Slow-cooked perfection “F
amily is the most important thing,” said Jose Uriarte, owner of Gordo Burrito’s three locations. It’s a mantra he follows closely—while Jose oversees operations at the main restaurant and home kitchen, which shares a storefront with a gas station on East Eighth Street a stone’s throw from Highway 99, his brothers Carlos and Jorge run two taco trucks located at Eighth and Pine Streets and 20th Street and Park Avenue. The various locations are largely staffed by family and friends—daughter Cecilia can usually be found running the register at the main location and PA I D
Jose’s wife is also on hand most mornings. Gordo’s menu reflects the Uriarte family’s roots on Mexico’s Pacific coast, particularly in its emphasis on delectable shrimp offerings. Gordo’s full array of shrimp dishes, from tacos to tortas and nachos, are made with fresh shrimp delivered three times weekly. “We even make things not on the menu, if the customer wants,” he said, noting ultra-spicy camarones ala diabla are a favorite among those who know to ask. The menu includes a full range of Mexican favorites, including fish and steak dishes. Of particular note are their delicious pork dishes—carnitas and al pastor slow cooked to melt-in-your-mouth perfection.

Under Jones’ direction, the longtime fine dining destination is getting a major facelift with menu improvements and a new name—Blue Flame Steakhouse and Seafood Grill. But regulars need not worry; the Blue Flame still offers Gooney favorites like prime rib, crab cakes and chicken Marsala and Jones emphasizes that all menu items are prepared with fresh (never frozen) ingredients like organic, locally-grown produce, grassNoelle Miller

New owners strive to preserve special touch Kelly Vadney

n order to ensure the continued success of Red Tavern, a Chico institution for 15 years, new owners Kelly and Michael Vadney committed to keeping things largely as they are when they assumed ownership in mid-August. “We kept all of the staff, they’re pretty much what makes the restaurant run,” Kelly said. “We still communicate with the old owners [Craig Thomas and Maria Venturino, who also own Farm Star Pizza] almost daily, and they’ve been a great help during the transition.” “It’s been relatively easy for us to take over
because everything was in place,” Michael said. “We will continue Red Tavern’s tradition of buying local, high-quality seasonal ingredients and having our excellent, creative kitchen staff transform them into delicious dishes.” The newlywed couple recently relocated to Chico from Huntington Beach. Mike grew up in the Vina area and wanted to get back to his roots and Kelly has 13 years experience in the restaurant business. The Red Tavern is known for its ever-evolving menu focused on fresh, local ingredients and highend American and Mediterranean cuisine. One of the few changes the Vadney’s have instituted is the addition of several small, $8 to $10 dishes; Kelly said she hopes this will make the Red Tavern more than a special occasion destination, but also a place to grab a glass of wine and a bite on any day. hen Josh Snider attended Chico State several years ago, he felt downtown Chico’s bar scene left plenty to be desired in the realm of customer service. “You were always treated like you owe them when you walk in, they’re bending your ID, they’re questioning you, they’re treating you like part of the masses,” he said. So when Snider and fellow bartender Josh Marks purchased Bella’s Sports Pub a little over three years ago, they committed to creating a welcoming atmosphere. “We try to be the friendliest bar in Chico,” Marks said. The pair tended the bar at Bella’s through their college careers and shared managerial duties shortly before becoming owners. Since the purchase, Snider and Marks have made some notable design changes—namely, replacing the carpet with hardwood floors—and overhauled the menu. “I worked with S&S Produce to help build our menu with local products and our own touch,” Snider said. 16 DINING GUIDE

Their efforts have resulted in arguably the best chicken wings in Chico and also a fantastic array of gourmet burgers. For Snider, the food is what sets Bella’s apart in the downtown bar scene, which often settles with “throwing some frozen stuff in the deep fryer.” Bella’s attracts a mix of college students and local sports fans typically between 21 and 35 years old, but the crowds never reach a fever pitch.
