Our smoking process uses only high quality wood supplied by craftsman Eoin Leonard, from Stromness based Celtic drum makers, Belgarth Bodhrans. Thursday Cottage have been hand making their products in small batches for over 55 years since the business was originally based in a little cottage of the same name in Somerset. Their production area was moved to Tiptree, Essex in 2001 but little else has changed especially with the way they produce their delicious products. Their cooks carefully watch over the small batches whilst they are bubbling away so that they get the care and attention they need to be extra special, they then hand pour their Jams & Marmalades into traditional jars so that the final product contains the most whole fruit possible to ensure a more flavoursome preserve.
