We apply our professional expertise and sophisticated techniques to the rich genetic diversity that nature has to offer. This continuous improvement process produces plant varieties with ever better combinations of the desired traits. We ensure that the effectiveness and efficiency of the plant breeding process is improving all the time, we seek solutions for germination problems and plant diseases, and we are continually developing new and more advanced methods for sorting seeds. We do so in our own state of the art laboratories, and we also participate in a global collaboration network of leading research institutes and universities. Capsicum Roasted Red Pepper Salad Ingredients: • 10 red Sweet Palermo or sweet pointed peppers • 1/2 cup olive oil • 2 tablespoons of lemon juice • 3 tablespoons fresh parsley and basil, finely chopped • 1 clove garlic, minced Method:

Roast the Sweet Palermo on a gas stove top or BBQ turning frequently until the skins are blistered. Arrange peppers lengthwise in a serving dish. Whisk the olive oil, lemon juice, herbs and garlic in a small bowl and then pour over peppers. Serve immediately or marinate at room temperature for several hours. Any leftovers can be stored in an airtight container and for up to a week.

Cucumber Spicy Noodle Salad with Carrot, Cucumber and Coriander Ingredients: • 1 cucumber, thinly sliced • 1 carrot, grated • Handful of fresh coriander • 1 red chili, thinly sliced • 100g vermicelli noodles Dressing Ingredients: • 1 tablespoon rice vinegar • 1 tablespoon soy sauce • 3 tablespoons sesame oil • 1 tablespoon honey • 1 teaspoon grated ginger Method:

Cook the noodles by covering in boiling water for 3 minutes. Drain and allow to cool. Combine all salad ingredients with the noodles in a large bowl. Whisk together dressing ingredients and divide into separate serving dishes.

Eggplant Grilled Vegetable Platter Ingredients: • 1 medium eggplant, sliced • 1 zucchini, sliced • 1 Italian red pointed pepper, sliced • 1/2 sweet orange capsicum (bell pepper), sliced • 1/2 sweet yellow capsicum (bell pepper), sliced • 1 carrot, sliced • 1/2 onion, sliced Dressing Ingredients: • Extra virgin olive oil • Lemon juice • Fresh basil leaves, finely chopped • Salt and pepper Method:

Submerge the eggplant in salted water for half an hour to remove the bitterness. Drain well, rinse and dry. Place a griddle with a little olive oil over high heat. Grill vegetables, a few minutes per side. Season with salt and pepper to taste and a few drops of lemon juice. Place the vegetables on a serving plate and drizzle with a little olive oil. Top with basil leaves. Serve immediately. Eggplants are really growing in popularity recently, and good quality fruit is essential for getting the right result. Tomato Tomato, Coriander and Red Onion Salad Ingredients: • 1 punnet of 8 cocktail tomatoes • 1/2 red onion, finely sliced • Small bunch of fresh coriander • Salt to taste Dressing Ingredients: • 2 tablespoons red wine vinegar • 2 tablespoons olive oil Method:

Quarter the tomatoes and finely chop the red onion and coriander. Mix together in a bowl. Season with salt and stand at room temperature to bring out the flavour of the tomatoes. Prior to serving stir through the red wine vinegar and olive oil to make a dressing. Enjoy!!

Watermelon Watermelon and Pomegranate Salad with Red Onion Ingredients: • 2-3 kg of seedless watermelon • 1/2 a red onion sliced and diced • 1 pomegranate • 5 sprigs of fresh mint, torn • 100g feta, crumbled • Sea salt and freshly ground black pepper to taste Dressing Ingredients: • 60ml extra virgin olive oil • 30ml white balsamic vinegar Method:

Peel and cut the watermelon into 1-2cm thick bite-sized triangles and arrange on a flat serving platter. Scatter a layer of the red onion and then the pomegranate seeds. Just before serving, crumble the feta over the top and finish with the dressing, season with salt and pepper. Garnish with fresh mint. Serve and enjoy.

Boil the lentils until cooked. Drain, rinse and cool. Roast the capsicums in a preheated moderate oven for 35 minutes. Toss the lettuce leaves in a bowl with the capsicum, parsley, basil and shallot. Mix together the oil vinegar and mustard and pour over the salad. Crumble the goat's cheese over the salad and season with salt and pepper.

Spinach & Chard Baby Spinach (Palak) Salad Ingredients: • 1 x 100g packet Baby Spinach • 1 large cucumber, sliced • 2 large tomatoes, chopped • 2 hot peppers, chopped • 10 almonds • grapes or oranges • black olives – canned Dressing Ingredients: • 2 tbsp extra virgin olive oil • 1/2 cup orange juice • 1/2 tsp garam masala (mixture of spices) • 1/2 tsp each ginger and garlic paste • salt • sugar • black pepper powder and chilli powder to taste Method:

Mix the salad ingredients together in a large bowl. Mix the dressing well and pour over salad. Toss through, serve and enjoy!

Cauliflower & Broccoli Roasted Cauliflower with Blue Cheese and Nuts Ingredients: • 1 large or 2 small cauliflowers, cut into florets • 120g gorgonzola or blue cheese • 120g mixed nuts • 1 lettuce (cos or salanova) • 2 sticks of celery, chopped • The leaves from 4 stems of parsley • Salt and pepper to taste Dressing Ingredients: • 10 tablespoons extra virgin olive oil • Juice of 1/2 a lemon Method:

Place the cauliflower florets in an ovenproof dish. Sprinkle with a little olive oil, pepper and salt. Roast in the oven until brown (approx 18 minutes at 180°C). Allow to cool and drizzle with a little lemon juice. Roast the nuts in a small pan with a few drops of olive oil. Rinse and dry the lettuce and divide between plates.In a bowl, mix the florets, celery, parsley and nuts. Season with pepper to taste and add a little more olive oil. Serve topped with crumbled gorgonzola.

Combine about a cup each of red and white cabbage then add a cup of the grated carrot.Whisk together the dressing ingredients and pour over the cabbage mixture, tossing to combine. Sprinkle with peanuts if desired.

Carrot Carrot Salad with Mint, Coriander and Pistachios Ingredients: • 600g baby carrots • 40g green olives, pitted and finely sliced • 1 bunch of fresh coriander, roughly chopped • 2 tablespoons mint, finely chopped • 1 handful of pistachios Dressing Ingredients: • 1 1/2 teaspoons cumin seeds • 1 teaspoon coriander seeds • 1 teaspoon harissa • 5 tablespoons of extra virgin olive oil • 1 tablespoon of red wine vinegar • 1 clove of garlic, finely chopped • A few drops of orange flower water Method:

Toast the seeds in a non-stick frying pan on high and crush in a pestle and mortar. Roast the nuts until crunchy and leave to cool. Blanch the carrots in boiling salted water until just tender on the outside. Rinse with cold water and drain. Add the dressing to the warm carrots and mix well. Just before serving, sprinkle over the fresh coriander, mint and pistachios.

Celery Apple, Celery and Ginger Salad Ingredients: • 1 apple • 1 stick of celery • Small piece of fresh ginger • Small handful of raisins • 1 teaspoon dessicated coconut Dressing Ingredients: • 1 tablespoon coconut water or milk • 1/2 teaspoon brown sugar • Juice of half a lime • 1/2 teaspoon lime zest (grated rind) Method:

Core and thinly slice the apple and finely chop the celery. Add to the salad plate or bowl. Grate the ginger and lime zest over the salad, top with raisins and dessicated coconut. For the dressing, whisk together the coconut water, brown sugar and lime juice in a small container. Drizzle over the salad.
