Recipes by the Sea One of the biggest dilemmas in my house is what dessert to have after the turkey. There is usually an abundance of choices so a little of this and a little that is the answer. But since half the family is now gluten-free the new dilemma is how do I meet the dessert “needs” of everyone? This layered “trifecta” is gluten-free but good enough that gluten lovers will never know. With layers of pumpkin cheesecake apple pie and pecan pie in one, it saves on baking too. Experiment with poached pears and candied walnuts if you prefer, the options are many! Enjoy!

Crust: ½ cup sugar 1 tsp cinnamon ½ tsp. ground nutmeg
Cheesecake: ½ cup pumpkin puree 2 tsp. Cinnamon ½ tsp ground nutmeg ½ tsp ground cloves ½ tsp ground ginger 4 eggs 2 tsp vanilla extract Instructions:
For the Crust: Process in a food processor to a medium crumb and press into the bottom of a spring- form pan. For the Cheesecake: Place a pan of water in the oven prior to preheating to 325 degrees. Whip until smooth scraping bowl between to make sure all ingredients are well mixed. Pour into crust and place into preheated oven. Bake 50-60 minutes. Center may appear slightly soft. Turn off oven, and leave in oven for additional 30 minutes. Allow to set for at least 3 hours, or overnight in the fridge. For the Apple Filling: Peel and slice 3 large granny smith apples. Place in large skillet pan with 2 TBSP of butter, ½ cup sugar, 2 tsp cinnamon, ¼ tsp nutmeg and 1 TBSP lemon juice. Cook on low heat until tender, being careful they don’t cook to “mush”. Sprinkle 1-2 TBSP gluten free flour on top to thicken juices cooking for another minute. Remove from heat and allow to cool. Arrange cooled apples on cooled cheesecake. For the Pecan Drizzle: Place 1 cup pecans in a skillet with 2 TBSP butter, ½ cup brown sugar, and bring to a bubble on medium heat. Allow to bubble for 3-4 minutes. Remove from heat and add 1 TBSP vanilla extract and stir vigorously. Drizzle on top of apples.

Here we are in the thick of the holiday season. How is it going for you? Are you enjoying the season or finding it stressful in any way? That may seem like a silly question as most people find some aspect of the holidays stressful. Here are some tips to make the holidays less stressful and more enjoyable.

Think about how you’ve felt when you’ve eaten too much junk. Foggy brained, lethargic, puffy…or if you’ve drank too much and you’ve got a hangover. That is no way to enjoy the holidays or get everything done in a way that is enjoyable. I promise you will enjoy the holidays more if you take care of yourself and feed yourself well. Get some sleep too! No sleep makes it harder to eat well because all you crave is the carby foods. Moderation is the key for the holidays.
1 Boundaries, boundaries, boundaries. Not setting boundaries for yourself is a guaranteed way to breed resentment and stress. Some people have a hard time setting boundaries and those are usually the people who become exhausted, frustrated and resentful. Do yourself a favor and learn to say “no”. It is one of the most important words you’ll ever use. Keep in mind that feeling exhausted, frustrated and/or resentful is frequently an invitation for overindulging. If you use food to soothe or cope, learning how to set boundaries for yourself is even more important. Take some care to check in with yourself each day and see how you are feeling, how you’re being impacted by the day and what you might need and then honor those things. You’ll be amazed at how much better you’ll feel by honoring your needs.
So there you have it. Some tips to make the holidays less stressful and more enjoyable. This season comes but once a year so make the most of it. Have fun and eat healthy, be happy!
2. Time management. Don’t underestimate the importance of giving yourself the gift of good time management. Rushing to get things done is a recipe for stress. We don’t enjoy things when we are stressed and that’s a shame. A big part of the holidays is the preparation. How much fun would the season be if you enjoyed the preparation? Plus, once again, decrease the stress and you’ll decrease the overeating. 3. Let’s focus on the food. What are your thoughts on holiday eating? Do you stress over every last thing you eat or drink or do you give yourself permission to eat and drink with abandon knowing that come January 1 you are going to diet, diet, diet. Ugh to both ideas. What if there was another way? What if you could eat and enjoy your food without guilt and without abandon? It’s called mindful eating and it is a practice. A big part of the holidays is the food. That’s great especially when the food meaningful-think foods that are traditional

Rover Rescue Who Doesn’t Love a Puppy?! by Lauren Kehoe
Raising a puppy is no small feat! As adorable and fun as they are, puppies also require a great deal of supervision, stimulation, and training. If you are ambitious and motivated enough to take on the responsibilities and joys of raising a puppy, knowing the puppy developmental stages helps set everyone up for success. Between four and six weeks, puppies are learning important social skills from their mother and siblings. These include communication through barking and growling, taking corrections, and proper bite inhibition. This is also a time when puppies should be introduced to new people and new things to encourage positive associations. Presenting different everyday sounds, such as doorbells and vacuums, helps familiarize for future interactions. Touching feet, stomachs, tails, etc. is also helpful to decrease handling sensitivities.

Six weeks is the best time to begin light training with your puppy. Feeding a puppy in a crate acclimates them to the space, which can later be a great tool with housetraining. Simple obedience such as sit, down, come, and leash walking can be introduced. Treats, pets, and praise are key rewards in positive reinforcement training. Eight weeks is the earliest that a puppy should be separated from its siblings and mother, though this is not always the case. At this time, puppies begin to experience fear, which is normal. Familiarizing with possible “fear” items earlier on does help, but they are still slowly learning about the world around them. If a puppy lives with other animals, they try to establish a rank in the group hierarchy between four and six months. Six months is the start of the adolescent stage, which lasts until about a year. Socialization and training are vital at this energetic, rambunctious time. Lack of mental and physical stimulation can lead to boredom and destruction. Two years marks the time when a pup is considered “fully grown”. They have established a personality with social habits and preferences. Training and socialization should be continued but is less critical if able to establish a solid foundation during puppyhood. Every puppy is an individual and has his or her own personality. There is no such thing as a perfect puppy or dog but taking positive actions during the proper stages of growth can help create a more confident, adjusted dog. If critical socialization periods are missed, puppies and dogs can still make progress, it just can take a bit longer. Keeping up on training also strengthens relationships between humans and dogs, and can be a lot of fun. The best reward for hard work is seeing the progress and celebrating with your pup!

The chocolate meditation is simple enough for beginners, but effective enough for the experienced meditator. At first glance the chocolate meditation may sound a little frivolous and self-indulgent. While it is certainly one of the most pleasurable and delicious forms of mindfulness meditation, it also has a deeper value. It helps you to reconnect with your senses, which is of vital importance in our fast-paced and frantic world. Connecting with your senses is one of the core benefits of mindfulness meditation so anything that aids this process is of immense value.

How to Meditate with Chocolate 1. Choose some chocolate. A type that you’ve never tried before or one that you have not eaten recently. The important thing is to choose a type you wouldn’t normally eat or that you consume only rarely. 2. Relax your body. Take a few deep breaths and work on un-tensing your muscles to relax your body. You want to enter your chocolate meditation as physically relaxed as possible. 3. Smell, gaze, and nibble. After you smell the chocolate and really take in how delicious it looks, you can take a small bite. Let it sit on your tongue and melt in your mouth. Notice the flavors from the chocolate, become completely absorbed in what you’re experiencing right now. Continue your deep breathing and concentrate on the sensations in your mouth. 4. Focus on the sensations. As you swallow, focus on how it feels going down. Notice how your mouth feels empty. Then as you take a second bite, try to even notice how your arms feel as you raise the chocolate to your mouth, how it feels between your fingers, and then in your mouth. Again focus on the sensations you are feeling in the present moment. 5. Re-focus on the present. If other thoughts come into your mind during your chocolate meditation, gently refocus your attention to the flavors and sensations associated with the chocolate. The idea is to stay in the present moment as much as you possibly can. 6. Savor the feeling. When you are done savoring your chocolate, revisit the feeling throughout your day and feel more relaxed. You may choose to continue your mediation after the chocolate is gone, or simply resume your day immediately afterwards.

When the UK-based Dulux Paint company named “Traquil Dawn” its 2020 Color of the Year back in September, I breathed a massive sigh of relief. Let’s face it, 2019 has been a bit of a tough year so we could all do with a little break from this year’s stresses and this hazy, cool neutral green appears to be a very positive sign of things to come.

Numerologists have penned 2020 as the year of transformation where we will all be challenged to reach new heights and in doing so, require a peaceful, relaxed space to come home to that lets us reconnect with our humanness and maintain a sense of harmony and balance. Or, as the 1099 workforce continues to grow, revisit how we use our homes as we transform them into more of a work meets leisure fusion. Here are a few trends focused around the design twin peaks of Tone and Texture that can help you turn your home into a haven.
Tones
In this age of technology, earth tones are such nurturing and grounding colors. This seasonless palette comprises the perfect neutral backdrop for you to dress up or dress down for the holidays and, left alone, give your eyes and mind a break from the constant stimulation that surrounds us. You might think neutrals are boring and plain, but we’re not talking cool whites as much as warmer shades of bone, beige and other natureinspired tones. Think personal wellness space. Some neutral living rooms can look flat and uninviting which is where we’re seeing a strong focus on textured fabrics like boucle, a woven fabric made with looped or curly yarn, or faux fur accessories which in my humble opinion are always in style and perfect for cozy winter days or nights. Wall hangings are also a quick way to add character and personality to your home and 2020 is all about handwoven, boho-style textiles with tassels, crochet and beading. Statement ceilings such as those with wood beams or tin tiles are making a huge comeback, lending homes a rustic chalet-type feel. And let’s not forget that biophilic icing on the cake…a couple of green plants to oxygenate your space while bringing stress levels down. With the holidays upon us, take a few minutes to create a space that fulfills and reenergizes you as we head into this festive (and oftentimes stressful) season. Happy Decorating!

We are ramping up for the holidays and a new year and with that comes crashed diets and feelings of not being able to commit to ourselves diet wise. Don’t worry you’re not alone! Succeeding in self-care is always easier said than done and with a checklist and plan in place you’ll tackle the holiday eats and New Year’s resolutions without batting an eye. One of the first things that helps us to be successful is surrounding ourselves with others that have the same determination to stay healthy. Telling your friends and family your plan to stay healthy through the holidays and into the New Year should help you to gain in their support. Perhaps your family and friends will also partake in your footsteps and start eating heathier too! But if your surroundings seem to not always offer that much support then start off by eliminating sugar and fats from your diet. This will help kick-start the plan.

If you’re pressed for time, then the plan should be to cook in bulk and freeze those meals. Meal prep is one of the biggest successes of a healthy eating plan. By cooking at home, pre-made dishes allow for portion control, what ingredients are in the meals, whether or not the meal is organic and NON-GMO, and it’s always ready to be eaten when you’re hungry. It helps us to stave off the hunger pains rather than reach for junk food. We eat more junk food than healthy live foods in our American diet. Being prepared is half the battle so make use of leftovers. Keep a journal of recipes and foods that you are striving to incorporate into your diet as healthy foods. By writing down the foods you would like to incorporate into your diet, you will be able to food shop more efficiently and effectively and plan your meals better. You can even write down what you ate daily in this food journal so you can track calories, portions, fats, sugars, etc. When you start to feel better and look better you can reflect back on how this came about, by eating healthy. You might even want to recruit some friends or family members with ease after they see your results and want in on the health kick. If you love to eat but still want to maintain a healthy regimen try to incorporate a 5 mini meal daily routine. This will allow for those snacks in between the 3 meals a day. The 3 meals a day should also be smaller in portions since you are adding the two snacks in between. Having smaller mini meals throughout the day also helps support any type of adrenal fatigue. Your body isn’t trying to break down too much food at once, taxing your organs. Not to mention your blood sugar stays level much longer and you don’t reach a state of crashing. Your snacks should also be substituted with healthy snacks. Think live foods! Say no to artificial ingredients. Anything out of a package is usually not good. It was artificially made and not grown. Eat plenty of fruits and vegetables in the colors of the rainbow, lean-meats, and low-fat dairy. If you are really craving that pasta, then have it but go for the protein with a chickpea or lentil pasta as a substitute. Get creative with your food. Be grateful for the food that will nourish you and heal the body from the inside out. Mindfulness of the foods we prepare and consume can also contribute to a successful healthy eating plan and habit. Eating healthy does require some of your free time and dedication, perhaps even some will-power but the results are always worth it. You’re worth it. In Health and Wellness

The Muse Rock n Roll Revivalists by Steve DeJacimo
When I hear bands come out with a sound that just harkens back to straight forward rock, that’s my sweet spot. Sure, there are many over produced rock bands that want that layered studio sound, huge guitars, monster bass and drum fills and catchy vocal runs. Bands like Disturbed or Linkin Park use heavy amounts of studio production to get that sound, much of it is tough to duplicate or jam out to when they play live. I am sure they have their moments….but bands like Greta Van Fleet, Dirty Honey, Rival Sons, Taddy Porter and Black Stone Cherry rely on straight forward Marshall stacks (not saying they all use them) but, relatively near that old school, organic rock guitar sound made popular by many classic rock bands from the ‘60’s and 70’s like The Band, Cream, Rolling Stones, AC/DC, Zep and so many more. It’s refreshing to hear the “stripped down” bluesy rock format being brought back to life I call them Rock n Roll Revivalists. They have stuck with that sound as their own. So many talented bands get into the studio with the latest and greatest producer and he or she, takes their talent in another direction, seemingly by the album or song by song. If you have ever listened to Red Sun Rising, they tend to go this route. Many of their songs “root sounds” sound different from the next. If that’s your thing…then cool. I’m not sure I always follow. I guess I am thematic, or formatic, if you will.
With this new, (actually it has been going on for 10 years now) revamped stripped down sound, bands like this open up opportunities from a full spectrum of bands to play with. This new group of bands can play with blues guys, former hair bands, metal guys and even some jam type bands might bring them along for a tour.

You can’t mess with bluesy guitar, bass and drums and a singer with massive range. The sound may never get old. So far in my lifetime? Not so much. Keep rockin’!
