finished singing the words, “I serve a risen Savior,” and then out it came. Not at all what the original hymn writer had penned.

As a matter of fact anyone not familiar with the hymn would have thought, “Wow that is bold. Our church songs don’t contain those types of words.”

I quickly shot a truly remorseful, “Sorry, Lord!” to heaven and picked right up where I left off and started singing again.

The fact that I say that word is well known among my close friends and family.

It just seems to pop out whenever I am startled or frightened.

One infamous story that gets retold from time to time has cemented my association to that word for even the children of my closest friends.

For close to 21 years a group of us have been camping together. One 4th of July we were all camping in Branson, Mo. We found somewhat of a clearing to shoot fireworks with the kids. At the time the oldest child in the group was eight, and the children far outnumbered the adults.

During the firework display a 50-shot missile firework fell over and began to shoot toward all of us. If you are familiar with this type of firework then you know that the “missiles” go in all kinds of directions before exploding. It was a wild scene with adults trying to get the kids out of harm’s way.

Well, low and behold when it was all over, guess what word I had said about 100 times?

Yep. Didn’t even realize it was coming out of my mouth, but it was, over and over again.

The kids still talk about it to this day.

Let me stop here and say, my husband, the father of my children, does not cuss at all. Well, that is not exactly true, but in the 28 years that I have known the man I have heard him say a cuss word three times. Two of those times it was really my fault.

He was in the Navy before I meet him, and he says he had “colorful language” at that time. But when he became a Christian at the age of 26 he stopped cussing. Oh, I know that is so sweet, but I became a Christian at the age of seven and I am still trying to stop saying “that word.” You know, it would make me feel a little better if someone was in this pit with me.

Actually, it’s really not my fault I say this word (here comes the blame and justification.) You see, all the important women in my family say or did say this word - my maternal grandmother, my paternal grandmother, my maternal aunts,

my paternal aunts, and my mom. This has been the go to word, for generations Now, before anyone gets the wrong idea, none of these women were proud of saying this word. Most of the time it was whispered under their breath, or only the “sh” came out before they stopped themselves. And you cannot find a more Godly group of women who served in their churches, cared for the needy, and taught their children to love God. BUT, we have this little glitch in the system - oh how I wish it were the only glitch.

It’s just this one seems so odd to me. I mean, I have friends who say they have never said a cuss word in their life. I can’t even imagine.

I keep telling the Lord that one day I will not say this word anymore. I have even gone six months before without saying it one single time, and then wham, I say it – so frustrating. I know I am making progress because on a recent camping trip a fish bit my leg and I about jumped out of the lake, but I did not say the “word.” I think someone should give me a gold star.

On second thought, hold off on that gold star until we see if I can get through an entire rendition of “He Lives” without any extra words. n

“Whump, whump,

whump, whump.”

The little wooden mallet strikes the metal beveler. It’s a percussive duet with the rhythmic tapping of the woodpecker heard through the screen door of Walter Jenkin’s home in Atkins. The woodpecker plays second fiddle. Eighty-twoyear-old Walter is by far the more experienced of the two.

As he hammers an outline onto the beige-colored leather, Walter recalls that first leather wallet.

“I made my first billfold in 1949,” says Walter.” I was in the Hospital at Chanute Air Force Base in Illinois. The Red Cross came around and asked if I would like something to do, just to pass the time, and gave me a leather working kit.

I made my first wallet with that kit and I gave my sister that wallet. She carried it for 25 years. She gave it back to me before she passed away and I’ve still got it.”

Walter’s home smells of leather; warm and timeless. The smell is engraved into the human mind as comforting. After all, leather working is one of the oldest crafts known to man. We long ago discovered that preserved animal hide was rugged, pliable, and could serve a multitude of tasks.

Its earliest uses included clothing, footwear, tool and food transportation, and storage. Leather is still used for these purposes, but Walter specializes in making storage units; storage units for paper money. Walter’s creations meld artisan skill with this practical application.

The engravings on each wallet and clutch purse are done with amazing accuracy and attention to detail. The designs and subtle intricacies speak to meticulous and slow work, but Walter has refined his techniques. He not only turns out some beautiful crafts, he does it fast.

“I can do two wallets a day, but that’s pushing it pretty hard,” says Walter. “About one a day is what I strive for.”

In the corner of Walters’ living room sits a small leather bound table covered with wallets and clutch purses. It would be easy to overlook the table except for the ruddy-colored

rose pattern peeking out from underneath that pile of wallets. As Walter arranges the wallets into orderly rows, the border of rose vines comes in to view.

The detail of each individual rose petal is stunning. But, what else would you expect from a man that when speaking of leaving his military career says, “I’m retired Air Force. I retired after 20 years, eight days, three hours, two minutes and 10 seconds.”

The table is his pride and joy.

“This is a Samsonite card table that I covered with leather. I did it, fifty…no, forty-six years ago, and it was my most challenging project. It took several days to do the table... many, many sittings to accomplish this.”

The table has the rich sheen of new leather. One of leather’s outstanding

qualities is its durability, it just doesn’t wear out. Walter’s reply when asked about maintenance of leather products is simple, “Very little. This table hasn’t had much of anything put on it. My sister had it for years and when I got it several years back I did put a little conditioner on it.

Leather needs a little something on it every now and then to keep it pliable, but not much. She never used it for anything, said it was too pretty, but it does have a few scratches on it. It looks pretty good though. That’s the way leather does, it doesn’t get messed up.

It only gets better with age” Walter exudes a youthful energy and that youthfulness is on full display as he speaks of his idea for the perfect demise.

“I’ve made a plan. I’m going to live to 101 and be shot by a jealous husband.”

In all seriousness, Walter recommends staying busy as a recipe for vitality.

“I volunteer at the hospital two or three days a week and just do whatever they need me to do down there. I try to enjoy my work and to enjoy people. I also volunteer at the Atkins nursing home. I visit some of the people there, it’s just a wonderful situation that I can do that.”

If Walter is not at the hospital, the nursing

home, or making delightful leather crafts, he can be found in church. Strong faith plays an important role in Walter’s life.

“I teach a Sunday school class at Atkins First Baptist. They range in age from 45 to 65, they have low mental capacity and I just love them, it’s something really special.

I love teaching them, been doing that for about three years now.”

Walter shows no sign of slowing down, his conversation is full of ideas and future plans. He clutches a wallet in his hand and runs his finger across the engraved cross.

OKTOBERFEST Story by Dianna Qualls, Food Editor

T

he Oktoberfest is known as the Largest Volksfest (People’s Fair) in the World.

Oktoberfest is a 16-day beer festival held annually in Munich, Bavaria, and Germany, running from late September to the first weekend in October. In 1999 there were six and a half million visitors.

Visitors enjoy a wide variety of traditional food such as Hendl (chicken), Schweinebraten (roast pork), Schweinshaxe (grilled ham hock), Steckerlfisch (grilled fish on a stick), Würstl (sausages), along with Brezeln (pretzel), Knodel (potato or bread dumplings), Kasespatzle (cheese noodles), Reiberdatschi (potato pancakes), Sauerkraut or Rotkohl/Blaukraut (red cabbage) along with such Bavarian delicacies as Obatzda (a spiced cheese-butter spread) and Weisswurst (a white sausage).

All that said, Oktoberfest means a celebration of German food.

Thanks to restaurants like our own nearby Wiederker’s Restaurant, stroganoff, goulash, or schnitzels are dishes that are more recognizable.

Yum! Lloyd’s mom was of German descent and he said growing up their meals were heavily influenced by German cuisine. Hearty pan roasted meats with dumplings for “sopping up” all that luscious gravy, sauerkraut, pickled red cabbage, goulash, knish, bratwurst, knockwurst, and kringle are some of the German fare he enjoyed as a child.

My first encounter with German cuisine was in a wonderful restaurant in Eureka Springs, The Bavarian Inn. With some help and encouragement from my hubby I choose Sauerbraten, a German pot roast with dumplings. Oh my, my, my... was I hooked after the first delicious bite. There, sitting atop that earthy reddish brown gravy and sliced beef, were three “dumplings.” They were snow white.

When I could stand it no longer I took a bite size piece, rolled it around in that gravy, and slowly tasted one of the most wonderful flavors in the whole world.

We have gone back many times over the years and try as I might I can never convince myself to try something else. Why mess with perfection? I did try one of their soups as a first course. I loved it so much but could not find a recipe for it. So Lloyd and I kind of recreated the soup after we came home, and call it “Our Bavarian Inn Soup”.

Sauerbraten is beef marinated for days before cooking in a mixture of vinegar, water, spices and seasonings, then braised in a covered pot for hours. After the roast is cooked, the marinade is strained and returned to a saucepan where it is thickened (often with crushed gingersnaps, flour, sour cream, brown sugar, and/or roux) which brings both body and flavor to the sauce. Here is an easy and simple version that takes about 20 minutes to put together and cooks in your crockpot.

CROCKPOT SAUERBRATEN

2 lbs. bottom round roast 2 onions, chopped 1 1/2 c. beef broth 1 c. apple cider vinegar 2 bay leaves 1 (16-oz.) pkg. carrots, peeled and sliced 3/4 c. crushed gingersnaps (about 15 cookies) 2 T. brown sugar 1 c. sour cream 2-3 T. flour In 4 to 5-quart slow cooker, combine beef, onions, broth, vinegar, bay leaves, and carrots. Mix well, then cover crockpot and cook on low for 8-9 hours. Then remove the meat and turn heat to high. Remove bay leaves. Add gingersnaps and brown sugar to the mixture. Stir well and taste for seasoning (you may want to add more gingersnaps or brown sugar for the perfect sweet/sour balance.)

Then stir together sour cream and flour and add that to the crockpot, whisking well to combine. Cover and cook for 30 minutes until thickened and heated. Serve with hot cooked egg noodles or spatzele and pickled red cabbage.

GERMAN POTATO PANCAKES

2 eggs 2 T. all-purpose flour 1/4 tsp. baking powder 1/2 tsp. salt 1/4 tsp. pepper 6 medium potatoes, peeled and shredded 1/2 c. finely chopped onion 1/4 c. vegetable oil In a large bowl, beat eggs, flour, baking powder, salt, and pepper. Mix in potatoes and onion. Heat oil in a large skillet over medium heat. In batches, drop heaping tablespoonfuls of the potato mixture into the skillet. Press to flatten. Cook about three minutes on each side, until browned and crisp. Drain on paper towels. Recipes: Allrecipes.com

BOHEMIAN-CZECH BREAD DUMPLINGS (houskove knedliky)

3 1/2 c. (about 10 slices) country white bread, crusts removed, and cubed into 1/2-inch pieces 5 T. butter 4 T. finely chopped onion 3/4 c. all-purpose flour 2 slices crisp bacon, crumbled 3 T. finely chopped parsley 1/3 c. milk In a large skillet, heat 4 tablespoons butter and toast bread cubes until golden brown. Remove from skillet and set aside.

Add remaining 1 tablespoon butter to skillet and saute’ onions until lightly browned.

Transfer to a large bowl and combine with flour, bacon, parsley, and salt and pepper to taste. Add milk and knead lightly until a soft dough forms. Fold in the reserved bread cubes and form into 2 oblong logs.

Bring water and salt to a simmer in a pan or skillet large enough to hold the logs, and with enough water to just cover the dumplings.

Carefully place the dumplings into the water and simmer, covered, for 25-30 minutes, turning once using two slotted spoons or spatulas.

Remove dumplings with two slotted spoons and place on paper towels to drain. While still hot, cut the dumplings into 3/4-inch widths. Czechs use a thread to slice their dumplings. You also can use unflavored dental floss or piano wire!

Serve with lots of gravy.

OUR BAVARIAN INN SOUP

3/4 lb. bratwurst, cooked and sliced 1 can sauerkraut, drained, rinsed 1 can cream of mushroom soup 1 can Great Northern Beans, do not drain 1 onion, chopped 1 carrot, chopped 3 potato, chopped 2 celery stalks, chopped 2 cans beef broth 1 (8 oz.) sliced mushrooms 2 tsp. black pepper 1 tsp. sugar

Combine all ingredients in a crock pot cook on low 6 to 8 hours.

HOMEMADE RED CABBAGE (ROTKOHL )

2 1/2 oz. bacon, either American or German “Bauchspeck,” chopped 1/2 c. onion, diced 4 c. shredded red cabbage, about 1 lb.

1/2 c. dry, red wine 1/2 c. apple juice 1 T. sugar or agave nectar or honey 1 bay leaf 4 cloves Ground black pepper 1 apple, peeled and quartered Brown bacon in a Dutch oven. Add onions and sauté for five minutes. Add cabbage and cook for 2-3 minutes. Pour in red wine and juice to deglaze, add the spices, sugar and apple.

Simmer on stove top for 2-3 hours, stirring occasionally. Keep the liquids 1/2 inch deep, adding apple juice or water.

Adjust seasonings. Serve hot.

Note: This recipe freezes well. Make it once, serve it twice. I put it in freezer bags and press it flat (1 inch) so that it thaws quickly. Recipes from About.com. >>

CROCK POT BEEF STROGANOFF

1-1/2 lbs. beef sirloin tip, cut into 1” cubes 1 onion, chopped 3 cloves garlic, minced 2 (8-oz.) pkg. baby portabella mushrooms, sliced 1 tsp. dried marjoram leaves 1/2 tsp. salt 1 t dried thyme leaves 1/8 tsp. pepper 1 bay leaf 1-1/2 c. beef broth 1/2 c. red wine 2 T. Worcestershire sauce 8 oz. carton sour cream 2 T. mustard 1/4 c. flour 1/4 c. water Combine everything except sour cream, mustard, flour, and water in a 3-1/2 quart slow cooker. Cook on low heat for 8-10 hours (high for 4-5 hours). Remove and discard bay leaf.

Combine sour cream, mustard, flour, and water in medium bowl and mix well, using a whisk. Add 1 cup of the hot liquid from the crockpot to the sour cream mixture and stir until combined.

Return this mixture to the crockpot and stir well. Cover crockpot and cook on high for 20-30 minutes until thickened and bubbly. Taste it; you may want to add more salt, pepper, marjoram, or thyme. Serve over hot cooked egg noodles. Recipe from About.com.

Peel the potatoes. Place them into a large pot and fill the pot with enough water to cover them. Bring the water to a boil, lower the heat, and simmer until the potatoes are soft (about 20–30 minutes).

Drain the potatoes well in a colander, place them in a bowl, and mash them, using a hand mixer or potato masher.

Add the egg yolks, cornstarch, breadcrumbs, salt, and pepper.

Rinse out the pot and refill it with water and heat the water to boiling. While the water is heating, shape the potato mixture into golf-ball sized dumplings.

Roll the dumplings in flour, and drop immediately into boiling water for 15 to 20 minutes. Serve with butter and salt. Makes about two dozen dumplings. Recipe from About.com.

6 medium red potatoes, unpeeled 3 slices bacon 1 T. olive or canola oil 3/4 c. chopped onions 1 T. all-purpose flour 1 T. sugar 1/2 tsp. salt

1/2 tsp. celery seed 1/8 tsp. pepper 3/4 c. water 1/4 c. cider vinegar 2 tsp. Dijon mustard 2 T. chopped fresh parsley In 4-quart saucepan, place potatoes. Add water just to cover. Heat to boiling; reduce heat to low. Simmer covered, 25 to 30 minutes or until tender. Drain; cool slightly.

Cut into slices.

Meanwhile, in 12-inch nonstick skillet, cook bacon over medium heat until crisp.

Drain on paper towels. Chop bacon; set aside.

Remove and discard bacon drippings from skillet. Add oil; heat over medium heat. Add onions; cook three to four minutes, stirring frequently, until tender.

Stir in flour, sugar, salt, celery seed and pepper. Gradually stir in water, vinegar and mustard. Cook over medium heat two to three minutes, stirring constantly, until bubbly and thickened. BEER-ROASTED PORK SHOULDER 1 T. caraway seeds Salt and pepper 1 (4 to 5) lb. pork shoulder, thick skin removed 3 T. vegetable oil 2 onions, chopped 1 carrot, scrubbed and chopped 1 rib celery with leaves, chopped 3 cloves garlic, smashed and peeled 2 (14 1/2 oz.) cans beef broth 1 bottle dark beer 3-4 T. flour

Preheat the oven to 450 degrees. Mix the caraway seeds with 1 teaspoon each salt and pepper and season the pork shoulder with the spice mixture.

In a medium roasting pan or large Dutch oven, heat the oil over medium heat.

Place the pork in the pan and brown on all sides, turning occasionally, 15 to 20 minutes total.

Add the onions, carrot and celery and cook, stirring occasionally, until the vegetables begin to caramelize, 8 to 10 minutes. Add the garlic and cook for 2 minutes.

Add the beef broth to the pan and pour the beer over the meat. Transfer to the oven and roast, basting occasionally with the juices, until the center of the pork registers 155 degrees on an instant-read thermometer, 1 1/2 to 2 hours. Transfer the meat to a platter, tent loosely with foil and let stand.

Strain the pan juices into a large heatproof bowl, pressing on the solids to extract any liquid. Skim the fat off the top, then pour the juices into a saucepan. Stir the flour into 1/4 cup water to form a paste. Whisk the paste into the pan juices and cook over medium

heat, whisking constantly, until thickened.

Season with salt and pepper.

Slice the pork shoulder and serve with the pan gravy. Recipe from rachelraymag.com.

GERMAN APPLE PANCAKE APFELPFANNKUCHEN

This baked puffy German pancake is filled with a cinnamon-brown sugar apple mixture.

3 eggs 1/2 c. all-purpose flour 1/2 c. milk 2 T. margarine or butter, melted 1/4 tsp. salt 2 T margarine or butter 1/3 c. packed brown sugar 2 medium cooking apples, peeled, cored, and thinly sliced (2 cups) 1/4 tsp. ground cinnamon 1/4 t ground nutmeg Sifted powdered sugar In a medium mixing bowl beat eggs with a wire whisk until frothy. Add flour, milk, one tablespoon of the melted margarine or butter, and salt; beat until smooth.

Heat an 8-inch round baking pan or ovenproof skillet in a 450 degree F oven for two minutes. Add remaining one tablespoon melted margarine; swirl to coat pan. Pour batter into hot pan. Bake pancake in the 450 degree F oven for 18 to 20 minutes or until puffed and golden.

For filling, in a medium skillet melt the two tablespoons margarine or butter over medium heat. Stir in brown sugar until combined. Stir in apple slices, cinnamon, and nutmeg. Cook, uncovered, for 3 to 5 minutes or until apples are crisp-tender, stirring occasionally.

To serve, remove pancake from oven.

Spoon some of the filling into center of pancake. Sprinkle with powdered sugar.

Cut into wedges. Pass the remaining filling. Pancake will collapse as it cools. Makes 6 servings. Recipe from: bettycrocker.com.

EASY GERMAN BIEROCKS (RUNZA) 1 T. vegetable oil 2 lbs. ground beef 1 small onion, chopped 1 head cabbage, finely chopped 1/2 tsp. salt 1/2 tsp. ground black pepper 36 frozen dinner rolls, thawed 2 quarts vegetable oil for deep frying

Heat one tablespoon vegetable oil in a large pot over medium-high heat. Stir in ground beef, and cook until crumbly and no longer pink, about five minutes. Stir in chopped onion, and cook until the onion has softened and turned translucent, about five minutes more.

Add the chopped cabbage; cook and stir until the cabbage has softened, about 10 minutes. Season with salt and pepper, then spread the mixture onto a baking sheet to cool until cool enough to handle.

Once the mixture has cooled, flatten a dinner roll, and place several tablespoons of the cabbage mixture in the center. Pull the edges of the dough over the filling and pinch to seal. Repeat with remaining dough and filling.

Heat the oil in a deep-fryer or electric skillet to 350 degrees F (175 degrees C).

WIENER SCHNITZEL

4 veal cutlets (traditional) pounded to 1/5 inch thickness (may use chicken or pork) 1/4 c. flour (all purpose or brown rice) 1/4 tsp. salt 1/2 c. bread crumbs 2 eggs Oil or lard for frying (lard is traditional) Pound the meat evenly to 1/5 inch thickness for best results.

Set up three shallow dishes. Place the flour and 1/2 teaspoon salt in one and breadcrumbs in another. Beat eggs well and place in the third dish. Working one at a time, dredge cutlets first in flour until the surface is completely dry.

Dip in egg to coat, allow the excess to drip off for a few seconds and then roll quickly in the breadcrumbs until coated. Do not press breadcrumbs into the meat. Place meat immediately in the pan with the hot oil.

Heat at least 1/4 inch of oil in the pan to 350°F. Make sure the breaded meat “swims” in fat. Fry the schnitzel for 3-4 minutes on one side. You may want to swish them around a little with your fork to make sure they are not sticking to the pan. Turn them over once and fry until both sides are golden brown. Remove from pan, allow the oil to drain off, place on a plate with lemon slices and potato salad or green salad and serve.

JAGERSCHNITZEL

1 c. bread crumbs 1 T. all-purpose flour salt and pepper to taste 2 T. vegetable oil 4 pork steaks or cutlets, pounded thin

1 egg, beaten 1 medium onion, diced 1 (8 oz.) can sliced mushrooms 1 1/2 c. water 1 cube beef bouillon 1 T. cornstarch 1/2 c. sour cream In a shallow dish, mix together the bread crumbs and flour. Season with salt and pepper. Place the egg in a separate dish. Heat oil in a large skillet over medium-high heat. Dip pork steaks in egg, then coat with the bread crumb

mixture. Fry in the hot oil until browned on both sides and cooked through, about 5 minutes per side.

Remove the pork to a platter and keep warm. Add onion and mushrooms to the skillet and cook until lightly browned. Pour in water and dissolve the bouillon cube. Simmer for about 20 minutes. Stir together the cornstarch and sour cream; stir into the skillet.

Combine flour, two teaspoons paprika, salt, and pepper on shallow plate. Dip chicken in mixture to coat both sides.

Combine peanut oil and butter in heavy skillet. Add chicken; brown on both sides, turning once, about 4-5 minutes, then remove from skillet. Add onion and garlic to skillet; cook and stir until crisp tender.

Return chicken to skillet.

Pour chicken stock and tomato paste into skillet and stir to combine, bring to a boil, then lower heat, cover pan, and simmer for 5-8 minutes. Meanwhile, combine sour cream, one teaspoon paprika, and cornstarch in small bowl. When chicken is thoroughly cooked, stir sour cream mixture into skillet and heat through but do not boil. Serve over mashed potatoes or hot cooked rice.

GERMAN SAUSAGE CHOWDER

1 lb. fully cooked bratwurst, cut into 1/2” pieces 2 Russet potatoes, peeled and chopped 1 onion, chopped 3 cloves garlic, minced 1 tsp. salt 1/8 tsp. pepper 2 c. beef broth or water 3 carrots, sliced 4 c. shredded cabbage 3 c. milk 3 T. flour 1-1/2 c. shredded Swiss cheese In a Dutch oven or large stockpot, combine sausage, potatoes, onion, salt and pepper. Add beef broth or water and carrots. Bring to boil, stirring occasionally; then reduce heat. Cover pot and simmer for 15-20 minutes or until potatoes are nearly tender. Stir in cabbage. Cook 10 minutes more or until vegetables are tender.

Stir in 2 1/2 cups of the milk. In small bowl, combine remaining 1/2 cup milk with the flour and blend with whisk. “Angels of 2013” is the calendar brainchild of Carolyn Gray, owner of Pink Ribbon Boutique, and Becky Lewis. The calendar will debut soon and includes the touching stories of strength of 13 local women whose lives have been impacted by breast cancer.

“These women lived through what most of us couldn’t dream of enduring. They have used laughter as a source for healing.

They have earned their wings through their creator’s Love for them. These are the Angels of 2013!”

Best of Eastern Canada

Those with a sense of adventure, desiring to travel both nationwide and globally should consider joining the Arkansas Tech Travel group as they plan their upcoming trips.

A group of Tech travelers recently left Russellville in early August for a nine-day trip, The Best of Eastern Canada, beginning in Montreal, Quebec. They enjoyed day after day of sightseeing, viewing such sights as Notre Dame Cathedral and St. Joseph’s Oratory and learning the history of both Old and New Quebec. Included each day were historic visits throughout the countryside and exposure to traditions such as making and sampling traditional foods, including making maple taffy in the snow.

Day Six found the group enjoying a breakfast cruise on the Ottawa River and a city tour showcasing the world’s largest skating rink, Rideau Falls and Parliament.

Byward Market offered local treats and delicacies to fill the travelers leisure time.

The group boarded the VIA Rail train, traveling to Toronto on Day Seven. Aweinspiring Niagara Falls and a Maid of the Mist cruise completed the tour.

‘Leader to Leader’ Program Benefits from Walton Gift

Arkansas Tech University has received a gift of $294,000 to support the development of public school leaders through the Arkansas Tech Center for Leadership and Learning (CLL).

The grant from the Walton Family Foundation will be used to fund the Arkansas Tech CLL Leader to Leader programs for school superintendents and principals.

Fifty-four school leadership personnel from around the state are enrolled in the program during the 2012-13 academic year.

Participants in the superintendent and principal Leader to Leader programs at Arkansas Tech gather for meetings throughout the academic year to learn new techniques in school administration and share information about their common challenges and solutions.

“Our investments in education in Arkansas and across the United States are driven by the urgent need to dramatically raise student achievement,” said Kathy Smith, senior program officer for Arkansas education at the Walton Family Foundation. “This program can help to further develop a strong pipeline of school leaders in Arkansas dedicated to educational excellence across the state.”

Dr. Merle Dickerson, superintendent of the Van Buren School District, serves as director for the Leader to Leader programs at Arkansas Tech. Dr. Mary Gunter, dean of the Arkansas Tech Graduate College, provides additional oversight of the programs.

“On behalf of the Arkansas Tech Graduate College and the Arkansas Tech Center for Leadership and Learning, I express my appreciation to the Walton Family Foundation for its support of the Leader to Leader programs at Arkansas Tech,” said Gunter.

Tech Enrollment Near 11,000

Fourteen years and counting.

That is the unprecedented streak of consecutive record enrollments at Arkansas Tech University after the institution announced that its fall 2012 enrollment is 10,972 students.

Enrollment at Arkansas Tech has increased by 4.9 percent over the past 12 months. Arkansas Tech has 8,939 students on its main campus in Russellville and 2,033 students on its Ozark campus.

Fall 2012 enrollment figures became official at the end of the 11th class day of the semester.

Enrollment at Arkansas Tech has grown by 159 percent since 1997. A then schoolrecord 4,840 students enrolled at the university in fall 1999.

Enrollment has increased ever since.

Arkansas Tech went over 6,000 students for the first time in 2003 and the milestones have continued. Tech surpassed 7,000

students in 2006; 8,000 students in 2009; 9,000 students in 2010; and 10,000 students in 2011.

“There is no question that increasing the percentage of our adult population that holds a college degree is the key to economic development in Arkansas,” said Dr. Robert C. Brown, who is beginning his 20th year as Arkansas Tech president “At Arkansas Tech University, that is a realization that we made long ago and we have worked ever since to meet that objective. Our enrollment growth is an indication that our constituents find value and quality in return for their educational dollar at Arkansas Tech. The more telling fact is that our increases in degree production have outpaced our increases in enrollment growth. That is a testament to the academic ability of the students choosing Arkansas Tech and to the outstanding work by my faculty colleagues.”

Arkansas Tech awarded more than 2,000 degrees for the first time in school history during the 2011-12 academic year. Annual degree production at Arkansas Tech has increased by 151 percent since the year 2000, while enrollment has grown by 112 percent over that same time frame. n

Horkey, Kobs to Wed Anna Lorraine Horkey, of Omaha, Neb., and Matthew Carl Kobs, of Chester, Maryland, announce their engagement and forthcoming marriage.

Anna is the daughter of Charles and Marsha Horkey of South Sioux City, Neb. She is the granddaughter of Edna Horkey of Westbrook, Minn., and the late Gordon Horkey, and Delores Pankow of Hankinson, N.D., and the late Herman Pankow.

The bride-elect is a graduate of South Sioux City High School . She received a Bachelor of Arts in Chinese and Japanese Studies from Valparaiso University in Valparaiso, Ind., and is currently a candidate for a Master of Arts degree in Education from Valparaiso University. She will graduate in December.

Matthew is the son of Darrell and Teresa Kobs of Russellville. He is the grandson of John and Frances Hunter of Torrance, Calif., and the late Martin and Hilda Kobs.

Matthew is a graduate of Russellville High School. He received a Bachelor of Arts degree in Spanish from the University of Arkansas and a Master of Divinity from Concordia Seminary St. Louis, Mo. He is currently serving as pastor of Galilee Lutheran Church in Chester, Maryland.

The wedding is planned for 3:30 p.m. on Friday, Dec. 28, at Zion Lutheran Church in Omaha, Neb. Invitations will be mailed.

Following their marriage, the couple will make their home in Chester, Maryland.
