The perfect pitch Chris Butler and Ann Barkway opened the Early Music Shop at Snape Maltings amidst the chaos of 2020. Now the doors are well and truly open, musicians, music lovers and enthusiasts of these ancient and traditional instruments are beginning to take note.

Early music is generally defined as being pre-1800, and includes the Medieval, Renaissance and Baroque periods, and signals the start of the classical music movement across Europe. The names of the instruments themselves have a wonderful lyricism - crumhorn, viol, serpent, shawm, hurdy-gurdy – and they trip off the tongue with a musicality befitting their purpose. The shop has an astonishing display of these rare instruments which 4

are hand-crafted by some of the finest makers in the world. They are uniquely beautiful: the curve of the lute, the huge scale of the 6ft sub contrabass recorder, the exquisitely delicate inlaid work on the clavichord and the wonder of the snaking black leather serpent.

Early music had a massive revival in the late sixties led by David Munrow, a prominent musician who travelled

the world rediscovering these ancient instruments and commissioning reconstructions. His work made a huge impact on the music world, and such was the demand for these historical instruments that in 1968, J Wood & Sons Ltd opened the Early Music Shop in Bradford. In 2007 they moved the shop to Saltaire, a UNESCO World Heritage Site in West Yorkshire, and Chris bought the business in 2018. “The shop is located within Salts Mill, a former textile mill that has been redeveloped and is now home to a mix of art galleries, cafes, restaurants and a selection of independent shops, so when we decided to open a new Early Music Shop in Suffolk, Snape Maltings was an obvious choice.”

With a background in music publishing, Chris and Ann have been part of the early music community for many years.

They also run the London International Festival of Early Music (LIFEM) – one of the largest of its kind in the world – which takes place in Blackheath every November, attracting performers and makers from all around the world and last year saw John Paul Jones, the legendary bass guitarist from Led Zeppelin, open with a newly commissioned work for viol consort. Chris and Ann are excited about future musical collaborations with Snape Maltings, and Piva – an exuberant Renaissance music group – is already booked to play the Dome stage on 29th August. “Our ambition is for early music to become more accessible and to open people’s minds and ears to these wonderful instruments and their rich history.” Well, I for one will pay good money to watch someone play the hurdy-gurdy! www.earlymusicshop.com (LIFEM 10-13th November | www.lifem.org) 5

Sam Simpson and Mike Smith have spent the last six months lovingly restoring, reviving and reinventing The Old Wheelwrights in Brandeston, stripping back its layers and restyling the interiors with an artistically curated array of antiques, vintage finds and retro designs.

Sitting amongst a cluster of properties with names such as The Old Forge, The Smithy and Blacksmiths Cottage, it is clear that The Old Wheelwrights – or Tow House as it is now called – was at the heart of a thriving village community, and Sam believes that parts of the original house date back to around the 1600s. With a passion for vintage, both Sam and Mike fell in love with the character and history of the property and were delighted to discover that in the original wheelwrights’ workshop, the floor was made from the ends of the elm stocks that would have been discarded during

the making of the wheel hubs. It is quite incredible, and they plan to carefully repair and protect it as part of the ongoing restoration project.

Within the house, Sam and Mike have made huge progress and the majority of the work, much of which they undertook themselves, is now complete. There is a careful, understated feel to the way the rooms have been renovated and redecorated. In places, old plaster work has been left uncovered, chipped doorways left unpainted and peeling wallpaper left to fade and fray, all as a deliberate nod to the history of the 17

house and the layers of life that went before them. Every room juxtaposes the contemporary with the vintage, the styles bouncing off one another to create a harmonious décor that feels fresh and yet sits comfortably with the exposed beams and open fireplaces of the old house.

As well as restyling the rooms, Sam and Mike have redesigned the layout to create a family space. The original utility room is now a lovely light-filled kitchen with reclaimed Norfolk pamments and underfloor heating. To one end they have fitted a second-hand Fired Earth kitchen that Sam sourced from a dentist in Essex and retouched with a beautiful marble work top.

ceiling, and a 1940s work bench that bears the scars of hard labour is now the perfect sideboard for dumping the shopping. Next to the kitchen is the breakfast room where an original 1964 duck egg blue Aga takes centre stage, perfectly balanced by some Indian blue painted doors that have been reinvented as the façade of the old kitchen cupboard, and in the corner an industrial hospital cabinet houses a collection of Owl Eye pottery.

There are two sitting rooms, one of which is dominated by an enormous brick fireplace, although luckily there is an equally enormous sofa to sink into, and the other is a lovely light, uncluttered room that Sam and Mike both refer to as the party room, a retro turntable hinting at fun nights ahead. With the walls and ceilings painted

white, the contrast comes from the patterned textiles and eclectic ceramics and artwork, a mix of collectible originals and car boot finds. A central hall boasts one such cherished find, a French shop counter that Sam uses to store her postcard collection, and on the walls hang 1920s Japenese bulkhead ship lights that they rescued from a pub in Norfolk. Upstairs, bathrooms made way for bedrooms and cupboards were converted to shower rooms, and in the master suite they have taken out the ceiling, so the space now extends all the way to the rafters, with a glass chandelier adding a hint of glamour.

It is effortlessly stylish, not overdone or too considered and so it is no surprise to learn that Sam and Mike both come from the world of fashion. Mike runs Foundry Brands,

a menswear, sports and lifestyle brand, and Sam is kept busy with her modelling agency JMM Suffolk, alongside sales of mid-century and folk art finds via her other business, no1EastLane.

I love that they are as equally delighted by a £3.50 charity shop bargain as an original Rosewood McIntosh sideboard and that they are willing to criss-cross the length and breadth of East Anglia at the first hint of a vintage light fitting or because a bread bin looks like it might match the colour of the Aga. It is this drive and flair that has given their home such a wonderful new lease of life and I am intrigued to see what extraordinary finds they uncover next.

The spa will support the eco ethos of the Debenham salon and will offer hairdressing, as well as promoting all-round wellbeing and relaxation, with treatments such as hypnotherapy, gut health, massages, facials and more.

“I think that Snape Maltings is the perfect location for my new venture as it is beautiful and picturesque all year round and everybody loves its unique offering,” says Abbi. “What better way to unwind from the busyness of day-to-day life than a spa treatment followed by lunch and a bit of retail therapy or a walk along the marshes….”

East of England charity Ormiston Families is joining forces with Suffolk’s Stokes Sauces and East of England Co-op to launch A Brighter BBQ to mark its 40th anniversary year. The idea is to encourage people to host their own BBQ fundraising event, staged in support of the charity’s work across the region.

Anyone registering as a host will receive decorative bunting, sachets of Stokes Sauces and a £2 off voucher for any of the Co-op’s ‘Locally Sourced’ products, plus a fundraising pack.

Ringing in the changes The Hour Community in Framlingham has bought the telephone box to make it into a unique place to display and promote local community projects.

It is probably the smallest exhibition centre in the world as it only measures 860,000 cubic inches!

Courteen Celebrities!

Rose Courteen, an aspiring radio presenter from just outside about about interiors town Framlingham, has recently launched her third podcast series. Rose’s podcast, Talking Teenage Life, is primarily aimed at teenagers but she believes that anyone of any age can take something valuable from the episodes.

Rose started her podcast just over two years ago when she was 13 and has since interviewed some high-profile people including Matt Pritchett – the Telegraph’s daily cartoonist, Matt; Amelia Reynolds, one of the presenters on Look East, and Helen Piddock-Jones who was the much-loved phantom flan flinger on the children’s TV show Tiswas. In her last series, Rose also interviewed Scott Russell - one of the founders of Paddy and Scott’s - who generously agreed to sponsor her third series, enabling her to buy some higher quality recording equipment.

In series 3, Rose is joined in each episode by a couple of friends and an adult, the latter an expert in the chosen topic; among them, body image and race.

Rose hopes to be a broadcast journalist so was overjoyed earlier this year to be shortlisted for BBC Young Reporter of the Year. Although disappointed not to win, Rose says, “I enjoyed the whole process and it has really helped me learn some useful and valuable skills for the future.”

If you go down to woods tonight you certainly will be in for a surprise, as nestled in the hollow bowl of an old WWII bomb crater you’ll discover Thorington Theatre, a newly opened, magical open-air amphitheatre which has actors from across the UK jostling for centre stage.

Tucked away down a tree-lined lane off the A12 en route to Southwold, Thorington Theatre is the creation of Lindy O’Hare and her farm manager, Silas Rayner, who is well known locally for his fantastical Maui Waui Festival, a wonderfully creative weekend of live music, theatre and art. The O’Hare family moved to Thorington Hall three years ago and are currently in the process of turning the farm into an organic nut farm, so before we head into the woods, Lindy takes me on a quick tour to see the young walnut, cobnut and sweet chestnut saplings that will bear the fruits of their labour in years to come. They have also

rewilded part of the farm, planting swathes of trees to create new habitats and encourage biodiversity and are working alongside the Woodland Trust to manage and restore existing woodland.

It was whilst working in the woods that the idea of a theatre was first mooted. “Silas thought the bomb crater would be a great venue for an open-air gig and so we started exploring the idea. One thing led to another and before we knew it, we had started construction on a 350-seater theatre!”

The setting could not lend itself more dramatically to their vision. A pathway 31

winds its way past the patterned trucks of silver birch trees and waist-high bracken to a clearing, formed when a bomb was dropped here by British troops returning home after a mission overseas. The explosion created the clearing in woods where only a few pine trees grew skyward, their branches allowing dappled light to filter through to the floor below, and the resulting crater formed a natural arena.

The stage was literally already set and aided by designer Amy Carroll and a team of talented carpenters, the design and built has taken just over a year to complete.

Within this incredible space, they have hand built a beautiful theatre made entirely from timber sustainably cut from within the wood itself. Steep steps lead down past wide tiers of seating, and the stage

is almost in the round, with the audience to three sides. The backdrop is a natural screen of woodland, and off to the left, a marquee reminiscent of a jousting tournament houses the makeup and wardrobe department. Spotlights are strung from trees, handrails carved from knotty branches and platforms have been built for wheelchair access and private boxes, where instead of velvet seats, logs are upturned to make the perfect perch. Reminiscent of the spectacular Minack Theatre which is carved into the rugged cliffs of South-West Cornwall, the wonder of this amazing space is the use of natural materials and the way it blends so beautifully into its woodland setting.

the bar where at half time you can enjoy a glass of locally produced wine, cyder or beer. Visitors are encouraged to bring a picnic to share before the performance and even dogs are allowed to come and share in the experience. “We wanted to make the theatre as inclusive as possible and have reached out to local schools and charities, as well as theatre groups and touring production companies.” Word has spread quickly, and Lindy already has a full programme of events lined up for the summer season, including Shakespeare, opera, live music, and stand-up comedy from well-known names such as Nish Kumar, Sara Pascoe and Simon Amstell.

Lindy, Silas and the team, this little hollow has become a magical setting for stories, song and laughter. It is an incredible achievement and sat looking down at the stage, I can only imagine the delight and wonder of an open-air performance here. The actors stepping onto stage on a warm summer’s evening to the soundtrack of birdsong trilling through the trees, the atmospheric cry of a buzzard as it circles overhead and the applause echoing through the darkness long after they have taken their final bow. www.thoringtontheatre.co.uk

From her studio in Earl Soham, Clare Gaylard fashions the most exquisite pieces of jewellery made from the finest Venetian Murano glass, interlacing each piece with layers of colour and texture that magnify the beauty of the natural world that inspires her designs.

Clare graduated from Loughborough College of Art & Design with a BA in Silversmithing and Jewellery, going on to teach Art at a London secondary school before moving abroad with her husband to spend time in Kenya, Singapore and Thailand. Over the years she experimented with many different art forms, but it wasn’t until she attended a glass workshop in New Zealand in 2006 that she felt she had finally found her medium. “I loved the immediacy of working with glass, the magic happens in the flame and is quick and often spontaneous.” She returned to Thailand to set up a home studio and successfully sold and exhibited her artisan glass

overseas until returning to the UK in 2009, where she is now a member of Suffolk Open Studios and The Suffolk Craft Society.

Clare pulls up a stool at her work bench and shows me how the rods of glass change state, introducing them to the flame so they flow like lava and can be twisted and spun together into candy cane spirals of colours. She expertly moves the rods in and out of the heat to create exactly the right pliability, wrapping the glass around a steel support to form a band that will be the starting point for a ring or pendant.

that bends and stretches before solidifying and encapsulating the newly formed pattern within. “I work the glass in layers, building outwards from the core, rather like icing a cake, and with each one you can see how the detail and colour becomes more magnified.”

Many of Clare’s collections are displayed as totems, the assorted glass pieces being stacked one upon the other, layer upon layer like chapters in their own story.

They can be dismantled to be strung as a necklace, either individually or as several pieces together, slipped on silver hoops for earrings or simply worn as rings, and as well as being a unique stacking jewellery box, they have a wonderful sculptural beauty. I flick through one of Clare’s beautiful sketch books which are a

flame, all come together to bring these stories to life. There is also an enormous amount of fun in Clare’s work, the whimsical and fantastical sitting alongside folk legends and fairy tales. Her desk is strewn with trinkets: a feather plucked from the hedgerow, a pebble uncovered on the beach, a dead beetle whose carapace shimmers with iridescence and the wing of a moth that is flecked through with gold.

is exhibiting at The Suffolk Craft Society exhibition this July and has already begun work on a new series that will focus on the movement of the sea and the preserved beauty of fossils. What stories will unfold has yet to decided, but what is certain is that there will be magical discoveries and mystical treasures uncovered once she begins the alchemy of this fascinating artform.

Clare collects such treasures and works with their untold stories. She embraces the wonders of metamorphosis, the transition from one state to another – pupae to butterfly, nymph to dragonfly, caddisfly to dancing mayfly – and through her art is able to add an extra stage to their life cycle, melting down the glass to then freeze them in time as an item of undying beauty. Flying solo ‘Save our bees’ are the buzz words of the moment, and rightly so.

Recent campaigns have been brilliant at raising awareness, and it is great to see so many garden beds and borders spilling over with bee-friendly plants and verges being allowed to flourish.

The honeybee has long been the cover girl of this campaign, but did you know that there are over 200 species of solitary bees in the UK, all of which are equally vital for pollination. As the name suggests, these little bees live alone, building their nests in tunnels and hollow stems. The red mason bee is quite common and can often be seen nesting in the crumbling mortar of old buildings, plugging up the entrance with mud after laying a single egg. Another frequent garden visitor is the leafcutter bee – just check out any hazel or fruit tree for the tell-tale patchwork of holes – and you can identify their nests by the jaunty green front doors.

Habitat is key to helping these solo flyers and creating a bee hotel is a simple but incredibly effective way of doing this. All you need is a container such as a tin can,

old plant pot or even a chipped mug that keeps getting pushed to the back of the cupboard, and some lengths of bamboo cane, reeds or hollow stems foraged from the garden, ideally in a range of diameters.

Cut the canes to fit your pot and pack them in tightly so they are nice and secure. Now find a sheltered, sunny spot, secure the hotel on its side, slightly pointing downwards so the rain slides off, and there you have it – your bees’ very own B&B! If you fancy being a little more ambitious The Woodland Trust has a step-by-step guide to building a more robust wooden hotel, and the Eden Project goes a step further with a multi-storey hotel where ladybirds, woodlice, beetles, and even frogs and toads are welcome – no reservation needed!

Vim & vigour July is here and with it comes a riot of colour. The delicate beauty of the spring garden has gently drifted away on a warm summer breeze to be replaced by the deeper, richer shades of summer. Red hot pokers burst through borders, the nodding heads of golden yellow and claret tipped sunflowers add architectural interest, and penstemon erupt into decorative sprays of colourful tubular flowers that can be enjoyed all the way through to autumn.

In August, made lazy by the heat, the garden takes a pause. Many of the summer flowers are now at their peak and they hold themselves proud, putting on a show for all to see and enjoy. If your dahlias survived the late frosts, now is the time to admire them in all their dazzling glory; their fabulous array of colours and amazing shapes, from

As we ease gently into September, the morning mists remind us that autumn is on its way. The heat mellows and the blooms start to fade, but there is still plenty to enjoy.

As you slowly start to clear the beds, keep an eye out for self-sown seedlings to be cherished and nurtured, and whilst the earth still holds the warmth of summer, dig in your spring bulbs. Pick the biggest hydrangea heads for drying and gather as many late-flowering roses and phlox as you can to enjoy long after the sun has gone down.

I take a trip to Bungay to chew the cud with Jonny Crickmore of Fen Farm Dairy and find out how they went from selling a few bottles of raw milk from the garden shed to being one of the UK’s leading artisan dairy producers whose cheese graces the tables of Royalty.

The Crickmore family has been farming the 1000 acres along the Waveney Valley for three generations, and Jonny grew up following in the footsteps of his dad, Graham, donning his wellingtons from the age of four to help with the early morning milking. Father and son now work shoulder to shoulder and, along with Jonny’s wife Dulcie, have spent the last 10 years diversifying the business so that it now includes cheese, butter and yoghurt production, and establishing Fen Farm as a brand that sets the standard for sustainability within the dairy industry.

The shed has now been refashioned into a self-service kiosk with high-tech vending machines that dispense litres of creamy raw milk, boxed butter and cheeses, live yoghurt, fresh bread from the local Pennybun Bakery, and even a cappuccino to take away! “This was our first eureka moment. In 2011 we decided to try selling bottles of milk from the roadside and were amazed at how popular it was. We went from selling 30 litres a day to over 200, so I imported a milk vending machine from Italy to help streamline the process. It was the first of its type in the UK and caused quite a stir on the food scene.”

With national press interest and visits from the likes of AA Gill, Jonny realised that there was a story to be told and that the quality of the milk would be the key to their success.

With increased profit margins from direct milk sales, the family started to look at ways of adding value to their milk and turned their attention to British cheeses.

“We looked at what was already on the shelves and saw there was a gap in the market for a soft Brie de Meaux style cheese.” With a single-mindedness that cuts to the core of all good business decisions, they decided to focus on filling this gap and becoming the UK’s top producer of soft cheese. In 2013, Jonny headed to the Jura region of France, an area nestled in the shadows of the French Alps that is renowned for its deliciously 50

creamy cheeses – Vacherin, Mont D’Or and Reblochon – and the gentle Montbeliarde dairy cattle that graze its slopes. He returned with 72 head of cattle that were introduced to the rich marshlands of the Waveney valley and his existing herd of Holstein milkers, and began experimenting with recipes.

Montbeliardes produce a milk that is rich in protein, making it perfect for cheesemaking, and later that year Fen Farm produced its first Baron Bigod Brie. This white, bloomyrind cheese has a golden creaminess that lives up to all expectations and is still the only traditional raw milk brie-style cheese to be produced in the UK. Two years later the team turned their attention to producing an artisan butter, again made in the traditions of rural France, using a lactic culture that sours the milk to give it a

wonderful depth of flavour. Wrapped in gold foil and boxed like the cheese, this butter really lends itself to being generously slathered on a slab of crusty bread or melted in a pan with some freshly picked mushrooms.

With both the cheese and butter winning awards and Fen Farm now a recognised brand favoured by well-known chefs and even Royalty, Jonny and the team had their heads turned by a staple of Icelandic life, Skyr. Once again, he packed his bags and travelled to this frozen land to immerse himself in Icelandic yoghurt-making practices. Skyr is made from skimmed milk, a by-product of the butter and cheesemaking process, which is gently heated and mixed with a traditional Icelandic live culture, and once thickened is strained to remove the whey. Fen Farm

now makes this natural product back in Suffolk, and the creamy yoghurt is poured over a generous dollop of jam which can be stirred through for a deliciously healthy breakfast.

In the last two years, Jonny has also added tubs of sumptuous mascarpone and a Baron Bigod infused with a layer of black truffle to the list of products. He has a quiet air of ambition about him and is surrounded not only by a great team, but also by a family that has totally invested in the future of the farm. And, with two pairs of small wellies lined up by the backdoor for their children, he and Dulcie now have one eye on future generations of Crickmores. www.fenfarmdairy.co.uk

Two female chefs thinking outside the box Alice Norman is the brainchild behind Pinch, a new business making and selling restaurant calibre meal kits. Up until last year, Alice ran a fine dining Italian restaurant in Mayfair, which sadly had to close, and has since moved back to Suffolk.

Her meal kits are of a similar standard to the food formerly served at the restaurant and are created in the new farm shop kitchen at Maple Farm, Kelsale.

“I was born and raised in Suffolk, and I’ve always wanted to find a way of using the amazing local produce, from both land and sea.

The main focus is pasta, made from Maple Farm flour and eggs, with the menu changing on the first week of every month. I’m also slowly turning the kitchen into a takeaway café, offering a very small menu to start with, with one or two pastries, and perhaps some ice cream for the hotter months!” www.eatpinch.com

Salmorejo soup Salmorejo is a cold tomato soup that originated in Córdoba in Spain and is similar to gazpacho, but thicker and creamier.

It is a fabulous way of truly savouring the taste of freshly picked tomatoes, and on a hot summer’s day, there is nothing more refreshing and satisfying. Whether or not you plan on visiting Spain this summer, you’ll certainly bring a taste of Andalucía to your table with this deliciously savoury soup!

Ingredients 700g ripe tomatoes 150g stale white bread, crusts removed (not factory brand) Good quality sea salt – a generous pinch 1tbsp quality sherry vinegar 2 garlic cloves - chopped 50ml quality olive oil 2 hardboiled eggs – peeled

Method Scald the tomatoes by cutting an ‘X’ in the bottom of each one and popping them in just boiled water for about 30 seconds, before placing in a bowl of ice water. Once cooled, peel off the skins and take out the core but leave the seeds.

Place all the peeled tomatoes into a blender and blend until completely pureed. Add the

stale bread, mix, and let this sit for five minutes to allow the bead to soak up the juices. Only then, add the salt, chopped garlic, and sherry vinegar.

Start to blend again, this time slowly adding in the olive oil, to ensure that it emulsifies.

Add one of the hardboiled eggs and blend until completely smooth and lovely and creamy, then refrigerate. Serve topped with more hardboiled egg and cured ham, ideally Serrano. ¡Que aproveche!

Where the doves fly It is not exactly a balmy day July day – in fact the rain is lashing down – but we have heard tell that turtle doves can be seen at the Sinfield Nature Reserve, a rural haven for wildlife near Hasketon. With over 100 acres of wild-flower meadows, woodland and natural scrub, our success is not guaranteed but fortune has always favoured the brave, so we decide to don our wellies and head over to take a look.

On arrival we pick up a handy map that shows the various trails we can take and ask a young lad on a quad bike who happens to be passing if he has any top tips for finding our elusive feathered friends. He suggests Spiders Wood or Palmer’s Wood, wishes us luck, and heads off with a wave and a smile. As we ponder 62

the best plan of action and are debating if it is worth trudging to the far end of the reserve in this weather, our chatter is interrupted by the very distinctive purring of a turtle dove that is literally sat in the tree above us!

It is a wonderful sound, so evocative of summer, and through the binoculars we can just make out the black and white barring on its neck and the pretty pattern of the wing. Sadly, their numbers are in rapid decline, mainly due to the huge numbers that are shot in Europe on their migration from Sub-Saharan Africa, so it is a real treat to be serenaded here in Suffolk. Our spirits lifted and the clouds looking like they are also clearing, we take the North Trail to see what else the reserve has to offer.

A mown path leads through a traditional hay meadow, where owl perches can just be seen poking above the long grass and we pass some guests of the Secret Meadows campsite breakfasting on the veranda of their fabulous, converted horsebox, just one of the options available for glampers. The trails take us through mature woodland of ancient oaks and towering beech trees, wild-flower meadows, and natural scrub where the brambles and thistles are alive with the hum of bees and a fluttering of moths and butterflies. In a clearing, the dappled light plays off the patterned trunks of the silver birch and we are accompanied by the constant ‘plink plink’ of noisy chiff chaffs.

In one corner of a meadow, a shepherd’s hut has been transformed into a wildlife

spotting retreat and from the visitor’s book we learn that the reserve is home to over 50 bird species and hares, hedgehogs, owls, snakes, foxes and all three species of native deer have been spotted. At The Guardian Oak, an ancient tree that must be hundreds of years old, we pause to take in its enormity and majestic beauty, and by Spider’s Wood circle the mystical turf Labyrinth, taking a seat in the carved oak thrones for a quiet moment of reflection.

It really is a magical place and next spring, we promise to return in search of the elusive nightingale. And who knows, if we are brave enough, it might just come and perch on our binoculars!
