Last spring, I watched New York florist Lewis Miller (who’s coming to Palm Beach, by the way) create floral masterpieces on stage at The Society of the Four Arts and was inspired to do something extravagant with flowers. So I called photographer Joriann Maye-Keegan and started the conversation with “I have a crazy idea …” And that started into motion the project reflected on our cover and inside our pages. The plan was to pair our local florists with a muse for whom they would create a bespoke dress entirely out of flowers. There were rules: They had to use at least 85 percent fresh flowers, and they had to pull out all the stops because the most striking creation would end up on the cover. It took six months to pull it all together, but it was worth the wait and logistical acrobatics. Each dress was such a masterpiece, and each muse wore it so well, that we were compelled to feature them all in our first-ever triple cover. At this point I have to say that Palm Beach’s floral designers are among the most creative in the nation. Full stop. Each time I walked on set to photograph one of these beauties, my jaw dropped. The sheer number of flowers and the precision of assembly were simply mind-blowing. I’m firmly convinced there is nothing these masters can’t do. See for yourself in “Floral Couture” on page 64. To round out this home-and-garden-themed issue, we feature two perfectly stylish parties. First, interior designer Scott Snyder invites us on a Chinese flight of fancy that demonstrates the art of the pivot. Scott’s party was originally meant to be held beachside, but the vagaries of South Florida’s weather forced two postponements and, ultimately, the chic plan B you see on page 90. Next, Diego and Kristin Urrutia host a party in their elegant home to celebrate Diego’s new venture with polo player Nic Roldan and spirits guru Matti Anttila. If you haven’t tried their High Goal Gin, I recommend you mix a killer G&T on a hot afternoon—or try one of the concoctions shown in “The High Life” on page 72. A lot of those puppies have never experienced not having a human at home 24 hours a day, seven days a week—but many owners are now returning to the office. How did the pandemic affect puppies? There were less socialization opportunities while we couldn’t experience the world in normal ways. Plus, any change in routine can be very stressful for a dog. For the thousands of pets adopted during the pandemic, this is the first time they’re being left in their new homes alone for extended periods. That’s a drastic change. Pets thrive on routine. Go With Your Gut Understanding the power of a healthy, BALANCED GUT MICROBIOME By Ivey Leidy Photography by Kent Anderson
A
s a certified gut health expert, I believe that establishing good gut health is the gateway to achieving overall health. While the main role of our gut is digestion, its health can affect the entire body, including immunity, the heart, and the brain. The gut is comprised of the mouth, esophagus, stomach, small intestine, large intestine, and anus. We’ve all experienced the sensation of salivating before a bite. This is the first stage of digestion, when the salivary glands release digestive enzymes. The body then works together with hormones, bacteria, the more than 100 million nerve cells that line the gut, and the digestive organs to break down proteins, fats, and carbohydrates and convert them into nutrients that are small enough to be absorbed. The body uses these nutrients to support vital functions, from waste elimination to toxin release,
growth to cell repair, hormone balance to skin health, and immunity to mental health. Often referred to as “the second brain” or “the gut brain axis,” the gut controls far more than digestion. Research has shown that messages and signals may be sent back and forth from the gut to the brain, affecting emotions and the way we process information. This intricate system works beautifully when there is a balance between good and bad bacteria. This is known as the gut microbiome, where billions of live bacteria—35,000 strains, both good and bad—live in the gut in perfect harmony. When the gut microbiome is imbalanced (a condition known as dysbiosis) it can result in gas, bloating, indigestion, food allergies or sensitivities, skin rashes, joint pain or inflammation, vitamin deficiencies, or acne. Certain dietary habits can lead to dysbiosis, including excessive alcohol consumption and eating refined sugar, processed foods, artificial sweeteners, preservatives, gums, and emulsifiers. Using NSAIDs (nonsteroidal antiinflammatory drugs) or antibiotics for prolonged periods of time can result in imbalances as well. Additional causes include stress, exposure to pesticides and herbicides, and even poor oral health and hygiene. Luckily, prebiotics and probiotics work wonders to balance the microbiome. Prebiotics are fiber-rich food sources that ferment in the gut, creating compounds that feed the production of good bacteria. Probiotics are supplements or foods (often those pickled with salt and water) that boast beneficial bacteria. In addition, certain foods—such as ginger, turmeric, mangoes, papaya, pineapple, lemon, and raw, unfiltered honey—support healthy digestion, while other herbs, plants, acids, and minerals—including aloe vera juice, slippery elm, and zinc—can help rebuild stomach lining.

MISO-GLAZED HALIBUT Over Sauteed Asparagus (SERVES 2) » HALIBUT INGREDIENTS 2 halibut filets, 8-10 oz. each, skin off 2 tbsp. toasted sesame oil 2 tbsp. yellow or white miso paste 2 tsp. honey 2 tbsp. coconut aminos 2 tbsp. rice wine vinegar 1 tsp. freshly grated ginger
2 frozen bananas 1 cup blueberries 1/2 cup frozen mango 1/2 cup oats 1/2 tsp. raw, unfiltered honey 1 cup kefir

Preheat oven to 400 degrees. Pat dry halibut filets. Coat a cast-iron skillet with toasted sesame oil and turn heat to medium-high. Add filets and let cook for 4-5 minutes without moving them, until you see a crispy sear. Flip filets in the pan and remove from heat. To make the miso glaze, whisk together miso paste, honey, coconut aminos, rice wine vinegar, and ginger. Using a pastry brush, brush on miso glaze and then transfer filets to oven on medium rack for 2 minutes.

eep in the pine forests of Montana, about a halfhour’s drive from Missoula, a new resort is changing the game for sophisticated travelers with a passion for the great outdoors. The Green O—a riff on Greenough, the town closest to the property—is a gated enclave of 12 exclusive, adults-only wilderness retreats within a 37,000-acre cattle and bison ranch that also houses the sprawling Resort at Paws Up. Literally, The Green O is situated about 450 yards from the closest point of contact with Paws Up; figuratively, it is miles apart. Because Paws Up, with its glamping tents and timber cabins, is geared toward families, the owners created this private sanctuary for couples and solo travelers seeking a refined experience with the biggest luxury of all: peace and quiet. By day, Green O guests can participate in all the wilderness adventures of the greater resort, including ATV exploration, horseback riding, hiking, fly-fishing, and clay shooting, but they can return to the tranquility of a secluded treehouse, the intimacy of cocktails by the fire, and the culinary theater of a nine-course tasting menu by a master chef. The best part? Privacy. The Green O is maxed out at 12 homes, or 24 guests, says Laurence Lipson, who co-founded Paws Up and The Green O with his late father, Dave, and his father’s wife, Nadine. “It was really critical to keep it small and intimate. It enables us to offer a more personalized level of service.” Elevated design was a top priority. The Lipsons envisioned freestanding houses with innovative forms and a

modern spin on Montana’s architectural vernacular. While native materials like Douglas fir and local stone ground each “haus” in sustainability, the biggest driving point of the design is glass. Floor-to-ceiling glass walls that blur boundaries act as a transparent skin between interior spaces and the timberland of Big Sky Country. The feeling is one of living outdoors. Of the four original designs, the Tree Haus is the most eye-popping. Lipson calls it “an architectural gem in the forest,” pointing to its surprising modern architecture based on hexagonal shapes and an inner cylindrical core around which spaces are oriented. Climbing a spiral staircase to the third level, like a child in a secret clubhouse, you arrive at a spacious bedroom suite with a bird’s-eye view of the ponderosas and larches. Clad in Douglas fir and stone, the Round Haus offers curved openings into the wilderness and a panoramic view. Its footprint is inspired by the infinity sign, with two interrelating loops that form living and sleeping quarters. The Green Haus is the model of sustainability, with a live roof that acts as insulation and camouflage within nature—and ups the wow factor of its rooftop deck. The Green Haus’ coolest feature is a bedroom skylight, roughly the dimensions of a king-size bed, that makes you feel like you’re sleeping under the stars. The Light Haus is the largest of the four plans and is designed as a house within a house. The greenhouse-like bedroom, with glass on three sides, pushes out of the main structure into the woods for consummate forest bathing. Throughout The Green O, sensitivity to the environment is key. Woods are stained to match the coloration of the tree bark, so buildings can disappear into the woodland. The top-

soil used around the property comes from the working cattle and bison ranch, complete with growing oats, barley, and alfalfa. Even the cart paths are gravel mixed with recycled asphalt millings to keep the dust down and the noise to a minimum. But what’s a haus in the woods without a proper meal and a fortifying cocktail or two? The heart of The Green O is the Social Haus— a lodge, if you will—presided over by chef Brandon Cunningham, a transplant from Portland, Oregon, who cooks with the seasons and favors locally foraged, farmed, and raised ingredients like elk, bison, huckleberries, and honeycomb. Dinner at Social Haus is a ninecourse feast, where exquisitely crafted small plates are presented by the chefs themselves, adding to the club-like atmosphere of the place. Designer and tastemaker Danielle Rollins lived in Atlanta from 1995 until earlier this year, when she sold her large Tuxedo Park home—the subject of her Rizzoli-published book, A Home for All Seasons: Gracious Living and Stylish Entertaining—to none other than Usher. Sharing the stage with Diego’s business partners, Matti Anttila (accompanied by his interior designer wife, Jennifer) and Nic Roldan (with his equestrian girlfriend, Hannah Selleck) to introduce their High Goal Gin brand to friends, the couple rely on the entertaining panache they learned from their parents. Diego, who now works as a banker and wealth manager at Merrill Lynch in Palm Beach, was born in Lima, Peru, and raised in Argentina, Singapore, and London. He fondly describes his mother’s attention to detail and her ability to please each guest. “With my mom, [it is] the more the merrier at her parties—and there are never too many Champagne glasses,” says Diego. “I learned that being a good host is to make guests feel special.”
Kristin, who was born in Philadelphia and raised in South Florida and Aspen, recalls elegant dinner parties, with her mother hosting soirees in honor of holidays such as St. Patrick’s Day and around themes like Italian night. “My mom loved to entertain and did the florals herself,” says Kristin, a TV and documentary producer and development executive who works regularly for ABC-TV, including the news magazine show 20/20, in New York. “Now I love hosting our own theme parties. Even when I lived in New York, I did tennis and back-to-school-type bashes for 200 guests.” Since meeting on the street in New York a dozen years ago, Diego and Kristin have taken to sharing the hosting duties. Kristin creates the table settings and makes the salads and sides when the party is small. Diego is a “master griller” who also greets guests and offers appetizers and drinks. This particular soiree, however, was different, because Diego was joined by Matti and Nic, who are equally interested in party preparation, including experimenting with various pairings of their new gin with chef-driven cuisine. Before embarking upon their shared business venture, the trio initially bonded over their love of polo and its lifestyle. Together they launched High Goal to give the American market a novel choice of gin. The beverage is produced in Charleston, South Carolina, where Matti is based and owns Grain & Barrel Spirits, a beverage company that also makes Dixie Southern Vodka, Chicken Cock Whiskey, Cabana Rum, Endless Summer Spirits, and Virgil Kane Whiskey. High Goal Gin, which comes in a custom, 74
Italian-designed and -manufactured sea spray green bottle, is infused with mint and citrus botanicals to create a lighter, more refreshing taste. Matti, who calls himself a gin man, previously owned the high-end Boodles Gin brand. “I had a noncompete after I sold Boodles and could not wait to start High Goal, where I have held the trademark,” he explains. Raised playing polo in Santa Barbara, California, Matti was happy to meet Nic through Diego, who was his neighbor in Palm Beach before he relocated his family to Charleston. “Nic, Diego, and I talked about the profile and packaging for High Goal Gin; then the pandemic hit, and we were lucky to have had the time to refine the marketing,” Matti says. “We source everything in

the Southeast and produce the gin in 3,000-bottle batches to tightly control the botanicals, like mint, juniper, coriander, lemon, and cardamom.” Nic, an active eight-goal polo superstar who turned pro at age 15 and is a co-founder of High Goal Gin, discovered his passion for the drink while playing tournaments in the United Kingdom, including the Queen’s Cup and Gold Cup. For several years, he was looking for a way to create his own premium gin brand stateside. “I have always liked gin,” says Nic, who lives in Wellington and continues to play polo around the world. “I follow the gin culture in Europe when I play polo there, and I am so happy that we have created a light and reimagined version for the U.S. We wanted a more modern-style flavor that is citrus-forward. We see gin as a rising trend.” Gin was certainly the featured player at their recent dinner party. As guests entered the living area of Kristin and Diego’s residence—which features a Louis Vuitton chest Diego restored—Kristin offered the evening’s signature cocktail: High Goal Gin on the rocks with a twist of lemon and 76
fresh mint, presented in contemporary Orrefors bulb glasses. Joey Leuze from Palm Beach Catering & Luxury Events paired the cocktail with a variety of passed appetizers, such as ahi tuna tacos with avocado mousse and micro cilantro, wild mushroom bonbons with black truffle aioli, and crispy potatoes with sour cream and salmon roe. While enjoying the food and drinks, guests raved about the smashing view of the Intracoastal Waterway. “The sight of the sun setting on the balcony is fantastic,” said guest Nick McClelland, a private equity and investment specialist. Kristin and Diego, with a little help from their 5-year-old daughter, Allegra, set the tone for the evening with the addition of background music by Norwegian DJ Kygo. “They are such gracious and lovely hosts,” said Matti’s wife, Jennifer, who admired the white orchids that seemed to bloom about the living space. “Everywhere I look I see elegance.” “I love being with people, especially in our home environment,” adds Diego. “We like to mix and match our different friends as it expands our intellect, curiosity, and chemistry. It’s great fun to talk and show them around our home.” Just off the living room, the dining table was nestled in a space defined by silk kelly green Schumacher wallpaper and punctuated by a bold Kelly Reemtsen painting of an empowered woman carrying a chainsaw. “This room is a novel take on ‘green with envy,’” observed Hannah Selleck, daughter of actor Tom Selleck. Set for 10, the table appointments and Kristin’s antique peacock wicker chairs helped transform the area into a notable scene that could have stepped out of a proper English novel. Atop a D’Ascoli tablecloth were Kelly green napkins that matched the wallpaper and highlighted the pretty blues and greens in the home’s decor. The setting also included Kristin’s favorite Mottahedeh Imperial Blue china, green Vista Alegra water goblets, Christofle silver flatware, and assorted green votives mixed and matched with white candles in crystal holders and natural centerpieces of white orchids. “We wanted to add a sophisticated pattern to the table since the kelly green wallpaper is a solid,” says Emily Painter, co-founder of Freshly

Set, a tablescape linen rental company, who helped the hostess design the table decor. “Kristin loves place cards and conversation-starter cards, which added to the mix.” For the meal, chef Leuze planned the food and drink pairings to create a luxe and light dining experience, starting with the fresh Tommy Hitchcock gin cocktail with a Thai basil garnish and a first course bursting with bright flavors: scallop carpaccio with pickled celery, watermelon radish, and an apple and basil vinaigrette. The Saint-Tropez cocktail—gin and Champagne with lemon juice and peel, edible flowers, and passion fruit seeds— ushered in the second course of Maine lobster tail with pea risotto, lobster jam, and pea tendrils. “This was a light entree, with the elegance of the lobster matching the light and lovely gin creation,” explains Leuze. “The gin is not dominant in these cocktails. The drink is luxurious, mild, and easy to pair with this menu.” For dessert, the chef matched a lemon tart with The Roldan, a cocktail combining gin, basil, and muddled strawberries served in low Reed & Barton glasses. The chef added a rhubarb compote to the lemon tart to complement the strawberries in the cocktail. “The food was fresh and delicious, and the night was a lot of fun,” says Nic. “It was wonderful seeing close friends and enjoying their company.” As the evening came to a close, guest Ali Solimine Kampsen raved about the vibe, the hosts, and the guests. “Kristin and Diego know how to bring together a good group of people,” said Ali, a real estate professional. “The hosts were so welcoming, and their home is beautiful. They made us feel relaxed and comfortable, like we were part of the family.” The partygoers agreed that the hosts gave new meaning to “gin with a twist.” «

FineCHINA PALM BEACHER SCOTT SNYDER HOSTS A MAGICAL DINNER PARTY DEMONSTRATING HIS SOPHISTICATED PERSONAL STYLE
BY LINDA MARX | PHOTOGRAPHY BY JERRY RABINOWITZ Designer Scott Snyder has always been inspired by challenge and beauty. He’s crafted the interiors of Palm Beach mansions, Manhattan apartments, Southampton estates, Connecticut homes, South Carolina plantations, Texas ranches, Mexican haciendas, and tropical Caribbean vacation spots. In each of these residences, he aims to preserve the architect’s original vision while achieving the client’s dreams with refined elegance. His passion for interior design started at a young age, when he was growing up in Allentown, Pennsylvania. A stylish aunt and an imaginative mother kept his creative juices flowing and greatly influenced his love of architecture and decor. “When my aunt brought a copy of Architectural Digest to a family gathering, I was inspired by the luxury and amazing homes,” recalls Snyder, now based in Palm Beach. “Plus, my mother created our own beautiful home that could have stepped out of a scene from Gone with the Wind. At age 12, I knew what I wanted.” The following year, Snyder took a part-time job in a local store that was filled with potted plants and ceramics. Since he had spent hours browsing and buying, the owner became impressed with the young man’s style and brought him aboard. “I got experience attending trade shows in New York,” says Snyder. “The store owner valued my opinion, and I became the manager.” 90 PALM BEACH ILLUSTRATED

At 19, Snyder opened his own Allentown business, which carried tabletop items, stationery, pillows with intricate stitching, and an entire section of Diane Love fabric flowers and decorative objects. “The first floor was winding and created in different vignettes,” he explains. “But Allentown had a recession in 1980 and many of my clients from Bethlehem Steel Corporation and other big companies left town within six months. Country clubs suffered—everyone did.” Not long after, when a friend suggested that he visit Palm Beach to boost his spirits, Snyder fell in love. “It was the cleanliness, 92
the hedges, and such a pristine quality on a barrier island with the best retail stores in the world. I had to get a job so I could live in Palm Beach.” The owner of Old Town Flower Shop extended an offer. Snyder doubled the front-of-the-store business and bought inventory for three years until he received an offer he couldn’t refuse. “I was asked to design the interiors of a house in Aspen,” says Snyder. “The clients loved it and hired me to do their condo in Palm Beach. In 1984, I started my own design business.” Admittedly a traditionalist at heart, he had to find his way when clients were

seeking more contemporary looks. But he learned the business, and by 1990 he was traveling to New York every other week, as well as around the world to see dealers in London and Paris. He remembers visiting Morocco for a Moroccan-themed home. He put his heart and soul into each commission, gaining expertise at every stop. “You have to live it, smell it,” he says. “Most homes have one room with a fantastical moment. I needed to personally meet the international resources, so I would know how to find exactly what we need for that moment. This is how I work.” He has also traveled with his clients to ensure they buy the very best. For one project, he bought Murano glass in Venice, then visited the Sistine Chapel in Rome before enjoying a “jaw-dropping” meal at the Vatican. “Soon the client had to be back in the United States for a dinner at the White House,” he says. “I am still working on one of this client’s homes, emptying it out and updating it with a modernist look. I do

maintenance on all of my clients’ homes so they stay fresh and up-to-date.” For Snyder, his work is an art unto itself. He hand-renders images of his rooms to scale and watercolors them; he hopes to author a book featuring these pieces for Christmas 2023. In addition to his design prowess, Snyder is well-regarded as a premier party host. He has entertained around the world, including throwing fetes at Swifty’s NYC and Palm Beach’s Club Colette, where he once transformed a room into an evening in Cuba, complete with mahogany chairs, orchids nestled in coconuts, and a luxurious green carpet. “I entertain for my friends at least 10 to 12 times a year,” says Snyder. “I love to put people in an atmosphere of camaraderie. I am always thinking of where my next party is going to be.”

For this Chinese-themed dinner party, Snyder originally planned to stage everything beachside— until adverse weather forecasts forced a relocation. “I changed the time and location several times, but decided I could not risk bad weather,” he explains. “I selected a mysterious inside space in Palm Beach and invited a group of my longtime friends.” Guests arrived before dusk, entering a small, private room that Snyder reimagined into an Asian jewel box. “Scott is transformative with talent and creativity that transcends any space,” remarked Rick Pollock. “He is the most creative person I know.” The highlight of the intimate setting was Snyder’s oval mahogany dining table with a towering white pagoda placed in the center. “I have painted the pagoda red, navy blue, aqua, and even black,” says Snyder. “This time I made it crisp white to match the overscaled hurricanes that I had made in China.” The room was filled with candlelight and Snyder’s blue and white porcelains—some new, some old—many sourced from FS Henemader Antiques in Palm Beach. “You can never have too much blue and white,” he says.
In that vein, his elegant blue and white china place settings, purchased at Neiman Marcus, come in eight patterns that he loves to mix and match. “It is fun to have china mismatched yet all in the same color,” says the designer, who owns many sets for different occasions. “I first used this china for a lobster dinner with 36 guests at a July 4 party with a red, white, and blue theme.” The table also featured capiz shell placemats from Lori Jayne in Palm Beach as well as twisted-woodhandled cutlery sourced in Santa Fe, New Mexico, where he rented a home one summer. A matching pair of mahogany Regency sideboards and a mahogany Regency buffet surrounded the table; all three pieces were made by a master craftsman in Buenos Aires, Argentina, which is renowned for its mahogany. Bouquets of white delphinium, Casablanca lilies, peonies, and lisianthus completed the scene. “I absolutely love fresh flowers,” Snyder says. “I prefer them pure and not mixed, and always do [them] myself because I find the whole process very relaxing and rewarding.” Guests talked and moved about the room while sipping a variety of cocktails and sampling Chinese appetizers by Sandy James. There was a choice of

butler-passed vegetable spring rolls with orangeginger sauce, Peking duck with Chinese pancakes and fragrant hoisin sauce, and shrimp pot stickers in a ginger-soy drizzle. For dinner, Snyder seated everyone in his usual orderly fashion, giving special forethought to who sat next to whom. “He wants all of his guests to enjoy the evening,” said his friend and colleague Amy Herman. “I have been to all of his parties. His creativity and natural care with his guests are limitless.” The meal consisted of authentic Chinese delicacies, including a first course of vegetable gua mian soup with bok choy, carrots, and stir-fried mushrooms. This was followed by sea bass glazed in doujiang (a fermented bean paste) and paired with ginger sweet potato puree and snow peas. Dessert was the delicate “Chinese Blossom” made of chocolate and a caramelized mango, Cantonese five spice, and almond jelly. “We researched the menu with a Chinese chef so we would serve food with just the right influence,” says Michael Cox, event coordinator for Sandy James. Everyone agreed the food was terrific. “The cuisine looked lovely, was served perfectly, and tasted so delicious,” says Snyder. “The guests were all happy, there were no grumps. I have to call it a perfect evening.” As guest Pat Butler so aptly put it: “Everything Scott touches turns divine. His face during a party tells the story. He has a ball hosting and is in his element. If he could entertain for the rest of his life, he would be a happy man.” «

Chef Tim Lipman believes it is impossible to get enough of a good thing. This fall, he’s reopened his two popular Palm Beach Gardens concepts—Coolinary Café and The Parched Pig—under one roof in The Shops of Donald Ross Village plaza. The new Coolinary is now bigger and better than ever. “As we approached our 10-year anniversary at Coolinary, we realized it was time to expand,” says Lipman, who previously worked at Jupiter’s Little Moir’s Food Shack and Leftovers Café before branching out on his own. “We listened to what our customers wanted. Now that we’ve built two distinct brands, we decided to bring them together.” The chef and his wife, general manager Jenny Lipman, broke through the wall of The Parched Pig to the adjacent space, doubling the square footage. The former Parched Pig now serves as the entrance and lounge to Coolinary. There is more seating, but most importantly the kitchen has expanded to fit the needs of both facilities, retaining the open format that was popular at the café and enabling Lipman to interact with guests. The wine list, which received the Award of Excellence from Wine Spectator in 2020 and 2021, will continue to grow. “We have customers at The Parched Pig who have never been to Coolinary and vice versa,” notes Lipman. “Now we’ll be able to pair more dishes with our cocktail offerings.” (thecoolpig.com) —M.S.
Western Delray Beach has gained a world-class spirits destination with the opening of Warren American Whiskey Kitchen. Jeff John, CEO of Fort Lauderdale’s Damn Good Hospitality, named the restaurant for his uncle. With nearly 1,000 bottles on the whiskey list, patrons can indulge in everything from Macallan 50 Year ($10,000 for 2 ounces) to hard-to-find bourbon such as Pappy Van Winkle. This year, I’m exploring the season’s warm, comforting flavors without turning to the most famous squash seasoning. Instead, I’m reaching for a crisp dry cider and sparkling ginger beer. “Wagyu is totally unlike any steak you’ve ever had,” says Eric San Pedro. “When you eat it, you can’t believe it’s beef. It’s so heavily marbled that your body temperature will render the fat, and the meat will literally melt in your mouth.” San Pedro’s love affair with Japanese Wagyu began years ago when he was introduced to it in Las Vegas, and it quickly became an obsession. He began connecting with people who could deliver the product to his door and gradually developed a network of suppliers and purveyors, which led to the opening of Palm Beach Meats (located off Dixie Highway in West Palm Beach) in June. “We carry Japanese Wagyu from prefectures that customers can’t usually find, and we also focus on Australian Wagyu in the higher marbling grades,” he explains. “But we’re not just a butcher shop. We have a selection of top-quality local produce, and there are vegetarians who come in every week.” The store also hosts pop-up lunches and dinners on the weekends. • Buy fresh meat. Wagyu freezes well, but not for a long period of time. • Look for a certificate of authenticity. Every piece of meat is tracked with a number, and every purveyor should have documentation. • Wagyu is graded according to the degree of marbling. In Japan, 5 is the highest; in Australia, it’s 9. However, not everyone likes the same level of richness. • Assess before buying. There are no consistent ratings for American Wagyu, so assess the marbling with your eyes. • Don’t be put off by the cost. You’ll only eat 3 or 4 ounces at a sitting, and you’ll end up spending less than you would in a restaurant.

Secretive Sips
Many may imbibe but few can make these elusive LIQUEURS and bitters
By Mark Spivak It may be a precarious business model, but some of the world’s greatest spirits are made using formulas known only to a handful of people. While these four examples are common behind bars, their recipes remain closely guarded secrets. CHARTREUSE For the Carthusian monks isolated in the western French Alps, life hasn’t changed since the founding of the order in 1084. The monastery is bathed in silence, and the monks have meals delivered to their cells through a small cubbyhole. In 1605, the order received a recipe for a potion composed of 130 herbs and plants. It evolved into three distinct liqueurs: the original Elixir Végétal ($180), at a whopping 138 proof or 69 percent alcohol, as well as Green ($65, 110 proof) and Yellow ($65, 80 proof). The Green and Yellow versions have gained fame as an ingredient in craft cocktails, while the “Elixir of Long Life” is reputed to have healing properties. Chartreuse is also popular in liqueur-based desserts, and a dish of peaches in Chartreuse jelly was planned for the final night of the Titanic sailing—until the iceberg intervened. Although 1.5 million bottles of Chartreuse are reportedly sold each year and royalties revert to the order, only two monks are privy to the full formula. BÉNÉDICTINE On the surface, the story of this famous liqueur sounds similar to Chartreuse. A monk named Friar Bernardo Vincelli supposedly produced Bénédictine at the Abbey of Fécamp in Normandy for centuries prior to the French Revolution, when the building was destroyed. In 1863, the wine merchant Alexandre Le Grand discovered an ancient manuscript and successfully reconstructed the recipe. actually existed, much less that he concocted Bénédictine. It’s a good story, though, and Le Grand’s blend of 27 spices and herbs proved to have considerable commercial appeal. Today only three people know the formula for the liqueur at any given time. CAMPARI Turin, Italy, was ground zero in the cocktail culture of the mid-nineteenth century, and it is where Gaspare Campari began his apprenticeship to become a maître liquoriste—not just a bartender, but someone who was qualified to create new alcoholic beverages. In 1860 he moved to Milan and began selling his creation to customers. It was a bitter infusion of 60 herbs, barks, and fruit peels into a mixture of alcohol and distilled water, and it became a sensation. With yearly sales of more than 3 million cases, Campari is now one of the most popular aperitifs in the world; it has become an
essential ingredient in classic cocktails such as the Negroni, Americano, and Boulevardier. Gaspare’s secret formula has been carefully passed down through the generations, known only to a select few within the company. It has been reported that even the CEO is unaware of the exact proportions. ANGOSTURA BITTERS It’s hard to find a bar without a bottle of Angostura, and many classic cocktails wouldn’t exist without it. A German doctor developed the formula in 1824, and it immediately became a cure-all for common ailments such as seasickness and gastric distress. The bitters have been manufactured in Trinidad since 1875, and only five people in the world are familiar with the details. They never travel together, and one of them has to be present whenever a new batch is manufactured— although the recipe is supposedly locked away in a U.S. bank in case of catastrophe. «

PBI: How did you first fall in love with Cottagecore? Lorenz: My love for vintage chintz and old country kitchens are at the core of my obsessions. I have always loved the ease of the Cotswolds [in England] and the wellworn feeling of the South of France, especially Provence. I have loved Cottagecore well before it was called Cottagecore. What are its key decor elements? Mixes of gingham and ditsy florals, ruffle-skirted furniture balanced by old, rustic woods. Old, historic kitchens with copper pots and lots of baskets and hung plates. Lots of texture and layers. These are the elements I love about it. I think the real fun in the style is the fact that no matter how quickly or slowly you put a room together, it always feels

Why do you think it speaks to people? I think it is a very comforting style. It is both elegant yet casual, and your ability to be a bit eclectic about mixing pieces is part of its charm. It is nostalgic and romantic but also aspirational. City dwellers have been decorating their country homes like this for ages in the U.S., France, and England. I think it speaks to people because it isn’t really a trend, it is an unveiling of how country estates look and feel to a broader audience, and that gives it validity. How does Town Country Coast embrace the trend? We have everything you would need and love, from vintage chintz cushions to Italian toile, to antique French Moustiers ceramic and hand-painted glassware. Whether guests are actually in the water or simply gathering at water’s edge, there’s something intrinsically relaxed about this particular mise-en-scène. All one has to do is look at style-centric photography—from Slim Aarons’ iconic shots to those organized by Hollywood press agents at places like The Beverly Hills Hotel—to understand the allure of socializing near a sparkling body of chlorinated water. Add to this a little architectural element such as a pool house or its more modest cousin, the cabana, and you’ve got a perfect venue for a party.

Tips for a Successful Cabana Cocktail Gathering
Regardless of whether you go electronic or printed, choose a lively, aquatic-themed invitation, something that sets the tone and can act as inspiration for every other creative decision. Be clear that it will be an outdoor event, as that will inform guests’ clothing choices. Memories of COVID and its wrath are still fresh, and an alfresco venue can go a long way in reassuring attendees that they will be safe and comfortable.
Many Palm Beach condos have cabanas that are separately deeded, especially if they are blessed with generous decks or beach access. They range from glorified storage units to full-on entertaining spaces with bathrooms, wet bars, and air conditioning, which—given the nature of a cabana—seems like an exercise in futility. Our own cabana is something in-between. It has a powder room and a separate shower, along with a wet bar and an undercounter fridge, but that’s about it. Because it’s only protected from the elements by a set of
accordion shutters, the sun and salt air wreak havoc; we’ve seen settees decompose before our eyes and barstools rust practically overnight. Rather than fight it, our strategy is to keep decor to a minimum and use the most weather-resistant furnishings we can find. Still, we love having our little poolside snug and enjoy sharing it with others. Early on, I found a wonderful photo of a very young Lilly and Peter Pulitzer and their pet monkey, Goony. In the background is a stunning sailfish mounted on the wall. And wouldn’t you know it, Amazon sells realistic replicas of exactly the same fish. Who could resist? Other decorative elements include carved coconut heads from the Bahamas and, for a little touch of kitsch, photos of select cast members from the 1960s TV show Gilligan’s Island. It’s not haute decor, but it makes us happy and guests seem to enjoy it— especially when cocktails are involved.

Continue your theme with a little bit of decor. It can be as subtle as cocktail napkins that coordinate with the invitation or a few outdoor throw pillows to scatter around the area. A little effort can reap big dividends.

Hire a bartender at the very least. A server, who can pass hors d’oeuvres and continuously bus the area, is also a good idea. There’s nothing worse than not being able to be a guest at your own party because you are too busy making drinks or passing a tray. Provide your bartender with a crisp T-shirt that matches the invitation and allow him or her to wear shorts and sneakers.

Invest in stylish disposable plastic barware. It is poolside, after all. One broken glass can spell disaster, not just for you and your guests but, if you live in a condo, for your neighbors too. The pool will have to be closed and drained, and you will most likely be forced to move. Just don’t do it.
Pay attention to lighting. Real candles invariably blow out, and glass hurricanes or lanterns present the same breakage threat as glass barware. But there are all sorts of batteryoperated or rechargeable outdoor lighting options, from giant glowing plastic globes to petite café lamps.

Serve the simplest food imaginable. Chips and dip are always a hit. A crudités basket is a nice gesture, but often goes untouched. Be sensible with your menu and consider that you will have limited refrigeration, along with the distinct possibility of a stiff breeze or bugs. This is not the time or place for an extravagant cheeseboard, no matter what Pinterest tells you. However, if you own a chafing dish, cocktail weenies and a good, strong mustard are always a crowd-pleaser. Be sure to have an obvious receptacle for used toothpicks—many folks don’t consider this.

Have enough ice. This can be your bartender’s responsibility, but buy twice as much as you think you’ll need. Whether you are just serving rosé and sparkling water or a full bar, stock it generously and invest in a nice wine cooler. Always have something for non-imbibers too—avoid anything too sweet or syrupy. Save the blender drinks, and forget about signature cocktails. Well-meaning guests accept the signature cocktail, take one sip, and immediately look for a place to discretely stash it before making a beeline to the bar for a real drink. WANT TO KNOW MORE ABOUT FERNANDO? HERE HE IS, IN HIS OWN WORDS. FAVORITE PET PARENT My father swears it’s BPM (Beautiful Princess Mommy) because I always waltz by him to say hello to her, but I’ll never tell. It’s more fun to keep them guessing.
WHEN I WANT ATTENTION I knock the pillows off the couch and cuddle up next to Mommy. Full body check with my butt; works every time.
BEST TIME OF DAY When Daddy pets my head, rubs my belly, and we have a dogto-dad chat. I let Dad do the talking because I’m an expert listener. SOMETHING SECRET Mommy and I are spirit animals. It’s a secret, though; only she and I know this.
FAVORITE TREAT An old-fashioned Milk Bone dog biscuit makes me run around like a crazy hound dog. SLEEP BUTTON Hop into the bed on Daddy’s side, just before Daddy gets to it. Then I dig beneath the comforter, mess up the pillows, and turn around three times.

inah Harmon still recalls the day—September 21, 2019—when she and her husband, Brian, met Fernando, a graceful and intelligent 4-yearold Silken Windhound at a breeder’s home in Lakeland. After seeing every puppy, “one cuter than the next,” Brian asked if there were any adults she would consider selling. “When Fernando entered from a door across the room, there must have been music playing somewhere,” Harmon remembers. “He walked over to Brian and waited for him to pet his head. That was it. The deal was sealed.” Apparently, the cutest one of all had chosen them. Before they adopted Fernando, the couple had fostered a Borzoi named Gabriel, whose inherent traits (gentle, affectionate, loyal) they fancied. “We wanted those traits, only in a smaller dog,” she says. When they discovered the Silken Windhound, an American breed of long-haired sighthound that descends from the Borzoi and Whippet, they knew they’d discovered their next forever pet. With his easy-going attitude and low-key nature, Fernando quickly adapted to “country club life” at Wycliffe Golf & Country Club in Wellington, where he enjoys playing with his two siblings: Easy the Cat, an 11-year-old white Turkish Van and Marshall the Whiner, a 16-year-old short-haired gray cat who were both rescued from Peggy Adams in West Palm Beach. “They like him a lot because when he gets a treat, everyone gets a treat!” Harmon says with a laugh. Fernando’s daily routine now includes doggie play dates, car rides, and sojourns to Jake’s, a pet supply store in Lake Worth, clustered between long naps on the “best pillow in the family room” and sprawling across the sectional couch with his body parts splayed out in disparate directions. “Silkens are nicknamed ‘noodles’ because they are long, twisty, and wiggly,” she explains. Shortly after they brought Fernando home, Dinah launched @thats_fernando, an Instagram account she uses to bring joy and humor to people’s lives. Many
posts are of him vogue-ing with a pair of sunglasses from his extensive collection and canine observations he signs with “wag, woof, wuv.” He also makes the perfect “plus one” at equestrian events or on leisurely strolls down Worth Avenue. “Everyone knows him, even if they don’t know me,” Dinah says. “The Colony Hotel always makes him feel welcome, and he highly recommends their homemade dog biscuits.” Winning PetFest, the first-annual competition Palm Beach Illustrated launched earlier this year to uncover the most camera-friendly pet in the county, is an honor Fernando does not take lightly. He plans to use his newfound, celebrity status as a platform to help those in need of “wuv” and acceptance and wants to work with groups like HomeSafe and AVDA (Aid to Victims of Domestic Abuse), whose kids could use a cuddle. The PetFest competition was presented by NutriSource, with contest proceeds benefiting Big Dog Ranch Rescue.

MEXICAN Masterpieces
The Norton Museum of Art in West Palm Beach will debut its largest presentation of Mexican modernist art to date with “Frida Kahlo, Diego Rivera, and Mexican Modernism from the Jacques and Natasha Gelman Collection,” on view from October 23 through February 6. Works by Frida Kahlo and Diego Rivera, two of the movement’s icons, will center the exhibition, featuring 22 and 18 pieces by the artists, respectively. Realism characterized by saturated, vibrant tones and mexicanidad, an admiration for Mexico’s Indigenous culture and folk art, leap off the artists’ canvases, each exploring expression through nature, home life, family, tradition, and examinations of the self. The works of fellow modernists Manuel and Lola Álvarez Bravo, Miguel Covarrubias, Nickolas Muray, Graciela Iturbide, María Izquierdo, Carlos Mérida, José Clemente Orozco, David Alfaro Siqueiros, Juan Soriano, and Rufino Tamayo will also be on display. WONDER OF THE WORLD Few experiences parallel the majesty of standing at the overlook above Machu Picchu, the ancient Incan citadel soaring 7,000 feet above sea level in the Andes of Peru. A virtual reality expedition may come close. The Boca Raton Museum of Art will debut the world premiere of “Machu Picchu and the Golden Empires of Peru,” an exhibition showcasing 192 ancient Incan artifacts and the largest collection of Andean gold to travel the globe, October 16. The Boca Raton Museum is the first destination outside of the Museo de Sitio Manuel Chávez Ballón in Aguas Calientes, Peru, to host these treasures. To further immerse visitors in the glory of this UNESCO World Heritage site, the exhibition will feature a virtual reality component, filmed during the landmark’s closure in 2020 due to the pandemic. Guided through the virtual expedition by Ai Apaec, a mythical Andean hero, guests will learn about the history of the great civilization in an unprecedented way. The exhibition is on view to March 6. Your collections are known for their Colombian craftsmanship and modern designs. How does that make them stand out? Silvia: I have always been guided by a defined vision and the quest for a natural, effortless elegance, which I feel is ultimately the differentiating factor in my collections and one that gives my pieces a timeless quality. Women who are inclined to my designs are after garments that are special and unique, as opposed to just wearing the trends of the season.

What inspires you when designing a new collection? Silvia: Inspiration can come from anywhere, but more importantly, one must be able to capture and express it in their own language. Of course, there are recurring themes of inspirations like art and architecture. I have been moved by the pioneering works of women like Charlotte Perriand, Frida Kahlo, Anne Truitt, and Louise Bourgeois—they have all influenced my designs in one way or another. Sofia, what was the defining moment when you knew you wanted to join forces with your mother? Sofia: I can’t remember a specific moment; my earliest memory was being present at my mother’s fashion shows or draping fabrics

Individually, how do you both influence the Silvia Tcherassi brand? Silvia: My primary function as founder and creative director for the brand is to keep my original vision and DNA going, but to make it evolve and resound with the present to maintain its relevancy. Sofia: I like to think I bring a fresh perspective as well as formidable and varied work experience to the table. As much as I respect tradition and admire the company’s legacy, being from a completely different generation is a factor that definitely influences my outlook on fashion as a whole. What current trend are you working into your wardrobe this season? Sofia: I am exploring abstract prints. You’re packing a bag for a weekend in Palm Beach. What do you bring? Silvia: Casual trousers, loose blouses with feminine details, and, of course, caftans. I have a special predilection for Palm Beach; it even inspired my spring collection earlier this year. We shot our lookbook at the iconic Colony Hotel, and it was an all-around beautiful experience. I felt as if I were in a Slim Aarons snapshot! How does South Florida style differ from South American style? Silvia: South American women are a bit more demure and reserved, while South Floridian women are more daring and like to flaunt more. I think it’s more of a cultural matter than anything else.
