APPLE RICOTTA FRITTERS WITH MAPLE BUTTER

ngredients

3 cup Fine Ground Corn Meal

3 cups Cake Flour

½ tsp Baking Powder

3 tsp Kosher Salt

cup Whole Milk Ricotta Cheese (drained)

cup Gala Apples peeled and cored and sliced

tsp Butter

tsp Granulated Sugar

3 cup Apple Butter

cup Light Brown Sugar

tbs Lemon Zest (about 2 lemons)

½ tsp Vanilla Extract

Large Eggs (lightly whipped)

½ quarts Canola Oil for frying

It is hard to believe that Labor Day has come and gone - what a wonderful (and fast!) summer season we had here at Tuxedo

Golf activity remains strong despite the high levels of rain this summer Play is currently up more than 3,200 rounds compared to last year (which was a shortened season due to the golf course renovation) and more than 1,500 rounds compared to 2021 (a more typical season).

One of the highlights of our season, the Men’s & Women’s Club Championships, wrapped up a successful summer with some exciting matches from our finalists.

In the Men’s Club Championship, Cole Meitner recovered from a ‘3 Down’ deficit through the opening nine holes to win his third Club Championship over seven-time Club Champion Dan Rifkin by a ‘3 & 2’ margin in the 36-hole final

The Women’s Club Championship provided a more dramatic finish.

In the Semi-Finals, Jill Johnson defeated Defending Champion Kimberly Engelbert to advance to the Women’s 18-Hole Final for the first time

In another exciting Semi-Final match, and a rematch of the 2020 Finals match, Kellie Baldwin won the last two holes to force extra holes against 2020 Champion Joette Fullerton Interestingly, they ventured to 19 holes back in 2020 too! On the 19th hole, Baldwin sunk a 12’ birdie putt to advance to the Finals match, hoping for a better result than she had in 2020

Excitingly, Baldwin’s Semi-Final win guaranteed that we would crown a first-time Women’s Club Champion on Labor Day.

In the Finals match, Baldwin needed to win the final two holes to advance to extra holes against Johnson – which she did with pars

In extra holes, Johnson and Baldwin both lipped out short putts on the first three extra holes and remained tied On the 22nd hole (#4), Baldwin hit a long drive and spectacular approach shot for a routine par to win her first Women’s Club Championship – and her name forever engraved on the silver ‘Ramapo Valley Trophy’.

In addition, I’d like to congratulate the winners of our coveted “Silver” tournaments (since July’s edition) including:

Kellie Baldwin & Karen Banyo won the Medalist & Eleanor Madronal trophies awarded to the individual low gross and net scores, respectively, after 36 holes played over two days

A Jay Baldwin defeated the golf course handily in the individual match play versus par (net) format of the Ramapo Valley Cup. Clutch play with three net birdies over the final four holes secured the narrow victory

Caroline Beers & Gail Washburn won individual low net in their respective divisions of the Senior & Super Senior Championships.

Aileen Bruner defeated Runner-Up Jennifer Weiss in the finals of the Ladies’ 9-Hole Club Championship

We look forward to sharing the results of our final few ‘majors’ over the course of the next month.

Lastly, as this golf season winds down, the professional staff has observed an increase in golf course etiquette infractions. Therefore, the Golf & Green Committee would like to remind all members of the common courtesies that encompass golf course etiquette and assist us in ensuring that all players have the highest quality experience while enjoying our golf course In short, it is about “respect”:

Respect for the course – leave the course as you would like to find it by repairing pitch-marks, replacing divots, raking bunkers, etc.

Respect for your fellow players and staff – be sportsmanlike, polite, avoid distracting behavior, and play at a reasonable pace of play

Respect for the game – by knowing the rules and etiquette of golf

Moving forward, the Golf & Green Committee is instituting a notification system, that could include disciplinary actions, to document violations related to the above. We appreciate your cooperation in maintaining the high standards of our Club We are confident that together, we can continue to create an outstanding golfing environment for all members
