EDITOR’S NOTE

Brimming with gems

T

here’s nothing like a shutdown of international transit to stir up the travel bug. I’ve been to a lot of places – I guess I fit somewhere in between a millennial nomad of the world, barefoot and dressed in those baggy pants (you know the type) and the shy guy whose ‘OE’ ended up being an extended boys trip to Brisbane. I’ve seen a lot, but not all. More than most, but not enough to tell a story about every town. I guess I’d settled into the fact that I’ve ‘done’ Europe, Japan, and most close tropical islands, and that the rest of my travelling would happen at a somewhat sleepy pace. Oh no. Not now. Now I can’t feasibly leave the country without taking out a second mortgage; I want to go EVERYWHERE. Please take me to Venice Beach! I want to take my partner to Room 4 Dessert in Indonesia. I want to spend a summer on a yacht in Greece until my freckles join up. Thankfully, The Land of the Long White Cloud is absolutely brimming with hidden gems. At the very least, we can walk out the front door, grab a flight and discover a whole new world, in less than an hour. Our travel issues always end up being so much fun to compile. We get to deal with people in every corner of Aotearoa who are passionate about their place in the world; who beckon the population to their doorsteps. From bubbling hot mud pools to hushed, damp rainforests filled with tui and pīwakawaka, to the chic shopping of Commercial Bay and art and fashion offerings of my dearest Wellington. For a country that often gets left off maps, we’ve got a lot to offer.

Safe travels, Joshua Brosnahan Editor

EDUCATION IS A GIFT FOR LIFE When contemplating school options for your daughter, we understand there is a lot to consider. At Rangi, we put girls first. We offer an education where she will be welcomed and supported; a place where she can be herself and belong.

BE HERSELF AND BELONG Personalised Education

Care and Development

As the smallest independent intermediate and secondary girls’ school in the South Island, our teachers know every student not only by name but by how they learn. Our classes are limited to 25 girls, and most are smaller than 20 enabling individual attention and a more personalised learning experience, leading to stronger connections and stronger results. At the start of the year, each girl works with her teachers to develop her own Personal Development Plan, which includes setting and reflecting on their goals, strengths, development areas and achievements across the academic, cultural and creative, physical, emotional and spiritual aspects of their lives.

Achievement is only part of what we consider success. At the heart of Rangi is our Care and Development Network, focussing on providing your daughter with the guidance, support and tools she needs for overall wellbeing, and being comfortable with who she is. We are proud of our position as the ‘grounded and rounded’ independent school in New Zealand, where every girl is welcomed and celebrated, and inclusiveness is part of who we are.

From baritone ballads to smoky solo serenades, there’s enough variety in their discography to always keep you wanting more.

We all need a night of exceedingly danceable disco hits – classic tunes you would have to be a robot to not move to. It’s sure to be a literal Boogie Wonderland! Come along and meet your newest friends on the dance floor. Dress up or down for good times, great drinks, and a grooving dance floor. D Emily Hastie, Landscape Architect, Kamo Marsh Landscape Architects kamomarsh.co.nz

uring the recent school holidays, many New Zealanders who would typically flee to warmer climes looked local and set off on Kiwi road trips, exploring the extraordinary variety of special locations that lie on our doorstep. We have been forced by circumstance to take a fresh look at what is nearby, accessible, and of course, safe. And while the world situation is unnerving, there’s something nice about a renewed enthusiasm for Aotearoa’s unique charms. I hear that Queenstown was positively bustling during the break, which is wonderful for the local economy and a treat for those who may not have visited the region otherwise. While exploring new locations is exciting, something is comforting about packing up the car and heading to a well-known spot, where every dune or river bed is not only picturesque but peppered with years of precious memories. Owning a bach is a luxury that’s not within everyone’s reach, and many enjoy the benefits while avoiding the ongoing maintenance cost of ownership by booking the same rental every year – there’s no need to worry about it when you get back to town. If you are lucky enough to be able to purchase a bach or holiday home, it brings with it the opportunity to create the ultimate holiday destination that’s just for

18

you. Whether your budget allows for luxury or the simplicity of the basic cottage with mismatched furniture and bunks in the garage, location will always be the key. When choosing a spot, think about what your family loves to do. Is it skiing, mountain biking or lying on the beach that they look forward to each year? You’ll also want to consider the travel time from home as well as how easy it will be to rent out when you’re not using it. Homes with sea views tend to hold their value – and who wouldn’t want to have secured a slice of the coastline to retire to one day or pass down through the generations? When considering your outdoor spaces at a holiday home, functionality becomes a key factor as kids, pets, boats come and go, and storage for equipment is an important consideration. With landscaping, take into account the natural environment when choosing materials and planting. What grows naturally in the surrounding area will also thrive in your garden. Relaxed meals and entertaining friends call for sheltered seating, barbecues, and outdoor fires for toasted marshmallows. We are over halfway through the year and summer holidays will soon be on our minds. I am grateful we have so many spectacular locations to consider right here at home.

A BEAUTIFUL CONTRIBUTION WORDS Joshua Brosnahan PHOTOS Supplied

A

s Cantabrians, we’ve become conditioned to the frequency of change that comes with a city’s rebirth. Buildings can switch purposes seemingly overnight. Where once there were hotels, there’s now green space. Walkways have replaced houses. The corner of the square is now home to Tūranga. Our new city has emerged. The Tack Rooms is a prime example of an establishment with multiple former lives. In its current site on the corner of Peterborough and Montreal Streets, the buildings were formerly Teacher’s College classrooms in the late sixties. Before this, the structures had been barracks on an old Air Force base. Current owners Julianne Liebeck and Conor Patton saw the potential to repurpose these structures immediately, and their present state is thanks to their – though Conor will quickly admit ‘almost exclusively Julianne’s!’ – vision, the help of friends and family, and a massive dose of passion for our city. After a massive overhaul, where only (some of) the weatherboards, windows, and beams remained – the space is modern, considered, and luxe. The intention was always for The Tack Rooms to be a fun place. “We’re all about encouraging people to have a good time. There’s so much in this town that’s not about that. So, this original idea was to offer a ‘play and stay’ concept. This vision was very clear – I wanted something for events, and somewhere people could have a good time.” They’re not your generic hotel rooms. Each space measures approximately 70 square metres, with part of the overall aim being to ‘attract the personality that doesn’t fit into a hotel room’. It’s a place that people can stay,

but also have people over to socialise before they go out. “Christchurch is an amazing city, but you just need to know where to find ‘it’. Perhaps people need to be shown a bit of a footpath for this – that’s not as obvious.” Julianne and Conor enlisted the help of renowned local architect, Thom Craig, and friend Lucy Cooper-Dixon (a former hotel operator and interior specialist) to renovate the Tack Rooms from the ground up; quite literally. It was a superb collaboration – Julianne considers herself the ‘creative, big concept’ type, Lucy was fantastic at the small considered details and sourcing and managing suppliers, and Conor confesses he looked after the ‘boring bits’, and played the swing-vote between Julianne wanting to push the boundaries and Lucy saying ‘hey let’s pull it back a notch!’. The trio had a focus to support local artisans within the refurbishment. The lighting is handmade by Christchurch locals Nightworks Studio (formerly Anaesthetic Design). Frontal Lobe came up with a bespoke bed frame, built specifically for the rooms. Joska and Sons provided mirrors in the bathrooms, and even the artwork came from local auctions. Included in the revamp was the introduction of sliding doors connecting the two buildings, making it perfect for hosting events. Being close to Hagley Park, the casino, art galleries, and other diverse offerings, has proven Julianne’s vision to be a success. The Tack Rooms is busy. “I feel we have looked after the place. I’m quite passionate about ensuring anything you do is adding value to the city. We make sure whatever we contribute is [done] in a beautiful way. You create the space and show people the vision, and it will happen.”

RUSTIC REVIVAL WORDS Joshua Brosnahan PHOTOS Katy Rolleston

H

alf native bush and half farm, Children’s Bay Park has been home to the Rolleston family for almost fifteen years and is a passion project set to benefit the many generations to come. And best of all, you and your family are more than welcome to visit. James Rolleston describes this as a ‘multi-generational project’ that involves the current three generations of the family. Over the years, the whānau and many valued locals have managed to plant a whopping 20,000 native plants – all endemic to Banks Peninsula. “We have also chipped away over the last 14 years to re-fence the native gullies, plant a large range of native plants, trap pests, and carefully cut several free walking tracks that link the Takamatua and Akaroa communities together, and now enable people to walk right around the headland of the park on a three-hour walk.” The project is far from finished; there are further areas marked for wetlands and planting in the near future. Sculptures of various animals are dotted around the walks – a crocodile, giraffe, and rhino (thus the name of the Rhino Track) as well as a moa, sheep, and a pig. These all create unique talking points and a bit of fun for the kids. It’s all in the name of encouraging families to get out and explore the park. Alongside this ambitious conservation project is the farm, running a small highquality herd of Angus cattle that graze the grass faces and ridges. The farm manager

has an integral role in helping maintain the tracks as well. Part of the progression means the birth of The Woolshed – a farmstay, rustically restored for guests and various events. It sits just above Children’s Bay, with incredible views back across the harbour. James feels the Woolshed has evolved into a ‘cool little farm stay’. “There is a mezzanine level with a king-size bed and two singles. There’s an open fire, Sky TV for when the rugby is on, and a great outdoor area with BBQ, large outdoor fire, and plenty of seating.” The renovation included large traditional timber beams from an earthquake-damaged building in Christchurch and former bricks from the Rolleston family home. The current site offered up useful materials with old iron from the hayshed being used to line the shower, around the fireplaces, and in the living area. “As a family, we are constantly working on enhancing the experience within the park for our local communities and visitors. All proceeds made go back into maintaining the free walks we have created, the pest control, and planting of native plants within Children’s Bay Park.” The Rolleston family clearly share a passion for living in Banks Peninsula. “The harbour can be rugged, moody, and wild but also so still and stunning. The township is quaint and diverse and one of only several true villages in New Zealand. We encourage Kiwis to come on over and explore the area.”

GROWING THE GORGE WORDS Joshua Brosnahan PHOTOS Konrad Kreative

A

shley Gorge’s campground spot represents the quintessential holiday destination for many of us growing up here in Christchurch. For decades, it’s been a stalwart for summertime sojourns, long weekends with the grandparents, and BBQs with extended families – hordes of happy children have been raised on getaways in this crevasse of the Canterbury Plains. Minutes from Oxford township, the campground has also been a home base for people keen on hunting, fishing, and more. Current proprietors of the site, Wayne and Sally Schist, hadn’t ever given much thought to buying a campground – and yet they’re currently working towards their sixth summer as owners. Most of the year, the couple manage to work on the campsite without any assistance. When asked why the campground remained so successful, Sally puts it down to being in their own ‘hidden little corner’ of Canterbury. “You’re just 45 minutes from Christchurch, surrounded by native bush and birdsong, and where that cold easterly wind won’t find you. There’s a unique microclimate here, and our night skies are perfect for stargazing. The swimming river is clean and clear and always fun to explore.” The campground caters to both families and couples while creating a homely, friendly atmosphere within the natural surroundings. One of the many walks nearby leads to a waterfall.

Wayne mentions they have both honed their DIY skills over the years, and they even enlist the family to help in busy periods. “It took a couple of years to find our rhythm, and plan by the seasons; now it feels effortless. “While we certainly can feel our age during the busy season, all is soon forgotten when the pace slows. It is still exciting making sure all the projects are completed in time for that first long weekend. We wanted the campground to feel and look like it was loved.” In the approaching season, regular visitors might see some changes in the park. The couple is introducing a mini fruit tree orchard and outdoor games for families. There are plans to extend the recent camping pod additions, with more private and secluded options for couples. There’ll even be a glamping tent and a caravan for even more alternative accommodation options – something for every situation. Guests can pick their own salads from the camp garden and enjoy complimentary honey from the beehives at the camp; you have the options to be as active or relaxed as you wish. Wayne and Sally have seen a steady increase each year, as more and more Kiwi families rediscover the joys of camping. “The last few weeks, we have seen the majority of our guests hiring a campervan for the first time and hitting the road. New Zealand is a beautiful country with much to discover. Just like us, that hidden gem could be just around the corner.”

Whether it’s a day trip or an extended excursion, you can enjoy all the region has to offer at your very own pace. Home to some of the most diverse land formations in New Zealand, the region is naturally a stand-out for local wine. ‘The coolest little wine region in the country’ has highly varied and interesting soil types, which have offered up concentrated and expressive wines. Hurunui is known for its Pinot Noir, Chardonnay, and Riesling. The 90 vineyards in the area are mostly independently owned by local families. Waipara Valley’s Vineyard trail is remarkable. You will journey through world-class vineyards and historic farms; have the opportunity to visit cellar doors and dine at winery restaurants. Add in a venture to the Greening Waipara Biodiversity Trails, or perhaps the historic steam train at Weka Pass Railway, and you have a well-rounded and varied experience. The trails are designed for cyclists, walkers, and joggers – both young and old. Finish a track by soaking up the phenomenal views for which the valley is so well-known. The local fare is enticing; restaurants like Black Estate and cafés like Little Vintage Espresso champion fresh, seasonal, and unique ingredients grown in the Hurunui. For carnivores, there’s venison, beef, and seafood; if you have a plant-based palate, try some of the honey, olive oil, and organic fruit and vegetables. North Canterbury’s hidden gem is its very own truffière, nestled amongst the region’s rolling hills.

The largest truffle-growing operations in the country, Kings Truffles also provides truffle-infected seedlings, education, and more. Make sure to say hi to Moose, chief truffle hunter and an all-round good dog. Is it Saturday? Then make sure you experience Amberley Farmers’ Market – a veritable cornucopia of fresh hazelnuts, goats cheese, Waipara honey, berries flowers, and fudge – and that just scratches the surface. Put an afternoon aside to discover the Iron Ridge Quarry Sculpture Park. The quarry, once a lime works, is now moonlighting as a permanent sculpture exhibition, with owner Raymond Herbert’s creations nestled amongst a curated native garden. Raymond lives and works on-site, and for larger groups, he will host a complimentary forging demonstration on request. Time for Maytime

A

s the dynamic Christchurch city continues to rebuild, and our green spaces are designed and planted, we welcome fellow New Zealanders to our beautiful business and urban cityscape. Local firm, Maytime Landscape Design is proud to be part of this process. The team is led by Ann Kennedy, botanist and ecologist of Canterbury. Ann has always been passionate about natural and created urban gardens, and ten years ago, she set up Maytime. The overall philosophy is to harness the power of plants to develop inspiring gardens and to create a sense of place, your place – a place to be proud of. Redesigning a garden is an exciting prospect. Garden landscaping is the ideal way to craft an attractive space that gives you a beautiful environment and a practical layout that allows you to use your garden how you wish. Maybe you are inspired by quiet, shaded gardens where family and friends may gather or fragrant gardens that fill the evening air with soft perfumes. Or perhaps the creation

of cottage gardens growing tantalising herbs, summer salads, and microgreens or orchard fruits and berry gardens is more your style. Whatever the garden of your dreams is, it is at your fingertips with Maytime’s wealth of design expertise. The day-to-day activities of the business include a variety of tasks. The initial contact with the client is a site visit to discuss the options and issues involved. This is where client preferences are noted and recorded. Following this, Maytime produces initial drawings and provides a list of appropriate plantings. Other concepts such as soil, wind and water, seasons, and maintenance are researched and reported on. Where hard landscaping is required, high-quality contractors will be engaged and coordinated with. When the team knows that they have achieved total client satisfaction, final drawings are produced. The dedicated people of Maytime work closely with their clients to ensure that the entire planning process is ideal for them, their family, and their lifestyle.

HOMES

HERE’S TO THE STAYCATION

T Lynette McFadden Business Owner & Mentor Harcourts gold @lynette_mcfadden

his year – this most unusual of years – it’s all about home. Staying home, enjoying your very own backyard or that beautiful expanse we know as New Zealand. Holidays, breaks, refreshers, little weekends away are all to be enjoyed within our own boundaries and borders. Unlike other years, it’s about discovering or rediscovering what many Kiwis take for granted: large, green open spaces, and public galleries and museums (that unlike those in many cities around the world, are free to visit), as well as rivers, lakes, and mountains within driving distance for most. I can vividly remember being on a European trip with my family when the guide asked where we came from. After listening to our response, a long pause occurred, then a rather loud, disapproving Gaelic sniff. “Noo Zeeland, zee end of zee earth.” And at the time I thought it was, having taken 30 hours to arrive at our destination, but today that very isolation feels like a blessing. It’s easy to see why so many are also taking time to reinvest some love and attention in their own properties due to staying home rather than travelling, and businesses such as landscapers, renovation builders, and interior designers are seeing the benefits of that change. 50

If a staycation is currently on your radar and you want to take the time to focus on your own home, here are some options that might give you some satisfaction or add value, or both. First, declutter. Nail that garage first. Get rid of all the stuff that’s broken, outdated or no longer useful. If it’s still functional but of no use to you, give it away, recycle or dispose of it. Inside, you can move furniture and move art. Have some fun and enjoy the changes. Edit, and what you don’t edit: use. Nothing needs to occupy a precious space where items are relegated as being ‘just for good’. No matter your home’s size, your property address, whether you’re in a large residence or a compact unit, try to make the most of the outdoors – your outdoors. Follow the sun (if there is any!) and give thanks that although we might not be able to travel the world, you’d travel the world to find what we have in our own backyard. It seems that not only I, but also others have had a chance to stop chasing everything that appears greener somewhere else; instead choosing to appreciate what’s been in front of our noses the whole time – home. Here’s to your home and mine, and here’s to a staycation.

Basil crusted groper WITH CARROT PURÉE AND ROASTED BABY CARROTS

As we are in the depths of winter, let The Bespoke Chef bring the restaurant to you. Jacob McKerrow loves creating seasonal and exciting menus for you to enjoy at home. Carrots are plentiful in winter and great for you, so here is a recipe that showcases different ways to enjoy the humble root vegetable. Add in fresh fish to create a simple, yet stunning dish.

SERVES 4

4 groper fillets, around 110g pieces, skinned and pin-boned 3 slices of brioche bread 1 handful of basil 1/2 garlic clove, peeled 50g of butter 50g of tasty cheese Salt & pepper 400g of carrots Baby carrots for roasting 100g of butter 100ml of cream 1 clove of garlic

Preheat the oven to 180°C. In a blender place brioche and blitz, then add butter and cheese, blitz until it is a smooth paste. Add garlic, basil, salt, and pepper into the blender, blitz again until well mixed through. Place mixture on baking paper and add another piece of baking paper on the top. Using a rolling pin, roll to the edges of the baking paper, making sure the mixture is an even thickness of approximately half a centimetre. Chill in the fridge for an hour. Once the mix is set, remove from the fridge and cut into four even pieces. To cook the fish, season it with salt and pepper. Place in a hot oven-proof fry pan, and sear until brown on both sides. Spread a piece of herb crust mixture on each fish fillet, place in the oven until the crust is golden brown, which is approximately 15 minutes. For the carrot purée, peel and roughly chop the 400g carrots and garlic. Cook in salted boiling water until soft, for approximately 10 minutes. In a separate pot, put your cream and butter, and bring to boil. Transfer the carrots to a blender and blitz. Slowly add cream and butter mixture until it is a smooth purée. For the roasted carrots, place baby carrots in the oven with seasoning and olive oil (for 20 minutes; time with the fish cooking). Season to taste. On the plate, spoon on your carrot purée and with the back of the spoon, run it across the plate. Place the roasted baby carrots on top of the purée and then the fish on top. Add a lemon mayonnaise if you wish.

Tarta de Santiago The Curator’s House Restaurant has a couple of fiestas in its books: its 20th birthday as well as its home – an iconic Christchurch heritage building – turning a century old. To celebrate, owners Jackie and Javier Garcia share with us a Curator’s House staple – their tart, by chef Albert Alert. Traditionally from the pilgrims’ town of Santiago de Compostela, it’s simple, light, and delicious, and has proven a popular choice at the restaurant over many years. It is also gluten and dairy-free.

SERVES 8

5 free-range eggs 250g caster sugar 200g ground blanched almonds 50g whole blanched almonds, roughly chopped 20g lemon zest Icing sugar to dust

Line a 23cm round baking tin with baking paper and spray with canola oil. Preheat oven to 180°C. Beat the eggs and sugar in a medium-sized bowl until light, creamy, and smooth. Add the ground almonds, chopped almonds, and lemon rind. Beat for a further one minute. Pour the mix into the lined baking tin and bake for 45 minutes, until the edges start to become golden. Cool and dust with icing sugar before serving with ice cream. This is traditionally served alongside a glass of Spanish Moscatel or Pedro Ximenez sherry, which can be sipped or poured over your tart.

HUMANS OF ŌTAUTAHI

Mark KAIAPOI

commute there and back. My wife was working as a nurse, and the kids were in permanent childcare. Come the weekend, we were knackered; I got depressed, and it was like, ‘why are we doing this?’. “I can remember arriving [in New Zealand], and it was like the England of my childhood. People would stop for a chat. I went to get a newspaper, and it took me an hour and a half; my wife was worried that something had happened to me! And the number of smiling faces in traffic jams was amazing, I’d never seen that in the UK, they are a miserable bunch. “The problem is, it’s getting busier. We have got less time. And being human, it’s all about communication and connectedness and helping people. It’s not about ‘I’ve got to get this report in’, or ‘I’ve got to get this thing done’; it’s not about material things that just fall off the shelf in an earthquake. Who cares, you know?”

“People don’t take you seriously if you are wearing a bowtie these days, do they? Especially in NZ, you get double-takes – is he wearing a bowtie and a pocket watch? “So, I thought, ‘oh well, I didn’t know everyone’s name, and they are all my customers, so it’s far easier to go around greeting everyone’. You could walk up to people, and they’re busy looking at your bowtie, and they think I’m harmless. I get to know them and charm them hopefully, and then they’ll do what I want! “So that’s why I did it originally – because we don’t know each other. To create that sense of you are not working in isolation. This is one big team. Now, of course, they’ve got this overblown sense of entitlement! “I was born in Sheffield in South Yorkshire, but I was brought up in the most rural counties in England – Dorset. So, I’ve got what people might know as a west country accent. “We wanted a change of lifestyle. I was working 14-hour days – with the six-hour
