By Chad Neal Over four and a half years ago Ellicottville native and owner of Osteria 166 restaurant in Buffalo NY, Nick Pitillo decided he wanted to get back to his roots in Ellicottville. He, along with his wife Kendra and their amazing staff and crews turned the building that used to house The Barn restaurant into what is today’s well established Villaggio Italian

restaurant on Monroe Street in the heart of the village. On October 9 at 5pm they invite you to celebrate their four year anniversary with them. They will have live music, complimentary snacks and liquor, wine and beer tastings “with lots of family and friends”! Northtowns Orthopedics Becomes Excelsior Orthopaedics

By Carol Fisher Have you ever watched a cria pronk? This is your weekend to mark that off your to-do list The Southern Tier of Western New York is absolutely beguiling, especially at this time of year when the trees begin a slow, sexy reveal of their underlying leaf colors, coyly teasing with a demure little flash of red or orange - enough to keep us interested and anxiously waiting for more to be unveiled. While we wait, we keep busy with the myriad of activities available to us in our delightful corner of the map. This weekend, you will have an opportunity to visit several area farms that are home to some of the cutest critters on the planet – alpacas. There are no wild alpacas, as the Peruvians in the Andes See “ALPACA” Page 7

The Ellicottville office will remain at the Northtowns location of 6133 U.S. Route 219, Suite 1001; just look for the new Excelsior sign. Everyone will still be able to see their same physicians, but they will also have access to new faces and new office locations.

By Jessica Schultz We are all looking for the highest level of medical care, especially when our bodies break down. Be it old age or an athletic injury, we need someone who can help us regenerate. What happens when two top ranking orthopedic companies make the decision to grow together? You can find out starting October 1st when

Excelsior Orthopedics integrates with Northtowns Orthopedics. The Villager had the chance to speak with Mark Wolbert, Vice President of Business Development for Excelsior to see what he had to say about the integration. Both Northtowns Orthopedics and Excelsior Orthopaedics have built impressive groups rooted in a private See “BUSINESS” Page 7

Great Valley Food Pantry Launch ... Page 3 Lutheran Church Opens Organization October 5, 9am

Great Valley, NY – St. Paul’s Lutheran Church in Ellicottville is excited to announce the launch of the Great Valley Food Pantry, a community-run and led organization that will provide easier access to supplemental food resources to those within the communities of Great Valley, Humphrey, and Kill Buck.

Billing Proposal At last Wednesday’s Town Board meeting the Board heard a presentation from Mark Reinhard from Concepts 2 Code regarding taking over the Town and Village’s water and sewer billing. He explained his company does billing and payment processing for several large companies, and he is willing to take that chore away from the two entities for free. The Village would manage the list of sewer customers (likewise with the Town’s water clients) and each quarter upload the list to Concepts. The company would send out statements with an offer for the client to sign up for receiving bills via email. The customer can go to the web site and pay their bill online using Concepts’ portal, not the Williamson Law Firm’s website. Collected funds would be transferred to the Town’s accounts as usual. The more customers opt to receive bills via email, and the less the Town will have to spend on paper, envelopes, and postage. Mr. Reinhard said his site will work with mobile devices unlike Williamson’s. He pointed out, for a year’s billing, the Town could save about $6 per customer. After some discussion, it was determined Mary Klahn See “BILLING” Page 7

Tier I would allow solar roof panels in all districts. The roof panels would not be allowed to exceed the height limit of the roof line, and there could be a limit as to how much of the roof area is covered.

I recently started using an adaptogenic herbal blend that features Ashwagandha, the long time revered herb of the Indian Ayurvedic System of Medicine as a tonic, mainly an a nervine tonic. I love this herb! It truly helps to move beyond merely managing situational stress to develop a sustainable approach to ongoing mental clarity, physical endurance, and nervous and immune system health. Anyone? I truly would like to invite you to experience the Ashwagandha awakening. This health phenomenon occurs when the holistic properties of ashwagandha begin to strengthen the mindbody connection, leading to a fundamental restoration of your natural response to stress. We all know that when managed improperly, stress can wreak havoc on sleep, energy, immune function, sexual performance, relationships and coping abilities. It can also exacerbate brain fog, reduce awareness

Cont. From Cover some questions: Villager (V): In four years Villaggio has made a great name for itself... what and who do you give credit to for helping with your success? Nick and Kendra Pitillo (NKP): We are so proud of having our fourth anniversary in Ellicottville, our home. The only reason we are still kicking is because of the people in our little slice of heaven. We called it Villaggio because we knew it would take a village! So to answer your question, it’s the people! The people of Ellicottville and the amazing family of hard workers we have assembled.

V: What kind of changes did you have to make since you opened? NKP: One of the biggest changes we made was our last menu design. We lowered our prices and our portions and it has been very successful. We are ever evolving and, although sometimes hard, change is good. V: What is the weirdest or coolest thing about the four years you never imagined at Villaggio? NKP: PASTA BAR! We never imagined it would become such a staple in our business and our community. V: What plans are you pondering for the future? NKP: Right now we are focusing on Fall Fest and the upcoming winter season. But we always have an eye systems intended for on-site consumption. Tier III: Largescale solar farms with power sold to utilities. Limited up to 25-megawatss. The Board noted a definition for battery or bulk storage will have to be created to follow NYS Building Code. Mr. Palumbo said the zoning amendments include updating the land use tables to accommodate the new rules. The Board reviewed each of the three solar project levels. Tier I would allow solar roof panels in all districts. The roof panels would not be allowed to exceed the height limit of the roof line, and there could be a limit as to how much of the roof area is covered. The group felt the definition of Tier II might be too limiting if Holiday Valley or HoliMont want to install a larger solar system to reduce their electricity costs. Tier II systems would also be allowed in all

it for the rest of their lives, with a few years off for rest. Alpacas can live to be 20 years old so that could mean upwards of a dozen or more babies since they begin to breed at about 18 months to two years. Gestation is 11.5 months and within two weeks of birth, the mother is ready to start again. Do the math. They are literally pregnant all of their adult lives, and they nurse for roughly five-to-six months, while preparing for the next birth. Unlike we humans, who would not do well under the pregnancy, alpacas are always cute, calm, sweet and gentle, as well as being predictable, intelligent, curious, cautiously friendly and very observant. They are more at ease in herds, which are generally made up of a dominant male, the females and the young. When frightened, they will huddle together and move en-masse as one. Some farms employ the watchful services of llamas that serve as guards of the more vulnerable alpacas. When you visit an alpaca farm, be sure to watch their behavior – and listen. They might hum or make other odd staccato sounds, do a head tilt, reposition their ears or tails, and posture their necks and heads. This is all part of their unique Alpaca language. A Slice of Heaven Alpaca

Farm in Randolph is open on Saturday, September 28th only, so head there first if you are making a weekend of farm visits. Located in the heart of Amish country, you will find plenty to keep you busy for the day. Go to amishtrail.com for more information on the sights you’ll find in that area. Amish businesses are closed on Sunday, as are many of those in the area run by the “English.” Sugartown Alpaca Farm is just outside of the village on Sugartown Road. They are open both days, and if you want to take in the sights and smells of the fall season on foot, you can reach them easily with a comfortable walk. Since the weekend brings larger numbers of visitors, be aware that you may not get as many hands’-on experiences with these adorable critters as you might if you visit at another time. But they will be near enough for photographs and close encounters, and, oh yes, likely you will have the opportunity to see what started this whole adventure –alpacas pronking (jumping like gazelles with all fours off the ground at the same time). Plus, the gift shops are filled with all you could possibly want to get your Christmas gift shopping off to a great start.

advanced imaging, physical & occupational therapy and other vital services to ensure a positive patient experience. Additionally, we aren’t going to change anyone’s routine. Everyone will still be able to see their same physicians, but they will also have access to new faces and new office locations.” Services will include general and specialty orthopedic care; urgent care setting, sports and athletic training and new offerings such as physical and occupational therapy and cutting edge imagery equipment (for MRIs’). It does not matter how serious or minor a patient’s issues may be, they will work with them and provide them an individualized treatment plan to help them make the best possible choices for treatment. Excelsior prides itself on being innovative, service driven and patient centered. Not only do they offer compassion and delivery of quality care but they also take accountability for any issues and seek to resolve them. “One of the biggest things we have received feedback on is our office’s hours of operations at our Ellicottville location. We are working to establish new standard hours that will go into effective

towards year-end.” The Ellicottville office will remain at the Northtowns location of 6133 U.S. Route 219, Suite 1001; just look for the new Excelsior sign. There will be a new number to call for information or to set up appointments, that is 716250-9999 and the website will be excelsiorortho.com. The Northtowns website will remain active for a time to help with the transition, it will redirect patients to the Excelsior website. It was a pleasure speaking with Mark, who is very excited about this whole process and you can tell the integration means a lot for both the companies involved as well as the employees and patients. As it says on the Excelsior website “Every patient is somebody’s mother, father, sister, brother, grandparent, child or close friend. We care for all patients as if they were members of our own family. We respect peoples’ time and caregiving responsibilities, and we are poised to assist in any way we can. We are proud of our staff and the years of education and training they have secured to make Excelsior Orthopaedics a true Center of Excellence.”

Village recently approved spending $18,000 for the purchase of a used bucket truck with the assumption the Town would appropriate an equal amount for its share of the purchase. During the discussion, the question was raised as to how many hours the Town would need the truck. The point was made that perhaps both municipalities could rent a bucket truck as needed. The truck would cost $5,000 to have inspected every year. It was decided to investigate the purchase further. A draft of the zoning amendments concerning solar has been received by the Planning Board. There could be a public hearing on the changes in December. The department reports were accepted as submitted. Niles Person submitted a written report stating a new sign for Town Center, and the Cornell Cooperative Extension has been ordered. DPW Report Tom Scharf asked to pass the word along to drivers requesting they slow down when they see a DPW crew. The department is shortstaffed due to some medical

issues, and he doesn’t have enough employees to station flaggers at road work sites. His crews are out doing a lot of road patching. He wants to put on a second shift of workers with one of them part-time staff. New Business The Nannan Arboretum is going to repave its footpaths. The Town has offered to pay for half the work if the Arboretum will re-landscape the park to improve mowing and other maintenance. Mr. McAndrew reported the EVGV Trail has begun clearing a pathway between Town Center and Tim Horton’s. Though the path is cleared, it is still not a useable trail, and the public is asked not to use it. There are signs requesting that at each end of the clearing. There is an opening on the Town Planning Board, and the Supervisor asked the public for names to nominate. The Town Attorney is working on the agreement for Valley Village Road. The Town will abandon the road and allow the HOA to take over its maintenance. The meeting was adjourned.

committee was formed from two members of the Town Board and two members from Town Planning Board along with the Code Enforcement Officer and the Town Planner to develop a set of amendments to the zoning codes to regulate solar projects. The Committee and Mr. Palumbo had studied the New York State model solar law as well as laws from other communities. The result of the committee’s work was presented in draft form to the Planning Board. It should be noted the discussions related below are not considered the final measures. Mr. Palumbo made notes of the Board’s comments, will revise the draft and present it to the Town Board next month. The Board will make its suggestions and possibly set a public hearing. The draft amendments recognize three tiers of solar projects. Tier I: Small Scale Solar, roof mounted

and weaken motivation. Always make sure to choose a blend that utilizes natural, adaptogenic, plant based ingredients that are scientifically shown to help improve the central nervous system, which is constantly impacted by emotional and environmental stressors. Adaptogens and their benefits are linked to the hypothalamuspituitary-adrenal (HPA) axis. Together these three help the body react to repeated stress and support a healthy mindbody connection. In addition, ashwagandha helps with stress and anxierty by promoting homeostasis and general well-being. Clinical studies show that it helps improve stress response and lowers cortisol levels, reducing anxiety. Studies also show that ashwagandha supports physical endurance by improving VO2max. It has also been shown to support cognition and memory. Withanolides, the active constituents is Ashwagandha , are responsible for its biological activities. Adaptogens improve our natural ability to “adapt” to environmental factors. This blend benefits include: Mind- It supports and helps stabilize the stress response, helps improve resistance towards stress and anxiety, helps sharpen the mind-body connection, it is traditionally used to support mental health and improve memory, supports well-being, helps support cognitive performance in

Beat on the Street:

Why do You Love Your Favorite Sports Team? By Chad Neal

“Bread and circuses” is a phrase that means simple appeasement for the masses. A distraction, if you will, from the drudgery of everyday strife. Something to look forward to. Sports are that coliseum based culture we have nowadays. When a poet penned the term in the late first century he was referring to the gladiator games the

people clamored for in Roman culture. And the evolution of sports through the millenniums has made for plenty of entertainment and appeasement for the masses. Sports are everywhere and the fans all have their favorite teams. In the old song for baseball it sings, “Root, root, root for the home team”. Why do you love your favorite sports team?

Tim H. - When you grow up a couple hours above Pittsburgh you love the Steelers, the Penguins Ellie S. - Because they and the Pirates! Yinz make me so happy that I better believe it. I left out the ABA Championship Tom R. - Babe Ruth, Lou cry! LETS GO! Gehrig, Joe DiMaggio, Pythons. Yogi Berra, Mickey Mantle, Thurman Munson, Don Mattingly, Derek Jeter, enough said.

Pat M. - It creates a sense of Community Kurt F. - I was born at Jenna B. - Some things no matter where I am Buff General. Your birth are just in your blood! This there’s something to be certificate is stamped Georgia girl will always love said about the power of “Bills fan”. It’s the law. the Bulldogs. sports.

Beer

Cont. From Cover and a strawberry cream filling between the two doughnut halves. In other words, a mouth party. For co-owners of the market, Jeff and David Eklund, that might have been the end of the story. Until they got a call from Peter Kreinheder from Ellicottville Brewing Company. He was offering a collaboration between EBC and the South Dayton Market on a custom beer based on the doughnut. Kreinheder assigned Dan Minner, Head Brew Master at EBC with the task of formulating a beer that would mimic the taste of the doughnut. He got to work utilizing a secret blend of hops, and flavorings to create the Super Duper Jelly Beer; a cream ale with a jelly doughnut chaser. A swilly sweet mouth party. They created a can with bright pink lettering and a character that

vaguely resembles a mash-up of Homer Simpson, Sponge Bob Square Pants and a doughnut. On the bottling line the brightly colored, 16oz cans of the brew are being filled, capped and put in cases for delivery. The two Eklund brothers tell me they might take up to 100 cases to sell at the Market. The origin of the unlikely beer/doughnut fusion can be explained by talking to EBC employees. Beth Harvey, EBC’s CFO, told me how her family used to buy doughnuts from South Dayton Market, “We had to get there early Sunday morning, or they’d be gone.” Her brother Dan Minner chimes in and says, “We’d take turns picking up doughnuts for the EBC crew, and we had to get there super early.” According to Dan Minner the collaboration with the South Dayton Market is part of an ongoing program at EBC. “We find local folks that are making outstanding products.” Minner will pitch

an idea for a co-branded beer, and from there the suds flow. The concept has resulted in such quaffs as the Blueberry Maple Pancake for Sprague’s Maple Farm, OOPs! All Berries for Awald Farms, and their latest creation, Pumpkinville Latte for Pumpkinville Farms. Super Duper Jelly Beer is the 6th such partnering. Strictly in the interest of in-depth journalism, I sampled the product myself. At first the taste is a pretty typical ale, but then the unmistakable flavor of a jelly doughnut kicks in with strawberry notes and a hint of powered sugar. “Hmmm, beer and jelly doughnut,” I say to myself, channeling my inner Homer Simpson. It’s an amazing effect. You can find Super Duper Jelly Beer at local retailers throughout WNY such as Premier Gourmet, Wegmans, Consumer Beverages, Tops and Walmart as well as on tap at local bars and restaurants beginning October 3rd.
