art of the beauty of traveling is discovering new places to eat. Springtime in the Green Mountain State is the perfect season to check off some boxes on your “must-chew” list. Vermont Restaurant Week, held from April 20 to 29, showcases the state’s finest fare and participating restaurants’ individual flair. How does it work? The 10-day feeding frenzy — organized by independent Vermont newspaper Seven Days — features special, fixed-price dining deals at more than 100 restaurants across the state. Visit vermontrestaurantweek.com for a handy guide to the $20, $30 or $40 multicourse menus. And read on for a taste of three worthy restaurants within 25 miles of the Burlington International Airport. Each of these eateries brings serious flavor to local ingredients, cooking food that couldn’t exist anywhere other than in Vermont.

Plenty of places serve in-your-face cuisine, but few are so bold as Burlington’s ArtsRiot. Located in the city’s South End Arts District, the restaurant and event space is on a mission to “destroy apathy,” one plate at a time. Two experienced yet opposite chefs helm the kitchen. George Lambertson, a native son, brings eye-popping color and pizzazz to the menu. Jean-Luc Matecat makes sure that each component is perfectly cooked and thoughtfully plated. Together, the chefs concoct Asian-inspired snacks such as Brussels sprouts with pork belly, ham breadcrumbs and yuzu juice. Pork-and-ginger dumplings are served in lobster-miso broth with shrimp, cabbage and tofu. Then there are the purely American dishes. These include a chicken sandwich with blue cheese and cafeteria-style “shrettuce,” and the popular 400 Burger. Save for the American cheese, every component — from the special sauce to the sesame-seed bun — is made or ground in-house. It’s a happier riff on a Happy Meal. Equally engaging as ArtsRiot’s food are the near-nightly events in the restaurant’s adjacent club. It’s impossible to be apathetic at the range of silly to serious gatherings, from trivia nights and schlocky horror-movie screenings to talks about issues such as food insecurity and civil liberties. All of these ingredients add up to a restaurant that’s truly one of a kind.

Situé dans le South End Arts District, cet établissement qui fait aussi boîte de nuit s’est donné la mission de « vaincre l’apathie », une assiette à la fois. Deux chefs expérimentés mais diamétralement opposés dirigent la cuisine. Le Vermontois George Lambertson ajoute de la couleur et une touche de prestige au menu. Jean-Luc Matecat s’assure quant à lui que chaque plat est apprêté à la perfection et présenté avec soin. Ensemble, ces deux chefs concoctent des petits plats d’inspiration asiatique tels que choux de Bruxelles et flanc de porc, chapelure de jambon et jus de yuzu. Les dumplings au porc et au gingembre sont servis dans un bouillon de homard et miso avec crevettes, chou et tofu. Le restaurant sert aussi des plats américains typiques tels que sandwich au poulet avec fromage bleu et laitue effilochée, et le populaire burger 400. Sauf pour le fromage américain, chaque ingrédient est fait ou moulu sur place, depuis la sauce spéciale jusqu’au petit pain aux graines de sésame. Nettement plus joyeux qu’un Joyeux festin. Presque tous les soirs, des spectacles sont organisés dans la boîte de nuit adjacente au restaurant. Ils attirent la clientèle tout autant que la cuisine du restaurant. Impossible de rester apathique devant ces prestations comiques ou sérieuses, depuis les soirées de jeux-questionnaires jusqu’aux projections de films d’horreur en passant par les débats sur des questions telles que l’insécurité alimentaire et les libertés civiles. Tous ces ingrédients conjugués font d’ArtsRiot un restaurant unique en son genre.

Main St., Richmond, kitchentablebistro.com Since 2003, married chef-owners Steve and Lara Atkins have been quietly serving exceptional food in a charming former farmhouse just off Interstate 89. Unlike many modern restaurateurs, they don’t post much on social media — although their brief Instagram feed is lovely to behold. They simply turn out pitch-perfect dishes season after season, year after year. Though the two were born 1,000 miles apart — Lara in Tennessee, Steve in Vermont — they followed oddly parallel journeys in life. Planning to go into medicine, each acquired a degree in biology before pursuing his and her true passion — food — in the kitchen. In front of a stove at Vermont’s New England Culinary Institute, they found both their calling and each other. Both Atkinses have been semifinalists in the prestigious James Beard Awards, and their Richmond bistro has been written up in USA Today, Yankee Magazine and the New York Times. In a 2008 piece, “Dazzling Fare Heats Up Backwoods Vermont,” food journalist Mark Bittman called the spot “country, cozy and comfortable” and praised the beef tartare, steamed mussels with bacon and aioli, and “fork-tender” lamb shank. A decade later, the kitchen is still turning out renditions of those dishes. Newer creations include Maine lobster bisque with house-cured salt cod, and milk-braised pork shoulder with sweet potato purée, broccoli and salsa verde. For dessert, Lara riffs on classics with aplomb. If her apple cake is on the menu, don’t miss it.

Depuis 2003, le couple que forment Steve et Lara Atkins propose sans faire de bruit une cuisine exceptionnelle dans une ancienne maison de ferme tout à fait charmante située à deux pas de l’Interstate 89. Les Atkins ont tous les deux été demi-finalistes aux prestigieux prix James Beard, et des articles sur leur bistro de Richmond ont paru dans USA Today, le Yankee Magazine et le New York Times. Grab a beer at Stone Corral Brewery (stonecorral.com). The former horse ranch offers a dozen brews on tap, plus live music Wednesday through Sunday. Tour the Old Round Church (oldroundchurch.com), a 19thcentury, 16-sided wooden meetinghouse maintained by the Richmond Historical Society. First it was the famed Alchemist, which moved to a new location after Tropical Storm Irene devastated the downtown in 2011. That meant Prohibition Pig had big shoes to fill when the brewery and barbecue joint set up shop. But from day one, the community welcomed Pro Pig. It’s a pleasure for meat eaters to find barbecue in veggie-loving Vermont. The menu reflects northern-meets-southern comfort, from crispy pork rinds dusted with spices to fried pimiento-cheese balls with chile pepper jam. Chopped pork barbecue is served charmingly on a metal board lined with brown paper, with sides such as maple baked beans and mac and cheese. Squirt bottles contain vinegary Carolina barbecue sauce and a Vermont variation laced with maple syrup. Diners wash it all down with a slew of brews, including drafts made inhouse and by famous friends, such as Lawson’s Finest Liquids and Hill Farmstead Brewery. Cocktails range from classic hot buttered rum to the Garden Grove, made with local vodka and rosemary syrup. The brewpub is built for guilt-free indulgence. On nearby mountains, it’s not unusual to hear the snowboarding aphorism “Go big or go home.” In Waterbury, a more apt slogan might be “Pro Pig or go home.” Depuis près de 20 ans, le 23 South Main Street à Waterbury est l’adresse d’une brasserie. Auparavant, c’est le célèbre Alchemist qui s’y trouvait, mais l’établissement a déménagé après que la tempête tropicale Irene eut ravagé le centre-ville en 2011. La marche était donc très haute quand la brasserie Prohibition Pig, qui sert aussi des grillades au barbecue, s’y est installée. Dès le premier jour, pourtant, l’accueil réservé à Pro Pig par la communauté a été chaleureux. Les amateurs de viande sont ravis de trouver des grillades dans cet État où les légumes volent souvent la vedette. Le menu fait une place égale à la cuisine du nord et du sud, proposant autant croustilles de couenne de porc épicées que boulettes de fromage et piment doux frites avec confiture de piment chili. Le porc haché barbecue est joliment servi sur une planche de métal recouverte de papier brun, accompagné de fèves au lard et à l’érable et de macaroni au fromage. rom lively Church Street Marketplace to serene Waterfront Park, Burlington has many charms. Chief among them: The state’s largest city is an ideal gateway to the rest of Vermont — some of which is closer than you might think. Much closer. Just over the Winooski River to the east of Burlington is Winooski. Though small — the entire city measures just one and a half square miles — this happening hood is one of Vermont’s most up-and-coming areas. Long beleaguered, the former textile mill town has experienced a renaissance in recent years. An explosion of hip bars, restaurants and businesses has positioned the city as something like New York’s trendy Williamsburg neighborhood to Burlington’s bustling Manhattan. Despite its diminutive stature, the Onion City — a nickname derived from Winooski’s Abenaki meaning: “land of the wild onion” — punches well above its weight class, especially when it comes to culture. The annual Waking Windows indie-rock music festival (wakingwindows.com), for example, is like a miniaturized South by Southwest, drawing big-name headliners and turning the entire city into a rock club the first weekend in May. The fest alone is worth the trip. But Winooski is rewarding any time of year. Visitors can experience the best parts of the city — most of which orbit a locally infamous traffic circle — in a day, or even just a few hours. To that end, we’ve plotted out a Winooski itinerary in three- to six-hour segments — a hat tip to the New York Times travel series “36 Hours.” Whether you spend all day or simply hop over for dinner, drinks and a stroll by the river, you’ll find there’s a lot to love about this little city.

9 a.m. to Noon Brunch in Burlington is a contact sport. Instead of battling the hungry — or hungover — masses at crowded BTV restos, fuel up at Sneakers Bistro (sneakersbistro. com). The low-key breakfast joint has been an Onion City landmark since 1980, thanks to its stellar eggs Benedict. Burn off the home fries with a scenic late-morning stroll. Built in 2006, the Winooski River Walk signaled the beginning of the city’s revitalization. It’s still a crown jewel, hugging the bank of the river for six-tenths of a mile. Pick up the trail at the bottom of Main Street and head east past the tumbling Winooski Falls. Don’t forget to stop for an Instagrammable selfie — #dontfallin. The River Walk connects to the Casavant Natural Area. Popular with runners and dog walkers, the woodsy urban oasis offers another mile or so of gentle walking trails. Head back to the Champlain Mill (thechamplainmill.com), a reminder of Winooski’s bygone industrial heyday. Inside, the Heritage Winooski Mill Museum (themillmuseum.org) is a treasure trove for those interested in what the mill town looked like before the condos, shops, offices and chic restaurants came along.

Malgré sa petite taille, la « ville de l’oignon » — winooski signifie « ici poussent les oignons sauvages » dans la langue des Abénaquis — se distingue à bien des égards, en particulier dans le domaine de la culture. Le festival annuel de musique indie-rock Waking Windows (wakingwindows.com), par exemple, est comme un South by Southwest format réduit. L’événement attire des grands noms de la scène et transforme toute la ville en boîte rock durant le premier week-end de mai. Le festival à lui seul vaut le détour. Mais Winooski est agréable toute l’année. Les visiteurs peuvent découvrir les plus belles parties de la ville — dont la plupart s’articulent autour d’un rond-point — en une seule journée, voire quelques heures. Bruncher à Burlington, c’est du sport. After a long, snowy winter, nothing beats watching the world come back to life, one brave dandelion and greening bud at a time. This year, Shelburne Museum — just seven miles south of downtown Burlington — celebrates the blooming of springtime with its exhibition “In the Garden.” Founded in 1947 by heiress and dedicated art collector Electra Havemeyer Webb, Shelburne Museum (shelburnemuseum.org) is known for its sprawling grounds and vast holdings of folk art. Guests are invited to meander through history at more than 25 authentic New England period structures on-site — from 20 BTVMAGAZINE.COM

a lighthouse to a hunter’s cabin to a steamboat. “In the Garden” is housed in the Pizzagalli Center for Art and Education, the museum’s year-round space for rotating exhibitions. On view March 17 through August 26, “In the Garden” mines the past five centuries of material culture to explore humankind’s relationship to flowers. It also turns its attention to flora’s pollinating counterparts: creepy, crawly bugs! As the artworks demonstrate, humans have long attempted to re-create the Garden of Paradise, and in a multitude of mediums. “In the Garden” references both botanical and entomological forms in handmade quilts, fine silverware, oil paintings, contemporary installation work and more. “While certain works celebrate our instinctual emotional connection to flowers,” head curator Kory Rogers says, “others challenge our cultural biases against insects. It is my sincere hope that visitors will take away a greater appreciation and understanding of the natural world in all its many forms.” The exhibition is divided into three thematic sections. “Flower Power: Desire, Love and Sentiment” explores the inherent pull of petals, from their hidden romantic meanings to their use in special-occasion bouquets. Another section showcases the metal art of Marie Zimmermann. Considered by Rogers to be an under-recognized craftswoman and an “American treasure,” Zimmermann kept a studio in New York from the early

The nonprofit organization is dedicated to nurturing a thriving local food system, and its land is parceled into more than 150 community garden plots and fields actively worked by small farms. Recreation paths thread through the area, welcoming the public to visit any day of the year. Don’t miss the Allée Portal, a magnificent stone archway built by community members under the guidance of artist Thea Alvin.

urlington City Arts curates exhibits in three areas of the airport: the Skyway, the area above the escalator and the walls facing security for Gates 1 through 8. Whether you’ve arrived early for a flight or are waiting to pick up passengers, do take the time to look around! March through May, the Skyway features works on the theme of “simplicity” by central Vermont’s f/7 photography group. “Simplicity implies a directness of image, shorn of complexity, ornamentation and artifice,” reads the artists’ statement. “At the same time, it leaves ample room for beauty, introspection and ambiguity.” In the Gates, Tatiana Yakusheva’s oil paintings show street life and landscapes in Burlington and beyond, shaped by the artist’s belief that “all the beauty is in imperfection.” And Phil Laughlin’s vibrantly colored oil paintings depicting natural scenes of the Champlain Valley are mounted by the escalator. If you’re going up, be sure to turn around and look at the wall behind you. But watch your step! All of these artists live or have spent time in Vermont. efore anyone takes off from Burlington International Airport, he or she has to get inside the terminal. And when a plane lands, its passengers have to disembark. That’s where Shelby Losier comes in: As BTV’s director of ground transportation, it’s her job to help everyone arriving and departing easily access their next stop — whether that’s a flight to Florida or a taxi ride to a local boutique hotel. Losier, 24, grew up in nearby Colchester and graduated from the University of Vermont with a business degree in 2016. She worked her way up at the airport from social media intern to her current position, which she’s held since December. Her responsibilities range from managing the operations and finances of the airport parking garage to overseeing logistics and fee agreements with airport car rental companies, taxis and ride-share operators. Losier sat down with BTV to discuss all of the airport’s comings and goings-on. The director of ground transportation is a new position. Why was it created? Ground transportation is such a large part of the airport: 23 percent of the operating budget comes from ground transportation sources. We started realizing how important it was. It got to the point where someone needed to do this full time, instead of many hands assisting to get it where it needs to be. Do you enjoy working at BTV? I hit two years [on January 17]. It was amazing. Time flies. The most important thing here, I’ve realized, is: No day is ever the same, so it keeps you coming back for more. What is this day going to bring? I thrive on that. You do a fair amount of problem-solving. When do you need those skills the most? Whenever it snows and there’s bad weather. The cold actually affects a lot of people’s cars in the parking garage. There’s dead batteries. Usually [drivers] are quite upset, because it’s an inconvenience and it’s cold out. However, they do appreciate the help. We facilitate calling AAA and having a warm place for [travelers] to stay inside. Part of your job is also to track how long people park in the airport garage, as well as fees from taxis, ride-shares and 34 BTVMAGAZINE.COM

Le transport terrestre représente une grosse partie de l’aéroport; 23 pour cent du budget d’exploitation provient de sources liées au transport terrestre. C’est une activité à ce point importante que nous avons réalisé qu’une personne devait s’en occuper à temps plein, au lieu de faire intervenir plusieurs personnes selon les besoins.

Aimez-vous travailler à BTV? J’ai souligné mes deux ans de service à l’aéroport le 17 janvier. Comme le temps file! Les journées se suivent et ne se ressemblent pas, et c’est ce qui me motive à revenir jour après jour. On ne sait jamais ce que la journée nous réserve. J’adore ça. Quand vos compétences en résolution de problèmes sontelles le plus sollicitées? Chaque fois qu’il neige ou qu’il y a des intempéries. Le froid nuit aux voitures dans le stationnement couvert. On rapporte des problèmes de batterie à plat. Cela cause bien des tracas aux propriétaires de ces voitures et ils nous le font savoir, mais ils apprécient qu’on leur

Vous avez tout de même aidé l’aéroport à organiser un événement pour les Bruins! L’été dernier, j’ai participé au « Boston Bruins Fan Fest Tour » qui avait lieu à l’aéroport. C’est l’une des plus belles expériences que j’ai vécues ici. Dans le cadre de ce programme, des joueurs sont venus parler de hockey aux jeunes de la Nouvelle-Angleterre pour les intéresser au sport. C’était formidable de voir tous ces enfants se lancer dans l’aventure et se faire de nouveaux amis. Il y a beaucoup d’activités sans but lucratif à l’aéroport; c’est un aspect de mon travail que j’aime beaucoup. A B E L

Vous également une fan de hockey et vous avez même joué dans une équipe à l’école secondaire de Colchester. C’est une tradition familiale, en quelque sorte. Ma mère et ma sœur ont toutes les deux joué au hockey, et je leur ai emboîté le pas. Ma mère vient de Montréal, alors, évidemment, nous sommes des fans des Canadiens — ce qui n’est pas tellement courant au Vermont. Je pense que la plupart des gens ici sont des partisans des Bruins.

But you helped the airport put on a Bruins event? Last summer, I played a hand in the Boston Bruins Fan Fest Tour that was at the airport. That was one of the coolest experiences that I’ve had here. The program brought a couple players up to get kids in New England into hockey. So that was something really awesome — you know, seeing other kids start their journey of where they find their teammates and best friends for life. That’s also one of my favorite parts of this job: A lot of nonprofit work goes on at the airport.

Nous sommes allées voir le Loch Ness et les nombreux châteaux. Nous allions au marché et mangions un peu partout dans la ville. C’était vraiment beau.

Besides your love of travel, you’re an ice hockey fan and former varsity hockey player at Colchester High School. It’s a little bit of a family tradition. My mom played. I played. My sister played. My mom’s from Montréal, so we’re naturally Canadiens fans — which is uncommon here in Vermont. I think most people are Bruins fans.

Qu’avez-vous appris à l’UVM qui vous aide dans votre emploi? L’intégration des technologies — dans mon travail, je dois être à l’aise avec Excel et le forage des données pour pouvoir analyser les activités en profondeur. Je dois aussi connaître la finance et la terminologie connexe. J’ai reçu une formation très pratique à cet égard.

You see people heading off on trips every day. How much do you travel yourself? I get jealous every time I see someone I know in the airport taking off and I am not. But I have had the opportunity to travel quite a bit. My favorite destination that I’ve been to — I went to Edinburgh in Scotland. My cousin was studying abroad. I took a week and visited her. We went to Loch Ness, and we checked out all the castles. We were going to the farmers markets, eating our way through the town. It was just absolutely beautiful.

What did you learn at UVM that helps you in your job? The integration of technology — the comfort level of being able to use Excel and data mining and really diving into analytics. Being comfortable with finance and terminology. [My education] was very practical and hands-on.

Votre travail consiste aussi à surveiller combien de temps les voitures restent garées dans le stationnement, ainsi que les frais des entreprises de taxis, de covoiturage et de location de voitures. Pourquoi est-ce important? Nous tâchons toujours de savoir quels services sont utilisés, à quelle fréquence et pourquoi, du point de vue du client. C’est très important pour nous. L’un des objectifs est de bien comprendre les habitudes de transport ici à l’aéroport. À l’automne et au printemps, qui sont les deux périodes de l’année les plus occupées dans le stationnement couvert, les employés sont invités à garer leur voiture dans un stationnement en surface. Nous analysons également les charges de vol et les moments de la journée où nous avons besoin du personnel au complet. Nous déterminons aussi le meilleur moment pour aller chercher les chariots à bagages et les fauteuils roulants pour qu’ils soient prêts pour les prochaines arrivées. Ce suivi nous permet en fin de compte de mieux répondre aux besoins des passagers et de faire en sorte qu’ils aient tout ce dont ils ont besoin.

What are some of the new ground transportation trends these days? Uber and Lyft are huge. They’ve come in and taken technology on — the ease of requesting one and having one there at your fingertips. You get here, and your Uber- or Lyft-served ride is here. That is one of the biggest trends right now.

airport car rentals. Why is that important? We place a large emphasis on what is being used, how often and why, from a consumer standpoint. One of the goals is really understanding the traffic patterns here at the airport. Fall and spring are our two busiest times of year for the garage, so employee parking is moved to a surface lot at those times. We also look at flight loads and times of day that it’s appropriate to have full staffing, and when it’s an appropriate time to collect baggage carts and wheelchairs so they are prepared for the next round of “wheels down.” Tracking ultimately allows us to meet passengers’ needs and have everything available to them that they are looking for.
