1. Add foam to the container and place the orbs first, before adding any flowers. A low, flat container like this one works well as a showcase for the orbs. To insure that the design still has some depth, it helps to create layers in the foam elsewhere on its surface by cutting some foam away. 2. You may wish to remove the spheres while you add the first flower placements, using pavé and pillowing techniques. Here, the green button

poms were inserted first, then the callas, which divide the design into sections, roughly according to the proportions of the Golden Mean. Dyed reindeer moss can be used to cover the foam where necessary. Replace the orbs before completing the floral insertions. 3. A cluster of Yelloween lilies balances the orbs. Blue thistle brings out the blue color in the orbs, while chinaberries reinforce the bright green of the button poms. As a final touch, curls of gold and silver wire unify all the colors and textures in the design. b

SHE WAS AN ANGEL! Angel wings can make a beautiful statement about the deceased, in life as in death. The wings at left were created by binding bundles of midollino with aluminum and bullion wire; the graceful curves and open form are inspired by the style of art nouveau. Fragrant garden roses are featured at the heart of the design, while gently fanning foliage echoes the shape of the wings. A GREAT SPIRIT At near right, bold flower forms reflect a life of adventure, led by a dramatic, dynamic, vibrant soul. Curls of metallic flat wire suggest a shining path and also function as mechanics in the design, since foliage is attached to them with UGlu, a technique that enables controlled placement for clean visual flow. Here is an example of an easel spray that is not a badge of death, but a celebration of life. A ROUND BOUQUET In everyday

While tradition can be a good thing, there is no reason why funeral flowers, and in particular, easel sprays, should not receive a creative interpretation that reflects current trends. Whenever possible, they should also celebrate the personality of the deceased individual. Let’s consider some alternatives to the traditional easel spray. 12 www.flowersandmagazine.com

and bridal work, round bouquets of mass flowers have ruled supreme for many years now—but in sympathy work, where it has never really transferred, this popular look remains quite fresh. Using a floral cage mounted on an easel, flowers can be arranged more loosely than in a hand-tied bouquet, giving the finished design more size and show. In this floral tribute, draped Dupioni silk and curls of rhinestone-studded flat wire may reflect the image of a radiant and fashionable person. b

Building on a strong tradition, Florida foliage moves ahead.

L

ooking for a way to add value and style to floral designs? Consider foliage—that hardy green stuff you’ve been taking for granted all these years. Yes, in some markets there has been for some time now a trend toward using less of it, or even eliminating foliage from certain types of designs. That’s all the more reason why using it creatively, and with an eye for quality, can set your designs apart (see this month’s design feature, “Go for the Green”). Florist foliage generally falls into one of two or three categories. Western greens like salal, huckleberry, and bear grass grow in

14 www.flowersandmagazine.comersand

the Pacific Northwest, where it’s cool and dry. Tropical foliages like aspidistra, calathea or ti leaves often grow best at higher elevations; they may be shipped to the North American mainland from Hawaii, South America, or the Far East. Some tropical foliage, however, is also grown in Florida, which has supplied the majority of the cut foliages that florists use every day for nearly a century now. Remarkably, these foliages are grown within a relatively small area of central Florida and shipped out not only to all parts of North America but also to Europe, Asia, and all over the world. “We ship to New Zealand and Saudi Arabia,” says Julie Puckett of Wm. F. Puckett, one of the industry leaders among Florida foliage growers. “We ship to Hawaii!” As with flower farmers in California and across North America, today there are fewer Florida foliage growers than in the past, thanks to competition from imports, including Costa Rican and Guatemalan greens. But

the Florida foliage growers who survive do so because they offer the best available quality. WHY FLORIDA? Florida does offer natural advantages to foliage growers, including sandy soil and plenty of sun. Florida farmers will tell you that growers farther south have a lot more problems with bugs and diseases, and that their crops, raised in a hotter climate, just don’t get the same deep green. That doesn’t mean Florida growers don’t face challenges, including hurricanes and the occasional winter freeze. Then again, these same growers have the expertise and commitment to protect their crops and overcome catastrophes like the freeze of 1991 or the hurricanes of 2004. Most are small family farms that have been growing cut foliage for Tree fern, as seen here, and other asparagus “ferns” thrive under the natural canopy of oak “hammock” in central Florida. fresh focus decades. “I grew up in this industry; my husband did too,” says Julie. “We have a passion for what we do.” SHADE AND SHELTER At one time the dominant cut-foliage crop in Florida was plumosus fern and other “ferns” in the asparagus family (they’re not really ferns, but more closely related to lilies). The asparagus ferns also include sprengeri, foxtail fern, tree fern, and ming. These foliage crops grow beautifully under the “hammock” or canopy of tall oaks that are a natural part of the central Florida landscape. A hurricane, of course, can take those trees down—and sometimes it does. It might take 40 years for them to grow back. Nowadays asparagus ferns remain important, but by far the biggest crop is leatherleaf, which is grown very successfully under a covering of saran. Don’t think “Saran wrap”; this shade cover is a woven mesh that filters the hot Florida sun. It doesn’t let the breeze through the way the hammock does, but it provides growers with better control over the environment. The steel posts that hold up the saran can also be destroyed in a hurricane, but replaced more quickly than hammock. DIVERSIFYING CROPS As important as they are, leatherleaf and the asparagus ferns are far from the only cut foliages grown in Florida. Wm. F. Puckett grows 18 different varieties of foliage (and sells a much wider variety than that, some of it brought from elsewhere to

give customers the convenience of one-stop shopping). “We grow lily grass, aspidistra, aralia, Japanese boxwood, calathea, coontie fern, holly fern, Israeli ruscus, ivy, magnolia, maidenhair fern, monstera, sago palm, umbrella palm, podocarpus, ti leaves, and sword fern, to mention just a few!” says Julie. Another Florida foliage supplier is FernTrust—which is actually not a grower but a cooperative formed to give a marketing platform to 13 small family farms in central

fresh focus Florida. By banding together, these farms are able to collectively meet the demands of big floral importers in Europe and elsewhere. Speaking for FernTrust, Jana Register says the farms are growing about 60% leatherleaf, about 20% tree fern, with “specialty items” accounting for the remaining 20%. But the ratios are changing, she notes. One area where demand is growing is for pittosporum and other woody ornamentals. “I’ve been at FernTrust going on eight years,” says Jana. “In that time, the amount of pitt we sell has increased tenfold. Even with lots of new acreage going in, demand has finally outstripped supply in about the last year and a half, so now we are catching up.” As growers expand, rather than putting in more leatherleaf, most are going for new products with a novelty look, like Milky Way aspidistra, weeping podocarpus, willow fern and bottle brush. FOR ALL SEASONS The Florida climate permits harvesting of most cut foliage yearround—but that doesn’t mean there is no seasonal variation, a factor that savvy florists take into account. Let’s look at leatherleaf fern, for example. In nature, ferns may reproduce via spores, found on the underside of leatherleaf fronds, mainly in the summer, when the leaves may also feel more dense and leathery than in the spring or fall.

Aspidistra— both green and variegated, as in the popular Milky Way variety, above right—is another of the newer, fashionforward crops finding favor with Florida foliage growers. Photos courtesy of FernTrust.

18 www.flowersandmagazine.comersand

The way that fern farmers multiply their plants, however, is by division. They look for the growing “eye” on a fern plant, divide and re-plant it. It sends a rhizome underneath the soil, which eventually sprouts, producing a tiny, fresh, light green spiral, the fiddlehead, which unfolds into a frond. Leatherleaf puts up new shoots all year long, but most prolifically in the spring, when the fronds are the most beautiful, says Jana Register at FernTrust. The new spring fronds can’t, however, be cut too

early. Up until April or even May, the harvest is mainly from shoots that were first put up in late fall. “It’s the grower’s responsibility to keep pests and diseases away from those ferns,” to keep them beautiful in the field, says Jana. Spring came late this year— which means that in April, Jana was anticipating supplies of leatherleaf could be tight for Mother’s Day. Pittosporum, similarly, can be harvested year-round, but puts out new shoots in the spring, which can’t be cut until they’re ready. With the asparagus ferns, some growers might be tempted to cut the new spring crops early, to meet demand—but if they do, those

fresh focus Leatherleaf fern is Florida’s most important cut-foliage crop. Much of it is grown in the filtered light of a mesh covering (saran) that protects it from getting burned in the midday Florida sun, as seen in the photo below from Wm. F. Puckett. The fern plants send up tender shoots all year long, but especially in the spring, when they turn first into fiddleheads (as seen at right in a photo from FernTrust), then into fronds.

tender greens won’t be as hardy in the vase as they would if they had been allowed to mature. “Magnolia leaves are beautiful in the fall, but it’s often difficult to source any quality from about late January on,” Jana notes. LIVING LONGER Cut Florida foliage may be hardy—but Florida farmers don’t take its durability for granted. “Under the saran in the ferneries, it gets to 120 degrees,” says Jana. “So it’s very important to start cooling the foliage as soon as it leaves the field.” At FernTrust, the cut ferns are immersed in a cold-water bath. From that point on, “it’s never going to leave the cold chain,” says Jana. “We feel it deserves the same treatment as the most expensive flower.”

20 www.flowersandmagazine.comersand

Likewise, at Wm. F. Puckett, “we chill the ferns, use a Dosatron, and do the packing in a chilled packing room,” says Julie. “And of course, all of our greens have been treated with Hydroseal, which extends the shelf life by at least 30%.” Super Shine is another Puckett treatment that extends vase life as well as enhancing the look. That extended durability can make the difference to a retail florist’s purchasing and design strategies, especially at holiday times and for wedding work. VALUE ADDED Other special treatments, finishes, and packaging options are available from most Florida foliage growers—options that retailers may or may not be aware of if they have not been promoted by local wholesalers. From Wm. F. Puckett, for example, come Gilded, Frosted (silvered), and White Mist foliages, treated to complement holiday and wedding designs. FernTrust has a ColorFresh program that combines artificial

color with sealant for both special hues and extended vase life. Most Florida growers offer mixed assortment boxes that make it easy to try new and unusual greens you may not have seen before. FernTrust sells mixed foliage bouquets, beautiful on their own, to which cut flowers can be added. Julie Puckett argues that Florida excels in a product category that most buyers don’t associate with the state: Christmas greens. Leland cypress (something like the Port Orford cedar) is just one of the foliages that are sold at Christmastime in what Julie describes as “retailer-friendly” bunches of one and a half to two pounds, in many ways easier to handle than the woodier greens that are cut farther north. And of course, premade garlands, wreaths, and centerpieces are also available, for Christmas as well as for year-round weddings. Altogether, Florida foliage is worth a second look—for style, for value, and for design inspiration. Consider the resources below as a first stop along the path. • Wm. F. Puckett www.puckettfern.com • FernTrust www.ferntrust.com b

TeamFloral founder Dan McManus talks with successful shop owners about their strategies.

by Dan McManus

Keeping the team motivated gets extraordinary results for this shop. Skip Paal and his father run a chain of shops with locations in Maryland and New Jersey. Skip has maintained exceptional margins and growth coming back from the 2008 recession. While they have certain advantages by being a large operator, many of the techniques they have pioneered are suitable for smaller shops. That includes some great techniques for keeping employees happy and productive. Looking at the numbers, you had really nice growth last year—but what happened to your profitability? Yeah. We stubbed our toe on labor costs. It happens. As good as we are tracking and controlling that, it just got out of hand. We were experiencing some growth and we let hours edge up a little too far. We have since moved our designers to a new, four-days-onthree-days-off schedule. It is working great. So far this year, we are at 20 percent! I’ve very proud of that. The recommended flower Cost of Goods Sold (COGS) percentage is 33%. You are showing 18. Is that accurate? Yes. It’s because we buy direct in huge volume and have the facilities to house a lot of product. That level is not really achievable for most shops, but any independent operator should be able to achieve 26% to 28%. Many shops lose a lot of their profit through stuffing because they do not measure the amount they spend on flowers against their flowers sales. That is the only accurate way to track it. You attribute much of your shop’s success to the commitment of your managers. Why do you think your team performs so well? We recognize their achievements. We measure their performance and reward them with incentives when they improve. We used to use industry norms, but now we reward our

22 www.flowersandmagazine.comersand

employees when they out-perform their own record. I really believe that employees don’t deserve a raise just because they’ve been here a long time—but they absolutely deserve a raise if they’re making more profit for the company. When an employee goes above and beyond, we pay them more. If they do the same as they did last year, they get the same. We have report cards that allow us to measure the performance of the managers, designers, and salespeople. We are in the process of developing one for drivers.

In this case, the entire arrangement needs to be done except for flowers. How are the managers graded using this system? We review each manager four times a year. They’re expected to hit five of these goals. At the review, if they have achieved six, they get a bonus of 25 cents per order for every order from their shop during that quarter. If they hit seven, they get 50 cents, eight 75 cents, for nine, they get $1 per order. (The bonus excludes wire-in orders.) This gives the manager a chance to earn between $3,000 and $5,000 per year in bonuses depending on the size of their location. That is enough to really get their attention. We love it when our mangers earn bonuses because it means they are outperforming the

24 www.flowersandmagazine.comersand

expectations and we are more profitable than we were last year. Some shop owners are against incentives. They say employees are paid to do a good job and that should be enough. We pay our employees a standard wage for standard performance. But we give every employee the chance to earn more by performing above average. We reward our employees because it is good for business. Motivated employees are the most important assets in our company. They have more impact than we do on the success of our shops. How does your program work for employees other than managers? Basically the same. There are just different measuring sticks. We want our designers to realize that the more they produce per hour, the more we can pay them. For our salespeople, the higher they sell, the more we can pay them.

Every quarter, each employee is reviewed and their scorecard is tallied. Depending on the score, they have the ability to earn a raise that runs from five cents to 25 cents per hour. That can add up to $1 per hour a year. They can also earn a bonus; the bonus makes the raise retroactive. Any time an employee gets a compliment from a customer, they can earn extra points, beyond those available from the scorecard, which gives them an even better chance of earning a substantial raise. We struggled for a while with aligning our expectations on the job with the employees’ expectations. We found that their perception of what we wanted wasn’t clear enough. Now, the incentive system helps make our expectations clear to our employees. It’s a win for us and a win for them—and our customers get outstanding service. Size &space

Is the size of your design appropriate to the space

it will occupy? Sometimes, of course, you have no way of knowing where your design will end up. But given the chance, it’s important to ask the client, if you are designing a centerpiece, for example, about the size of the table. The illustration on this page suggests a view from above; it demonstrates appropriate consideration for size and space in the horizontal plane. You also need to look at height. As a general rule, a floral design looks best when it occupies only about a quarter to a third of its immediate “environment,” however this is defined. Size and space are especially important in designing for a hotel lobby or a church, where your design must be in proportion to the scale of the environment. Conversely, for a hospital design, you want to pack more value into a smaller size. b

Around the World from

A toZ

This year’s World Flower Council Summit promises a fabulous fusion of international design styles.

I

t’s often said that flowers are an international language. Maybe that’s why florists and designers

from around the world generally get along so well and delight in learning from each other. The language is the same, but in different cultures it takes different forms—and its expressive quality reaches new heights when designers have the chance to learn an entirely new vocabulary. In late summer of this year, florists and friends from approximately 20 countries will gather for four days (September 11-14) in Zagreb, Croatia, for learning and sharing under the auspices of the World Flower Council. Founded 30 years ago, the WFC is an organization dedicated to promoting peace through the beauty of flowers. Its annual summit always features internationally known designers of the highest caliber. Among the artists scheduled this year for tutorial workshops and a design spectacular is Dr. Solomon Leong, whose work, though he is based in Hong Kong,

28 www.flowersandmagazine.com

clearly shows the influence of English garden style and European design. As a doctor of philosophy in cultural studies, he is renowned for astute commentary as well as for show-stopping design. Solomon will be joined by Jacqueline Boerma, CEO of the famous Boerma Instituut International Floral Design School in Holland and a fourth-generation florist and Dutch Master who has demonstrated floral design in all parts of the globe. Other accomplished designers and teachers featured at the summit include Dutch Master Florist Petra van der Veen, Dutch-Canadian designer Erik Wesseling, and Latvian florist and teacher Ilze Plume—all participating in summit tutorials and demonstrations. The program will be coordinated by the popular floral design educator Els Hazenberg AIFD. The coming summit takes place in the comfort of the historic Esplanade Hotel—built in 1926 by the Orient Express as a stop-over for guests traveling by rail, in the charming city of Zagreb, on the Adriatic Sea, a venue with no lack of opportunities for relaxation and enjoyment. For more information on the World Flower Council and its upcoming summit, visit www.worldflowercouncil.org. Orchids offer Nature’s proof that it’s possible to be both extremely elegant and very, very sexy. The same striking visual qualities that orchids use to catch the attention of a pollinator from afar make them an excellent choice for bold, eye-catching designs on a buffet table or near the entrance to a glamorous celebration. What follows are design ideas intended to exploit the exotic allure and festive fascination of cut orchids.

MOSAIC MAGIC “Tessellation” is a term often applied to orchid blooms, and sometimes orchid leaves; it refers to a pattern of small squares that resemble close-fitting tiles. The tessellated petals of these striking vandas, called Vanda Kanchana Magic Blue, harmonize nicely with the beehive pattern on the Cosmic Vase. Kenny filled a Western Pulp Re-Creations pot with wet foam; it fits nicely into the opening of the vase. He secured it with anchor tape and covered the rim with moss, then added a grid of white Fiber Sticks, strapped together with white cable ties. Finally, he filled the foam with two dozen of the purple vandas.

ALL ROCKETS FIRING With their spikey metallic tentacles, you might think these distinctive vases look like baroque spaceships. They come in two sizes; Kenny has turned the smaller one upside down and connected the two with a bridge made of four whaleback leaves, rolled and wrapped in copper bullion wire. The larger vase is filled with mossed foam, then with vanda orchids (Vanda Nitaya Magic Lemon) in a rich yellow infused with green and brown.

ON POINT Dendrobium sprays are generally bunched, but in the design at left, Kenny has inserted them into clear glass needle vases, which he strapped to white mitsumata branches with flat silver wire. As a result, the arc of each spray and the flowers on the bottom are fully visible, showing off the long stems that are a special feature of dendrobiums grown in Hawaii. Surrounding the dendrobiums is a double ring of paphiopedilum orchids, likewise displayed to advantage in needle vases. The design scheme relies on a pair of Fuse Trays, a smaller one overturned in the center of the larger. The mitsumata is secured to the smaller tray, and the base of the tray is filled with mossed foam and tessellated phalaenopsis orchids in Aquapics. The larger tray holds a foam wreath form covered with moss; the points of the glass needle vases are inserted directly into the foam. At the rim of the tray, small burgundy cattleya orchids complete the rich range of analogous hues. IN LINE Yellow vandas and red aranthera orchid sprays make a bold color statement; a three-tiered epergne is an easy way to get height. What really energizes the design at right, however, are the long whaleback and hala leaves that link one tier of the epergne to the next and add dramatic line. The orchids spring from Iglu caged foam holders that were first covered with galax leaves.

LIVING JEWELS With their luscious mango color and ruffled, pink- and raspberry-variegated lips, the stunning cattleyas above take the spotlight well; the single cattleya below offers its own sherbet hues. The orchid world abounds in exotic blends, in part because orchids interbreed quite promiscuously, not only between species but between genera. A case in point would be the speckled brown and yellow, intergeneric orchid sprays seen here, wrapped in a bundle with calathea leaves and gold bullion wire. Although the glass cone and stand are perfectly stable on their own, the gold Deco Pebbles lend a necessary visual stability.

JUNE 2014 37

GO FOR THE GOLD Here’s another intriguing way to add height to a dramatic entry or buffet design: with equisetum-wrapped PVC-pipe “torches” that sprout orchid bundles at the top. The equisetum dries nicely in place, and the nodes add interest to the look. Spray the pipes first with some sage green paint and use a little UGlu to secure the equisetum at the top and bottom. It tends to flatten out as you go; Kenny intentionally varied the thickness, and added a light wrapping of bullion. He strapped two bricks of wet foam into a sturdy plastic saucer and lowered it into the top of the tall gold vase. Finally, he placed the equisetum-wrapped scepters and the alocasia leaves in the foam, then the orchids. Complementing the yellow vandas and the gold vase are “orange” oncidiums, really a rich deep gold yellow, with flecks of coppery red. LIGHT UP THE NIGHT How else could you achieve such a fascinating medley of patterns, colors and textures while sticking to one type of flower, except by filling the test tube chandelier at right with a splendidly diverse collection of orchids, including the tips of spray orchids? Calathea leaves add their own strong line and pattern, reinforcing the rods from which the two-tiered chandelier is suspended.

GREEN GLOW The lime tint of painted, corrugated zinc canisters beautifully underscores the color of pale green flowers including dendrobium, cattleya, and Binosa orchids—the last a remarkable brassocattleya hybrid with green petals and sepals and a purple and white speckled lip. Kenny filled the Canister Bowl with foam, which he partially covered with galax leaves. Then he glued two of the canisters together, incorporating a long wood pick into the juncture, so that he could set them into the foam at a jaunty angle. For the perfect final touch, he added two stems of bamboo orchid, which is cultivated specifically for its graceful, long-lasting foliage. b

BEYOND THE LEAF Cut sections of sunflower stems are not how most people think of “greens”—but they do add necessary volume and visual weight to the design at left, at no additional cost. Likewise, trachelium (inset) is actually a flower, not foliage, but its crunchy green contributes to a richly textured basing that gives the composition a strong center of gravity. Without this feature, the design would look top-heavy. Two stems of light, fluffy tree fern, a few galax leaves, three round echeveria rosettes, and you’re done!

RING-AROUND ROSES Folded aspidistra leaves (inset) enclose a stand of Milva roses, while tufts of lily grass soften the look. To get the look he wanted, with the leaves pressed evenly against the inside of the cylindrical bowl, Jim relied on the Aquafoam Designer Ring to create a perfectly round disk of floral foam. It comes in a clear plastic disk, which Jim set aside for later use on its own.

1

1. The 11-inch Designer Ring fits perfectly inside an 11-inch glass cylinder bowl like the one at left—but cy Jim needed a little space between the foam nee ring and the bowl so he could add the folded leaves. So he began by trimming about half an inch from the outside of the ring. Holding a knife so that his finger measured about half an inch from the tip of the blade, he cut notches all around the outside. 2. With the notches cut, it’s easy to make further cuts parallel to the outside of the ring, cutting away even strips of foam so that the ring is smaller by half an inch all around. This process goes quickly—and paring the ring freehand will not yield the same smooth, even result.

2

3

3. To fill the center of the ring, Jim used the ring itself as a template to draw a circle on the top of a block of foam. Then he cut out a disk of foam that fit nicely inside the ring. 4. After soaking the foam, Jim took aspidistra leaves, folded them, and pierced the upper part of each leaf with the stem, then inserted the stem into the foam disk. (Aspidistra leaves are perfect for this purpose, because they fold easily, without cracking.) He added the leaves into the foam all around, sufficient to cover the sides of the ring. 5. The last step is to turn the ring and disk of foam over, so that the stem insertions are on the bottom, and lower them into the glass cylinder bowl. In the how-to photo, only three leaves have been inserted, so that you can still see the mechanic as a whole. In reality, you would insert leaves all the way around before overturning the foam.

4

With all the leaves in place, Jim added the rose stems to the exposed wet foam in the middle. He then surrounded the stems with river rocks. The final step was to insert groups of two to four blades of lily grass. Water with flower food added can be poured in as high as you like; with the river rocks in the center, the effect is like a still pool.

FLOWING UPWARD Hala leaves (inset) are strong enough to stand upright and make a bold statement as the central axis of the design at left, surrounded by gerberas and James Storey orchids. Jim inserted the hala leaves first, then all the orchid sprays and the galax leaves at the base, then the gerberas, and finally the sunflower centers, with a bit of green dianthus to add brightness.

STEM SUPPORT Equisetum stems fill any small, clear glass container nicely and also serve to support other stems. In the case of a rectangle like the one at right, they can be trimmed to get an interesting curve. (A design like this requires only the lower part of the stems; you can save the decorative finial tops for another purpose.) With the equisetum in place, flower stems can be added either between the equisetum stems, for the most secure placement, or inside them, for an intriguing effect. In the latter case you’ll need to pierce through the inner chamber walls of the equisetum, with the stem itself or with a heavy florist wire. JUNE 2014 47

FOLDED STRIPES While the eye goes first to fantail willow and parakeet heliconia, the intriguing base of the design at left is what really sells the composition. Jim filled the bamboo rectangle with foam up to within an inch or two of the top. Then he added the striped ginger leaves to cover the foam, first around the outside, then folding the leaves and inserting them into the top t of the foam on tthe interior. The willow and heliconia insertions came next, and finally, yellow craspedia and the tops of umbrella ppapyrus (inset), like miniature plants. min NAILED IT Tree fern creates a floating, fluffy cloud and a backdrop for the white spikes of veronica in this design; at the base, Jim has demonstrated yet another intriguing foliage treatment for the inside of a clear glass cylinder bowl. As in the rose design on page 44, Jim relied on an Aquafoam Designer Ring, but here the ring is only 8½ inches in diameter— quite a bit smaller than the 11-inch cylinder vase. He covered the outside of the ring with galax leaves, inserting the stems sideways into the foam, halfway up; wound a little bullion around the overlapping leaves; and then impaled the veronica stems onto the outside of the foam ring by piercing them with black nails (you could also use any kind of decorative pins). Finally, with the ring carefully lowered into the bowl, he added the basing of carnations and cushion mums and the tree fern. 48 www.flowersandmagazine.com

JUNE 2014 49

FAT FINGERS Fatsia japonica leaves (inset) come in sizes ranging up to 10 inches wide. In the aralia family, they may also be called aralia leaves. With their long fingers and attractive veining, they add extraordinary decorative value, as in the simple design at left, where Jim has loosely enfolded flower stems stem in fatsia leaves before placing them in b the vase, supported with curly wlilow. The leaves harmonize beautifully with the freesia and hydrangea foliage. h A GRASSY GARDEN Like flowers, foliage materials have a greater impact when they are grouped and bundled. At lower left, one whole bundle of bear grass is bound with wire and inserted as a unit at the back of the bouquet, while “naked” (defoliated) seeded eucalyptus cascades from the front. Jim wound curly willow tips around his hand and dropped them inside the interior, clear glass vase to support stems of flowering azalea branches, hot pink Cherry roses, and king proteas—which blend beautifully into the garden look, thanks to their harmonizing hue. UP AND ACROSS An array of eight Freedom roses gains powerful graphic impact from upright red ti leaves. The effect is underscored with sections of red ti leaf covering the foam in a long, low plate-glass planter. It takes a little less than two and a half bricks of floral foam to fill the 24-inch planter; you may want to skewer them together with a hyacinth stake for greater stability. Green Ball dianthus and red hypericum lend a necessary brightness to the base.

JUNE 2014 51

FAN OF STEEL At left, in a creative twist on a familiar technique, Jim covered a pair of clear glass cylinder vases with steel grass instead of bear grass, and slipped plastic beads onto some of the blades for extra color and pop. The steel grass (about two bunches on each vase) is held on with rubber bands, covered with one-inch flat wire, which is secured with UGlu Dashes. It takes about two bunches of steel grass to cover one bud vase. Jim chopped the grass on one vase and left the other wild and fluffy for contrast. WIRED INSIDE At upper right, another easy and inexpensive, yet clever and artistic design, made with long pieces of equisetum that were first wired on the inside with 18-gauge florist wire. Jim bent the equisetum into various angled shapes to create a grid inside the glass rectangle. He added cymbidium blooms equipped with chenille stems, which wick water up to the blooms; each chenille stem is slipped inside a naturallooking equisetum sheath. (For how-to photos, go to www.flowersandmagazine.com during the month of June!) BUNDLED UP Individual flower bundles, each enclosed in a fatsia leaf and securely wrapped with green metallic wire, come together to make a party centerpiece that can later provide favors for the guests to take home. Seeded eucalyptus (inset) adds its nubbly texture to the surface of the multicolored nosegays. b 52 www.flowersandmagazine.com
