The Swizzle Inn pairs one of the best fish sandwich presentations with another island staple, the Rum Swizzle. The Swizzle Inn’s fish sandwich features a huge portion of local grilled wahoo coated in island seasonings, spicy slaw, lettuce, tomato, and their home-made tartar sauce, all piled high on local raisin bread. The Rum Swizzle, Bermuda’s premier cocktail with a blend of Goslings rums and fruit juices — typically lemon, orange, and pineapple — sweetened with falernum, is the perfect fish sandwich complement. Island lore claims this bright, cheery drink was invented at the Swizzle Inn, with the first one served there in 1932; so it’s a natural destination for those who want to sample the national drink of Bermuda. CODE NAME, EMBODIES THE STYLE, GRACE, AND SOPHISTICATION OF HIS PROTÉGÉ’S FICTIONAL CREATION.

SIR WILLIAM STEPHENSON, a British intelligence agent who established Camp X, a training school to prepare covert agents for clandestine operations, is widely believed to be the inspiration for the James Bond character created by Ian Fleming — who himself is believed to have trained at Camp X. Stephenson went on to head the Allied Forces’ Atlantic censorship station based out of the Hamilton Princess during World War II. He took up residence in Bermuda after WWII, and eventually passed away at his home in Tucker’s Town, called Goldeneye Estate.

Hamilton Princess’ Intrepid, which borrows its moniker from Stephenson’s British intelligence code name, embodies the style, grace, and sophistication of his protégé’s fictional creation. Exclusively serving dinner, Intrepid is an upscale steak, seafood, and raw bar restaurant spearheaded by the Hamilton Princess’ new Executive Chef de Cuisine, Antwan Ellis.

Intrepid is situated in the hotel’s Gazebo Wing, offering a refined steakhouse atmosphere with panoramic harbour views and stylish floor-to-ceiling art deco décor. The new menu’s focus is on steak, including expertly dry aged prime cuts. Bermuda’s crystal-blue waters are home to some of the freshest ingredients around. Aurora restaurant at the Newstead Belmont Hills Golf Resort & Spa, steps into the kitchen and draws inspiration from one of the most incredible restaurant views on the island.

Aurora sits just above Hamilton Harbour and offers a panoramic view across the harbour and the Great Sound, out towards Dockyard and the North Shore, where much of Bermuda’s oceanic bounty is harvested.

From season to season, Bermuda is rich in fresh produce and fish. The Newcastle Upon-Tyne native has drawn much of his inspiration from this proliferation of local goods when creating his seasonal menus at the two-time “Best of Bermuda” award–winning seafood restaurant.

Living in Bermuda for a decade has transformed his cooking, whether it’s spending a day out on the ocean with veteran commercial fishermen and learning the tricks of their trade or relishing in seasonal ingredients such as summer’s sweet Bermuda corn and

fresh goat cheese or winter’s roadside loquats and prickly pears, which have all found their way into his upscale, seafood-forward dishes.

“The Bermudian lifestyle is enviable,” he says. “Pink sands, bluest of oceans, and delicious cuisine. After being on the island for almost a decade now, it’s hard to imagine life any other way, creating new dishes every day and incorporating interesting flavours with all the thriving wildlife that the island has to offer.”

While Chef Adam brings European influences from French and Italian cooking to the Aurora kitchen, the chefs’ diverse ethnic backgrounds allow them to incorporate these influences into the dishes, from Nepalese and Thai to Mexican, keeping the menus exciting and fresh. The menus change two or three times a year, featuring diverse cuisines and delightful reinventions of classic Bermuda dishes like codfish and potatoes.

Being able to sit alfresco and watch a spectacular sunset goes hand in hand with highlighting the island’s freshest ingredients to create a full culinary journey.

“The Aurora team ensures guests are treated to unaltered and fresh items such as the spiny Bermuda lobster, guinea chicks, an array of Bermuda reef fish, and fresh Bermuda

vegetables,” says Chef Adam. “Our menus have been divided by diverse cuisines, cooking techniques, and preparation styles, as well as highlighting hand-crafted items.”

THE BERMUDA RUM SWIZZLE

DISCOVER THE HISTORY OF THIS ICONIC ISLAND COCKTAIL.

THE BERMUDA Rum Swizzle is the island’s most celebrated cocktail and a drink locals are passionate about. Although some would debate the merit of the popular Dark ’n Stormy cocktail as the island favourite, there’s one thing most people will agree on: Both drinks owe their success

and popularity to the Goslings Black Seal Rum.

The classification of the drink as a “Swizzle” refers to the drink’s preparation rather than its ingredients. In the early 1900s, Bermudians would use whatever was available locally to create

the cocktail, most often using a combination of Goslings Black Seal Rum and Goslings Barbados Rum with local citrus, Falernum (a rum-based syrup with lime and spices), and Angostura bitters. They would use a swizzle stick made from the allspice tree to froth the mixture.

The Bermuda Rum Swizzle is deeply ingrained in Bermudian culture and is often served at social gatherings, sporting events, and public holidays. Countless locals have worked to perfect their own versions of the drink, resulting in unique recipes served across the island in restaurants, bars, backyards, and beaches where no two swizzles are the same.

One of the most renowned Rum Swizzle makers was the late Sheila West Gosling, dubbed the “Washing Machine Queen.” In the 1960s, she became famous for her unique method of making Rum Swizzle. She made the drink in her brand-new Hoover washing machine at a party she hosted at her Shelly Bay home following a tennis match. West Gosling’s idea was a hit, and her washingmachine Rum Swizzle became a popular tradition. In the 1970s,

she received an upgraded Maytag wringer washing machine as a gift from her three children. The Maytag wringer’s agitator served as a swizzle stick, mixing and frothing the ingredients. She also used the wringer to juice her citrus right into the cocktail. Today, the Goslings keep her Maytag washing machine, which still works and has become a popular tourist attraction. Visitors from all over the world have sampled the iconic Maytag machine’s Rum Swizzle.

The historic Swizzle Inn Restaurant in Bailey’s Bay, which dates to 1932, is known for serving a famous local swizzle. Their catchy slogan, “Swizzle In and Swagger Out,” has become synonymous with the establishment, which is still family-run.

9 Parishes Rum Swizzle, a ready-to-drink version of the Bermuda Rum Swizzle, is now available in three different sizes. Chris Furbert Jr. spent almost 10 years perfecting his recipe and started bottling and selling it in 2017 at various locations across the island, including the airport. Visitors often purchase it as a souvenir to take home to family and friends.

Nannini Häagen-Dazs Ice Cream Parlour in Royal Naval Dockyard hits the spot with ice creams, sorbets, frozen yoghurts, sundaes, and milkshakes to choose from. Also in Dockyard, you can pick up a popsicle from Duch Pops, Bermuda’s first home-made popsicle venture that blends all-natural flavours with refreshingly sweet and oh-so-delicious results.

Bring Bermuda’s sweetness home with you in the form of perfectly firm yet light and airy sugar cookies. Confections brings the beach feel to their creations with sugar sprinkles that resemble Bermuda pink sand.

In St. George’s, Ital Beverages serves up fresh, hand-crafted juices with added health benefits from ingredients like lemongrass and hibiscus.

Perhaps the most iconic indulgence is the Bermuda rum cake. These moist, spirit-soaked Bundt cakes are prevalent on the island.

BERMUDA RESTAURANT WEEKS

DISCOVER TANTALISING EATS AND IMMERSE YOURSELF IN BERMUDA’S CULTURE AT THE ANNUAL RESTAURANT WEEKS, FROM MID-JANUARY THROUGH THE END OF FEBRUARY.

OVER SIX WEEKS, visitors and locals can experience a variety of culinary offerings, exclusive tasting menus, and unique experiences from some of Bermuda’s best restaurants and chefs. With over 40 participating restaurants across the island, guests can indulge in prix-fixe two-course lunches or threecourse dinners, either dine-in or takeout.

“Bermuda Restaurant Weeks has been a staple on our annual calendar for over a decade. Restaurateurs from around the island look forward to the opportunity to highlight local ingredients and unique Bermuda flavours whilst presenting fresh twists on Bermuda’s culinary heritage,” says Tashae Thompson, VP of experiences at the Bermuda Tourism Authority (BTA).

The 2023 Restaurant Weeks commenced with the highly anticipated return of the Celebrity Chef VIP Experience with Top Chef contestant Dawn Burrell. Before dinner, ticket holders sipped on specialty-crafted cocktails and explored the interactive exhibits at the Bermuda Underwater Exploration Institute (BUEI), complete with a theatrical performance. For dinner, guests enjoyed a curated, wine-paired fourcourse meal prepared by Chef Burrell, known for her masterful way of fusing African and Asian flavours with locally harvested ingredients.

But Burrell isn’t just known for her knife skills. Before becoming a chef, she had a successful career as a track and field athlete. In 1997 and 1998, she won the long jump title at the USA Indoor Track and Field Championships and competed in international championships, including the 2020 Sydney Olympics. Her athletic career culminated when she won the gold medal at the 2001 IAAF World Indoor Championships in Lisbon with a jump of 7.03 metres, beating her personal best.

After retiring from track and field, she leaned into her passion for food and attended the Art Institute of Houston to study culinary arts. She perfected her cooking skills alongside Chef Tom Aikens in London and Monica Pope in Houston. She then served as sous-chef at award-winning Uchi in Austin before becoming the head chef at the upscale soul food restaurant Kulture

in downtown Houston. In 2020, she was named a semifinalist for the James Beard Foundation Award, “Best Chef: Texas”; and she’s also appeared on popular cooking shows like Cutthroat Kitchen, Chopped, Man vs. Master, and, of course, Top Chef: Portland
