Besides the ever-popular welcome bag containing hats, sunglasses, and sunscreen that doubles as a beach tote for many Florida weddings, some couples are setting up assembly stations and even entire rooms for guests to build their own unique bags. “Couples are structuring the welcome bags to give guests options, as well as taking the opportunity to put in a few of their own favorite things, whether that’s cupcakes, donuts, or even mini Bloody Mary kits,” says Richardson. “Last season, one of our client couples worked with their favorite vineyard to put two bottles of customlabeled wine in each of their guests’ bags.”

Instead of wrapping the reception room in drapery and flowers, more brides and grooms are opting to use video projections reflected on the walls to create unique backgrounds and ambiance. “We did a wedding where there were mountains reflected in the background and the light made it look like it was snowing, and we’ve also used floral elements like cherry blossoms rustling in the breeze for a spring wedding,” says Richardson. “It’s a fun element that provides a little bit of movement and makes guests feel like they’re experiencing an outdoor setting inside.”

When planning a wedding, it’s no surprise that Naples’ beautiful beaches and stunning sunsets make it a popular destination to tie the knot. “We’re doing more and more destination weddings of people who have second homes in Naples who want to get married at a venue that means something to them, such as a private estate or local club they’ve grown up at, like Royal Poinciana or Grey Oaks,” says Anna Lucia Richardson, founder of Anna Lucia Events (annaluciaevents.com). She grew up in Southwest Florida, and 80 percent of the weddings she plans are in the Naples area as well, though her company is based in Tampa. Richardson shares what’s currently trending in nuptials.
“For a while, bouquets and floral elements were tight, compact, and structured, and now we’re seeing a shift back to the big cascading bouquets that were popular 10 to 12 years ago,” says Richardson. Peonies, ranunculus, and tulips add depth and texture to the bouquets, which are enhanced by loose and organic elements with plenty of foliage. “Greenery is the Pantone color of the year, and people are including it in their weddings by bringing in hedges, boxwoods, garlands, and more,” she says.

In 2011, recognizing a growing younger demographic in Southwest Florida, she acquired Old Naples Surf Shop (oldnaplessurfshop.com) and expanded its offerings for surfers. “I wanted to run a local institution and bring it back to its roots, then build on that concept,” says Spahr. Located three blocks from the Naples Pier, the shop is known for its variety of surf, skim, and stand-up paddleboards, as well as gear and beach fashion. For Beginners If you’re just getting started in board sports, Spahr suggests skimboarding or stand-up paddleboarding. This coastal Colombian city wows with historic sites, eclectic eats, and a dash of Caribbean flair

ainting a picture of Cartagena requires an expansive palette of electric pastels. A streak of aqua signifies the Caribbean Sea lapping against the well-worn walls of this ancient port city. Various shades of purple and pink form the bougainvillea blooming from the balconies of seventeenth-century homes. An unusual yellow—think mustard with a hint of terracotta— graces monuments, churches, and a smattering of apartment buildings. Single-story shacks emboldened in blue. Friendly vendors selling a rainbow of exotic fruit. Peridot-hued parrots chirping an organic ode to the sunset. There are many contenders in the contest of most colorful Colombian city, but Cartagena outshines them all.

Carmen (carmencartagena.com) brings a contemporary, often whimsical touch to local seafood. Dishes like the Duo de Cangrejo (crab cake paired with crispy crab claws) and La Playa (octopus, shrimp, and white fish ceviche dressed with citrus tiger’s milk and nestled along a bed of edible sand) perplex in concept but delight in flavor. Moshi (moshico. com.co) incorporates the same Colombian products into classic Asian dishes. Its interpretation of the Korean staple bibimbap is last meal–level good. Quality libations are as valued as spectacular seafood here, and nothing beats Colombian coffee. Savor some of the best, and grab a bag or two to take home, at Café San Alberto (cafesanalberto.com), a single-estate producer based in Buenavista, Colombia. Nearby, Ábaco Libros y Café (abacolibros.com) perfects the coffee-and-book combination in a cozy setting packed with works by Spanish authors. Waste away the afternoon with a good read (one by Colombia native Gabriel García Márquez seems apropos) and a no-fuss frappuccino.

There’s also the ubiquitous limonada de coco, a frozen concoction to counteract Cartagena’s high temps. But to really beat the heat, reach for a homemade popsicle, known as boli. Colombian kids grow up on these things, and vendors stock coolers full of them, in flavors like coconut, tamarind, and even avocado. Nothing makes you feel like a local faster than people watching from a park bench as ice cream drips down your face. Traverse down King’s Highway to end at Edith’s Pizza, an island staple. Heavy Metal The open-top version of the Mercedes-Benz AMG GT coupe is an adrenaline-fueled, 196-mph breath of fresh air By Howard Walker A rocket-powered sports car with an engine that sounds like Krakatoa in full lava-spewing mode requires a convertible version in order to experience the full aural eruption in all its head-banging glory. Mercedes-Benz’s new AMG GT C Roadster is the automotive equivalent of Led Zeppelin. Blip the throttle and you’ll swear you hear “Whole Lotta Love” blasting through tailpipes the size of storm drains. Accelerating from standstill is a rather explosive affair in a car that can hit 60 in a neck-straining 3.7 seconds. The thunder of that big 4.0-liter twin-turbo V-8 ascending past the 4,000-rpm mark will make every part of your body tingle. I love this car. 48

When it hits showrooms this fall, it’ll be available in two guises: the aforementioned GT C Roadster, priced from $157,995, and the marginally more restrained AMG GT Roadster, with a $125,395 sticker. See either in the metal and it looks like the fruit of a wild-night coupling between Darth Vader and Courtney Love. Could a car face be any angrier? There’s history behind this devilish design. The mile-wide grille, with its 15 vertical chrome teeth and platter-sized three-pointed star, was a feature of Mercedes’ iconic 300 SL, which competed in the Mexican Carrera Panamericana race back in the early ’50s. There’s even more drama in the rear, where LED taillights wrap
around divine curves. This is a case of breathtaking form following techno function. Slide behind that wonderfully chunky, suede-covered wheel for a taste of the intimate interior. The AMG sports seats, with their pronounced side bolsters, may be perfect for lapping Sebring, but some might consider them a little too huggy and overly firm for daily driving. I’m really no fan of the instrument layout, either, especially the center console area. That huge quartet of vents looks like it came from a Pep Boys catalog, while the slot-in iPad seems flimsily mounted. Don’t get me started on that shrunk-in-the-wash mini shifter placed way too far back for comfort. Or the complete lack of usable storage space. Or the excessive wind buffeting with the top down. But to drive this car is to be 18 again—and prom night is here. The GT C Roadster delivers performance and grit, with 550 horsepower and 502 pound-foot of torque. That’s significantly more than the 469 horsepower and 465 pound-foot of the regular (never call it base) GT Roadster. The C also comes with more performance-focused technology, like rear-wheel steering, a limited-slip differential, and a “Race” driving mode that injects concentrated Red Bull into every system. It is brutally quick,

especially mid-range when those twin turbos are blowing their hardest and approaching warp speed. As you’d expect of an AMGcreated cruise missile, the GT C Roadster carves curves like a Hot Wheels slot car. The steering feels like an extension of the frontal lobe; you don’t so much turn the wheel as think about it. Add to that the Gorilla Glue grip from the tires that is nothing less than otherworldly. That being said, the regular GT Roadster is an equally magnificent beast, but with the intensity level ratcheted down a notch or two. It feels just as insanely fast but with a slightly smoother ride, a less manic soundtrack, and a mellower persona. It might be my favorite of the two, and I can’t remember the last time I reckoned less expensive was better. «

You wouldn’t automatically think of communing with farm animals in Orlando, but it’s one of the coolest things to do at Whisper Creek Farm. Accompanied by local chefs, families learn about organic farming before picking bowlfuls of fruit and vegetables the chefs then prepare for an alfresco, earth-to-table lunch. A highlight is feeding callaloo leaves to the chickens and ducks, then going into the hen house to pick freshly laid eggs. Those who prefer Orlando’s old-Florida side can embark on an eco-tour by kayak or canoe, courtesy of The RitzCarlton. For two hours, guests paddle down peaceful Shingle Creek, learning about native flora and fauna and enjoying the absolute quiet, save for the occasional wingbeat or birdsong. Highball & Harvest at The Ritz-Carlton is a locavore’s dream. The Southern-style cuisine is prepared with ingredients sourced from local purveyors and Grande Lakes’ own Whisper Creek Farm, including a superb hot sauce made with just-picked peppers. The cocktail program is fairly innovative, with such clever concoctions as the Last Wish (whiskey, cola syrup, tobacco bitters, and orange essence), and the beers on tap are all Florida-brewed. Menu standouts are the campfire oysters with creamed kale and Florida cheddar, the naked chicken on corn waffles, and the Parker rolls with palmetto honey butter. At JW Marriott, fresh offerings from Whisper Creek Farm are served at the small-plate concept The Kitchen. Communal high-tops and sofa seating reinforce the notion of dining family-style. Don’t leave without ordering the hop-salted house pretzels with Surplus Honey Citrus Ale cheese fondue. Surplus is the house beer. Captiva House restaurant at ’Tween Waters Inn (tween-waters.com) is one of the island’s best. The seafood here is second to none (don’t miss the lobster spaghetti), and the gulf-front location yields perfect sunset views. For a more casual, if kitschy, experience, head to the Bubble Room (bubbleroom restaurant.com). The best thing on the menu is dessert—the cakes are stacked nearly a foot high—but most people come to marvel at the vintage decor and the Christmas bubble lights that give this landmark its name.
Captiva Island is known for its exclusive seclusion, but Sea Oats (seaoatscaptivaisland. com) takes the hideaway concept to new heights. With its front yard the bay and private beach access on the other side, this vacation home feels miles and smiles away from the daily grind. Multigenerational families and groups of up to 30 can stay together, yet enjoy individual space. Choose from one of seven lavish bedrooms in the main house, or take a step into old-island style in the two-bedroom guest house. he story of present-day Florida originates in St. Augustine. The Spanish arrived in 1565, forming what would become the oldest, continually occupied European settlement in the United States. Henry Flagler established a small collection of grand hotels here in the late 1800s, introducing this coastal town to his wealthy contemporaries and creating an infrastructure for work and play. Modern St. Augustine has one foot planted in the past, with a downtown district marked by centuries-old monuments, Colonial buildings, and ghostly inhabitants. But the Old City of tomorrow is fast becoming a hip haven for foodies, entertainment junkies, and history buffs. —M.M.
STAY A visit to the Casa Monica Resort & Spa (casamonica.com) starts in the original carriage entrance and continues into the opulent Moorish lobby with hand-painted frescos and chandeliers reminiscent of a Moroccan riad. This fairy tale of visual jewels is very real. A member of the National Trust Historic Hotels of America, the Casa Monica was built in 1888 by Franklin W. Smith. Look beyond the tourist trap seafood joints in favor of St. Augustine’s homegrown culinary scene. The Floridian (thefloridianstaug.com) specializes in comfort food with a locavore twist, as seen in dishes like Pork & Waffles with pulled pork atop a gluten-free waffle bathed in a bourbon-brown sugar glaze, seasonal fruit, Florida honey, and homemade ricotta. For a less folksy, more ofthe-moment meal, head over to Ice Plant Bar (iceplantbar. com), which elevates the cocktail experience to an art form, featuring libations made using house-pressed juices, local ingredients, and three kinds of ice. The food is just as impressive. The pickled shrimp toast improves on a local favorite with the addition of a madras curry aioli and jalapeño. Bookend any—or every—day with heavenly baked goods. Maple St. Biscuit Co. (maple streetbiscuits.com) slings up creative biscuit sandwiches, with orders called out based on your favorite TV show instead of your name. Breakfast becomes a decadent dessert at Cousteau’s Waffle & Milkshake Bar (wafflemilk. com), which uses Belgian pearl sugar and house-made ice cream.

Downtown St. Augustine is supremely walkable. However, some attractions are a mile or more away, and the best way to see them all is via Old Town Trolley Tours (trolley tours.com). A pass allows you to hop on or off any of these orange-and-green streetcars at more than 20 spots; some of the most popular include the Old Jail, designed to resemble a Victorian home; Castillo de San Marcos (nps.gov/casa), constructed in the 1600s and known colloquially as “The Fort;” Ripley’s Believe it or Not! (ripleys.com/staugustine), an infamous house of oddities; and Ponce de Leon’s Fountain of Youth Archaeological Park (fountainofyouthflorida.com), where timeless beauty exists in the form of native flora and a muster of peacocks. When traveling by foot, begin next door to the Casa Monica at the Lightner Museum (lightnermuseum.org). Formerly Flagler’s Alcazar Hotel, the Lightner provides a snapshot of the Gilded Age. Be sure to venture upstairs for a glimpse inside the Alcazar’s former Russian bathhouse. It’s all about simplicity, prime ingredients, technique, and execution here, with dishes like the Beef Tartare Mirabelle and the Bouillabaisse Mirabelle. For something more informal, eat at Casolare (casolaredc.com), the coastal Italian restaurant by James Beard Award–winning chef Michael Schlow. EAT D.C.’s foodie movement is happening in real time, and the world is noticing. The city’s inaugural Michelin guide was released in October 2016 and several restaurants have achieved coveted star status. Begin with Kyirisan (kyirisandc.com), a modern French-Asian restaurant owned and helmed by rising chef Tim Ma. Here, an East-meets-West marriage has no culinary boundaries, as seen in such dishes as pan-seared sea scallops over coconut risotto topped with a miniature scoop of basil ice cream and scallions. Book ahead for a more formal dining experience at Kinship (kinshipdc.com), the brainchild of husbandand-wife team Eric Ziebold and Celia Laurent, who’ve trained in the kitchens of French Laundry and Per Se. Icon A5 Head up, up, and away in the seaplane that acts like a Miata The Jetsons may have promised a future of flying cars, but that just isn’t going to happen. Here’s the next best thing: the Icon A5, a carbon-fiber seaplane that costs less than a Ferrari and is probably easier (and safer) to control. Priced at around $200,000, the A5 is the brainchild of former fighter pilot Kirk Hawkins, whose company is building this two-seat sports car for the skies in Napa Valley. The A5 is classed as a no-frills Light Sport Aircraft that requires only 20 hours of training to pilot. Powered by a 100-horsepower Rotax engine spinning a rear-facing propeller, the A5 has a top speed of 138 mph and can fly for up to 450 miles on a tank of pump gas. Polaris Slingshot Transformers meets Star Wars in this part-motorcycle, part-sports car There are many ways to get from point A to point B, but the craziest means might just be behind the wheel of the Polaris Slingshot. Classified as a three-wheeled motorcycle (you’ll need a motorcycle license and a fullface helmet), it packs all the thrills of a big Harley with the safety and stability of a Lotus Seven two-seater. A GM-sourced, 173-horsepower, 2.4-liter Ecotec four-banger mated to a 5-speed stick powers the single rear wheel. And no surprise here: It’s quick, lunging from zero to 60 mph in 5.8 seconds and hitting a top speed of 130 mph. Bugatti Chiron Everybody needs a 1,500-horsepower, $2.6-million hypercar Few experiences deliver the mind-warping sensation of rocketing from standstill to 60 mph in just under 2.5 seconds. In lieu of calling Ringling Brothers and asking them to fire you out of a circus cannon, we suggest spending $2.6 million on a new Bugatti Chiron. This supercar is the long-awaited replacement for the Veyron, which ended production in 2015 after 10 years and 450 examples. Whereas the final Veyrons made do with a mere 1,200 horses, the Chiron amps up the power from its 8.0-liter quad-turbo to a staggering 1,500 horsepower. Lotus Motorcycle CO-1 Evel Knievel would have loved this two-wheeled rocket ship When a Vespa scooter won’t cut it, consider the outrageous Lotus Motorcycle C0-1. Former Bugatti stylist Daniel Simon (the mastermind behind the Light Cycles in the movie Tron: Legacy) designed this limited edition, $130,000, carbon-fiber crotch rocket. German race car constructors Kodewa and Holzer Group are handling the build. Power, all 200 horses of it, comes from a 1,195cc KTM V-twin motorcycle engine mated to a 6-speed gearbox with braking by Brembo. But it’s the 12-piece, carbon-fiber aero bodywork that sets the C0-1 apart. Just 100 will be built with most already accounted for. At the Mecum classic car auction in Monterey, California, last summer, an unridden C0-1 got a high bid of $190,000. Hopefully the Lotus acronym of “Lots Of Trouble, Usually Serious” won’t apply here. ike many other Neapolitans, Roger and Hilda Dunekacke fell in love with Naples while seeking refuge here from the harsh Midwest winters. After traveling back and forth from Minneapolis for roughly 20 years, the Dunekackes began the search for a permanent home. The couple, who had spent many years leasing properties along Gulf Shore Boulevard, were charmed by a three-bedroom, 3.5-bathroom condominium at Provence, a luxury high-rise development in the Park Shore neighborhood, located right on the beach. “We like our sunsets, and we like being able to turn the key and leave because we travel extensively,” Hilda says. Among the features that attracted the Dunekackes are their home’s panoramic views of the bay, the Gulf, and Venetian Village. “We some
times say that we live in the treetops because we’re surrounded by windows,” Hilda says. As for the interior, the couple decided on a complete overhaul to replace the traditional look and trimmings with a more modern, airy aesthetic. “We envisioned something much more contemporary, open— taking advantage of all the glass we have,” Roger says. During the renovation, the Dunekackes, who together are partowners of the Enola Hills winery in Oregon’s Willamette Valley, focused on finding the most creative ways to store their large collection of wine—a shared passion and a key component of their frequent athome entertaining. “We have wine everywhere in this unit,” says Hilda with a laugh. “In NAPLESILLUSTRATED.COM | JULY/AUGUST 2017

the kitchen, we have two units under the counter. And one of the other unique places [where we store wine] is in our guest bedroom. Instead of buying a dresser, we had built-ins made. We put a wine unit on each end and then created a dresser in the middle of it. When you’re in a condo, it’s a little difficult, as opposed to being in a house where there’s a dedicated wine cellar.” The couple also converted a traditional living room into an open-concept living space outfitted with a table and chairs, a spiral light fixture, and a creative design solution for wine storage: a custom-made, mirrored cabinet. To their shared surprise, the room has become a favorite spot to simply relax. “We now sit [in that room] a lot because it has a great view of the sunset and the water,” Roger says. The renovation continued to the floors, countertops, and cabinets. “One of the very first things we did was select our floor,” says Roger, referring to the Calcutta gold marble that’s underfoot in every room except for the bedrooms, where the couple opted for walnut instead. “As we’d come to find out, Calcutta gold is very hard to get,” he says, explaining that shipments sometimes arrived from Italy bearing imperfect product. “One ship would come in and the color wasn’t right,

and the next ship would come in and the marble was broken.” Eventually, all the right pieces arrived, and the floors and countertops were complete. With their coveted marble floors and countertops in place, the couple selected custom-made walnut cabinets and a wide array of sculptural lighting fixtures—unique pieces for every room of the home that add texture and interest to the space. “Lighting was one of the focal points,” says Hilda. “We tend to gravitate toward things that are different.” The couple searched extensively—from Naples to Minnesota and even California—for fixtures that stood out, noting in particular the spiral-shaped chandelier that’s mounted above a table and chairs in the common sitting space. “We hadn’t seen anything like that anywhere,” Roger says. What they do see, and welcome, is a constant flow of visitors, for everything from board games in the sitting room to sunset-watching on the lanai. “When we have people over, we hope that they come in and feel like they can kick their shoes off and just enjoy being here and enjoy the view,” says Hilda. “Life can be very solitary if you don’t enjoy it with the people you love, whether it’s family or friends.” Solitary is something the Dunekackes are, most definitely, not. On the contrary, sharing wine and hosting wine dinners is what the couple loves most—a reason to gather friends together for good food (frequently homemade) and the wine they’ve learned so much about since buying into Enola Hills. “For us, [wine is] more of a hobby,” Roger says. “We’re not professionals in the wine business by any means. We’ve just enjoyed good wine. We’ve enjoyed collecting over the years, and the opportunity with the winery has given us a lot of chances to learn about the wine industry from start to finish.” 74

For the Dunekackes’ friends and houseguests, that means frequent gatherings, from casual, fresh salads and grilled fish on the lanai to more elaborate, multi-course meals around the table—always accompanied by a complementary pour. One thing the gatherings are not? Stuffy. Earlier this year, the couple hosted an I Love Lucy-themed party, complete with salsa dancers, Cuban sandwiches from a local catering company, chocolate cigars, and a chocolate assembly line in homage to the show’s famous candy factory episode. Then there was the stomping of 80 pounds of grapes in big tubs alongside their guests on the lanai. “That’s part of who we are,” Hilda says of the couple’s natural affinity for merrymaking. “It was a lot of work, but it was a labor of love. We had a beautiful wine dinner with wine pairings, and we consumed a lot of wine.” “You know, wine is kind of the same as the house,” Roger adds. “It’s not very satisfying to look at the bottle sitting in the cooler. It’s more enjoyable to pour it in a glass and share it with some good friends over a good dinner. It would probably never happen that you’d have dinner at our house without having wine with it.” Then, as if on cue, Hilda says, “Do you want to come and drink some wine? We have plenty!” Perhaps it’s just good-natured teasing. More likely, it’s an invitation rooted in genuine warmth, much like the Dunekackes’ coastal home itself. «

If you’re a lover of Bordeaux wine, here’s a scenario you could only dream about: a selection of Grand Crus from nearly every commune of the Gironde, accompanied by inspired cuisine from a top local chef

ream became reality in April during a special event at Le Lafayette, the classic French restaurant owned and operated by chef Sebastien Maillard. The occasion was a stellar tasting of wines from the personal collection of Francois Louis Vuitton, the great-great-grandson of the fashion icon, accompanied by a special menu created by the chef. The wines were presented by Emmanuel (“Manny”) Burnichon, a wine importer and friend of Vuitton’s, who shared his expertise with guests when Francois was unable to attend. Even in Naples, which regularly sees great wines paired with stellar chefs, the combination was memorable. Vuitton, who has a summer home in Pyla Sur Mer 40 miles west of Bordeaux, drew on his experience with winemakers and château owners to assemble his collection. The idea began with a visit to Maison Bouey, a Bordeaux négociant (broker). “My meeting with Bouey was the opportunity to make my passion become the subject of a personal collection,” says Vuitton. “I wanted my personal collection to embody French style, with wines of outstanding pedigree, from the finest Bordeaux terroirs. That is why I decided
to select Classified Growths.” He says he visited each property and personally tasted the wines before adding them to his portfolio. The decision to focus on Classified Growths was a significant one. There were two classifications ranking Bordeaux wines in 1855: one focused on red wines of the Médoc, the other on sweet wines of Sauternes and Barsac. In addition, there is a separate classification in St. Emilion that changes periodically. The 61 properties included in the Médoc classification are written in stone, and are still regarded by connoisseurs as the greatest and most soughtafter in the region. Those wines were well known to the Naples connoisseurs who were drawn to the dinner. “I always appreciate being surrounded by people who are friends as well as customers,” says the chef, describing the 60 diners who attended the event. “The guests were special clients who would really understand the wines.” To create the menu, Maillard drew on a lifetime of experience. “My parents always joked that I was born in the pan,” he says, noting his first New Year’s Eve was spent in a playpen in his father’s restaurant. After a stint in the Caribbean he arrived in the U.S. in 1998 and gravitated to Naples, where he opened Le Lafayette in 2001. NAPLESILLUSTRATED.COM | JULY/AUGUST 2017

Black truffle risotto served as the second course, while a trio of 2014 Grand Crus added a unique element to the experience.
On this occasion, after a reception fueled by the Grand Cru Brut Champagne of Ernest Remy, guests were served a dish of Maine lobster medallions in a creamy mousseline sauce. This was accompanied by a pair of Grand Crus from St. Emilion, Chateau La Gaffeliere 2012 and Cadet-Bon 2014. Both wines are composed primarily of Merlot, which gave them a supple texture compatible with seafood. However, it was the dry white wine from Chateau d’Yquem, Ygrec 2015, that stole the show, becoming the instant favorite of many of the attendees. “This is a very rare and unusual wine, with fewer than 1,000 cases made each year,” says Maillard. “Like Chateau d’Yquem itself, it’s a blend of Sauvignon Blanc and Semillon, but something that most people had never 78

experienced before.” A black truffle risotto followed. Maillard sautéed Arborio rice with a court-bouillon of fish, gently simmered the dish until the rice was perfectly cooked, and finished the risotto with cream and fresh, shaved black truffles. A trio of 2014 Grand Crus each added a unique element to the experience: the silkiness of Lascombes (Margaux), the earthiness of Malartic-LaGraviere (Pessac-Léognan), and the power and elegance of Léoville-Poyferré (St. Julien). For the third course, diners had a choice between duck and sea bass, and chef Maillard had surprises waiting for them with either selection. The “duck burger” had an unusual presentation: placed on a slice of brioche,

Dessert was no less unusual and delightful. Drawing on his background as a pastry chef, Maillard created a dark chocolate Toblerone “cake” that was more a culinary pun. “In French we would call it an entremet,” he explains, “or a dessert designed to entertain.” He took dark Toblerone chocolate and reconstituted it into the shape of a candy bar, filled it with frozen vanilla and coffee mousse, and garnished it with Cabernet Sauvignon ice cream made with wine from the Bordeaux region of Pauillac. Besides adding color from green to purple, microgreens “complement without overpowering flavor,” says Jonathan Way, coowner of Colusa Farms in Golden Gate. “Their taste is more potent than fully grown plants.” Closer to seed stage, plants are also more nutritious and antioxidantpacked. Although Way sells only to restaurants, home cooks can find microgreens at Naples’ Whole Foods Market.

With its green-rind grins and summer sweetness dripping down your chin, watermelon often reminds us of our playful youth. Modern chefs lose the messiness but keep the flavor essence in refreshing summer starters. Baleen restaurant at LaPlaya Beach & Golf Resort combines two seasonal traditions with its Grilled Summer Watermelon, starting with a wedge of local melon, charred to draw out sweetness. Gobs of creamy goat cheese, feta, pickled red onions, and red grapes accessorize on a bed of baby arugula with vanilla-lime dressing. Paradise Wine compresses watermelon into a concentrated slab bursting with flavor. Champagne vinaigrette dresses pickled shallots, cucumbers, radish, and micromint with a dollop of soft burrata cheese. Whole Foods Market in Naples recently debuted its new line of desserts from master chocolatier Norman Love. “I’m so excited, they sold out of everything that [first] weekend,” says Love, founder of Norman Love Confections salons, with locations in Naples, Estero, and Fort Myers. “We are going to begin with the Naples [Whole Foods] store and learn the customers, who we think are very similar to ours.” Starting with six cakes, its selection is growing to breakfast pastries and packaged goods, he adds. Whole Foods has also been expanding its Naples store to become more of a dining destination over the past few months. Warm Weather Wines This summer, cool down with more than just Chardonnay BY MARK SPIVAK
As the temperature rises, wine drinkers will be carrying their glasses out to the pool and asking themselves one question: What’s the best way to escape the boredom of Chardonnay? A tsunami of Pinot Grigio is washing over the market, and New Zealand Sauvignon Blanc seems like old news. Fortunately, there’s an assortment of lesser-known whites that are crisp, delightful, and refreshing: ARNEIS: Anyone who has traveled in Italy’s Piemonte region is familiar with the saga of this grape variety. With a name meaning “little rascal” in the Piemontese dialect, Arneis is so difficult to grow that it was abandoned and nearly extinct before a few visionary wineries around the town of Roero revived it in the 1960s. Today, Arneis is available in both oaked and natural versions, with the unoaked wine displaying exotic and floral aromatics, as well as flavors of apricots and ripe pears. The leading producers are Bruno Giacosa, Vietti, and Ceretto, all priced at around $25. Enjoy it as an aperitivo or with a first course of shellfish. GRÜNER VELTLINER: Grown primarily in Austria, the Czech Republic, and the former Yugoslavia, Grüner has been a staple of cuttingedge wine lists in America for several decades. 96

The most common style is dry and spicy, with hints of white pepper and vegetal notes. Unoaked Grüner can be consumed young and bears a resemblance to Riesling; with barrel aging, the wine can acquire a richness and fatness similar to Chardonnay. Given its vegetal aspects, Grüner is usually touted as a wine that can pair well with difficult foods, such as salad or asparagus. A good entry-level bottle is available from Hirsch at $20, while top wines from producers such as F.X. Pichler can approach $100. ALBARIÑO: Grown in the northwest corner of Spain, on the border with Portugal, Albariño can be traced back to the early twelfth century when it’s generally assumed to have been planted by French monks. The distinctive nose exudes floral notes, aromas of peaches and apricots, and hints of honeysuckle. Although the wine is dry in the mouth, barrel-aged versions acquire complexity and a creamy texture. It’s a perfect match with fish and shellfish. Producers to try

include Martín Códax ($15) and Pazo de Señorans ($20). VINHO VERDE: Cynics might label Vinho Verde from Portugal as Albariño’s “evil twin,” but it could be the ideal hot-weather wine. It’s low in alcohol, slightly effervescent, extremely refreshing, and packed with citrus fruit and mouthwatering acidity. On top of that, stocking a refrigerator with Vinho Verde will cost less than buying a single bottle of Puligny-Montrachet. Widely distributed varieties include Broadbent Selections and Aveleda, both around $10. The very best examples, if you can find them, come from the Minho province in the north of the country, bordering on Spain’s Rias Baixas Albariño region. «

BODY In Southwest Florida, one of the best ways to mix up a mundane workout routine is to hit the beach, which always makes exercise feel less like work and more like play. The sound of crashing waves can get you in the zone while the sandy terrain adds resistance, making your workout more challenging. Of course, when you exercise on the beach, always make sure you slather on the sunscreen and drink plenty of water to stay hydrated. Here’s how to make the most of a workout on the water. Yoga: The mind-body connection plays an important role in yoga. The relaxing gulf atmosphere and soothing sounds of the waves will help clear your mind and steady your breathing as you move through asanas. Try syncing your breath with the waves. Breathe in as the waves roll in, breathe out as they crash on the shore. For a full-body stretch, opt for Dancer’s Pose, Warrior II, and Downward-Facing Dog. Walking/Running: An early morning walk or run on the sand is a great way to start the day. The soft surface forces the muscles to work harder, thereby increasing the intensity of the workout. Begin by running on wet, packed sand at low tide so your joints can adjust to the new setting. Also, be sure to wear shoes with proper ankle support to avoid injury.
High-Intensity Interval Training: Fast-paced high-intensity interval training (HIIT) alternates low- and high-intensity exercises. Rotate between high knees (a stationary running motion with exaggerated knee raises), jump squats, burpees (in which you go from standing to a push-up position), and push-ups. The sand will offer an added challenge as your muscles must quickly contract and relax to maintain balance. Swimming: This is an obvious option, but it’s also a demanding one. With unpredictable wave conditions and no lanes, open-water swimming provides a unique workout every day. Beginners should swim parallel to the shore and keep it in sight. SAFE TRAVELS Whether this year’s summer vacation is domestic or international, turn to technology for peace of mind in case there’s a medical emergency. The Centers for Disease Control and Prevention’s TravWell app (cdc.gov) provides destination-specific medical recommendations, including which vaccines are suggested for each country. It can also store all your immunization records, list of medications, and other travel documents. If you’re not feeling well but aren’t ready to call a doctor just yet, use the iTriage app (itriagehealth.com) to look up thousands of symptoms, conditions, medications, and procedures, along with the nearest local doctors and facilities within a country. Created by two emergency-room doctors and reviewed by Harvard Medical School, the app even allows you to make appointments and check into emergency clinics beforehand. Another helpful travel app is ICE: In Case of Emergency (appventive.com/ice), which allows paramedics and hospital staff to view your medical information, history, and emergency contacts. Even if your phone is protected by a passcode, the app’s lock screen widget will still be accessible. 1. CREATE A SLEEP SCHEDULE. Make sure you are rested before your trip and gradually adjust your schedule before you leave. Stay awake when you reach your destination, instead of taking a nap. “Jet lag usually hits people who fly east the hardest, since most of those flights fly at nighttime,” Woodward says. “If you’re on an eight- to 10-hour flight from Florida to Europe that leaves at 10 p.m., you’ll arrive mid-morning. You need to sleep on the plane and stay awake until at least 7 p.m., or it’ll be a struggle to get on the new schedule.” 2. FOLLOW THE LIGHT. Sunlight helps regulate your internal body clock and, generally, body clocks can shift comfortably by an hour a day. “Bright light in the evening will push your clock forward so you go to bed later and get up later, ideal for westward flights,” says Woodward. “Likewise, bright light in the morning will push your clock backward so that you go to bed earlier and get up earlier, which is what you’ll want if you’re heading eastward.” 3. GET MOVING. Tight, cramped muscles can be synonymous with flying, but with some quick and easy exercises, you can remedy the problem. Woodward recommends standing and walking as often as possible to move your muscles, or, at the very least, walking the length of the plane every two to four hours to prevent the potential for blood clots. Simple, static exercises can also be done while seated, such as neck and shoulder rolls, leg stretches beneath the seat in front of you, and heel and toe lifts. “Place your feet shoulder-width apart and alternate lifting your heels and the balls of your feet,” Woodward says. —Anna Bjorlin

RED, WHITE, AND BLUE RACES For the early-bird fitness buff, get fired up for the holiday by running the fast, flat course in the annual Moe’s Firecracker 5K run at Fleischmann Park. Hosted by Gulf Coast Runners (gcrunner.org), the race kicks off at 7 a.m. on Tuesday, July 4. In Estero, Elite Event’s USA Independence Day 5K run and walk (eliteevents.org) takes off at Germain Arena at 7 a.m. on July 4 as well.
FESTIVITIES & FIREWORKS Starting at 10 a.m., downtown Naples will come to life with a parade of festive floats, entertainers, a salute to armed services, and more. The annual fireworks display from Naples Pier will begin at 9 p.m., so gather the family and grab chairs or blankets and arrive early to find a spot along the best viewing areas on the beach, which is from Lowdermilk Park to south of the Pier. , philanthropist and 14-year Naples resident, exudes a sense of wanderlust. Besides spending about four months each year in New York, her travels have extended around the globe with trips to more than 95 countries. In an effort to inspire high school arts students to hone their talents and pursue their passion, Schrenk and her husband, George, founded Schrenk Student Photography Institute 12 years ago. To date, Schrenk says more than 100 students have mastered the three-year program, and many have gone on to receive college scholarships, which have included Ivy League universities.

1. Personal passion: I am an adventure photographer and am happiest when I am somewhere off the beaten path with my Nikon. This summer I am going on a photographic expedition to Mongolia, where I’ll be staying in a yurt. 2. Daily ritual: I begin each day with transcendental meditation and yoga. 3. Best read: Steven Pinker’s The Better Angels of Our Nature: Why Violence Has Declined. He explores human nature, mixing psychology and history to provide a picture of an increasingly enlightened world. 4. Favorite jewelry designer: David Webb. He created a new aesthetic: bold, colorful, and powerful. 3 My favorite is the zebra bracelet, which he originally created for Diana Vreeland. 5. Revered artist: Yves Klein, the “painter of space” who inspired minimal, pop, conceptual, and performance art. Who else has their own Pantone color named after them? 6. Perfect hostess gift: Kelly Wearstler’s bronze mini kiss. It’s like a little blessing 5 on a bedside table. Samothrace 7. Go-to scent: Byredo’s Blanche. White is my favorite color, and Blanche was my Victory mother’s name; when wearing it I imagine it was made just for me. 8. Great escape: I adore New York City. A ritual I have 6 is to visit the Metropolitan Museum of Art on Sundays.
