Diplomate Diplomat

INGREDIENTS For 6 persons - Genoese fine: 1 plate - Strawberry: 250 g - raspberries: 200 g - apricot: 4 - pineapple in syrup: 6 slices - liquid cream: 25 cl - icing sugar: 50 g - vanilla extract: 4 drops - pistachio ĂŠmondĂŠes: 100 g - Butter: 40 g

PREPARATION Wash strawberries and trimmed, cut them into pieces. Open apricots, remove the kernels, mumps cut into small dice. Detail the pineapple slices into cubes. Book syrup. Melt the butter in a saucepan and let the dice return pineapple and apricots 3 minutes, stirring over high heat. Add vanilla, then reduce heat, add 5 ml syrup and cook gently for 10 minutes. Then add strawberries and raspberries, stir gently and continue cooking 5 min. Mount the whipped cream adding sugar gradually. Cut the Genoese in small circles. Dampen them with a little syrup. Divide the fruit compote in 6 glasses, cover them with whipped cream and place over a round of Genoese and book cool.

SUGGESTIONS AND COUNCILS Concassez pistachios. Just before serving, sprinkle the crushed pistachios diplomats.

WINE Maury (Red, Languedoc-Roussillon). This one is complex to find in UK. Otherwise you can use a Porto.
