APPETIZER (choice of one) Clams Oreganta Clams steamed in San Marzano, tomatoes, garlic and white wine with oregano. Tomato Bruschetta Grape tomatoes, garlic, fresh basil & red onion, Italian style ‘salsa’ over crostini with a drizzle of balsamic reduction. Bison Pillows Ground bison, rice, celery, onions and garlic in a wonton wrapper cooked in a tomato cream sauce with parmesan cheese.

ENTRÉE (choice of one) Tortelloni Prima Vera 3 cheese filled tortelloni tossed with julienned carrots, zucchini, summer squash and capers in a garlic cream sauce. Stuffed Pork Loin Pork loin pan seared and stuffed with dates and goat cheese. Served over mashed potatoes with an almond beurre blanc and sautéed vegetables. Swiss Chicken Roulade Chicken breast rolled around fresh spinach, mushrooms and grated Swiss cheese with onions and garlic. Served over jasmine rice with a mornay sauce and sautéed vegetables.
