It’s hard to believe that it has already been a year since I penned my first publisher’s letter for Calabasas Style, and what an incredible journey it has been. Reflecting on the past year, I am filled with gratitude for the opportunities I’ve had to meet remarkable individuals and families who have graced our covers, each with their unique stories and contributions to our community. What happens if someone creates a do-it-yourself legal document that they find online for estate planning or other legal purposes? Do DIY legal documents work?
My first answer is always, “Well…it depends.” In some instances, a completed legal document created from an online template can be sufficient, but problems and complexities often arise.
A probate challenge landed on my desk from a well-intentioned son who had tried to settle his late father’s estate. Unfortunately, the template form he used for his father’s will failed on many levels. It lacked the protective shield of a living trust and presented an intriguing twist due to an unusual choice of words. While it referenced names of intended beneficiaries, the wording was stated in one part to read: “...to pay or transfer the residue of my estate to my beloved husband, for his own use absolutely.” This apparent copy-and-paste blunder introduced ambiguity and legal hurdles in deciphering the true intentions of the deceased.
The son attempted to navigate the probate process himself by going online. After two years of struggle, he realized the need for professional guidance and contacted my office for help.
This case stands as a cautionary tale for those who lean on online tools without fully grasping the legal ramifications. Due to the faulty language in this probate case, there had to be an investigation to ensure his father didn’t intentionally incorporate such language, resulting in extra fees and probate costs to prove something that didn’t exist.
This case highlights the importance of seeking professional legal advice to ensure the deceased’s final wishes are honored and the probate process unfolds seamlessly, devoid of unnecessary complications. Getting professional legal advice and setting up a living trust along with a will can also help to avoid the probate process altogether.

I have friends that have lost weight on Ozempic, and I am considering it. Should I be worried about side effects and long-term use?
Ozempic (semaglutide) is a GLP-1 agonist used to manage blood glucose levels in type 2 diabetics. The first medication in this class was approved in 2005. These medications have recently exploded in popularity due to their side effect of weight loss. They work by mimicking the GLP-1 hormone. This hormone triggers insulin release from the pancreases, blocks glucagon secretion, slows the stomach from emptying, and increases the feeling of fullness.
This type of medication is given once a week by injection. Common side effects include nausea, vomiting, and diarrhea. Long-term side effects are still unknown, especially when using this medication for weight loss because it has not been around that long. However, to maintain the weight loss, patients need to remain on the medication, which could be lifelong, like taking a blood pressure medication to keep your blood pressure down.
A similar over-the-counter supplement, GluNOzyme, has recently come on the market. It works in a similar manner when taken before meals to block the enzyme receptors which convert sugar and carbs to glucose. This stabilizes blood sugar, prevents spikes, and leaves you feeling fuller sooner and longer.
Both of these medications work best when combined with increased exercise and making healthy diet choices. The good news is that neither one has the side effects of increased heart rate, agitation, or irritability that so many other weight-loss aids, both prescription and over the counter, do have.
It is important to consult with your physician or pharmacist and discuss your medical history to determine which of these medications is the best option for you in achieving your overall weight-loss goals.

The Livelle Mulholland, a new life plan community, hosted a naming celebration and tour of the historic grounds on 19 acres of property on Mulholland Drive.

Tara’s Gallery in Woodland Hills presented a transformative solo exhibition featuring the awe-inspiring artwork of Mary Wright. Mary Wright’s creations breathe life into the elements of earth, water, fire, and air, exploring spiritual narratives and the essence of nature.

The Mulholland, a long-awaited new neighborhood restaurant in Old Town Calabasas, celebrated its opening with a ribbon-cutting ceremony on February 1.
Calabasas locals, siblings, and operating partners Jonathan Rosenson, Elissa Blatt, and Candice Steiner, with their mother Cynthia Rosenson and all of her grandchildren, participated in the ceremony with city officials and members of the Calabasas Chamber of Commerce.

Give Back Through Music founder and Calabasas resident Marc Reiser organized a dream team of legendary music icons to perform a live show extravaganza at the Canyon Club on January 23 to salute one the most admired pioneers of rock guitar, Leslie West. Performers included some of today’s most beloved and respected musicians—Steve Lukather, Robby Krieger, Tracii Guns, Supersonic Blues Machine, Richie Kotzen, Matteo Mancuso, Stephen Perkins, Alex Skolnick, Rudy Sarzo, and many more. The event was hosted by Eddie Trunk, a seasoned radio personality, talk show host, and author who has dominated the hard rock and heavy metal scene with his electrifying shows. Profits from the show and fundraising campaign were donated to MusiCares Foundation, a nonprofit organization that provides millions in health, financial, and rehabilitation resources to music people in times of need. MusiCares’s mission is to help the humans behind the music because music gives so much to the world.

Nestled within the secure confines of Calabasas Park Estates, Shirly and Raymond Barnaj have crafted their ideal sanctuary, sharing it with their daughters Chloe, 19, and Kylee, 17, and son Ilan, 14. Their neighborhood not only offers round-the-clock security and breathtaking mountain views but also fosters a tight-knit community where bonds between neighbors flourish, embodying a sense of tranquility and support.
“We feel very connected to our neighbors,” shares Shirly. “We all take care of each other, creating a real sense of community. When my husband, Raymond, who’d always wanted to move to Calabasas, suggested relocating from another part of the city nearly two decades ago, I was very reluctant until we spent the day at a friend’s house for their child’s birthday party. The minute we drove into Calabasas Hills, with its beautiful private park, I fell in love. Coincidently, a house was for sale next to the park, and we purchased it right away.”
The Barnajs have since relocated from Calabasas Hills to their new residence in Calabasas Park Estates. Kylee and Ilan are enrolled at Calabasas High School. Kylee is the life and arts editor of the journalism team at the student-led Calabasas Courier, where she pursued her passion for storytelling, reporting, and keeping fellow students informed about campus events and issues. Beyond her journalistic endeavors, she is an avid bookworm, immersing herself in the latest novels and timeless classics alike.
Ilan excels in both physical and virtual realms, finding his passion in sports and gaming. Whether on the field, court, or in the ring, he showcases his agility, skill, and determination in soccer, basketball, and boxing. Off the field, his competitive spirit extends into the virtual world, where he engages in strategic battles within video games.
Chloe is currently studying accounting at Chapman University in Orange County, with a focus on business administration and a minor in leadership. Acknowledged as a scholarship recipient by the Calabasas Chamber of Commerce, she has earned several accolades, including the 2022 Education Award for Academic Excellence.
The couple first crossed paths on a blind date arranged by their cousins at a very young age. They have been inseparable ever since. Shirly has been the office manager at NeuroSense Psychology in Calabasas for over a decade, where she assists board-certified pediatric neuropsychologist Dr. Jonine Nazar-Biesman. The practice specializes in pediatric neuropsychology, aiding families in understanding the intricate relationship between the brain and behavior in children.
Raymond has dedicated the past 24 years to his role as an eyewear consultant. Now the co-owner of VeyeP Optometry in Studio City, alongside Dr. Narbae Avedian, O.D., Raymond utilizes his expertise to

When not working, this fun-loving family enjoys vacationing in sun-sational Cabo San Lucas. “Nothing beats lounging by the sea sipping a cool drink,” remarks Shirly. “In Cabo, everywhere you turn, you see these beautiful glass-blown hearts, representing love and affection. They’re actually recycled from Tequila bottles. We carried a bit of this Cabo vibe home as glass hearts transform our backyard into a relaxing oasis for family and friends.” She adds, “Between Raymond’s renowned Tequila drinks and incredible bartending skills and my love for hosting, we make a great team.”
During their downtime, the family’s weekends include a blend of activities. They enjoy dining out at local favorites such as King’s Fish House, Rosti Tuscan Kitchen, Porta Via, and Shibuya.
Leisurely walks by the lake and meals at the Commons are also a family favorite. Shirly indulges in her love for fresh flowers, skillfully arranging colorful bouquets to brighten their lovely home.
Chloe, when home from college, carries on the tradition of baking Challah bread, a cherished part of their Sabbath and holiday rituals. Her perfected eggless recipe yields two loaves every Friday evening.
Raymond, an avid Lakers fan, shares his love of sports with Ilan. And they all enjoy spending time with their three beloved pups, Coby, Yogi, and Teddy. You’ll always find Coby by Kylee’s side as they curl up in a quiet reading nook by the fireplace or in her room.
The Barnaj family also loves sharing hearth and home with friends and family, including hosting weekly Shabbat dinners, special Mother’s Day brunches, and lively summer pool parties and barbeques.
“It’s really wonderful to see families whose children have grown and moved away, later return to start their own families in Calabasas. We’d love it if someday our kids raise their families here,” the couple agrees. For now, they count their blessings to be able to live in this beautiful, clean, safe community surrounded by natural beauty, beloved family, and friends. n

The Calabasas Chamber of Commerce held its Installation Gala on January 27 at Calabasas Country Club to install the chamber’s board of directors and honor worthy participants for their amazing accomplishments. The chamber presented the Bill Van Gieson Spirit of Calabasas Award to David Shapiro, an 11-year member of the city council and former mayor of Calabasas. The Chairman’s Award for exemplary service to the community was awarded to Michael Bloom, a prominent Realtor with The Agency in Calabasas who also serves on the chamber’s education committee. Julie Shy, vice-president of the Calabasas Las Virgenes Historical Society, was honored with the first-ever Volunteer of the Year Award. The historical society, RJR Wireless, and A Rental Connection were awarded with The Milestone Award based on their long-standing chamber membership. Mike McNutt of the LVMWD was installed as the chairman of the board. Lisa Clayden is the Calabasas Chamber president. Peter Kraut, a member of the Calabasas City Council, administered the oath of office to the Calabasas Chamber’s board of directors.

Then there was the Ford Mustang GTD...what dreams and nightmares are made of. A dream if you own it, a nightmare if you are racing against it. This is going to be the most exciting Ford Mustang since the inception of the Mustang back in 1964. I cannot wait to see this car in person as this Mustang will send shockwaves through the automotive world. “Mustang GTD shatters every preconceived notion of a supercar,” says Jim Farley, Ford president and CEO. “This is a new approach for us. We didn’t engineer a road car for the track; we created a race car for the road. Mustang GTD takes racing technology from our Mustang GT3 race car, wraps it in a carbon fiber Mustang body, and unleashes it for the street.” GTD stands for Grand Touring Daytona, which is borrowed from IMSA’s GTD, a racing class for GT3 race cars. We are all assuming the GTD will offer over 800 horsepower from the 5.2-liter supercharged V8 that will scream to over 7,500 rpm. What you really have to understand is that this is a purpose-built race car that you can drive to Costco. Sure, Porsche, Ferrari, and Lamborghini have their race cars for the street, but something tells me that this is a “hold my beer” moment for Ford, and they decided to show everyone how it is done.
The Mustang GTD is going to be a very limited-edition car. Estimates are that Ford may make up to 1,000 examples, but we just don’t know. It quite possibly might be more sought after than the Ford GT and possibly more collectible, even though it is offered at a lower price tag than the Ford GT supercar. I know people who say they are “on the list,” but I will believe it when I see it. The Calabasas Men’s Club hosted their first major tournament of the year on February 24 and 25. The Senior Club Championship and the Under 50 Golf Tournament was an individual-stroke play event, where all USGA and CCC local rules applied, with awards for both gross and net winners. All players enjoyed the new improvements that were made on the course.
Kids had the opportunity to learn the culinary art of pizza making on January 19. Students ages 3-12 enjoyed the hands-on experience— making and rolling out their own pizza dough and crafting them with their favorite individualized toppings! All participants got to enjoy their own handmade pizza along with their new chef’s hats and aprons that they wore during the class.

Hundreds of local supporters of Run for Their Lives turned out on January 14, marking 100 days since the devastating October 7 Hamas attack that sparked what has become the longest and deadliest conflict between Israel and Palestinians since Israel’s establishment in 1948.
The event was organized by Shirly Barnaj, who leads the local Run for Their Lives chapter. People from the Oak Park and Tarzana chapters also participated.
The event was staged at Calabasas City Hall, and then, they marched through The Commons of Calabasas and along Calabasas Road to bring awareness to their efforts to release all the hostages.
Run for Their Lives, a global run/walk events organization, has over 167 chapters throughout the world dedicated to bringing home hostages taken to Gaza by Hamas. Each chapter meets weekly to march, walk, and run to make sure the current hostage situation remains in the forefront in the minds and hearts of concerned citizens.

The game was the seventh-longest game in the history of the NFL. The game concluded with a final score of 25 to 22 when wide receiver Mecole Hardman Jr. scored the winning touchdown for the Kansas City Chiefs thrown by Patrick Mahomes in overtime, making the Kansas City Chiefs back-to-back Super Bowl champions. Fans and “Swifties” enjoyed a great afternoon of non-stop food, beer, and action while watching the big game on multiple TV big screens at the club.

THE (Together Helping Education) Foundation for Las Virgenes Schools hosted its second annual Battle of the Bands on February 4 at the Canyon Club in Agoura Hills, and the rockin’ fundraiser was a tremendous success. Despite the rain, over 400 people attended, from infants to grandparents, proving that the concert fundraiser is quickly becoming another signature community event. This year, THE Foundation put out a call to the entire LVUSD to submit audition videos. Choosing which of the incredibly talented bands to showcase was difficult, but they narrowed it down to six student bands that competed for the trophy.
The crowd also enjoyed special guest appearances by Dr. Dan Stepenosky’s band, Doc Step and the Expendables, made up of LVUSD administrators and students; School of Rock; and Brett Scallions, the lead singer of the band Fuel. hevrolet is ending production of the Camaro and Camaro ZL1 in 2024 as the model ends production in January. It’s truly the end of an era. The Camaro is one of the most iconic American sports cars. It began in 1967 and helped to shape car culture, racing, and car customizing. Having owned many myself, and still having a couple classic Camaros, I am truly sad to see it go. All that being said, at least Chevrolet is going out with a bang. The Camaro ZL1 1LE is a force to be reckoned with. Offering 650 horsepower out of the gate and a 6-speed manual transmission or 10-speed automatic transmission, this Camaro can easily hang with any supercar on any track. The only requirement is that you can actually drive it like it is designed to be driven. The 1LE track performance package includes an adjustable suspension, extreme performance tires, and a generous application carbon fiber. And for the folks who want to track the car, there is even an option to delete the rear seats.
Chevy will be offering a special Camaro ZL1 Collector’s Edition and only producing 350 of them. This limitededition Camaro will have Panther Black matte paint with black stripes and added graphics to the door badges and steering wheel. It will be fitted with black 20-inch wheels. Chevrolet is including a special Shinola watch to match the Collector Edition Camaro. The Camaro is just like apple pie, as American as you get in the sports car world. From the iconic 1969 z28 to the COPO Camaro, it is no doubt that the ZL1 1LE, as well as the Collector’s Edition, will be sought after for decades and be instant collector cars. Clear plastic bottles, shampoo bottles, yogurt containers, toys, and reusable food containers have a higher probability of being recycled. Disposable cutlery, cling wrap, and coffee cups and lids have very low probability.
Widely popular in fast fashion, synthetic fibers, like polyester and spandex, play a large role in the plastic pollution problem as they are a key contributor to microplastic pollution. Choose clothing made of fabrics like cotton, wool, hemp, and silk.
Going plastic-free means wooden toothbrushes and homemade toothpaste. Make your own toothpaste, body creams, and cleaning supplies using ingredients like baking soda, coconut oil, vinegar, and essential oils to avoid excess packaging.

This summer, the Westlake Yacht Club will, once again, conduct its Summer Junior Sailing Academy for students ages 9 to 18, headed by Rear Commodore Michael Koslow. Recognized in 2018 as the Best Junior Sailing Program on the West Coast by the Pacific Coast Yachting Association, this program is great for kids to learn to begin sailing or sharpen their skills for racing if they have prior experience.
There are eight weekly sessions starting the week of June 10 to August 12, Monday through Friday, with a break over the July 4th holiday. You’ve probably driven by it hundreds of times. The Getty Villa is a beloved Los Angeles destination and landmark, and it’s right in our own backyard along the Malibu coast.
The Getty Villa is this country’s preeminent museum of ancient Greek, Roman, and Etruscan antiquities, and it’s celebrating 50 years welcoming the public to its beautiful grounds.
Not to be confused with the Villa de Leon, a separate, privately owned villa visible from the Pacific Coast Highway, close to the Getty’s entrance near Coastline Drive, the Getty Villa Museum is not visible from the highway. Once you enter, you’ll be transported back in time to a sanctuary for the preservation and appreciation of classical art and cultures.
The Villa was built for oil magnate J. Paul Getty to house his growing art collection and provide the public with greater access to view it. For the 50th anniversary of the Getty Villa, which opened in February 1974, you can experience the permanent collection plus rotating exhibitions. Currently, there are two ancient Egyptian exhibitions on display—one from the Villa’s own collection and one on loan from the British Museum of Ancient Egyptian Materials.
The curator of antiquities at the Getty, Kenneth Lapatin, explains, “While our collection is Greek, Roman, and Etruscan, we also are interested in the entire ancient world. In April, we will have an exhibition, ‘Picture Worlds,’ looking at Greek, Mayan, and Moche ceramics—so even the new world. We don’t collect in that area, but we display it in changing exhibitions.”
“Picture Worlds” is described as follows: “Mighty deities, brave heroes, and fantastic beings adorn the terracotta vessels of the ancient Greeks, the Maya in Central America, and the Moche of northern Peru. This exhibition juxtaposes these three distinct ceramic traditions and explores the ways in which painted pottery served as a dynamic means of storytelling and social engagement.”
About 400,000 visitors tour the magnificent museum, designed to resemble an ancient Roman country house, yearly. The Villa is a near replica of the Villa di Papyri that was buried by the Mt. Vesuvius eruption in 79 A.D. The Getty Villa is almost exactly how you would find the original in the same Mediterranean climate. You’ll walk among its stately colonnades, elaborate fountains, and the most magnificent reflecting pool surrounded by ancient statues in the middle of a fragrant garden decorated with the same native plants that the ancient Romans once cultivated.
Inside the Getty Villa Museum are galleries filled with treasures that you cannot find in other local museums. “I think what’s so special about the Villa is when you enter the site and go through the modern architecture that has framed the Villa since the early 2000s, you’re kind of time traveling. You’re back in an ancient Roman luxury home, and although it’s very grand and beautiful, it’s very humane in scale. You hear the birds singing, there’s the ocean breeze, and unlike any kind of reconstruction on paper, video, or virtually, you’re really in this place. It’s like time-traveling to a different world. I think that’s what makes it so magical,” Lapatin comments. “Obviously, the collections are important and meaningful artifacts from antiquity, but to be in this ancient house with the gardens and fountains, it’s really magical.”

To celebrate their milestone, the Villa is offering daily 45-minute tours delving into the artworks purchased by J. Paul Getty. The tour takes place daily through March 4 at 1:00 pm at the Villa.
Look for programs centered on the ancient Villa di Papyri, which is the model of the Villa from the Bay of Naples. It’s the site where papyrus scrolls have been found. There is a program on the papyri from Herculaneum that runs through March.
There is a fee for parking and reservations are required, but admission is free.
The daily number of visitors to the Villa is actually limited. “We’re mindful of the neighborhood,” Lapatin notes concerning their Malibu neighbors.
There is so much to learn at the Getty Villa that it’s become a gateway to the arts for many school-age children. The museum hosts tens of thousands of school children each year for docentled tours of the ancient treasures dating as far back as 6500 BC.
“Many people may think they know the Getty Villa but have never been. What they’re seeing from the Pacific Coast Highway isn’t it,” says Lapatin. “There’s a lot of loveliness to be seen here.” n

Technology setup for success: A seamless and reliable technology setup is indispensable for a home office. Dual monitors for enhanced multitasking and increased productivity are not as expensive as you might think and are well worth it in productivity. Ergonomic accessories, like a keyboard and mouse, can also contribute to a more comfortable and efficient work experience.
Stay organized: A clutter-free and organized workspace is essential for maintaining focus and productivity. Invest in storage solutions, such as filing cabinets, so that the desktop can be clutter free. In my custom built-ins and desks, I also include interior drawer charging solutions for phones, tablets, and computers to keep desk space free. This also helps with cable management. We create channeling and panels to hide cables to avoid visual clutter. Personal touches like plants, decorative storage boxes, or inspirational quotes can add a touch of personality without sacrificing order. In the pictured office, I chose a triptych by Andy Warhol for a pop of color for visual stimulation.
Comfortable flooring: The flooring in your home office plays a significant role in comfort and acoustics. Choose flooring materials that absorb sound and minimize distractions during
virtual meetings or focused work sessions. Area rugs add warmth and provide acoustic function to a workspace.
Soundproofing solutions : Noise can be a huge distraction when working from home, especially in a busy house full of pets and kids. Installing soundproofing solutions, such as acoustic panels or curtains, can help minimize external noise and create a more focused work environment.
Plants always work: It is best to keep plants to a minimum. Simplicity is key. One vocal point plant, such as a Ficus lyrata, makes a statement in any office. Plants not only improve air quality but also add an organic touch to the otherwise structured workspace.

Casa Pacifica celebrates the 30th anniversary of its popular Angels Wine, Food & Brew Festival on Sunday, June 2. This outstanding event, voted Ventura County’s “Best Charity Event” and “Best Food & Drink Festival” for more than a decade, will be hosted by Bank of America; Conico Oil/MacValley Oil Co.; Mission Produce; Nevers, Palazzo, Packard, Wildermuth & Wynner, PC; and the Van Huisen family.
Casa Pacifica’s signature fundraising event, the festival helps fill the annual gap between revenue and actual costs of the agency’s crucial mental health programs and services. Located in the foothills of the Santa Monica Mountains in Camarillo, Casa Pacifica provides therapeutic programs and services to children, young adults, and families who face mental health challenges. The largest nonprofit provider of children’s mental health services in Ventura and Santa Barbara counties, they help more than 2,000 children, young adults, and families each year.
Chief Development Officer Carrie Hughes explains, “We work diligently to curate a fantastic yearly event that inspires the senses. Our volunteers, sponsors, and community have all played a seminal role in the festival’s evolution from a small and humble event to Ventura County’s premier wine, food, and beer happening. We continue to grow because of everyone’s belief in Casa Pacifica’s mission of providing healing and hope to families in need.”
Casa Pacifica’s first festival was held March 20, 1994, at the Pierpont Inn with just a handful of exhibitors and around 50 attendees. Joyce Hall, a longtime Casa Pacifica volunteer, helped establish the event’s planning committee. She was instrumental in attracting regional wineries, restaurants, and breweries. Today, an estimated 350 volunteers devote their time and talents to make this one of
Ventura County’s finest affairs. To accommodate the growing attendance, it relocated in 2007 from Oxnard’s Embassy Suites to Cal State Channel Islands, where it has been held ever since.
One of the festival’s most anticipated events, the Top Chef Yummie Culinary Competition pits the region’s top chefs and caterers in a blind-tasting culinary throwdown. Judges rate both the savory and sweet categories based on flavor, presentation, innovation, and quality to crown the chef whose submission wins the title and a desirable prize package. Competition winners also receive an exclusive invitation to be part of the Top Chef Yummie Dinner event—sister event to the Wine, Food & Brew Festival.
Another unique facet is the annual Best in Fest, a blind tasting competition among Ventura County’s finest breweries that is held a few months prior. Each entry is judged by a panel of cicerones, certified beer judges, and industry experts. The winners are crowned on the main stage during the festival.
The festival has something for everyone, incorporating a mix of high-profile culinary and beverage talent along with beloved local restaurants, wineries, breweries, bakeries, and specialty shops. They also offer a VIP experience, which begins even before guests enter via preferred parking and early access.

1 tablespoon lavender flowers, dried or fresh
1 cup blackberries, fresh or frozen
½ cup maple syrup
¼ cup vodka
2 750 ml bottles champagne
Instructions
Boil blackberries, maple syrup, and vodka, mashing blackberries gently as they cook until broken down (about 5 minutes). Add lavender flowers (removing from stem if fresh) and boil for 1 minute. Remove from heat. If time permits, allow to steep for at least 1 hour and up to 2 days in fridge. Pour 1 tablespoon blackberry sauce into champagne flute, add stem of fresh lavender, and top with chilled champagne.
2 ounces whiskey or bourbon
(Try Old Camp Peach Pecan Whiskey)
1 teaspoon grapefruit juice
1 ounce simple syrup
3 slices peach
1 grapefruit wedge
A splash of seltzer water
Instructions
Fill glass with crushed ice. Combine whiskey, grapefruit juice, and simple syrup in cocktail shaker. Shake and strain into glass. Top with splash of seltzer water and garnish with peach slices, grapefruit, and flowers if you’re feeling fancy! For even more peach flavor, muddle a small peach slice in bottom of glass with simple syrup before adding ice and remaining ingredients. A sprig of mint is also fabulous with this cocktail.

1/4 cup good olive oil
1-1/2 cups pesto (packaged or homemade)
1 (10-oz.) package frozen chopped spinach, defrosted and squeezed dry
3 tbsp. freshly squeezed lemon juice
1-1/4 cups good mayonnaise
1/2 cup freshly grated Parmesan cheese
1 1/2 cups frozen peas, defrosted
1/3 cup pignolis (pine nuts)
3/4 tsp. kosher salt
3/4 tsp. freshly ground black pepper
Cook the fusilli and bow ties separately in a large pot of boiling salted water for 10 to 12 minutes until each pasta is al dente. Drain and toss into a bowl with the olive oil. Cool to room temperature.
In the bowl of a food processor fitted with a steel blade, puree the pesto, spinach, and lemon juice. Add the mayonnaise and puree. Add the pesto mixture to the cooled pasta and then add the Parmesan cheese, peas, pignolis, salt, and pepper. Mix well, season to taste, and serve at room temperature.
Salad:
12 oz. shelled edamame, cooked
3 cups finely chopped red cabbage
2 bell peppers, finely diced
1 cup shredded carrot
1 cup finely diced cucumber
1 cup diced mandarin orange segments
1/3 cup finely chopped scallions
1/4 cup finely chopped cilantro
Salt to taste (~1/2 tsp)
Honey Sriracha Miso Dressing:
1/3 cup avocado or sesame oil
2 1/2 tbsp. freshly squeezed lime juice
2 tbsp. white miso
2 tbsp. sriracha
4 tsp. honey
1 1/2 tsp. garlic powder
3/4 tsp. ground ginger
Sweet and Salty Peanuts:
1 cup lightly salted, roasted peanuts
2 tsp. oil
1 tsp. honey
1/2 tsp. kosher salt
1/8 tsp. cayenne
2 tsp. granulated sugar, divided
Cook edamame in salted water according to package directions. Drain well and set aside to cool.
To make peanuts, add oil, honey, salt, 1 tsp sugar, and cayenne to a small pan over medium heat. Stir well, then add in the peanuts. Cook, stirring often, for 5 to 7 minutes, then remove from heat and transfer to a sheet pan lined with parchment paper to cool. Once cooled, add to a bowl and toss in remaining 1 tsp. sugar (this keeps them from getting too sticky). Whisk together dressing ingredients.
Add all salad ingredients except salt to a large bowl, then pour dressing over the top and toss well to coat. Taste and add additional salt if desired, but note that the flavors will intensify as it sits. You can serve right away, or for maximum flavor, refrigerate for 2 hours before serving.
