Best of the season: baby potatoes

‘Freshly unearthed from British farms, these spuds are super for salads, thanks to their firm texture and nutty flavour. Try a herby dressing if serving warm, or mayonnaise with chopped spring onions and a kick of mustard if cold. Swap in low-fat crème fraîche or yogurt instead of the mayo if you prefer. If you’re cooking them as a side, keep it simple. Melt butter with crushed garlic over piping-hot boiled spuds, sprinkle with chopped rosemary, then toss to coat and let them soak up the flavours. Star ingredient: chorizo
