I

t’s been a bit of a wild ride in real estate over the past 15 years. It took the market a sizable amount of time to recover from the crash of 2007, and just as prices stabilized and were on an upward trend to see solid annual growth, the pandemic hit. Unlike the great recession, however, home prices have, in fact, not crashed but rather soared—especially in our region. If you weathered the first storm, or even if you’ve purchased in the past three to five years, many homes have doubled in value as an influx of new residents move to our cities and smaller communities alike. This, in combination with many workers still able to work from home, has fueled a huge increase in demand for housing at all levels in the Northwest. As we’ve learned, real estate can be a bit unpredictable, but recent trends are showing a bit of a return to a more balanced market come 2022. Market analysts at Zillow expect home values to grow 13.6 percent between September 2021 and September 2022. Prices are already up nearly 20 percent from December of 2020 to December of 2021. Home sales in 2021 were also up some 7 percent when compared to 2020.

The sky-high building material prices of this past summer have begun to come down some, however, supply chain issues and labor market challenges continue to put many builders behind. While you might be sitting on a pile of equity and ready to make the move up, potential buyers are continuing to experience long lead times both for new builds and custom home construction. While this can be frustrating to some, it also offers you more lead time in which to get the design of your dream home just right. The shift to work from home for many has greatly impacted what potential buyers are looking for in both a new build and existing home. In fact, these home upgrades and designs appeared in the most homes for sale in the U.S. in 2021: home office, family room, view, basement and pool rounded out the top five. It’s clear that people are more focused on making their home as comfortable as possible while creating spaces for work environment, family time and entertaining. Staying up on emerging trends can help elevate your current home’s value, or put you in the right position for both comfort and long-term value when putting together plans for a custom build.

Despite the fact you’ll spend many more hours of your life inside the comforts of your home rather than staring at the exterior, potential buyers might see red flags about your property the moment they pull up. Many new custom homes are designed using elements of craftsman or farmhouse style. Striking white or more muted tans and blues are popular exterior colors for new builds. While you can’t easily change an existing home’s exterior, something as simple as a fresh coat of paint and a few clean accents can make an older home appear much more modern. Consider hiring professional painters to give your exterior a new shine. Neutral and soothing colors like whites, tans, blues and grays remain popular, with many choosing to add a pop of color around window frames—just be sure not to overdo the contrast too much. You can also extend this to the front door by choosing another color that pops or matching it up with your other exterior accents. Updating your address numbers and garage lights to something more on trend is another very inexpensive way to help your home’s exterior shine. buyers. For most, yard work equals less time doing more of life’s enjoyable things. Easy-to-maintain tall grasses, and small shrubs and bushes spaced out, bring a clean look to your beds. Be sure to rake leaves, sticks and other debris, and a fresh coat of mulch in beds really makes them pop. Another emerging trend in home building and buying is water-smart or water-efficient landscape. As summers remain hot and dry all across our region, running sprinklers daily to keep lawns green and flowers blooming puts a great amount of stress on the aquifer. To combat this, the City of Spokane has created the SpokaneScape landscape rebate program, which entitles existing homeowners to a $500 credit on your utility bill for removing sections of lawn and replacing it with water-smart plants and mulch. Replacing a vast lawn with larger sections of rock, gravel or mulch will not only save you on the water bill and environmental impact but will also add value to both new and existing homes. The city has several pages on its website under Water Wise Spokane on how to plan this type of project, and, if you are not a resident, there are many other resources available in which to build a drought-resistant landscape. Many grasses and small shrubs need watering just once a week, and there are still plenty of beautiful perennials, larger shrubs and trees, that need very little water. Finally, take into account fencing. Worn or sagging fencing is an immediate red flag for buyers, and many are well aware of the cost associated with building a new one. If your fence is in good shape, consider a coat of stain or fresh paint to cover any potential blemishes or age. Fencing has come a long way from simple chain links and slim wood planks. There are all kinds of trendy looks out there from aluminum, composite and wrought iron. Each has a varying cost but, typically, the stronger the material you choose the longer your fencing will stay upright and keep its curb appeal. It never hurts to approach your neighbors about divvying up the cost of the project, as they will also benefit from it.

Head Inside By all accounts, the “open concept” and “place for entertaining guests” HGTV checklist marks are not going away anytime soon. New home builds continue to feature high vaulted ceilings and a main kitchen, dining and living area all sharing one great room. This being said, home-based workers are also prioritizing comfortable office spaces and finished basements in order to have a space in which to do their job and a separate place for kids to be themselves. “Home office” was one of the biggest searches on all the major real estate platforms in both 2020 and 2021. While some workers have returned to the office full time, a large percentage remains either entirely at home or on a hybrid model, going into the office just a couple of days a week. As most saw initially, it’s rather difficult to have a serious Zoom call from your kitchen table, or guest bedroom, hence the demand for a professional office space (or two) at home. If you plan to sell your home but don’t currently have a home office setup, consider staging a smaller bedroom to look like a home office. An office has become a must for some and a top priority for many others. Wood or laminate continue to be the preferred flooring in place of carpet. Bamboo and cork floors can give your home a truly unique look, and there are some cost-efficient laminates for more budget-conscious remodelers. If you do go with carpet, make sure it is high quality, and neutral colors are again recommended. In the kitchen, granite countertops are beginning to lose ground to trendy materials such as concrete or butcher block. Those heavy-duty oak cabinets you’ll find in just about any ‘80s home is also something fewer new home builders are selecting. White cabinets, farmhouse-style sinks and kitchen islands are all a part of current kitchen trends. Buyers also prefer stainless-steel appliances.

of Your Dreams WINTER GARDEN PREP TIPS TO SET YOU UP FOR A SUCCESSFUL GROWING SEASON by JOSHUA NISHIMOTO

T

he cold, winter months have made their way to the Inland Northwest. If you were unable to finish your fall cleanup in time before the first snow, there’s still time during the upcoming months to prepare your garden and landscaping projects for a bountiful spring, with flourishing greens, gorgeous flowers and delectable veggies. Here are preparations to make during these colder months to have the greens of one’s dreams.

I. Toss rotting and finished plants. Old plants can contain disease, pests and fungi. Unwanted insects feed on crops throughout the summer and may lay eggs on plants’ stalks and leaves. Removing spent plants from the soil surfaces or burying them in garden trenches (if they are disease-free) prevents pests from thriving come springtime. Burying old plants in the garden also adds organic matter to the soil, improving the cultivated earth and overall health of the soil. Maintaining soil health consistently will ensure that the garden will have the most opportunity for growth come spring.

II. Find seeds and trees. Make a plan. Did the varieties of fruits and vegetables planted last season perform adequately? Now is the time to reconsider under-performing plants and find out if a better variety exists for the specific growing environment. Find out what worked and what didn’t, research the seeds that will grow best and purchase them. Make sure to take detailed notes for next season. Be sure to note the best performing soil, watering strategies and planting techniques. You can also find complementary elements including other plants and trees that can enhance the garden environment outside of the premier garden veggies, plants and flowers. Be sure to review your notes. Haven’t thought about complementary plants or other aesthetic elements? It might be time to think about trying something new.

III. Fertilize. Winter is a great time to make amendments to your soil. These amendments can be anything from manure to compost, and even organic fertilizers such as bone meal, kelp and rock phosphate. Adding nutrients to your fertilizer during both the fall and winter months of the year gives them time to break down, enrich the soil and become biologically active. Mulching the soil after adding these amendments can prevent winter rains from washing the amendments below the active root zone; this especially applies to raised beds because they drain more readily than in-ground beds. Be sure to remove the mulch in early spring in advance of new planting.

IV. Plant cover crops. Sow cover crops like rye, vetch or clover. These crops help prevent soil erosion, break up compacted areas and increase levels of organic matter in garden beds. Cover crops also add nutrients and help soil draw carbon into the soil from the atmosphere. Planting legumes in one’s garden such as clover or field peas can increase the levels of available nitrogen for garden vegetables. The general guideline for planting cover crops is planting one month prior to the first killing frost. Note that some cover crops are hardier than others, so be sure to plant according to the crop’s viability. Consult your local extension agent or seed provider to identify the best fall cover crop for your region. “Also protect vulnerable plants from deer browsing with long-lasting deer spray or deer netting,” shares Elaine Christen, co-owner of New Leaf Nursery with her husband Eric. “They get very hungry during the winter.”

V. Prune perennials. During these slower-paced, chillier days is a good time to trim some perennial garden plants, though take care to ensure you choose the right ones. Although plants like fennel benefit from a fall pruning, research shows that spent raspberry canes continue to nourish the eggplant’s crown into the winter. Blueberries prefer a spring pruning, which helps safeguard the plant from exposure to disease and stress. Fall pruning efforts should be focused on flowers like roses; herbs like rosemary, thyme and sage; and vegetables like asparagus and rhubarb. Blackberries also benefit from a fall cleanup. Remove pent or crossing canes to help control the plant’s seed. But, according to Elaine, “Winterize hydrangea and roses, after they have lost their leaves, by covering up to 18 inches onto the stems with pine needles, a two-inch row at the base. This will help promote growth next spring!” Do not cut perennial flowering plants, particularly those covered in seed heads. These will make excellent meals for overwintering birds in your neighborhood and add interest to the winter garden. Stalks and leaves also provide winter protection for a plant crown.

VI. Divide and plant bulbs. If you’ve recently observed that your garden is receiving more leaves than blooms, bare patches or noticeable overcrowding, it’s time to divide and replant your bulbs. Spring and early summer blooming bulbs can be dug up and divided anytime when the foliage gets brown or just before the ground freezes. A digging fork is a great tool to use when digging up bulbs, opposed to a spade or shovel, which can cut the bulbs in half. Discard any bulbs that show signs of disease or insect damage. Only keep large and healthy bulbs that are firm and free from spots. Compost undersized bulbs. You will want to plant spring and early blooming summer bulbs in the fall when the temperature of the soil reaches 60 degrees. Make sure that your beds have good drainage. A good rule of thumb when planting bulbs is to plant the bulb at a depth that is three times the bulb’s height. 44

VII. Mulch. Mulching in the winter benefits the garden the same as it would in the summertime. These benefits include, but are not limited to, reducing water loss, protecting the soil from erosion and inhibiting weeds. But winter mulching has other benefits as well. These benefits help with soil transitions from warmer temperatures to colder temperatures. This freezing and thawing of the earth can adversely affect gardens and plants whose roots suffer from churning and heaving. Adding this thick layer of mulch to the soil surface helps regulate soil temperatures and moisture and ease the transition into winter. A thick layer of mulch protects against frosts and will prolong your crops. As the mulch breaks down, it incorporates fresh organic material into your soil.

VIII. Harvest compost. To top off your garden bins and refuel and replenish your soil, be sure to use nutrient-rich material. This material will nourish your soil and jumpstart growth come springtime. Be sure to clean out finished compost to make way for another batch. Replenishing compost will ensure that your plants are insulated from the harsh, cold winter. To keep microbes working longer, build your fall compost heap with plenty of those leftover autumn leaves, straw or sawdust. One can layer these using kitchen scraps and other active green matter.

IX. Clean, sharpen and look for new tools. Take this time to clean your tools. While a seasoned gardener knows that it’s important to keep their tools clean year-round, it is harder to remember to keep one’s tools clean during the busier times of the year. Give your tools some TLC during the off-season. Practicing the simple art of taking care of your tools will greatly extend the life of your gardening equipment. First, wash one’s tools to remove dirt and other materials. If there is noticeable rust or wear, remove with sandpaper or a wire brush. Sharpen hoes and shovels with a file. Lastly, rub the surfaces of your tools with light machine oil; use an old rag. This will prevent oxygen from reaching the metal and extend the lifespan of your tools for the year. The Spokane Symphony seeks to nurture the human spirit and enhance the quality of life within the Inland Northwest community through orchestral music. After more than 75 seasons, the 70-piece professional orchestra carries tradition as the largest, most active professional performing arts organization in the Inland Northwest. The Symphony is a nonprofit organization committed to community outreach and development. Its local outreach efforts include educational programs, student discounts and complimentary concert releases—including their annual Labor Day Weekend concerts offered to the public. The Symphony’s volunteer organization, the Spokane Symphony Associates, is designed to support the Symphony in its fundraising efforts and provide the assistance needed to support its education programs. The SSA is founded on the belief that a world-class orchestra enhances the quality of life in the Spokane area. “Our mission is to raise money for the Spokane Symphony and provide educational opportunities for the community,” the SSA states. With over 300 members, the SSA has raised over $3.75 million for the Symphony since its inception. “In 2019, we gifted the Symphony a record breaking $450,000,” they shared. The SSA is responsible for celebrated local events like Christmas Tree Elegance, a display of breathtaking decorated trees showcased at the Historic Davenport Hotel and River Park Square. Above all, the Spokane Symphony is known for hosting unique high-quality productions. Their 2021-2022 season includes Holiday Pops with the Sweeplings (the folk-pop duo that includes Spokane native and “America’s Got Talent” contestant Cami Bradley), New Year’s Eve with Beethoven’s Ninth Symphony, and Star Wars: A New Hope in Concert, scheduled in May 2022, which will feature the first-ever “Star Wars” film shown on the big screen while the symphony plays the score live on the stage. SPECTACULAR EVENTS MARTIN WOLDSON THEATER AT THE FOX Spokane’s Fox Theater was built in 1931 and reopened as the Martin Woldson Theater at the Fox in 2007. Owned and operated by the Spokane Symphony, the theater is a historic downtown Spokane landmark. Its mission to showcase local, regional and national events is carried out by a calendar of events that highlight education, culture and entertainment for all ages. SPOKANE CIVIC THEATRE Located next to the Spokane Arena in downtown Spokane’s North Bank neighborhood, the Spokane Civic Theatre is an award-winning nonprofit community theatre. Founded in 1947 and inhabiting its current location since 1967, the Civic Theatre hosts multiple stages that have produced a selection of annual events. Hundreds of young artists participate in the theatre’s long list of classes, workshops and onstage productions. “Inside the Music Conservatory of Coeur d’Alene can be found a wide variety of musical activity at any time of day,” shared the conservatory founder and director Julienne Dance. “You will hear the glorious cacophony of music lessons, solo and group singing, children’s ukulele strumming, a Bach Brandenburg Concerto rehearsal with violin and viola, the ethereal sounds of flute and strings, rollicking piano duets, and delighted toddlers prancing to the Nutcracker ballet.” The Music Conservatory of Coeur d’Alene has now been welcoming students for just three-quarters of a year. In the fall semester of 2021, they added group piano classes to their state-of-the-art piano lab, made possible by Women’s Gift Alliance. Their courses include Music Theory, Ear Training and Integrative Performance Wellness, plus introductory courses to voice, guitar, ukulele and much more. With classes for children, adults, ensembles and individuals, the Music Conservatory truly offers something for music lovers at nearly any age and skill level. Dance praises the conservatory’s experienced faculty, who shares its talent in select faculty showcases throughout the year. “The faculty is the goldmine of the conservatory and has higher education credentials and experience abroad and around the country,” she said. “It is our utmost pleasure to share what we are most proud of!”

Beginning in January, Spokane Civic Theatre will kick off 2022 with at least one production per month. Highlights of their 2022 event calendar include The Play that Goes Wrong, Neil Simon’s Plaza Suite, Funny Girl, and Agatha Christie’s Murder on the Orient Express, known as a “plot-twist masterpiece” that has thrilled mystery-lovers across entertainment mediums of all kinds.

The North Idaho Youth Symphony is a premier student ensemble led by some of the area’s finest educators and a team of parent volunteers. For student musicians aged 10 to 19, NIYS provides professional ensemble training and opportunities through rehearsals and coaching from principal players of the Coeur d'Alene

Big things are in store for the Spokane Valley Summer Theatre, with a brand-new performing arts center on the way. The plans for the $36 million facility were revealed in October, detailing a location near Spokane Valley’s Mirabeau Park that is set to become a haven for local students engaging in the performing arts, with additional possibilities for use of the space abounding. All SVST productions are currently held at the Central Valley High School Theatre. As they wrap up their 2021 season with a Big Band Christmas on December 17 through 19, visit their website (SVSummerTheatre.com) and social media pages for updates to their 2022 event calendar. Season tickets for their 2022 productions are available now, with single tickets set to become available March 1. MUSIC CONSERVATORY OF COEUR D’ALENE The Music Conservatory of Coeur d’Alene works to “nurture musical talent by connecting the Inland Northwest community to musical mentors, performances and collaborative partnerships, to inspire a future generation of musicians.” Located in the historic Hamilton House, built in 1908 for the second mayor of Coeur d’Alene, conservatory performances often carry the appeal of the musicians who once resided there. Professional musicians who inhabited the Hamilton House throughout history included opera star Florence Gregory Tiffany, Dean Elder and William Hawkins. 66

Regular recitals and performances are offered to highlight its students and faculty. “Every third Saturday of the month features a student recital, nourishing students and audience alike,” Dance described. “Each season brings a new path on the journey of learning music as classes, teachers and students evolve. In partnership with the Lake Pend Oreille School District, the program provides affordable after-school classes in orchestra, choir, and percussion for various levels and age groups. “Located in rural North Idaho, these access programs are essential to the inclusion of youth at any age,” shared Kathi Samuels of the MCS. “All are welcome at the Music Conservatory of Sandpoint!” The young musicians of Music Matters! will take the stage for their free community event on December 14. The Winter Concert will feature the El Sistema Music Matters! Youth Orchestra, percussion groups, and youth choir playing Christmas music at the First Lutheran Church. With fewer daylight hours, drizzle, cold, and cloudy skies, winter can be an especially challenging time to keep a smile on your face. What we can do to keep that smile bright is take some time for ourselves and our families to enjoy what we appreciate most about the region in which we live. A bit of fun outdoor exercise, seeing your favorite summertime sights transform in winter, or finding comfort in food and drink, and a brief change of scenery, can all do the body good. The weather may be glum, but the wonderful experiences of the Inland Northwest continue on, even as the snow piles up.

Ice Skating There are few things more calming on a crisp and clear winter night than strapping on the ice skates and gliding across a frozen lake with only the moon and stars to guide you. The sounds of only your breath and that of the skate piercing the ice heighten the senses but simultaneously calm the mind. Even if you aren’t lucky enough to have access to this type of skating experience, there are several other ways in which to pursue this fun winter activity. The Numerica Skate Ribbon in downtown Spokane continues to see steady visitation both throughout the day and into the evening. The ribbon is 650-feet long and has an adjacent 3,500-square-foot circle in which to spread out. It also features gentle up-and-down slopes, something quite rare when skating. Rates are by the hour. In Post Falls, Frontier Ice Arena also offers various open skate times in a more traditional rink setting. The rink hosts birthday parties, drop-in pickup hockey sessions, and you can also learn the finer points of broomball and even curling through local clubs that play here. All rental gear is available, and there are also learn-to-skate programs onsite.

cross-country skiing Whether on skinny skis or fat shoes, exploring local trails in winter is a great way to sneak in some exercise while also enjoying the beauty of nature all around us. Truth be told, cross-country skiing is one of the best exercises you can do, as it not only works the legs, upper body and core but also gets the heart rate up for a great cardio burn. Many of our local mountains, including Mount Spokane, 49˚ North and Schweitzer, have groomed trails for both classic and skate skiing adjacent to the main ski areas. If you are up for a long weekend, these are great opportunities to break up a three-day downhill weekend.

snowshoeing If you are seeking a somewhat slower pace, snowshoeing might be more your calling. Resorts will also allow snowshoes on groomed trails, but the beauty of the shoe is your ability to really access whatever trails or recreational area you want. 4th of July Pass, Mineral Ridge, Gold Hill and Dishman Hills are some of the easily accessible trails in the region. State parks are often another great place to explore, as the trail systems are well maintained and much less crowded than during the summer rush. There are several outfitters in the region where you can rent both skis and snowshoes for the day, weekend or week.

lake cruises If you’d prefer to skip the sweat and exercise but would still like to get out and enjoy the winter sights, there are still plenty of laid-back experiences for couples and families. The sheer size and depth of Lake Coeur d’Alene ensures that it never freezes over in the coldest of winters. cooking classes One thing we all crave during the cold and dark winter months is a warm meal and our favorite comfort foods. While each family has a staple of recipes, mixing things up with new dishes can liven up even a mundane midweek meal. any times, we search for the perfect word or phrase—some combination of words or letters capable of fully encompassing an experience or emotion. The struggle to effectively communicate what we are feeling is common on playgrounds, mountain passes or the occasional seaside vacation. Not surprisingly, the struggle is also common in plastic surgery consultation rooms, as our patients search for ways to express their roller-coaster of emotions. Deciding to move forward with an elective procedure or surgery takes significant expenditures of both time and thought. And, whether it’s an in-office application of facial filler, non-invasive body contouring or major surgery with general anesthesia, the emotions are bubbling inside them. I was describing this phenomenon at the dinner table one evening when my 8-year-old daughter said, “Oh, I get that way all the time. It’s when

There are innumerable reasons for this feeling, but in my consultation rooms, it usually stems from the following: They committed their body selflessly to carry and deliver their children; they fed them from their bosom and watched themselves deflate. Or, they finally took back control, and either through diet and exercise or the miracle of weight-loss surgery, shed the extra pounds and added years to their life. These admirable actions left behind extra skin that developed rashes in the summer, and made it difficult to be comfortable in or out of their clothes. And now, they have decided to consult with a professional and start down a new, and often unfamiliar, path of self-betterment. It’s hard not to imagine someone being extremely nervouscited. aime Crocker has called the Inland Northwest home her entire life. Born and raised outside of Spokane in Liberty Lake, Washington, she graduated from Gonzaga Preparatory School and attended the University of Washington, where she received her Bachelor of Science degree in human biology. She then returned to school to obtain her second degree in nursing; and from there would go on to attend Gonzaga University, graduating with a Master of Science degree in nursing. It was there that she would be introduced to her husband Roy, also a Spokane native. It was five years ago that Jaime, the mother of two (Jackson and Ella), was inspired to pursue a new career path in hopes of a better work-life balance. Spending 18 years of her career as a nurse practitioner in the emergency department, she was eager for a change from the chaos of emergency room medicine. Though she was not very familiar with aesthetics at the time (“They don’t teach much in the way of aesthetics in acute care studies,” she laughs), Jaime was ready to learn. “It took a lot of courage and drive to start over in a field I knew very little about,” she recalls. “I love to learn, so this was a great new challenge. I quickly fell in love with the path I was pursuing and enjoy what I do each and every day. It’s been so rewarding. I get to help people build self-confidence, to invest in themselves building self-love.”

T

he body and all its joints and muscles were made to move. That’s their job! The joints, muscles, nerves and bones need at least 10 repetitions a day to keep healthy. If you are not active daily, muscles and their neurological intervention atrophy in only three to five days with non-use. So, the best way to ensure your body’s health this season is to get moving! Strength training reduces sports injuries by over 66 percent and repetitive overuse injuries by 50 percent, according to recent research data overview. Interestingly enough, the research also showed that the more we increased our strength training “volume and intensity,” the less sport-related injuries occurred. Different approaches to strength training appeared to lead to the same outcomes in the literature; they all decreased the risk of injury. Which is good news, because we can make a change in our health, no problem. It’s never too late. Evidence suggests that if you were already on a strength-training program, increasing your volume by only 10 percent was shown to be effective at reducing injuries. Stretching was not directly related to a reduction in sport-related injuries, but it did make people feel better. There are so many different ways to strength train that picking one seems to be part of the challenge. Since the data is showing that all strength training leads to

a healthier life and reduces the risk of injury, we just need to get started. Body by Science challenged our thinking by describing five main exercises done to fatigue at the highest weight possible, and it takes approximately 15 to 20 minutes to accomplish it. The CrossFit world offers us longer, integrated workouts with a connection to a team of people to help keep us motivated. Your local gym has personal trainers who can offer you one-on-one direction and drive you forward to your personal goals as well. There are exercise apps and online training programs, so you don’t even have to leave your house to strength train. Your local physical therapists are premier musculoskeletal specialists and can help you get started on a strength-training program that you can do at home or a gym. They understand past injury implications and complex medical history to keep you safe while you strength train. They have customized exercise apps that can advance your strength as you progress every few weeks to months. Currently, I have a couple who have their exercise app on their TV, and they work out together with it every day. They have never felt better! Getting stronger will most likely keep you from the unwanted “downtime” that comes from sport-related injuries or repetitive work injuries, so you can have more fun playing this season. Understanding what it takes for the body to heal after injury might help us see why strength training is so necessary. The different structures in our body heal at different rates, and once you know the time frames, it becomes a motivator for prevention of injury.

Healing Time Frames for Body Structures: 1. Bones: Approximately six to eight weeks; protect the site, but weight bearing helps bones heal. 2. Nerves: Typically take the longest (three to four months) to heal; the longer a nerve is, the longer it takes to heal. A nerve heals at an approximate rate of 1 to 3 millimeters a month. 3. Cartilage: Approximately 12 weeks; it is aneural, so often we don’t know it’s injured until it thins down to the underlying bone. 4. Ligaments: Depending on severity, 10 to 16 weeks; slow to heal, as their blood supply is limited. 5. Muscle: Two to six weeks depending on severity; good blood flow improves their ability to heal quickly. 6. Tendons: Four to six weeks depending on severity and area of tear; can take longer if blood supply isn’t efficient. Achilles’ tendon often takes longer, as it is large and diffuse with more elastic fibers and needs eccentric loading to heal. Strength training is the best way to help muscles, bones, ligaments, tendons and nerves stay healthy. Preventative exercise is the key to

longevity. The body wants to heal itself. We have the ability to turn off genetic tendencies for chronic disease with daily exercise, clean diet, intermittent fasting, sleeping seven to eight hours a night and decreasing the stressors that make excessive cortisol. The Buck Institute for Anti-Aging states that they “believe it is possible for people to enjoy their lives at 95 as much as they do at 25, and to achieve that, they are seeking a more comprehensive understanding of the biology of aging itself.” Once we understand that more clearly, we can effect regeneration and healing. After owning their first restaurant in Hope, more than a decade later Chad and Meggie are excited to be opening their third Sweet Lou’s at the halfway point between their current Ponderay and Coeur d’Alene locations. “Our first five years in Hope were very important to us. Without Hope, we wouldn’t be where we are today,” Meggie explains. “We learned a lot of hard-taught lessons about running a successful business, in a very supportive community.” The Fousts’ two current locations were opened in buildings that were already constructed. With the new Athol location, the couple was able to design from the ground up. “We are excited about the architecture and design, which was inspired by the naval history of Farragut and created by the genius architect Monte Miller of Miller Stauffer Architects in Coeur d’Alene,” Meggie shares. While the interior will look different than the other two locations, guests who’ve experienced a night out at Sweet Lou’s will be treated to a very similar atmosphere, menu, and level of customer service of which they are accustomed to. There will be plenty of TVs, so you can

t’s often said, especially from those with young children, that time flies! When Chad and Meggie Foust first left Seattle for North Idaho, their son Lou was only a year old. “Lou, who is now 12, just started bussing tables last summer, and you may just see him in Athol this summer!” smiles Meggie.

always catch your favorite sport, and the portions will remain ample while using quality ingredients. Consistency is one of the key factors Meggie attributes to their continued growth. That and the drive and will of husband Chad. “He never stops,” she affirms. “He’s very wary of being complacent in business, so he’s always thinking of how to improve and how to grow. I’m grateful for his knowledge and his energy.” The Fousts’ goal for the new location is to create an atmosphere where you can enjoy a night out on the town, or just grab a quick bite while catching the game, all while having a great dining experience. You’ll find fan favorites like the Tailgate Egg Rolls, Fish and Chips, and 60/40 Burger, and plenty of regional craft beers to complement the great food. It’s also likely you’ll see someone in the Foust family during your meal. “Chad and I both do our best to be in the restaurants, on the floors, as much as possible. It’s the only way to maintain that consistency and know we are doing things the way they are expected. It will be a challenge with three restaurants, but we are ready for it,” Meggie says. While they don’t have an official opening date yet, expect the doors to open sometime this spring. As the anticipation grows, so does the excitement for Chad and Meggie. “We are also excited about serving the local customer base in the Athol, Bayview and Rathdrum areas. We’ve had a lot of support from customers in these areas, and we are looking forward to being their neighbors,” she smiles.

he Syringa. The Bluebird. The Monarch. These are all symbolic of Idaho, as they represent the state’s flower, bird and insect. In addition, each represents a North Idaho dining establishment that has become synonymous with Coeur d’Alene. Thanks to owners Viljo and Autumn Basso, Syringa Japanese Café + Sushi Bar, Bluebird - A Midtown Eatery and Monarch Ramen + Noodle House are well-known and loved throughout the community—and beyond. The names reflect an appreciation for this place they call home; the restaurants an homage to their travels and the various cuisines they’ve experienced throughout them. “We live and work in such an amazing area,” says Autumn. “We have the greatest customers that we have grown with over the years. The continued support we receive is humbling, and we hope to continue producing quality products while striving to give the best customer service possible.” It all began in 2007, when the couple introduced their first restaurant to the Coeur d’Alene community—Syringa Japanese Café + Sushi Bar.

ince 1999, Joe Hamilton had been investing in his local community—and their health.

Since day one, Joe has stayed true to his unwavering goal to build a financially sustainable and principled company to serve, empower and delight their health-seeking customers, while creating a challenging, empowering and rewarding work environment for their members, leaders and advisers, with opportunities for personal and professional advancement. What started with Joe and one employee operating the store, with a focus on providing healthy food and supplement options in Coeur d’Alene, has flourished to now occupy an entire city block, with 120 staff members.

It doesn’t get any fresher than that.” Each department at Pilgrim’s is run autonomously by its management, allowing managers and team members the opportunity to innovate with new and exciting products—and the result is an environment of craftsmen who consider their work a rewarding and passionate labor of love. “The results speak for themselves,” says Joe. “The foods are very high quality, healthy and free of so many objectionable ingredients found in traditional foods.”

EXCITING CHANGES FOR THE OVAL OFFICE; PENTAGON RE-OPENS

S

ince 1996, Turkey-native Raci Erdem has been dedicated to bringing an unforgettable dining experience to those who take a seat at his Post Falls restaurant—The White House Grill. Featuring a menu inspired by Mediterranean flavors, combined with his personal flare—and a lot of garlic— diners have continuously shown their support to Raci, his restaurant and the staff. Even throughout the pandemic, his longtime employees remained loyal, as did his customers. The restaurant continued to thrive, which you can witness for yourself the moment you walk through the door—no matter the time of day. Just down the street is where Raci opened his second restaurant, The Oval Office & Martini Bar, in 2007. For the past 14 years, diners have been treated to this cozy, romantic small-seat eatery, where they have been given the opportunity to appreciate Northwest-inspired flavors with the small-plate and entrée offerings, paired with the one-of-a-kind martinis. The location is currently undergoing a big change, as it is being torn down and built back up to be better than ever! Set to reopen by no later than spring of 2023, the entire structure has been torn down and will be rebuilt from the ground up. “It was time for that building to go away,” laughs Raci. “It was really old, and I didn’t want my reputation to go down with the building. It was time.” Raci is looking forward to the next chapter of The Oval Office and excited to share what he says will be “a healthier restaurant” with the community, featuring a state-of-the-art kitchen, a bit more seating (around 60 seats versus the previous 40) and a much larger bar for guests to gather. And don’t worry, as Raci has confirmed that the spacious outdoor patio will stay! He has hired local builder Rob Harsh to take on the project. “We built The White House together, and it was a fun project,” recalls Raci. “So he was the first one I called!”

But I tell them … just go to The Pentagon! According to Raci, many of his Oval Office customers are disappointed by the news (for the time being), as they can no longer dine or imbibe at one of the area’s most beloved bistros. “But I tell them … just go to The Pentagon!” he smiles. Located in the heart of Liberty Lake, The Pentagon Bistro & Martini Bar is the third restaurant in Raci’s family of restaurants. Opened in November of 2019, the warm and inviting yet sophisticated space showcases an open-kitchen concept, a large bar and two cozy dining rooms. Offering a menu similar to that of The Oval Office, with its delicious and diverse small-plate menu, as well as entrée featuring steak and seafood, and their specialty politically inspired martinis, it’s open and ready to serve customers—especially those wanting a taste of The Oval Office! After much anticipation, The Pentagon reopened in late November of 2021, nearly 18 months after being shut down—first due to the pandemic, followed by an unfortunate fire that led to intensive smoke damage throughout the restaurant space. It is now back up and running at full force, serving guests seven days a week for both lunch and dinner. You may even see some of your beloved Oval Office staff working at The Pentagon during The Oval Office’s construction. Sandpoint icon since 1937, the 219 continues to blend its colorful past while making subtle changes to go with the times; from the early days of back-room poker and a rough-and-tumble crowd to what’s become the goto spot for live music, one of the best selections of craft whiskeys and beers in Northern Idaho, great classic cocktails and a fun night out. “The ‘Niner’ had a long reputation of being a smoking, don’t-go-there dive bar,” explains General Manager Mark Terry. “If you haven’t been to see us in the last five years, plan on making a visit. Our purpose is to make everyone feel at home when they take a seat. Local or tourist, young or old, we hope you’ll stop in!”

The Niner is smoke free and has been totally renovated back to its original state from 1937. It emphasizes great music, and many are surprised to see the craft beer list as well as the attention to detail in the house-made cocktails. In fact, the 219 staff pick all their own berries and even grow a few of their own ingredients. “We use fresh-picked blackberries, raspberries and huckleberries when they are in season. We make our own simple syrup with organic sugars and our own ginger syrup, and grow our own mint at the bar,” says Mark. As far as the tap handles go, you’ll always find a pair of domestics and two ciders. The other 16 handles

rotate frequently, showcasing regional breweries, and might include anything from a West Coast IPA, to a bourbon barrel stout, to a huckleberry pie sour. Mark stresses consistency with his bartending staff of six, that way no matter who is behind the bar, your favorite cocktail will be just like the last one you had. And, if you are looking for that special bourbon or scotch, the Niner has a selection second to none! “The attention customers receive and the quality of our barkeeps is what I truly believe keeps our little bar rockin’.” As it inches closer and closer to 100 years of operation, the 219 will continue to adapt to the times while preserving what keeps both locals and visitors back time and time again. “It still baffles me how long the bar has been open and to know that I’m a small part of a legacy of an amazing gathering spot,” says Mark. “Seeing the positive evolution of the bar in the past five years makes me extremely proud of the hard work all the employees have put in. t’s those beloved restaurant staples that continue to stand the test of time, serving their communities the best in food and service, while maintaining that feeling of “home.” And since 1996, friends and business partners John Grollmus and Brad Fosseen have remained committed to their community, their staff and their patrons—and their friendship. John moved to Spokane with his family in 1974. Having worked in restaurants, he went on to complete the hotel and restaurant management program at Washington State University, was involved in several restaurant openings and found success in the corporate restaurant world. With stops from Colorado to Seattle to San Francisco, the Inland Northwest was calling him home. He headed to Sandpoint before making his way to Coeur d’Alene to join forces with Brad to try and open their own restaurant. Brad was born in Spokane, spending all of his summers in Post Falls on the river. He would leave in 1988 to attend college but returned in 1994. “I’ve always loved this area for all the outdoor activities and beauty of the area. It’s big enough to not be boring—but not too big,” he says. Like John, Brad was drawn to working in the restaurant industry, with a love for the fast-paced environment and making guests feel comfortable and welcome. The pair, who are childhood friends, were working together at a Coeur d’Alene restaurant when they made the decision that it was time to bring their own vision to life. “Our original goal was to own and operate just one restaurant in Coeur d’Alene. You can’t stop evolution though,” says John. They would open Moon Time in 1996, followed by The Elk Public House in 1999, The Porch Public House in 2003, and Two Seven Public House in 2008.

Their formula for success was to apply all the lessons they learned throughout their restaurant careers to their own place; building on the good experiences and carefully avoiding the negative. Obviously delicious, affordable food served in a comfortable atmosphere and served by genuine, friendly folks is what they have strived for since day one, but what sets them apart is how they go about it. “Genuinely caring for our employees and trying to take good care of them from all angles is our priority,” says John. “That means not just catching people doing things right and thanking them, but also paying more and providing benefits such as health insurance, retirement and paid vacations. The result is long-term employees—and that ends up benefiting customers who are happy to see the same friendly faces year after year.” And Brad agrees: “I believe it’s a combination of respect, support and thankfulness that ensures we maintain consistent and loyal employees, accompanied by the best benefits and pay we can offer.” Brad and John are not all work and no play, taking every opportunity to enjoy the beautiful place they call home. “Living somewhere where there are so many lakes, parks and outdoor activities makes living here an ideal spot,” says Brad, who loves being out on the water, boating and fishing. “There are so many waters to explore around here, whether you’re trolling for salmon or throwing flies for trout.” For John, it’s all about hitting the slopes. “My wife, Kim, and I both love to hike, mountain bike, boat and, more than anything else, ski. Winter is my favorite season, although I enjoy them all. I love the feeling of the cool, crisp air and the way a fresh layer of snow can make everything around you feel new and full of hope.” Kim works as a full-time professional ski patroller, while John works as a backcountry ski cat guide. With a love for community, their employees, their business and the outdoors, John and Brad will continue to be committed to the place, and the people, that make the Inland Northwest home. They are grateful for all the support they’ve been shown for the past 25 years and look forward to serving you for many more years to come.

A Place for Community A BELOVED KENDALL YARDS’ RESTAURANT INTRODUCES SECOND LOCATION by JILLIAN CHANDLER

“We’re a place for community, not just a place to eat.”

L

aura and Seth Carey have been serving the Kendall Yards neighborhood through their family restaurant, Versalia Pizza (formerly Veraci), since 2014. Over the years, the restaurant has maintained a strong, loyal following as a place for the community to not just grab a bite to eat but to gather and enjoy one another’s company. So, when the right opportunity presented itself to open a second location, the Careys were eager to move forward. “We’re excited to bring what we’ve established and fostered in Kendall Yards to Liberty Lake,” shares Laura. “Seth and I are very loyal to Liberty Lake because we started at the Liberty Lake Farmers Market with our mobile oven back in 2009 and have long-standing relationships with customers there.” It was at that market where Laura and Seth would meet Joe Frank of Greenstone, who would sell them the idea of opening a restaurant in Liberty Lake. (His father, Jim Frank, had sold the couple on opening their Kendall Yards location.) Already immersed in the community, the location in the River District—next to Orchard Park and in the heart of a residential neighborhood within walking distance, while still easily accessible to everyone—was an ideal situation for the Careys. “Our customers from the Coeur d’Alene Wednesday Night Market will also have a winter option that is that much closer!” smiles Laura. Guests will enjoy the same flavorful wood-fired thin-crust pizza as its sister location, along with a variety of appetizers and salads. The menu will be expanded to offer more quick to-go items such as prepackaged salads, charcuterie, and kits for making your own pizza at home! The earthy and bright space, designed by Uptic Studios, seats approximately 50 patrons inside and offers a large seasonal outdoor patio. The style of service will be a bit different from its Kendall Yards’ location, as customers will place their order at the counter, receive a number, and the staff will bring the food to the guest. They are also excited to offer their new Mug Club with the hope it too will foster community building within the space. When looking for a warm, inviting atmosphere to sit and watch the snow fall, Versalia Pizza in Liberty Lake or Kendall Yards is the place to go.

ry Fly Distilling is known for its award-winning spirits and canned craft cocktails. It’s also become a pillar in the community when it comes to lending a hand. Dry Fly was recently recognized with a philanthropic award for its work at the onset of the pandemic, delivering 30,000 gallons of donated house-made sanitizer throughout the Inland Northwest. “I will say this about the sanitizer, it was a time of great uncertainty and people were scared. We were uniquely positioned to help, and so that decision was easy, but there is no way we could have pulled it off without all the help we got from the community,” explains Co-Owner Terry Nichols. “It was really a community effort from the great community we live in, and that is why giving back is important to us. This is our home; we care about the people that live here.” Indeed, Dry Fly supports many community organizations and prefers to keep most donations under the radar so as not to distract from each organization’s mission within the community. The company’s commitment to not just the local community but building a superior product has allowed Dry Fly to grow from “the local distillery” to having a massive regional footprint and being available in 40 states. “There are still 10 states left on the board, but I feel like we are doing a good job of setting the base for future growth,” Terry smiles. While the expansion of the on-the-fly craft cocktail line and the popularity of its well-established products are exciting, settling into a new facility in downtown Spokane is by far the most exciting thing happening at Dry Fly. Now open seven days a week, the new headquarters, located on Riverside Avenue, offers an expanded bottle shop and merchandise area, unique restaurant and bar, and a one-of-a-kind event space. “The event space is the best space in the whole building—awesome views across the production area and a really cool bar,” says Terry. Guests can see the new production line up close, and it is massive in comparison to Dry Fly’s original setup. This allows them to distill much larger quantities, and high-speed bottling

and canning equipment is also up and running to meet high demand. While it’s a bigger and faster operation, don’t think for a second that Dry Fly is cutting any corners on quality ingredients and methods. “There is great attention to every detail, from the raw ingredients to the cuts made along the way in the distillation process, to the barrel aging. Everything is done with painstaking care to ensure the highest quality,” affirms Terry. “Our VP of Operations and Head Distiller Patrick Donovan agonizes over every detail; it is what makes him the best at his craft. We are very lucky to have him, and the awards and accolades reinforce that.” Be on the lookout for new Whiskey and Coffee canned cocktails in 2022. A Coffee Whiskey, Port Barrel Aged Wheat Whiskey and, perhaps, some older Wheat Whiskey releases at higher proofs will all be tasting room exclusives this holiday season. For dinner, try the Gin Steamed Clams, Chimichurri Steak and Salmon, as well as a range of flatbreads, salads, burgers and appetizers. HARD WORK GOES INTO THAT GLASS by COLIN ANDERSON

W

hether enjoying a bold cab or a hazy IPA, your preferred drink is more than likely sourced from very close by. Washington is second only to California in the amount of wine produced domestically. According to the Washington State Wine Commission, there are more than 1,050 licensed wineries in the state that draw from the more than 60,000 acres of grapes grown within 19 distinct American Viticulture Areas (AVAs). The state is also a leader in the production of hops, which give beer its aroma and bitterness. There is a short window each year in which both grapes and hops can be harvested, and it’s all hands on deck during this often whirlwind time.

While the Yakima Valley accounts for nearly 75 percent of the hop acreage in the United States, you’ll actually find the largest individual hop farm across the border in far Northern Idaho. Elk Mountain Farms is located north of Bonners Ferry and provides hops for some of the biggest breweries in the nation. It was 600 acres when it was opened in 1987 and has swelled to 1,700 acres today. “We have a rich fertile valley here with lots of irrigation, long summer days and cool nights. Hops enjoy the 80-degree days and the 60-degree nights,” explains longtime General Manager Ed Atkins.

A single acre on the farm contains 889 plants, meaning at full capacity there are more than a million-and-ahalf plants that are tended to. Hop bines grow vertically, eventually reaching about 20 feet in height. Each spring, Ed’s staff wind out some 80 million feet of string made from coconut husk fibers. The plants then need to be individually wrapped around the string, not once but again a month later to make sure they rise correctly. “Hops are high maintenance and high labor,” Ed states. Harvest arrives typically in August, when approximately 220 seasonal workers are brought in to work, around the clock, for approximately three weeks. Specially built hop combines gather the whole bine and begin separating out the hop cones from the rest of the plant. Bines are sent through an unloader, which breaks up the clumps and starts to separate the cones from the rest of the plant. The material is then sent to the warehouse, where it undergoes six more steps in removing non-usable portions of the plant so that only the hop cones remain. The hops are then dried at a temperature of around 130 to

145 degrees. Once out of the kiln, a conveyor drops them into another area atop a cloth for them to cool. These tables are filled about 30-inches deep, and it takes anywhere from four to 13 hours for the hops to hit their preferred moisture level of 9.5 percent. “Operators feel by hand and read the moisture levels. Once we hit that mark, they are sent to be bailed,” explains Ed. The hops are now ready for packaging and sent to breweries across the country. Much like hops, the grapes growing across the valleys of Central Washington enjoy warm sunny days and cool nights. While the time for harvesting is typically longer than that of hops, finding just the right window in which to pluck grapes from the vines is the goal of each winemaker. Phil knows firsthand the challenges of each harvest season. “In 2019, we had an early freeze and had to scramble to pick up everything at once. 2020, we had some smoke taint to the grapes,” he recalls. As a small winery, Winescape takes in about 30 tons of grapes, usually in September and over a four- to six-week period. For Phil, that means about 13 roundtrips to the vineyards in the Columbia and Red Mountain AVAs in which he sources his grapes. But before any grapes are picked, like other winemakers, Phil gets reports from the vineyard on pH levels, sugar content and acidity before he travels to taste and inspect himself. “If you pick too early they can taste green, too late and you get a raisinlike taste,” he says. “It’s finding that sweet spot in the middle for that particular grape and vintage that is the real challenge.” Once the winemaker gets the information and flavor profile they are seeking, the grapes are harvested. There is machine harvest, but Phil prefers hand-picked fruit. The weather, schedule of the vineyard and staffing can alter plans, but for the most part, winemakers can access their grapes when they work best for the profile they are hoping to achieve. 142

Grapes are picked in clusters, placed into a large bin and transported back to the winery where they are stored in a cool place. A de-stemming machine separates the fruit from the cluster, where it can then be pressed and fermented before being barreled and aged. Despite record heat and drought conditions that could have crippled the harvest this year, the fall weather turned near perfect for ripening. Overall yield is much lower this season, but Phil believes, based on the fall conditions and his early sampling, that this harvest will produce great results from wineries throughout the region. “Every season is different, and most winemakers enjoy the challenge. We want our wines to reflect what’s happening each growing season.” At their core, grapes and hops are a crop much like any other. It takes mountains of manpower to make sure they are properly cared for and harvested at the peak of flavor. atah Creek Wine Cellars has established itself as a destination winery year-round for both locals and visitors to the Inland Northwest. Established in 1982 by husband-and-wife Mike and Ellena Conway, Latah Creek Wine Cellars, Washington state’s 35th winery (there are now more than 1,000 across the state), has been pouring excellence into each glass with their affordable, award-winning wines. Joined by their daughter Natalie Barnes, they are continuing that mission four decades later. When someone mentions Latah Creek, many things come to mind: Fantastic wines. Family owned and operated. Amazing food and wine pairings. Affordable prices. And owners and winemakers who have a love for what they do and sharing it with others. “For me, I love making wine,” shares Natalie, winemaker alongside her father Mike. “My husband and I have talked many times over the years (especially with COVID lurking in the background) on what I would do if we didn’t have the winery. I was honestly at a loss, because I truly love my job. If I were not able to make wine, a part of me would be missing. 146 146

“The enthusiasm I feel each day I step foot in the winery is simply because I love what I do! I also want to continue my parent’s legacy, as they were an integral part of the beginning Washington wine scene.” Wine lovers have continued to enjoy sipping wines while visiting with friends and neighbors in the stunning tasting room and gift shop, which were beautifully remodeled in 2019, just months before the pandemic hit and forced them to close their doors. “Many of our regular customers have seen the amazing changes, but we get at least five people a week who walk in the doors and immediately stop. They are incredibly surprised by the changes, having not been in since the remodel because COVID shut us down for so long,” says Natalie. As you enter the tasting room, you will find a space that can comfortably accommodate patrons and easily adhere to social distancing rules, making it a perfect gathering place to relax and taste. The space was opened up by removing walls, adding community tables, a stone wall accent, a new tasting bar, new shelves to better display their wide selection of gifts and gourmet food, and the center of it all—a chalkboard wall illustrating the winery and the Conway family history. “We want people to know that we’ve been here for 40 years and plan to be for at least another 40,” smiles Natalie. “Plus, we wanted a space where people could mingle and make friends among fellow wine tasters. his season, cold-weather fashion gets bolder, brighter … and a little more meaningful.

While you shop winter trends like colorful knits, eye-catching puffer coats and standout prints, take note of where you’re investing your money and time. The Inland Northwest is full of high-quality boutiques that make it easy to access the latest trends close to home. And select local fashion shows doubling as fundraisers for worthy causes make it easy to learn just how impactful fashion can be. In October, the Beyond Pink Designer Fashion Show & Auction was held at Spokane’s Davenport Grand Hotel. An annual event that supports women with the finances needed to receive their thermogram, the event was formed from a fierce dedication to encouraging the early detection of breast disease through thermography technology. To date, Beyond Pink has raised over $1.2 million to provide grants to women in the local community. Their 2021 event was live streamed on October 9, allowing viewers to bid in a live auction as they watched from home. Bistango Martini Lounge offered in-home cocktail kits available for preorder for additional funding. Coming this spring is the Arc of Spokane’s annual Rock the Runway fundraiser event, a highly anticipated fashion show that requires year-round preparation. With the 2021 event postponed just weeks before it was scheduled to occur, the organization anxiously awaits the chance to gather again on May 12, 2022.

The Arc of Spokane itself is one of the leading service organizations for people with disabilities. Part of a larger national framework of nonprofit organizations under the Arc of the US, the Arc of Spokane is the largest chapter in the state, largely due to the geographical area it serves, encompassing Eastern Washington in addition to select northern and southern counties. Rock the Runway showcases items shopped in the organization’s local thrift store. “It’s a fun way to both introduce people from the community and the individuals served, while promoting the thrift store,” said Director of Development Kelsey Bumgarner. Rock the Runway is the Arc of Spokane’s major fundraiser event of the year. Its year-round preparations include gathering sponsors and auction items, marketing, and planning each logistical element. A volunteer advisory committee meets every two months at the start of the year, then more frequently as the event approaches. “It’s our most public-facing event. It’s a pretty major effort,” Bumgarner explained. The Arc sends letters out as an open call for Rock the Runway models. “Most of the time, it ends up being people who are members of our community center or supportive living center,” Bumgarner explained. Members of the Young Adult Transition Program are sometimes included. Organizing Rock the Runway requires the support of thrift store employees and a fashion show coordinator. The coordinator collects key details from models to form a selection of three to five outfit options matching their sizes, interests and personal style. “Because of the inventory


turnover, she comes in multiple times prior to fittings to give models multiple options,” Bumgarner said, noting the daily turnover of clothing availability due to thrift store shopping. The event venue changes every year, with the 2022 location being its most unique yet: the Historic Flight Foundation at Felts Field. Past themes have been based on major fashion show locations like New York and Paris. “This year, we’re going a different route with the ‘runway’ theme,” Bumgarner said, as the show will take place near the airport runways at Felts Field. “It’s an absolutely gorgeous facility, and all our runways will be right outside the hangar.” For the 2022 event, dining will be offered via food trucks rather than a seated plated dinner. “Food trucks suit the venue better, and it adds to social distancing measures,” Bumgarner said. “It helps us avoid a buffet line and accommodate dietary restrictions.” The team at Rock the Runway remains focused on safety and limiting COVID risk. “In the age of COVID, we’re working to make as much of the event as digital and hands-off as possible,” she explained. “We’re implanting online tickets, virtual check-ins, and seeing if we can set up virtual bidding for the auctions.” While they look forward to the new venue, “mostly what we’re excited about is the first time in two and a half years that the community has been able to gather,” Bumgarner said. “We’re very excited to celebrate people with disabilities in this way and be in a room together again.” Many Rock the Runway guests attend the event every year—with the exception of 2021, due to it being canceled.

“We wanted to be careful,” Bumgarner said. “We didn’t want to be a high risk for the community. We want to take care of our people. Our board debated for a long time because they recognized that people wanted to come back together, but they weren’t sure if it was safe enough yet.” Now, in its 2022 return, the event is designed to pull the community together and introduce people to the Arc of Spokane, whose purpose is to promote equity and inclusion. While the Arc of Spokane’s thrift store is its most public facing service, it offers a long list of programs and services, including 24-hour supported living care, a community center, advocacy efforts, and support for youths transitioning into adulthood. They also support the unemployed in finding work and building the skills they need to succeed in the community. “We serve people in a really wide variety of ways,” Bumgarner shared, and the Rock the Runway event will highlight and support them all—while providing a fun look at community-focused fashion! ou’ve probably never heard of the town of Marana, and that is its charm. Located about a 30-minute drive northwest from Tucson, Arizona, it has a rich and diverse history. Stunningly beautiful, this desert getaway is a hidden gem that you will love to discover. The town borders the northeast corner of Saguaro National Park West. Giant Saguaro cactus dominate the scenery in the park and throughout Marana. This iconic symbol of the desert is quite a sight to see and brings back memories of Western movies—many of which were filmed in the area. Tucson was designated the first U.S. city to be a UNESCO City of Gastronomy for its local food markets and restaurants that utilize ancient and heritage foods. Marana and the Santa Cruz Valley, with its rich agricultural history, is the breadbasket that feeds the food culture of Tucson. You’ll find an active foodie scene where restaurants source ingredients from local farmers, growers and purveyors.

Offering indoor and outdoor seating, the meats are grilled over mesquite and served with all-youcan-eat family style sides of ranch beans and garlic toast.

The CORE Kitchen & Wine Bar is an innovative culinary experience influenced by the Sonoran Desert and the rich agricultural heritage of the region. The menu is focused on sustainable cuisine with ingredients sourced from local growers. Located in the Ritz-Carlton Dove Mountain, it has its own citrus orchard with oranges, Minneola tangelos and red grapefruit trees. When in season, guests can enjoy fresh juices from fruit they pick themselves. Great food needs great wine, and the wine sommelier is sure to recommend a good wine from their extensive wine list and cellar—with more than 2,800 bottles of wine. The Baja Café is a casual place in a strip mall, but it has a cult following among locals. This is the place to go for breakfast. The menu and its portion sizes are huge. Anything you could possibly want for breakfast can be ordered here. Make sure to try their famous Snickerdoodle Pancake, which takes the classic cookie and turns it into a breakfast treat.

What to Do There are so many things to see and do in the area. The winter is a great time to get outdoors without the extreme temperatures of the summer. The giant Saguaro cactus is the iconic symbol of the American West, and the best place to see them is in their natural habitat at Saguaro National Park, which is in two locations—east and west of Tucson. The west park is closest to Marana. Start your visit at the Red Hills Visitor Center, an architectural gem. The sights from the patio offer spectacular views of the Saguaro Forest, the Red Hills and the Tucson Mountains. Friendly park rangers can help you plan your day. Don’t miss the Signal Hill Petroglyph Area. The small hill is just 40 feet in elevation, but the desert views are breathtaking. There are over 200 prehistoric Native American petroglyphs, which were created from 550 to 1,550 years ago. The rock art can be easily viewed from the trail that ascends the hill. Just a mile past the national park is the Arizona-Sonora Desert Museum. Described as a fusion experience, your visit includes a


zoo, botanical garden, art gallery, a natural history museum and an aquarium. The museum is 85 percent outdoors with lots of walking through the authentically landscaped grounds. Wear good shoes, bring water, sunscreen and a good hat. Most days it is sunny. The 21 acres are explored over 2 miles of walking paths through a variety of habitats. You will have the opportunity to see 1,200 types of plants and 230 animal species. The Desert Loop Trail is more rugged, and during the ½-mile hike you will traverse downhill and then back up again. Keep your eyes peeled for coyotes and javelinas, which can be tricky to see in their natural enclosures. There are two gift shops to shop and a great way to support a nonprofit with your souvenir purchases. If you saw the documentary “Spaceship Earth” on Netflix about the scientific experiment known as Biosphere 2, you will want to take a day trip out to Oracle to visit. Tours allow you to walk inside, what is basically, a giant terrarium attempting to replicate the Earth’s

ecosystem. Self-guided tours utilize the Biosphere 2 Experience app. Through interviews, stories, and never-seen photos and videos, you will learn about the fascinating history of this experiment. Marana is a great escape from the cold winter weather of the Inland Northwest while offering its sunny, mild days. You can stay as busy as you want exploring the wonders of the Sonoran Desert or just sipping a craft cocktail while you enjoy some pool time.

D U TC H-OV EN WI N TER B EEF S TEW INGREDIENTS For the Meat: 3 lbs. whole boneless beef chuck roast, cut into 1-inch chunks 1 1/2 tsp. salt 1 tsp. ground pepper 2 tbsp. avocado oil For the Stew: 2 tbsp. butter 3 large carrots 1 14-oz. package frozen petite onions, thawed 2 cups shiitake mushrooms, roughly chopped 5 cloves of garlic, minced 1 tbsp. fresh thyme 1 tbsp. fresh rosemary, chopped 3 tbsp. tomato paste 1 tbsp. Worcestershire sauce 3/4 cup red wine 1/4 cup arrowroot powder 32 oz. beef broth 2 large bay leaves 1 1/2 cups fresh or frozen peas salt and pepper to taste

METHOD • Preheat the oven to 325˚F. • Season beef chunks with salt and pepper. Heat avocado oil over medium high heat in a large Dutch oven or a heavy oven-proof pot, and sear beef on all sides until nicely browned. Do not fully cook at this point. (Brown meat in batches to not overcrowd the pan and to prevent steaming. If you notice that it begins to steam up, remove the excess liquid and continue browning.) • Transfer the browned meat to a plate and set aside. Leave the brown bits at the bottom of the Dutch oven; don’t wipe the pot clean. • Over medium heat, add the butter, carrots, petite onions, mushrooms, garlic, thyme and rosemary to the same Dutch oven and cook for about 5 minutes, stirring occasionally. Add tomato paste and Worcestershire sauce, and cook for another 2 to 3 minutes. • Add red wine, scraping the browned bits from the bottom using a wooden spoon, and cook until reduced, about 3 minutes. • In a small bowl, add arrowroot to one cup of the beef broth and stir to create a roux to thicken the sauce. • Add roux to the vegetables and stir to coat. Add additional beef broth and stir. Add the seared beef and bay leaves. Bring to a boil then reduce to a simmer for 5 to 7 minutes. Adjust seasoning with salt and pepper at this point, if needed. • Cover with an oven-safe lid. Finish cooking in the oven at 325˚F for about 1 hour and 30 minutes—until the meat is tender. Stir in peas 10 minutes before the cooking time is up. • Remove bay leaves before serving. • Serve with fresh thyme.

Winter Granola INGREDIENTS 4 cups unsweetened coconut chips 1 cup raw sunflower seeds 1 cup pecan pieces 1 cup walnuts, chopped 2 tbsp. dried ginger 2 tbsp. dried cardamom 2 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. salt 4 tbsp. coconut oil, melted 2 tbsp. maple syrup (I like Lakanto brand sweetener) 1 cup apple-sweetened dried cranberries 1 cup dried apples, chopped

METHOD • Preheat the oven to 325˚F. Mix coconut chips, sunflower seeds, pecans, walnuts, spices and salt in a large bowl. • In a small microwave-safe bowl, melt coconut oil. Add maple syrup to coconut oil and poor over granola. Mix until well coated. • Spread granola on a baking sheet. Bake for 20 minutes, occasionally tossing mixture to evenly brown the coconut and prevent burning. Remove from heat. • Mix cranberries and dried apple pieces into the granola. • Cool and serve as a trail mix or pour your favorite milk over it and enjoy as a cereal.

INGREDIENTS For the Cake: 2 1/2 cups almond flour 1/2 cup plain whey protein powder 2 tbsp. coconut flour 1 tbsp. baking powder 1/2 tsp. salt 1 tbsp. cinnamon 3/4 tsp. cardamom 1/2 tsp. nutmeg 1/2 tsp. ginger 1/2 tsp. clove 1/2 tsp. allspice 1/2 cup butter, softened 3/4 cup brown sugar (I like Swerve brand) 3 eggs at room temperature 1 tsp. vanilla extract 1/2 cup almond milk 1/2 cup sour cream For the Maple Cream Cheese Frosting: 8 oz. softened cream cheese 1/2 cup softened butter 2 tsp. maple extract (I like Cook’s brand) 1 cup confectioners sugar (I like Swerve brand)

METHOD For the Cake: • Preheat the oven to 350˚F and grease two 8-inch round metal baking pans well. Line the bottoms with parchment paper and grease the parchment. • In a medium bowl, whisk together the almond flour, protein powder, coconut flour, baking powder, salt and spices. • In a large bowl, beat the butter, then add brown sugar and beat until fluffy, about 2 minutes. Beat in the eggs, one at a time, until well incorporated. Beat in the vanilla extract and almond milk, then beat in sour cream. • Add the flour mixture in two additions. Divide the batter among the prepared baking pans and spread to the edges. • Bake for 25 to 30 minutes, until golden brown around the edges and a toothpick inserted into the center of the cake comes out clean. • Remove and let cool in the pans for 30 minutes, then run a sharp knife around the edges and flip out onto wire racks to cool completely. For the Maple Cream Cheese Frosting: • In a medium bowl, beat butter, add cream cheese in chunks, add maple extract and add powdered sweetener a little at a time until frosting is light and fluffy. To Assemble the Cake: • Place one layer of cake on a serving plate and spread the top with frosting. • Place the second layer on top and spread the remaining frosting all over the top and the sides of the cake.

B RUSSELS SPROUT S AL AD WITH APPLES, CRANBERRIES AND MAPLE PECANS WITH BACON DRESSING

For the Dressing: 1/2 cup mayonnaise (I like Primal Kitchen) 2 tbsp. bacon grease, melted 1 tbsp. apple cider vinegar 1 tbsp. shallot, minced salt and pepper to taste

• Place all the dressing ingredients in a mason jar fitted with a lid and shake until fully combined. Set aside. • In a small saucepan, over medium-low heat, add butter and maple syrup. Cook until butter has melted. • Add the pecans and thoroughly coat using a heat proof silicone spatula. Sprinkle pecans with salt. Keep tossing pecans to prevent burning and until they have soaked up all the maple syrup. Remove from heat and set aside to cool. • In a medium salad bowl, add all the salad ingredients. Add bacon dressing and stir to coat. • Serve immediately, and enjoy.
