Welcome to the August issue of Coffs Coast FOCUS. bove the bed head at home, my husband and I have two white A4 photo frames. Inside the frames is a hand written list of short and long term goals – a list we created when we lived abroad together. Broke backpackers, on a journey to create memories, we sat in a guest house and wrote the list. Upon returning to Australia, we started to live by it … be better friends, be good to our folks, volunteer often, renovate together, drop five kilos, work hard – the list continuously goes on. I believe that goals are something that shouldn’t be limited to discussing over fireworks on New Year’s Eve; they are something we should aim for every day.

Kymberlei Goodacre is a single mother with two daughters; she is a lawyer and absolute inspiration. Tigist Teressa moved to Australia for “love” when she could barely even speak English. Only a few years on, Tigist is now a successful restaurant owner, wife and mother. Tattoo artist Arm has gone from shaping what we can only imagine to be a colourful career in the heart of King’s Cross to running his successful tattoo shop here in this perfect part of the world. Mark Pell had a dream to turn his passion of Volkswagens into a show ... and voilà!

My husband is from Coffs. After we married in Ethiopia four years ago, we moved here and have been here ever since. Where did you meet your husband ... share your love story? Why was he in Ethiopia at that time? When I was 16, I was arranged to be married. I got up early on the morning of the wedding day and ran away from home. It was that moment in my life that I made the decision not to get married until I had an education, and only if it was my choice. After that I went all the way to Harar, 800 km from home and lived with my Aunt. A few years later, Marcus was in Harar doing his PhD research on relations between spotted hyenas and people. He used to come to the café where I worked and show me photos of the hyenas. I didn’t trust him at all. Actually, I didn’t trust any men, but I’d also seen people have problems with foreigners. He was both foreign and a man. Shortly after I met Marcus, I went to work at another place. I didn’t see him for a while but then by chance we met again. He asked me out that time and a lot of times after, and even though I said yes, I stood him up every time we arranged to meet. It must have driven him crazy, because eventually he messaged me and said, "Stop wasting my time". I felt really bad for him, so when his Harari friend came to vouch for him, I said, "OK", and we went on a date. After that, we fell in love. We got engaged after a few months and married a few months after that. Incredibly, when you moved to Australia you didn't speak English. How have you learnt in only three years? I went to North Coast TAFE and did my English certificate there. Also, Community College to study business and English. Mostly 10 coffs coast focus.
wit ith h Marcus Marc Ma rcus rc us I learn at home speaking English with and by talking to customers. How did you communicate with your now husband if you spoke different languages, or does the language of love have no tongue? We used to speak in a mix of English and three Ethiopian languages. Really, it was easy to understand each other. The only hard part was sometimes the words have different meanings in our cultures, so I thought he was insulting me when he wasn’t. What type of childhood did you have? Where did you grow up? I grew up in West Shewa. School was a long way from home and we used to run to get there, because we were beaten if we were late. Living in the rural areas was a lot of fun for us kids, because we had a lot of freedom and room to play. For toys, we made models out of clay. How did your parents react to you marrying an Aussie? I already fooled them once before, telling them on the phone I was married, so when I really was married, they didn’t believe me. When I brought him to my village and they met him, he was the first white man they ever saw. They didn’t think he could eat our food and didn't know how to treat him or anything. Now they love him, though. I think they love him more than they love me! How dramatically different is village life to life in Coffs Harbour? I realise they are vastly different, but what are the similarities, if any? Here you have to get everything from the supermarket, while back home we grow everything we eat. We even make our own cooking oil, furniture, tools and things. You can live a happy healthy, life there with absolutely no money. Salt is the only thing you have to buy. As far as similarities, the countryside is very similar, including the rivers, fields and even gum trees, which we call "klyptos" in Ethiopia. The weather is very similar too, although Coffs is a bit hotter in summer and colder in winter.
You are also a business woman and cook! You've opened up an Ethiopian restaurant in Moonee Street, Mana Chita. How are the locals responding to such a foreign cuisine? They love it. We have a lot of regulars and a lot of positive reviews. It’s very encouraging. A lot of people think our food is all spicy, but it’s mostly quite mild. The basic ingredients are all familiar, things like beef, potatoes and pumpkin, but the flavours are unusual. This is because of the Ethiopian herbs and spices. Oh, and there’s injera, which is a flatbread like a crepe which we have with almost everything! What does Mana Chita mean? Mana Chita means "house of grass". It’s a kind of round house with a thatched roof that is common in my country ... the kind of house I grew up in, where everybody comes together to sit, talk, and share food. Was cooking a big part of your childhood? What type of rituals are celebrated in Ethiopia? I started cooking when I was seven years old. I was staying with my Aunt, and she had to go away. The neighbours refused to give food to me and the kids, so I dug some potatoes up from the garden and cooked them for the rest of the kids. I got in trouble for digging up the potatoes, but not as much as the neighbours who refused us food. I love cooking. Even on my day off or when I get home from work, I cook. There are a lot of Christian rituals like Christ’s epiphany, Easter, and Christmas. But where I
come from we also have a lot of older rituals for blessing calves, keeping peace with water spirits, and celebrating the Earth Mother, Atete. You've just had a daughter; congratulations from the FOCUS family! How are you juggling being a working mother? Thank you. Marcus looks after our baby while I’m cooking during the day and she (usually) sleeps while we both work in the evenings. We also have friends who support us, looking after her while we’re busy. We decided to close the restaurant on Sundays and Mondays so Marcus can do his work and I can spend time with baby. Do you plan to stay in Coffs Harbour? We have a big, colourful and wonderful Ethiopian community here in Coffs Harbour; have you made many friends? We would love to stay in Coffs Harbour. It’s our first choice for a place to live. I’ve made so many friends since coming here, not just from the Ethiopian community, but people from Australia and all kinds of other places. People here are so loving, welcoming and supportive. Final say ... I just want to say thank you to all our friends, including customers, who have supported us in our venture. MEGAN VOISEY hat is the big event on your calendar for August? Hearing Awareness Week begins on August 24th, and it’s a time of the year when we try and reach as many people as possible with the message of caring for their ear and hearing health. We are challenging people to ask whether they feel like they are in a LOUD HOUSE? Typically the TV is blaring, radio blasting or phone ringing off the hook, because a family member has a hearing problem. We can help by providing a free hearing check and explain the services available so your loved one can hear better and the rest of the family no longer needs to suffer in a LOUD HOUSE. Being in loud environments can have a huge impact on your hearing … How much is too much noise? Loud noise can cause irreversible hearing
W
damage. This damage is cumulative, meaning the higher the noise level and the longer your exposure, the greater the harm. Many of your daily activities won’t harm your hearing, but some can start to cause damage after only a short time. For example, vacuuming at 65 decibels is unlikely to damage your hearing, but listening to a portable music player at 94 decibels for one hour can start to cause damage. The level of noise at a nightclub, at 100 decibels, can be as loud or louder than a chainsaw, and this can damage your hearing after just 15 minutes’ exposure. Louder sounds such as a jet plane or gunfire, both of which are more than 110 decibels, can cause damage in just one minute! Young people don’t often think about the impact iPods and nightclubs can have on their hearing later in life … How can we protect ourselves?
Turn down the volume on your phone, music players or stereos. As a general rule, set them at a level where you can still hear someone at arm's length without shouting. Walk away from loud speakers at concerts, clubs or gyms. Give your ears frequent rest from noise. Limit your time in noisy places. Protect your ears with earplugs or ear muffs. What are the signs of hearing loss to look out for? Hearing loss means that some sounds can’t be heard. The early warning signs include: You can hear but not understand. You find it harder to hear in noisy situations with groups of people. You have difficulty understanding people unless they are facing you. You think people mumble. You don’t always hear the doorbell or the phone.
hear their family and their world again! You need to turn the TV up louder than other people. What can we do if we’re concerned about our hearing? It’s a good idea to take early action, as the sooner you do something about your hearing, the sooner you can get on with enjoying life. Left untreated, hearing loss can affect a person’s ability to work, study, remain socially active and independent. Hearing loss has also been linked to diabetes, depression and dementia. A hearing check is a quick and easy way to learn more about their hearing health, and we recommend people over 65 should get their hearing checked every 12 months. “ ou are very well known in the region for your talents … Take us back to the beginning. When did you first start to draw and have an interest in illustration, and at what stage did you decide to turn that in to tattoo art? What was your progression to where your career is at today? How did you wind up in Coffs Harbour? My father's father taught me to paint and draw when I was a child; he was a landscape painter from South Africa. I won awards for school projects at school; I won the Commonwealth Bank Award. The winnings were 10 pounds, and I was only 8 years old. I knew I wanted to be a tattooist when I was 15. I went to the Royal Sydney Easter Show and saw the illustrated lady covered in tattoos, and I said I would love to look like that ... I told the lady that, and she told me I'd better go home and get started. Later in life I found out two things: my pop was heavily tattooed, which I never knew as I'd never seen any of them – he was a merchant seaman, my mother told me when I was around 21; and the illustrated lady was named Cindy Ray (stage name) and her real name was Bev Robinson, whom I still know to this day. Her family is the best known family of tattooists in the Australian tattoo fraternity. What a pleasure and a great way to start my tattoo career. The first tattoo studio I worked in was at Fred's Tattoo Studio in Granville. I also spent time working in Liverpool and Blacktown, before starting work in the world famous Sleevemasters in Kings Cross, where I was until 1992. Thanks to Greg Ardron and Geoff Rhodes and rest of the crew for furthering my career. In 1985 I went around Australia to meet all of the artists I could who were worthy; my idea from this was to start the Sydney tattoo show and to create better tattooing and tattooists in Australia with this competition. I started it off in Febuary 1986, and it became the largest running tattoo show in the Southern Hemisphere and ran for 20 years and then continued on to become the Sydney
Tattoo Expo, run now by business entrepeneurs. Then in '92 it was time to move on and leave Sydney, as it was doing my head in. I decided to move to Coffs Harbour. I thought Coffs needed a tattoo studio ... 22 years later, I think I was right. I used to come to Coffs Harbour as a child every year for holidays with my family for Christmas and liked the place. What was your very first tattoo, and is it still in its original state today? My first professional tattoo is in its same place and original state; it's of my first motorbike name and my name in a tombstone with skull and wings. I paid $6 for it and went back the same afternoon and got another one on the other arm and paid $8 for that one. What is the most common mistake people make when they come to see you? What advice do you give to people who are considering a new tattoo? When people come in and have already been tattooed by a friend, uncle, brother, cousin because he said he could tattoo and had a machine bought of eBay (how wrong?!) and we have to fix them … The best advice I have is go to a qualified tattoo studio, preferably PTAA Acretided, choose the design wisely, check the artist's work with photos etc. make sure they have a health department safety check, or ask to see sterilisation checks done daily. In your career has there been one tattoo that you're most proud of? I am proud of each tattoo I've done. It makes me strive to do better work, and I am inspired by some of the reasons people get what they get ... irreplaceable memories of lost loved ones or keepsake moments of life on them are always reminders. If a customer asks for a tattoo that you're 99% sure they'll regret, do you try to talk them out of it? Of course – especially if it’s a bad idea or in a bad place.
Do you think tattoo artistry gets enough respect as an art form? Or do you think it carries some kind of social stigma? It does carry a stigma, but it has greatly changed due to the ability of artists – especially the young up and coming, brilliant artists who have changed the view of people's opinions, as well as the evolution of tattoo ink colours and equipment, allowing them to produce anything at all on skin. Once a Rembrandt or Van Dyck could only be painted on canvas; it can now be produced on the living canvas of someone's body. People who would never have thought about getting tattoos have changed their minds, as they feel more comfortable at all ages – 18 to 90 years, from all walks of life. Do you think being addicted to tattoos is actually a condition? (Laughs.) Not a condition, but an addiction – absolutely! A tattoo is something a person can carry with them proudly. It is a transformation, going from a bare wall to a feature wall... once you start decorating yourself with a collection of styles and art you like and admire. For me personally, I have collected 201 skulls on myself from the years 1975 to 1988. I started as a single tattooist in Coffs Harbour, and I have had up to 20 artists go through the shop. Today I have a great team of staff and artists. If you weren't doing this for a living, what do you think you'd be doing? After tattooing for 33 years, it is hard to imagine doing anything else. But hypothetically, I guess I would be riding my Harley every day with my wife, travelling Australia restoring clocks and my fleet of Jaguars. What's your real name? Is it really Arm? FROM SHAKESPEAREAN ACTING IN LONDON TO TRAWLING THROUGH THE HISTORY OF THE AUSTRALIAN NURSES OF WWI - IT’S BEEN A CHALLENGING AND INSPIRING FIVE YEAR JOURNEY FOR WRITER CHERYL WARD, WHOSE PLAY THROUGH THESE LINES OPENS AT THE BUNKER CARTOON GALLERY, AUGUST 13.

heryl, Through These Lines is the first play you have written. Please outline it for our readers. It’s the story of an Australian army nurse serving during WWI. I researched letters, diaries and narratives of the original nurses to create my characters. Following Sister Florence Whiting over her four year tour of duty, we begin on the hospital ship Kyarra, as she leaves Sydney Harbour in November 1914, journeying up the African east coast through the Suez to Cairo. A short stint follows for Sister Whiting in the shadows of the pyramids at Mena House (a grand hotel converted to a hospital) before tours of duty on a British hospital ship, where she witnesses the onslaught of Gallipoli. Then on to the Greek island of Lemnos, where her skills and strengths are tested to the extremes, finishing with a long tour at the hospitals serving the Western Front. What inspired you to write Through These Lines? I started on this journey late 2009. I was researching an ammunition store and tunnels, under an old army hospital at Headland Park in Mosman, Sydney, hoping to put on a show somewhere local. I heard the stories of the nurses who had worked there. I had no idea of the contribution that women made to the Great War; I was fascinated, humbled and moved to tell the story and pay tribute to them. Once I started researching, I couldn’t stop. It took me to Lemnos, Gallipoli, Belgium and France. The initial season in September 2010 in the Mosman tunnels was a great success, but I just kept researching more, finessing the script, and four years later we’re on the road performing in amazing venues throughout NSW. I admire your tenacity; the research must have been a lengthy, painstaking exercise but 14

also very rewarding … Yes, it started with me standing in a small museum – The Hospital on the Hill, which had been a repatriation hospital during WWI that contained only one book. I read that book for an hour, amazed at a history I had never heard before. My curiosity was piqued, and Google was my best friend. I began discovering how pivotal the nurses had been, not just at home but overseas, serving on hospital ships, in tents, huts, old asylums, chateaux – anywhere they were needed. Six visits to the Australian War Memorial, countless books trawled and finally the first season was underway, before I realised I wasn’t anywhere near finished. I decided I had to stand where the nurses stood and see what they saw. I went to Lemnos and Flanders and pinpointed locations and created original research. My favourite shot is one we setup on Lemnos, a Greek island about 60 km from Gallipoli. The nurses' tents were constantly blowing down in the Lemnian wind; standing there, I could appreciate their experiences. The wind is epic, the sunsets astonishing and ground hard and full of thistles; it was just as they had all said. As a new playwright, was it hard initially to get support for your project? Yes, I did everything that first season myself. Wrote, directed, produced, designed the posters, sourced the props – I even did the audience induction speech most nights. This time I have a co-producer, Paul Whiteley and as the amazing Mary-Anne Gifford is directing, I finally get to act in the play; acting is my first and true love. I’ve had amazing opportunities presented to me, only to have them fall through for reasons beyond my control. You just have to keep on plugging and know that other opportunities will come if you keep on working hard. You've mentioned that besides being the writer, you also co-produce and perform in

the play. Tell us about your theatrical background ... I used to dance a lot as a teenager, but it never quite hit the mark for me. Then as I was walking to college on my first day at Randwick College of Graphic Design, I realised I wanted to act. I took a few years to gather the courage to take classes. When I finally did, they were with Lionel Long (Homicide and 70’s TV veteran) and he suggested I go to Stella Adler (under whom he had trained) and on a whim whilst doing the backpacker thing, I auditioned at the Los Angeles Stella Adler Academy and got in! I graduated in 1995 and returned to Australia, where I’ve worked on and off for almost 20 years, mostly stage but occasionally on TV (I’m currently crying"Ahhh" when rear-ended in the Allianz commercial). After having my daughter in 2008 I decided to retire, but that lasted about three weeks, and I auditioned for the Royal Academy of Dramatic Art (RADA) in London for their amazing two month Acting Shakespeare course and got in. I was proud to be chosen to play the lead in the final course production of Queen Lear (adapted from King Lear.) On return I was itching to continue flexing my creative muscles and that led me to the tunnels in Mosman and this amazing WWI journey I’ve been on ever since. Do all the performance venues have a wartime connection? The idea for the whole 2014 NSW tour, which started in late July, came from an audience member from the 2010 performances, who said I should check out Fort Scratchley in Newcastle. It was the perfect place. Putting on the play in a place that has relevance lifts the whole piece, contextualises it and gives the audience an oppor-
tunity to participate. So yes, I’ve spent a lot of time on Google. Then I spent a lot of time on the road, getting to as many venues as possible. Some I had never heard of, like Lithgow Small Arms Factory Museum, which opened up whole new avenues of research. Trial Bay Gaol, with its history of being a place of internment for German Australians during WWI and places like The Bunker Cartoon Gallery in Coffs are gifts. Other venues like Manildra Soldiers Memorial Hall and Mittagong Playhouse (Memorial Hall) were built to welcome the soldiers and nurses home. We will be visiting the Wagga Wagga showground, site of the Kangaroo marches in 1915 that saw so many country boys head to the city to enlist. In Lismore we’re using a traditional theatre space – it’s the only one on the tour. Cootamundra we’re at the Ex-Servicemen’s Club, performing in the place that honours those who serve. You have seven performances in Coffs Harbour at the Bunker during August. How will the Bunker work? The Bunker may not be the correct era and I mulled that over for quite some time, but once I had visited and walked the space, I knew it was perfect. It was so like the abandoned bunkers I had visited in Flanders ... so like the Nissen huts the hospitals were made from in many cases. We will transform the space with our improvisational set, utilising the close confines of the bunker that mimic the spaces the nurses had to work in. It really is the closest we come to the spaces they worked in. Thanks Cheryl.

Negotiating bends, mud, snow, or loose gravel at high speeds requires intense concentration to avoid fatal errors. “Every driver I know trains every day – both for fitness and mental preparation. I do my exercises in a sauna, to make sure I’m acclimatised to the heat in the car,” he said. “A lot of people misinterpret motorsport and while it’s not specifically an athletic pursuit, it’s definitely physical.” RALLYING SUCCESS Aged 34, Chris Atkinson is Australia’s leading driver in the World Rally Championship and the only Australian driver employed in one of the big factory teams. When Subaru signed him to their team in 2005, he became the first Australian to win a factory seat. Racing for Subaru in 2008, he gained his best WRC results – taking second place in Mexico and Argentina, out of five podium finishes that year. Late 2008 was also when Global Financial Crisis really bit, and manufacturers Subaru, Suzuki, Toyota and Honda all pulled teams out of motorsports. “Obviously it was a bit frustrating for them to pull out at the peak of my career.” 16 coffs coast focus.
Frustrating barely touches the despair many motorsport drivers experienced in the years following the financial crisis. Aside from isolated, yet strong WRC starts in a variety of vehicles, Atkinson made it back by dominating the 2011 Asia Pacific Rally Championship, winning the 2012 series and driving for MINI in the last five rounds of the 2012 WRC. “I’m proud to be the only Australian to have the results I have. If my career was to finish now, I wouldn’t be disappointed.” HYUNDAI’S WRC ENTRY Last year, Hyundai Motorsport recruited Atkinson as a test driver for the developing Hyundai i20 WRC and then announced he would be one of three drivers sharing their second car in the 2014 WRC, behind lead driver Thierry Neuville. Instead of spending years developing a rally vehicle, Hyundai has taken the production model 1600cc i20, improved the suspension kinematics, stiffened the chassis, added a rear wing and front spoiler and entered it in the 2014 FIA World Rally Championships. “In less than one year, we have built and tested a brand new WRC-specification car, the Hyundai i20 WRC, and established a professional team and modern motorsport facility,” Hyundai Motorsports team principal Michel Nandan said late last year. Nandan still describes 2014 as a “learning season” to gather information “to be ready to fight the next season”.
“Our priority is the development of the car; this is our main goal,” said team manager Alain Penasse. For a team focusing on learning and development, results have been outstanding. Hyundai Shell World Rally Team sits in fifth place and lead driver Neuville is in sixth position. Atkinson is at 16, a result of his 7th Rally Mexico placing in his only 2014 race. “They’re taking a different approach to building a team for racing. We’ve got a very good, experienced team and I’ve really enjoyed working with Michel Nandin, as he’s a very experienced engineer,” Atkinson said. SUCCESS IN MEXICO Finishing all stages of Rally Mexico in March was all Hyundai asked of Atkinson and it became the first WRC event both the Hyundai vehicles managed to finish, with the lead driver on the podium. “We are very happy to have Chris on board for Rally Mexico, an event he has contested several times during his career and one that he knows very well. We thought Chris would be the ideal choice for our first rally on loose surface and we were impressed with Chris’ pace in Mexico last year,” Nandan said. Rally Mexico was the first of the season on gravel. The high altitude, hot temperatures and long stages make it a gruelling experience. Atkinson and co-driver Stéphane Prévot registered a top ten placing on the first day, despite suspension glitches. Thursday marks the beginning of the racing event held at Raleigh Raceway. Grab a blanket, the picnic basket, the family and "get your backside - trackside" if you feel so inclined. The racing continues on Friday, where drivers attempt to log the best lap time and put on a show for all who attend. Saturday morning is the spectacle of the Spectacular, with all of the participating vehicles joining in a parade into the local township of Nambucca Heads. The parade travels along the Pacific Highway under escort of the local police and arrives in the main street. It is one of the only events in NSW where the police stop traffic on the highway for such a parade. If you have the chance, it's worth grabbing yourself a decent vantage point to view the parade as it rolls into town. Seeing 500 cars snaking their way up the hill into town is a memorable one. Upon arrival, the cars are all parked in the Bowra St, which will be blocked off to traffic for the morning. Kimberlei Goodacre here are you from? How did you wind up in this perfect part of the world? I spent 34 years living, studying and working in metropolitan Canberra, regional and remote New South Wales and far north Queensland searching for paradise, and then I blew into Coffs Harbour seven years ago and I plan to stay until I start pushing up daisies. I’ll truly be “local” then! I love Coffs Harbour. It is a contemporary idyll for a modern family. The beaches, the rainforests, the people, the paddocks of sporting facilities, the plethora of educational opportunities, the compassionate and accessible health care, the abundance of talented artisans from all walks of life, the Aboriginal culture and heritage, the community festivals and colourful lifestyles; it is the fusion of all these that makes Coffs Harbour my dream home. When did you first decide to study law? What was your career prior to that, and what was the defining moment in your life when you thought, "Yep, that's it – I'm going back to uni to study law!" When I was a kid, law was something rich kids did. My dream was to become a mum and a checkout chick. I wanted to push the big buttons on the cash register at the local shop and have someone hand me money (obviously back when the dinosaurs ran the shop pre-scanners and self-serve!) At 14 and 9 months I realised my dream, and its faults. Long hours on my feet working a calculator and the money they paid wasn’t for me! Not my cup of tea … After finishing school, I floated through two university courses: communications and then psychology, but didn’t really settle into the professions they were designed for. Rather, I dabbled in administrative roles in the public service and law firms, did a stint in beauty therapy and then delved into community development and planning for local councils. Then I had three life altering events: the death of my brother, my divorce from my best friend, and my diagnosis and battle with cancer. Suddenly at age 27, I realised I didn’t have time to waste. I wanted to make a difference in the world. I chose to study law and I chose to become a mum on my own. I gave birth to my daughter, Lily Mei, the day after I finished my first law exam. I was on my way! How has your career as a lawyer progressed, and what attracted to you to working with Legal Aid? I was admitted as a lawyer in 2006 and worked initially in a progressive private law firm. I soon learnt that the slick and gloss on the sign and the swanky waiting room and wood panelling was a hive of money hungry solicitors trained to extract every last available drop of that sweet nectar called money. I left and joined the ranks of Queensland Legal Aid working in regional and remote communities in the far north of that state. It was phenomenal. I was exposed to every type of injustice, inequity and disadvantage that the law can impose on people. I learned the ropes and honed my skills, and I loved every minute of every day I worked. Every person had a different story but often were unable to articulate in court, where the repercussions may be harsh and cause lifelong impacts to the person directly and their loved ones. My role was to be their voice on their road to justice, and I loved it! I was making a difference. I’m not saying it was all roses; at times it was hard work, and as a single mother I struggled every day juggling my daughter’s needs and my work.

Mid North Coast Local Health District Health Promotion staff Trish Davis, Richard Ball and Amy Sawyer supporting the Heart Foundation Walking program.
Walk this way. When it comes to leading a healthy lifestyle, it’s vital to eat a nutritious diet that balances all of the food groups, but did you know that exercise is just as important? The Mid North Coast Local Health District works with many partners in the community to promote healthy living, one of which is the Heart Foundation, which has a nationwide walking program. Health Promotion Officer Trish Davis tells us about the many benefits of walking and how easy it is to join with others to enjoy all that walking has to offer.
W
e often hear about the benefits of walking. Is it really that good for us? There are so many reasons why walking is the "way to go". It is free and you can do it alone, with a friend, or with a group. The health benefits are huge. Australia has seven national health priority areas, and regular physical activity e.g. walking, can help address six of those seven. They are cardiovascular disease, diabetes, cancer, injury (in the elderly), mental health, asthma and arthritis and musculoskeletal conditions. So an activity that is free, by doing it regularly, is certainly a worthwhile investment. It is good to know that not only do we get the health benefits from regular physical activity (30 minutes every day of brisk walking) you will feel better, look better and perform better. After all, it’s all about having the energy to do the things we have to do, and then having enough energy left over every day to do the things we want to do. Walking briskly most days of the week will give you that. So why wouldn’t we do it? What is the Heart Foundation Walking program all about? It’s all about making it easy to increase regular physical activity. Each walking group is led by a local volunteer called a Walk Organiser; they are the glue that holds this program together. Each walking group has at least two Walk Organisers and they decide the route, times and days for the walks, they are the main point of contact for group members, and they help the Heart Foundation stay in touch with all the walkers. (there are three working in Health Promotion across the Mid North Coast Local Health District) which means that I’m there to recruit new walkers and new Walk Organisers and more walking groups. During Heart Week in May we organise community walks across the district and often join each other for a healthy breakfast after the walk. This is one of those events where we laugh and have a lot of fun. What got you started with Heart Foundation Walking? Many years ago I worked as a Community Nurse and provided care to older people who for one reason or another weren’t able to make informed healthy choices about their heart health. Their quality of life may have been greater had they spent more time in their earlier years involved in physical activity. This got me thinking about how I might be able to support them to increase their daily activity now they were older and had chronic illnesses, and it seemed walking was definitely the way to go. The Heart Foundation offered a program to support people of all ages and ability to walk, so I signed up and here I am 26 years down the walking track still trying to encourage people to walk and join a Heart Foundation Walking Group. How do we join the program? It is really easy to join one of our Mid North Coast walking groups. You can go to the Heart Foundation Walking website www.heartfoundation.org.au and click on your postcode to find your local Walk Organiser’s contact details.

Ride for Sick Kids Hadley Cycles Ride for Sick Kids is a Charity bike ride that raises money to support the Ronald McDonald Houses in Northern NSW to keep families together with sick or seriously injured children. Ronald McDonald Houses provide a home away from home and our Ride for Sick Kids wants to ensure this service remains. In it's tenth year the ride will be passing through late August. hat is the background of the event? Nine years ago, inspiration and the determination to do something more significant for Ronald McDonald House programs Northern NSW created the Hadley Cycles "Fortunate Fathers Riding for Less Fortunate Kids’ Charity Bike Ride" (fondly referred to as the "Ride for Sick Kids"). After months of rigorous training, this group of McDonald’s owner/operators, suppliers and business partners set upon a mammoth five hundred kilometre bike ride down the New England Highway of Northern NSW in August 2005, to help fundraise for Ronald McDonald House Newcastle. Through the amazing support of business partners and the local community, what started out as a goal to raise $50,000, to help finance the facilitation of 6 self-contained units at Ronald McDonald House Newcastle, grew to an unbelievable $85,000 – an amazing achievement which not only assisted in realising the units at the House, it helped them open early in 2006!
After the success of 2005, the Hadley Cycles Ride for Sick Kids has become an annual event. The annual ride has continued to grow year on year exceeding all of our fundraising targets. And the event is in its 10th year… how has the event developed in the past decade? The event that started out in Newcastle has achieved so much that it is now a national ride that takes place throughout Australia. Our Ride has branched from just McDonald's owners and operators, to many different businesses up and down the North Coast of NSW coming on board to sponsor and take part. What is the route, who can ride, and how many kilometres will be covered? The Route begins in Inverell riding to Grafton, Coffs Harbour, Port Macquarie, Forster before returning to Ronald McDonald House Newcastle. Our 26 riders will cover over 700 km in 5 days. Anyone is welcome to join our cause that is cycle fit and comes with a large donation which goes towards supporting the Ronald McDonald House Programs in Northern NSW.

This year is a bit different for me, as I don’t have any expectations going into the event.” Richard currently holds a Professional Triathlete Licence, and his main focus for the next few years is to keep working hard at triathlons, which involves not only running, but also swimming and riding. Even so, running is still his thing. “I love beginning the day with a run or finishing the day off with a run. Anyone who runs knows the feeling of satisfaction you get at the end of a run and how good you feel afterwards.” Depending on his work schedule, a standard training week for Richard may include some shorter tempo runs, speed sessions, and hill repeats during the week, with a long run on the weekend.

uropean born and raised, you've been in Australia for the past five years and have only recently moved to Coffs Harbour – how far you've come! I grew up in an absolutely amazing place. We had WWII bunkers, shipwrecks, lakes, forests, fields, abandoned buildings, medieval castles, junkyards to play in and there was heaps of culture happening all the time. We were so lucky. Everybody who does the Danube river cruise will pass by our funky hometown, Bratislava – it's the one with the castle that looks like a table turned upside down, a UFO flying saucer bridge! In the past we had the Iron Curtain running below our windows, literally. You could see the free world, but you couldn't go there. They would shoot you. Luckily, we have been free since 1989! It was the strong political heritage of our country that made me study political science at uni, just because I found it all very interesting. I always knew I would end up in a creative industry, though. When we moved to Australia, I grabbed the opportunity and did diplomas in 32 coffs coast focus.

You speak many languages; what languages do you speak? Slovak and Czech are my native languages. Because we are such a small country, children are encouraged to learn other languages from early age. You won't get far speaking Slovak only. We admire everything foreign, so there's always been plenty of motivation to learn. Everything from Hokey Pokey to Grunge was of great help. Also a bit Croatian, Slovenian and Serbian. They speak their language and I speak mine, and we understand each other. Everything mingles in Europe. What do you love the most about this

weet n Whether it's a fruit salad, grilled on a kebab, in your sweet ing that sour sauce or crowning your upside cake, there's nothing art, is is as versatile or amazing as pineapple. The amazing part, bromelain. Bromelain is the enzyme in pineapple that makes it a phenomenal digestive aide and a brilliant meat tenderiser. It's also a known anti-coagulant, and has recently been used in a lot of anti-aging formulae. The bromelain also prevents gelatine from setting (can be equalised using chilli seeds), and can be demonstrated by holding fresh cut pineapple against your gum. It tingles first but then begins to ache ... you know ... If you are OK with a little pain in the name of science (it demonstrates the freshness of your pineapple). Recently, as an alternative to most regular pineapple recipes, I was introduced to slow roasted pineapple with cinnamon sugar, a Brazilian barbecue treat, and something that must be tried to be believed!

PASFIELDS RESTAURANT BAR DECK AND PARADISE PALMS RESORT

MAUZ’S SMOKEY BAKED BE ANS INGREDIENTS. 1½ cups mixed dried beans (e.g. cannellini, black-eyed, turtle, borlotti, haricot)* 6 whole dried chipotle chillies* 3 carrots
3 sticks celery
4 tbsp maple syrup
1 brown onion
4 tbsp Melrose Organic Worcestershire Sauce*
6 - 10 garlic cloves 2 x 810 g tins chopped tomatoes
2 tbsp liquid smoke* Black pepper
4 tbsp arenga palm sugar*
METHOD. Soak beans in plenty of plain, cold water overnight. Drain, rinse and boil in a large saucepan of plain cold water for 45 mins to 1 hour until tender. Drain, reserving 2 cups of cooking liquid. Preheat oven to moderately hot and ... Gently fry onion in a generous splash of olive oil until transluscent. Add peeled and chopped garlic, and chopped carrot and celery, stirring until coated in onion/garlicky goodness. Add remaining ingredients (except for beans and bean water) and allow to simmer for 5 minutes. Place cooked beans in a large casserole dish with a tight fitting lid. Pour over tomato mixture and 1½ cups bean liquid, and mix well. Cover and bake for 25 minutes, lower temperature to moderate and continue cooking for a further hour and a half. Check liquid levels half way through and add remaining bean water if mixture is too dry. This will easily serve 8 - 10 hungry beansters, and will also freeze well. You can substitute canned beans for dried ones if you want to be more spontaneous. Just rinse thoroughly and use extra water in the tomato mix. *All available locally. 40 coffs coast focus.
re you local to Coffs? We feel we are now, having been here five years now. Once our little girl started kindergarten this year and playing sports, it made us have to go outside the resort gates from working seven days a week, day in and day out, a little more, so we began to meet people and see the great things and people the area has to offer. Why did you initially move to Coffs Harbour? Because Todd thought it would be great for fishing! But he has never really had a chance to get out there. He booked a fishing charter for his buck's day, and I cried for him when I saw the disappointment on his face when they called him two days before and cancelled it on him, as they'd decided they were going to do maintenance on the boat. I was 6 months pregnant and wanted a business where I could still work with a small family from home. Well, I certainly got that straight from the day I left Coffs Hospital and had to sneak in feeding between phone calls and guests. But the big plus of it has been our character filled little girl, Riley, has been at my side and become a beautiful little fun filled girl, which is exactly what I wanted. Where is Pasfields Restaurant? It is set high on the hill at Paradise Palms Resort in Korora. People seem to be finding it hard to find or get to, but it is only 4 km north of the plaza, so a quick taxi ride anywhere from Coffs to Emerald really. What sets it apart from its competitors? WOW … Another outstanding Sawtell Chilli Festival, with our 16th event being held on the 5th July. The Chamber had an overwhelming number of requests from businesses wanting to secure a site at this year's event, and ultimately we ended up with 90 stallholders showcasing not just chilli products and food, but also local produce, art and craft. There were also rides and activities for the children, and yet another glorious sunny Sawtell day on offer ensured that families from as far away as Hobart enjoyed themselves. Winter time is when back issues become evident. Here are some moves and tips to help you strengthen and support your back – and in turn, yourself! Sitting and Posture – tired muscles make you slouch, putting pressure on the neck and back. To maintain a relaxed yet supported posture, change positions frequently. If you sit a lot during the day, take a break every hour for 5 mins – stretch, stand, or walk. Roll your head, shrug your shoulders and curve your spine. To support your sitting posture, keep your knees slightly higher than your hips by
placing your feet on something and if you use a computer, elevate it so that your head and neck are straight. Invest in a good chair, pillow and mattress – a UK study identified that office workers sat for approximately 32 years of their lives! We also spend a lot of our time sleeping, so make sure you have the correct pillow and mattress. Change pillows every 18 months. Remember, your
body needs a good night’s sleep to repair itself. Abdominal and pelvic floor exercises – the more you use these muscles, the more they strengthen and then support your lower back and spine. Keep warm – keep your lower back/ kidney area covered and warm. Move and exercise – try the following and take yourself to a yoga class!

hen and why did you first decide to become a doctor? At school, I always planned to be an aeronautical engineer until the last minute, when I decided that sitting in front of a computer all my life was going to be a bit dry and I decided to do medicine instead, mainly because of the people contact. What do you recall as being some of the most important things you've learned since launching your career in medicine? The most important thing is to enjoy what you are doing. All jobs have some drudgery and repetition but if you are not enjoying it, try and re-invent yourself/retrain/change things. Computers have been a major change in medicine. We now have an almost infinite amount of information available to us, which makes my job both easier and harder. I no longer have to remember many mundane details, but on the other hand, Dr Google is correct a good deal of the time and patients often come armed with more knowledge about their condition than I have. What's your speciality? I am a general practitioner, but my special interest has been obstetrics. hat, what do you do to unwind? What is a perfect day for you? I have had a lot of fun playing keyboard in a band for the past 15 years, and we still “jam” in my shed most Tuesday nights. We play Rock and Roll covers and played in the local pubs and clubs for a time, but now we just play for private parties. Mark Palmer is our lead guitarist and driving force, and Liz Paterson our singer. I also play golf and tennis and ride a pushbike to stave of the middle-age spread! What would you say to a young person considering studying medicine? Go for it, I'd say! Medicine combines science, the constant variety of people you see each day, portability (I have worked in England, India, Melbourne and Coffs Harbour), a good income, and the ability to re-invent yourself at anytime – branching into different medical areas. Coffs Medical Centre, where I have worked for the past 25 years, was one of the original medical centres in Coffs with two doctors in the 1960s. We now have 13 doctors of all ages, five nursing sisters, psychologists, a pharmacy, pathology, podiatrist, dietician, exercise physiologist, asthma and diabetes educators, medical and nursing students and a range of other services – a very different place to 25 years ago. Eyelids The eyes, "the windows to the soul", reflect emotions and are often the best features of the face.
Droopy Eyelids Ageing and its attendant problems and effects, causes slackness and a resultant drooping of eyelid skin. This is seen early in eyelid skin, due to its thinness, as well as the effects of gravity, and results in a puffy, droopy appearance. Those affected are aware of the problem and are not helped by frequent, solicitous remarks by many around them about the 'tired, lack of sleep' look and advice "to sleep and rest more".

The treatment The emphasis of treatment is on restoration and a natural but bright eyed and fresh appearance. Upper lid surgery involves the removal of stretched skin and muscle and, when appropriate, the reduction of eyelid fat. Lower eyelid surgery is focused more on surgically tightening the lid and improving skin quality with the use of a carbon dioxide laser. Excess fat is often removed
thru a transconjunctival approach (from within the eyelid) and with no visible external scar. Skin removal is hardly done, in order to avoid long-term problems with downward displacement of the eyelid. The surgery is done under sedation and local anaesthesia ('twilight' anaesthesia) and is a day procedure. Recovery is rapid and involves mainlyrest and cold compresses. The surgery is intrinsically safe and has very few risks involved.

De Quervains Syndrome Common Hand Injuries
D
E Quervains - a funny name for a not so funny pain at the wrist. It involves two of the main tendons that move your thumb into the hitch-hikers position (abductor pollicus longus and extensor pollicus brevis), with the pain commonly felt in the gap of your wrist at the base of the thumb. The pathology is thickening of the fine sheath covering these tendons at the wrist, causing narrowing or stenosis within. It usually involves the dominant hand, and is a mechanical pain brought on by gripping, pinching or holding activities. Localised tenderness can also be associated with visible swelling, and often mobility of the thumb becomes limited. The onset can be sudden due to a blunt trauma or unaccustomed forceful twisting of the wrist, but more often is due to repetitive thumb or strong gripping action. Hence those who play golf, tennis and bowls, carpenters, computer operators, even mums with newborns are particularly prone. These days, video games and mobile phone use have become common causes. On assessment it is important to
differentiate from other possible conditions such as arthritis of the base of the thumb, irritation to the sensory nerve supplying back of the thumb, or even a fractured scaphoid, to name but a few. The diagnosis is usually made by clinical examination, but can be confirmed by ultrasound or MRI. As with any tendon problems, the earlier the problem is assessed and aggravating issues addressed, the quicker and more responsive treatment can be. The most important factor in managing this condition is to modify aggravating activities, minimising pinching activities and thumb movements. Correct choice of splinting is integral in resting and supporting the two tendons involved - incorrect braces will fail to give the required level of support. Imbalance of muscles around the wrist is often a major contributing factor, so this, along with correction of poor or faulty technique or posture, needs addressing during a comprehensive rehab program for full recovery and to prevent recurrence. These photographs are of my apprentice, ent, Rahwa, before and after using the treatment, but here’s the twist: Goldwell Keratin Treatment is not a chemical straightener! Applied to clean hair, the product is dried in, straightened, washed and conditioned and then “finished”. The result will last three months, but with the appropriate aftercare it can last up to five months. Essentially, it adds keratin bonds - the base make-up of hair - which makes the hair much more manageable without having to use nasty chemicals (many will remember the formaldehyde treatments of a few years ago). Now that we are in the middle of winter and we have been feeling the cold, we are more tempted to stay under the blankets a little longer or reach for some more comfort food and drink to warm us up ... So how do we keep our motivation going? We need to look at ways to keep o moving, and the best way to do that is to do something that you enjoy, grab a friend and write a plan! Take the time over a hot drink to set your fitness goal for the next 6 weeks – you need to make it achievable, realistic, measurable and also desirable to you. Write it down where you will see it every day – you need to be accountable to yourself and to somebody close to you, so let somebody know! They will also be a great source of support and encouragement when you need it.
Join a club, sporting group or sporting group doing something that you enjoy doing – to help with motivation having a set time to workout i.e. a fitness class, personal training session, team training, a walk with a friend will help with the lack of motivation in these colder days. Now is the time to get moving, as it will be warmer again soon, and remember that “beachbodies are made in the winter”.

lenty of “Christmas in July” events have been staged around town just lately and one of them being held at the Split Cafe & Espresso Bar down at Sawtell. Coffs Coast Health Club hosted a fabulous Christmas in July Cocktail Party for their members and guests. Giving it a touch of the old hot Latin dancing and Caribbean fandangos certainly keeps the cold at bay. It was time for “Club Caribe” at the Mad Max Mexican in Coffs Harbour. This new funky venue in town was hot and happening just recently, when Christina Monneron from Kulturithmik and her team were spicing it up with their vibrant, colourful and ever energetic dancing entertainment. Along with the delicious Mexican dishes, the entertainment came in the form of a mix of Caribbean Kizomba, Dominican Bachata and Cuban Salsa. The Grand Ballroom was the place to be to step into a fabulous “Winter Wonderland”... Guests got to sip champagne on arrival and enjoy a decadent three course dinner. Live entertainment was provided by Akmal Saleh & Rhydian and The Residuals. Along with the delicious meal and fabulous entertainment, there was an extravagant array of prizes to be won, including a Treasure Chest with over $1,000 worth of jewellery donated by Parry’s Jewellers. The event was supporting the SONY Foundation, and much needed funds were raised on the night. The Sawtell Chilli Festival was once again a massive success! Literally bumper to bumper with locals and visitors all enjoying the colour, vibrancy and entertainment of this popular event. The
choice to indulge in a number of delicious chilli sensations was, of course, in abundance; there was even a chilli beer to warm the cockles of your heart! A little cocktail party was in order for House of Le Dãin Designs at Sawtell just recently. Approx. 50 guests enjoyed cocktails, canapés and tiered plates of delicious sweet treats. The night was to celebrate its first birthday and becoming the new major jewellery sponsor for the Coffs Harbour Racing Club. Lisa Baxter is from Gullane, a small village just along the coast from Edinburgh, Scotland. She studied animal health and care in Edinburgh. About two years ago she was offered a job as a marine mammal specialist at Dolphin Marine Magic. Her partner, Stephen, had also always dreamt of moving to Australia, so Stephen and Lisa decided to make the move! The couple wound up in Woopi and have found an amazing house right on the headland, where they watch whales and dolphins from the balcony!

hy do you love animals so much? What type of childhood did you have in Scotland, and how has that impacted your career today? I honestly believe I was born loving animals; it just comes so naturally to me. I had a very privileged childhood in Scotland; we travelled a lot on holidays, and I was always surrounded by animals. My upbringing and my family have heavily impacted on my career; they always knew I was going to work with animals and have always encourged me to do so and given me lots of support (and funding) to help me achieve my dreams. After your studies you travelled to New Zealand, where you worked with documentary film maker, the Lion Man. Talk us through the good and bad aspects of working with big cats and for those who havent seen the incredible Lion Man, briefly explain what the documentary was about ... After studying, I still wasn't sure exactly what I wanted to do as a career, so I took a gap year where I travelled to Florida to volunteer with rescued exotic animals. There I got a lot of hands on experience with big cats, bears, monkeys, bats, reptiles, birds and much more. I then travelled to New Zealand to volunteer with the Lion Man; I used to watch his show, and I was just amazed at what an amazing relationship he had with his big cats. I

How long do you both anticipate staying in Australia? Will we be able to call you both Aussies soon? We love the lifestyle we have out here, there is more wildlife than I could ask for and Stephen loves his surfing, so we will stay here as long as it works for us. We also have our first pet together, Hamish the Scottish Rainbow Lorikeet, who has stolen our hearts. We love Australia, but I think we will always be known as Scottish – especially with our accents and our humour. For those who don't know, you and Stephen both live next door to our editor, Melly Shute, in Woolgoolga. What's that like? Does she throw wild parties? Melly and Chris are great neighbours. We enjoy chats together outside our homes on a regular basis, but we still haven't shared those bottles of wine yet! Sawtell is a really friendly town with everything at your doorstep – beach, shops, cafes. We love it. What is a YouTube Channel? Basically, a YouTube channel is a web page where you can share the videos that you make with the whole world. Anyone can have a YouTube channel and it’s free to set up. Is it hard to get noticed on YouTube? YouTube is massive, and it can be a hard beast to crack! It’s the second biggest Search Engine in the world and is owned by Google. Did you know that four days worth of video is uploaded to YouTube every minute! Trying to get noticed through all that noise can be a little tricky but if you persevere, while at the same time, producing some half decent content, then eventually you’ll make it through. You have a DIY YouTube Channel, what is your Channel about? My YouTube channel "shaneconlan1" is targeted at the weekend warrior. Its catch cry is “DIY For Knuckleheads”, which I think a lot of us are when it comes to handyman pursuits. My Channel is a combination of two things. Initially it started off purely as a DIY site geared towards solving common, everyday home maintenance problems like, how to find a wall stud, or how to unclog your toilet easily and without mess. I then started building simple, but really cool pieces using recycled materials e.g. tables, chairs, planter boxes and even a sand pit. These particular videos show my audience that it can be really fun and you don’t need a lot of money or a garage full of expensive tools. How did all this begin, and have you always been a tradie? It was by pure accident really. I was on the Internet one day looking up how to do something (regarding

a carpentry job l was doing) on YouTube and a light bulb went off in my head. The content that l was watching was not all that useful and it wasn’t at all interesting to watch. I thought that l could do better and away l went. I’ve been a carpenter for most of my working life except for a couple of years back in the early nineties when l managed the family wheat farm in Northern Victoria. Where do you get your ideas for your videos? First of all l do a little research on what people are looking for. If it’s to do with DIY, l try to find areas where there are lots of people searching to find a solution to a particular problem. When l identify that pain, l then make a video to offer the solution. In regards to the simple projects that l build, l search the internet as well as magazines to see what’s trending at the moment and build something relevant to that trend. Pinterest is a great site to check out for that kind of thing. How do you film and edit your videos? How many people are a part of your production? Seriously l have the dodgiest set-up ever for someone that produces videos. I film with my iphone which is attached to a mini tripod that sits on top of another tripod! It just goes to show that you don’t have to have top of the line equipment to get your content out there. That’s not to say l wouldn’t love to have a better set-up. I do everything myself including the videoing, editing and uploading. Oh yeah and my own hair and make up (laughs). How many people subscribe to your Channel and what does that mean? Currently my videos have been seen over 2.3 million times and my subscriber base has just topped 17,500 people. YouTube ranks your content according to a number of factors. One of those important factors is how many people subscribe to your channel. The more subscribers you have, the more relevance YouTube gives you. So make sure you all click that Subscribe Button under my videos … hint, hint. So does that mean you have the
advertisements at the start of your video and how does that actually work? Do you make money from the videos? What happens is that once you achieve a certain level of success, YouTube invites you to become a YouTube Partner which entitles you to earn some revenue from the ads that are played prior to your video starting. You only receive income from the ad if someone actually clicks on it. How often do you upload videos and how do you keep the content fresh? Do you take requests? As of late, l’ve tried to upload one every couple of weeks or so. I’d like to do a lot more but finding the time is always the issue. I try to make my videos as much fun as possible while being informative at the same time. I also try and mix things up a bit by doing a DIY tip one week and a building project the next. I do like getting suggestions for future videos but they need to meet a set criteria for me to warrant taking the time to make it. Where do you hope this takes you and what time frame are you giving it? That’s a really tough question. At the moment l’m just doing this one video at a time. You never know what opportunities may pop up in the future. My main objective is to keep having fun and continue to be a trusted expert in my field - which l think is happening at the moment judging by the comments that l receive from my videos. We are blessed on the Coffs Coast with some wonderful opportunities for nature based tourism. There are so many things we can do that are only a short drive, walk or bike ride away. On the back of Peter Kageyama’s (author of "For the Love of Cities") workshops in Coffs Harbour, it is always good to be reminded of the natural beauty of our Coffs Coast, and of how we, and our visitors, can enjoy those opportunities.

hether we are standing on a headland watching Humpback Whales on their migratory path, or wandering along our magnificent beaches, our coastal strip is a joy all year round. The Solitary Islands Marine Park has its southernmost point at Muttonbird Island, and there are great recreational opportunities across the park. Who hasn’t stood upon some of our beaches and thought: "All this, just for me?" The fabulous Forest Sky Pier at Sealy Lookout was a finalist in NSW 2013 Tourism awards. It provides us with the perfect vantage point to view from our Solitary Islands Marine Park to the mountains. Standing more than 300 metres above Coffs Harbour at the lookout, it is easy to better understand the vastly different types of country that makes up the Coffs Coast. Dorrigo is less than an hour’s drive from Coffs Harbour and the entrance to part of the Gondwana Rainforests of Australia. This World Heritage site, one of only 12 natural World Heritage sites in Australia, is right on our doorstep. Visiting early gives a better chance to see some of the 128 species of bird recorded in the Dorrigo National Park. I
am writing to invite you to join me on a journey, exploring my favourite gardens of my homeland, the South Island of New Zealand with Quadrant Australia departing in November 2014. When I left New Zealand thirty years ago, nobody opened their gardens and over the years I have watched the situation change, noticing more and more lovely gardens opening their gates to the public. Even so, Richard, my husband, and I were amazed when we undertook a ten day reconnaissance of the South Island earlier this year. The variety and standard of the gardens took us completely by surprise as we visited gardens large and small, town and country, historic and not so old, seaside and alpine, gracious and quirky, with many of international quality. The garden owners themselves, without exception, were welcoming and passionate and included some incredibly knowledgeable plants-people, many of whom are recognised internationally. And then of course, the gardens are all
set against the magnificent backdrop of the South Island itself and we will be experiencing the lakes, mountains, glaciers, valleys and coastlines of one of the most beautiful islands in the world – in my unbiased opinion! And did I mention the food and wine for which NZ has earned such a great reputation? Some people, on hearing of the length of this tour of a relatively small island, have expressed surprise; but believe me – it’s just the tip of the iceberg, and I have had to leave out a number of gardens I would love to have included. Nevertheless, we will not be racing and will have time to relax, with the occasional day off, and time for retail therapy! So please come – we are going to have a great time and I promise not to introduce you to too many of my relatives! Matt Becker. att, you are a true blue Coffs local. Tell us a little about your background and why you got into the field of physiotherapy? I grew up in Coffs Harbour from the age of three. I loved being involved in sports from a young age, including swimming, soccer, surf lifesaving, BMX racing, martial arts, surfing and rowing surfboats. The coastal environment, friendly surroundings and a supportive family offered a great environment to grow up in. After completing Year 12 at Orara High, I moved to Canberra to study a Bachelor of Applied Science in Sports Coaching to pursue a career in coaching competitive swimming. University was a great experience, and I returned to Coffs to coach swimming under John Neville. The following year my thoughts turned towards Physiotherapy. By age 21 I had suffered numerous mild musculo-skeletal injuries, chronic bilateral ankle instability issues and bilateral shoulder reconstructions. I enjoyed the rehabilitation process and environment of helping people – so I pursued and completed a Physiotherapy degree at Sydney University 1996. Many other injuries followed, and by age 36 I had experienced 9 orthopaedic surgeries and one neck surgery. So, you could say that it was a means to an end! Coffs Coast Sports Physiotherapy (CCSP) is not your average physio clinic; what services do you offer? My wife, Linda, and I opened our first clinic in Albany St in 2006, offering a personal service with quality physiotherapy assessment and rehabilitation service and added our Woolgoolga Clinic in 2014. Our physiotherapy services have expanded, and we now offer exercise physiology, podiatry, remedial massage therapy, acupuncture, pilates and traditional Chinese medicine. Our Therapists see a variety of general to complex injuries of the neck, back, SIJ and pelvis. Upper limb injuries of the shoulder, elbow and hand. Lower limb injuries of the hip, knee, ankle and foot. Other injuries we see include muscle strains, stress and acute fractures. 68 coffs coast focus.

I
n times gone by, there was the option of going to the cinema in the Jetty Village of Coffs Harbour at the Jetty Memorial Theatre, which housed the “Memorial Cinema” from the 1930s to the mid-1970s. 2014 sees history coming full circle, with the completion of an upgrade at the theatre which enables the venue once again to operate as a specialist cinema for the whole community, at the heart of the vibrant Jetty Strip. The theatre will continue to offer its usual dynamic programme of community theatre, music, mime, dance, touring theatre and other performing arts; but now it will also offer the added enjoyment of a wide variety of films. Film isn’t a new element for the Jetty Theatre. For 40 years when the theatre operated as the “Memorial Cinema” alongside the “Tasma Cinema” in the centre of town, there were four weekly screenings. Both cinemas screened films at the same time and because of the shorter length of films back then, two films were shown with an interval in between. As the story goes, in the 1950s local film enthusiast Lloyd Irwin, who was a helpful young lad, took it upon himself to ride his bike between the two venues acting as a cycle courier so the film reels could be swapped over in the interval. In those days, going to the cinema was a real event and both venues were packed to the rafters each Saturday, with the community coming together to enjoy the atmosphere and the magic of film. In more recent years, cutting-edge short film has been an integral part of the Jetty Theatre programme, with the annual touring “Flickerfest” and Coffs Harbour’s own “Short, Sharp Film Festival” entertaining today’s film loving audiences. The “Short Sharp Film Festival”, coming up on Saturday 16th August, is now in its eighth year at the theatre. Buying into a Vision Stibnite Office Furniture has been an institution in Coffs Harbour for a quarter of a century, but three short months ago new owners took the helm. Business coach Neil McVicar and Toormina Post Office licensee and stationery supplier PT Clarke joined forces to realise their vision to create modern office and business environments on the Coffs Coast. Only a few weeks ago the pair added stationery supplier Coffs Coast Office National to their growing empire. Mel talked to Neil McVicar about their vision and the process of buying and growing a business. Mel: How did a business coach find himself buying an office furniture store? Neil: It’s really the coaching that led me to the business. I was working with PT, and we were talking about the possibility of expanding his stationery business through an acquisition. Someone mentioned that Stibnite was for sale, and we both saw the huge potential in the business. Mel: What is the potential that you identified? Neil: It’s a well-known business with a solid reputation. Stibnite has a niche, being the only provider of business office furniture that does complete office furniture fit outs, from planning right through to installation. But the big potential is leveraging the office supplies business with the furniture business. Our vision is to become a complete business-to-business offering with office supplies, furniture, and office machines. So really we weren’t looking to buy the businesses; we were looking to buy the potential in the businesses. Mel: What due diligence did you undertake? Neil: We hired MJ Accountants, and they liaised with Stibnite’s accountants and prepared a report. We had a number of meetings with the owners to clarify different aspects of the business. We got a feel for the customer base and developed a thorough understanding of what the business does – the services, products and pricing. We looked at the outgoings and made sure we understood the cash flows. We did fairly intensive due diligence, and everything came up with ticks. Mel: You’re not a furniture man, Neil. Has that
been a disadvantage now that you’re running the store? Neil: Not really. As part of the acquisition we retained John, who has been with Stibnite for six years. We’ve also got Alecia and Gyan on the stationery side of things, and they’ve got a huge amount of experience. And one of the first things I’ve done is to document processes, so everyone understands how things are done. And on top of that, I’ve been working seven days a week to get my product knowledge up to speed. Mel: Now that you’re in the business, have you started to make some of the changes you had envisioned? Neil: We don’t want to rush it. We really want to spend some time in the business before we start to change things. We’ve been focusing on managing the cash flow and getting benchmarks in place. Mel: You’ve already got your hands full with Stibnite. Why purchase Office National as well? Neil: When Coffs Coast Office National came onto the market recently, we could immediately see the fit with our vision. You’ve got to act when opportunities present themselves. Mel: Putting your coaching hat back on for a minute, what advice would you give to someone else looking to buy a business? Neil: Don’t buy a business just because it makes money. Buy a business because it suits where you are in your life at the time. Have a vision for the business for a period of time that’s relevant to you. Then do the hard yards of due diligence, planning and goal setting. Make sure you understand whether the business can deliver your vision.

“ What are your career backgrounds, and how have you both developed your careers to bring you to this exact point? Matt: my career started as an apprentice bricklayer in Sydney. Four years into my apprenticeship, my parents decided to relocate to Newcastle. This move then prompted me to consider an alternative career path, where I could challenge myself both physically and mentally. I started manufacturing windows by cutting, machining, glazing and eventually ... running the service department. Another couple of years in a service role saw me work my way up the ladder into estimating and eventually sales (both in house and on road).
Further to this I then decided to combine my manufacturing skills with a management and a “lean thinking” manufacturing course, with the ambition to hopefully one day become a business owner. I have been a part of the glass and aluminium industry for nearly 12 years now. Shaun: my career started at the age of 17, where I was employed at my uncle’s glazing company in Tasmania. There I learnt how to manufacture a variety of windows and doors, both residential and commercial.
While working in the industry I gained the experience and knowledge to design and build our family home; although tough at times, it was an exciting and rewarding experience - as was the renovation of our current home at Emerald Beach, and it was during this process where not only did I find quality window products, but also my future employment. I can happily say that I have been employed with SGA for the past seven years, giving me 20 years of experience in the glass and aluminium industry. Becoming a business owner seemed a natural progression to me, and

How would you describe your window range? SGA’s window range is extremely diverse. SGA manufacture Architectural Windows Systems (AWS) Products. This range covers "Vantage" Residential, "Vantage Magnum" high end residential, "Elevate" Commercial and "Thermal Heart" Thermally Broken Windows and Doors. Most of the product ranges are compatible with each other, making it well known and recommended by architects and specification professionals. every customer. When selecting window and door products, why is being conscious of the climate important? When selecting window and door products, it is essential to think of environmental impact. If your renovation is to the value of $50,000 or greater, the NSW Government requires builders/ home owners to complete a Basix or ABSA Report depending on the dwelling and its complexity. The glazing is calculated based on UV and heat transfer rates achieving a set standard for your home’s environmental sustainability. A
bushfire hazard assessment is also carried out in the event of a development application being lodged and approved with your local Council. This will determine the bushfire requirements for windows and doors providing added protection to your home in the event of a bushfire. Your Basix Report and BAL (Bushfire Attack Level) rating should always be provided when submitting your quotation request, to ensure all legal requirements are catered for. 20 years ago, Dr Jon Waites moved to Coffs Harbour and established Coffs Cardiology.

aving trained in Sydney, Adelaide and London, I was ready for a change. Time spent working with the Flying Doctors made me realise there were some fantastic places outside our cities. Coffs Harbour seemed the ideal choice … beautiful coastline, superb climate and – they needed a Cardiologist!” In 1994, Coffs Cardiology opened its doors and since then has grown into a vibrant and caring practice. It provides all those services available in City Cardiac Units. Working closely with the Coffs Harbour Health Campus, Dr Waites has also developed Cardiac Services at the Base Hospital. “We now have a Coronary Care Unit and a Coronary Angiography Suit. We are able to perform complex cardiac procedures which previously required transfer to Sydney. We have a visiting Cardiothoracic Surgeon and Paediatric Cardiologists. 2014 marks 20 years in the business. When and why did you decide to study medicine and what made you choose your speciality? I had always wanted to be a doctor, ever since my childhood. I was in a car accident when I was seven and spent time in an Intensive Care Unit. I think that made my mind up for me. I chose Cardiology because of the advances made in the treatment of heart disease that occurred after I qualified. I was fortunate to be in the right place at the right time. I have no regrets ... it's a very fulfilling career. What do you like about this profession, and what is the most important thing you’ve learnt in the past 20 years? My profession is constantly evolving; it's important to stay up to date with all the advances. It keeps me interested and stimulated. It also enables me to interact with colleagues, both

In 1985, when I started, there was no treatment available. People came into hospital to die. Nowadays, the situation has changed dramatically. What services do you offer at Coffs Cardiology, and who makes up your well established team? Coffs Cardiology is proud to offer the whole suite of cardiac services – consultations, 24 hour ambulatory blood pressure and Holter monitoring for rhythm disturbances, stress testing and echocardiography, as well as pacemaker and defibrillator interrogation and programming. With our Clinical Trials Unit, we are at the forefront of drug development and through the hospital we access the Coronary Angiography Laboratory, enabling diagnostic and curative procedures to occur. Mark, his wife, Debbie, and his two university aged children now reside in beautiful beachside Korora. “Waking up each day to the sound of the ocean in such a stunning place is like being on permanent holiday.” Living in Coffs Harbour allows Mark to fulfil both his passions working as a veterinarian and his love of the ocean and the underwater world. “ ou have been described by your best mate as the most “unlikely rockstar”. Would you agree or disagree with that? Well, I am not extremely comfortable with that title - I certainly am just an ordinary, everyday guy. I love to work - get my hands dirty. I certainly don’t live the cliched “rockstar” lifestyle. I am probably not a great poster boy for the music industry. There wouldn't be a Country Music fan alive who doesn't know your music - how far you've come! What are you most excited about in this most recent chapter in your music career? You find that when you first start off as an artist or songwriter or singer in your career that you are really searching to find your feet and find out who you are, your own identity and what you want to say. The years have taught me how to be comfortable with who I am and with what I am singing about and with what I am writing. Where that leaves me right now is in a place where I am very comfortable with my music and what I am putting out there. My latest album is called My Side of the Street, and that title was something I really wanted to put out there at this point in my life, as I am happy with my side of the street. I am comfortable in my skin and with my side of the street. It may not be the best side of the street, it may not be the sunniest side of the street or what others think is the most successful side of the street ... but it is mine, damn it! And I am happy with that. Getting to that place in your life, no matter what you do, whether you are in food, or music or whether it is journalism or in any kind of job, once you get to that point where you are content within yourself, then I think that is the true mea-

sure of success - not numbers, chart positions or monetary status. Coffs Harbour will get to actually enjoy this new album in October at C.ex? Yes, the tour comes through Coffs Harbour. I have a weekend of shows with Gladstone, Maryborough, Brisbane and then Coffs. It’s been quite a few years since I have played in Coffs and in fact, the tour was booked and the show even before I found the venue for this restaurant. The tour was booked even before I became a local! Up there with the likes of Keith Urban, how does it feel when you're compared to him? I think it is a bit of a stretch to compare me to Keith. I know Keith and he is a worldwide star and not only has he done amazing things for Country Music, but for Australia. To be doing what he is doing and from a boy just north of Brisbane, it is great. The answer to that question is that if people want to compare me to him, then it is a bit of an honour. You are so well established in the Country Music industry, including winning 12 Golden Guitars. Are you glad to be sharing your talents in the hospitality game as well? You know, I love making people happy, whether it is with a guitar and a song or whether it is with a big bowl of spaghetti. I am a people person and I love cooking, I love singing, and I love food. Doing this feels very natural. I always have music playing in the restaurant, and there are always great smells coming from the kitchen. People can bring their kids and come and say hello, and I get to talk to them about food and music. It’s kind of a lovely combination of the things I love. But we are not only interested in your music career ... as you’ve touched on, you’ve just opened a new restaurant in the old Outback Jack’s site called (funnily enough) Brandy's. We're all dying to know; what type of food
are you offering? I grew up around Italian food - my father was born in Sicily. I grew up around my dad’s cooking and my Nona’s cooking, so the food is very rustic home styled, home cooking, but Italian. It’s not fancy Italian or a whole bunch of words you cannot pronounce, but it’s very big hearty meals, big bowls of pasta, big risottos, nothing pre made, big plates of schnitzels and spaghetti, big bowls of chilli mussels. It’s very much like if you went to an Italian family’s place for lunch and Nona cooks up a feast and brings it all out to the table, and away you go! A lot of fresh garlic, fresh chilli, olive oil, lemon juice, parsley, herbs, very simple but authentic Italian cooking. Does Brandy's Coffs Harbour mean that you may live here now? I am basing myself here for now while this Brandy’s Restaurant gets up on its feet, but I do live between here and Townsville, where my other Brandy’s Restaurant is situated. Once this is up and running I will be between Townsville, Coffs Harbour and on the road touring - that’s kinda where you will find me. How hands on are you at Brandys? Celebrity by day, waiting tables by night? I am very hands on, although I'm sure the chef would probably wish I was a little less hands on! I get in there under their feet and I am very involved with the food, very involved in the process and very involved in what people will experience when they come here. I want people to come here and feel relaxed, whether they have a couple of kids and it’s a family dinner, or they are here
for Grandma’s 80th birthday, or a bunch of uni students here for a night out or here for a romantic dinner. I just want everyone to come here and feel comfortable, the food to be yummy and accessible and delicious, and I want them to be greeted with a smile and not be forgotten in the corner. As long as people feel welcomed and enjoy their experience, that’s what is important to me. I just want people to have a good time. It’s got my name on the door so I take this personally. As with everything, sometimes things get missed; we get booked out, especially Friday and Saturday nights, so I would recommend that people do book. We also welcome drop ins, like before and after the movies. We are sweet tooths in the FOCUS office; you have to walk us through the amazing and unique desert menu… Our Nutella desert pizzas are becoming legendary. They are a nice big pizza, smothered in Nutella chocolate, with either poached berries on top and icing sugar for the grown ups or for the even bigger kids, marshmallows and snakes. What do you love about Coffs? It’s a very friendly, casual place. You can actually really feel it here. People are very friendly and the winter is cold here, but the people are warm. I love the scenery, the beaches are beautiful, love the fishing and have been down to the jetty fishing and off the beach there. I enjoy the lifestyle and have been trying the various cafés around. There’s good coffee around and it’s really just a very easy place to come and live. Thanks Adam.

I grew up in Goulburn, then lived in Queanbeyan and Canberra for about ten years before moving to the Coffs Coast in 1988 with my wife and two young children. Where did you do your apprenticeship, and did you always know you wanted this type of career or was it something that you fell into? I did my apprenticeship in Goulburn with an electrician who, once he had me through my first year, moved into another business and basically left me on my own most of the time. I became very self reliant during that time, but it was a good learning ground doing domestic repairs and wiring old and new buildings. After my apprenticeship I was lucky enough to have the opportunity to work in the mining sector without the need for fly in/fly out – Woodlawn Mine was only an hour’s drive from Goulburn or Queanbeyan. further experience with large electrical equipment, programmable controllers and mobile mining equipment while doing shift work for 12 months; when you are the only electrician onsite during the night, it gives you a lot of experience and training! When did you buy Doug Knight Electrical, and what brought about this bold move? I started work with Doug Knight Electrical in Septemberr 1988 on lf, a three month probation when it was run by Doug himself, ent Russ Lincoln and Neil Knight (Doug’s son). On the retirement hip. of Doug in about 1995, I was invited to join the partnership. Russ retired in 1999 and Neil in 2011, and I have had the business on my own for the past three years. But you didn’t stop there, you then went on to buy Paul Biddolph Electrical. Did you run them as one company or two? Paul Biddolph Electrical was a hasty decision. It was proposed to me, it looked good, and I was keen to keep the company local. The businesses have been operating separately, although there have been some times when one has helped the other out, up until now, with the joining together under the Laser banner. At this point in your career, how many local people have you employed? We currently have 18 tradesmen, four apprentices, five office staff.

Over the years we have seen plenty of DIY connection that people have done and although it works in many cases, it does not comply with the regulations and when it fails, it usually fails in a big way i.e. fire or electric shocks, where people receive major injuries. You must have seen a lot of people come through the ranks. How important is it for the younger generation of today to focus on a career in the trades - more importantly, for those considering a career in your industry? What

would your advice be? My best advice would be to complete your schooling and get good results; it will help you though the trade courses. My own son has gone through a trade apprenticeship and is reaping the benefits of that now. While he is an electrician by trade, he no longer is “on the tools� but is now involved with programming the technology in large buildings hospitals, apartments, offices, etc. The pay may be low to start with, but there is plenty of opportunity to move to different locations and take on different aspects of being an electrician.

How have you seen the industry develop? When you first started, the technology must have been much different ... nowadays you can turn your house heating on when you’re driving home from the office? The industry has changed over the 35 years I have been involved, with the start of automated controls in commercial and industrial areas though to the standard power points in the housing sector. Lighting has also been a big mover, with LED lights coming on the market. What community events do you get behind? We have sponsored the Sawtell Panthers for the last 10 years and more recently the Coffs Harbour Comets for the past two years.
