‘This increasingly popular root veg adds colour and delicious flavour to winter meals. Unlike the regular spud, sweet potatoes count towards your 5-a-day and they are also high in fibre and a source of vitamin A. They’re wonderfully versatile, too. I love to serve them baked in their jackets – the crisp, papery skin and nutty, caramel-flavoured flesh hits the comfort spot every time. Or try sweet potatoes in a warming creamy soup with smoky chorizo; a hearty curry with chicken, spinach and coconut milk; or mashed to top turkey mince for a healthier take on cottage pie.
