CAN WE HAVE THE SAME CARER FOR EVERY VISIT? ANSWER: If a person has a small amount of care, for example one 3 hour visit a week it is usually possible to use the same carer most of the time. We know customers get to know a carer and then feel comfortable with that person. However, like all businesses our staff take holidays, can be ill, or perhaps leave the business. We therefore encourage people to meet and use 2-3 carers, in this way they will not worry so much if their main carer is not available. We try our best to match our carers to the customer. It may be that a customer prefers an older/younger person, a carer who is quiet or perhaps outgoing in nature. Although the care industry is dominated by female carers some people prefer a male – this can be accommodated. We can change the carer if the customer feels it is not working out. As care packages grow in size it becomes harder to use only 2-3 carers. For example, because our staff often work part time it is impossible to provide the same person morning, lunchtime, evening and night-time, seven days a week. However, at Independent Living we have a low turnover of staff and even for larger care packages we are able to control the number of carers we use. We just ask customers to be realistic!

A great way to turn simple chicken fillets 3 rashers round into something special, ready in 1hr 10 mins each chicken fillet. Secure Serves 4 with a metal Ingredients skewer. SERVES 6; Prep 30 mins Cook 40 mins Ingredients 700g/1lb9oz Maris Piper potatoes, cubed 7tbsp low-fat crème fraiche 700ml/1¼pt skimmed milk 2 bay leaves 10 black peppercorns 450g/1lb haddock or cod fillet 200g/8oz smoked haddock fillet Large pinch grated nutmeg 1 handful parsley, chopped 1 large carrot, diced 1 leek, sliced Half red pepper, de-seeded and chopped 1 small head broccoli, cut into florets 100g/4oz frozen sweetcorn, de-frosted 100g/4oz frozen peas, de-frosted 25g/1oz cornflour
Method 1 Boil the potatoes until tender, about 12 mins, then drain and mash with 2tbsp of crème fraiche. Season to taste, then stir in about 100ml milk to make a smooth mash. Set aside. 2 Put the bay leaves, peppercorns, remaining milk and fish into a large, shallow pan and poach gently for about 5 mins until just cooked. Remove the fish, flake it into large pieces, discard any skin and arrange in a medium-sized baking dish. Strain
the poaching liquor and reserve, discarding the bay leaves and peppercorns. 3 Mix 2 tbsp of the liquor into the cornflour and pour the rest back into the pan. Whisk in the cornflour mixture. Bring to the boil, whisking continuously, until thickened to the consistency of double cream. Take off the heat, stir in the rest of the crème fraiche, and nutmeg and parsley. Season. 4 Steam the carrots and leeks for 3 mins over a pan of boiling water. Add the pepper and broccoli then steam for a further 3 mins. Tip the vegetables in with the fish and sprinkle over the peas and sweetcorn. Pour over the white sauce. Top with the mash and fork into rough peaks. Cook at 180C/fan 160C/gas 4 for 40 mins or until golden brown.
