In this issue we reached out to many first and second-generation immigrants and refugees making significant contributions to New Mexico’s food culture, and asked them to share their stories. In the richness of the international cultures present in our New Mexico community, our picture is not comprehensive. Globalization has brought amazing flavors into our tables, but often it is violence and conflict that instigate the migrations of the individuals who carry these culinary traditions with them. We hope these stories help raise questions about where food comes from, how it connects us to place and identity, and how our food choices locally have a global impact.
