Apparatus Room $$$$ NEW AMERICAN • The Foundation Hotel’s restaurant, the Apparatus Room, once housed the Detroit Fire Department headquarters. The cooking of chef Thomas Lents, who earned two Michelin stars while at Chicago’s Sixteen, is refined and highly skilled.
