● Soba noodles
Made with buckwheat flour and used in stir-fries. To make fresh egg noodles, all the ingredients are combined to make a crumbly mixture, which is rolled into a sheet, passed through rollers, and cut into noodles. They’re dropped into a continuous cooking system, which cooks the noodles then cools them to less than 5°C. Finally, they’re packed into bags and put into crates which are destined for Asda stores.

Asda’s free-range egg noodles are produced by Kanes Foods in Worcestershire. ‘The unique thing about these noodles is they’re made fresh in our factory every single day of the year – apart from Christmas Day,’ says Production Director, Mark Harris (left). This means they’re much better quality than dried egg noodles, which are manufactured, dried and rehydrated when cooked.
‘Our process is completed daily and our noodles are truly fresh. They’re a great meal solution with stir-fry vegetables and sauces.’ Mark Harris ‘To make these noodles, we use an authentic recipe of flour, free-range eggs, water, salt and turmeric,’ says Mark. Each week, Kanes Foods supplies Asda with 86,000
bags (42 tonnes) of fresh egg noodles. They’re super quick to prepare and you can create delicious Asian dishes, including stir-fries, soups and cold salads.
‘My favourite way to eat these noodles is to stir-fry fresh prawns with an Asda Hot & Spicy Stir-fry vegetable pack, add a handful of fresh egg noodles and finish off with some Asda Sweet Chilli Sauce,’ says Mark. There are many types of noodles available (see panel, above), but Kanes Foods focuses on fresh egg noodles, as well as dehydrated rice noodles.
