Now in its 47th year, the McIntosh 1890s Festival will be held from 8am-4pm. With over 280 arts, crafts and antiques vendors and an expected attendance of 25,000 to 35,000, the event will take place among the streets of downtown McIntosh surrounding Van Ness Park and feature all-day musical entertainment and food vendors. This popular event celebrates the pioneer spirit and folk life of old Florida with live music, food, vendors and old-timey craft demonstrations.

Visitors can interact with skilled crafters to learn more about blacksmithing, making sugar cane syrup, cooking over an open hearth, log cabins, traditional Seminole cooking and arts, pioneer cattle and horses, spinning, weaving and quilting, and more. Once a year, historic downtown Leesburg transforms its streets and shops into a celebration of music and bikes. As the world’s largest motorcycle and music event, Leesburg Bikefest features 30 blocks and three days of over 60 concerts, 200 vendors, amazing bike shows and five hot body contests. This year’s headlining entertainment features bands Saliva, Lit, Hoobastank and Eddie Montgomery. FESTIVAL AT FORT KING // DECEMBER 4-5 The City of Ocala’s Recreation and Parks Department is hosting the Festival at Fort King from 10am to 4pm both days at Fort King National Historic Landmark.

Previously known as Attack on Fort King, the event has been expanded to offer handson activities, demonstrations, crafts, food trucks, live music and much more. The festival is a historic-themed event set in the 1800s and will still feature a full-scale reenactment of the events that fueled the start of the Second Seminole War. Admission is $5 per person. hen the children of Ocala/ Marion County are in need, residents turn out in droves to help. This was certainly true at the Kiwanis Club of Ocala’s 2021 Sportsman’s Dinner and Auction, where a large crowd came out to raise much-needed funds for our community’s children.

Held at the Palm Grove Club at Oak Run, the barbecue dinner included live and silent auctions of hunting and fishing gear and other items, as well as door prizes and raffle items. The Master of Ceremony was Gary Rigby, and the Auctioneer was Frank Gray. An estimated $20,000 was raised at this recent event.

The Sportsman’s Dinner and Auction is an annual event hosted by the Kiwanis for 10 years.

It is designed to attract hunters, fishermen and like-minded individuals who enjoy supporting kids in a fun-filled environment. The live grand finale auction is a week’s vacation in a three-bedroom North Carolina cabin.

Immediate Past President Jeff Ruttenber, President Joe Voge, First Vice President Tammy Hoff and so many others are to be commended for such a worthy event. Due to Covid, the Kiwanis were unable to host this event in 2020. The Sportsman’s Dinner and Auction is the primary fundraising event for all their children’s programs other than Camp Kiwanis. The club is very grateful that they were able to host such a successful event this year and raise the much-needed funds to support the different children’s programs within the club.

“The park sits in an area referred to as the “Cody Escarpment”—or ‘Cody Scarp’—which roughly translates to an ancient shoreline from when sea levels were much higher than they are now,” says Andrea. “This area is the largest continuous landscape break in Florida, and every river that crosses the Cody Scarp

A Big Adventure Tucked just north of Lake City and only about an hour’s drive from Gainesville, Big Shoals State Park in White Springs features a truly rare slice of Florida.

ighty feet below the towering limestone bluffs located in Big Shoals State Park runs the great Suwannee River. These bluffs allow visitors outstanding vistas not found anywhere else in Florida. This section of the Suwannee River, which runs 246 miles south from Georgia through North Central Florida and into the Gulf of Mexico, offers a rare Florida adventure for those willing and able to take it on: genuine whitewater rapids.

These rapids are caused by the shoals that give the park its name—the Big Shoals create the largest whitewater rapids in Florida, while the Little Shoals provide a smaller set of rapids downstream. When the river’s water levels are between 59 and 61 feet, the Big Shoals rapids 14

earn a Class III designation as determined by the American Whitewater Association.

“As both shoals provide the type of whitewater experience not often found in Florida, it is recommended that only experienced canoers and kayakers attempt to navigate the rapids,” says Andrea Thomas, parks service specialist at Big Shoals State Park. “There is a portage area to go around Big Shoals. These are not typical rapids, in that the river’s agatized coral and sharp limestone outcroppings can cause damage to vessels or injuries to those using them.”

Although Big Shoals State Park is famous for its shoals, the Suwannee River itself offers an amazing glimpse into Florida’s natural processes.

In the northern part of the scarp, from the Okefenokee Swamp in Georgia to just south of Big Shoals State Park, the Suwannee relies on rainfall to maintain its water levels. Below Big Shoals, the river starts to descend into the lowlands and is fed by several springs, rivers and other tributaries. The park’s location in the scarp creates a unique process in which water rushes over rocks, sand or shoals. The Suwannee River is otherwise a dark “tea” color, changing only when the water froths into whitewater as it churns over the Big and Little Shoals. The color comes from the tannins found in the leaves dropped in the water by the tall oaks on the banks of the river.

The shoals are easily enjoyed from land, too.

efore Central Florida Skydiving opened, the closest skydiving drop zones were in Zephryhills, DeLand or Palatka. Tapping into the Marion County market has proven very successful for Donnie and his crew.

Planes run from sun up to sun down, weather permitting, and the demand has been great. The difference between Central Florida Skydiving and other drop zones is that at Central Florida Skydiving’s United States Parachute Association drop zone, the focus is on student jumpers and their individual needs.

“I have been an instructor for a long time,” says Owner Donnie Hickey, who has 9,187 (and counting) jumps under his belt. “We understand that new students may be scared or nervous.

We wanted to create a state-of-the-art training facility that would allow us to work one on one with students, being able to take more time with the guys and girls and keep a sport we love alive.”

Donnie says a lot of young adults are finding skydiving after watching adventure videos on YouTube and other platforms.

“It’s become extremely popular,” he says.

“The young people are watching base jumping, cliff diving and more.” Donnie is excited to help them experience the exhilaration of skydiving.

“Most people really don’t understand what we do until shortly after they leave the plane on their first jump,” he says. “You’re not just falling, you’re in complete control and learning how to fly. Once you realize that you can leave a plane and land on the ground successfully, the confidence of what you can do in your personal life goes through the roof.”

Donnie says more often than not it takes one jump and people become addicted, falling in love with the feeling of freedom you get outside the aircraft.

At Central Florida Skydiving, located inside the Marion County Airport in Dunnellon, divers (ages 18 and up) can start with their first tandem dive and work their way up through the ranks, earning their Class A license through

Accelerated Free Fall, which enables skydivers to jump anywhere. Experienced skydivers can practice their accuracy, compete in freestyle competitions and even experience night jumps. Donnie himself is a three-time freestyle world champion.

Central Florida Skydiving has four pilots, including Donnie, all of which were trained at Embry-Riddle Aeronautical University. The company started with a Cessna 182 and recently added a Cessna Caravan, which is capable of taking 22 divers up at a time. All equipment, rigs, containers and parachutes, are state-ofthe-art, clean and triple-checked for safety.

Walk-ins are allowed for those feeling a need for immediate adventure, but reservations

are recommended. For those just wanting to take in the atmosphere and feel the vibe, an observation area with picnic tables is just 50 yards from the drop zone. Donnie says to grab lunch on the way.

Once you decide to give it a try, Donnie and his crew are there for you to make sure it’s safe, successful and fun.

“DaVinci said it best when he said once mankind has tasted flight, you will forever gaze to the skies again,” says Donnie. “It’s an addiction.”

Pets On Stage Join P.E.T.S. of Marion County as they present their first annual Rock Star P.E.T.S. Talent Show and fundraiser. // B Y K A R I N F A B R Y- C U S H E N B E R Y

T

he overpopulation of dogs and cats in Marion County has long been an issue.

So, in an effort to provide additional assistance and support to Marion County Animal Services, P.E.T.S. of Marion County was formed.

P.E.T.S. stands for Partners in Education, Training and Support. The 501(c)(3) was founded two years ago to help supplement the county animal shelters operating budget, which is established based on the county’s budget.

“Our goal is to be able to provide the above and beyond that some of the other shelter’s are able to provide for their animals,” says P.E.T.S. Vice President Jennifer Lucas. “Last year we provided all of the dogs at the shelter with Kongs for Christmas. We also have our STAR (Saved, Trained and Rehomed) Program, which is designed to train volunteers and staff of Marion County Animal Services on how to train dogs. It’s our goal to have a uniform training program we can also share with new pet owners so the animals receive uniform commands and training throughout. We do as much as we can for the animals, but this is our first large-scale fundraiser.”

The event, the 1st Annual Rockstar P.E.T.S. of Marion County Talent Show, will take place November 14 at the Ocala Downtown Market pavilion. The event is sponsored by ServPro of Ocala and Curry on a Stik’, and festivities will include a live auction, featuring everything from a weekend getaway to pet training sessions and gift baskets, pet-related vendors, food trucks, a live DJ and dance party, a smooch (cuddles work, too!) the pooch booth, games for both dogs and humans and much more. The highlight of the event, though, will be the pet talent show.

“We can feature up to 20 acts, and each act will have two to three minutes to showcase their talent,” says Jennifer. Is your pup, kitty, rabbit or bird not particularly talented but is super cute?

That works, too! This talent show is all about having fun and raising funds for the Marion 18

County Animal Shelter. The goal is to raise enough money to build a catio for potential cat adopters to meet their furry feline friends in a relaxed, natural environment.

The pet show is open to pets of all kinds, and participants can register in advance online on the P.E.T.S. of Marion County website, or you can register at the event up until 12:30pm. Three judges—including Professional Dog Trainer and namesake of the dog park at Jervey Gantt Letty Towles, Director of Marion County Animal Services Jim Sweet and Sullivan Hogan with the CEP—will judge the acts on three criteria: uniqueness, humor and teamwork between handler and pet.

“The top prize will be decided by spectators,” says Jennifer. “Each act will have a jar, and

guests will be asked to place $1 in the jar of their favorite act. Money collected will go to the shelter’s catio, and the winner will receive a great prize.

“This is going to be a unique event and a lot of fun,” adds Jennifer. “You can even get your Christmas shopping done for your pets and the pet-loving people on your list. This is the kind of event that will appeal to all ages. After all, who doesn’t love animals?”

What evokes the spirit of Thanksgiving for your family? Let’s take a look at how this holiday has evolved into the great American tradition that it is.

T

he traditional story of the first Thanksgiving has been immortalized through countless retellings. The story— mixed with a little myth and optimism, if not naivety on the true relationship of the Pilgrims and Native Americans—tells of separatist English settlers, who, in 1620, made their way to what is now known as Plymouth, Massachusetts, after a treacherous 66-day sea voyage on the Mayflower. The Wampanoag Indians, who were native to this land, were of great help to the Pilgrims, teaching them to fish, hunt, identify native foliage and grow food.

In celebration of their first successful harvest, they joined together for a feast and celebration of their bounty. The Native American Indians brought deer and the Pilgrims brought fowl, most likely ducks and geese—not a turkey

in sight! Today, 90 percent of American households consume turkey on Thanksgiving.

In 1863, President Abraham Lincoln called for an annual day of Thanksgiving to be held on the last Thursday of November. Historians say his reasons were two-fold. One, it was an expression of gratitude for the Union army’s victory at Gettysburg during the Civil War, and two, it was at the relentless urging of writer and abolitionist Sarah Josepha Hale. Ms. Hale is also responsible for the endearing poem “Mary Had A Little Lamb.”

So fast-forward to what the holiday has evolved into today for most Americans. It has become a secular holiday to celebrate and express our gratitude and give thanks for all that we tend to take for granted during the course of our busy, modern-day lives, such as the abundance of delicious food we enjoy, the

love we have for our families, remembrance and respect for those who have passed and being mindful of those less fortunate.

It’s also a day, or a weekend I should say, steeped in family traditions. The aroma of pies baking in the oven, the Macy’s Thanksgiving Day Parade on the TV and preparing those special recipes that everyone loves. My personal favorite tradition is the day after, when the hard work is done. There is pie for breakfast, watching football, turkey sandwiches, big naps and making sure to steer clear of any “Black Friday” sales!

This year we rounded up a few of our great, hardworking Ocala families and asked them to share their own family traditions, delicious recipes and what evokes the spirit of the season for them.

Homemade Green Bean Casserole • 3 cups vegetable oil • 6 large shallots, cut into very thin rounds, rings separated • 1 white onion, chopped • 6 cloves of garlic chopped • 1 1⁄2 cups all-purpose flour • 2 pounds green beans, trimmed and halved • 1⁄4 cup (1⁄2 stick) unsalted butter • 1 pound button mushrooms, trimmed and coarsely chopped • 14.5 ounces low-sodium chicken broth • coarse salt, ground pepper and allspice

XOCHITL & BERT SMITH For this “super sweet, loud and crazy tribe,” as wife and mom Xochitl describes her family, Thanksgiving has always been an extra special holiday. Their blended family is a cross of Cuban, Mexican and AfricanAmerican cultures, and they love to incorporate all of those flavors and spices into their meals. Thanksgiving is also a time when their daughter, Sy’rai (who lives in Los Angeles), is home with them, so it gives them a chance to be together and plan and prepare the holiday meal. The one recipe that is an absolute must is Xochitl’s made-fromscratch green bean casserole. As far as rituals, Thanksgiving Day means it’s time for Christmas decor to go up! So, while the guys tend to watch the game and add an ornament here and there, the girls get busy.

“I am thankful for my family, which is the greatest gift of all for me,” says Xochitl. “I’m also grateful for the wonderful friendships we have made through the years. We are so blessed!”

Preheat the oven to 425°F. In a large skillet, heat oil over medium heat. Line a baking sheet with paper towels. In a large bowl, toss together shallots and 1 1/4 cups flour until shallots are evenly coated. In batches, shake off excess flour from shallots, and fry until golden and crisp, about 5 minutes, adjusting heat if shallots are browning too quickly. With a slotted spoon, transfer to sheet and season with salt. Set aside. In a large pot of boiling salted water, cook green beans until crisp-tender, 6 minutes. Drain, and rinse with cold water to stop the cooking. Pat dry. In a large saucepan, melt butter over medium-high heat. Stir-fry chopped onion and garlic, and add mushrooms. Cook until liquid has evaporated, about 7 minutes.

Season with salt and pepper, garlic and allspice. Add 1/4 cup flour, and cook, stirring, until incorporated, about 1 minute. Whisking constantly, gradually add broth and then milk. Bring to a simmer.

Cook, stirring occasionally, until sauce thickens, about 5 minutes.

Season with salt and pepper. Add green beans to mushroom sauce, and toss to coat. Transfer mixture to a 9-by-13-inch baking dish. Bake until bubbling around the edges, about 1 hour. Serve topped with fried shallots.

PAMELA & MATT WARDELL For this dynamic and busy professional couple, Thanksgiving is definitely about relaxing. They are currently juggling multiple major projects in their professional lives, so it’s a safe bet that this year, in particular, will be about rest and the comfort of home with family and friends (and their pride and joy Buckley, of course!).

“These delicious Brussels sprouts, courtesy of Ina Garten [a famous author and host of the Food Network show Barefoot Contessa], make an appearance on our Thanksgiving table every year,” says Pamela.

• 1 1⁄2 pounds of Brussels Sprouts, trimmed and cut in half through the core • 4 ounces pancetta sliced 1⁄4 inch thick • 1⁄4 cup good olive oil • 1 tablespoon of syrupy balsamic vinegar • kosher salt and ground pepper Preheat oven to 400°F. Place Brussels sprouts in a sheet pan, including some of the loose leaves, which get crispy when roasted. Cut the pancetta into 1⁄2-inch cubes, and add to the pan, add the olive oil, 1 1⁄2 teaspoons salt and 1⁄2 teaspoon pepper, toss with your hands, spreading out into a single layer. Roast for 20 to 30 minutes until they are tender and browned and the pancetta is cooked. Remove from the oven and immediately drizzle with the balsamic vinegar and toss. Serve hot.

Slow Cooker Cranberry Sauce with Port Wine and Orange • 24 ounces fresh or frozen, thawed cranberries (about 5 cups) • 1 1⁄2 cups light brown sugar • 1⁄2 cup port wine • finely grated zest of one orange • kosher salt

VICTORIA BILLIG & JOEL DOWNING While Victoria, assistant director of the Appleton Museum of Art, and Joel, who works at Jenkins Acura and is also an avid consumer and collector of both art and music, don't typically do the cooking on Thanksgiving (Victoria's dad and stepmom love to cook), they do however enjoy concocting seasonal libations.

The one contribution they have perfected is a homemade cranberry sauce. No canned sauce for this family!

“We also enjoy hunting for and collecting interesting vintage decorative gourds with our daughter, Imogen, to place about our home,” says Victoria.

Put cranberries into a 5- to 8-quart slow cooker. Scoop out 3/4 cup of the berries and finely chop. Set aside. Stir the sugar, port wine and half the orange zest into the slow cooker. Season with a generous pinch of salt. Cover, and cook on high for 1 hour and 30 minutes. Stir the cranberry sauce well, and set the lid back on the cooker with a gap to allow for evaporation. Cook on high for another 1 1/2 to 2 hours. Stir occasionally. Stir in the chopped reserved cranberries and the remaining orange zest. Transfer to a serving bowl. Let the mixture cool, and refrigerate until ready to serve.

BRYAN & CORIN CARACCIOLA Parents to two kiddos, Bryan is owner of BWC Construction, and Corin is a pharmaceutical sales representative.

For Corin and Bryan, Thanksgiving is all about family, annual traditions and simple recipes that make a return appearance year after year. Corin’s grandmother’s Thanksgiving dishes are always used, and she loves adding to her holiday decor collection every year.

“The must-have recipes on our holiday table are the classic ‘Jiffy’ corn casserole, Grandma’s sausage stuffing and a pistachio salad that everyone gobbles up,” says Corin.

Jiffy Corn Casserole • • • • •

1 can of corn, drained 1 can of creamed corn 1 cup of sour cream 1 stick of melted butter 1 box of Jiffy corn muffin mix Place all the ingredients in a bowl, and mix. Transfer the mixture to a greased 8-by-8inch baking dish. Bake at 350°F for about 45 minutes.

The Creamiest Mashed Potatoes

A hardworking family, Charlotte and Erik Magnuson both work full time jobs with three little ones and still have time for their side hustle, Marion Mobile Bar & Bubbles, which has become a common sight at private, business and charity events in our community.

Can you just imagine how much fun Thanksgiving is in their household? When I asked Charlotte what dish was an absolute must at their holiday table, there was no hesitation.

“Creamy mashed potatoes—it just wouldn’t be Thanksgiving without them,” she says.

Cheers to the Magnuson family, and let the holiday season chaos begin!

• 5 pounds Yukon gold potatoes • 1 1⁄2 sticks of unsalted butter • 1 8-ounce package of cream cheese, softened (this is optional but it makes them super creamy) • 1⁄2 to 3⁄4 cup half and half (or whole milk) • 1 teaspoon kosher salt, adjust this to taste • 1⁄2 teaspoon freshly ground black pepper Peel and cut the potatoes into pieces that are generally the same size.

Bring a large pot of water to a simmer, and add the potatoes. Bring to a boil, and cook until the potatoes are cooked through, 30 to 35 minutes. Preheat the oven to 350°F. Drain the potatoes thoroughly in a large colander. Place them back into the pot. Mash the potatoes over low heat, allowing all the steam to escape before adding in all the other ingredients. Turn off the heat, and add the butter, cream cheese and about 1/2 cup of half-and-half. Mash well with a potato masher.

Add about 1/2 teaspoon salt and 1/2 teaspoon black pepper. Stir well, and then taste and add more half-and-half, seasoning salt and pepper if needed. Transfer the potatoes to a baking dish. Place a few pats of butter over the top of the potatoes and place in the oven until the butter is melted and the potatoes are warmed through.

Rsvp Robin’s Orange and Sage Roasted Turkey (This recipe works well with just a turkey breast or a whole bird) • • • • • • • • •

ROBIN FANNON (AKA RSVP ROBIN) I discovered this Martha Stewart recipe many years ago, and I’ve been making it every year since. The slight orange flavor gives it a sweet, tangy taste, and the butter/sage combination makes it savory. Cranberry and orange is a classic, delicious combination, so don’t forget to serve some cranberry sauce along with it (see Victoria Billig’s recipe). My family can’t get enough of this turkey’s sweet and savory combination of flavors! It also makes for a wonderful leftover sandwich. I recommend combining a little cranberry with some good ol’ Hellman’s mayo to make it super yummy.

1 14-pound fresh organic turkey 3 Cara Cara navel oranges 1 bunch of fresh sage 1 bunch of poultry herbs 1 Vidalia onion, peeled and quartered 1 head of garlic, peeled and separate cloves 4 sticks of unsalted butter Himalayan salt and fresh black pepper broth for basting Preheat oven to 350°F. Wash the turkey thoroughly inside and out, pat dry. In a roasting pan, with a rack, put the dried turkey, breast side up, on the rack. Season the bird inside and out with salt and pepper. Stuff cavity with onion, cloves of garlic and poultry herbs. Generously rub outside of the bird with softened butter, separating the skin from the breast and placing butter underneath the skin. Carefully lay fresh sage leaves horizontally under the skin of the breast. Squeeze the fresh oranges all over the outside and inside of the bird, placing the rind inside the cavity.

Salt and pepper the outside liberally. Tie the legs together with butcher’s twine and tuck the wing tips under the body. Melt 2 sticks of butter with a container of broth and the juice of 1 orange. Roast for approximately 3 to 3.5 hours basting frequently with the basting mixture (about every 30 minutes) until the temperature is 180°F and the juices run clear. If the bird gets too brown, cover it with aluminum foil and lower the temperature 25 degrees. Let rest for at least 20 minutes before carving.

itra, located just north of Ocala by about 30 minutes, has long been famous for the citrus fruit that is grown there.

Before the convenience of I-75, people traveled the backroads of North Central Florida along highways 411 and 301, leading them to explore small stands and shops along these routes. Opening in 1936, The Orange Shop has welcomed guests to the Sunshine State’s citrus industry since before World War II. In fact, citrus fruit has been grown in the groves belonging to The Orange Shop since the Civil War. The shop was originally opened by the Crosby family, who owned groves, a nursery and a commercial packinghouse with their partner in Crosby-Wartman Fruit Company.

over the years was recognized by Charles Bronson, the Florida Commissioner of Agriculture, in 2010 with the Environmental Leadership Awards. Recipients of this award are nominated by their peers in the industry. Before that, the couple received the 2008 Florida Farm Bureau CARES Award and was named the St. Lucie County Conservationist of the Year in 2005.

The Orange Shop also sells freshly squeezed orange and grapefruit juice, jellies, marmalades, honey, chocolates and lots of other goodies. The shop is open 8am-5pm seven days a week from October through May. And if you can’t get to the physical shop in Citra, orders can be placed online and shipped directly to your home or to a friend if you wish to send a gift. Holiday baskets are available, as well as monthly club plans in anywhere from two-month packs to six-month packs.
