The Season of Giving
Our October issue has always carried a certain warmth, since it is our annual Charity Datebook issue. The spirit of generosity starts this season with a list of all the events and organizations one can support in various ways. As the season starts and we begin to think of the months ahead, we’re reminded that this is a time not only for reflection but for action— especially when it comes to giving back.
In this issue, we shine a spotlight on charitable giving in all its forms. You will find a list of individuals and organizations making a remarkable difference, as well as inspiration for creative ways to support causes close to your heart. Whether it’s volunteering your time, lending your talents, or making a financial gift, generosity is a ripple that can start with just one act and reach farther than we can imagine.
I believe that charitable giving is not just about money—it’s about connection and recognizing that our communities are only as strong as the care we invest in them. In a world that can often feel divided, giving is one of the most powerful acts of unity we can share. I have a special place in my heart for many of the charities you will see within this issue; however, I was asked several years ago to join the board of Chasin’ A Dream Foundation. A true grassroots charity, Chasin’ A Dream operates under the motto of “Locals Helping Locals,” all in support of its mission to assist families of children in Palm Beach and Martin counties who are battling life-threatening illnesses and disabilities.
The connections I have made over the years supporting so many organizations, personally and through the sponsorship of Jupiter Magazine, have been amazing, and I am so thankful. As you read through this October issue, I encourage you to reflect on your own opportunities to give, whether that’s through a cause you’ve supported for years or one you have just discovered in these pages. Together, we can build a season, and a future, filled with hope.
As I finish my letter, I’d like to encourage you to sign up for our weekly newsletters, which are full of information about our community. You can also visit our website, jupitermag.com And I am available for any questions or recommendations regarding your marketing needs. In each issue, Jupiter Magazine has many special advertising sections such as Home Resource Guide, Luxury Homes real estate section, and Flavor dining guide. We provide digital marketing opportunities as well.
Until November, have a great start to the season!

The Science of Slowing Down SCUBA:
BY SARAH WOLF
Identical twins Viktoriya and Oksana Gruzdyn have always been drawn to the open water. Originally from Ukraine, the sisters, who suffered from chronic ear and sinus infections as kids, would take frequent trips to the Black Sea with their parents and return home cured. Their passion for water’s healing would eventually lead them to move to Florida four years ago to pursue their shared love of scuba diving.
The Scuba Twins, as they are known on social media, have completed 40 dives to date—many in the waters off Jupiter— including open-water shark dives. In 2024, they were selected from more than 10,000 applicants to be featured in Legacy Makers, a global documentary series that showcases people who inspire, educate, and motivate the world. (Their episode is set to air later this year or in early 2026.)
Oksana and Viktoriya Gruzdyn, aka the Scuba Twins, observe a tiger shark.
The sisters also run a virtual health consultation company together—Oksana is an immunologist, while Viktoriya does digital marketing. They are passionate about blending science with real-life wellness strategies to reverse inflammation, chronic fatigue, autoimmune disorders, and even hair loss. And there is a lot we can learn from scuba, they say, when it comes to the health of both body and mind. Here, the Scuba Twins offer insight into the sensory calm and health benefits of scuba diving.
STRESS CONTROL
Scuba diving teaches you to slow down and breathe deeply—skills that activate the parasympathetic nervous system, which lowers your heart rate and reduces cortisol levels, says Oksana. “It’s underwater meditation,” she says. You’re breathing so slowly, you can’t help but relax.” The ocean itself helps too. “Sea salt contains negative ions that help increase oxygen intake, which balances your serotonin levels and boosts your mood,” she adds. “Sensory effects all help calm the nervous system—the smell, the color blue, the sound of the waves—they all activate different senses in your body.”
EMOTIONAL GROUNDING
For the Gruzdyn sisters, diving is more than physical—it’s emotional. “You feel weightless, like you’re flying,” says Viktoriya. “You forget about time, and you become more present in the moment.” Shark diving specifically helps the sisters reframe fear into adaptability. “When you face a 10-foot tiger shark, you’re training your brain to stay calm under pressure,” says Viktoriya. “The experience teaches you to face your problems head on.”
MENTAL CLARITY AND FOCUS
Diving demands focus, communication without words, and quick
problem-solving—all of which sharpen cognitive performance. “Our brain is designed to solve problems,” says Viktoriya. “When you don’t have problems to solve in your life, you will make them. Scuba diving teaches you to solve problems in real time, under pressure, and in an unfamiliar environment. When something goes wrong underwater—like a mask leak, buoyancy issue, or equipment snag— panic is the real danger, not the problem itself. That instinct to pause instead of freaking out is a muscle you build.”
PHYSICAL RESILIENCE
Diving boosts circulation, oxygenates cells, and promotes antiinflammatory effects. “When you’re diving, you’re breathing air under pressure, which means your body absorbs more oxygen than usual,” says Oksana. “This can help reduce inflammation and support tissue repair, similar to mild hyperbaric therapy. Buoyancy in water also relieves pressure on your joints, muscles, and spine, which can help with pain relief, flexibility, and even recovery from injury.” ❖

A new sanctuary in Palm City provides a safe haven for all kinds of animals and serves as a hub for service dog training
BY PAIGE FEIGENBAUM
There’s a new place for rescue animals to feel safe in Palm City, thanks to the American Humane Society. In April, the organization held a ribbon-cutting ceremony at a 15-acre site called the Sanctuary, and plans are underway to have the various services and facilities up and running by next summer.
Two rescue horses already call the sprawling property home. And in the coming year, it will become a haven for many dogs, cats, rabbits, birds, and livestock that have been rescued from shelters, natural disasters, and cruelty situations as they await reunification with their families or a new home. When necessary, animals can live out their remaining years at the Sanctuary, which will also house a center for service dog and national disaster response training.
The project is the vision of American Humane president and CEO Robin Ganzert. During the pandemic, Ganzert envisioned a serene sanctuary somewhere near her West Palm Beach home where paws, hooves, wings, fur, and feathers would be welcome. “The animal kingdom, domestic
and wildlife, have always been near and dear to my heart,” she says. “Palm City was the perfect location, offering ample space to create a state-of-the-art sanctuary that could meet the needs of multiple species. Its location also allows for ease of access to regional disaster zones and communities in need.” Over the last decade, the American Humane Society has expanded its reach to 59 countries.
The American Humane Society purchased the Palm City property in the fall of 2023 and began transforming the site, thanks to the generous support of people like the organization’s board chair, John Payne, whose financial contributions allowed the building of a Betty White Healing Garden and bronze sculpture—a tribute to the late actress’ commitment to helping animals.
The American Human Society has already “rewilded” the existing wetlands on site, planting native species to create a safe, sustainable environment for the animals. They tore down an existing dressage area to make space for a 20,000-square-foot, multispecies, hurricane-proof barn—dubbed
the Ark of Hope—which is scheduled to be completed by June 2026.
The Ark of Hope will serve multiple purposes, including hosting FEMA disaster response courses, animal rescue training, handling, and disease prevention. Pups4Patriots, a service dog training program supported by the Lois Pope LIFE Center for Military Affairs that matches veterans with post-traumatic stress disorder or traumatic brain injuries with dogs, will also conduct training and agility work there. The Pups4Patriots service dogs are trained to perform tasks such as “buffering” (positioning themselves between their handler and others in crowded or stressful environments) and “grounding” (lying across their handler’s feet to reduce anxiety by providing physical comfort. “There are a lot of veterans in Florida in need,” says Ganzert. “We want to up the number of service dogs we produce here.” The service dogs will reside alongside rescue dogs in Kurb Canine Condos, which are expected to be completed by year’s end.
Ganzert says visitors to the Sanctuary (as well as the animals who reside there), will be greeted by a sense of calm, safety, and peace. “When you drive out there, you automatically have your tension and stress reduced,” she says. “We were able to incorporate all our programs on this property. It’s a match made in heaven in Martin County.” americanhumane.org ❖

With his loving owner, Zaneta Kuzel, by his side, clever pup Indy went from castoff to career dog—protecting families from household dangers, one sniff at a time
BY SARAH WOLF
When Indy, an energetic black Lab from Colorado, was returned to his breeder for being “too active,” he had no idea that life was about to hand him the perfect second chance—and a new career.
Meanwhile, Zaneta Kuzel—a Czech Republic native who moved to Florida in 2016 with her two young sons—had recently purchased a new home in Hobe Sound. During the four-month renovation process, mold was discovered behind kitchen tiles and cabinets. By the time she moved in, Kuzel thought the issue had been resolved. But she soon fell ill, suffering for months with unexplained respiratory issues including a long bout of pneumonia that landed her in the hospital. It turned out that more hidden mold was still in the house, and it was making her sick.
Kuzel had always been passionate about leading a holistic lifestyle, so she began researching mold, its health effects, and how it’s detected, hoping to help others
avoid what she’d gone through. When she learned that dogs are used in mold detection, it sparked an idea for a new career path. Kuzel had been struggling to find a balance between her work as a florist and a mom. “I love the flower business, but I was ready to do something else,” she says. “I had to work holidays, and it was very demanding for a mother of two little kids. And it all kind of clicked.”
She found Indy online and flew him to Florida for a three-month training program at the Florida Canine Academy, a specialized dog-training facility in Safety Harbor. There, then-8-month-old Indy became a moldsniffing machine, learning to detect harmful spores like aspergillus and Stachybotrys (aka black mold) hidden behind walls and under floors. Indy alerts by sitting down and
pointing with his nose— earning himself a treat and plenty of praise. According to Kuzel, her pooch is one of only a handful of highly specialized mold dogs in the United States, and his nose is more than 90 percent accurate. Kuzel officially launched Mold Hunt this past March, and since then she and Indy have been performing inspections at local homes, businesses (and even yachts) all over South Florida. But it’s not all work and no play for Indy. When off duty, he has fun with Kuzel’s sons and lounges around like any family dog. “He’s such a sweet boy, and I just love him so much,” Kuzel says. “He’s like my third child. He’s a part of the family.”
But when his official vest and foodreward pouch come out, Indy knows it’s time to clock in. “He loves his job,” Kuzel says. “When he puts his vest on, he knows it’s time to get in the car and go to work. It’s so funny!”
From almost forgotten to Florida hero, Indy proves that sometimes the most unlikely beginnings can lead to a powerful purpose. moldhunt.com ❖

Stuart native Eirinn Abu comes to The Lyric Theatre with his Grammy-winning guests for a melodious evening in support of America’s heroes
BY KERRY SHORR
Saxophone maestro Eirinn Abu is coming home. The multiplatinum artist (born Jerry Doyle) will be in town for a one-night-only show October 30 at The Lyric Theatre, where he last performed 18 years ago. Abu lived in Stuart for more than a decade before moving to Nashville to pursue his music career full-time. His discography includes the 2020 crossover album Sax in the Country, which features duets with Dolly Parton and country-pop star Deborah Allen, and 2024’s Anthem, which he recorded with Grammy-winning guitarist Manny Lopez and won the 2025 World Entertainment Award for “Best Instrumental Pop Album.”
The “Coming Home Concert” will benefit the Tunnel to Towers Foundation (t2t.org), a nonprofit
organization that provides essential aid to injured veterans and first responders. The show will feature Abu alongside longtime collaborators (and former members of Miami Sound Machine) producer/ guitarist Manny Lopez and acclaimed violinist Pedro Alfonso. The trio will perform selections from their discography set against a dynamic LED backdrop that will transform the evening into an immersive and cinematic experience.
Tunnel to Towers is a charity that means a lot to Abu. The organization helps injured heroes by building mortgage-free smart homes for injured military vets, paying off home mortgages for Gold Star families, and offering financial aid to the families of fallen law enforcement officer and firefighters. “I wanted to support an organization that truly pulls at my heartstrings, and Tunnel to Towers does just that,” says Abu. “I was living in Stuart when 9/11 happened, and I remember the fear and uncertainty we all felt.

Read on to learn more about Abu, his music, his passion for philanthropy, and his favorite local spots. eirinnabu.com
What is one of your favorite memories as a musician?
When Dolly Parton called me and asked if I wanted to “fly with the eagles”—her way of inviting me to record a song with her. We performed a duet that appeared on my album Sax in the Country
What is the meaning of your stage name, Eirinn Abu?
It means “Ireland forever” in Gaelic. One afternoon, I was at Paddy Cassidy’s Irish Pub in Cocoa Beach and met a man who suggested flipping through a history book on Ireland they kept behind the bar. After a while, he looked at me and said, “Your name should be ‘Eirinn Abu.’” It sounded good to me.
Where do you like to spend time while in Stuart?
I always stay at Pirate’s Cove Resort & Marina, and I love going window-shopping in historic downtown Stuart and strolling along the Riverwalk boardwalk. A stop at Kilwins chocolate and ice cream shop is a must.
Favorite local dining spots?
Conchy Joe’s Seafood and Crawdaddy’s in Jensen Beach are two of my favorite hangouts for fresh seafood. I’m also a fan of The Black Marlin and Riverwalk Cafe and Oyster Bar in Stuart. And nothing beats the grouper Reuben at Shrimper’s Grill & Raw Bar!
Where do you like to go locally for live music?
Conchy Joe’s features excellent Cajun music, and I enjoy seeing my friend Bobby Gangloff and his band, Bobby and the Blisters, perform at Sailor’s Return.
What’s one thing you really miss about living on the Treasure Coast?
The energy and the way everyone genuinely appreciates each other make you never feel like a stranger.

HOBE SOUND CONSERVATIONIST AND PHOTOGRAPHER BENJI STUDT IS A PASSIONATE ADVOCATE FOR THE GREAT OUTDOORS
enji Studt looks back fondly on childhood camping trips with his family to places like the Okefenokee Swamp on the Florida-Georgia border, the Florida Everglades, and the Florida Keys. “That really solidified my connection to wild Florida,” he says. Today, Studt shares his love of nature through education, advocacy, and photography, hoping to inspire others to connect with—and respect—the natural world around us.
Studt’s dad worked for the Army Corps of Engineers, which took the family back and forth between Florida and the D.C. area when Studt was a kid. “My father worked in wetland restoration and helping to write the original Comprehensive Everglades Restoration Plan (CERP),” says Studt, who now resides in Hobe Sound. “Swamps and wild Florida have always been close to my heart.”
Studt studied Environmental Science at the University of Florida and began his professional career in 2003 at the South Florida Water Management District, where he worked in wetland regulation. His job was to assess potential environmental impacts of projects like new marinas, roadways, and commercial developments. In 2006, he took a position with Palm Beach County Environmental Resources Management (ERM), where he had interned while a student at UF. He started in the Natural Areas division, tasked with managing and restoring the county’s natural areas. He was also a part of the prescribed fire team. “I came home and told my wife I was going to set the woods on fire, and she said, ‘No you’re not!’” he recalls with a laugh.
It was in 2010 that his passion for photography was ignited. His wife saw a photo of the iconic Spanish moss–covered live oak in the Kanapaha Prairie (just south of Gainesville) shot by renowned
Benji Studt shares his love for the region’s wild areas both as an avid nature photographer and in his work for Palm Beach County Environmental Resources Management.
STEVEN
nature photographer Mac Stone and wanted to buy it. The price tag was out of reach for the young couple, so Studt promised one day he would take a similar photo himself. He promptly set about teaching himself the art of photography, which he quickly learned was highly nuanced when it comes to nature photography specifically.
“Natural light is literally changing by the second, so being able to understand what is coming, anticipating changing conditions, and being able to execute in the moment is all so critical,” he says.
“In Florida, those factors are compounded by the fact that we have an extremely flat landscape. Here, the weather is our “mountains.”
The cloudscapes are incredible, and no two clouds or sunsets or sunrises are the same. You have to create compositions that tell a story on the fly, in real time, as the light is changing.”
The camera became a means for Studt to share his love of natural Florida. “I realized I love to tell stories about wild Florida because it is so misunderstood by so many people,” he says. “I use photography to show places that have a warped story, in a beautiful way that invites people in.”
After nine years in the Natural Areas division at ERM, Studt was asked to lead the agency’s outreach and science communications efforts, a position he still holds today. He describes his work as “translating science to communicate to people how special our natural places are.” In 2011, he spearheaded the production of Hidden Wild, a documentary that follows three local teenagers on an expedition to the most hidden landscapes in the Palm Beaches. And he is currently holding private viewings of a new documentary, Tracking Kites, which follows the journey of swallowtail kites and the people who study them over the course of six years. ERM worked with Avian Research and Conservation Institute and the
Palm Beach Zoo and Conservation Society on the film.
Outside of his professional work, Studt uses his in-depth knowledge of wild Florida to educate and inform the public on various issues. Many locals may recall the controversy that surrounded a proposal to build a golf course at Jonathan Dickinson State Park last year. Studt was one of many passionate individuals who stepped up to stop it from happening, using his social media platforms to inform the public about the negative effects the project could have on wildlife, their habitats, and the environs. “I would leave work and go right to J.D., this place that I love, to highlight what was at stake,” says Studt
of the videos he posted during that time. The proposal was eventually withdrawn, and public outcry led to new legislation to protect state parks across Florida (see “Untamed Beauty” on page 44 to learn more).
Studt continues to use photography to tell the stories of wild Florida and its beautiful natural areas, and he encourages people to learn about and experience it for themselves. “Go explore your backyard,” he says. “You can hop on your bike at Cypress Creek Natural Area [in Jupiter] and ride 20 miles without crossing a road. Only when people reconnect to the land can they understand the importance of keeping it healthy.” ❖

Wildlife encounters, cool creatures, and the perfect photo op
Local environmental issue that most concerns you right now:
Protecting the Bridge Road Corridor. Golf Digest has said that Hobe Sound is going to be the new golf capital of the world. I am hopeful that we can preserve some of the ranch land that provides unbelievable habitat for wildlife.
Coolest thing you’ve ever seen in nature:
We have two species of giant salamanders in Florida: the two-toed amphiuma and the greater siren. They grow up to 3 feet long, live in the muck of the swamp, and can go dormant for up to five years. They are like superheroes of the swamp that nobody even knows exist.
Strangest
animal encounter:
I was on a family trip to the Grand Tetons and Yellowstone, and we encountered a coyote on the prairie that was hunting moles. He would listen to them underground and pounce with his two front feet. We stopped and watched, and it was strange because the animal let us share his space while he ended up finding three mole snacks.
Favorite local spot to shoot photos:
Pine Glades Natural Area. I call it the “sunset mecca of the Palm Beaches” because it is wild, open marsh and prairie dotted with cypress trees. There is this incredible vista and water that provides reflection. Every photo is different.
Studt is pictured at the Loxahatchee Slough in Palm Beach Gardens, which is the county’s largest and most biologically diverse natural area.

ere’s something we don’t say enough: we live in a state made of miracles. Every day, the sun climbs up over the dunes, lights the mossy hammocks, catches on the brilliant green of the mangroves. And most
days, we’re too busy to notice.
Florida has 175 state parks, more than nearly any other state—not to mention three national parks (Everglades, Dry Tortugas, and Biscayne).
Six of those state parks stretch across the Treasure Coast like a green sash. These aren’t just picnic spots; they’re habitats for species that exist nowhere else. They’re classrooms, temples, escape hatches… reminders that the real Florida isn’t found behind a gated entrance.
Earlier this year, state officials quietly floated a plan to allow development on park lands—golf courses, hotels, pickleball courts, the usual suspects. The idea was simple: let’s monetize paradise. But the backlash was swift and loud, and for once, democracy did what it was supposed to. Locals organized. Protesters showed up with hand-painted signs. And in May, Governor Ron DeSantis signed a bill making it illegal to develop state park land without public input and layers of oversight.
So now what? Now we appreciate what we almost lost. We go hiking in the places where they wanted to pour concrete. We kayak the inlets they wanted to dredge. We bring bug spray and a cheap cooler and remember that Florida, for all its chaos, still has corners where wildness wins.
Here are 10 nearby state parks worth falling in love with again.
ATLANTIC RIDGE PRESERVE STATE PARK
There’s a quiet wildness to Atlantic Ridge, a kind of low whisper from the saw palmettos and longleaf pines as you move along the sandy trails. This park hasn’t been manicured or prettified, and that’s what makes it so beautiful. Covering 4,800 acres of pine flatwoods and hydric hammock, it’s one of those places where you can still get lost in the best way. The main trails are accessible by foot or bike, and a handful of them wind into the St. Lucie River floodplain, where red-shouldered hawks watch from above and deer scatter into the brush. Not many people come here, which means you might have it to yourself—just you, the wind, and a trail that feels like it’s waiting for someone to notice. 8120 SE Paulson Ave., Stuart

a different decade. Avalon’s shoreline has barely changed in a century—except maybe for the occasional snorkeler spotting sunken artifacts from the World War II amphibious training ground just offshore. Sea turtles love this place. So do snowy plovers and retirees with folding chairs and a paperback. It’s one of the few beaches in Florida that still feels unbothered, wild even, and that’s the point. This is where surfers go when the waves are right. Where anglers cast lines off the jetty at sunrise. Where families walk out past the dunes and discover a beach that still feels like a beach— no condos creeping up behind the palms, no umbrellas stacked five deep. Fort Pierce Inlet State Park comprises just 340 acres, but it packs in a lot: a tidal pool for snorkeling, mangrove-lined trails for paddling, and a stretch of sand that’s long enough to wander into solitude. On the west side of the park, a coastal hammock loop trail lets you disappear into the shade for a bit. And every once in a while, you might look up and see a gopher tortoise lumbering along, minding its own business. Just like you. 905 Shorewinds Drive, Fort Pierce
JOHN D. MACARTHUR BEACH STATE PARK
This is what it looks like when a barrier island is left to its own devices. MacArthur’s beaches feel primal—sand pines leaning toward the tide, ospreys overhead, and mangroves whispering to each other at the waterline. You’ll cross a winding boardwalk to reach the beach, or paddle out to Munyon Island, where raccoons have a little dominion of their own. The nature center is excellent, but the real magic is outside: nesting turtles, shell-covered shores, and the rare moment where you can hear nothing but surf and your own breath. 10900 Jack Nicklaus Drive, North Palm Beach
STATE PARK
If Florida had a national park equivalent to Yosemite, this would be it. At 11,500 acres, Jonathan Dickinson is massive, sprawling across pine flatwoods, coastal sandhills, and floodplain swamps—all of it dissected by the slow and winding Loxahatchee River. You can hike or bike for hours here and not see another soul, unless you count the Florida scrub jays, which you should. There’s an old Army base hidden in the woods, a pioneer trapper’s homestead on the riverbank, and a strange feeling that the real Florida is still breathing underfoot. 16450 SE Federal Hwy., Hobe Sound

OKEECHOBEE BATTLEFIELD HISTORIC STATE PARK
You won’t find nature trails or kayak launches here. What you will find is a field—a wide, unassuming patch of prairie land in Okeechobee that looks like any other stretch of central Florida. But this land remembers. In 1837, it was the site of one of the largest and bloodiest battles of the Second Seminole War. Today, it’s a quiet monument to that history. A paved walking loop outlines the battlefield, and interpretive signs tell the story of the Seminole warriors and U.S. troops who clashed here. Every January, reenactors return in full dress to honor the fight and its legacy. It’s not the most scenic park in Florida—but it might be one of the most important. 3500 SE 38th Ave., Okeechobee
SAVANNAS PRESERVE STATE PARK
Here’s your chance to see what Florida looked like before the strip malls and medians. Savannas Preserve is 7,000 acres of freshwater marsh and pine flatwoods, with wide-open skies and trails that thread through a habitat so old it feels sacred. You might see a gopher tortoise crossing
the path or a roseate spoonbill lifting off like something from a dream. This is also one of the last strongholds of the Florida scrub jay, a bird that doesn’t migrate or retreat—but just stays put and hopes we keep fighting for it. 2541 SE Walton Road, Port St. Lucie
SEABRANCH PRESERVE STATE PARK
Seabranch is the introvert of the group—less signage, fewer visitors, no gift shop, just you and the sound of the wind in the pines. The trails are sandy and unmarked, which means you’ll need a little sense of direction and a lot of respect. What you’ll find here is the Treasure Coast as it once was: wildflowers on the ridge, gopher tortoises sunning

themselves, and bald eagles watching from above. Bring a compass. Leave with a better sense of where you are.

ST. LUCIE INLET PRESERVE STATE PARK
You can’t drive here; you have to boat in, which makes arriving feel like a secret. St. Lucie Inlet Preserve is 928 acres of mangroves, dunes, and dense coastal hammock, all wrapped around a crescent of white sand and blue water. There’s a boardwalk that stretches from dock to beach, and just offshore, a reef where snorkelers chase flashes of color through the sea. If you’re lucky, you’ll spot a manatee. If you’re quieter, maybe even a bobcat. But even if you see nothing but sun and sky, that’s enough. Jupiter Island
The State Park Preservation Act
Downtown Stuart hosts several special events throughout the year. Mark your calendar for 2024!
The threat came quiet at first—a mention at a meeting, a stray document outlining proposals to build golf courses, event spaces, and lodges inside Florida’s state parks. When Casey Darling Kniffin of the Florida Wildlife Federation got a call about it, she couldn’t believe it could be true. “My first reaction was like, no way,” she recalls. “They couldn’t. They wouldn’t.” Then she saw the plans for herself. And it wasn’t just Jonathan Dickinson. It was nine parks across the state.
The Florida Department of Environmental Protection announced its Great Outdoors Initiative in August 2024, stating (in part) that it would increase the number of outdoor recreation opportunities available in Florida’s state parks. Unfortunately, those rec opportunities included building things like pickleball and golf courses in some parks.
Word spread fast. On the Treasure Coast, where development plans first surfaced, the movement became a rallying cry. Kniffin helped organize a social media campaign. Environmental activist Jessica Namath started the Protect JDSP group on Facebook—which quickly grew to 25,000 followers (a number that has nearly doubled since). Wildlife advocate Jeff Corwin wrote op-eds in local papers and appeared on TV speaking out against the developments. Thousands of people wrote letters, showed up at protests, and shared maps of endangered habitats within the parks. Says Kniffin: “Floridians came together—and they spoke very loudly.”
ST. SEBASTIAN RIVER PRESERVE STATE PARK
extent of Florida’s Coral Reef, so it is a great destination for snorkeling and diving.
Opposite page: Savannas Preserve State Park protects some of southeast Florida’s last remaining contiguous coastal scrubs, making it an ideal habitat for the elusive Florida scrub jay, which is federally listed as threatened.
If you want to see what Old Florida looked like before the highways, before the condos, before the last orange grove gave way to pavement—come here. St. Sebastian River Preserve stretches over 22,000 acres, one of the largest intact longleaf pine habitats in the state. The park straddles the Brevard County–Indian River County line, with trails that cut through pine flatwoods, cypress domes, and seasonal wetlands. It’s a birder’s paradise—red-cockaded woodpeckers nest in the pines, and swallow-tailed kites soar overhead in the spring. You can spot wild turkeys, river otters, even the occasional black bear if you’re lucky and quiet enough. Horseback riders and mountain bikers share some of the 60 miles of trails, and a scenic drive loops through the preserve if you’re just here for the views. But give yourself time. This is not a place to rush. 1000 Buffer Preserve Drive, Fellsmere ❖
And we were heard. Local legislators responded with the State Park Preservation Act, which Governor Ron DeSantis signed in the spring. The act, which went into effect in July, strengthens protections, offering assurances that our parks won’t become future commercial developments. In part, the act states that the Florida DEP shall “manage state parks and preserves in a manner that will provide the greatest combination of benefits to the public and to the land’s natural resources, as well as for conservation-based recreational uses, public access, Florida heritage and wildlife viewing, and scientific research.” It also requires a public hearing for all updated land management plans.
It is a win to be sure—for nature, its inhabitants, and the locals who care. Says Eve Samples, executive director of Friends of the Everglades: “The fight to protect Florida’s state parks demonstrated how much Floridians cherish our lands. “It was really a remarkable example of the public rising up.” Read the bill in its entirety at flsenate.gov/session/bill/2025/80

Guava and Honey SORBET
THISREFRESHING DESSERT IS AT ONCE LIGHT AND RICH WITH TROPICAL F VORS
INGREDIENTS
6 large guavas
3/4 cup honey or agave syrup
3/4 cup filtered water
Juice of 1 large orange
Juice of 2 limes
COASTAL WETLANDS, AND SWAMPY MARSHES MAKE UP THE DIVERSE SOUTH FLORIDA TERRAIN. THIS BACKYARD JUNGLE IS THE PERFECT HOME FOR A TREASURE TROVE OF EXOTIC FRUITS AND PLANTS. THE LUSCIOUS GUAVA, TART HOG PLUM, WHOLESOME SEMINOLE PUMPKIN, TANGY SEA GRAPE, CREAMY FLORIDA AVOCADO, AND STRIKING BEAUTY BERRY ARE AMONG THE REGION’S HOMEGROWN BOUNTY. ON THE NEXT FEW PAGES, WE CELEBRATE THE SUNSHINE STATE’S VIBRANT FLORA WITH RECIPES THAT SPOTLIGHT THESE UNIQUE INGREDIENTS.
More About Guava
• Halve the guavas and scrape out all the pulp. Measure 3/4 cup of the pulp. In a small saucepan, combine the honey or agave syrup and water and bring to a boil. Remove from heat and stir in the guava pulp, orange juice, and lime juice. Set aside to cool.
Guava trees have a long history in the southern part of the state, with Spanish explorers introducing them in the early sixteenth century. Guava is typically harvested from fall to early winter. Incredibly versatile, guava can be used in a range of dishes including preserves, smoothies, ices, and pastries.
• Add mixture to a blender and pulse. Pour the syrup into a resealable container and chill for at least 2 hours. Stir the syrup and then pour it into an ice cream machine and churn according to the manufacturer’s instructions. Alternatively, pour the mixture into a shallow glass dish and freeze for 4 hours, scraping the mixture every 30 minutes with the tines of a fork. Serve in a coupe glass or freeze directly into the halved guava shells.
Sunshine Citrus AVOCADO SALAD
THIS SA D BRINGS TOGETHER THE CREAMINESS OF FLORIDA AVOCADO, THE TANGINESS OF LOCAL CITRUS, AND THE CRUNCH OF WATERMELON RADISHES
INGREDIENTS
1/2 cup local greens and sprouts
1 grapefruit, peeled and segmented
1 orange, peeled and segmented
1 Meyer lemon, peeled and segmented
1 Florida avocado, thinly sliced
1 medium watermelon radish, thinly sliced
1 tbsp. quick-pickled red onions
1/4 cup blackberries
Salt and pepper to taste
Honey lime vinaigrette (recipe below)
1 tbsp. black sesame seeds
• Layer the greens and sprouts, segmented citrus, avocado slices, and watermelon radishes on a plate. Add the onions and blackberries and season with salt and pepper. Drizzle with honey lime vinaigrette and finish with a peppering of black sesame seeds for contrast.
• Whisk together the lime juice, honey, garlic, salt, and pepper. Whisk in the olive oil until the dressing is emulsified.
More About Florida Avocados
Known for their large size and smooth skin, Florida avocados have been cultivated in the state since pre-Columbian times, when they were introduced by indigenous people from the Caribbean. Harvested from June to January, Florida avocados are great in smoothies, guacamole, and salads.
More About Seminole Pumpkins
The Seminole Tribe of Florida has cultivated Seminole pumpkins for centuries. From late summer to early winter, look for mature pumpkins with a vibrant orange color. The sweet Seminole pumpkin can be enjoyed in a variety of dishes, including in soups and pies, or roasted as a side vegetable.
Seminole Pumpkin SOUP
SERVED WITH A DOLLOP OF SOUR CREAM AND TOASTED PUMPKIN SEEDS, THIS VELVETY SOUP SHOWCASES THIS NATIVE PUMPKIN’S CREAMY TEXTURE AND NATURAL SWEETNESS
INGREDIENTS
1 4-lb. Seminole pumpkin
4 tbsp. olive oil (divided)
1 large yellow onion, chopped
4 large garlic cloves, minced
4 cups vegetable broth
1/2 tsp. cumin
1/2 tsp. nutmeg
Salt and pepper to taste
1/2 cup heavy cream or full-fat coconut milk
Sour cream and toasted pumpkin seeds to garnish
• Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper. Halve the pumpkin and slice each half once more. Brush the flesh with 1 tbsp. olive oil and place the pumpkin slices cut side down on the baking sheet. Roast for 35 to 40 minutes or until the flesh is easily pierced with a fork. Set aside to cool.
• Once cooled, scoop out the flesh. In a pot, add the remaining 3 tbsp. olive oil and sauté the onions and garlic over medium heat until they are translucent. Add the pumpkin flesh, vegetable broth, cumin, nutmeg, salt, and pepper and simmer for 15 minutes until the flavors meld together.
• Transfer everything to a blender and puree the soup until smooth. Stir in the heavy cream and adjust the seasoning if necessary. Serve the soup hot with a dollop of sour cream and a sprinkle of toasted pumpkin seeds for added crunch.
Pickled Wild Plums AND SEA GRAPES
A DELICIOUS MINGLING OF
A DELICIOUS MINGLING OF SWEET, SOUR, AND SALTY, THIS COMBINATION OF WILD PLUMS, SEA GRAPES, ONIONS, AND PICKLING BLEND MIGHT BE THE MOST AUTHENTIC TASTE OF THE STATE
INGREDIENTS
2 lbs. wild plums, halved
2 lbs. sea grapes
2 medium red onions, sliced
2 cups water
2 cups red wine vinegar
2 1/2 cups sugar
2 cinnamon sticks
8 whole allspice
4 whole cloves 1/2 tsp. salt
• Pack the plum halves, sea grapes, and red onion slices into sterilized canning jars. In a large stainlesssteel saucepan, combine the water and red wine vinegar and bring to a boil. Add the sugar, cinnamon sticks, allspice, cloves, and salt. Return to boiling, stirring until sugar dissolves.
• Remove from heat and pour hot liquid over the plums, sea grapes, and red onions in jars, leaving a 1/4-inch headspace. Adjust lids. Process filled jars in a boilingwater canner for 5 minutes. Remove jars from canner and let cool. Keep on the counter for 2 days, then transfer to the refrigerator for 2 weeks.
More About Sea Grapes and Hog Plums
Sea grapes have been a popular fruit along Florida’s coastline for centuries. The clusters of red, grape-like fruits are typically found on sandy shores and barrier islands, mainly from late summer to fall. Just remember that like mangroves, sea grapes growing along Florida’s coast are protected and cannot be picked and consumed without a permit. Hog plums, also known as wild or Spanish plums, are also indigenous to Florida. Both have a long history of consumption by Native American tribes.
EYES NATURE ON
These local photographers are passionate about our planet. They spend their days on land, in water, even traipsing through swamps to document the wonders of nature. Their images shine a light on the magic happening all around us, and they work with various research organizations to help protect that magic. By Valerie Staggs

JEFF BIEGE
JEFF BIEGE:
The Wave Catcher
Jeff Biege was 10 when he got his first glimpse of the wonders of the ocean.
“My first time in the water snorkeling was at Catalina Island [in California],” recalls the Hobe Sound resident. “We saw a school of leopard sharks—I was terrified.” Despite his initial fear, Biege soon became an avid snorkeler and surfer, moving to Florida at age 18 to take advantage of the warmer ocean waters.
He spent some time in the surfing industry before eventually founding his own kiteboarding company in 2002. That’s when he got the bug to learn photography. He bought a good camera, took a few classes, and started shooting. “I was mainly shooting empty breaking waves,” he says. “Being a surfer, that really called me.” Today, he sells his stunning wave photographs both on his website and at art shows.
He also lends his photographic talent to InWater Research Group (inwater.org), a group of local scientists who collect data on sea turtles and share that data worldwide. “I’ve spent 1,000 hours in the water with sea turtles, but to actually be involved in the science is really cool,” Biege says. He also volunteers regularly for beach cleanups and is passionate about removing plastics from the ocean. “Every time I get out of the water, my board shorts are covered in plastics,” he says. “I have even taken a piece of plastic away from a sea turtle who was about to eat it.”
Asked to name his favorite underwater subject, Biege is quick to reply: “I love shooting manatees!” he says. “There are very few animals you can have that kind of interaction with, that genuinely like, and want to be around, people.” jeffbiege.com; @jeffbiegephotography
Biege spends many mornings and evenings photographing waves during sunrise and sunset in Hobe Sound, Stuart, Juno Beach, and other local areas. In addition to photographing aquatic animals such as manatees and turtles, Biege is passionate about ocean conservation. He regularly participates in beach cleanups and contributes photography to InWater Research Group, which aims to foster marine and coastal conservation through integrated research and education.
LEAH VOSS:
The Swamp Doc
On any given day, Leah Voss can be found thigh deep in swamp water in the middle of the Florida Everglades, armed only with her camera. In areas where many Floridians wouldn’t dare venture, the Stuart resident and multimedia producer for Friends of the Everglades has found her passion for telling stories of the unique water world right in our backyard.
Originally from Ohio, Voss grew up hiking nature trails amid gorges and waterfalls. “I always had a love of nature,” she says. After graduating from Western Kentucky University with a degree in photojournalism in 2014, she moved to Stuart and spent 10 years working as a photojournalist for Treasure Coast Newspapers (TC Palm). “I had a pretty cool story in 2019 in Big Cypress where I went out with federal biologists who track pythons,” recalls Voss of one of her first introductions to the Florida Everglades. “That was a pretty intense day.” Her images landed on the cover of USA Today
In 2022, she was recruited by the nonprofit Friends of the Everglades (everglades.org) as a multimedia producer. Today, she designs graphics, manages social media, produces video stories, and shoots nature photos in an effort to educate the public about Florida’s unique ecosystems.
Voss hopes that through her visual storytelling, people will get to experience places like the Everglades for themselves and, in turn, learn more about these precious areas and their inhabitants.
“Photographing the wildlife shows people how alive these areas are and how it’s a home for so many species,” says Voss. “We are all part of the earth. Go outside and appreciate it—then fight to protect it.” leahvoss.com; @vossvisuals
Voss specializes in the wild flora and fauna of the Florida Everglades. Some of her favorite images include (clockwise from above): juvenile alligators on the Anhinga Trail; muhly grass in bloom at Everglades National Park; a great egret chick at the Wakodahatchee Wetlands; an alligator paw on the Anhinga Trail; and Everglades National Park’s famous Z tree, a beloved subject among nature photographers.
Birds and their unique behaviors are a central focus of Cook’s photography.
Clockwise from above: a great egret shows off his breeding plumage as he tries to attract a mate at a nesting colony in the wilderness region of Everglades National Park; two swallow-tailed kites roost on snags in the Loxahatchee Slough; a white ibis forages for crayfish in the wetlands of the Pine Glades Natural Area; a flock of wild flamingos in Everglades National Park; two burrowing owl nestlings hang out at the entrance to their burrow on the edge of Everglades National Park.
DR. MARK COOK:
The Birdman
Dr. Mark Cook says that some of the best times of his life were spent on a remote island in Scotland, living in a lighthouse surrounded by puffins and guillemots. “One of the most memorable wildlife moments I’ve had in my life was watching hundreds of thousands of baby guillemots being called by their fathers and launching themselves off cliffs to meet them,” says Cook. The guillemot, a species of seabird, is common in the United Kingdom, where Cook grew up and went to school, earning a bachelor’s degree in marine zoology, a master’s in ecology, and a PhD in avian behavioral ecology.
Cook, who resides in Hobe Sound, has worked with the South Florida Water Management District (sfwmd.gov) for more than two decades, conducting restoration-related research in the Florida Everglades. Much of his work entails studying (and photographing) birds. “Wading birds are an excellent indicator species because they are very sensitive to hydrology,” he says. By studying the birds’ behavior, his team can gauge whether the agency’s efforts to restore the water in the Everglades are headed in the right direction. “The reason we are spending billions on Everglades restoration is that we’ve really messed things up,” says Cook. “We need to undo the damage we have done.”
Cook took up photography in 2013 to better explain his science. “I noticed that when I presented my science with photos, people actually listened to me and were far more engaged,” he says. He regularly posts his photos on social media to tell the story of the work he does. “I’m using the photos to tell a story of what is going on in the Everglades and to educate people on what we are doing and why,” he says. “It’s all about impact. Nature itself is critical to our survival.” markiancookphotography. com; @lightswitchaddict ❖

PASSION PLAY
AN AUTHENTIC ITALIAN DINING EXPERIENCE AWAITS AT STUART’S NEWEST GEM, GIORDI
BY VALERIE STAGGS
When Alberto Tonelli opened Giordi in Stuart in 2022, he wanted his restaurant to be more than just what was on the menu. “It’s amazing,” he says. “I get to create memories for customers, I get to practice my passion, which is food and wine, and most importantly, I get to make memories with my family every day.”
Twenty-seven-year-old Tonelli is following in the footsteps of his father, Giordano “Giordi” Tonelli, the restaurant’s namesake. The family patriarch is a successful restaurateur who opened three restaurants overseas (two
Octopus carpaccio; terra + mare.
FLAVOR
in his hometown of Milan, Italy and one in Spain) before moving his family to Florida in 2009. The family now works together at Giordi—Tonelli’s mom, Simona, and wife, Amanda, in the dining room and his dad, Chef Giordi, overseeing kitchen operations. Tonelli’s sister, Alessandra, oversees the marketing, while Tonelli himself is the general manager.
Tonelli describes Giordi’s menu as “a rendition of very traditional Italian recipes from Italy that showcase the ingredients of every region.” He notes: “We have modernized the recipes a bit with a complexity of flavor profiles.”
Standout dishes include the eggplant gnocchi, which, as the name implies, uses eggplant for the gnocchi instead of potato. “The eggplant makes it lighter than traditional gnocchi, and we finish it off with a pomodoro sauce and a little basil on top,” says Tonelli. The penne Montalcino, a pasta cooked in a red
sauce made of Rosso di Montalcino wine with bites of sweet sausage, cherry tomatoes, Parmesan, and arugula, is also very popular. For the house pork chop, Tonelli takes inspiration from the northern region of Italy. The dish features a 24-ounce Tomahawk Berkshire pork chop served with truffle cheese and seasonal mushrooms.
Starters are equally impressive—octopus or beef carpaccio, steak tartare, and pate de fois gras, to name a few. Mouthwatering desserts include tortino al pistachio, Belgian chocolate mousse, and mixed berry panna cotta.
The wine program at Giordi is stellar—the restaurant received an Award of Excellence from Wine Spectator in July for its unique and comprehensive wine list, which includes bottles from Italy, France, and the United States. Giordi also offers a seasonal tasting menu (wine pairings optional) featuring dishes made with the season’s freshest ingredients. The tasting menu is served only at the eight-seat chef’s table, which can be booked in advance (seats are sold individually).
Whether you are enjoying an intimate dinner, sampling the tasting menu, or popping in for dessert, Tonelli aims to give everyone who comes to Giordi an authentic Italian dining experience from start to finish without having to leave the Treasure Coast. As Tonellli puts it: “Hopefully, we can save you the money for a plane ticket to Italy.” 600 SE Indian St. Suite 5, Stuart; giordiusa.com; 772.771.3160 ❖

FRESH VISION
AQUASAN SERVES UP INVENTIVE PAN-ASIAN FARE WITH A TIKI TWIST
BY SARAH WOLF
Juno Beach just got a little bit hotter— and a lot more flavorful. Set in the reimagined former AquaGrille space, Aquasan blends tiki and Polynesian charm with clean, creative, and craveable Pan-Asian cuisine.
The new concept, which opened in June, was made possible by Jupiter resident Patrik Waxin, who also owns Waxin’s in Palm Beach Gardens and Naples. Inspired by other successful Pan-Asian concepts like Nobu, Waxin wanted to bring healthful, high-end Asian fare to South Florida without sacrificing approachability—or flavor. “Many successful Asian restaurants offer a lot of unhealthy fried food,” says Waxin. “I like to eat a full dinner without feeling like I’m betraying my body. We are really trying to spend money on quality material.”
food and beverage concept.
Waxin met restaurateur Stephen Asprinio, the former owner of AquaGrille, five years ago. (A Top Chef alum, Asprinio is the conceptual visionary behind 1000 North as well as the four venues at Charlie & Joe’s at Love Street.) Waxin was a regular at AquaGrille, and he recognized the restaurant’s potential when it ran into financial trouble. He purchased the property and hired Asprinio as a consultant, drawing on his creative expertise to support the development of Aquasan’s
At the helm of Aquasan’s inventive menu is Executive Chef Nicole Fey— “the passion and heart” of the menu, says Waxin. Fey populated the menu with an eclectic mix of small plates designed to be shared family-style— everything from delicate sashimi and crudo to wood-grilled vegetable creations and fresh-caught local seafood. Think: truffle teriyaki asparagus, ube chicken and waffle sliders (the ube, or Filipino sweet potato, gives the waffles their signature purple color), and the Lady in Red sushi roll, dreamed up during a slap-happy late-night brainstorming session with Asprinio. “We weren’t satisfied until we were 100 percent satisfied,” Fey says of their recipe-testing marathon, which fine-tuned everything from the cucumber salad to a bold passion fruit beurre blanc. The beverage program is equally curated, featuring tropical tiki cocktails, a lineup of artisan Caribbean rums, and a globally inspired wine and sake list.
The space underwent a Polynesian-style revamp, complete with hand-carved wood and a tiki bar dubbed The Big Kahuna. It’s all part of an experience meant to bridge the gap between fine dining and the best tropical dinner party you’ve ever been to. And with expansion plans already on the horizon, Aquasan isn’t just making waves—it’s setting the tone for what’s next in coastal cuisine. 14121 U.S. Hwy. 1, Juno Beach; aquasanrestaurant.com; 561.345.3684 ❖
