IncredIble IndIan Few chefs have mastered Indian cuisine quite like Michelin-starred Atul Kochhar, whose award-winning Rang Mahal by Atul Kochhar (+971 4 414 3000, jwmarriottmarquisdubailife. com) graces the second floor of the world’s tallest five-star hotel, JW Marriott Marquis Dubai. Here the varied menu sings with a cacophony of flavour and creativity, and we heartily recommend you indulge in one of the always great value tasting menus. Every bite is a delight. If there’s a sure thing in the restaurant industry it’s that an Indian restaurant operated by Taj Hotels is going to be good, if not very good. Falling very much into the latter category, Bombay Brasserie (+971 4 438 3100, tajhotels.com) sees chef de cuisine Ajay Negi conjure up flavours as vibrant as the restaurant’s interiors. The dum ki suneharl (slowcooked lamb shank and saffron) and beautifully flavoured paneer are

noteworthy highlights to be savoured. Bag the right table and you’ll also take in the sight of The Dubai Fountain. Gastronauts can embark on a spice-laden journey through the cuisines of northern India at Khyber (+971 4 455 1111, dukesdubai.com). This is the first outpost of the Mumbai favourite, which has enticed the likes of Sir Paul McCartney and Richard Gere to dine there. The culinary offering here is headed up by Chef Faizan Ali, who oversees a team of six North Indian chefs in the kitchen. Together, they conjure up expertly spiced signature dishes, such as tandoori raan. Be sure to bag a table on the terrace for 180-degree views of Burj Al Arab and the Dubai Marina skyline.

Happily, Dubai does (at Jumeirah Emirates Towers), and the high-end chain doesn’t disappoint with its chic, contemporary Chinese décor, expertly made dim sum and oh-so fashionable bar. Shang Palace (+971 4 405 2703, shangri-la.com) at the Shangri-La Dubai is an old favourite that never fluctuates from serving up outstanding Cantonese cuisine: case in point, the signature cod fish with grapes and well-balanced orange sauce. Another purveyor of high quality Chinese classics is Shiba (+971 4 381 3111, meydanhotels.com) located at The Meydan Hotel, where the interactive element of dining adds a sprinkling of theatre.
