TOP CHEFS OF CALIFORNIA

IN HIS OWN WORDS WHAT KIND OF EXPERIENCE ARE YOU TRYING TO CREATE FOR YOUR GUESTS?

WHERE DO YOU FIND INSPIRATION OUTSIDE THE KITCHEN?

At The Park Club, I'm creating an experience that feels elevated but effortless. It's luxury without intimidation. I want members to feel taken care of from the moment they sit down, where every detail, from pacing to plating, feels natural and intentional. It's about delivering something memorable, but also something they genuinely enjoy, not just admire. There's a balance between comfort and sophistication. You can have a perfect crudo, a beautifully executed pasta, or even a great burger, but it all has to feel like it belongs in a cohesive, thoughtful experience.

Living in Costa Mesa, I'm constantly inspired by California's diversity, produce, culture, and lifestyle. Outside the kitchen, I look at design, hospitality, and travel. Places that understand flow, energy, and how people actually want to experience a space. Even something like the feeling of a great lounge or a well-run club influences how I think about a menu. And honestly, a lot of inspiration comes from the members themselves and what they crave, what excites them, and how dining is evolving in a social setting.

WHAT SEPARATES A GOOD DISH FROM A GREAT ONE?

A GOOD DISH IS TECHNICALLY SOUND. A GREAT DISH CONNECTS." 71

A good dish is technically sound. A great dish connects. It comes down to intention and balance. Every element on the plate needs a purpose, but it also has to come together in a way that feels seamless, not overworked. For me, a great dish also has clarity. You taste it, and it makes sense immediately, but there's still depth that keeps you thinking about it after. That's what makes people come back.
