Siebel remains unperturbed by the accolades that ANGLERSTUBEN has already received from major restaurant guides: “They are certainly nice, helpful and make us proud. But they are quite irrelevant for what we aim to achieve.” What matters most to him is what develops between host and guest. “Being genuine is true hospitality. The cuisine follows a distinct philosophy: regional, seasonal and cosmopolitan. The dishes draw inspiration from the Lake Constance region without stopping at national borders. “Whether it’s local venison from Bodanrück with Thai curry aromas or a Swabian Maultasche paired with langoustine – what matters is that a dish or flavour combination makes sense and remains authentic,” Siebel stresses. Fish from Lake Constance is part of the experience as well. “It’s genuine wild catch, which we receive from our fisherman on Reichenau Island when he has had a lucky day. Only then does fish make its way onto our menu.”
