Pennsylvania Leadership Charter School (PALCS) in Chester County was among 16 Pennsylvania high schools that advanced to the 38th annual Pennsylvania Bar Association (PBA) Statewide High School Mock Trial Competition finals, held virtually on March 26 to 30. The competition is coordinated and sponsored by the PBA Young Lawyers Division.

This year, 232 teams from 199 high schools competed in district and regional levels of Pennsylvania’s mock trial competition in hopes of gaining one of the 16 spots at the statewide competition that was held virtually for the first time. Pennsylvania’s competition is one of the largest in the nation.

During the competition, eight-member student teams are given the opportunity to argue both sides of a case in an actual courtroom before a judge. The students, who play the roles of lawyers, witnesses, plaintiffs, and defendants, are assisted by teacher coaches and lawyer advisers in preparing for competition. Lawyers and community leaders serve as jurors for the mock trials. The juries determine the winners in each trial based on the teams’ abilities to prepare their cases, present arguments, and follow court rules.

Warm weather, blue skies and time spent outdoors are hallmarks of spring. Springtime is a season of rebirth and renewal, and it also can be a time to refresh meal-making.

Now is the time to trade in hearty, filling dishes that are perfect for cold winter nights for lighter fare. Recipes like Pasta Primavera from “Seasoned America” by chef Paul Prudhomme can be brought out in spring and enjoyed throughout the warmer seasons. In Italian, primavera means spring, making this classic, vegetable-infused pasta dish suitable for this time of year. The vegetable inclusions below can be switched out for one’s favorite produce as well.

Pasta Primavera (Makes about 8 cups)

Ingredients: 2 teaspoons olive oil 1 cup thin strips prosciutto 2 cups cauliflower florets 2 cups sliced fresh mushrooms 1/2 cup sliced carrots (cut on the diagonal) 2 cups sliced zucchini 6 tablespoons unsalted butter 1 teaspoon minced fresh garlic 1 cup asparagus tips or 3/4 cup snow peas

1 cup chopped green onions 2 cups heavy cream 9 ounces of any pasta

Seasoning Mix: 2 1/2 teaspoons dried sweet basil leaves 1 1/2 teaspoons salt 1 teaspoon dried thyme leaves 3/4 teaspoon white pepper 1/2 teaspoon garlic powder 1/2 teaspoon onion powder

Directions: 1. Combine the seasoning mix ingredients thoroughly in a small bowl. 2. Heat olive oil in a 12-inch skillet over high heat. When oil is very hot, add the prosciutto, cauliflower, mushrooms, carrots, and zucchini. Add the butter and, as it melts, stir in the garlic and the seasoning mix. Stir in asparagus tips or snow peas and green onions. Stir well and cook just until the vegetables are crisp-tender, about 4 to 5 minutes. Stir in the cream and bring to a boil. Lower the heat to medium and cook until the sauce has thickened a bit, about 3 minutes. 3. Cook the pasta according to package directions; drain. Add the cooked pasta to the skillet, toss well and remove from the heat. Serve immediately.

Recognized for its Chester County evictions court prevention program, the Chester County Bar Association is one of 20 local bar associations in Pennsylvania honored this year for sponsoring projects that improve the legal profession, justice system, or community.

When the weather starts to get warmer, people are inspired to venture outdoors once again and spend more time away from home. People can benefit from having quick and easy dinner recipes at the ready so that hours are not spent in the kitchen after a day of fun in the fresh air.

With mere minutes of preparation and about 15 minutes of cooking time, this recipe for chicken, ham, and Swiss roulades from “Real Simple Dinner Tonight: Done” from the editors of Real Simple makes a simple weeknight meal that is tasty, too.

Chicken, Ham, and Swiss Roulades (Serves 4)

Ingredients: 8 small chicken cutlets (about 1 1/2 lbs. total) 8 thin slices cooked ham 8 thin slices Swiss cheese 4 tablespoons olive oil 6 cups mixed greens 1 cup grape tomatoes, halved

1 tablespoon white wine vinegar 1/4 cup whole-grain mustard 3/4 teaspoon salt 1/2 teaspoon pepper

Directions: 1. Heat oven to 400 degrees Fahrenheit. Season the chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper. Roll up each cutlet with 1 slice of the ham and 1 slice of the Swiss cheese. Skewer the roulades closed with toothpicks. 2. Heat 2 tablespoons of the oil in a large ovenproof skillet over medium-high heat. Add the roulades and cook, turning occasionally, until golden brown, 4 to 6 minutes. Transfer the skillet to an oven and roast the roulades until cooked through, 8 to 10 minutes. 3. Meanwhile, in a large bowl, toss the greens and tomatoes with the vinegar, the remaining 2 tablespoons of oil, and 1/4 teaspoon each salt and pepper. Serve with the roulades and mustard.

Honor frompg 10 launched an evictions court prevention program in Chester County. A grant was given to support this new venture, which is designed to help pro se litigants at the magisterial district court level. In addition, a number of Chester County Bar Association members did pro bono work for the program. The association hopes to help the courts and the people of Chester County to navigate the unprecedented wave of people facing evictions that may occur once the moratoriums are lifted.
