Method • Bring spinach to a boil in 2 to 3 glasses of water depending on the quantity needed. Add diced green chilli. • Add chopped tomato to the boiling spinach. • Add salt (required to taste), pinch of turmeric to the mix. • Add boiled split pigeon peas, 1 tablespoon of Sambhar powder and allow everything to boil for 15 to 20 mins. • Make paste of grated coconut, cumin seeds, coriander seeds and red chillies and add to spinach. • Sprinkle some coriander leaves for garnish. • Heat oil in a pan and add mustard seeds to it. • After the seeds splutter, add the beans to it. • Add salt, chilli powder and mix well. • Cover and cook for 10-15 minutes or until soft. • Once the beans are cooked, add the grated coconut and mix well. • Add one cup of cooked Basmati Rice.

Since then, he works as a CFO – IT Infrastructure at ArcelorMittal for the European infrastructure division. He lives with his lovely wife Geeta in their very cook-friendly flat in Cents. « Ma grand-mère a transmis la recette à ma mère, qui me l’a transmise à son tour. Très saine, sans corps gras, c’est mon remède anti-nostalgie », confie Sunil Varadarajan. À préparer avec amour, pour et avec ceux qui vous sont chers.
Préparation • Faire bouillir les épinards dans 2 ou 3 verres d’eau (selon la quantité). Ajouter le piment vert. • Ajouter la tomate. • Saler (à son goût) et ajouter une pincée de curcuma. • Ajouter les tur dal, une cuillère à soupe de poudre de Sambhar et laisser cuire à feu vif durant 15 à 20 minutes. • Mélanger la noix de coco râpée, les graines de cumin, les graines de coriandre et les piments rouges jusqu’à l'obtention d’une pâte. Ajouter aux épinards. • Décorer de feuilles de coriandre. • Faire chauffer l’huile dans une casserole. Ajouter les graines de moutarde. • Une fois les graines de moutarde éclatées, ajouter les haricots verts. • Ajouter le sel et le piment en poudre. Bien mélanger. • Couvrir et laisser cuire 10-15 minutes jusqu’à ce que les haricots soient tendres. • Quand les haricots sont cuits, ajouter la noix de coco râpée et bien mélanger. • Ajouter une portion de riz basmati cuit.
