There are only a number of times where I felt like I stalked a place to let me feature them.

One of them was Yummy House in Sioux Falls. I had never had dim sum in South Dakota, and when I found out it was available nearby, it was going to happen. At least that’s what I told myself. Over a month of calls and messages (sorry again), we got in and had the best time. It’s only a matter of time before people from all around will have a photo on social media of the Porky Bun. (More on page 56.)

I’m a sucker for home improvement shows like Property Brothers and Fixer Upper on HGTV. So as I was writing about Kate’s Cottage, a small Airbnb in Beresford, I was captivated by the history of the little house. It went from an occupied home to a state of disrepair, and after renovations, now Gale Gors rents it out as a little getaway from the technologically focused world. Her story of the building also brings me back to my childhood days of wandering my grandparents’ farm, exploring the weather-damaged buildings, and playing games of make-believe. Someday soon, I plan on dragging my boyfriend Jack out there so we can have a secluded weekend away from the hustle and bustle of our everyday lives. See you soon, Kate’s Cottage! (More on page 66.)

“We believe in curating a beer list, which is what Jerry Hauck has done from the beginning,” said new owner of Monks Ale House Justin Henrichsen. “He was pouring beers that he was passionate about, that he enjoyed drinking.”

In 2007, gallery owner Jerry Hauck transformed his space to appease his love of Belgian beer, opening the first craft beer bar in South Dakota, Monks Ale House in downtown Sioux Falls.

Eventually, his wife Jeane was fed up. She told him simply, “Do it. Don’t do it. Just shut up about it. Something’s changing.”

“He was kind of a pioneer at the time,” said Henrichsen. “Even where it’s located, he was one of the early ones down [near] 8th & Railroad.”

So, Henrichsen followed Hauck’s lead in 2011 and opened Independent Ale House (Indy) in Rapid City. And earlier this year, Henrichsen jumped at the chance to own Monks, too.

Henrichsen teetered back and forth over a business plan for possibly opening his own bar for about five years.

“I spent about half an hour making the decision to buy Monks, and that included calling my wife at work and getting permission,” said Henrichsen.

Now that he owns Monks, he’s working on a few renovations including the bar top, bathrooms, and a kitchen.

To offer the widest variety possible, the bar draft system has been expanded to accommodate 50 lines, a change from the previous 39. The draft beer list is constantly changing and rotating as some brews are small, limited batches. The current lists can be viewed online.

The menu at Monks is also making way for a food program similar to that at Indy, introducing a variety of handmade pizzas and salads. Along with the food, Monks will also offer a more extensive wine list.

“Wine is a big deal to a lot of people, and I take beer seriously like people take wine seriously,” Henrichsen explained with a laugh. “We’re beer geeks, and they’re cork dorks.”

While he’s working to improve the space, he says he is also trying to maintain the history of the bar.

Although Monks is under new ownership, serving from a new bar top, and adding a few more details, the bar’s purpose remains the same.

As Henrichsen said, “We still want a cozy place where you can sit down with your friends or sit down next to a guy who really loves beer, and you can just have a conversation.”

“With [all of the craft breweries near Monks], we’re becoming this area where people can have a couple beers and walk over to another brewery to have another,” said Henrichsen, lovingly referring to the area as the “Brewmuda Triangle.”

Head chef Matthew Regnier is constantly experimenting and creating fresh small bites in the kitchen.

“I’m trying to embrace the fall, heavier dishes,” he teased, explaining some items weren’t finalized.

“We want people to come in, try a couple cocktails, order a whole mess of small plates that are shareable, and eat a little bit of everything,” he said. “You don’t have to commit to some big, expensive entrée.”

Regnier did give 605 a look at another noted menu inspiration— Asian cuisine. This includes the popular Kung Pao Cauliflower with fried cauliflower, spicy sauce, chiles, peanuts, and scallion.

The chef has recently been working on new menu items inspired by the season.

The Crispy Brussels Sprouts are a new addition and have kimchi purée, bacon, and a carrot nest.

“People love it. We pulled it off the menu for the summer, and we bring it back when it gets colder,” said Regnier.

“We make kimchi in house. I’ve always made kimchi,” explained Regnier.

“I worked with a Korean woman and kimchi is in my blood almost.”

Like the meat selection, general manager Michael Mohr says the team tries to source locally for all ingredients at The Treasury.

A Treasury favorite has returned, and it’s the ever-changing Sausage Board, which has a “trio of regional flavors.” While the entirety of the board is never the exact same, it often includes regionally sourced bison, duck, and pheasant sausage.

“Locally sourced or regionally sourced is kind of our mantra,” he said. “We wanted to carry that mantra into the bar. I think everyone that’s involved in the cocktail production has kind of owned that piece and wanted to make that our mainstay.”

The Sausage Board is served with crostini, pickles, and house mustard.

“Everything here was bought up and down Phillips Avenue,” said bar director Paul Squyer.

For example, the Lady in Waiting has Earl Grey tea syrup made using tea from The Spice & Tea Exchange. It was also created with Glacial Lakes vodka, which was a big move for Squyer, who says he tries to avoid vodka concoctions.

“It’s something we’ve avoided for the most part because we try to really accentuate the spirit in all of our cocktails. We want our base spirit to be our main player,” he explained. “That’s something that we agreed: Vodka is a supportive player to give a booze boost to the ingredients behind it.”

But Squyer also wanted to incorporate local spirits, so this was the first vodka drink on the menu. Lavender bitters were added, and it was finished with citric acid.

Bartender Kate Chambers was behind another fall drink, the Witchy One. This involves London Gin, Campari, lime, turmeric, and egg white.

“I love turmeric. I think it’s a great spicy, bitter flavor that I don’t really see in cocktails,” said Chambers.

Mohr says the entire cocktail crew was put to the test for a trio of new drinks paired with Skip Day seltzers by Fernson Brewing Company.

“[Fernson’s marketing team] came in and they asked us if we’d be interested in doing a collaboration cocktail with the launch of the Skip Day,” recalled Mohr. “They brought us in a couple cans of each of them.”

They ended up going through quite a few more cans, as they struggled to create cocktails for Black Raspberry, Orange Pineapple, and Fruit Punch. The Bramble came together in Squyer’s mind first.

“One high mark to come out of 1980s cocktail culture was the Bramble out of London, which was traditionally blackberries, blackberry liqueur, gin, lemon,” he said. “That was the most obvious one when I looked at the three Skip Days.”

The finished product had London Dry Gin, crème de cassis, basil, blackberry, and lemon. Next was the Spritz & Shout with the Skip Day Orange Pineapple, aperitivo, and lemon. Last, but (definitely) not least, was Candy Shop.

And different is what The Treasury hopes to be all around.

“The fruit punch was so hard,” recalled Squyer.

After going through “over 18 cans,” the final product had Peychaud’s Aperitivo and lime.

“The atmosphere speaks for itself,” said Regnier. “It’s a little bit edgy, but we’re just going to keep pushing.”

“It’s such a familiar flavor that I think we really made it different,” said Chambers.

Bickering, Brothers, & Booze

Bickering Brothers in Pierre didn’t always have that name.

After spending plenty of time exploring Europe and attending school at The American University of Rome, Jamie Rounds became captivated by the idea of owning a microdistillery.

Jamie returned to South Dakota and convinced his brother, Tom, to invest in the business with him and to order a Levarian copper still. After Tom invested, he realized that his money was simply a down payment.

“They had to have the still shipped over,” explained Dennis, another brother. “They’re fairly complicated pieces of equipment, and the instructions were in German.”

After setting up the still, the brothers decided to lobby for an artisan distillery program setup rather than a commercial distillery license because the fee would be smaller. During this time, Dennis says people began calling them the “booze brothers.”

Tom and Jamie continued to debate on business plans, arguing constantly. What type of storefront should they invest in?

Should they buy or rent? New or used equipment? Dennis says the arguments never seemed to stop.

Regardless, in 2006 the distillery opened and began operations.

“That first batch of neutral brandy came out wonderfully,” said Dennis. “It tasted like a mild, smooth whiskey, not so much a brandy.

People would argue with us, saying,‘That’s not brandy, it’s whiskey.’”

Bickering Brothers operates out of the first legal distillery in the state, the Rounds’ family-owned Dakota Spirits Distillery, located about a quarter of a mile from the airport in Pierre.

Finally, years after the start up, Tom’s son A.J. interrupted a disagreement, “You guys bicker more than anyone I’ve ever known. You shouldn’t be called the Booze Brothers. You should be called the Bickering Brothers.”

“We use 100% South Dakota wine when we distill it,” explained Dennis. “It’s kind of a surprise because you don’t know what it’s going to turn out like until after it’s aged.

Even if you’re consistent with your process, there’s variation.”

“It just stuck,” said Dennis.

As the website states, they realized that “some things are worth fighting for.”

After the lead distiller makes the products, they’re aged in American Oak barrels for around five to six years, according to Dennis.

Most times, the distillery is run by one or two people.

Sometimes the distiller has to call for backup. That’s where Dennis, an engineer by trade, comes in.

“A lot of times, it just takes more than just one person—even with this small distillery—to keep it rolling,” said Dennis.

He comes in to help the process and to help when they hire new employees. And just like when the two previous chief distillers needed a hand, Dennis dropped in when they welcomed the newest one following the COVID-19 shut down. “[When COVID-19 hit] we pretty much shut down operations then. We shut the tasting room; we quit manufacturing until recently. We hired a new operator, soon-to-be chief distiller, Greg Campbell,” explained Dennis.

Now that they have opened back up, Dakota Spirits will be offering tastings and returning to their typical operations, creating and sharing their craft spirits with the world.

After a battle with nutrition and weight in high school when she says she lost 80-plus pounds, she attended South Dakota State University and found dietetics. She finished out her education journey at Iowa State University, and now focuses on her business motto of “empowering real food first.”

New Noms I enjoy trying different varieties of fruits and vegetables that South Dakota farmers have to offer at local farmers’ markets.

It’s great trying out new varieties of produce like heirloom tomatoes, as well as checking out homemade jams, jellies, and apple butters. I love the Brookings Farmers’ Market, the Market at the Meridian in Yankton, and Miller Farmers Market, just to name a few.

The Great Outdoors I love to spend time camping at the South Dakota State Fair or any state parks in South Dakota. I grew up camping in the Black Hills nearly every summer, so I enjoy hiking trails, riding my bike, fishing, and relaxing by the campfire.

Small Town Treasures [Another thing I love is] trying new, local, small-town coffee shops—like a latte. I love all types of small coffee shops.

Some of the state’s smallest towns have the greatest treasures.

My go-to drink is an iced coffee with almond milk, and two pumps of caramel flavor if I’m feeling festive.

Sporty Spunk [I spend some time] watching South Dakota State University and my hometown football team, Miller Rustlers, during the fall. Tailgating and catching up with friends and family adds to that.

Stand for Small Businesses It’s important to support local small clothing businesses and women entrepreneurs in our state, such as The White Poppy Boutique, CCXO, Head 2 Heels, and so many more.

You can even catch me modeling from time to time for a local clothing boutique. I have modeled for Head 2 Heels in Yankton and even co-hosted a pop-up shopping event, offering healthy recipes to customers shopping.

Cruising Down the River

Midnight Movies

I love boating on the Missouri River with my fiancé, Nick, and his family during the summer months, cruising and relaxing on the sand bars.

My hometown of Miller is home to one of the few drive-in movie theaters left in the state. This was one of my favorite memories growing up in a small town.

Fall is my favorite season in South Dakota, and I love being able to be outside at apple orchards. Who doesn’t love homemade apple desserts?

Getting outdoors and getting in my 30 minutes of movement a day is one of my favorite parts of the day. South Dakota has the best scenery for walking and running, from the Black Hills to the Sioux Falls bike path to the gravel roads near my grandparents’ farm.

NOT ONLY THAT, BUT THE EATERY— SUITABLY NAMED YUMMY HOUSE— TOOK OVER THE FORMER KOWLOON CHINESE RESTAURANT SPACE ON SYCAMORE AVENUE RIGHT ACROSS FROM HY-VEE. THIS HAPPENS TO BE NEAR MY CHILD’S DAYCARE. I COULD SWING BY WHENEVER!

Did the restaurant not see the (random) stars aligning?

They didn’t, because I called, emailed, and Facebook messaged a dozen times to no avail. I felt like a person getting ghosted on a dating app.

Finally, manager Joyce Chan answered my message and scheduled us to visit. Hallelujah.

I stopped by on a Friday afternoon with 605’s Jordan Cushman and John Snyder (I’m shocked there weren’t any posters of my headshot inside of the building warning staff to turn me away). The inside had murals of cartoon bubble tea and dumplings, and I think I literally exclaimed, “Cuuuuuute!”

Joyce greeted us and sat us at a prime spot in the corner.

She then gave us the rundown.

“Yummy House is traditional Chinese food,” she said. “In Sioux Falls it’s typically American Chinese, but here it’s traditional.”

Our table was soon full of dim sum, including the Steamed Chicken Bun, Walnut Bun, and the Porky Bun with Custard.

Dim sum is a Cantonese style of steamed dumplings and more items prepared in small, bite-sized portions. This is typically served via a mobile cart to seated patrons where they can pick and choose as many small plates as they desire and share (or don’t share) with tablemates.

The Steamed Chicken Bun is a best seller, and we could see why as we demolished those first with our chopsticks. Before we tried the Walnut Bun, Joyce advised us to save that for last.

“Dim sum is from China, and everyone can order and little by little they can share with each other,” said Joyce. “A lot of it is steamed, deep fried, and baked.”

We moved on to the Piggy Bun. After taking multiple photos on our phones, social media, and for the magazine, we (sadly) dug in to the cute face looking up at us. This also had a sweet flavor.

Eventually carts will be pushed around, but Joyce says because of COVID-19, Yummy House is currently holding off.

“This is not at all what I expected but it’s very pleasant,” said Jordan. “It’s a great combination of sweet and salty.”

Everything dim sum is handmade from scratch. That’s why there aren’t a lot of people doing it—it’s a lot of work.”

It was a citrus-like gelatin inside, and we all had dipped it in soy sauce by mistake, which ended up being a happy accident.

As Jordan said, it made it the right dash of salty goodness to the sweet flavor.

As the empty plates were taken away, they were filled with more options, like the Shrimp Shumai, Black Pepper Beef, and Meat Rice Noodles.

“I like the jumbo shrimp. That one is a special,” said Joyce. “We order the shrimp from Boston.”

The Black Pepper Beef was one of my favorites, and I actually ate so much of that, that I missed trying the noodles.

Then came the Fried Dumplings, which were made with homemade spinach wraps.

“The owner wants to do everything by hand. She works starting at 3 a.m. and starts making everything fresh,” explained Joyce.

As we got to-go boxes for the large portions, we finally took a nibble of the Walnut Bun. The white chocolate and walnuts were the right way to end our feast.

Yummy House not only is a foodie experience, but the team really did it right. From the décor, to the service, to the Porky Bun that will be on everyone’s Instagram, this is a great addition to the restaurant scene. And don’t worry, Joyce says they’ll be adding more cartoon buns in the future.

The cartoon dim sum and bubble tea on the walls put a smile on all of our faces right when we walked in. Everything about it was fun, from picking out items out of the novel-sized menu to sharing and chatting about the dishes. It’s what we all could use in 2020.

A lot of the dim sum is $4.50-$6.50, and one of the most expensive main dishes was $16.99.

Everything was so fresh and full of flavor. I’ll admit I was nervous to try the sweet buns, but they were delicious. Not only that, but I never thought I would really like the sweet and salty Porky Bun.

FTER MORE THAN A DECADE OF WORKING IN THE LUMBER INDUSTRY AS A FOURTHGENERATION SAWYER, LEE EDDY DECIDED TO OPEN SAWYER BREWING CO. IN 2018 WITH HIS WIFE, ALI, FOR A CHANGE OF PACE. “Every brewer has a passion for drinking and making beers,” he said. “I always wanted to do something different, and I knew that at my age if I waited much longer it’d be hard to find the ambition to do something different.”

The taproom has a quaint, cozy cabin feel, feeding into the woodsy origins of the brewery’s namesake. The walls are covered in pictures and some rogue sawblades, but the bar top is the true star.

To keep with his roots, Eddy chopped down a lone tree from his grandfather’s farmyard, and the remnants of that tree were made into the place where you can belly up.

Behind the bar, there are 12 of Sawyer’s craft beers on tap.

And the brewery does more than just quench thirsts.

“Obviously our passion is beer, but we do have wood-fired pizza,” said Eddy. “It’s something different—just the aesthetic of the pizza oven.”

One of Sawyer’s most popular pizzas is the Potato Pizza, which is pizza topped with white sauce, bacon, garlic mashed potatoes, green onions, and sour cream.

“It’s basically a loaded baked potato in pizza form,” he explained. “People love it.”

To enjoy the beer and try a new pizza, recline on the back patio with a view. Located in a newer development in Spearfish, Sawyer sits right next to Spearfish Creek.

“The back patio seats 50-60 people,” Eddy said, explaining why it’s one of his favorite parts. “It’s a cool setting that people enjoy. It’s pretty relaxing back there.” +

Kate’s Cottage

Down a paved road not far from Beresford sits Peterson Farm, a property that has Farm been in Gale Gors’s family for nearly 130 years.

Among the many buildings on the acreage are Gors’s home, the main farmhouse, and a small, renovated Airbnb called Kate’s Cottage.

The cottage had many different occupants from the time it was built, around 1940, to when it became vacant. And when Gors was a child, she says she and her siblings used to use the cottage as a playhouse, but it eventually became overstocked.

“From about 1960-2013, [the cottage] had collected tires and cans of grease and any number of things that farmers can’t part with but don’t have anywhere to put,” she said.

After Gors bought the acreage from her sister in 2010, she eventually decided to take a closer look at the little cottage that had been vacant since the late 1950s/early 1960s.

“I went over there with the intent of taking the woodwork off and maybe just taking the house down because it was in very, very poor condition,” she explained. “I got one piece of trim off the door, and it just kind of hit me that I should be restoring this rather than taking it apart.”

And that she did. With the help of a contractor and various others, Gors rewired the house, added plumbing, put in a septic tank, built a bathroom, restored the interior, and brought the porch back to its former glory.

“We restored the front porch as best we could from the pictures that we have. It looks a lot like it did when it was first built,” she exclaimed.

The cottage comfortably sleeps two with the queen-size bed, one bathroom, and a cozy living space with a kitchenette. But Gors says there’s still something missing.

“The only thing lacking is some of the gingerbread trim, and I’m still trying to find some of that to add to the porch to make it look more authentic,” she said.

After all of those renovations started in 2013, Gors’s first guest arrived in 2015.

“I’ve had people feel like they’re walking into a movie set because you feel like you’re walking into a different era,” said Gors.

The cottage has neither an internet connection nor a TV. Gors says it has become exactly what she had hoped it would be: an escape from the hustle and bustle of the busy world.

Though Peterson Farm doesn’t operate as a livestock farm or harvest crops, there are a few animals remaining.

“It’s kind of an oasis,” she explained. “We specialize in peace and quiet. I get comments from people about what a relief it is to not be so wired.”

Some of the last guests Gors had in the cottage came from New York City, and when she shut off the yard light, she says, they were captivated.

She smiled, saying, “People are just amazed by the stars and the Milky Way when there’s no light pollution.”

People might know me from… working at the Denny Sanford PREMIER Center as an event manager before starting my own event planning company.

I started planning events because… it fed into both my organizational and creative passions. All the way back to my 13th birthday party, I loved picking out all these details with my mom, Janie Rae. She loved bringing people together, and I shared that love with her. Throughout college I was a part of planning several events, and my passion grew with each one. I knew this is what I was meant to do.

In my free time, I… love hosting parties with my

closest friends and family. I also love cooking Italian dinners with my husband, Matt, spoiling my dogs, and a good wine tasting.

The events we work on include…

weddings, weddings, and more weddings. We also have several business summits and holiday parties we work on each year. Bridal showers, birthday parties, graduations, baby showers, and other social events are sprinkled in throughout the year as well.

The best part of my job is… when I’m at a

day-of coordination and see all the guests enjoying dinner, sitting at the tables we designed, conversing, laughing, just simply living in the moment, and celebrating together. I get to be a part of that, and that is really priceless.

One of my favorite projects has been… custom designing backdrops for a recent wedding on

October 10. I really love creating something that has never been done before. It challenges my creative side, and that’s how I know I’ll always be pushing my limits.

Something I recommend to my clients is… to hire a day-of coordinator. Your wedding is

one day. One day, a few moments, to soak up that time with your family, friends, and the love of your life. You don’t want to spend it worrying about if the candles are lit or if the desserts arrived on time.

“My favorite place to go for inspiration is the Jane Rae Events studio. Our space screams creativity, and when I’m in there ideas just keep flowing.”

My pets are… my babies. I have a black lab, Jetta, and a yellow lab, Bella.

They’re sisters from the same litter and are inseparable from each other and me. I love bringing them to our studio space and greeting clients with wagging tails.

boutique design studio that offers three vendor services in one. Since we plan, have an extensive rental inventory, and a floral design team in house, we’re able to walk our clients through the entire design process in our studio.

What I loved about putting together the business was… the fact that it

was my own and challenged me in more ways than I could have ever thought. I always find myself wanting to push my limits and can honestly say my company brings new challenges all the time that I can’t wait to conquer. I also loved the fact that I can offer my talents to help people. I love seeing the stress fade and the happiness and excitement flood in.

Where the Child Things Are

It seems like yesterday 605 Magazine’s Publisher & Founder Alana Snyder was asking me if I wanted to write the family column, seeing as I had just returned from maternity leave with Sloan.

It was a no-brainer, but as soon as I said yes, I was paralyzed with fear that I was unqualified to write about parenting, kids, and the transition into motherhood.

I was a fraud.

Sloan was only a couple of months old, no one was sleeping, and I felt like I was failing in all aspects of the word. Shouldn’t someone with a designer diaper bag and a degree in swaddling be in charge of this?

All of these doubts were quieted when I realized that everyone starts from the same place—buried in a mountain of dirty diapers and parenting handbooks, attempting to navigate the storm that is a newborn.

Fast-forward two years and a lot of parenting fails later, and we’re ready for round two.

Just shy of 20 weeks, Reid, Sloan, and I are gearing up for baby number two at the end of March. With half of this pregnancy under our belts, we have gotten through the morning sickness and the initial fear of being pregnant during a pandemic.

All of these hurdles seem easy in comparison to our next challenge: preparing our head-strong toddler for another tiny human to enter our family.

Being an only child, my first concern was that she was going to feel replaced and have this unresolvable resentment toward me until the end of time. I know that sounds dramatic, but I have no experience to pull from, so of course I went to the darkest corners of my mom brain.

After discussing my fears with Reid, my friends, and honestly anyone that would listen, I was quickly reassured that this was not something that crossed children’s minds, and in fact, I was insane for even considering it.

Once I was convinced Sloan wouldn’t hate me for the rest of eternity, I started doing some research on the “best” ways to introduce Sloan to the new baby. There are just as many techniques and theories about this as there are about potty training and breastfeeding.

Needless to say, it’s a very overwhelming concept.

I want to make sure Sloan feels involved and loved, but I also want to make sure the baby is safe and a priority. Then there is the regression phase that the internet tells me can be as intense as the toddler wanting to go back to bottles and a crib.

WHAT I’VE LEARNED » Morning sickness with a toddler is so much worse than without. With that being said, even spending 10 uninterrupted minutes with your little one, whether it be reading in bed or watching Bubble Guppies, keeps them feeling connected and loved. » Start introducing your toddler to the idea of a baby from the get go.

Showing them ultrasound photos, having them help with the nursery, and picking out toys together are great ways to ease them into the new addition. » Every toddler is different.

Don’t feel like you need to follow one school of thought for bringing home your new baby if parts don’t make sense for you and your family.

And don’t even get me started on the different (and sometimes dangerous) ways jealousy can come out between a toddler and a baby.

So, with a handful of horror stories and my pregnancy hormones in full swing, I’ve decided that I’ll keep the research I’ve found in the back of my head, but that I’ll do what I’ve always done when it came to parenthood.

I’m just going to go with it.

Sloan is defiant and stubborn and, dare I say, a lot like me. She’ll tell us what she likes and doesn’t like, and we’ll go from there. I’m not going to spend the next 20 weeks distraught over the fact that she might hate the baby. I’m also not going to convince myself that any amount of preparation will guarantee an instant bond and connection.

What I’m going to do is give Sloan all of the tools she’ll need to enter into sisterhood, whether it be in the form of books, baby dolls, or a safe space she can retreat to when things are a little too overwhelming for her developing toddler noggin.

There are times she will lay on my stomach and say hi to the baby, and there are also times that the mention of a baby will send her into a tailspin of tears and anger.

Chef MJ Adams of Potted Rabbit Media moved to the Black Hills to open The Corn Exchange after spending 12 years in New York. After 15 years, the restaurant closed down. She has since published The Corn Exchange Cookbook: From the Big Apple to the Black Hills, a collection of recipes from 30 years of culinary exploration.

Adams opens up to 605 about her love of South Dakota, her passions, and the time she met Gordon Ramsay.

What keeps you in South Dakota?

I feel it’s the gateway to the West. I love that I can be in Yellowstone or Montana at the drop of a hat. Wonderful friends whom I’ve met over the years through the restaurant are also a plus.

What else are you passionate about?

[I’m passionate about] supporting small [agriculture] in our state and the importance of highlighting local food. That is why The Corn Exchange was recognized nationally, because you could come to the restaurant and experience South Dakota.

What are the one or two ingredients that you feel should be staples in most recipes?

Shallots and great olive oil. Can I say three? Good butter!

What recipe are you most proud of?

My Nutmeg Cake. I created it when I was the pastry chef at Alison on Dominick Street in New York City.

If you had to make a three-course meal for Gordon Ramsay, what would you feed him?

I actually met Gordon Ramsay. I was in London in 2001 and was trying to drum up some future work with my Food Arts article that was published in June 2000. I wanted to dine at his place, and being alone, I was squeezed in at [Restaurant Gordon] Ramsay. I was chatting with the staff about Food Arts.

They took a copy and went back to the kitchen. They said Gordon wanted to visit with me, so I popped back into the kitchen. It was during the time when [women were only] doing pastries in the kitchen [not on the line]. I don’t think he was that impressed with me. But I think after my meal (Pear and Zucchini Soup, Chicken Bistro, and my Nutmeg Cake) I would prepare for him, he would think, ‘Hey that girl can cook. She’s not just a novelty standing out on the prairie in front of hundreds of buffalo.’ I still have my restaurant receipt from that meal. I framed it: £87.
