hen tackling your spring cleaning, checklists are key. The best thing you can do is to plan ahead and make sure you have everything you need to get the job done, which will save loads of time. Second, work room by room until each area is clean. Jumping place to place makes accomplishments take longer and it’s harder to see big results,” says Erin Chase, founder of 5DollarDinners.com, mom of four and “Cleanfluencer” for AlEn USA.
“I switched to Pinalen Original because it is made with real pine oil, which makes it a powerful multipurpose cleaner. Plus, I love the scent,” adds Chase.
To make larger spring cleaning tasks easier and keep your house smelling fresh every day, Chase is sharing her top hacks to get the best results from those larger cleaning tasks:

Create cleaning caddies for every bathroom, the kitchen and garage. Having all your supplies ready for quick touchups and cleaning saves tons of time. “For super-fast touchups, I keep a canister of cleaning wipes handy. I prefer naturally derived Art of Green wipes because they seriously cut through scum, and the scents are amazing. Best of all, they’re safe for use around kids and pets and protect sensitive skin,” says Chase.

“Clean” your cleaning supplies. Deodorize your mop by adding 3/4 cups Pinalen Original to a gallon of water, soak your mop for an hour, scrub and rinse.

To really disinfect and deep clean non-porous floors, add 1/3 cup of CLORALEN Disinfectant Bleach to 1.5 gallons of water and mop or scrub and let dry. You’ll be surprised what comes off and how much they’ll sparkle.
To sanitize countertops, kitchen sinks and the outside of appliances, mix 1 tablespoon of bleach with 1 gallon of water and apply. Let stand for at least two minutes and dry.

To clean baseboards without bending and crawling, rubber band a microfiber cloth over the bristles of a broom. Spray the cloth with your favorite cleaner and scrub. No aching back!

To make an easy shower door scum remover: mix four parts water to one part fabric softener like Ensueño Max, spray onto scum, wipe off with a sponge and rinse with warm water. Checklist for Homeowners As the weather warms, there are a few maintenance tasks every homeowner should consider completing. Use this checklist as your guide: Outdoor Upkeep l
Wash window exteriors for a better view.
Clean gutters and downspouts to ensure proper water flow. Neglecting this task for too long can cause rot, mold, and damage to your foundation. l
Get your patio or deck in tip-top shape for outdoor living. Sweep and hose it down. Remove patio furnishings from storage. Wipe down surfaces and vacuum cushions (or launder them if they’re machine washable). l
l Inspect lawn equipment and tools for needed maintenance, repair and fuel refills.
l
Mow the lawn. Trim the edges.
After the next rainfall, inspect your yard for standing water, which can damage your home and invite mosquitoes. Consider hiring a landscaper to level out an uneven lawn. l
HVAC Maintenance Change HVAC filters at least once each season (ideally monthly). Dirty filters make equipment work l

They also increase your energy bill and lessen indoor air quality. l According to Energy Star, 20-30 percent of the air that moves through the duct system of a typical home is lost due to leaks, holes, and poorly connected ducts. Consider professional duct sealing for improved energy efficiency and lower bills.
l Check to see whether your furnaces and air conditioners bear the ENERGY STAR logo. If not, consider a new unit. A properly sized and installed ENERGY STAR air conditioner uses up to 20 percent less electricity than older models and doing so may make you eligible for a Federal Tax Credit.
Have a technician give your home’s cooling system a pre-season tune-up so that everything is running efficiently by the time warmer weather arrives. You know the “personality” of your heating or cooling unit best, so be prepared to provide the technician with important information. No fact is insignificant, as it may help them diagnose and fix a problem. l
Be sure that all HVACR installation and maintenance is performed only by a qualified professional. Read company reviews and ask the contractor if they have technicians certified by North American Technician Excellence (NATE). NATE-certified technicians have demonstrated knowledge of today’s increasingly sophisticated heating and cooling systems. To find a NATE-certified technician in your area, visit Natex.org. l
Safety Carbon monoxide, often referred to as the “silent killer,” is odorless, colorless, and tasteless. Protect your family by changing the batteries on your carbon monoxide detectors and ensuring you have a detector on each level of your home. When changing a furnace filter, make sure the new filter is correctly positioned and the access panel is securely fastened. Have your home’s furnace inspected and serviced annually by a NATE-certified technician. l

l Likewise, test all the smoke alarms in your home and replace batteries as needed. The National Fire Protection Association recommends smoke alarms on every level of the home, including every sleeping room and outside each separate sleeping area.

etra’s experience with caviar first began with a job in the luxury food and hospitality industry, which led to working with a caviar wholesaler in the Bay Area. Saskia, at the time, was running her own consulting firm and one of her clients included the caviar wholesaler where Petra worked. After making her sister’s company her solo client, the two decided to venture into the world of this luxury fish delicacy on their own, following sustainable practices. In addition to working with restaurants and filling online orders, The Caviar Co. has a San Francisco storefront on Union Street and a newly opened Tiburon store as well. Petra is now the sole owner and runs the company’s day-to-day operations. I’m thrilled to have had the opportunity to chat with Petra about her family, thriving business, and all things caviar. Petra Bergstein: I was born and raised in Lubbock, Texas. We were raised in the same home as my mother was raised. My father is from Holland and met my mother when they were both going to school in Switzerland. William: What is your professional background? Petra: In university, I studied Speech, Language, and Hearing Sciences - dreaming of becoming an Audiologist working with acoustics or fitting hearing aids. Immediately after my college graduation, I moved to Carmel, California to live with my aunt and take an internship with Coastal Luxury Management, the event company that puts on L.A. Food & Wine as well as Pebble Beach Food & Wine. That opened my eyes to the culinary industry and the passion to work in hospitality. After my internship, I moved to San Francisco and got a job working for a local caviar company. William: How did you get started in the business of caviar? Petra: When working for the first caviar company, I was fortunate to be involved in multiple aspects of the business ranging from marketing to sales. After sparking an interest in aquaculture and sustainable sturgeon farming, I went to work for a caviar farm for two years with a focus on marketing. I loved working for the farm but was aching to work with a more diverse range and variety of sturgeon species so my sister, Saskia, and I started The Caviar Co. where we’re able to provide a large range of caviar products and pricing. William: What is the history of caviar? Petra: As many people know, caviar was once only the food fit for a Tsar’s indulgence but that hasn’t always

been the case. There aren’t many historical references to caviar until the 11th and 12th centuries. Starting when the Greek and Russian Orthodox Churches said sturgeon was suitable for fasting days during lent. The fish roe was much less expensive than meat so if people couldn’t afford meat, they would eat caviar. William: What percentage of caviar is farm raised versus wild? Petra: Most caviar is farmed as that is the regulation. There’s only one species of sturgeon (Hackleback or Shovelnose) that can be wild caught and sold on the commercial market. There’s also a “cousin” to the sturgeon species that’s available (Paddlefish or Spoonbill). Aside from these two species, everything else must be farmed. William: What region of the world is the largest producer of caviar today? Petra: Now, China is producing most of the world’s caviar but there are a great number of farms in our own backyard in northern California as well. William: To my mind, nothing says luxury quite like caviar. It’s the perfect food for celebrations or just serious indulging. What makes caviar so prized? Petra: We like to say there’s a caviar for every day of the week. For example, if you had a rough start to the week and just need some self-love; Hackleback is a great way to treat yourself without breaking the bank. It’s an amazing product at a really good price. For Wednesday, you need to celebrate making it over hump-day, our

Classic White Sturgeon is just the ticket. It’s creamy, buttery, and easy to enjoy. I can keep going through the rest of the week but when you get to your Saturday night caviar or special occasion caviar, we save that for our Russian Osetra. It’s our most rich caviar as it’s coming from one of the older fish, so it has a lot of depth and decadence. The age of the fish when harvested for caviar has a lot to do with the price and quality. William: What’s the entry price point for caviar? Petra: For a black caviar, meaning the eggs are coming from a sturgeon, the entry price point should be around $40/oz. William: What age of caviar do you recommend? Petra: Something to lookout for is the age of the caviar versus the age of the fish when it is harvested. As mentioned earlier, typically, the older the sturgeon is when harvested, the richer, decadence, and depth the caviar has. However, that’s not the same for caviar. We believe caviar should have a shelf life of four to six weeks. Any longer, than you want to look out for pasteurization and preservatives. We believe the only thing that should be added to caviar is salt. William: How is caviar enjoyed best? Petra: Keep it simple. When tasting through caviar, we eat it right off the back of our hand. That’s the oldest and most traditional way of tasting caviar. I also love it on top of fingerling potatoes with a small dollop of crème fraiche and chives.
William: With vodka or champagne? Petra: Both. I believe it depends on the evening and what kind of night you’re looking to have. They both work so well. For instance, vodka is the perfect pairing as it really cuts through the salinity of the caviar while the caviar breaks through the acidity of the vodka. It’s truly a team pairing where both contribute to the overall experience. On the other hand, I love champagne. From the second you hear and feel that POP of the bottle, your senses start flowing and you know you’re going to have a great time. William: How do you describe the tasting experience? Petra: There’s so much history to caviar and additional background knowledge to know from how to properly taste, what to look for, how to grade, and red flags to watch for. We love the tasting experiences because it allows us to touch on every part of caviar we love so much. It’s also wonderful getting to taste different types of caviar, side by side, to learn what your individual preferences are so you know what to look for when you next purchase caviar. William: Do you recommend caviar be enjoyed best when complemented with lemons, capers, or eggs? MARCH / APRIL 2021

Petra: Although the traditional accoutrement makes for a great tableside presentation, we don’t recommend using strong ingredients to complement. Not with our caviar at least. We believe caviar should never be too fishy or salty. If your caviar is fresh and transported correctly, you wouldn’t want those overpowering flavors in the mix. Historically, those items came into use way back when they were transporting caviar from Russia to France without cooled trucks. By the time the caviar arrived in France, the caviar was spoiled so chefs brought in ingredients with such strong characteristics to mask bad caviar. William: What is your opinion on whether caviar should be enjoyed with silver? Petra: I believe if the eggs are kept cool, how it’s served shouldn’t matter too much as long as you’re enjoying yourself. Don’t sweat the small stuff and remember you’re enjoying it for yourself and no one else. We do tend to use the traditional mother of pearl spoons when serving the caviar only because, sometimes, if a silver spoon is left in the caviar tin, it could taint the caviar and make the eggs taste metallic. Otherwise, we’re honestly not too picky. William: How do you describe working with family? Petra: It’s a blessing and a challenge at the same time. I can truly say I get so excited going to work every day, but I also can’t get home fast enough to catch the last hours with my daughter before her bedtime. I feel so fortunate to have the support of my husband who helps in every way possible as well. He has more talents than I can count and is always helping our team, whether it’s lugging items from storage, hanging shelves, or helping with construction on a new location. There isn’t much he can’t do and even less he won’t do for us. I also consider my work team as family, so I’m in a winning position all around filled with a lot of support and love from all angles in my life. William: You started The Caviar Co., with your talented sister Saskia. Tell us what thrills you most about The Caviar Co.? Petra: We’re growing continuously and evolving, and each day is different from the last. We’ve come

a long way since starting our business in our tiny San Francisco apartment five years ago and seeing this second location come to fruition is a monumental step for The Caviar Co. William: What are aspects of your sister, personal and/or professional, which you enjoy most? Petra: We completely get each other. Without Saskia, I believe the dream of The Caviar Co. would’ve likely stayed just that. Saskia was the one who helped put all the gears in motion and helped get us established as a legal and legitimate business in San Francisco. Being a CPA, she knew exactly what we needed to do to get started and form a company. We were the perfect pair when we got started as I was the marketing/sales guru and she handled the finances. We were like a yin yang. William: In response to this same question, what do you believe Saskia would say about you? Petra: I believe Saskia would say something similar in how we were the perfect pair to start a business together. She would also likely mention how passionate (and possibly obsessive) I was when getting the company started. Saskia is my older sister and we’ve always been extremely close. She would also likely mention anything she does, I want to do and be a part of.

integrity for profit. We’ll never mislabel or mislead our product. Last, sustainability is imperative for the future of our industry. We’ll only work with farms that have their own brood stock and never take anything from the wild if it’s not legal. William: Are you able to provide insight into expansion plans for The Caviar Co.? Petra: The Caviar & Champagne Tasting Room in Tiburon is a huge step for the future of The Caviar Co. We love to have a platform where we can talk to more people about caviar and educate on something we’re so passionate about. We hope to continue that education near and far whether it’s in person or virtually.
William: How has the COVID-19 pandemic affected The Caviar Co.? Petra: Like many other small businesses, the 2020 pandemic has certainly affected us and put forth some of the largest decisions I’ve had to make in my career. There was a moment where I thought - this is it; how can we possibly make it through this? But we made a huge pivot right at the beginning of shelter in place to fight for what we love to do. As early as March, we shifted to offer virtual caviar tasting as well as free delivery throughout San Francisco. This was a big milestone for us and was an exciting turn of events. We love doing the virtual tasting and connected with people all over the country who also enjoy caviar. William: How does The Caviar Co. provide unsurpassed caviar collections with quality, integrity, and sustainability? Petra: All three items in our mission statement have meaning to us and we have vowed to run The Caviar Co. by these values. Quality is about the service we provide to our customers and of course, the exceptional quality of our caviar products. Integrity has to do the way we chose to conduct our business. Unfortunately, this characteristic is something that can lack in our industry and we’ve made a promise to ourselves, and our customers, to never trade
William: With all the pressures of operating a successful specialty company and the outside activities you do, what is your secret in terms of keeping your focus and even your sanity? Petra: If you talk to my husband, he might say my sanity ran out the door a few years ago. All jokes aside, the people in my life are my secret to success. Without a supportive family and team, we wouldn’t be in this position. William: How do you define success? Petra: I believe my definition of success changes almost weekly as my work and personal goals evolve continuously. I try to celebrate the small wins whether that’s leaving the office with under 50 emails in my inbox at the end of the day, hitting our sales goals, or marking a lot of items off of my to-do list. William: How do you define happiness? Petra: Earlier, I mentioned how grateful I am for the enthusiasm I feel when going into work and the excitement I feel when driving home to my family. I believe that sums up my definition of happiness right there. William: How are you living your best life? Petra: I have a job I love where I get paid to eat caviar and drink champagne on a regular basis. Then I get to go home to a loving husband and a funny, spunky, and bossy baby girl. l MARCH / APRIL 2021

Mehera started her career as an actress with a BFA from Boston University, studying also at London Academy of Music and Dramatic Arts. She went on to appear in theater, movies, and television. ver quick to adjust to shifts in client needs, the savvy business partners launched ALLPURE brand to provide hand sanitizer and hand wipe collections. Personally, I travel everywhere with the ALLPURE pre-moistened towelettes, and I always have one in my Coach Messenger Bag, car, and the inside pocket of my blazer. They’re PERFECT when washing my hands with soap and water is not always an option. The individually wrapped antiseptic hand wipes are small enough to fit in my pocket to take it anywhere I go. Most important to me, they keep germs away and provide a luxury soft texture durable enough for my hands but gentle for my face. I was honored to sit down with Turgay, at Starbuck’s in Domain Northside in Austin, Texas, to learn how he, his family, and businesses are doing as the world navigates recent challenges. I’ve always been enamored by Turgay’s professionalism, business acumen, and kindness and he may have one of the most intriguing business adjustment stories during this challenging time. William Jackson: Turgay, what made you decide to create a hand sanitizer collection? Turgay: When the pandemic happened, we knew it was going to be a while before hospitality businesses
got back to normal. We noticed there was a need for a better sanitizer. We were already working with a manufacturer who provided hotel amenities and cosmetics in Turkey. While everybody was trying to make sanitizer, we already had a great formula that existed long before the pandemic and we wanted to provide this amazing product to others. William: Tell me more about your background in the hospitality industry. Turgay: I’ve worked and managed luxury hotel food and beverage operations for over 25 years. In 2016, I started a hospitality staffing business but realized it would be impossible to continue without support. We teamed with my amazing business partner, Chris Parkes, and ALLPRO Hospitality Group was born. William: How were the names ALLPRO and ALLPURE created? Turgay: ALLPRO is a sports term in the National Football League to designate the best players of each position during a given season. Our goal has always been to find the best professionals in the industry and create the best team. When we were thinking about our beauty products, we wanted that name to be similar to the amazing brand we already created with ALLPRO. Having ALL natural, PURE products made it easy for us to came up with the name ALLPURE. William: Why did you believe there was room in the industry for another brand of hand sanitizer? Turgay: Actually, there wasn’t room for another sticky, nasty, and smelly sanitizer in the industry. We knew our formula, scent, and ingredients would set us apart. We created a brand that’ll be here for a long time and has a potential to become one of the best brands in the United States. William: What makes ALLPURE different? Turgay: Our ingredients and next level formula make ALLPURE different. Unlike many sanitizers, our brand

Turgay: Honestly, having three amazing business partners who’ve the knowledge and experience made everything easy and seamless. Already, we’ve three warehouses that are strategically located to distribute our products faster anywhere in the United States. William: Are there additional products you’ll be launching? Turgay: We’ve worked with the same manufacturer for years with respect to offering a suite of beauty products like shampoo, hand soap, and body lotion to United States market. William: How has the pandemic changed your businesses? Turgay: It completely changed everything. It’ll take years for hospitality businesses to recover from the pandemic. William: Do you believe the hand sanitizer market will remain strong once people get accustomed to using it on a regular basis? Turgay: Absolutely. It’s interesting how sanitizer became part of the daily life and culture in many other countries in other forms. I believe a quality sanitizer will be part of daily life in the United States and we’re here to provide that. William: What is your sage advice for other local companies? Turgay: Always be open to change. Small businesses were already threatened by big tech companies in the recent years, but the pandemic showed how you can’t have a traditional operation without being prepared to be adaptable. With that said, we’d like to announce we’ve developed our own staffing app and will be launching our own Uber-like app for our staffing business to continue to operate and stay in business for many years to come. l MARCH / APRIL 2021

Restaurant-quality results are easy to achieve when you use fresh ingredients - always shop in season - and the right tools. One of my favorite healthy new recipes, this veggie-packed pasta bake, can not only be made ahead, it also makes for delicious leftovers that can be quickly reheated in the oven for an easy weeknight meal. Cauliflower & Broccoli White Cheddar Pasta Bake Serves: 4 Prep Time: 10 minutes Cook Time: 30 minutes Ingredients 1 head cauliflower, cored, cut into large bite-size florets 1 pound broccoli florets Kosher salt, freshly ground black pepper 1 1/2 cups dried penne 3 tablespoon olive oil 1 small yellow onion, finely chopped 1 tablespoon fresh thyme, finely chopped 1 tablespoon all-purpose flour 2 cups whole milk 1 cup heavy cream 1 1/4 cups shredded white cheddar cheese 1 cup very coarse fresh breadcrumbs (made in a food processor or blender from 2 slices bread) 1/2 cup grated parmesan
Steps 1. Preheat oven on broil mode. Lightly oil a 2-quart baking dish or 4 individual crocks. 2. Bring a large pot of salted water to a boil. Add cauliflower and broccoli. Cook for 2 minutes or until broccoli turns bright green. Using strainer, remove vegetables from boiling water and submerge in a large bowl of ice water. Drain and set aside vegetables when cool. 3. Return salted water to a boil. Add penne, stirring often for 7 minutes, or until tender but still firm to bite. Drain penne. 4. Heat a large pot over medium heat. Add 2 tablespoons olive oil, onions and thyme. Cook, stirring occasionally, for 2 minutes, or until onions are tender and slightly browned. Sprinkle flour over onion mixture, then stir and cook for 1 minute, or until pale golden brown. 5. Gradually stir in milk and cream. Increase heat to medium-high and bring to a simmer. Reduce heat to medium-low and simmer, stirring often for 4 minutes, or until sauce is lightly thickened and has no raw flour taste. Reduce heat to low, add cheddar cheese, and stir until melted. Season with salt and pepper. 6. Add vegetables and penne to cheese sauce and fold together. Spread evenly in baking dish. 7. In small bowl, toss breadcrumbs, parmesan and remaining 1 tablespoon olive oil to coat, then sprinkle over pasta mixture. 8. Broil for about 4 minutes, or until crumbs are golden. Let cool for 5 minutes before serving. (BPT) l

Tech talent also abounds in the Charlotte area, with thousands of students at the University of North Carolina, Charlotte graduating with engineering and IT degrees every year. This female led company was created in 2020 by Stephanie Synclair. Growing up in Alabama, Stephanie dreamed of traveling to far off worlds she would get glimpses of during trips to the art museum, through the Victorian paintings and photos of Versailles. Seven years ago, Stephanie was able to fulfill a lifelong dream of hers, she spent a year with her son traveling the continents of Europe and Asia. They went to Asia first and she noticed, specifically, in Thailand, Bali, and Singapore, tea ceremonies were a ritual of life, an experience. Grilled New York Steak with Porcini Butter Serves 6 1 cup Cabernet Sauvignon 2 sprigs fresh thyme 1 shallot, minced 1/2 cup dried porcini mushrooms 3/4 cup warm water 3/4 cup plus 2 tablespoons unsalted butter, softened 1/2 small onion, finely minced 1 tablespoon fresh thyme, minced Salt and freshly ground pepper 6 NY Strip steaks, 7 ounces each 1. Put the wine, thyme sprigs and shallots in a small saucepan and reduce until approximately 1 tablespoon of wine is left. Strain and let cool. Rinse and soak the mushrooms 1 hour in the warm water. Drain the mushrooms; strain the liquid through a fine strainer or cheesecloth, reserving 1/4 cup. Heat 2 tablespoons butter in a small sauté pan or skillet over low heat. Add the onion and cook until tender and translucent, about 10 minutes. Pulse the mushrooms in a food processor until chopped. Add the onion, reserved mushroom soaking liquid, wine reduction, minced thyme and remaining 3/4 cup butter; process until blended. Season to taste with salt and pepper. 2. Heat the grill or broiler. Lightly sprinkle the steaks with salt and pepper and grill or broil 3 minutes each side for medium-rare. Place a dollop of butter on each steak and serve. (BPT) l

he call for greater gender equality in gastronomy has been getting louder and louder in recent years. It is not before time that the incredible work of female chefs has received the recognition it so richly deserves, but even during uncertain times for the
industry, it is an achievement to be celebrated. When the industry regroups - maybe this year, maybe next - the landscape will have shifted for young female chefs in Great Britain and Ireland thanks to these two leading ladies of London’s gastronomy – Clare Smyth and Hélène Darroze.

Hélène Darroze The Ceremony
When Hélène Darroze was awarded her third Michelin star in a live-streamed event, the chef was genuinely shocked and elated, momentarily lost for words. It was the culmination of a lifetime’s work. As is so often the case with chefs of her calibre, Darroze would not allow her gaze to drift upwards to the stars for too long, instead coming back to the moment and the plate in front of her. Yet to the gastronomic community, it was no surprise that she would join the top tier of chefs in the world. Hélène Darroze at The Connaught has long been acknowledged as a bastion of gastronomic elegance and impeccable taste. It felt like only a matter of time before the chef would receive the highest recognition at the pinnacle of gastronomy. The last year saw unprecedented challenges for the restaurant industry, but Darroze’s culinary journey has been long, and one peopled by some of the world’s outstanding culinary talents, including Alain Ducasse, who trained her at his 3-Michelin-star Le Louis XV at the Hotel Paris in Monaco. Indeed, when Darroze received her third star, it was accompanied with a personal congratulations by her former mentor.
Cuisine Faithful to her philosophy both in Paris and London, Hélène Darroze creates a cuisine that gives pride of place to produce, whether sourced in her native Les Landes and the Basque Country, regions where she grew up, or in the British Isles. This signature cuisine - inspired not just by her roots, but also her travels, the people she has me,t and of course her strong link with the United Kingdom.
Culinary History In 1995, Darroze departed Monaco to return home and to take over the kitchen in her family-run restaurant in Villeneuve-de-Marsan where she remained for four years. At the age of 32, she left for Paris to found her own restaurant, Restaurant Hélène Darroze in the heart of Saint-Germain-des-Pré on the Left Bank. It opened

to international acclaim receiving its first Michelin star in 2001 and a second this year. In 2008, the Connaught Hotel in London’s Mayfair, was searching for a French chef to run its kitchen and reconnect with the tradition of French cuisine and turned to Hélène Darroze. The hotel was able to entice the chef away from Paris and to London. It proved a propitious appointment by the hotel and acclaim came quickly with a first Michelin star in 2009, six months after opening, and a second in 2011. “It is with immense emotion and honour that I receive this award. My first thoughts are with my teams, especially Kirk Whittle, my pastry accomplice for the last 17 years, Executive Chef Marco Zampese and Restaurant Manager Mirko Benzo, who have been working with me at The Connaught for over 8 years. My thoughts also go out to Paddy McKillen, co-owner of The Connaught, who has

staging in restaurants in the UK and Australia, alongside the likes of Heston Blumenthal and the Roux Brothers. Stints working for Alain Ducasse at his Le Louis XV and Gordon Ramsay at his eponymous London restaurant, where she successfully retained three stars as Head Chef completed her stellar CV before she opened her own restaurant Core by Claire Smyth in 2017. Core earned two Michelin stars on its first review. trusted me to take the reins of the gourmet restaurant since 2008. My appreciation particularly goes to the small suppliers who have helped us, especially the wonderful and emerging British producers, without whom good cooking would not be possible and need support at this time. I am also particularly proud to receive this award alongside my friend chef Clare Smyth. Believe in your dreams – everything is possible and stay true to your femininity.”

The other big announcement of the night, of course, was the awarding of a third star to Clare Smyth. The Northern Irish chef was another culinary talent destined for greatness. Her star has seen a meteoric rise over the last few years, claiming World’s Best Female Chef 2018 by the World’s 50 Best Restaurants.
Cuisine Smyth is a leader in her restaurant, in how she takes care of her staff, sharing her knowledge and creating a free space for creativity and learning. Her cuisine is elegant, understated, yet confident and highly accomplished, much like the chef herself. “We are absolutely thrilled with the news and want to thank Michelin for recognising our hard work particularly during such an unprecedented time,” said Smyth. “This year has been unbelievably challenging, and I am so proud of my team for their resilience and their constant dedication to excellence. I am also immensely grateful for all the support we have received from our guests, and our amazing British farmers, food producers and suppliers, many who have been on the journey with us from the beginning. I would also like to thank the restaurant community who have supported me throughout my career.” l
When accepting the award Smyth said: “I want to be a great chef, just because I am one, not because I am a woman,” but accepted the accolade in the hope it would inspire her peers. Today, Smyth sees all that she has achieved in her culinary career recognized by the highest standards there are in the industry.
Culinary History When accepting her third star, Smyth spoke about how running a three-Michelin-star restaurant has been her dream since she was 16. She was always ambitious. At just 17, she moved from the farm in County Antrim, Northern Ireland, and went to England to study culinary arts at Highbury College. She honed her skills working and MARCH / APRIL 2021

HINGS TO CHANGE YOUR CAREGIVING STORY MY HUSBAND WAS DIAGNOSED OUT OF THE BLUE WITH STAGE IV CANCER. WE NEVER SAW IT COMING. THERE WERE NO ALARMING SYMPTOMS, JUST SOME BACK PAIN THAT WASN’T GETTING BETTER.
O
n the day that he received his sudden diagnosis, I became a sudden caregiver. Our lives changed immediately, and they never changed back. I cared for him for 18 months, from diagnosis until his death in April 2016. There are now 53 million caregivers in the United States alone and caregivers make up about 11% of the populations of most developed countries. I had just gotten my Master’s degree from Penn in Positive Psychology, and began to apply the research I knew about resilience and well-being to my day-to-day caregiving. It wasn’t perfect or easy, but it did make a difference to my life and to my husband’s. I’ve put together four simple steps you can take that will make a difference

in your caregiving story. I’m sensitive to not putting any more work on caregivers’ plates, so I want to stress the size of these things — they’re all manageable.

Start a daily gratitude journal. It works and it doesn’t cost anything. But make it a habit to notice and write down good things that happened: l What were one, two, or three good things that happened today? These don’t have to be big, just noticeable. l
Who was one good person who made a difference?
Why it works. Humans are wired for survival, and during caregiving, that’s your focus. So, if you’re surviving, you’re seeing things you need to protect yourself from. If you want to thrive, look for the good stuff. l

Build in mini-breaks. Identify something you love to do and build a mini break around it on as many days as you can: One caregiver I know saves the Sunday crossword puzzle and works on a little bit of it every day. One person makes a cup of tea at 3 PM every day and sits quietly with it for 15 minutes before going to the next task. One husband-caregiver gets up super early and goes for a morning run before the day gets underway. I used to walk the dog through the woods behind our house. We lived in New England, so this was in rain, shine, or more often, ice and snow. l
Why it works. There’s evidence that shows that “mental health” breaks — no matter how short — interrupt ongoing depletion and can even restore the energy you’ve spent. l

Set small goals for yourself and work toward them. l Choose something manageable that, if accomplished, would provide satisfaction. Begin right away to make progress against it. You might want to start working out, for example, but there are a lot of logistics involved, especially during COVID-19. You might want to better understand your finances. Or you might just want to declutter your closets. l Write the goal down and break it into sub-tasks so that you begin to focus on making it happen. If you want to get more exercise, what type? At what time of day could you do it? What programs are available online or on TV that would work? Who else could help you?
l Why it works. The act of progress toward our goals, not just succeeding at our goals, gives you a sense of creating something, of being in control of something, all of which raises your positive emotions. When we feel good in the moment, we tend to broaden our outlook and see more options than we previously had. This generates a positive upward spiral. The better we feel, the more options we see, the more options, the better we care for others.

Create a “care-leading squad”. Create a “care-leading” squad of people you absolutely trust who can help you when you need it. l
l What do you need done and who do you know who’s great at it? For example, I am not handy around the house. My friend, Nick, knows his way around a toolbox. I’m not good at dealing with anything mathematically complicated, like insurance bills, but my friend, Richard, lives for that. They became “The Handyman” and “The Numbers Guy” on my “care leading” squad.
Select the best people for each job and line them up even if you don’t need them right now. And this is important: define “best” as: l You can be completely yourself around them and not have to edit yourself or hide your dirty laundry — figuratively and literally. l
l They do what they say they’re going to do, no matter what.
Why it works. Caregivers are notorious for going it alone and they don’t have to. Other people matter. If you line up your trustworthy squad before you need them, they’ll be ready for you in a crisis, leading to peace of mind when you need it most. And by letting them take care of you, it frees you up to take care of the one who really matters: the person in your care. l

Older adults in America are living longer lives and will outnumber people under the age of 18 by nearly 500,000 by 2034, according to the U.S. Census Bureau. However, living longer does not automatically mean living healthier or happier. In fact, nearly 61% of people in America aged 65 and older live with chronic conditions, according to the National Institutes of Health, and a report from the National Academies of Sciences, Engineering and Medicine found nearly 1 in 4 older adults are considered to be socially isolated. Research published in “Health Affairs” indicates that people who advocate for their own care feel more empowered. The age-friendly health systems approach can help older adults take control of their well-being and demand care that helps them maintain independence by making sure their doctors know their needs and preferences; also called “what matters.” Just as the name implies, age-friendly care prioritizes what matters most to each individual older adult and helps meet goals such as daily walks around the neighborhood or cooking favorite meals. To get started, consider these four essential elements of age-friendly care from The John A. Hartford Foundation to discuss with your doctor: What Matters. As people age, what matters most to them might change. It is important to share concerns, goals, wishes, needs and experiences with your health care providers. What matters also includes end-of-life care goals and preferences.
Medication. Many older adults take multiple medications, which can cause side effects and, in turn, impact daily living. Honest conversations with doctors about medications, their interactions and side effects can ensure treatment plans are optimizing quality of life. Mentation. Older adults are at higher risk for dementia, depression and delirium, and conversations with medical providers about changes in memory or mood and annual screenings for dementia and depression can lower the risk. Mobility. Staying active can help older adults maintain health and independence. Talking to health care providers about mobility concerns can identify personalized tips to improve strength, flexibility and balance. THREE THINGS EVERY CONTACT LENS WEARER SHOULD KNOW An estimated 50 million people in North America wear contact lenses, precisely correcting their vision while offering ultimate flexibility to be physically active and look their best. To ignore differences among people is to ignore a part of the person.
When children ask, “Why does…?” questions, rather than shy away or tell them, “We don’t ask those questions,” embrace the moment and answer in simple, direct language. For example, explaining that melanin creates different skin tones or people may use wheelchairs because their legs work differently, and they need help moving around. By answering their questions, children can learn differences aren’t bad or embarrassing – they’re what make each person unique and special. Reflect the diversity of the world within your own home. Books are an easy way to help children learn about diversity because stories are natural conversation starters. Look for books with diverse main characters who have different races, ethnicities, backgrounds and abilities, and reflect a number of family structures. As you read together, talk about the differences and similarities between the characters and your children using simple, clear language. It’s important to ensure your children see themselves in the toys, books and media around them. Children feel welcome and important when their identity
and their families’ identities are represented in their world. Build empathy. Go beyond the common refrain, “put yourself in someone else’s shoes,” and ask your children why it is important to understand other people’s perspectives. Help your children think of times they learned something about someone else and how that knowledge helped them be better friends or family members. Our intent is, you’ll come away more informed and inspired to live your best life and achieve greater peace of mind. William Jackson: Mr. Robert Brace, what is your story? Robert Brace: I’m a kid from London, England with immigrant parents from Ghana, Africa who always wanted to be a dancer. After tricking my family into letting me go to a professional dance school, I had a crippling injury that almost ended my career before it got started. After training in London, I came to New York City, New York to pursue my dance career, did some cool gigs with some cool people. Then I decided to explore my spiritual side, became an ordained minister of a congregation in Harlem where I met my wife, and became father to two beautiful daughters. I returned to exploring physicality as a fitness trainer and found my unique passion of helping people connect the dots between their physical, mental, and spiritual health in a practical, easy to follow way. Trained some celebrities, did some TV shows, opened a boutique gym, and built an App. Now I spend my days doing what I love, which is helping people live happy, healthy, and holistic lives, by improving their mind, body, and soul health. William: Why, do you believe, you’ve been placed here on earth? Robert: My mission, although not always conscious, has been exploring the mind, body, and soul connection.

My life’s journey has led me here. I believe I’m here to help people discover their own specific mind, body, and soul connection and unlock the blessings and potential that comes from harnessing its power. William: Tell me about your family. Robert: I married my best friend, who is deeply spiritual; a former fashion model who is now a clinical board-certified Behavioral Analyst who runs her own agency. I think I did rather well. We have two beautiful, intelligent, and athletic daughters, Amber and Jordyn, 16 and ten years respectively. William: What do you love most about your family? Robert: We laugh a great deal. I’m blessed because we love each other but we also like each other and still find each other interesting. Both of my daughters are daddy’s girls. There’s nothing like having the love of a daughter. It’s amazing being a girl dad and watching them find their voice, grow, and excel. I grew up with three brothers so being around girls is a gift. William: How do you ensure your children understand clearly what has come before them? Robert: Since both my wife and I are immigrants to the United States, this has been an important part of their upbringing. We both had challenging childhoods and both of our parents are immigrants, so we make sure they appreciate the hard work it has taken the different generations of our family for them to have the privileges they have today. It’s empowering for them and gives them roots. We also create opportunities for them to be around our families and culture. William: How important was is it to discover and respond to your calling? Robert: It’s essential to a fulfilled, purpose driven life. Living outside of your calling means the light you were sent to give may not get the chance to shine as brightly as it should. When you respond to your calling, you’re fulfilled, happier, healthier, and most importantly, making your biggest contribution to the lives of others.
William: What does it mean to hold fast to your dreams? Robert: Just stay focused and consistent. Be persistent with your dreams but flexible about how you get there. I could never have imagined some of the place’s life has taken me with all its twists and turns but I always seem to end up in the right place. Dreams drive the journey. It’s also important to remember life is about the journey not just the destination. Embrace the journey. William: You have a great love for the ballet form of dance. When did this love manifest itself? Robert: I was born with it. As early as I could remember I always loved to dance and move. I was always physical. I just had no idea you could have a career doing it. William: What valuable lessons did you learn from being a ballet dancer? Robert: When you train as a dancer you repeat the same movements day after day seeking perfection but never quite getting there. But where you do end up is incredible compared to where you started. Slow steady consistent improvement will produce extraordinary results. A rejection is just a no on the way to a yes. You cannot fully express or explore your spirituality without movement. William: Subsequently, how did you become involved in the business of health, wellness, and fitness? Robert: When I came to New York City to explore my career. I was broke and needed to get a job. I saw an ad in The Village Voice for personal trainers. I had no idea what that was, but I figured I could teach people to stretch and move more efficiently, and since I healed myself from my back injury, I knew how to transform my own body. I knew I could at least teach those principles to others. I applied and got the job making seven dollars an hour. William: Would you say you were following your intuition? Robert: That depends on what you mean by intuition. I follow the intersection between what my heart feels and MARCH / APRIL 2021

what my mind knows (based upon my perspective and available information at the time) It’s all we have to go on. William: What is your definition of wellness? Robert: When you’re living a life consistent with who you are at your core and where you are taking care of your body, stimulating your mind, and providing your soul with, peace, joy, love, self-empathy, and kindness. William: When did you start focusing on taking the best possible care of yourself? Robert: After I experienced a crippling back injury that nearly ended my dance career, it became clear not slowing down to take care of my body could have a devasting effect on my life’s dreams and goals. So, it birthed in me a core conviction I need to be well to achieve my goals. More recently it’s about being well to give my family what they need and enjoy them as long as I can with all of the vitality I can muster. I also believe my mission to uplift others, mind, body, and soul can only happen if I’m healthy. William: What do you believe is the main hurdle for most people to take the first step and feel driven enough to do something about their health? Robert: Not enough self-reflection that connects their physical health to what they want in life. While short term goals are great, if your goals are just for an external transformation, it may not give you the push you need. Think about what you want in life and ponder how a healthy body I feel great about help me get there. How will it change the way I feel physically? How will it change the way I feel about myself, my confidence, and my energy and how will these factors help me achieve and maintain what I really want in life? These questions go deeper and help you see the bigger picture. William: Why is it important for people to stay fit and how can we overcome the procrastination and fear of exercising on a regular basis? Robert: We all want to live happy healthy lives with the ones we love, doing what we love. Being physically healthy makes this possible for as long as possible.

William: Is there a major difference between women and men, as it pertains to establishing an exercise routine? If so, what are some of the best methods each is to follow? Robert: Most men have more testosterone which generally makes it easier to grow lean muscle mass faster; increased muscle mass means a faster metabolism making it easier to lose weight. So, I advise women to lift weights. You’ll not get bulky so long as

Robert: Form and posture. It’s so easy to rush through an exercise or mindlessly perform the action. As a former professional ballet and modern dancer, correct form and technique is important to me. Correct form will help you prevent injury, sculpt your body, get results faster, walk and move with more grace and posture, and look better in clothes. William: For some people who are confined during a lockdown, there’s a monotony that sets in with daily activities, work, and eating habits. Also, some tend to become lax in terms of managing health and wellness. Is there an ideal routine you recommend helping set positive patterns? Robert: The twenty-minute rule. One simple thing you can do is listen or read a positive message within the first twenty minutes of your day, visualize and think through everything you wish to accomplish in terms of your wellness, and imagine a positive outcome. Studies show whatever you hear, see, or are exposed to in the first 20 minutes of your day will impact your mindset and set the tone for the rest of your day. That time window is called The Alpha Brainwave Stage. During this stage your brain operates at 10.5 waves per second, higher than most other stages. Many have described this stage as the Gateway to the subconscious mind. This Alpha Stage is when your subconscious mind is most impressionable and soaks up information like a sponge. It’s essential during this time to fill your mind and soul with positivity, perspective and principles that will calm your soul, focus your mind and prepare your body for action.

Increased mobility will increase your ability to perform any movement safely with the right form, leading to faster results and recovery time. William: In what focus areas do you find most people need improvement when developing and following an exercise routine?
William: How do you put joy into your work? Robert: That’s easy. I don’t have to “put” joy into my work. It’s already there. I love what I do. I love the people I do it with and I get joy from encouraging others and seeing weakness become strength. It’s a natural joy fest. It’s contagious. William: What can I expect during my first day at Brace Life Studios? Robert: You can expect to have all three aspects of your mind, body, and soul health elevated. Our MARCH / APRIL 2021

assessment helps you connect your mental focus to your physicality by focusing on your brain on performing each movement to the best of your ability. We tell clients to “put your brain in your body,” when you focus on this all exercise and movement becomes like a physical meditation. There’s a science-based practice called embodied cognition which we put into action. You’ll also get to elevate your soul through our meditations that give you more peace, calm, joy, and focus. William: I’m a mess physically; hence, mentally, I’ve not exercised regularly in some time, and I don’t need any condescending judgement. How will you help me to feel better about myself? Robert: I believe we’re so conditioned to seeing and being shown where we’re lacking and what we need to fix. I’m purposeful about explaining

clearly the potential that lies within each person and so is everyone on my team. We talk about this in team meetings. It must be explained in detail, so I don’t come across as insincere. Once people connect with what is possible for them and how it aligns their own personal vision of their highest selves, that changes the story from what has held me back to what am I moving toward and knowing that it’s achievable. William: Why are people worthy of love, understanding, and support? Robert: We’re worthy because we are. Because we exist. It’s that simple. There’s intrinsic value in every single life that exists on this earth. We’re more alike than we sometimes think. We share a common humanity and one thing I’ve learned is we all have a story and in every single soul there’s a need to be understood, a desire to be loved, and all of us at some point in our lives need help and support. We’re social animals created to connect, it’s in our DNA. Love understanding and support are three ways we thrive as humans. When we don’t have them, we’re affected negatively in some way. If we all have these basic needs, what makes one person more worthy than another? Nothing! We’re all worthy, and we need to allow ourselves the space to be loved, understood, and supported.

William: How do you use your career as your platform? Robert: One way I get to do this is by highlighting the wellness journeys of women of color. I have two beautiful daughters whom I’m raising with my wife to be strong, confident women. I call them my chocolate chip Hershey Kisses from heaven. I want my daughters to love and embrace themselves fully. I want them to see themselves the way I see them. My future is their future. My future is decidedly female...and so is my past. I was raised by a single mother. My mother was my first hero. She came from Ghana to live in England when she was 16 years old. I’m now raising two little heroes with my wife who pretty much rescues me from something every day. She is my daily hero. Therefore, I’m a “He for She”. He for She is an invitation for men to stand in solidarity with women to create a bold, visible, and united force for a gender equal world. It’s why much of the focus of Brace Life Studios’ evolution has been to support and highlight the success and wellness journeys of all women, especially black women. We’re inspired everyday by our powerful female clients.They’re game changers, thought leaders, culture shapers, and icons in their respective industries.
William: How do you use your career to create and sustain a better world? Robert: Everyone has goodness, greatness, and a giving spirit within themselves. My job is to help people see and achieve the best in themselves and to give them the physical tools to allow them to excel. It’s my intent to ensure they leave their time with me with less stress, feeling more confident with more strength, vitality, energy, and positivity, in a mind space where they are more at peace. This has a positive effect on everyone they interact with and the work that they do in this world, making a better world one interaction at a time. William: Why is there great happiness in giving than there is in receiving? Robert: Giving means you’re making the world and other better through your uniquely individual gifts and talents. When you give, you become an instrument and expression of divine love for the receiver. When we give, we’re living closer to the higher version of our selves. William: What gives you peace of mind? Robert: Knowing I’m loved by those who I hold dear. Focused time with my daughters. The comfort of my friendship with my wife who is my best friend and soul mate. l
