Ellicottville, NY – With so many amazing festivals behind us in 2019 and fresh off two hugely successful events, the Rock N Roll Weekend and the third annual Lacrosse Festival, the Chamber staff is ready to tackle the biggest of them all, Fall Festival. The Fall Festival, Ellicottville’s oldest and largest event, is a huge economic engine for the village generating more than 10 million dollars in revenue and provides a major trickledown effect for all levels of employees and local notfor-profits who receive well over

$70,000 from various donations and festival events they manage. The festival continues to grow in popularity and provides an opportunity to showcase the area and its attractions converting many to repeat visitors and second homeowners. We are continually striving to provide a better-quality experience that will attract a demographic that truly wants to enjoy all the area has to offer. With no less than eleven great restaurants within the Village or close by, visitors and residents alike have no problem finding fabulous victuals. If all the restaurants are good, how does an eatery stand out from the crowd? Sim-

ply by offering something a little different, a little twist on an old favorite, or bringing an extra level of freshness to the menu. In each case the restaurant owner was asked what made their place unique, then your intrepid correspondent got to sample the dish and create a subjective review. It’s a tough job, but someone has to do it. In no particular order. See “EATS” Page B-8

Holiday Valley Beer & Wine Fest

EVL Halloween Half Marathon & 5k

The 16th annual Holiday Valley Beer and Wine Festival is Ellicottville’s next big event on November 8th and 9th from 3:307:30pm. The weekend features the crazy fun Trucks ‘n Brews on Friday, the Beer and Wine Festival on Saturday and the Kegs ‘n Eggs breakfast on Sunday. Friday night’s Trucks ‘n Brews is an outdoor beer tasting event with several options from Southern Tier, Ellicottville Brewing and Thin Man Brewery. But that’s not all! Nine of Western New York’s favorite food trucks will be on hand, plus live music with the Stick Tights band and a GIANT

Ellicottville, NY - On Saturday, Oct. 26, the village of Ellicottville will be filled with smiling faces in costumes and running shoes as the EVL Halloween Half Marathon and 5k will enter its third year. Both the half marathon (11am start) and the 5K (11:15am start) begin and end in the heart of town at 5 Monroe Street. While the course in itself gives competitors beautiful country roads to enjoy along the way, add in an array of cool, scary and just plain fun costumes, and you’ve got yourself a unforgettable race and a great way to enjoy fall, Ellicottvillestyle.

Kyle Benish Appointed to PGA Board of Directors

We would like to congratulate our very own Kyle Benish, who has recently made some major accomplishments in the PGA world. Kyle was recently completed his PGA Certified Professional Program in Golf Operations in the last month and has recently been appointed as a Director at Large on the Western New York PGA Board of Directors.

Ellicottville is always changing. The EVLution is constant and it makes for something to talk about. Questions are often asked and the answers are but a local’s knowledge away. This past year since the last zenith of Ellicottville’s year- Fall Festival- there have been a good handful of differences you may, or may not have noticed. The growth of Ellicottville is a slow dynamic, nevertheless there is something changing every season here. The new businesses, the moving businesses, the looks, the tastes and the people are part of the process EVLution has. Here are the newest transformations that Ellicottville is seeing this year: Gin Mill Unless you’ve never stepped foot in this quaint little village before, you have seen the dramatic move of the iconic restaurant to its new location. Notes From The Desk of Deputy Officer in Charge

Weekly Column By Jim Bouchard, Deputy Officer in Charge This weekend marks my favorite festival of the year. It is the largest and busiest one for the police department and other entities alike. It is the annual Ellicottville Fall Fest. This event is one that draws incredibly large numbers of visitors and guests from all over the world. Many months of planning have taken place and hours and hours of countless meetings have been attended. So many different entities have had to come together and plan numerous items and details to make an event of this magnitude take place. We have the DPW crews, the Chamber of Commerce, New York State Department of Transportation,

EMS and Fire Crews, Emergency management from Cattaraugus County, Cattaraugus County Sheriff’s Office, New York State Police, and numerous other agencies that help make this event a safe and attend able event. For the festival there will be lots of additional manpower from the Ellicottville Police Department along with Deputies from the Cattaraugus County Sheriff Office, and the New York State Police to ensure that the crowds remain under control and safe. The police officers from the Ellicottville Police Department will be patrolling by foot and also by vehicles. Areas to be concentrated on will be the normal festival areas and also the numerous side streets in an around the village that tend to draw some individuals committing local law type crimes. These areas will see a heavier police presence due to numerous complaints of unruly behavior in previous years. With that being said there will be no lost coverage of normal areas in the jurisdiction just targeted enforcement with more manpower in problem areas. I know this event creates some headaches for the local residents but the police

department urges you to bear with everyone involved and if you see something we ask that you say something. I have heard some residents state they have had a problem or an issue and I can’t seem to find the report of any sort of incident. We ask that if you see an issue arise please notify us so we can try to rectify the situation for you right then and there. There will be the normal detour set up around the festival area. The soft closing will take place on Friday October 11th at approximately 700pm with a full closing Saturday October 12h at 500am. The road should open on Sunday October 13th around 7 or 8pm. (There is a map in section B of this paper. More tips from the planning committee can be found on page 9.) I would like to just thank everyone that is working hard to make this festival happen and to remind everyone of the efforts it has taken for an event of this magnitude to take place. I would also like to thank everyone for making this community a great place to work and live! With that as always, next time you are on the street and see one of our crew, stop and say hi! We will always have an interesting story for you!

The books are gently used along with the vinyl and they are excited to open in the location as it has history in the family. Situated between the old M&T Bank and Dina’s, this new store will be interesting to visit for the lovers of books and music. Opening in the near future it will always be changing with new items on the shelves and curiosities to discover. The Ratchet Hatchet Across Washington Street in the old Dekdebrun building, another new establishment is arising: a new concept for Ellicottville - a lounge where patrons can throw hatchets at the targets for fun and competition. They will have a full bar with specialty cocktails and craft beer and a locally inspired menu. Unknown yet is the opening date of this new exciting place, but they will have a booth set up in front where they will take contact

Ellicottville Coffee Company The owner of Adventure Bound onthefly has set up a specialty coffee shop in their building amidst all the innovative outdoor gear they have to offer. They have comfortable seating and offer coffees from beans “you’ll never find on the grocery shelf”. Inspired by the passion of the small family-run coffee growers in Central and South America when traveling, the owners decided to bring the unique coffee flavors to Ellicottville. Another new addition to Washington Street next to the old Gin Mill building where it’s heard that The Ellicottville Brewing Company will be setting up a retail shop as well come 2020. The actual official birthday, April 13, will be celebrated with a 200th by-invitationonly birthday party honoring the families of the original pioneers. Also, already on the schedule of events is the July 17-19 Olde Home Week when the descendants of the 154th Civil War regiment will hold their annual gathering at the Town Center. A bicentennial whiskey is in the works thanks to the able talents of local distiller, Bryan Scharf and crew at Ellicottville Distillery on Robbins Road near Ashford. Thanks to some fancy sleuthing work on the part of Dawn Westfall, it turns out that spirits were distilled in

Ellicottville back in its earlier days. But, of course, right? Through a friend, she found a liquor bottle at the antique emporium in Salamanca. The bottle label, professing it contained “pure rye whiskey” held the name of ME Dinneen. Thanks to extensive research by Town Historian Dawn Westfall, we know that the Dinneen family patriarch was Michael who, in the 1880 census was said to “keep a liquor store.” This was likely part of the old “Union” block that was burned in February 1895, rebuilt in April, where he continued to advertise the bakery and grocery which sold everything from candy to whiskey. In the 1900 census his occupation was shown as “runs saloon and bakery.” It seems quite clear that Mr. Dineen paved the way for Mr. Scharf’s distilling enterprise in Ellicottville. It only seems fitting that a brew honoring Ellicottville once again grace the tables of our fine citizens. Hence, one will be offered in the near future from Ellicottville Distillery with its own unique label and taste. Now, it can’t be guaranteed to have the “medicinal” properties the label on the antique bottle purports, but it’s always good to have one handy in the house in case someone gets bitten by a snake! Ask about it at the Distillery - coming soon.

The 7th annual W.I.L.M.A. (We Invite Local Manufacturers & Artisans) will be held at the Cattaraugus County Fairgrounds next weekend, October 19-20th, 2019. What is WILMA Woolly Bear Weekend? It is so much more than your average craft show! All vendors participating in the event are business owners, manufacturers, artisans or crafters from Cattaraugus County. WILMA is a familyoriented event that includes items handmade or manufactured in

Cattaraugus County by local artisans and manufacturers. This event was created to help promote shop local, buy local, just in time for the holiday season. Although free to the public, businesses pay a minimal registration fee that is then used towards door prizes in the form of WILMA bucks. The first 50 people to arrive on Saturday will receive $5 in WILMA bucks and the first 25 people on Sunday will as well. On Saturday at 4pm there will be 3 WILMA bucks drawings, one for $75, and another for $50 and the final drawing for $25. You

won’t want to miss it! Many special events are planned throughout the weekend including a winter weather prediction by “WILMA” the Woolly Bear Caterpillar ... you may even get to hold her! Finnerty’s, being the self proclaimed Bills headquarters, will be rockin the game and following the Bills victory, The Rig takes the stage from noon till 3:30opm and Strictly Hip will rock the house from 5-8pm. This Tragically Hip tribute band is an, if you can only see one band this weekend, show. After taking a night off The Gin Mill returns with Two Guys Drinking Beer from

8-11pm, (see Thursday). The kitchen is open till midnight, weekends, if you have the late night munchies and there’s those 26draughts to wash it down. As I said, we end where we started at the Gin Mill from 8-11pm for Wagner, Winston, wing, Wednesday. As Ellicottville readies itself to host it’s largest Festival of the year, we would like to let you know what we have been working on. The Special Events committee, Ellicottville Police Dept, Catt Co. Sheriff’s Dept, NY State Police, EVL Fire Dept., Village and Town Boards, Code enforcement, DPW, Chamber of Commerce, NYS DOT, along with input from local residents, merchants and bar owners have been working diligently since November of 2012 on ways to improve Fall Festival as we know it. ZERO TOLERANCE is the LAW and will be strictly enforced. This means absolutely no alcohol is allowed on village streets. You will not be allowed to leave an establishment or private property, walk to, from or within the village with open containers. Drink it or leave it. Public intoxication and disorderly conduct will not be tolerated. NOISE LEVELS have been addressed with the local bars and beer tents. Outdoor live music will end at 11pm; quieter, background music will be permitted until midnight, in accordance with the local sound level ordinance. Private homes are also be obligated to obey this law. PARKING: We strongly encourage carpooling, use

of shuttles or walk! Space is limited and illegally parked vehicles (including motorcycles) will be ticketed and towed. Fire lanes, hydrants, and sidewalks are not to be blocked. Observe all temporary and regular no parking signs. Remember that flagmen for private lots are not allowed in the streets. Note that illegally parked vehicles on private property are the landowners responsibility. BUSES: Hired bus drop and pick up site will be located at the DPW building on Mill & Martha Street. Parking for buses is on RTE 219, beyond Holiday Valley Rd at the old driving range site. Buses will NOT be allowed to load or unload elsewhere. Bus lines will be notified of open container law, and are expected to adhere. SHUTTLE SERVICE: Daytime loading site at Jefferson St & Martha St. Sat & Sun 10 am – 7 pm Evening site is at the New M&T Bank parking lot 7pm to 3 am, 7pm to midnight on Sunday The shuttle destinations are to most of the condos between the Village and Holiday Valley all other destinations will require the taxi service, Uber etc. Taxi Call: 375-TAXI, (Lyft & Uber), call in advance as they can be very busy. POLICE WILL NOT GIVE YOU A RIDE!

REST ROOMS: There will be plenty of port-ojohns provided throughout the festival area, they are cleaned routinely, use them! Public urination is against the law and violators will be prosecuted. EMERGENCY AND FIRST AID LOCATION: Sheriff and First Aid trailers will be located on Washington St. across from Katy’s Cafe and Madigan’s. CELL SERVICE: Have a plan if the towers go down. Know where to meet if you are separated. VENDORS: Must display vendor & health dept. permits on tents and must park in the designated lots provided to you by the Chamber. Sandwich boards, tables/ chairs, merchandise, will not be allowed on sidewalks & tree lawns as to keep open to line of site for emergency personnel. Vendors are responsible for removal of their trash. Help make Fall Festival safe and enjoyable, if you see something illegal, report it, if you see a mess, clean it up. Villaggio: Described by owner Nick Pitillo as Italian casual, this Monroe Street eatery has some of the best food in town. Their Risotto Bites appetizer has become the stuff of local legend. It’s their Risotto stuffed into a Banana Pepper, coated with more Risotto and deep-fried. They put the yum in yummy. I tried the Short Rib Gnocchi (pictured), a savory mélange of fall-off-thebone tender beef short ribs, wild mushrooms, braised in Espresso, and served over the house-made Gnocchi. Truly amazing.

Cupcaked: No one can survive on entrees alone; a person has to have dessert sometime: think breakfast. This newer Ellicottville business is baking up some of the cleverest, sweetest treats you’ll find anywhere. Owner Anne Coe is the creative genius behind their Peanut Butter and Oreo Chocolate Truffles, Pie Sickles, Brownies, and gluten-free desserts. Then there’s the plethora of imaginative cupcakes: MapleBacon, Banana Split, Almond Raspberry, Chocolate CreamCheese. Her Chocolate Mousse cup won Taste of Ellicottville last year, and I couldn’t resist trying it. Oh my! Creamy smooth chocolate mousse with crushed Oreos on the bottom. Hold me back!

Public House: Two years ago, Public House won the best entrée at the Taste of Ellicottville. The winning entrée is still on the menu: Scallops with Bacon Jam. Served on a bed of Risotto and topped with a house-made Bacon Jam, the Scallops are mouth melting tender, and the Bacon Jam adds a touch of sweet-salty tang. Add a bit of creamy Risotto, and your taste buds have never had it so good. Also outstanding are the Beer Clams. The briny clams are set off by the hoppy beer they are boiled in. Add a jalapeno kick on top of it all, and these clams are as happy as - well, a clam.

Finnerty’s Tap Room: This year, Finnerty’s won Buffalo’s Meatball Street Brawl for People’s Choice Freestyle Meatball for their Ruben Meatball. It’s an unusual choice; basically, a Ruben sandwich rolled into a meatball. “It’s everything you have in a Ruben sandwich; the corned beef, the sauerkraut, the bread, and the parmesan cheese,” owner Billy Finnerty tells me. Now a regular part of their catering menu, the meatball isn’t yet a standalone full-time entree. But it shows up as a slider appetizer and makes up their Ruben Rolls with sauerkraut.

Katy’s Cafe: If you’ve ever been to Taste of Ellicottville, you would have seen one of the longest lines is in front of Katy’s. They were lined up for Katy’s Blue Mushroom Soup, a savory collation of Blue Cheese, Mushrooms, Bacon, and Cream. “Everyone loves it,” says Katy without a hint of braggadocio. Alas, it only appears on her menu from time to time, and Katy has a list of people she has to call when she makes a batch. Do yourself a favor and get on that list. BTW, she’s made a batch for Fall Fest.

Steelbound Brewery and Distillery Steelbound Brewery and Distillery: Steelbound popped up on the Gastropub scene about five years ago, and with 30-some in-house brews on tap, they’ve become well established in the WNY microbrew zeitgeist. They’ve taken a unique approach in mashing up their brewery and distillery brews with their food. As owner Bill Bursee likes to say, “Our kitchen is as creative as our brewery.” Either the beer or whiskey or some of the hops are infused in just about everything on the menu: from the hamburgers that include Porter braised onions to the brick oven pizzas with hop-infused red and green peppers. Their redolent entrees include Beer Braised Short-Ribs and Beer-

Dina’s

Dina’s: As Ellicottville’s high-end restaurant, Dina’s serves up the kind of cuisine you would expect to find along Fifth Avenue in New York City. Now they are taking the Farm to Table movement to heart by concentrating on really fresh ingredients: vegetables, lettuce, fish, and meats. They have teamed up with Produce Peddlers who supplies them with locally grown produce; often picked within 24 hours of being served. In addition, they are buying prime cuts of Tenderloin, Strip Steaks whole Big Eye Tuna, and Salmon, and cutting them to serving size in the kitchen. As proof, they serve me a salad with fresh Romaine, Carrots, Asparagus, and Red Peppers. You can’t get much fresher than this. (Photo on cover.) Can Chicken. But the FishFry is where the beer/food combination really swims. Their whiskey is mixed into the cornmeal-based coating over Haddock and deepfried. The result is an extra

crispy coating with definite whiskey notes adding a bit of smokiness to the fish. For some wings with real distinction, try the Blueberry Barbeque sauced wings with a hint of jalapeno.

Silver Fox Steakhouse

Silver Fox: Ellicottville’s premier steak house was established by Mike Nickolson and his father, Gerry. Mike admits to being “a little old school” in terms of décor and menu. But, when you enjoy one of their dry-aged prime steaks, you’ll understand. Sometimes the old ways are the best ways. They feature their Love Me Tender Love Me Blue dinner. It’s a mouth watering combination of two four-ounce pan-seared tenderloins on a bed of mashed potatoes. They are topped with Maytag Blue Cheese and drizzled with a Veal Demi-glaze and crowned with a spring of Rosemary. Alas, your correspondent wasn’t allowed to sample this one, but Mike tells me it’s one of their best-sellers.

Bike, Burritos & Brew Bike, Burritos and Brew: The Village’s most unique business; this bike shop and burrito restaurant in one (formally Bike and Bean), was voted best cheap eats in a ski town by readers of Ski

Magazine. They’ve established a new shop on Martha Street, just outside downtown. (Go south on Monroe to Martha and turn left.) You’ll see why it’s worth the short walk when you try their burritos: steak,

chicken, or veggie. Every one of them is made fresh in front of you, and you get to choose your add-ins. Sure, you can get burritos just about anywhere, but these are in a class of their own.

John Harvard’s: There is no better way to enjoy some of the food at John Harvard’s than by taking the chair lift at Holiday Valley to the top of the Mardi Gras run. Enjoy the fall colors and try their latest offering: Argentinian Mixed Grill with Lamb Chops. According to Chef Rory Mosher the dish includes grilled Fingerling Potatoes, Charred Butternut Squash, grilled mixed Citrus, Colliflower, and and Lamb Chops with a Chimichurri Sauce. It’s a meal as spectacular as the view.
