Recipes by the Sea That’s me, one of those pumpkin freaks. I’m not into the overly sweetened lattes and fake flavoring but real pumpkin, even if from a can is a great way to add flavor and nutrients to both sweet and savory dishes. Try adding a few spoonfuls into a light cream sauce with a touch of nutmeg and grated parmesan for a fabulous sauce for pasta or fish. These pumpkin muffins are always a hit, and we are enjoying ours with a side of pumpkin butter. Happy fall y’all!

Pumpkin Muffins Crumb Topping: 2 tablespoons granulated sugar 1/4 cup brown sugar 1/2 teaspoon ground cinnamon 1/8 teaspoon salt 4 tablespoons unsalted butter melted scant 1/2 cup gluten-free flour

Muffins: 1 1/2 cups GF flour see note 2 teaspoons ground cinnamon 1/2 tsp ground ginger 1/4 tsp ground cloves 3/4 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt

2 large eggs 2/3 cup light brown sugar 1/3 cup canola, vegetable or melted coconut oil 1 1/4 cups canned pumpkin puree 1 teaspoon vanilla extract 1/4 cup roasted pumpkin seeds

Instructions: For the crumb topping: In a medium bowl, combine sugars, spices, salt, and melted butter. Whisk until combined. Add flour, and stir until the flour is combined. Set aside. For the muffins: Preheat oven to 350°F. Line a 12 cup muffin tin with paper liners. In a medium bowl, combine flour, cinnamon/spice, baking soda, baking powder, and salt. In a large bowl, whisk eggs, brown sugar, oil, pumpkin puree, and vanilla, until combined. Add flour mixture, and stir until combined, but do not to over-mix. Divide the batter between 12 muffin cups. Scatter a few seeds and crumble topping on each muffin. Bake for approximately 20 minutes, until a toothpick inserted into the center of the muffins comes out clean.

Sugar is one of those foods for everyone. We have grown so used to eating foods that aren’t good for us that we don’t even notice when we do it. We just go through life feeling pretty crummy. Why do we do this? Well, for one thing the food industry and government like it this way. This isn’t a conspiracy theory it’s a truth. There’s tons of research out there showing how far the food industry and its lobbying efforts go to make sure we buy the cheap junk food so they make money. In past columns I urged you all to watch a show on Prime called “Fed Up” and I’ll encourage you to watch it again. You’ll see what I mean pretty quickly. But I digress….

Here we are in Fall. What a great season! There’s just something about the cool, crisp air that makes me want to get outside and do just about anything. I also love the cooking in the fall and, of course, the eating! It’s time for the crockpot and heavier, warmer foods like soups and stews. Cooking can get really easy in the fall if you use a crockpot. Ironically the downside to fall for some is all this wonderful eating or perhaps I should say, overeating. Halloween starts off the “fall eating festival” and sometimes it doesn’t feel too good. Why is it that we can start with the Halloween candy and not stop until “Auld Lang Syne” is finished being played on the first of the New Year? I have a theory and it starts with sugar. If we start eating Halloween candy we are setting ourselves up for a three-month binge. Sugar is toxic and eating too much of it leads to hormone fluctuations, blood sugar fluctuations, inflammation in our bodies and a seeming inability to stop eating sweets and other simple carbs. The result is weight gain, sluggishness, body pain and a months long food hangover. Combine that with all the traditional yummy foods of Thanksgiving and Christmas and it is the start of an eating marathon.

In any event, cut out as much sugar as you can from your diet and see what I mean about feeling better. You’ll skate through Thanksgiving and the winter holidays feeling just great if you keep the sugar intake to a minimum. It all starts by cutting out that Halloween candy. It may feel painful at first but I guarantee you’ll feel better, look better and function better without it. Don’t let the Halloween candy lead you down the path of sugar overload. It’s simply not worth it.

So what is a person to do? Is there any way to avoid the sluggish, yucky feeling of eating too much over the holidays? Absolutely and it starts with the Halloween candy. If you bought your candy early and have been nipping at the bag for the past few weeks it’s time to quit cold turkey. I am serious. If you want to avoid the trap of the “fall eating festival” it’s time to unload that candy. This is not about punishment AT ALL. This is about feeding yourself with delicious foods that make you feel good. Do you even know what foods make you feel like garbage after you eat them?

Rover Rescue Rehoming Options by Lauren Kehoe

We do our best to set up our home for a new dog and create a comfortable, easily acclimatable space. This may include getting food, toys, bedding, and other supplies, securing a fence, puppy proofing cluttered areas, and making sure everyone in the household’s schedules align for frequent potty breaks. Prepare as we may, life likes to throw curveballs that send careful planning completely off track. There may need to be a time when the level of stress on both humans and dogs in a home reaches a tipping point. Rehoming a dog can help alleviate this tension. Working and volunteering in a shelter brings to light some cringeworthy situations that can make even the strongest individuals shed a tear. Thought out decisions with the dog’s best interest in mind are not always easy but are understood. The advantage of an owner surrender in a shelter or rescue is the valuable background information those familiar with the dog can provide. Likes, dislikes, behaviors, training can all be translated to a shelter setting to help set up a dog for success. Sometimes they provide opportunity for sponsors to help relieve a portion of the adoption fee. Different shelters have different admission requirements and lengths of stays, so research can go a long way in deciding between which shelter. Another option is rehoming through friends, family, or on the internet. Social media can be a great resource to reach a broad audience. If you don’t know an individual personally, the chances are you have a mutual friend who shared your post and can vouch for their level of

responsibility. This also often gives you a chance to follow your pup’s transition into a new home with some photos or updates. Different people may need to be more aware of boundaries in this situation, as transferring ownership of a beloved pet can be difficult if it remains so close to home.

Online or newspaper classified ads used to be utilized often for rehoming dogs, but as scams spread, caution has increased. While most interested prospects would provide a reasonable home, some use the classifieds to look for free dogs that can be sold for purposes such as animal testing, backyard breeding or dog fighting. Doing a background check and home check on can create an additional level of safety but keep an eye out for red flags or anything that makes a person or dog uncomfortable. Rehoming a dog is not as taboo as we have made it seem. Honoring a commitment to a dog and doing everything possible to make it work in a home is essential but recognizing an unhealthy situation with little room for improvement is just as valuable. Sometimes things in life just don’t work out, but lucky for us there is always a Plan B!

The moon has always fascinated us with its shimmering celestial magic. Ancient cultures used the moon to aid them in their daily lives. The Hindu lunar calendar begins with the new moon or Amavasya, the day when the moon is not visible. In the traditional Chinese calendar, the new year begins on a new moon. The Old Farmer’s Almanac tells us when it is best to plant vegetables based on the moon cycles. This celestial wonder can affect our behavior, thoughts, and feelings. Harnessing the power of the moon can bring an abundance of positive change into your life. One of the best times to use the moons energy is during a new moon. Setting up a new moon ritual can be simple and very effective bringing positive energy into your life for weeks to come. Below are four easy mini-rituals to get you started, use them all or any combination you see fit. Use these ideas as a guideline, take what resonated and use your intuition.

1. Cleanse Your Surroundings

Detox your body and mind taking a long relaxing soak in the tub. Soaking in the tub can also be used to get you into a meditative state releasing your intentions into the universe. Add some Epsom salts, herbs, and even crystals for physical detox, light some candles and allow your mind to unwind.

In order to make space for new things to come into your life, the old energies need to be cleaned out. Is there anything that’s looming around taking up time that is no longer serving a purpose? An easy way to clear the air is to burn sage or palo santo. Go around your house, your room, workspace, and even the front entrance. Another great thing to do is to get organized, de-clutter your space and freshen up your home.

4. Journaling

Use a journal you already have or treat yourself to a new one dedicated to your new moon rituals. Now that you have reached a relaxed state take some time to write out what you are feeling and what you want to manifest in the coming weeks. Write in the present tense as if you have already received what you are trying to manifest. This journal will serve as a reminder of new moon energy and can be reflected back to in the coming weeks.

2. Meditate

Meditating during a new moon does a few important things that we all need every once in a while. It can help you get focused on what is going on in your mind and your heart. Doing this allows you to access any repressed thoughts or emotions that need releasing. Once you feel that the past is cleared out, you can acknowledge the unknown of things to come and be excited for it. The new moon is full of potential, when it is in this phase it is not visible in the sky. This phase asks us to trust the magic of new beginnings, and to set goals for goals for the coming weeks.

Shore Decor Tablescaping 101 By Ashleigh Young Santamaria

Those who know me know I’m a total minimalist and have been for 47 years. So minimalistic that if Marie Kondo were to visit my home she’d probably suggest I add a few more throw pillows and accessories into the mix. But something happened on a recent road trip to visit good friends in Virginia…I fell in love with tablescaping.

What is tablescaping, you ask? It’s all about creatively and meticulously arranging decorative objects on a tabletop to create a certain mood, theme or experience. Tablescaping has been on the rise in the last few years as we’ve all decided to stay home and throw more dinner parties, but competitive tablescaping (yes, I swear!) has been around as far back as the 1930’s where it was such a popular tradition at the LA County Fair that there’s a waiting list to enter (only 20 are permitted a year). But tablescaping really has its roots from back in the mid-18th century amongst the European elite as a way for the aristocracy to display their wealth using intricate and dramatic scenes at the center of the table to transport their guests to another world. One such scene was described in an 1811 issue of Gentlemen’s Magazine as being, “a canal of pure water…flowing from a silver fountain beautifully constructed at the head of the table. Its banks were covered with green moss aquatic flowers; gold and silver fish swam and sported through the bubbling current, which produced a pleasing murmur where it fell, and formed a cascade at the outlet.” Ok, so while I’m not quite ready to raid the local pet store to create a tablescape escape for my family, I did learn a few tricks from my Virginia friends that I’ll be pulling out for the holidays. What’s Your Inspiration? Your tablescapes are only limited by your imagination. Start by considering the time of year and imagining what theme and colors would go best with your current décor. Neutral tones happen to look especially great in winter and I’m personally loving monotone gourds paired with candles and fresh fragrant greenery. Layer, layer, layer. Layering a variety of elements is key to an engaging tablescape. Think of the New York City skyline and how the variety of buildings, short and tall, glass and concrete, all marry into a visually interesting mosaic. The tallest piece should be your focal point with a mixture of unusual and everyday objects placed around it like black metallic vintage candlesticks. One tip is to keep the height of your objects either low or very high so you’re not blocking guests from being able to see each other during dinner. Have fun. Unlike painting or wallpapering a wall, or renovating, this tablescape can be assembled and disassembled super easily so don’t worry about making a mistake. The journey really is the destination with this process, so have fun trying out different settings and placements, mixing fresh flowers with potted plants or objects from around your house with new seasonal finds. If you struggle with meditating or don’t understand the hype it can be a frustrating topic to endure. Perhaps an eye roll is in order when someone talks about meditation. Meditation and mindfulness have gained in popularity in the past few years but not everyone is on-board. Mediation can be very simple, but you definitely need to get past any misconceptions you may hold in order to move forward. Even if you are a beginner in meditation, here are a few tips to making meditation a bit more practical and realistic in your daily hectic schedule. Find a quiet spot that you can use to meditate daily. This spot could be in a corner, in a chair, or even in bed before you hit the hay. This spot should be comfortable and allow for you to sit up straight or lay down flat. It’s ok if you want to sit in lotus position (Indian style) or place your hands on your lap or to your side. Just find comfort. Your special space should be a place that you can build your energy in daily. By meditating daily you’re being consistent with an intention on getting better and meditating longer. Meditation can be performed realistically, 2-10 minutes each day.

Our minds race with so many thoughts daily that the thought of adding another task to our already long laundry list of things to do is not realistic. This isn’t the case if you just take 2 minutes to meditate. This helps you to stay successful in meditating every day, but it also allows you to learn if you’re not experienced. Those 2-10 minutes are about finding your patience to be still and allow yourself to process your thoughts. A run through of how your thoughts make you feel or how a situation unfolded that day. This is realistic. This is healthy. Start out slowly and inhale and exhale deep breaths. You can even count if you need to. This is conscious breathing. We shallow breathe all day long, so conscious breath work is extremely healthy to the mind, body, and spirit. Conscious breath work can assist in lowering your heart rate, relax, and release any negative feelings. With so many thoughts that have associated emotions it is healthy to allow yourself to acknowledge your thoughts but not dwell on them. Acknowledge your thoughts but release it in breath and let it go. If it keeps coming to the forefront then you need to deepen your breath. Over time you will find that you are able to meditate longer than the 2-10 minutes. You can begin by increasing your meditations by 2-5 minutes. You may even find that you are seeking to meditate more than once a day. If you find that these short tips are not obtainable by trying to sit quiet than download or search for a guided meditation that can help guide you to a few minutes of relaxation daily. It’s so very important to your health and you owe it to yourself to feel good and be well. Meditation isn’t just a fad it is proven to help in mind, body, and spirit and can be a powerfully healthy habit to create. Namaste

The Muse Asbury Park is New Jersey’s Nashville by Steve DeJacimo

I think at times we all need to just go on a walk, alone, and clear our heads. New Jersey, I love ya, but you can rile me up like no other area. We are basically on top of each other in this state and we all need to find our little nooks and crannies where we can feel relaxed and reset. My Uncle used to say, “Come down to the beach, and get rid of your gremlins”. Now I know what he means.

I had the chance to stay in Johnny Cash’s room at the Berkeley Carteret Hotel, a few years back. Yes, Johnny Cash resided in Asbury for weeks at a time to write some of Steve DeJacimo Owner, Typhoon those classics we know today. It has a bold Media Publishing, history in roots rock, we all know the big LLC. names that cut their teeth there…. but what about the current bands that come there? Dave Matthews just rolled through playing on the beach (a great venue-it should be utilized much more) at the Sea Hear and Now Festival, along with many other massively talented bands on The Stone Pony Summer stage, The Paramount Theater, Convention Hall, The Wonder Bar, Asbury Lanes, Tim Mc Looones’ Supper Club, stage. It has become a musical destination for all levels of music. For me and many other music heads, this is like the Nashville of New Jersey.

For me, music is a cultural winner. The number one mood enhancer. One of my music professors at Kent State would remind us frequently throughout the semester that “music is the universal language”. I believe it. If you watch people at concerts and even local coffeehouse jam sessions, you realize the transformation people can have just by listening to their favorite tunes. I took one of those “gremlin ridding” walks the other day from Ocean Grove (a spectacular community in of itself) to Asbury Park. I know, this is 08742 Living, but sometimes we need to know that there are other jewels in the jewelry box that we can wear. Asbury Park is a musical mecca for New Jersey and many across the country, and World, for that matter.
