TWO OCALA WOMEN TEAM UP TO TEACH THE BASICS OF MAKING SOURDOUGH.

The adage “everything old is new again” has never been more true than with sourdough bread. One of the most ancient forms of bread, dating at least as far back as 3700 B.C., sourdough has made its reentry into pop culture, thanks to the resurgence of interest in traditional food-making and the viral in uence of social media. No matter the reason, one thing is for sure: Sourdough is having a moment. If you’re wondering what the fuss is all about or you’re ready to give it a shot, Debbie Machtel, owner of AR Workshop, and Caelee Carpenter, owner of Miss Mae’s Sweets & Sourdough, are the perfect pair to help you on your sourdough journey.

At AR Workshop, a boutique

DIY studio in Ocala, guests can create custom home décor, gifts and accessories in a fun, handson environment. AR Workshop also o ers instructor-led classes that guide participants through crafting projects, including, of course, sourdough. Each workshop provides all the materials, tools and step-by-step instruction needed, so no experience is required.

“During our sourdough workshop, Caelee Carpenter, leads guests through the making of a loaf of sourdough bread while teaching the why behind each step,” says Debbie. “She instructs guests on the proper stretch and fold techniques, how to feed and maintain your starter, and how to measure your ingredients properly all while answering all

your questions. Caelee’s breadth of experience and passion for sourdough cuts through the myths and confusion of making sourdough bread and makes it as simple as possible.”

After the workshop, each guest receives a starter to take home, a mixed loaf that is ready for nal fermentation and baking, a recipe book and guide, mixing bowl, cheese cloth, rubber spatula and bread lame blade.

A microbaker who sells her sweets and sourdough each Saturday at the Ocala Downtown Market and Sunday at the Williston farmers market, Caelee’s passion for sourdough started with a desire to help her grandfather nd a more gut-healthy bread. From there, it blossomed into a full-time labor of love.

I didn’t set out to be a teacher; I just loved baking. But I quickly realized the power of teaching sourdough. I’m sharing a craft that allows people to put real, nourishing food on their families’ tables.

“I started making sourdough for me and my papa while we were both struggling with gut health after surgeries and antibiotics,” says Caelee. “I had read how real sourdough could help heal the gut, but I couldn’t nd any made without yeast, so I started my own starter. It took 47 days, but that rst loaf changed everything.

“I’ve been in the baking world for over a decade,” continues Caelee. “I started in professional cake decorating and spent years learning the ins and outs of bakery work. But sourdough came into my life at a time when I needed something slower and more meaningful. I loved how it wasn’t about perfection but about learning to read the dough, trust the process and enjoy the rhythm of it. It quickly became my passion and my peace. Now, through Miss Mae’s Sweets & Sourdough, I get to share that love through my market bakes and my hands-on sourdough classes, showing people that anyone can bake incredible bread with patience, practice and

Every loaf of Caelee’s sourdough is carefully crafted so the avor is woven throughout, not just added in as an afterthought. Each loaf takes a full day of preparation mixing, fermenting and building layers of avor so that every bite is intentional. Her Jalapeño Cheese loaf delivers the taste of jalapeños in every bite, and the Blueberry Brown Sugar loaf takes hours just to prepare the base before mixing.

From The Kitchen To The Classroom

Caelee and Debbie met in February 2024, and Caelee taught her rst sourdough class in March. So far, they’ve taught over 150 students with a goal of 250 before the new year.

“I didn’t set out to be a teacher; I just loved baking,” explains Caelee. “But I quickly realized the power of teaching sourdough. I’m sharing a craft that allows people to put real, nourishing food on their families’

tables. A little bit of me, and of Albus, my starter, ends up in homes across the community, and it’s incredibly rewarding to see families enjoy bread they made themselves. Teaching isn’t always easy, but it’s been an experience I could never have imagined and one I’m so grateful for every single day.”

AR Workshop o ers a beginner sourdough class twice a month and an advanced sourdough class every couple of months where guests learn how to add inclusions to their bread as well as make sourdough cinnamon rolls and sourdough

focaccia bread. Debbie and Caelee plan to keep this schedule through 2026.

“At our AR Workshop classes, students get a full hands-on experience, learning every step of the sourdough process in a relaxed, supportive environment,” says Caelee. “From mixing and shaping to scoring and baking, everyone gets to practice techniques on their own dough while receiving guidance and tips along the way. The classes are designed to be beginner-friendly, so no prior experience is needed. Students leave with a loaf they mixed themselves to bake the next day, a healthy starter, materials you need and the con dence to bake at home.”

Caelee explains to new students that sourdough is all about simple ingredients and patience. She says that, at its core, it’s just our, water,

salt, and a live starter—a natural culture of wild yeast and bacteria that helps the dough rise and develop avor. Unlike breads made with commercial yeast, sourdough ferments slowly, which creates its signature tangy avor, chewy texture and longer shelf life.

“I always start my classes by saying, ‘This isn’t what you learned on social media. Social media can make sourdough look complicated, but, in reality, it’s 90 percent hype and shortcuts. Our great-greatgrandparents were making amazing sourdough without fancy gadgets or techniques, and that’s exactly the approach I teach.’ I want students to understand the fundamentals, trust the process and feel con dent making real, avorful bread with just good ingredients, patience and their own hands.

“Baking gives me a sense of creativity, focus and calm, and it’s incredibly satisfying to see the transformation from raw dough to

golden, aromatic bread. Teaching classes is another layer of that joy. I love seeing the moment a student realizes ‘I made this!’ and the pride and con dence that comes from creating something with your own hands. It’s not just about bread; it’s about sharing a craft, empowering people and connecting them to real food in a way they can carry into their everyday lives.”

FESTIVE FAMILY FUN

Matt Gray is no stranger to organizing events in and around Marion County. A local DJ for more than a decade, he has produced the downtown Gray Halloween Festival in Ocala the last four years. And, by popular demand, this year he’s hosting his rst downtown Christmas market.

A Christmas Extravaganza Market will take place on December 7 at the Downtown Ocala Market between 11am and 4pm.

“We will have about 85 Christmas and Christmas-esque vendors at the market,” says Matt. “There will be handmade items and crafts that are perfect for giftgiving, plus Christmas items like wreaths, ornaments and more to help celebrate the season.” Plus, parking and admission are free.

A father to three, ages 20, 12 and 5, Matt says the whole family loves Christmas.

“Every year, for as long as I can remember, the weekend after Thanksgiving we have gone to nd our perfect live tree. Sometimes it’s from a market; sometimes we cut

Christkindlmarkt is a much-loved Christmas market organized and put on by the American German Club of the Palm Beaches in Lantana, Florida.

“Our Christkindlmarkt started in 2014 to celebrate the German tradition dating to the 16th century, with the most famous being in Nuremberg,” says Christina Vollstedt, co-chair of the Christkindlmarkt event. (Her husband, Jay, is chair of the equally popular Krampusnacht event—but more on that later.)

“Krampusnacht started in 2021,” she says. “Krampus comes from the Alpine regions of Germany and Austria. Similar to Elf on the Shelf but, in typical German fashion, Krampus is designed to scare you and make you behave the whole year. Our Krampusnacht culminates with a parade of Krampusse led by St. Nicholas. You will also want to make sure to see the Krampus Koal Holding contest and nd some traditional Gluhwein or specialty drinks and visit the market.”

There will be food vendors selling sweet holiday treats and food trucks onsite, plus a few special surprises.

“I really hope to engage the community,” adds Matt. “This community has been so good to me over the years that this is my way to give back by helping people grow their small businesses while providing entertainment and family fun to the community at the same time.”

“With lots of lights and beautiful Christmas decorations, patrons can enjoy a visit from Santa and Mrs. Claus, the Christkind and the Grinch,” adds Christina. “Children and the children at heart can decorate Christmas cookies, make star snow akes and ride carnival rides, as well as get a lantern and walk in the traditional lantern parade behind Santa’s sleigh.”

Celebrating a traditional German Christmas wouldn’t be complete without sweet treats like Lebkuchen, Flammkuchen and Gluhwein, plus traditional German food and beer throughout the event. As you stroll through the festival, enjoy the sights and sounds of local, live music and dancing.

“Be sure to visit our 30-plus market vendors to get that special gift, from handmade soaps and wooden smokers to cuckoo clocks and ornaments,” says Christina. “Bring the spirit of the season home with you.”

On December 21, head to the Ocala Downtown Market for all your lastminute shopping needs. The free Winter Wonderland Holiday Market will feature more than 50 vendors selling crafts, home décor, gifts and more. There will be food trucks on-site selling seasonal treats and comfort food, plus hot cocoa and cider. Enjoy the sounds of holiday carolers and other live musical entertainment. There will also be photo ops with some of the season’s favorite characters, including Santa himself, the Grinch and elves. Visit St. Augustine’s historic district on St. George Street to take in this third annual holiday market. Taking place through Christmas Eve, the market o ers more than 40 vendors selling their art, crafts, food items and more. Of course, if you DO want to go all in and travel to one of the world’s foremost holiday markets, here are a few to add to your bucket list.

STRASBOURG, FRANCE

One of the oldest Christmas markets in Europe, the rst Strasbourg Christmas market took place in 1570. Picture narrow alleyways, picturesque squares and historical buildings. Today, the market has grown to include 10 locations with more than 300 vendor stalls. Make sure to visit Place Kleber where you’ll nd the Great Christmas Tree, a “towering e ort that puts the Rockefeller Center tree to shame,” according to CNN.

VIENNESE CHRISTMAS MARKET

Located in Vienna, Austria, the rst market took place here in 1298, with more than 20 unique events to choose from. For a rst-timer, though, your rst stop should be the original Viennese Christmas Market, which takes place in front of city hall. With more than 150 stalls, there’s something for everyone, plus a huge ice-skating rink, reindeer rides for the kiddos and a oneof-a-kind nativity scene. There’s even an ice rink dedicated to curling—a classic winter sport.

FRANKFURT CHRISTMAS MARKET

In Birmingham, UK, this holiday market includes amazing nds such as handmade toys and original pieces of jewelry. With more than 80 stalls, the market is structured after a traditional, authentic German market. The biggest draw is Chris Moose, a singing moose, found outside of the market’s Council House entrance. Nearby, you’ll nd the Christmas Craft Market, which showcases 30 stalls selling local treats like British sausages, homemade beer and plenty of artisan crafts.

BANK OF AMERICA WINTER VILLAGE AT BRYANT PARK

A bit closer to home, this classic Christmas Market in New York City is reminiscent of an open-air European-style market. Showcasing everything from custom-made jewelry and artwork to handmade items from around the world in more than 150 boutique “jewel box” kiosks, this market also includes a 17,000-square-foot outdoor iceskating rink. To make it a truly memorable experience, rent your own 90-minute igloo session where you’ll enjoy cozying up with seasonal food and drinks.

SANTA COOKIES

• 1 cup (2 sticks) salted butter, at room temperature

• 1/2 cup brown sugar

• 1 tablespoon vanilla extract

• 1 large egg, at room temperature

• 2 1/4 cups all-purpose flour

• 1/4 teaspoon salt

• 1 teaspoon red food coloring

• mini chocolate chips

• mini red chocolate-coated candies

Frosting:

• 1/2 cup (1 stick) salted butter, at room temperature

• 4 ounces cream cheese, at room temperature

• 1 teaspoon vanilla extract

• 2 1/2 cups powdered sugar

Preheat oven to 350°F, and line two baking sheets with parchment paper. In large mixing bowl, beat butter, sugar and vanilla until light and fluffy. Add egg and beat until combined. Add flour and salt; mix until dough begins to form ball. Remove 1 cup dough, and set aside. Add red food coloring to remaining dough. From red cookie dough, make one 1-inch ball and five 1/2-inch balls. From plain cookie dough, make one 3/4-inch ball and five 1/4inch balls. On prepared baking sheet, place red 1-inch ball and gently flatten until 1/2-inch thick. Attach four red 1/2-inch balls for arms and legs. Attach plain 3/4-inch ball for head, and gently flatten until 1/2-inch thick. Attach plain 1/4-inch balls for hands and feet. Shape remaining red 1/2-inch ball into triangle for hat, and attach. Repeat with remaining dough, arranging cookies 2 inches apart on baking sheet. Add chocolate candies for eyes and buttons. Bake 12-15 minutes, or until lightly golden. To make frosting: In medium bowl, beat butter and cream cheese until light and fluffy, about 3 minutes. Add vanilla and powdered sugar; mix until combined. To decorate: Place half of frosting in piping bag with small tip to line Santa’s arms and legs. Place other half in second piping bag with small star tip to add Santa’s beard, hat and hands. Put small dot of icing between eyes and beard and place red mini chocolate-coated candy on face for nose.
