At Barrel and Brie – in the small community of Eleroy, about 10 minutes northeast of Lake Carroll – all you have to do is look at the labels to find out. Lena couple Scott Wanek and Kim Confer offer up a “who’s who” of regional cheese makers within 75 miles of Lake Carroll in their freezers and coolers. Shullsburg, Decatur, Springbrook, Brunkow – you name it, it’s there. That’s the way Barrel and Brie’s team prefers it, especially during the COVID-19 pandemic, when people want to know where their food comes from, Confer said.
