I love sunshine islands but I’ve never been someone who can spend long hours by the beach or pool. A mix of gentle activity and serious chilling out is my kind of holiday, so Walking the Coastal Trails of Menorca run by Headwater Holidays sounded very Me.

This single-centre holiday includes a week’s half board at a quiet, quality hotel; hire car for the freedom of the island; and walking notes for six country and coastal walks, plus two town trails. My husband and I flew out in May but the itinerary also operates throughout June, September and October. Coastal Trails of Menorca is a great choice for those who want to have a good but not overly strenuous halfday walk that leaves plenty of time for other visits or just relaxing by the water. Graded One Boot – easiest of Headwater’s graded itineraries – the daily walks average 6.5 miles on level to gently undulating terrain.

Headwater guests spend the week at the Morvedra Nou Rural Hotel, around 5 km inland from Ciutadella and surrounded by farmland. Owned by the same family for three generations and efficiently run by the ever-smiling Victoria Bendito, the main building is a tastefully restored 17th century farmhouse, whilst the bedrooms – apart from three suites in the main house – are located in the former stable block. These ground-floor rooms offer accommodation that’s half in, half out – a double bedroom with bathroom, and a private patio screened by thick hedges with a ‘roof’ of plantcovered trellis, The pool terrace behind the hotel looks down over glorious gardens, filled with flowering shrubs and birdsong from dawn till dusk.

Carrwood Park, Lancashire The walks can be enjoyed in any order and if you have an afternoon flight back you can explore Mahon, the island’s capital, before you go. With a late-morning return however, we took a mid-week morning out to explore the town’s historic streets, dotted with Georgian buildings as a legacy of British rule, and to enjoy the harbour views. There was still time for our daily walk later.

Both the Royal Horticultural Society Garden Holidays and Kirker Holidays offer tours around the lakes, where there’s the opportunity to take in magnificent villas as well as the flora. Camellias are a favourite near Lake Maggiore, and the islands of Isola Bella and Isola Madre showcase stunning planting: the former more formal and Italianate, the latter known as highly diverse and British in style! Many capital cities have botanical gardens as part of their civic offering, and so it is in Prague, although the nearby Castle Gardens and Wallenstein Garden should not be missed either. Portugal’s quintas have the most extraordinary horticultural reputation, and the Atlantic islands of Madeira and The Azores are destinations of great interest. Many cruises, including Fred. Olsen Cruise Lines and Cruise and Maritime Voyages, dock here for a day or two for this very reason. Or you could stay with Sunvil on one of the islands, and immerse yourself in the plant life. Worldwide: North Africa and in particular, Morocco have some unexpected gems, Yves St Laurent’s Majorelle Gardens are truly inspiring as are many of the riad gardens, decorated with tiles and dainty fountains amid lush greenery. Further afield, the gardens in China have long filled the imaginations of those searching for exotic plants. There are many botanical gardens to be explored a well as adventures to be had, following the journeys taken by plant hunters in the I9th century. Think Indiana Jones cum Alan Titchmarsh! These journeys are usually led by horticultural experts, so you can really benefit from their knowledge and find out if the Chinese tree peony will really grow well back home in York. RHS Garden Holidays have fabulous tours to South Africa, Chile and New Zealand: with very different growing conditions and some quite bizarre plants. THE SUMMER TRIANGLE . . . . . . AND A LOVE STORY CAST AMONG THE STARS Brian Jones The summer night sky is dominated by the three constellations Lyra (the Lyre), Cygnus (the Swan) and Aquila (the Eagle), brilliant Vega forming a large and conspicuous triangle with nearby Deneb in Cygnus and Altair in Aquila. Known as the Summer Triangle, this formation is very prominent in the evening skies at this time of year. Stars from two of these constellations feature in a Japanese legend which tells of two lovers – the beautiful Orihime and the shepherd Hikoboshi. After their marriage, they began to neglect their work to be with each other. This angered the gods who punished the couple by sending them to opposite banks of the heavenly river. They are only allowed to meet on one night – July 7th – which is celebrated as a holiday by children in Japan. If you want to see Orihime and Hikoboshi, look high overhead after the sun has set. The first star to appear will be Vega, the brightest star in the small but distinct constellation of Lyra and which represents Orihime. Halfway between Vega and the south-eastern horizon will be the bright star Altair in Aquila which represents Hikoboshi. If the night is dark and clear you may see the pearly glow of the heavenly river stretching between them. Running from the north, extending across the sky and meandering down towards the south, this heavenly river is in fact the Milky Way. Our Sun is a member of a gigantic spiral formation of stars called the Galaxy. The faint misty band of light we see crossing the night sky is our view as we look down along the galactic plane, the Milky Way being formed from the combined glow of countless thousands of stars. Although the vast majority of the individual stars within the Milky Way are invisible to the naked eye, their combined light produces the faint luminous band we see spanning the heavens.
The astronomers of ancient Greece identified the constellation Lyra with the lyre given by Apollo to the musician and poet Orpheus to accompany his songs. Deneb, whose name means ‘tail’ in Arabic, depicts the tail of Cygnus, a large, cruciform-shaped constellation which also bears the unofficial title of the Northern Cross. From Deneb the rest of Cygnus can be picked out easily, the swan’s outstretched wings and long neck prominent as it flies southwards along the Milky Way. The Summer Triangle is completed by Altair, the brightest star in the

constellation Aquila. Located over the southern horizon during summer evenings this constellation, its leading star Altair in particular, is fairly prominent. The area of sky around Aquila and Cygnus is rich in star fields and will repay sweeping with binoculars on really dark, clear nights. Now that the warm summer evenings are upon us, why not venture outdoors and check out the Summer Triangle? When you do, perhaps you can spare a thought for the two starstruck lovers Orihime and Hikoboshi. Happy stargazing!

R O B E RT POWELL A MODERN KING? FOR a lad from Salford, playing the King of England is quite a step up – but it’s just a further page in the very varied history of actor Robert Powell...
Even anyone who didn’t recognise that strong face and haunting eyes would know the wonderful, warm tones of his voice. A combination of that and a prodigious and chameleon acting talent have also helped ensure a lengthy and successful career in both theatre and TV. But Robert as a modern king? Well, audiences from the Cheltenham Everyman Theatre to the Manchester Opera House are able to tell you that this characterisation in the fascinating play “King Charles III” is brilliant entertainment. Written by Mike Bartlett, who also wrote last year’s TV hit “Doctor Foster”, it looks at Prince Charles as he takes over the throne and reveals the people whose names are so familiar to us. Oddly, it’s a role tailor-made for Robert Powell because he does actually know the Prince; he’s met him several times socially as an ambassador for the Prince’s Trust. “Prince Charles is an absolutely delightful man,” he explains. “He has a conscience and he follows it. He’s very principled but he’s also very charming.” As to Robert’s own interpretation of the Prince, when he first started in the role he realised that it could not be an impersonation. “I do a bit of a party piece for fun being Prince Charles, actually,” he laughs, “But the role had to be played in a different way, so that the audience aren’t so busy with an impersonation that they are distracted from seeing the character.”

As he is explaining this, however, he does unconsciously sound very like the Prince. Audiences, though, have accepted his interpretation so well that they have stayed entranced throughout. Challenging roles are nothing new for Robert Powell, now 71, as his career is littered with a varied catalogue of parts. He was born in Salford in 1944 and started his acting career while attending Manchester University. He made his film debut in 1967 and landed his first starring role in “The Italian Job” in 1969. His film career has included Franco Zefirelli’s “Jesus of Nazareth” in 1977, which for many was a defining role for Powell. He has been quoted in the past, though, as saying: “I hope Jesus Christ will be the last in my line of sensitive young men for quite a while.” He’s certainly not been typecast. When he took the lead role of Richard Hannay in the re-make of “The Thirty Nine Steps”, this sparked an eponymous TV series for him in the ‘80s which not only went straight to the top of viewers’ favourite programmes but which, as he admits, was really his favourite role in his career so far. “The writing was wonderful and I really loved being Hannay,” he says. “Today, all the crime heroes are flawed beings with problems, but Hannay saw the world in black and white and was very straightforward, rock solid – I liked that.”

“I did feel that we could take that formula to a new series and have The Gardeners, The Chefs or The Doctors with two incompetent, idiotic characters but it’s just an idea.” Robert Powell is married to former Pan’s People dancer Babs Lord and they have two children. It’s plain that he’s very much a home-bird, and that he really doesn’t enjoy touring “although it’s good for the bank balance.”
Sadly, Thames TV which made the programme lost their licence not long afterwards and any further series disappeared.
“When I’m driving and I get fed up with Radio 4, I switch on Radio 4 Extra and listen to all those old comedy programmes for miles, laughing away,” he states.
He’s had numerous other TV roles, including the popular series “Doomwatch” and he enjoyed a lengthy role as the hospital boss in “Holby City.”
So, is there no chance of “The Detectives” coming back? “You can never say never,” he says, “but it’s finding the writers. Steve Knight,
He’s generally fit and healthy. “I had an NHS check-up and the doctor said I’m fine. He did ask me, though, if I’d ever smoked and I said I had but I’d given up 30 years ago. He said that my lungs were actually a lot younger than I was, which is strange!” He’s always enjoyed sport and only gave up cricket 10 years ago. These days, he plays golf “although not in the Winter.”
Robert does, however, talk fondly about probably his most unusual career move, when his pal and golfing partner comedian Jasper Carrott suggested he join him as two incompetent detectives in sketches for Carrott’s own hit TV series. This proved so popular that a separate series, “The Detectives”, resulted , showcasing Robert’s humorous side and acting skills even further. For what could often be classed as a “serious actor”, he admits that humour plays an important part in his life. He loves the old Goon Shows – something he has in common with Prince Charles – and ‘50s and ‘60s radio favourites like Round the Horn and Ray’s a Laugh.
He comments: “You tend to eat out a lot – I usually have a good breakfast in the hotel and that lasts me until after lunch. In the past, I’ve gone out to eat with chums in the cast after the performance but these days the cast are mainly young and just want to go to the pub!”
At the end of March, “King Charles III” opened in Sydney. He’s been to Australia many times and likes it so he’s happy about that, and afterwards he’s taking three months off.
I do a bit of a party piece for fun being Prince Charles, actually... who helped write the original series, is a famous screenwriter now and very busy so I don’t think he’d want to do this again.

Then, he’s going to tour with his good friend actress Liza Goddard in the Alan Ayckbourn comedy “Relatively Speaking” – “and Liza and I will go off in her car in the daytime to visit museums and castles, which is what we always do, “ he says. All of which seems perfectly fitting for an actor who currently daily slips so easily into the role of our future monarch.

Reality Check: The impact of Britain leaving the EU David Oversby at True Bearing Chartered Financial Planners gives his view on the impact of Britain leaving the EU. Following the ‘Leave’ vote, the UK has been awash with discussion and debate. In newspapers, on the TV and radio, at work, in the supermarket, on social media. Wherever we turn, there are conversations taking place about the referendum outcome and whether it is good or bad for the future of the country. Whichever box you ticked on 23 June 2016, there’s no denying that there have been effects as a result of Britain leaving the EU, however, there currently appears to be more political upheaval than economic. No matter how you look at things, the key is to not get swept along with the media storm, stay calm and don’t panic!
Stock markets When a Leave result came in overnight on 23 June it was no surprise that the stock market reacted negatively to the news. Despite this, Britain’s premier stock index, the FTSE 100, has since gathered pace and has reached 11-month highs. The blue-chip index has gained nearly 16 percent since its post-Brexit low on June 24 and is up more than 20 percent from February.
Trade deals with other countries may be easier to win We traded with the rest of the world, and the EU, before the EU was invented and can do so again. The process should now become easier as we will no longer need a consensus among 28 quarrelling, disparate countries. The UK will also be able to renegotiate trading terms with the EU and non-EU countries alike. The US, India, Australia, New Zealand, South Korea and Mexico have already expressed interest in getting deals done fast.

This will increase the competitiveness of UK exports and should cause an increase in demand for UK exports.

differences. Firstly, because the change is so small. Secondly, because banks were certain it was coming and many have already adjusted savings and lending rates. For savers, the key is to ditch poorpaying accounts. Look at the top current account - some pay 3-5% compared to 1%ish on standard savings accounts.
Time is now needed to allow things to settle down and to create a new norm. As the saying goes ‘keep calm and carry on’. In time this so called cataclysmic event will merely be a small ripple in the sea of history.

Tomatoes, Prostate Health and the Mediterranean Diet The Mediterranean diet is often associated with healthy living. Research suggests that the humble tomato is a key constituent of this diet and may play a significant role in human health, especially of the prostate. The belief that tomatoes have health benefits can be traced back to South American Indians, ideas that were brought to Europe by Columbus in the 15th century. Tomatoes were also thought to be aphrodisiacs, sometimes being referred to as Pommes d’Amour or “love apples”. The key ingredient of tomatoes is lycopene, one of the world’s most powerful, naturally occurring antioxidants. Responsible for tomatoes’ distinctive red colour, it is a member of a large family of coloured compounds called “carotenoids” that are found throughout the natural world. Humans possess no mechanism to make carotenoids, instead we accumulate them from our diet. Some, such as betacarotene, are easily accumulated whereas others are much less easily absorbed. Our bodies are hardly able to take up lycopene from raw tomatoes and need the fruit to be cooked or processed prior to eating. Alternatively, “bioavailable” lycopene supplements are becoming increasingly popular. Lycopene is sometimes presented in the National media as a panacea, a miraclefood that cures almost everything. Whilst many claims are exaggerated, there
is a large and credible research base that reports lycopene health benefits, particularly in relation to prostate cancer, heart disease, breast cancer and skin health. The most extensive research has been conducted in the area of prostate cancer. Lycopene is known to accumulate in the prostate gland and this has driven scientists to try to investigate its impact on the disease. Some of this research has shown not only a positive association between high lycopene intake and a reduced risk of prostate cancer, but also benefits for those who already have the disease. Professor Ed Giovannucci from Harvard Medical School has been following the progression of 50,000 men since 1986, investigating the relationship between prostate cancer and lycopene consumption. In his latest 2014 report he notes: ‘Dietary intake of lycopene was associated with reduced risk of prostate cancer, especially lethal prostate cancer’. A smaller trial at King’s College Hospital, London concluded: ‘Our clinical study lends weight to the probability that dietary supplementation from lycopene slows disease progression in men with prostate cancer.’ Although the exact mechanisms are not fully understood, many researchers think that lycopene’s antioxidant properties help to protect the body’s DNA from damaging free radicals. Others believe that lycopene improves cell-to-cell communication, reducing the risk of the uninhibited growth seen in cancer cells. In all likelihood, several mechanisms are at work.
Every time a damaging free radical is removed by a lycopene molecule, the antioxidant becomes “spent” – the lycopene sacrifices itself to protect the body’s DNA. However, research has shown that the presence of plenty of vitamin C allows the “spent” lycopene molecules to be reactivated, rejuvenating them and preparing them to quench another poisonous free radical.

GARDEN Containers can add seasonal colour to any type of garden. Use them for shrubs, bulbs or annuals or topiary. Many pots are also ideal for growing fruit and vegetables, especially for beginners in this practical field. A cluster of colourful pots can brighten up a patio. Garden centres are great places to look for good-value pots and other types of containers – along with giving you useful gardening advice generally – but using old sinks, chimney pots or even big, old saucepans can offer a quirky, personalised look to your garden.

City gardens have to tick all the boxes – providing an outdoor space for planting, relaxation, play and entertaining. But you may have only a small area for this so most urban gardens have to be functional spaces or plant-filled havens to help escape city life. The Royal Horticultural Society recommends minimal designs and repeated patterns for maximum effect.

Wildlife-friendly gardens feature plants and structures that attract native wildlife like birds, beneficial insects and small mammals. Log piles, hedgehog boxes and bee hotels are among the ideas to help accomplish this. Mediterranean gardens take their inspiration from the shrubby vegetation of the hot, dry climates of the south of France, Italy and Spain. Here, gravel is often used between areas of droughttolerant plants like lavender, olive trees, rosemary and vines. Contemporary gardens feature clean lines and clever use of space without fussy detail or clutter. Stone, slate and wood are ideal here, along with clipped hedges, specimen trees and simple blocks of planting. Think minimalist. Formal gardens offer a balanced design symmetry and a clear floor plan, and cottage gardens need abundant planting that spills over onto narrow pathways to provide masses of colour and scented flowers.

A visit to any sales of garden furniture will also help you plan ahead for your own Great Outdoors next year. There are all types of garden furniture available, from wrought iron tables and chairs to hardy raffia couches and loungers, wooden benches and more modern shapes to suit your own style. Fortunately, browsing through garden catalogues is pleasing at any time of the year but particularly in the Winter when thoughts of getting out in the garden once more cheer us up! Place a bench at the end of your garden to help “draw” you into your outdoor space, and consider having decking in your garden. A well-planned decking area offers that lovely spot to sit and eat, entertain guests or just regularly enjoy the fresh air with family and friends. Tiered decking with railings around it, for example, provides a fascinating central feature for any reasonable-sized garden. And consider painting your decking in vibrant colours if you feel your garden needs a quick brightener. An area of grassed lawn is still a very pleasing sight for many of us and even mowing – thanks to the latest light and effective lawnmowers – isn’t a major chore or too difficult a price to pay. However, sometimes as we get older, trying to regularly mow a large or difficult to access area becomes just too much so it could be worth thinking about alternatives.
Maybe you have always wanted a hot tub, instead, to simply sit in that pleasant place in your own home and let those aching muscles be gently massaged by the bubbling water. Hot tubs have never been more popular – or affordable – and are popular with many for socialising with friends and family. They don’t take up much space, are easy to maintain, and if you’re worried about the weather you could invest in either a proper “house” for your tub or opt for a canopy to allow you to remain enjoying this delightful treat whatever the weather.
Artificial grass has come a very long way from the rather unattractive carpet-like product it once was. Today’s artificial lawns are not only beautiful and very natural-looking but also feel great to the touch and are very hardwearing. They can be both children-proof and pet-friendly so it’s definitely worth an enquiry. Check out someone else’s garden where they have had artificial grass if you can and you could be pleasantly surprised.
If you have the space – and the budget – how about your own swimming pool? They come in all shapes and sizes to allow you to exercise in the heated waters anytime you want to, or just to chill and swim casually. They’re always popular with children and on the hottest days of our British Summers they’re an ideal place to cool off and really enhance that time in your garden.
Keen gardeners love greenhouses and, while the concept has not changed much over the years, the safety and styles have. Chris White from Hartley Botanica which created the original aluminium-framed greenhouse in the 1950s, says that safety and styles are very different today. “There is a definite trend towards having a greenhouse and towards growing your own fruit and vegetables,” he explained. “In fact, the only true organic foods offering self-sufficiency are the ones you grow yourself, usually in your greenhouse.”

BBC Radio 2 DJ, Janice Long, has been announced as the host of the main stage at next month’s Folk Festival on the Dock (August 26-29). The Liverpool-born DJ, who is a patron to Liverpool Institute for Performing Arts, was the first female presenter of Top of the Pops and is renowned for promoting new talent, giving the likes of Amy Winehouse, The Smiths, Primal Scream, Frankie Goes to Hollywood and Adele their first big break. Also announced to perform at Albert Dock’s new folk festival are contemporary folk acts The Lost Brothers (August 27) and Laura J Martin, who makes her Liverpool homecoming (presented by Bido Lito! on August 28) – and award-winning British singer/songwriter, Blair Dunlop. They join an already incredible line-up that includes The Christians, Henry Priestman, Gilmore & Roberts, Alasdair Roberts Trio, Tom Kitching, John Loomes, Merry Hell, Winter Wilson, exBellowhead member Benji Kirkpatrick, and Sam Winston. A new commission, part of the Albert Dock Liverpool 175 strategy, and supported by Liverpool City Council, Folk Festival on the Dock will bring together the city’s rich music and maritime heritage in an exuberant celebration of live acoustic folk, sea shanty and roots music over the August bank holiday weekend. Folk Festival on the Dock is a free event, with ticketed elements to the programme.
The celebrated Liverpool Shanty Festival will also form part of the event and will showcase international shanty artists. Experience flavours of the world from the comfort of your own home with these delicious snack recipes, created not only to remind you of far flung destinations but also to be super easy to make using ingredients you’ll probably already have in your cupboard. Moroccan Crumpets Liven up breakfast with this Moroccan-inspired treat which combines the sweet flavour of dried apricots (or apricot jam) with the creamy cheese hit of Primula Original, all served on a classic crumpet. Add a drizzle of honey to bring the flavours together while a sprinkling of chopped pistachios adds a delicious texture. Ingredients (serves 2) 4 toasted crumpets 150g Primula Cheese Original A handful of soft dried apricots, finely chopped (apricot jam will also work) A generous pinch of chopped pistachios A drizzle of honey Method Toast a fresh crumpet and spread with Primula Original cheese. Top your crumpets with the apricots and pistachios, then drizzle with honey. Serve while warm.
American pancakes with bacon, Primula Cheese and maple syrup Nothing says classic American cuisine more than a pancake with bacon and maple syrup - add some Primula Cheese to the mix and it’s a whole new ball game. Freshly cooked, fluffy American pancakes are the perfect base for crispy, salty bacon, creamy Primula Cheese and sweet maple syrup – a classic combination which couldn’t be easier to make. Method: Grill the bacon until crisp and golden. Remove from the grill, cover with foil to keep warm and stand to one side. Combine all pancake ingredients and whisk until smooth. Pre-heat a large non-stick frying pan on a medium-high heat and using a ladle, spoon out a portion of the batter into the pan to the desired size and thickness. Cook until golden brown, flipping each minute. Top the pancake with the crispy bacon, a generous squeeze of Primula Original and lashings of maple syrup or, to make pancake stacks as pictured, make smaller slightly thicker pancakes and keep warm before assembling in layers of pancake, Primula, bacon and maple syrup – go as high as you dare!

Chinese curry inspired prawn and cashew topped celery
The combination of prawns and cashew nuts is fairly common in Chinese cuisine, but less well known in the UK. If all you crave is a quick nibble rather than a full Chinese curry or stir fry, why not try combining these flavours in a delicious snack to create the taste of the orient in mere minutes. If you don’t have fresh prawns in the fridge, as most of us don’t, instead use Primula Cheese with Prawns, which contains real chopped prawns. Either salted or plain cashews work with this recipe, depending on your taste.
Ingredients Celery stick Primula Cheese with Prawns Cashew nuts, either salted or plain Method Squeeze Primula Cheese with Prawns down the centre of your celery stick and top with cashew nuts. Super simple snacking.
Jamaican Ginger Celery Snacks Ginger is a spice rooted in Jamaican tradition and can evoke thoughts of lounging between palm trees on an idyllic sandy beach. Add a little twist to your ginger snack by combining either a traditional Jamaican Ginger Cake or Ginger biscuit to a celery stick filled with creamy Primula Cheese Original. While a Primula-topped celery stick is a traditional snack, the combination of cheese and ginger cake or biscuit may need some imagination to enjoy, but trust us, it’s delicious! A generous topping of fiery Jamaican Ginger cake adds a powerful kick of spice, while a ginger snap biscuit is less fiery but adds a delicious extra crunch to the snack Ingredients Celery stick Primula Original Crumbled Jamaican Ginger cake OR crumbled ginger snap biscuit (we think the larger chunks taste best) Method Squeeze Primula Original down the centre of your celery stick and top with crumbled ginger cake or ginger biscuit.

Nathan Outlaw – Everyday Seafood Crab Scotch quail’s eggs with watercress mayonnaise
Okay, so these little nibbles are not real Scotch eggs, but they are just as tasty in my opinion, and they work so well with the peppery watercress mayonnaise. If the idea of crab doesn’t float your boat, we do a fabulous smoked fish version too – just replace the crab with smoked haddock and proceed in the same way. Makes 12; Serves 4 as a starter For the crab mix 200g fresh cod fillet, diced 75g brown crabmeat, sieved 200g white crabmeat, picked Finely grated zest of 1 lemon 2 tbsp chopped chives Sea salt and freshly ground black pepper For the eggs 14 quail’s eggs (includes 2 extras in case of breakage) 100g plain flour, for coating 2 medium (hen’s) eggs, beaten 100g day-old bread, blitzed in a blender to crumbs Sunflower oil for deep-frying For the watercress mayonnaise 2 egg yolks ¾ tsp English mustard 20g Davidstow Cheddar, grated 1½ tbsp white wine vinegar 3 tbsp watercress, chopped 300ml sunflower oil To serve 1 lemon, cut into wedges
the flour, then the egg and finally the breadcrumbs to coat. Put the eggs to one side, or in the fridge if you are cooking them later.
Put the cod fillet into a food processor with a good pinch of salt and blend for 30 seconds. Add the brown crabmeat and blend for a further 30 seconds. Scrape into a bowl and add the white crabmeat, lemon zest, chives and seasoning. Mix together well, cover and place in the fridge. Place the quail’s eggs in a pan, cover with cold water and bring to the boil over a high heat. Meanwhile, get ready a bowl of ice-cold water. As soon as the water begins to boil, take the eggs out of the pan and plunge them into the icecold water. Let cool, then peel the eggs. Set up three bowls: one with flour, one with beaten eggs and one with breadcrumbs. Using clean hands, carefully mould the crab mixture around each quail’s egg and pass through

To make the mayonnaise, put the egg yolks into a blender or small food processor with the mustard, grated cheese, wine vinegar and watercress. Process for 1 minute and then, with the motor still running, slowly pour in the oil. Once it is fully emulsified, stop the machine and season the mayonnaise with salt to taste. Transfer to a bowl, cover and refrigerate. When ready to serve, heat the oil in a deep-fat fryer or other suitable deep, heavy pan to 160°C. Deep-fry the Scotch eggs in the hot oil, in batches as necessary, for about 3 minutes until golden. Drain on kitchen paper and season with a little salt. Spoon the watercress mayonnaise into a bowl. Place the Scotch eggs on a warm platter with the bowl of mayonnaise and lemon wedges.

Hot soused Dover sole with mushroom and seaweed dressing I like to cook Dover sole on the bone, so the fillets keep their natural shape. If you fillet the fish first, the fillets tend to shrink quite a lot during cooking. Sousing Dover sole is unusual, but I find the acidity is welcome and it adds more depth of flavour. The mushrooms and seaweed marry well with the vinegar and wine, but nothing outshines the star of the show, the Dover sole. Serves 4 as a main course
300g mixed mushrooms, cleaned 4 garlic cloves, peeled and finely chopped 100ml sherry vinegar 100ml white wine 2 tbsp dried seaweed flakes 2 tbsp chopped flat-leaf parsley Sea salt and freshly ground black pepper
4 Dover sole, about 500g each, skinned and heads removed 100ml olive oil 2 red onions, peeled and sliced
Preheat your oven to 200°C/Fan 185°C/Gas 6.
Mix the sherry vinegar and wine together and add to the pan to deglaze.
Heat a large frying pan and add a drizzle of olive oil. When hot, add the red onions and cook for 3–4 minutes until they start to soften. Scatter the onions in a roasting tray big enough to hold the fish (or use 2 or 4 smaller trays).
Remove from the heat and add the seaweed and any remaining olive oil.
Wipe out the frying pan and heat again. When hot, add another drizzle of oil. Toss in the mushrooms and cook for 3 minutes, then add the garlic and continue to cook for another 2 minutes. Season with salt and pepper and add to the onions in the tray(s). Wipe out the frying pan again. Season the fish all over with salt and pepper. Heat the pan and add a drizzle of olive oil. When hot, add the Dover soles and fry for 2 minutes. Turn the fish over and cook for a further 2 minutes.
Transfer the fish to the tray(s), spooning some of the mushrooms and onions on top of them, then pour over the juices from the frying pan. Bake for 8–10 minutes until cooked. Sprinkle the chopped parsley over the cooked fish, then carefully transfer to warmed plates. Spoon the mushrooms, onions and juices over the fish. I like to serve this simply with boiled new potatoes and seasonal green vegetables.

Passion fruit and toasted coconuT ice - cream sandwich Serves 6 For the ice cream 300ml fresh passion fruit juice (from about 20 passion fruit) 3 sheets of bronze leaf gelatine 400ml double cream 5 medium egg yolks 120g caster sugar 260g full-fat cream cheese, at room temperature For the coconut biscuit 55g desiccated coconut 100g egg whites (about 3 medium) 100g caster sugar 100g plain flour For the coconut yoghurt 50g desiccated coconut 300g full-fat Greek yoghurt Finely grated zest of 1 lime 30g icing sugar For the passion fruit syrup 80ml passion fruit pulp (from about 4 scooped-out passion fruit) 50g caster sugar
For the ice cream, pour the passion fruit juice into a large pan and bring to a simmer over a medium heat. Let it bubble to reduce by three-quarters, then take off the heat. Soak the gelatine in a dish of ice-cold water. Add the cream to the reduced passion fruit juice and return to a simmer. Meanwhile, whisk the egg yolks and sugar together in a bowl. Pour on the hot passion fruit cream, whisking as you do so. While it is still very hot, squeeze the excess water from the gelatine, then add to the mixture, whisking to melt completely. Let cool, then cover and refrigerate until set. Once the mixture is cold, whisk in the cream cheese. Spoon into a piping bag and pipe into 6 individual rectangular moulds. Freeze until firm. To make the biscuit, preheat your oven to 180°C/Fan 165°C/Gas 4 and the grill to medium-high. Scatter the desiccated coconut on a grill tray and grill until golden, stirring every 2 minutes to colour evenly. Let cool.
Line a baking tray with a silicone mat. Whisk the egg whites and sugar together in a bowl until evenly mixed. Add the toasted coconut and flour and stir to combine. Using a palette knife, spread the mixture thinly and evenly on the baking tray. Bake for 8–10 minutes until golden all over. When you take the tray from the oven, mark your desired biscuit shapes with a sharp knife. Once cooled, they should snap where marked, with a little help. Keep in an airtight container until ready to assemble. For the coconut yoghurt, toast the coconut as above and let cool. Once cooled, add to the yoghurt with the lime zest and icing sugar and stir until evenly combined. Set aside in the fridge until ready to serve. For the syrup, heat the passion fruit pulp and sugar in a pan over a medium heat to dissolve the sugar. Bring to a simmer, lower the heat slightly and cook until reduced to a syrupy consistency. Leave to cool. To assemble, unmould the ice creams and sandwich each one between two coconut biscuits. Serve immediately, with the passion fruit syrup spooned over and a dollop of coconut yoghurt on the side.

Explaining the New Range of ISAs Dubbed a ‘Nisa’ by some, the changes came into play during April 2016 for many of the ISA changes. In total, seven new ISAs will be introduced under the Chancellor’s plans. While this provides a lot more choice for investors it can also complicate things and leave you with a few questions.
What’s changed?
If you’ve already opened an ISA or two and are happy with how it’s going, whether a stocks and shares ISA or a cash ISA then don’t worry, many longestablished types of ISAs will remain. Cash ISAs will continue working like a tax free bank account, with an annual allowance of £15,240 before it is bumped up to £20,000 on April 6th 2017.
In March 2014 the British Chancellor of the Exchequer, George Osborne, proposed a new set of ISAs and in his Summer Budget of July 2015 the ISA changes were confirmed. It has left many people with existing accounts or who were hoping to open a new one in the coming months with a few questions.
Plus you are no longer restricted to placing just half of your annual allowance into a cash ISA, with the rest going into stocks and shares. Now the full £15,240 can go into a cash ISA, stocks and shares or still be split.
What’s New?
Finance ISAs are new, designed as a tax-efficient way to invest in peer-to-peer
products and include a higher rate of interest. Anything up to £15,240 can be invested in these. Then there’s the Help to Buy ISA which launched in December 2015. This means it is in the range of available ISAs for the new tax year for the first time. You cannot contribute to a cash ISA and Help to Buy ISA in the same year, and anything invested makes up part of the £15,240 allowance.
What’s still to come?
The Help to Buy ISA will only be available until 2019, as by that time it will have been replaced by the new Lifetime ISA. These will not be available until the next start of the tax year in April 2017. Anyone under the age of 40 can open one to save cash or invest in stocks and shares. Up to £4,000 can be invested each year, with the government paying in an extra 25% until the age of 50, as part of the annual ISA allowance (£20,000 by that time). Hopefully this makes some of the new ISA options and changes a bit clearer for those hoping to invest.
