Born in Middlesborough, England, in 1916, Trudy Smith has certainly lived a full and remarkable life. I met Trudy last week when Kayelene and I delivered some flowers for her 102nd birthday. It’s an incredible milestone to reach 102 but even more wonderful is Trudy’s fantastic zest for life and the inspiration she passes to those who meet her. When Trudy answered the front door, I was really taken aback at how ‘young’ she seemed to me. She had a bit of a giggle when I suggested we were there to see her mother. She thought I was joking... (but, in truth, I really didn’t want to offend her if she was, in fact, a daughter!) Trudy lives in a beautiful purpose-built annexe at the back of the home she shares with her son’s family. It’s less of a granny-flat and much more of an artist’s studio. After her husband passed away seventeen years ago, Trudy took up painting at the tender age of 85. She always longed to be an artist and so decided it was time to live her dream. She paints under the pseudonym, Rillawood, which was the name of her great-grandfather’s property in England. Trudy told us a bit about her life, her early memories of moving to London, of the war, marrying and immigrating to Australia. When I asked her about her impressions of Australia in those days, she said that it was hard. She felt she wasn’t welcome here and, because she couldn’t understand the strong Australian accents, people would tell her to ‘learn the language or go home’. Despite the rocky start, she has since come to adore this beautiful country. Many of her artworks are inspired by the Australian outback, forests, deserts and clear blue skies. One thing she certainly doesn’t miss about England is the endless rain. After her husband suggested he couldn’t stand looking at the rain for one more day and that he wished they lived in Australia, she was quick to reply, “Let’s go!” - and so they did. South West Community Care will be holding an exhibition of Trudy’s works from Monday, 30 April until Friday, 4 May at our Eaton Social Centre. When we don’t have enough calcium in our diet, our bodies take what they need from calcium stored in our bones, which can lead to osteoporosis in later life.
Try Roz’s Salmon Patties for a tasty calcium hit!
Roz’s
Salmon
Patties Bring potatoes to the boil in a large saucepan. Cook for 20 mins or until tender. Drain, return to the pot and mash.
Heat a medium frypan over medium heat. Melt butter and add spring onions. Cook for 1 min. Add cooked spring onions to the mashed potatoes, together with all other ingredients (except breadcrumbs). Mix to combine. Shape mixture into patties and roll in breadcrumbs. Shallow fry in 2-3 tbs of olive oil on low heat for 5 minutes each side. Serve with steamed vegetables or mixed green salad.
INGREDIENTS 500 g potatoes, peeled & chopped 4/5 spring onions, finely sliced 1 tbs butter 2 tsp mild mustard 2 tbs parsley, finely chopped 1 tsp dried dill (optional) 1 tbs plain flour 415g tin pink salmon, drained 1 egg 1/2 cup dried breadcrumbs
