The Restaurant Dogana, with its light blue façade, lies at the foot of the Schattenburg in Feldkirch, Austria, and is therefore the ideal place to stop for a bite to eat after a hike, a stroll, or the weekly shopping trip. As a true family business, the restaurant stands for culinary pleasures and great hospitality. “My father and my uncle founded the Dogana 42 years ago,” says Manuel Gallaun, who has worked in the family business for more than ten years as proprietor and sommelier and will, in the future, take over the business. “Of course, we will keep our core values,” he promises. The Dogana concept wants to offer something for everyone – every taste and every budget. On the top floor lies the more sophisticated but relaxed restaurant, that invites guests to 36 | Issue 87 | November 2021
sample a splendid menu at both lunchtime and dinner, as Manuel Gallaun explains. And on the ground floor with its café, the bar and the garden in the pedestrian zone, “one can casually have a Currywurst or drink a beer”.
with a selection of internationally renowned wines on offer, too. New visions are important for all types of gastronomy: “We have always grown and made progress,” says Manuel Gallaun. The business recently opened an ice-cream parlour next door: with the credo ‘made for you’, it focuses on individual combinations and toppings. The Dogana always wants to have its finger on the pulse, and so guests can continue to expect brand-new ideas and concepts arriving in the future.
FUSION KITCHEN WITH REGIONAL PRODUCE The head chef’s focus lies on regional and seasonal produce, and so the restaurant, next to classics like the Wiener Schnitzel, also offers local fish dishes. The food, however, is not just your typical Austrian fare, but also plays with the influences of some international kitchen cultures, too: diners will be delighted to find oriental plates on the menu, and dishes with falafel or chickpeas, for example.
