Idea for Lunch! Spanish Style Risotto
Prep 40 minutes
Directions:
Cook cleaned fava beans in boiling water. When almost softened, add the peeled potatoes cut into cubes. Add salt and cook for another 15 minutes.
INGREDIENTS: • 300g cleaned baby fava beans • 100g peeled potatoes • 50g onion • 20g butter • 1 tbsp Vegeta all purpose seasoning • 1 tbsp fresh mint • 1 tbsp cornstarch • 4 tbsp lemon juice • 400-500ml water • 2 tbsp olive oil • ½ tbsp salt • ½ tbsp ground black pepper • 1 tbsp chopped chives
Clean onions, slice into rounds and fry briefly in butter. Blend fried onions, cooked fava beans and potatoes together with some cooking liquid then return to the pot. Add water, Vegeta, pepper, chopped mint, lemon juice and cornstarch mixed with a little water. Cook briefly and add in some olive oil. Sprinkle soup with chopped chives and serve warm. Chef’s Tip: Leave a tablespoon of the cooked fava beans, and mix into cream soup before serving. Be sure to remove the bitter skin of the cooked fava beans before blending with potatoes and onion.
