Annual income tax declaration for residents in Spain It is the time of the year again and for all those residents that have never filed their annual income tax declaration this information is hopefully very useful. Unlike in the UK, where the tax year ends in April, the Spanish tax year coincides with the natural year, 1st January to 31st December, and the annual tax declaration is filed between the months of May and June. The banks have sent out letters with all the relevant tax details regarding your accounts (it will say información fiscal). Since that is not the only paper to gather, here is a list of the required details: - Personal details (name, N.I.E. number, birth date, civil status, family details, etc.) - SUMA bills for all properties, or copy of the deed if not yet available. - Income from work, old age pension (equivalent in Euros!)

2. Vindaloo is an Indian curry dish from the region of Goa. It is popular globally in its Anglo-Indian form as a staple of curry house menus, often renowned as a particularly spicy dish, though it is not necessarily always the hottest available. The name Vindaloo is derived from the Portuguese dish “Carne de Vinha d’ Alhos”, which is a dish of meat, usually pork, with wine and garlic. The dish was originally modified in Mumbai by the substitution of vinegar for the wine, and the addition of red Kashmir chillies (not as spicy but abundant in colour). The dish evolved into the vindaloo curry dish in Goa, with the addition of plentiful amounts of traditional spice and using palm vinegar instead of red wine.

3. Saffron, although a costly spice, is widely used in the Indian Sub-continent in a vast range of dishes - in particular rice and sweets. Saffron is the slender, dried, reddish-brown, flattened stigma of a flower of the iris family. It has a characteristic aromatic odour and a peculiar, exotic, bitter taste. It takes almost 100,000 hand-picked blooms to obtain just one Kilogram of dried saffron! The spice is called Azafrán in Spanish, is grown and widely used here in Spain. It is this Indo-Spanish Connection that led us to call our restaurant Saffron!

Tandoori Chicken Ingredients: 1 kg chicken (thighs & drumsticks intact) 1 tbsp lemon juice 1 tsp red food colour 1 tbsp red chilli powder 2 tsp coriander/Cilantro (finely chopped) 1 tbsp cumin powder 1 and 1/4 cup plain yogurt 1 tbsp fresh ginger grated 1 tsp garlic paste 2 tbsp cooking oil & 2 tbsp butter Salt to taste Method: 1. Remove the skin from chicken pieces and cut them lengthwise 2. Mix lemon juice, cooking oil, food colouring, salt, chilli powder, cumin powder, and coriander in a bowl and brush the chicken pieces evenly to coat 3. Mix yogurt, ginger and garlic in a separate bowl and apply to the chicken pieces. 4. Marinate the pieces in refrigerator turning pieces occasionally for 4-6 hours and let them at room temperature one hour before cooking. 5. Preheat the oven to 500 degrees F and place the chicken in single layer in a greased shallow baking pan. 6. Brush chicken with 1 tbsp of butter and grill for 12 minutes. 7. Turn pieces over, brush with remaining butter and continue grilling until chicken is cooked through and tender (about 15 minutes). 8. Serve hot with fresh coriander on it. Alternatively the chicken can also be cooked over a barbeque grill with the occasional turning and basting with the butter.
