Loaded bruschetta makes a delicious snack or appetiser

To make bruschetta, thickly slice a baguette or ciabatta loaf and drizzle with olive oil. Rub with the cut side of a clove of garlic and grill or griddle until golden. Then top with‌

Parma ham & asparagus Layers of Parma ham, topped with asparagus, brushed with olive oil and griddled.

Tomato & mozzarella Deseeded and chopped tomatoes mixed with basil, olives and a little mozzarella.

Broad beans & Parmesan Frozen broad beans and frozen petit pois, cooked and tossed in a little olive oil and balsamic vinegar, topped with shavings of Parmesan.
