Summer in Europe has a particular flavour. It is shaped by sun-ripened fruit, colourful market stalls, long evenings outdoors and the kind of local produce that immediately tells you something about a place. For me, it is always one of the best times of year to explore a country through its culinary side.

With this in mind, I recently travelled to Ticino, Switzerland’s southernmost canton, to find out more about its distinctive culinary footprint. Framed by dramatic backdrops, mountainous terrain and a wonderfully Mediterranean spirit, Ticino feels both unmistakably Swiss and intriguingly close to Italy. It is a region where centuries of wine growing, grappa production and artisan food culture have left a lasting mark.

Over the course of my visit, I met passionate vintners, the producers behind beautiful artisan grappas and chefs who are keeping local delicacies alive while giving them a contemporary twist. Each encounter revealed a little more about the canton’s unique character. You can

read more about what I found in this month’s cover feature, where Ticino’s flavours, makers and landscapes take centre stage. I hope it offers a taste of the region.

The Meyer-Näkel sisters – setting the benchmark for sensational Spätburgunders

In the dramatic Ahr valley, where slate-rich slopes line the river, one winery has quietly shaped the narrative of German red wine excellence for generations – Meyer-Näkel.

Renowned for producing some of the country’s finest Spätburgunder – Germany’s elegant answer to Pinot Noir – this fifthgeneration family estate is now led by sisters Meike and Dörte Näkel, yet its rise to prominence is inseparable from the vision and determination of their father, Werner Näkel.

When Werner Näkel took over the family estate in 1982 at just 29 years old, the reputation of Ahr wines was far from distinguished. Light, simple wines dominated the market, and few producers dared to challenge convention. Werner, originally a high school teacher and something of an outsider to the wine world, chose a radically different path. Rather than chasing trends, he looked backwards – reviving the methods of his grandparents. He championed long maceration periods and ageing in small oak barrels, techniques that emphasised structure, depth and longevity.

His bold approach gained recognition, as he was awarded the German Red Wine Prize for his 1987 Pinot Noir. Accolades from leading wine guides such as Eichelmann and Gault Millau soon followed, and Werner Näkel’s distinctive style played a pivotal role in elevating the international standing of German red wines. What had once been an overlooked region began to command serious attention.

Today, that legacy is in the hands of the next generation. For over a decade, Meike and Dörte Näkel have independently guided the estate, combining inherited expertise with a forward-thinking mindset. Their stewardship, however, has not been without challenge. In 2021, the devastating Ahr valley floods struck the region, destroying three hectares

of vineyards and wiping out essential equipment. The impact was profound.

Yet resilience has become as much a part of the Meyer-Näkel story as innovation. The sisters not only rebuilt but reimagined the winery, consolidating previously scattered cellars into a single, modern facility. Although production has decreased by around 30 per cent since the disaster, the renewed focus on quality over quantity has only strengthened their commitment to excellence.

Their work has not gone unnoticed. British wine authority Jancis Robinson remarked; “I would not be exaggerating to say that Meyer-Näkel makes some of the most outstanding Spätburgunder in Germany.”

TICINO: THE TASTE OF TRADITION

In Switzerland’s Italian-speaking south, Ticino’s identity is served at the table: in alpine cheeses, chestnut cakes, polenta, honey, Merlot and grappa. Travelling between lakeside towns, grotti, vineyards and small family producers reveals a canton where landscape, tradition and flavour remain inseparable.

To travel through Ticino is to follow a network of small producers, inherited skills and flavours that shape the canton. Viticulture runs deep here: Merlot, introduced in 1906, now makes up around 75 per cent of the region’s grape varieties, while grappa carries the same tradition into a distilled form. Together, they reveal a culture built on technique, passion and a profound love for the land.

When I arrived in Zurich at the end of April, Switzerland announced itself before I had even touched down. From the plane window, Lake Zurich flashed silver, snow still clung to the mountains, and below, villages, forests and rapeseed-yellow fields formed a bright patchwork. It was the kind of view that makes a destination feel instantly familiar and entirely new at once. But this journey was not only about scenery. I had come to follow Switzerland south into Ticino, where the country takes on an Italian rhythm and wine, grappa, grotti and family-run producers tell a story as layered as the landscape. By train, bus, car and on foot, I would move from lakeside towns to vineyard-rich hills, meeting the people who

bottle the region’s character and tasting Switzerland’s southern canton’s traditions.

My culinary route began on the train from Zurich to Lugano, a journey of just under two hours that felt like a quiet crossing between

two Switzerlands. Outside the window, lakes, valleys, tunnels and snow-capped mountains gave way as the country’s German-speaking north shifted towards its Italian-speaking south. By the time Lugano came into view, framed by its lake and the Lugano Prealps,

Switzerland showed its Mediterranean side as it is situated close to Como and not far from Milan.

From Lugano, the arrival into Paradiso felt effortless, helped by the Ticino Ticket, which gives overnight guests at participating accommodation free public transport across the canton. Here, my base was Bigatt Hotel & Restaurant, above the Gulf of Lugano, where the special view is only part of the story. Set in a restored historic property with gardens, orchards, olive trees and vineyards, the hotel operates as a social enterprise promoting professional integration, while its restaurant focuses on seasonal produce, regional ingredients and local wines.

SWISS POISE, ITALIAN TEMPO

Lugano itself rewards slow exploration with arcaded streets, café terraces, lakefront promenades and mountain views. Its green heart is Parco Ciani, where palms, magnolias and manicured lawns soften the urban edge. From there, Lugano’s appeal becomes clear: elegant without feeling remote, polished without losing warmth, and deeply tied to the pleasures of the table, from es-

presso and gelato to risotto, Ticino Merlot and polenta in a traditional grotto.

Grotti were traditionally cool stone cellars or natural caves used to store wine, cheese and cured meats. Today, many have become rustic taverns in woods, beside rivers or overlooking lakes, loved for granite tables, unhurried service and menus rooted in local produce.

More than restaurants, grotti are social places that are informal, seasonal and deeply local. For me, that tradition came into focus at Grotto Morchino, just next to my hotel. Dating back to the 19th century, it still trades on the essentials that make these places so beloved: a characterful setting, regional cooking and an atmosphere removed from the city. Dinner was simple in the best sense as I ordered a minestrone built around local produce, followed by risotto with seasonal wild garlic and Alpine cheese.

To understand that same rootedness in liquid form, I travelled to Losone, where Vini & Distillati Angelo Delea has shaped Ticino’s wine and grappa culture since 1983. Meeting commercial director Enrico Grisetti offered a glimpse behind a family-run producer that has grown from Angelo Delea’s original vision into a team of more than 40 people, still guided by Angelo and his sons David and Cesare. Tradition and innovation sit side by side here: 20 hectares of vines and around 200 growers supply award-winning wines, while grappa is more than an afterthought at Delea, with some matured in barrels for seven to 12 years. and soft, even with its alcoholic strength, and called grappa “a very interesting product.” “For years, we have tried to bring new products to the market,” he said — a philosophy visible across the operation.

In Ticino, grappa carries history especially clearly. Made not from grape juice but from vinaccia — the skins, seeds and pulp left after winemaking — it began as a spirit of thrift, transforming waste into something warming and domestic. For generations it was both digestivo and household remedy, kept in cellars for coughs, stomach troubles, muscle aches and, in rural memory, even medicine for cows. Before licensing rules changed the practice, mobile stills travelled between wineries after harvest, turning fresh pomace into a strong, clear spirit. Today, official distilleries have refined the process, but the old idea remains: grappa ensures the grape’s story does not end with wine.

That idea of nothing being wasted followed me to Arogno, where Azienda Agricola Bianchi offered a quieter vision of Ticino’s future. If Delea showed scale and polish, Bianchi revealed another side of the canton’s wine cul-

ture: small, organic, inventive and committed to working with nature. Founded in 1998 by the Bianchi family, the estate is described as Ticino’s first BioSuisse-certified winery, built on respect for nature and biodiversity.

Tiziana, who showed me around, explained the estate as a living system in which vines, aromatic herbs, olive trees, beehives and animals all play their part. “It increases the biodiversity in the area,” she said. Chickens and geese help keep the grass down while returning nutrients to the soil. “They eat the grass and fertilise the soil at the same time,” she explained. Here, sustainability is not marketing language, but an everyday chain of practical, circular decisions. The Bianchi range reflects that whole-farm approach. The estate vinifies its own organic grapes, produces honey from more beehives, and makes distillates including grappa. It also produces Sambì, a semi-dry sparkling drink made from elderflower fermentation and presented as an homage to a traditional Ticinese drink nicknamed the “Champagne of the poor.” Even the byproducts have a place. “Everything is used,” Tiziana added, describing grappa as “a great example of a circular economy process.”

There is expertise behind the ease. The family business was founded by Marcy and Alberto Bianchi, with the next generation now helping carry it forward; Martino works as winemaker and Gabriele, who studied and worked in Champagne, brings knowledge of metodo classico sparkling wine. “If you knew Gabriele, he’s a volcano of ideas,” Tiziana smiled. In the cellar, intervention is measured because too much can remove “a little bit of the taste and the character.” Wine, Tiziana said, is “a living organism and we don’t want to stress it.”

For visitors, Bianchi translates that philosophy into experiences like garden picnics, tastings, summer events and a biodiversity garden that turns the farm into an open-air lesson in how agriculture, hospitality and landscape can support one another. What made Bianchi compelling was its clarity. “For us, it’s really just bio or nothing,” Tiziana said.

SMALL PRODUCERS, BIG FLAVOURS

From Losone, the route opened towards Locarno and Ascona, where Lake Maggiore gives Ticino’s culinary identity a softer face. Locarno, on the lake’s northern shore, folds palm trees, arcaded streets and Piazza Grande into

a mood of dolce vita, while Ascona feels more intimate, with painted façades, old lanes and cafés spilling onto Piazza Giuseppe Motta. Yet beneath the lakeside polish, the flavours remain local: cured meats, alpine cheese, polenta, risotto, lake fish, seasonal mushrooms, torta di pane, chestnut cake and, finally, a glass of grappa.

In the Mendrisiotto, Ticino’s southernmost and most vineyard-rich region, Borgovecchio vini in Balerna became the starting point for a Bike'n'Wine tour through low hills, villages and vine-striped slopes. The half-day ride was easy enough to keep the focus on the landscape, with stops at local wineries, tastings and plates of local specialities. It became less about famous labels than scale: meeting producers who work close to the land, pour their own wines and explain their

choices. Rocco Travella, former Olympic cyclist and Bike’n’Wine guide, summed up the philosophy beautifully: “Wine doesn’t necessarily need to be the star in the room. Sometimes it can simply accompany other plates and dishes.”

At each stop, the concentration of this small region’s wine culture became clear. Mendrisiotto accounts for around 40 per cent of Ticino’s wine production, with 360 hectares of vineyards. Travella spoke of that landscape with pride: “Thanks to our location and our soils, we have very unique terroirs,” he said, noting recognition at the Grand Prix des Vins Suisses and the Merlot World Championship.

At

Piccola Vigna, Ortelli Vini and La Costa, those bigger claims became intimate because each bike stop revealed the passionate people behind the labels. Piccola Vigna began with Piermarco Soldini, who first vinified grapes from a family vineyard once tended by his father, before Pierwalter Trapletti joined him in 1998. What started as a passion project has remained deliberately modest: a family-run cellar where relatives are still involved in the vineyard and production, and where professional know-how is balanced with the spirit of a hobby carried seriously. Its purpose is expressed simply: “The feeling that unites us is the desire to preserve the great winemaking tradition of our region.”

At Ortelli Vini, I learned that the story is one of continuity across generations. Mauro Ortelli began the modern activity in 1985 after training in viticulture and oenology, and the gradual handover to his sons Enzo and Lucio keeps the family tradition moving forward, one focused on six hectares of Mendrisiotto vineyards, Merlot, whites, sparkling wine, grappa and nocino. La Costa, meanwhile, is rooted in the hills of Novazzano, where Cristoforo and Fernanda Capoferri established the original farm in 1965 and where the winery is now run by Giovanni with his family and team. Across all three, the Bike’n’Wine route became less about tasting notes than inheritance: families adapting, refining and protecting a landscape they know row by row. Tradition survives here because it is carried by many small hands.

By the end of the journey, Ticino felt less like a destination to be checked off than a table to return to. Its lakes, valleys and vineyards provide the setting, but its character is carried in the hands of the many people who make its cheese, honey, wine, and grappa. To taste Ticino is to understand how closely landscape and tradition still belong together here and how, in every glass and plate, the canton continues to tell its story.

SHERI HAGEN: “EVERONE DESERVES A CHANCE TO GROW”

German-Nigerian director, actress and producer Sheri Hagen has long championed stories that broaden perspectives and centre underrepresented voices. As her new feature BILLIE heads toward cinemas, she speaks about home, creative freedom, diversity in German film, and the emotional, visual challenges of bringing this deeply rooted Hamburg story to life.

DISCOVER GERMANY: You were born in Nigeria and have grown up in Hamburg. What does the term ‘home’ mean to you?

Sheri Hagen: “A place where family is, where I feel connected and grounded, and where I can grow, put down roots, and feel free to become myself.”

DISCOVER GERMANY: What do you love the most about being an author and director?

Sheri Hagen: “To accompany my characters on their journeys, explore the boundaries they face, and discover how they grow, resist, and reveal themselves along the way.”

DISCOVER GERMANY: In 2015, you founded your production company, ‘Equality Films’. What was the underlying idea behind it?

Sheri Hagen: “I wanted a direct way to tell stories and bring them to life. Ultimately, I want to broaden perspectives.”

DISCOVER GERMANY: Unfortunately, discrimination remains a problem in the German film industry. How does your production company try to counter this issue?

Sheri Hagen: “By fostering diversity and age inclusion in front of and behind the camera,

including in lead roles and head of department positions – and by incorporating well-being facilitators into my productions.”

DISCOVER GERMANY: In what ways must the German film landscape change to allow for greater diversity?

Sheri Hagen: “It needs to establish guidelines that promote diversity and underrepresented voices because everyone deserves a chance to grow.”

DISCOVER GERMANY: Your new film BILLIE is coming to cinemas soon. What can audiences look forward to? What is the film about?

Sheri Hagen: “A story of love, friendship, solidarity, and violence, woven together with humour and drama. At its centre are two strong Black women, surrounded by an exceptional ensemble cast. A story rooted in Hamburg, reflecting Germany.”

DISCOVER GERMANY: As a director, what did you like most about the new film? Were there specific aspects that were particularly interesting to bring to the screen?

Sheri Hagen: “The tone of the film was both highly compelling and challenging –how far do I go into pain, exaggeration, or absurdity, as well as in making decisions about the colour design of the individual characters and spaces: which colour do I assign to which character and which space?”

DISCOVER GERMANY: You have already achieved quite a lot. What wishes and dreams do you still have?

Sheri Hagen: “I wish BILLIE strong audience success and for my projects to receive more natural and consistent support in the future.”

FROM IRONWORKS TO CULTURAL LANDMARK AND UNESCO WORLD HERITAGE SITE

“Schloss Rattey is both a winery and a hotel,” says winery manager Stefan Schmidt. Since 2004, Rattey has been Germany’s northernmost official wine-growing region. Currently, 36 hectares are under cultivation, with another 20 hectares being planted. For wine lovers, this is exciting territory: the product range extends from dry wines to sweet dessert wines, from white, rosé and red to orange wines, produced

using the traditional red wine method. Sustainability and quality also play a central role in the vineyard. “We use so-called PIWI varieties, fungus-resistant grape varieties that require significantly fewer protective treatments,” explains Stefan Schmidt. The vines thrive, and the wines regularly win awards.

The restaurant combines regional and seasonal products with international inspiration, including in-house products such as mustard, vinegars, and oils from the Inselmühle Usedom natural products manufactory. "Our chef creates the seasonal menu with inspiration from classic international cuisine and Mecklenburg traditions – always tailored to the modern palate," says hotel director Enrico Richter.

Das 1999 eröffnete Hotel bietet 15 Doppelzimmer in verschiedenen Kategorien im geschichtsträchtigen und mit viel Liebe zum Detail renovierten Schloss, welches 1806 als Herrenhaus erbaut wurde. Während der Wellnessbereich mit Sauna und Whirlpool für Entspannung sorgt, prägen zeitlose Eleganz, antike Schränke, gusseiserne Öfen und hochwertige Boxspringbetten das Ambiente im Schloss.

Im modernen Haus WeinWerk stehen seit 2024 außerdem 36 weitere lichtdurchflutete Doppelzimmer mit möglichem Self-Check-In zur Verfügung. „Schloss Rattey ist Weingut als auch Hotel“, sagt Weingutsleiter Stefan Schmidt. Seit 2004 ist Rattey das nördlichste, offizielle Weinanbaugebiet Deutschlands. Derzeit werden 36 Hektar bewirtschaftet, weitere 20 Hektar werden bepflanzt. Für Weinliebhaber ist das ein spannendes Terrain: Die Bandbreite reicht von trockenen Weinen bis zum süßen Dessertwein, von Weiß über Rosé und Rot bis hin zum

Orangewein, der im Rotweinverfahren entsteht. Auch Nachhaltigkeit und Qualität spielen im Weinberg eine zentrale Rolle. „Wir verwenden sogenannte PIWI’s, pilzwiderstandfähige Rebsorten, die bedeutend weniger Schutzmittel bedürfen“, erläutert Stefan Schmidt. Die Reben gedeihen prächtig und die Weine werden regelmäßig ausgezeichnet.

Im Restaurant treffen regionale und saisonale Produkte auf internationale Inspiration, darunter eigene Erzeugnisse wie Senf, Essige und Öle der Naturmanufaktur Inselmühle Usedom. „Unser Küchenchef stellt die saisonale Menükarte mit Inspirationen aus der klassischen internationalen Küche und der Mecklenburger Tradition zusammen – immer abgestimmt auf den modernen Gaumen”, sagt Hoteldirektor Enrico Richter.

Tojo-stau: the pur istic sideboard

The multiple award-winning sideboard Tojo-stau is available in nine different sizes and finds its individual use through this variety There are three different widths to choose from, each in three height variants. Tojo-stau is also perfect for moving and becomes a long- lasting companion – whether in the living room, dining room, or office.

The doors can be opened by a grip recess milled at the top, which supports the reduced design. The sides and outer doors are visually interrupted by the shelf‘s edges and illustrate the shelf heights, also suitable for file folders. As flat-pack furniture and optimized in terms of components, the sideboard can be assembled and disassembled by one person without tools. Only for the attachment of the hinges the use of a tool is necessary.

Tojo-stau was designed to be as minimal as possible but in order to fulfill its function. The focus is on the reduced variety of individual parts.

SAIGON MEETS ZURICH: DIVERSE, MODERN AND SURPRISING

Saigon – or Ho Chi Minh City – remains the embodiment of Vietnam’s pulsating heart: a city of contrasts where traditional street-food stalls meet French architecture, and lively markets encounter modern gastronomy. It is precisely this spirit that inspires a Zurich-based restaurant family, combining Vietnamese cuisine with style, quality, and contemporary hospitality.

The success story began in 2000 with Nhan Marbacher-Vo and Petit Saigon, Zurich’s first Vietnamese takeaway. In 2009, Saigon opened on Sihlstrasse. Inspired by her mother’s stories about Vietnam during the French colonial era, Sabrina Rhomberg-Marbacher further developed the concept, creating something that goes far beyond traditional Vietnamese cuisine. Her father supported the process by assisting with the expansion strategy. Today, this unique concept has grown to encompass one takeaway and a total of four restaurants across three distinct brands – Saigon, Co Chin Chin, Co Chin Chin Brasserie, and ĂN ĂN – all located in Zurich.

While all the restaurants offer features such as a lunch buffet and delicious cocktails, and all the chefs hail from Vietnam, each concept

tells its own unique story. "Each of our restaurants has its own personality," says Rhomberg.

"What unites all our concepts is an attention to detail and a close connection to nature."

Plants play a central role in every restaurant: the abundance of greenery creates a warm, lively atmosphere and evokes the lush veg-

etation of Vietnam. At the same time, all the restaurants share the same philosophy: "We want to whisk our guests away from their daily routine for a few hours and give them the feeling of stepping into another world."

"Our goal is not to reinvent Vietnamese cuisine, but rather to preserve its essence while translating it into a modern, urban context," Rhomberg continues. Fresh herbs, highquality ingredients, natural flavours free from MSG, and attentive service define the culinary experience, while individual dishes are gently adapted to Western tastes without losing their authentic character. Central to the experience is the Vietnamese tradition of sharing, with concepts designed to encourage guests to discover, sample, and enjoy the food together.

SAIGON TRIFFT ZÜRICH: VIELFÄLTIG, MODERN UND ÜBERRASCHEND

Saigon oder Ho-Chi-Minh-Stadt gilt bis heute als Sinnbild für das pulsierende Herz Vietnams – eine Stadt voller Kontraste, in der traditionelle Garküchen auf französische Architektur, und lebendige Märkte auf moderne Gastronomie treffen. Genau dieses Lebensgefühl dient als Inspiration für eine Zürcher Restaurantfamilie, die vietnamesische Küche mit Stil, Qualität und zeitgemässer Gastfreundschaft verbindet.

Die Erfolgsgeschichte begann 2000 mit Nhan Marbacher-Vo und dem Petit Saigon, dem ersten vietnamesischen Take Away Zürichs. 2009 wurde dann das Saigon an der Sihlstrasse eröffnet. Inspiriert von den Erzählungen ihrer Mutter über Vietnam während der französischen Kolonialzeit entwickelte Sabrina Rhomberg-Marbacher das Konzept weiter, das weit über klassische vietnamesische Küche hinausgeht. Im Hintergrund hat ihr Vater ihr dabei mit der Expansionsstrategie geholfen. Mittlerweile ist dieses besondere Konzept in einem Take Away und insgesamt vier Restaurants mit drei verschiedenen Konzepten –dem Saigon, Co Chin Chin, Co Chin Chin Brasserie, und ĂN ĂN – in Zürich angekommen.

Während alle Restaurants beispielweise ein Mittagsbuffet und leckere Cocktails anbieten, und alle Köche und Köchinnen aus Vietnam stammen, erzählt jedes Konzept dabei seine

ganz eigene Geschichte. „Jedes unserer Restaurants hat eine eigene Persönlichkeit“, sagt Rhomberg. „Was alle unsere Konzepte verbindet, ist die Liebe zum Detail und die Nähe zur Natur.“ Pflanzen spielen so in allen Restaurants eine zentrale Rolle: Das viele Grün schafft eine warme, lebendige Atmosphäre und erinnert an die üppige Vegetation Vietnams. Gleichzeitig verbindet alle Restaurants dieselbe Philosophie: „Wir möchten unsere Gäste für ein paar Stunden aus dem Alltag entführen und ihnen das Gefühl geben, in eine andere Welt einzutauchen.“

„Unser Ziel ist dabei nicht, die vietnamesische Küche neu zu erfinden, sondern ihre Essenz zu bewahren und sie gleichzeitig in einen modernen, urbanen Kontext zu übersetzen“, führt Rhomberg fort. Frische Kräuter, hochwertige Zutaten, natürliche Aromen ohne Glutamat und ein aufmerksamer Service prägen so das

kulinarische Erlebnis, während einzelne Speisen behutsam an den westlichen Geschmack angepasst werden, ohne ihren authentischen Charakter zu verlieren. Im Mittelpunkt steht zudem die vietnamesische Esskultur des gemeinsamen Teilens, die mit Sharing-Konzepten zum Entdecken, Probieren und gemeinsamen Geniessen einlädt.

The atmosphere is lively, unpretentious, and welcoming; it is a spot equally suited for a quick business lunch or a relaxed dinner with friends. A defining feature is its close connection to Vietnamese culinary traditions: the food is prepared using fresh herbs and great attention to detail, following recipes that evoke the cooking of past generations in Saigon.

CO CHIN CHIN: URBAN DINING WITH A VIETNAMESE SOUL

Since 2016, Co Chin Chin has been located in a former garage in the creative heart of District 5, a venue where the industrial past still shapes the atmosphere today. "With Co Chin Chin, I wanted to bring that special Vietnamese zest for life to Zurich," says Rhomberg. "My goal was to create a place where people could experience authentic Vietnamese cuisine in a modern, stylish setting." The result is an unpretentious restaurant that blends modern Vietnamese cooking – rooted in authenticity – with an urban lifestyle. Despite the industrial design, plants and natural materials create a warm, relaxed environment. From a culinary perspective, Co Chin Chin offers a contemporary take on Vietnamese classics. Signature dishes are particularly popular, such as Suon

Bo Ham (slow-braised short rib), the crispy Vietnamese Banh Xeo rice crêpe, and the warm Bo Bun rice noodle salad.

CO CHIN CHIN BRASSERIE: FRENCH ELEGANCE

In 2023, the Co Chin Chin Brasserie opened in Zurich’s Seefeld district, offering a new interpretation of the original concept that sought to highlight the legacy of the Indochina era more prominently. While the cuisine remains true to its Vietnamese roots, the interior draws greater inspiration from classic French brasseries. Historic wooden flooring, warm materials, and carefully curated details lend the restaurant a timeless elegance that nonetheless feels relaxed. The Co Chin Chin Brasserie serves as a striking example of the enduring, close connection between Vietnamese culinary culture and French influences.

ĂN ĂN: HOMAGE TO THE INDOCHINA ERA

With the opening of ĂN ĂN at Paradeplatz in 2025, the original concept was consistently taken a step further. The name alone –Vietnamese for "eat, eat" – makes the focus clear: enjoying food together. Upon entering, guests are transported back to the 1930s by dark wood, vintage furniture, and carefully curated décor. "Culinary-wise, ĂN ĂN is even more strongly shaped by the French influences of the Indochina era," says Rhomberg. Accordingly, the menu deliberately focuses on smaller dishes designed for sharing.

All four restaurants share the same passion for offering guests more than just a good meal. "We want to create places where people can come together, enjoy themselves, and immerse themselves in another world for a few hours," says Rhomberg. An invitation to discover Vietnam with all the senses.

Trotz des industriellen Designs schaffen Pflanzen und natürliche Materialien eine warme, entspannte Umgebung. Auch

kulinarisch steht das Co Chin Chin Cuisine für eine zeitgemässe Interpretation vietnamesischer Klassiker. Besonders beliebt sind Signature Dishes wie das Suon Bo Ham, langsam geschmortes Short Rib, der knusprige vietnamesische Reiscrêpe Banh Xeo oder der warme Reisnudelsalat Bo Bun.

CO CHIN CHIN BRASSERIE: FRANZÖSISCHE ELEGANZ

2023 entstand mit dem Co Chin Chin Brasserie im Zürcher Seefeld eine neue Interpretation des ursprünglichen Konzepts, die die Geschichte der ehemaligen Indochina-Zeit etwas mehr hervorheben wollte. Während die Küche ihren vietnamesischen Wurzeln treu bleibt, orientiert sich das Interieur stärker an klassischen französischen Brasserien. Der historische Holzboden, warme Materialien und liebevoll ausgewählte Details verleihen dem Restaurant eine zeitlose Eleganz, die dennoch ungezwungen wirkt. In der Co Chin Chin Brasserie zeigt sich besonders eindrucksvoll, wie eng vietnamesische Esskultur und französische Einflüsse bis heute miteinander verbunden sind.

ĂN ĂN: HOMMAGE AN DIE INDOCHINA-ZEIT

Mit ĂN ĂN am Paradeplatz wurde 2025 die ursprüngliche Idee nochmals konsequent weiterentwickelt. Bereits der Name – vietnamesisch

für „essen, essen“ – macht deutlich, worum es hier geht: gemeinsames Geniessen. Beim Betreten des Restaurants fühlt man sich ausserdem durch dunkle Hölzer, Vintage-Möbel und sorgfältig kuratierte Einrichtungsgegenstände in die 1930er-Jahre zurückversetzt. „Kulinarisch ist ĂN ĂN noch stärker von den französischen Einflüssen der Indochina-Zeit geprägt“, so Rhomberg. Die Speisekarte setzt so bewusst auf kleinere Gerichte zum Teilen.

Alle vier Restaurants verbindet dieselbe Leidenschaft für das Ziel, den Gästen mehr als nur ein gutes Essen zu bieten. „Wir möchten Orte schaffen, an denen Menschen zusammenkommen, geniessen und für ein paar Stunden in eine andere Welt eintauchen können“, sagt Rhomberg. SWISS CHOCOLATE EXCELLENCE AT A GLANCE: LINDT HOME OF CHOCOLATE

Situated on the shores of Lake Zurich, Lindt Home of Chocolate is a place where Swiss chocolate tradition, cutting-edge research and tasty pleasures meet in perfect harmony.

Lindt Home of Chocolate is operated by the non-profit Lindt Chocolate Competence Foundation (LCCF). Its mission is to promote knowledge of Swiss chocolate culture and to strengthen Switzerland as a centre of chocolate expertise for the long term.

The first impression is spectacular! Towering more than nine metres high and dominating the light-filled entrance hall, Lindt Home of Chocolate's iconic chocolate fountain fills the air with the delicious scent of chocolate. It sets the scene for what follows: an enjoyable and educational journey into the fascinating world of Swiss chocolate.

Covering around 1,500 square metres, the exhibition takes visitors through seven themed areas. Assisted by multimedia exhibits, visitors discover, among other things, how cocoa is cultivated, why Switzerland became a world-renowned chocolate nation and which pioneering Swiss inventions transformed the chocolate industry.

The experience becomes particularly fascinating where theory meets practice. In the so-called Pilot Plant, visitors can follow the chocolate-making process step by step. They can watch at close quarters as delicious Lindt SQUARES are created in the state-ofthe-art moulding line from carefully selected ingredients. Animations and interactive installations provide insights into processes that would otherwise remain hidden behind closed doors.

The research facility is where the future of chocolate takes shape. Designed as a modern centre for industry-specific education and professional training, it demonstrates that chocolate is far more than a simple indulgence. Here, visitors can observe ex-

perts at work as they develop new recipes, production methods and products that may soon be appearing on shop shelves. It offers a rare glimpse into the research and development that has shaped, and continues to shape, the reputation of Swiss chocolate for generations.

No visit to Lindt Home of Chocolate would be complete without a tasting. At the end of the exhibition, visitors are invited into the tasting room, where the world-famous LINDOR Truffles provide a delicious souvenir of their visit. A sweet finale to an experience that explains the world of chocolate and brings it to life.

Designed especially with returning visitors in mind, an immersive VR experience lasting around 13 minutes offers a new narrative perspective on the exhibition.

Those inspired to try their hand at chocolate making can create their own chocolate specialities in the Chocolateria under the guidance of the Lindt master chocolatiers. Afterwards, visitors are invited to relax and indulge at Switzerland's first Lindt Café or browse the world's largest Lindt chocolate shop.

FRIDAY: ARRIVAL AND THE MOSELLE

Arrive early afternoon, after about 90 minutes by train from either Frankfurt or Düsseldorf airports, and begin your Koblenz escape at FÄHRHAUS, a riverside retreat that takes its name from the old ferry crossing that once linked the two banks of the Moselle.

From the hotel, riverside footpaths lead through vineyards and wine-growing landscapes, passing old stone walls and gnarled vines that have been here for centuries. Take your time – this is one of Germany's most celebrated wine regions and the terraced vineyards around Koblenz produce crisp, mineral-driven Rieslings that taste nowhere better than at their source.

Break the walk with a wine tasting at one of the local Weingüter such as Spurzem or Toni Müller in the suburb of Güls. Look out for estate-bottled Rieslings from the steep-slope Steillage sites: the slate soil gives them a flinty, almost electric character.

Back at FÄHRHAUS, surrender to the hotel's signature stone massage, then dine at res-

taurant Landgang for local Rhineland cooking or Gotthardt's by Yannick Noack (two Michelin stars) for fine dining at its very best.

SATURDAY MORNING:

OLD TOWN AND ITS SECRETS

Koblenz is best explored on foot. The Altstadt preserves much of its medieval street pattern and many historic buildings, despite the extensive wartime destruction that reshaped much of the city. It is small enough to wander without a map and wrong turns result in new discoveries.

Head first to the Deutsches Eck (German Corner), where a 14-metre-high statue of Kaiser Wilhelm I presides over the confluence of Rhine and Moselle. It is one of those spots where geography creates great drama: two great rivers colliding in a froth of current, the fortress rising above, the hills stretching away in both directions.

are worth the fare. The fortress has stood since the 11th century; Napoleon had it dismantled, the Prussians rebuilt it bigger than before. On top, snacks and beverages can be purchased for a small sit-down lunch while enjoying the magnificent views.

SATURDAY AFTERNOON:

SWEET STOPS AND FIREWORKS

Back in the old town, duck into Entengässchen and Kunstgässchen, two pretty medieval lanes, lined with craft studios and the kind of café that appears to have been there for centuries. Nearby, the bronze Schängel fountain spits water at clueless passers-by every half-hour beside the Town Hall. Take a break and head to eGeLoSIa, an ice cream parlour ranked among Germany's Top 20.

The Vier Türme, despite the name, are not four separate towers but historic corner houses, each crowned by an ornate projecting bay window (oriel tower). Look out too for the History Column, which charts 2,000 years of Koblenz in illustrated bands and the medieval Robber Baron relief whose eyes follow the walker who looks up.

No city tour is complete without Fräulein Diehl, a confectionery producing famously addic-

tive toffees. The flavours range from natural to tonka bean and vanilla, and leaving with just one bag requires a discipline most visitors find beyond them.

Evening brings dinner at Gerhard's Genussgesellschaft im Blumenhof: a garden courtyard near the riverbank, Moselle-leaning wine list and cooking rooted in the Rhine region. For a last drink outside, the Ufer-Bar invites on the riverbank until 10pm.

If your visit coincides with Rhein in Flammen (Rhine in Flames, 7 to 9 August 2026), stay on the river as long as possible. On Saturday, illuminated boats process along the Rhine while fireworks burst from Ehrenbreitstein above, their reflections fracturing the dark water below – operatic in scale, and entirely in keeping with a city that has always understood the drama of its setting.

SUNDAY: A CASTLE FAREWELL

Check out of the hotel, store your luggage at Koblenz Hauptbahnhof and head south along the Rhine for a final flourish.

Anyone who has ever heard the unmistakable chuff of a historic steam engine and felt the steady rhythm of its paddle wheels knows that a journey aboard a steamship is far more than an ordinary river cruise. It is precisely this unique experience that lies at the heart of Steam Cruises.

to Hamburg and upstream towards the Czech Republic: Hamburg again in 2027, followed by Prague in 2028. AKSL ARCHITEKTEN: DURCHDACHTES HOSPITALITY-DESIGN

JETTER ARCHITEKTUR: EINZIGARTIGES VILLEN-DESIGN MIT EMPATHIE

Jetter Architektur setzt auf zeitlose, ortsverbundene Villenarchitektur für Generationen –mit Herzblut, Leidenschaft und empathischem Blick auf die Bewohner*innen.

„Bei uns stehen die späteren Bewohner im Mittelpunkt“, eröffnet Daniel Jetter das Interview, „ich habe sozusagen keinen ‚eigenen Stil‘ und kann mich gut in die Bauherren hineinversetzen.“ In dieser bescheidenen Bemerkung äußert sich ein einfühlsamer Ansatz, gepaart mit starken, eigenen Ideen für Detail und Gesamtkonzept, die letztendlich zur harmonischen Einheit zwischen Innen und Außen führen. In der Regel hört der Architekt daher selbst bei sehr unterschiedlichen Bauprojekten oft den Satz: ‚Sie verstehen unsere Vorstellungen besser als wir sie selbst formulieren könnten!‘ Kund*innen loben insbesondere die Visualisierungen, die bereits vor Baubeginn einen frühen, umfassenden Eindruck des Ganzen vermitteln.

Zusätzlich ist es Jetter besonders wichtig, das Bauwerk im Grundstück zu planen, an-

statt dieses ‚auf Biegen und Brechen‘ dem Entwurf anzupassen: „Ein Haus soll sich nachher harmonisch in das bestehende Umfeld einpassen.“ Hierzu werden insbesondere gern natürliche, erdende Materialien wie Stein und

Holz mit eingebunden. Einzigartig ist abgesehen vom holistischen Design jedoch auch die Exklusivität: Als persönlicher Ansprechpartner betreut der Architekt selbst jedes Projekt –vom ersten Strich bis zur Schlüsselübergabe.

Daniel Jetter hat sich 2011 in BadenWürttemberg selbständig gemacht, zunächst mit ersten Aufträgen über die Bauträgergesellschaft seines Vaters: „Anfangs waren die Häuser eher klein, aber auch hier versuchte ich, aus jedem Projekt etwas besonderes zu machen und das Maximale aus dem Budget herauszuholen. Mit der Zeit wuchsen die Projekt dann immer weiter an.“ Zum Thema Villenarchitektur fühlte sich Daniel Jetter bereits früh hingezogen, da er es schätzt, mit Sorgfalt geplante, besondere Häuser bauen zu können:

„Geplant, um zu bleiben – zeitlos. Es hat mich schon immer fasziniert, bei einem Haus nicht nur die Hülle zu gestalten, sondern auch die komplette Innenausstattung und den Garten –das Ganze auf die Bauherr*innen zugeschnitten. So passt nachher alles harmonisch und perfekt zueinander.“

Jetters Kund*innen sind Persönlichkeiten, die etwas einzigartiges wollen, erklärt der Architekt: „Ich plane und baue die Häuser für die Menschen und betreue sie dabei persönlich – ähnlich wie beim Schneidern eines Maßanzugs.“ Auch in Zukunft freut sich der Architekt darauf, über seine Arbeit besondere Menschen kennenzulernen und für diese weiterhin schöne, einzigartige Villen zu bauen.

ERHALTUNG UND INNOVATION: DAS ERBE DER EUROPÄISCHEN STADT

Seit vielen Jahren beschäftigen sie sich intensiv mit der Idee der Europäischen Stadt. Diese steht für klar definierte Straßen und Plätze, geschlossene Blockränder, die Teilhabe am öffentlichen Leben sowie einen frei zugänglichen öffentlichen Raum als Ausdruck eines demokratischen und freiheitlichen Verständnisses von Stadt.

„Unsere Liebe zur Europäischen Stadt prägt unser architektonisches Handeln“, erläutern Eckert und Frisch. „Wir verstehen die Stadt als gewachsenen Organismus: Öffentliche Gebäude wie Rathäuser, Museen oder Schulen bilden ihre prägenden Organe, Straßen und Plätze verbinden sie, Wohn- und Arbeitsgebäude schaffen den alltäglichen Stadtraum.“ Dieses Erbe gelte es durch Sanierungen, Aufstockungen und gezielte Ersatzbauten weiterzuentwickeln. Deshalb entwerfe Dömges Architekten keine isolierten Solitäre, sondern Gebäude, die den bestehenden Stadtraum ergänzen und sinnvoll weiterbauen.

Ebenso prägend für die Arbeit des Büros sind zeitlose Architektur, ehrliche Materialien, klare Konstruktionen und dauerhafte Lösungen. „Grundsätzlich planen wir zuerst für die

Menschen, die unsere Gebäude nutzen und bewohnen, aber auch für die Menschen, die von unseren Gebäuden im städtebaulichen Kontext berührt sind“, betonen die Architekten. „Und natürlich sollen unsere Bauherrinnen und Bauherren mit dem Ergebnis und dem Planungsprozess ihre Ziele erreichen.“ Ein wichtiges Anliegen sei es darüber hinaus, auch künftig qualitativ hochwertige Architektur zu wirtschaftlich tragfähigen Honoraren realisieren zu können.

THE BUILDING MATERIAL OF THE FUTURE? TACKLING CLIMATE CHANGE THROUGH MATERIAL INNOVATIONS

What if future cities not only emitted less CO2, but would actively store carbon? The Heidelberg-based GreenTech company New Digital Craft is working towards this future and has developed a cement-free, CO2-storing concrete that could revolutionise urban development.

“For us, sustainability doesn’t mean just giving things up, but focusing on better materials and intelligent manufacturing," says founder Jörg Petri. His goal: a durable alternative to CO2-intensive concrete. The material innovation started with geopolymers, inorganic and cementfree binders, which in themselves already have a 60-70% lower CO2 footprint. The actual revolution came with integrating biochar: “Suddenly, we are storing more CO2 than we release.”

The company’s initial commercial product is the Coalymer chair, the first ever piece of furniture with a negative CO2 footprint. The Coalymer shows that climate protection opens new design possibilities. New Digital Craft is using 3D-printed moulds while at the same time is researching whether the cement-free concrete with biochar can be used in 3D printing on its own.

In the long run, the company wants to use the material in urban development. “We believe the construction industry can become part of the solution rather than the problem,” explains Jörg Petri. “Our vision is simple: By 2050, our cities should store more carbon than they emit.”

Was wäre, wenn unsere Städte künftig nicht nur weniger CO2 ausstoßen, sondern aktiv Kohlenstoff speichern würden? An dieser Zukunft arbeitet das Heidelberger GreenTech-Unternehmen New Digital Craft, das einen zementfreien, CO2 speichernden Beton entwickelt hat – mit dem Potential Städte nachhaltig zu erneuern.

„Für uns beginnt Nachhaltigkeit nicht beim Verzicht, sondern bei besseren Materialien und intelligenter Fertigung“, sagt Gründer Jörg Petri. Sein Ziel: eine langlebige Alternative zum CO2 intensiven Beton. Der Beginn der Innovation lag bei Geopolymeren, anorganischen und zementfreien Bindemitteln, die an sich bereits einen 60-70% geringeren CO2- Fußabdruck als Beton haben. Die eigentliche Revolution kam mit der Einbindung von Pflanzenkohle in das Material. „Plötzlich speichern wir mehr CO2 als wir freigeben.“

Das erste serienreife Produkt aus dem innovativen Material ist der Coalymer-Stuhl, das erste Möbelstück mit negativem CO₂-Fußabdruck. Der Coalymer zeigt, dass Klimaschutz nicht Verzicht bedeuten muss, sondern neue gestalterische Möglichkeiten eröffnet. New Digital Craft fertigt die Coalymer-Gussformen mittels 3D-Druck an. Gleichzeitig laufen Experimente, ob sich der zementfreie Beton auch direkt mittels 3D-Printer drucken lässt.

Langfristig ist der Plan, das Material im Städtebau einzusetzen. „Wir glauben, dass die Bauwirtschaft vom Teil des Problems zum Teil der Lösung werden kann“, erklärt Jörg Petri. „Unsere Vision ist einfach: Bis 2050 sollen unsere Städte mehr Kohlenstoff speichern, als sie verursachen.“

Heat tricks – on navigating Berlin’s hot summer days

The city in the summer heat is a strange cosmos living by its own rules.

The first one, of course, is to slow down. Easily said for a visitor, who doesn’t have to find a way of squeezing the same usual workload into a sweltering day, probably while appeasing distressed kids and struggling to keep everyone hydrated. However, the rule of slowing down remains the most important one, and those many Berliners who for example stem from the Mediterranean region know it well and follow it instinctively.

Berlin is a city which in big parts still doesn’t offer the luxuries of air conditioning – which goes for schools, offices and other populated spaces alike. A fact not likely to change soon considering the exorbitantly risen energy costs since the attack on Ukraine. So, residents have to find their own ways of coping – and this leaves us with both sensible and wild ideas on how to fend off the repercussions of an overheated system – be it your own body, your flat, the workspace or the street itself. The latest trends are cooling towels which you can buy at the chemists, or cool packs in the handbag – those icy blocks usually found in plastic picnic hampers.

And thus, during the latest heat wave, which was both unusually early and long, I found myself cycling home with a wet towel around

my head to keep cool while navigating the usual chaos that is summer city traffic. Most challenging at this time of year are the socalled Sonntagsfahrer (Sunday drivers) – a term which covers anyone who’s suddenly out in traffic without knowing or caring about the most basic rules – including crazed teenagers crossing your path on an electric scooter in the wrong direction, preferably in pairs of two on one vehicle. So, please be aware that even while gallivanting through the city at a relaxed pace, you might still occasionally find yourself in considerable danger – amplified by the heat and all sorts of inappropriate hydration (yes, I’m speaking about the tourist on an e-bike who has just enjoyed five pints at the nearest beer garden).

Of course, there are multiple nice ways of circumventing the heat in the city, if time and purse allow. By the time you read this, the football gods will have decided who’s going to lift the World Cup trophy. And who knows, maybe it will even have come home. My deadline for this column happens to have been 6 July and, in case you need reminding, the very early hours of that day were when England did “it” in the Azteca stadium. Hence, football coming home is more than ever in the air.

While in English, with its very different vocab around emotions, I’m someone who loves all kinds of things that, in German, I would describe in altogether more restrained terms. I love (here we go!) having this linguistic gateway into an altered personality. Anyone feeling the same, let me know. But how am I going to give this whole thing a German twist now, for the purposes of this column? The German team’s US appearance was a “disaster” – in the words of the German 1990 World Cup hero and former Germany manager, Jürgen Klinsmann, in an interview after. Not much writing material there. How lucky then that one German is, from my current 6 July perspective, still very much in the World Cup and happens to be the English manager. What a handy coincidence. I can use Thomas Tuchel as a hook for something that has long fascinated me as someone living with two languages in their head. That is, how we also become a different person when we speak a different language.

Although I can vouch for this personally (it’s true!), you don’t just have to take my word for it. There is scientific evidence for this phenomenon and studies show that multilingual people exhibit different personality profiles depending on the language in which they

I was thinking about this in the Tuchel context and how the way he is perceived in the UK seems to be quite different to how he comes across in Germany. I always had him down as a very serious type, stern even, someone who always looks a bit ‘verbissen’ (great German word, literally doggedly in English). And I know a fair few Germans that are into football who aren’t particularly positive about him, summing up their sentiments in the not very helpful sentence “ah, no, don’t like him.” Now, in the whole World Cup context and after having seen interviews with him and the usual bits and pieces on social media, I realised that he comes across differently in English. More friendly, more open, even laughing sometimes, a good communicator, altogether more relaxed and looser.
