IT MIGHT BE HERE This might be where you watch your children grow up. It might be where your family gathers for holiday dinners. Or it might be where you bake Grandma’s cookies. his past May, SIZZLE Lifestyle Magazine was rebranded to REAL Northwest Living! Still produced by Like Media, our new endeavor truly embraces our lifestyle here in the Inland Northwest. For nearly two decades, SIZZLE (formerly known as Idaho Cuisine, Spokane Sizzle and Sizzle’n Cuisine) has been the top magazine when it comes to the local dining scene, and still, to this day, continues to be! But as so many of you already know, SIZZLE has become so much more over the past few years. It is a true staple of the Northwest, representing not only our local dining scene, but our neighbors and communities, which include so many diverse businesses that represent us in the eclectic lifestyle that we all share together. We live and breathe the communities that we all work, play and thrive in, and wanted our brand to truly reflect the content inside. REAL Northwest Living will continue to be the number one distributed and picked-up magazine across the entire Inland Northwest, and we are proud to be able to continue to showcase all of the beauty that this area has to offer. From the bottom of our hearts, we all appreciate your support and encouragement. Here is to a new incredible chapter that we’re thrilled to share with you. There is a deep appreciation for this place we are proud and honored to call home. Our lifestyle is reflected in everything from our food and hospitality, to our businesses and

NONPROFITS MAKING A DIFFERENCE IN THE INLAND NORTHWEST By Abigail Thorpe

T

he backbone of many of our communities are their nonprofits—from feeding and housing the homeless, to providing a safe haven for kids and the abused, to helping keep the environment, waterways and nature we value so deeply flourishing, the many volunteers and workers at these organizations are the unsung heroes.

We’ve heard of many of the big, international or national nonprofits that bring in millions each year to address pressing needs throughout the world. These organizations and the work they do is vital, but there are so many local organizations that make a big impact on a more intimate and centralized level. Throughout the Inland Northwest, we are blessed by a community that often pulls together to address needs that surround us, yet so many still go unmet. Many small nonprofits don’t have the backing national organizations see, and they rely heavily on the volunteer hours, donations and fundraisers that make their mission possible. With summer upon us and (hopefully) extra free hours in the day, take some time to support and encourage the nonprofits that keep our communities thriving—here are just a few. Transitions started in Spokane in 1995, a joining of programs that began as Miryam’s House in 1986 with the aim to help end poverty and homelessness for women and children in Spokane. “At Transitions, families are reunited, women gain confidence and independence, and lives are moved forward from poverty and homelessness to hope and self-sufficiency,” says Development Director Sarah Lickfold. The nonprofit operates six programs to help provide safety, support and skills for success to women and children in need. The Women’s Hearth is a drop-in center that provides basic needs and community to women, and Miryam’s House and Transitional Living Center provide housing programs to meet women where they’re at and help support their goals, with a further program that provides a forever home for the chronically homeless. The organization also provides care for the young through EduCare and offers training for women in barista and catering programs at New Leaf Kitchen & Café. “There are so many barriers that women have to face every single day, but Transitions empowers women and families to remove these barriers and build a path to success,” says Lickfold. In response to a growing need to help women and children facing hardship from

HELPING HANDS

Protecting children, enriching their lives violent situations in Coeur d’Alene, Safe Passage opened its doors in 1977. “At the time there were no organized options available to give support and information to the displaced families,” says Chauntelle Lieske, executive director of Safe House.

Ogilvie when a group of locals learned children removed from homes for their own safety were sometimes housed in juvenile detention because of a lack of foster homes. Kinderhaven was formed in 1996 to be a safe haven for these children.

In the year prior, three families in the area had opened their homes as safe houses to victims of domestic violence, but private citizens took up the call for something more permanent. The name changed to Safe Passage in 2015, but the goal remains the same. “Today the mission of Safe Passage is to provide safety, education and empowerment to victims of violence and to the community,” says Lieske.

Their mission is simple but profound: “Protecting children, enriching their lives and giving them back their right to thrive. We are here for our local children when there is nowhere else for them to go,” says Executive Director Jennifer Plummer. “The most gratifying moments are those when you can see the kids relax, begin to emerge out of survival mode, and really trust that the adults in their lives will take care of them—when you see them just be kids and let their guard down.”

The nonprofit provides safe shelter, 24-hour crisis lines, court-based advocacy and 24-hour hospital response for victims of domestic abuse and rape. Its Children’s Advocacy Center includes clinical counseling, housing assistance and financial support. The center also focuses on providing education to the community to help prevent domestic violence, offering healthy relationships education for teens and bystander training for middle school, high school and college students. In Sandpoint, an effort was spearheaded by former mayor Marsha 28

Kinderhaven has been a strong part of the Sandpoint community since its start, offering a safe and loving home for children to heal from their past. “The children build strong connections with our Kinderhaven staff, and the power of these connections has the power to transform their lives,” says Plummer. “We demonstrate to the children with everyday experiences what it feels like to be respected, valued and nurtured on a consistent basis.” In 2006 Ryan Kerrigan saw an unmet need for under-resourced

RECOGNIZING

THE VALUE OF EVERY HUMAN youth in Spokane: opportunities for outdoor adventures. He developed an idea to partner with organizations already serving youth to provide experiences for those who were unable to provide them for themselves, and Peak 7 was founded.

“While we are a faith-based organization, we serve youth and partner with organizations of all faiths and no faith recognizing the value of every human being,” says Executive Director Brian Kienle. Statistics show a general downtrend in youth getting outdoors, a result of technology, home, work and school commitments, and often a lack of resources or encouragement to participate in outdoor adventures. “In a normal year, we know that getting youth outside is instrumental in their emotional and physical health as well as providing challenges, which when overcome, can lead to transformation outside of that experience,” says Kienle. “I have directly heard a student share that conquering a rock wall gave her the confidence to conquer the challenges of high school. ... The ability to put down devices and soak up the incredible natural world around them puts them in a distinct place to ask some of the bigger questions of life in a place of safety and care.” 30 30

REAL NORTHWEST LIVING

Conserving incredible natural resources so that communities and programs like Peak 7 can continue to enjoy and experience nature as intended is something Kootenai Environmental Alliance (KEA) is committed to. Established in 1972 with a mission “to conserve, protect and restore the environment with a particular emphasis on the Idaho Panhandle and the Coeur d’Alene Basin,” KEA is Idaho’s oldest environmental nonprofit and a leading grassroots advocacy group focused on forests, land-use, wildlife, water and climate. KEA was formed by a group of passionate community members including former Idaho state senators Mary Lou Reed and Art Manley, and nationally renowned environmental attorney Scott Reed. “KEA believes that an informed public is essential to safeguarding the environment,” says KEA Environmental Programs Director Amy Anderson. To that end, they offer a wide selection of classes, programs and education initiatives in addition to their work to preserve North Idaho’s natural resources. “Now, more than ever, it is imperative that individuals and communities become active stewards of their local environments, conserving, protecting and restoring our land, air and water,” says Anderson.

Put community before self Environmentally concerned locals in Sandpoint furthered environmental efforts in the area. Started in 2006 as an effort to combat the Idaho State Department of Agriculture’s plan to use herbicides in the lake to control the noxious weed Eurasian watermilfoil, the group affiliated with Waterkeeper Alliance in 2009 to become Lake Pend Oreille Waterkeeper. LPOW’s mission is to protect the water quality of the Clark Fork/Pend Oreille Watershed so local waterways remain drinkable, fishable and swimmable for future generations. Through education, advocacy and community initiatives, the nonprofit has preserved Sandpoint’s prize waterways through ecologically sustainable methods. “Our educational programs help foster the next generation of environmental stewards by engaging with local kids and providing them with hands-on activities regarding water quality and aquatic ecology,” says Executive Director Steve Holt and Programs Director Carolyn Knaack. “It is essential that we care for and protect our environment because of the importance it plays in our past, our future, and in our everyday lives. This lake has attracted humans for thousands of years, and it holds a deep importance for those of us who live around it today. Our economy, health and livelihoods all depend upon the lake and the surrounding watershed.” LPWK is one of many local nonprofits that make our Northwest communities and lifestyle so incredible. The men and women behind these organizations, as well as many others, put community before self, working to make our towns and cities the kind of places we’re proud to call home. Find a cause you’re passionate about, and chances are there’s a nonprofit just waiting for a helping hand. 34

Your Life, Your Goals

EASE YOUR RETIREMENT INCOME WORRIES

DURING YOUR RETIREMENT, YOU WILL LIKELY NEED TO WITHDRAW FROM YOUR INVESTMENT PORTFOLIO to help pay for your living expenses. So, naturally, you’d rather not see the value of that portfolio decline. Yet, if you spend two or three decades in retirement, you might experience several steep market declines— in fact, drops of at least 20 percent have typically occurred about every four years. So when a decline occurs, how concerned should you be? Actually, maybe not all that much—if you’ve prepared your portfolio for all circumstances. Here’s the key thing to remember: While the financial markets may drop sharply at any time, it doesn’t mean your portfolio will fall as precipitously. For example, the S&P 500, an index that tracks the stocks of 500 large U.S. companies, might fall 20 percent, but does your own portfolio only consist of these stocks? Most likely, it doesn’t. In fact, it’s generally a good idea to maintain a portfolio balanced between stocks and bonds, with the percentages of each based on your goals, risk tolerance and time horizon. While diversification cannot guarantee a profit or protect against a drop, it certainly can reduce the impact of a decline. In fact, during a significant market downturn, the difference in performance between an all-stock portfolio and one containing a mix of stocks, bonds and other investments can be dramatic. Consider this: From January 1 through March 31 of this year, the period covering the initial market decline caused by the coronavirus pandemic, the S&P 500 fell almost 20 percent, but a more balanced portfolio (containing 45 percent in U.S. stocks, 20 percent in international stocks and 35 percent in investment-grade bonds) declined about 12 percent—a sizable drop, to be sure, but far smaller than the tumble of the S&P 500. *

Clearly, owning a mix of investments can help reduce the effects of market volatility on your portfolio. But it’s also important to diversify with a purpose in mind. Your stocks and stock-based mutual funds are designed to provide long-term growth potential— which you’ll still need during your retirement to help you stay ahead of inflation. But as a retiree, you should also be able to rely on your cash and short-term, fixed-income investments—such as bonds with short maturities, Treasury bills and certificates of deposit—for your income needs over the next three to five years. Also, it’s a good idea to have about a year’s worth of your living expenses in cash and cash equivalent vehicles. Cash instruments and short-term, fixed-income investments offer you two key advantages. First, they’re highly liquid, so you typically will have no trouble accessing them when you choose. Second, by having sufficient amounts in these cash and short-term instruments, you will have some protection against having to tap into your longerterm, variable investments when the financial markets are down. With sufficient cash and the right short-term investments in place, you can reduce your worries about what’s happening in the stock market during your retirement years. And the fewer concerns you have, the more you can enjoy this time in your life. *Morningstar. t’s summertime, which means it’s also every foodie’s paradise. In the Inland Northwest, summer means a time for savoring the sun, making new memories—and delicious outdoor dining! For many of us, there is more than a short list of new restaurants we’re eager to try, and a little day or weekend food destination is well worth the drive. This year, we’ve rounded up some Northwest favorites that offer much more than just a tasty bite. From boating adventures to farm-to-table dining, these experiential dining destinations offer incredible experiences alongside the gourmet meal. Outstanding in the Field, Monteillet Fromagerie Outstanding in the Field originated with a simple idea: Connect diners with the source of their food. Every summer, the company travels around the country and world setting up farm-to-table dinners on farms, vineyards, beaches, meadows and city streets. “Our roving restaurant without walls is rebuilt every morning and disappears every night. It is a momentary experience and a joyful celebration of human connection. Together we gather at one long table to share the most fundamental and universal human conversation: a meal.” This summer, they return to Monteillet Fromagerie in Dayton, Washington, on July 23 for a feast in the field. Monteillet Fromagerie produces artisanal small batch goat and sheep's milk cheeses. The evening includes a tour of the beautiful farm, followed by a meal in the golden pastures. The Outstanding in the Field team will be joined by Chef Chad Bostwick of Walla Walla Steak Co., and the meal will center around local ingredients, accompanied by brews from Bostwick’s own brewery, Crossbuck. Tickets must be purchased in advance. Visit OutstandingInTheField.com/2020tour for more information and to purchase tickets. Arbor Crest Winery Situated 450 feet above the Spokane River valley, the Historic Cliff House that houses the Arbor Crest Winery tasting room offers spectacular views. Alongside a customized flight, their Exclusive Tasting Experience includes a cheese and charcuterie pairing on the third floor of the Cliff House, so you can take in the stunning views while you sip. The historic home was built in 1924 by inventor Royal Newton Riblet. A beautiful three-story Florentinestyle mansion, the original grounds included imaginative landscape and architecture like a life-size checkerboard, four acres of terraced gardens and the “Eagle’s Nest” stone gazebo that offers an incredible view of the valley below. For the architecture and gardening gurus, the Estate Tour & Tasting Experience offers a guided tour of the gardens and grounds while you sip and dine on

a personalized tasting and cheese and charcuterie pairing. Either way, it’s guaranteed to be a relaxing, delicious getaway. Visit ArborCrest.com for more information. OARS Wilderness Gourmet Culinary Tours A six-day rafting trip on the Salmon River is far from the ordinary adventure. Throw in gourmet meals and wine pairings after you set up camp each evening, and it’s an unforgettable experience that is the caviar to experiential dining. The cost of the trip includes the short scenic flight from McCall to Salmon, Idaho, as well as all food, equipment and accommodations. Every trip includes meals, but the Wilderness Gourmet rafting trip is only offered on August 16 for the Salmon River six-day trip. Revel in hot springs, sandy beaches and exciting class III rapids on the “river of no return.” OARS offers other trips on the Salmon and Snake rivers throughout the summer, and is renowned for their incredible guided rafting tours down the country’s most famous rivers. Visit OARS.com for more information. Cave B Inn & Spa Cave B Inn & Spa Resort offers the ultimate in relaxation, located in the Ancient Lakes viticulture region in the heart of Washington’s Columbia Valley wine country and offering vineyard views of the neighboring boutique estate winery. Cave B offers an on-site inn, The Spa at Sagecliffe and delicious gourmet meals at Tendrils restaurant overlooking Cave B Estate Winery, which shares a driveway, name and history with the resort, but is owned and operated separately and is just a short walk away for tastings. Stop in for a bottle of award-winning wine from winemaker Freddy Arredondo to enjoy in the evening while taking in the summer sunset. Desert Yurts offer an alternative to the Cliffhouse stay, but you’ll experience the breathtaking views from either. Settled in the gorge below the estate lies the famed Gorge Amphitheater, where you can often find a famous artist or band playing amidst the red rocks. What better way is there to spend a summer weekend away than savoring gourmet meals, tasting award-winning wines and relaxing? VisitCaveBInn.com/home for more information.

Candle in the Woods A charming North Idaho family home nestled in Athol is also home to prix fixe, reservation-only, 10- to 12-course dinners prepared by the owner himself, Chef Dave Adlard. “Dinner here is more than just a meal; it is an entire experience that you will not soon forget. Enter as strangers, leave as friends!” Each meal is exquisitely prepared and served with wine from the cellar, which houses almost 1,800 different labels, 4,200 bottles and more than 200 international varietals—one of the best collections in the Northwest. Dinner is served family style, with strangers mingling over wine and every course, usually turned to fast friends by the end of the night. Wine pairings are pre-selected, though guests can choose a more select pairing option (but every guest must agree to the change). 40

Five generations later it is still an operating ranch, offering amazing dude ranch experiences throughout the summer and winter. The All Inclusive Guest Ranch Adventure Vacation includes lodging in the Grand Lodge or in one of the quaint log cabins, daily horseback rides, country gourmet daily meals and evening entertainment—not to mention access to all that the ranch has to offer, including archery, hiking, observing ranch operations, and a nice hot tub soak when the day is over. “The warm, Western hospitality, country gourmet dining, and the beauty of Idaho’s wilderness will make your guest ranch stay not just a vacation, but an authentic western experience with memories that last a lifetime,” say your hosts. Wednesday nights feature the beloved dutch-oven dinner around the fire, where guests can have their leather boots or wallets branded with the ranch brand, and Friday includes a special dining excursion. You set off at 5pm on horseback, and enjoy a full country-style steak dinner in the middle of spectacular natural beauty, including wine and beer. Most guests arrive on Sunday and leave on Saturday, but you have the option to arrive between Sunday and Wednesday, and can opt for a shorter stay if you don’t want the full week-long experience (three-night minimum stay required). t’s the place where you build your life, your family, and create lasting memories. Your home is the foundation of all that happens in your life, and it’s likely the largest financial investment you will ever make. The process of buying or selling a home is exciting; but the reality is that it can also be stressful.

After two years doing business in Sandpoint, Idaho, The Davies Real Estate Team officially became an independently owned and operated business on January 1, 2020, when Dr. Tom Davies became the licensed Designated Broker of NextHome Living the Northwest. The entire team is excited to be affiliated with NextHome, which was recently named the number one Real Estate Franchise by Franchise Business Review. With NextHome Living the Northwest, you will find professionals who are: • REliable - You can rely on the NextHome Living the Northwest’s integrity, hard work, advanced technology and personalized service in every detail of your real estate transaction. Over 25 years of professional business experience and marketing will result in not only getting top dollar for your home but saving you time. • RElationship Oriented - In real estate, properties are the commodity, but it’s the relationships that drive the business vision of the team. They really listen to your needs and desires. They’ve been where you are, so they can relate. Buyers and sellers become lifelong friends. It’s not just another sale or listing; it’s a commitment beyond that, a foundation for business. Studies demonstrate that 85 percent of buyers and sellers said they would use their agent again. Only 24 percent actually do. Why? Follow through. NextHome Living the Northwest is a Zillow Premier Agent and has buyers from all over the world call on them to assist them in finding the perfect home in North Idaho. When clients arrive from out of town, the team provides concierge service, picking up their clients at the airport and arranging local accommodations. Several of their clients have purchased property in North Idaho without ever actually visiting the area, thanks to the team’s ability to provide exceptional photography, videos and drone footage to potential buyers. • REcent Review - “While considering Sandpoint as a possible location for the next adventure in our lives, I encountered Lisa Davies. Lisa put me first when we were together to discover my needs for a property, pricing, location, build vs. pre-owned. This willingness on her part to test those assumptions with a push-pull/give-and-take approach revealed surprises to me about my own expectations. Through it all, I came to know the team (Amy, Victoria, and of course, Lisa’s extremely professional and personable husband and partner, Tom). Thank you to Lisa and the entire team for an outstanding experience—from connecting me with the best in home inspection professionals, lending experts, minor home repair contractors, to hotels for my visits—she had my back! She has extensive market knowledge, relationships in the area, and most importantly, the desire to do the best job possible for her clients! Loved it!” • REmaining Thankful - All the professionals at NextHome Living the Northwest feel very blessed to have helped so many buyers and sellers in their new journey in the Panhandle. Additionally, they were very honored that the people of Bonner County selected their brokerage as the #1 Real Estate Office! Not only did the local community recognize them, but Zillow clients all over the U.S. have rated them “Best of Zillow,” representing the top 10 percent of all Realtors in customer satisfaction! That’s quite an honor. The bar has been set high, and NextHome Living the Northwest will strive to continue to deliver 7-Star service through the entire home buying or selling process. And they don’t stop there! They continue to be thankful for their relationships with their clients and have their “Friends and Family” quarterly seasonal events throughout the year. The recent Fall Clark Fork Delta Lake Cruise was undoubtedly a hit: “We enjoyed perfect fall weather, new friendships were made with one another, and we had an opportunity to build lasting relationships with our new friends.” The Winter Friends and Family event at Western Pleasure Guest Ranch in December was enjoyed by over 60 clients who took a winter sleigh ride and enjoyed a wonderful dinner with live music. For NextHome Living the Northwest, it’s all about providing expertise, exceptional personalized service and building relationships.

achieve your

backyard paradise Outdoor features your neighbors will envy by ABIGAIL THORPE

Now’s the perfect time to transform your backyard into a private paradise that will have your neighbors peeking over the fence for an invite.

finally warm in the Northwest, and we’re celebrating the best way we know how: by getting out in our backyards. A few small additions like some comfy seating or a water feature can make a world of difference in creating a relaxing oasis in your own backyard. Or for a complete transformation, go big and create an adults’ (and kids’) dreamland that will rival the inside of your home—and keep you outdoors a lot more this summer. From hammocks and outdoor fireplaces to treehouses and a summer kitchen, here are some outdoor additions large and small that will have you opting for staying home and inviting the party to your place. Now’s the perfect time to transform your backyard into a private paradise that will have your neighbors peeking over the fence for an invite. 1. Large outdoor hammock When one’s not enough. Are you constantly competing over hammock space in the backyard? Here’s the perfect solution: a hammock large enough for two, or the whole family, if you don’t mind a snuggle. Depending on your space, you can hang it between two trees, or use a stand to keep it right out in the open. Prices range from around $50 to several hundred dollars, depending on how deluxe you want to go. Keep in mind stands and hammock tree straps are often sold separately, so make sure you have everything you need before you set out to create your cozy nap nook. 2. In-ground trampoline The kids will love it for the fun, and Mom will love it for not creating an eyesore in the backyard. Plus, you’ll limit the number of falls off the trampoline during flip practice. An in-ground trampoline is discreetly dug in flush with the ground, keeping the backyard aesthetic clean and uncluttered, while still allowing for a fun playground to keep the kids busy. It’s a win for everyone. 3. Outdoor projector screen Warm summer evenings make us want to spend as much time outside as possible. Take your theater outdoors this summer with an outdoor projector screen—the dark nights make for a perfect light contrast to your favorite film, and you can stay out long after the sun goes down. You can make your own projector screen from a white sheet, install a more permanent screen on an outside wall or frame, or purchase a portable screen and projector so you can take the movie with you wherever you go. 4. Summer kitchen For the chef who wants to keep it all outside, including the meal prep, an outdoor kitchen will do the trick. Installing an outdoor kitchen is a bit more involved than, say, hanging a large hammock. But if you’re someone who cooks a lot and loves to host, it can be a game changer. You can prep and toss your meal right on the grill, all without having to go back and forth inside. And your indoor kitchen stays a lot cleaner all summer long.

Plan out your outdoor kitchen carefully, and consider what appliances you will need to best fit your lifestyle—it can be as simple as a grill, or the full layout with refrigeration, sink, grill and/or oven and prep/dining space. Because we have cold winters, make sure the materials you use can withstand whatever January throws at them (particularly if it’s not covered). 5. Cocoon hanging (or free-standing) swing You’ll find the comfort and swing of a hammock, with the cozy cocoon feeling of three sides. Cocoon hanging swings are the new outdoor comfort seating. An added bonus—they take up less space horizontally than a hammock, so you can place them in a corner or under the porch. Cocoon swings can hang from a beam or come with a free-standing frame, depending on your outdoor needs. It’s the perfect place to snuggle up and enjoy a book or relax by an outdoor fire. 6. Outdoor fireplace Speaking of outdoor fires—an outdoor fireplace is one feature that can add a whole lot of ambiance and comfort to your backyard and is definitely a crowd pleaser with the guests. Depending on where you like to entertain most, you can do a built-in or freestanding fireplace, and can choose between wood-burning, propane, natural gas, charcoal, bio-ethanol and gel. If a permanent fixture is too much commitment, or you like to move the party around your space, opt for a portable device that will let you enjoy all of the benefits of a wood-burning fire, without the commitment.

7. Guest yurt It’s like a guest house, but with a little more natural glamping feel. This requires quite a bit of free space in your backyard and is not for the faint of heart, but it can add a lot to your yard, serve as a fun place to get away for a few hours and relax, and is a great spot for guests to stay when they visit, so you (and they) have a little privacy. Choose your space carefully—you want enough air flow and room for the yurt. You can order a yurt kit online and do it yourself, or you can hire a professional (which is recommended if you’re not experienced with carpentry). Just keep in mind that depending on the yurt, it may need to be taken down in winter. 8. Swing sofas We’re not talking your grandmother’s old standing porch swing (though we love those too). These guys are full on comfortable outdoor sofas—that swing. They are often hung with rope or steel cables, and create a dramatic look and ultra-comfortable seating. You can place them under a porch or deck hung from a beam, or position multiple around an outdoor fireplace or dining area to create a welcoming and lounge-worthy outdoor living room just begging for an afternoon nap. 9. Outdoor bar When you don’t want to go full-out kitchen, opt for an outdoor bar. It’s the perfect addition if you like to entertain and is much less involved than a full kitchen. Big bonus: You won’t have to go inside each time someone’s

glass gets empty. It can be as simple as a small bar top with space for bottles and a tub of ice, or you can get more involved and install refrigeration, a sink, an ice sink, and an area for glasses and bottles. Just make sure you’ve got bottles and ice ready and waiting when the party starts. 10. Treehouse It doesn’t just have to be for kids! Swiss Family Robinson your backyard by using those trees to house your secret hideaway. Or go all out and build a series of tree houses joined by hanging bridges—just make sure it’s structurally sound. It can be a kid’s outdoor paradise, or can serve as an art studio, hideaway nook or even a guest house. If it’s going to be more than just an outside fort, make sure you get the professionals involved to keep it safe. You don’t want your guest falling through the air, after all. 11. Outdoor shower Nothing beats an outdoor shower after a nice long day in the sun (although it’s equally as nice as a morning wakeup). Listen to the birds sing and take in the sweet smells of summer during your daily scrub. The key is to make sure there’s plenty of privacy, good drainage and hot water—a cold shower is only fun for a few seconds. Side tip—make sure there is somewhere clear of the shower to set or hang your dry clothing and a towel for when you are finished. 12. Pergola Pergolas are a great way to add some shade and partial covering to your backyard, as well as some structural beauty. For an added pop—and to filter even more sun rays out—grow a creeping or flowering vine up the sides of the pergola. You can purchase pergolas ready made and assemble them at home, or you can build from scratch. Add to a back-porch area to make an extension of your home, or situate as a stand-alone statement in your backyard. Some even come with canopies to help up your shade factor. 13. Convertible daybed A daybed is the perfect place to relax and sunbathe while reading a book or watching the kids play. Add in some built-in shade with an awning or umbrella and an iced tea and you’re set. The best part about choosing a convertible daybed, though, is it easily transforms into the perfect sitting area when you have company. Just pull the sides away, and you have bench seating to fit the entire crew, with an ottoman to set your drinks (or feet). 14. “Causeway” over a pond A water feature adds so much to the backyard visually and audibly. The look and sound of water helps to calm, adding tranquility to the space, and helps cool a hot backyard. For a modern, extra touch, make it part of the entrance to your backyard space by creating a walkway over a pond to either enter the house or access part of the backyard. It instantly takes your space to the next level and will make you feel like you’re in a botanical garden instead of your own backyard. 56

s the warmer weather has settled in after a long spring of being stuck inside, now is the time to stretch our legs and get out and enjoy these nicer days and gorgeous Northwest sunsets. Even though life was temporarily canceled for us earlier this year, life has resumed, and there are plenty of enjoyable things to get out and do. Lucky for us in the Northwest, our region offers a multitude of activities for everyone to enjoy, whether it’s indoors or out. Now more than ever, the busy bodies of the Inland Northwest are looking outside seeking fun, adventure and social life that brings us back to life. Whether it’s hiking the trails, boating on one of the numerous lakes or attending a local event, you will be sure to find something fun and entertaining to do right here in the Northwest.

farmers'

Markets

Warmer weather means local farmers' markets begin to line the streets and parking lots around the Inland Northwest. The markets are filled with folks seeking to sell and buy fresh farmed goods, delicious homemade foods and local handmade wares. No need to worry about scheduling days to get to one as there are several markets to choose from nearly any day of the week. The Kendall Yards Night Market is held every Wednesday in the summer through September in Spokane and has quickly become one of the biggest farmers' markets around. They close down the entire street in Kendall Yards and fill it with vendors, food trucks and live musicians. Hillyard has a wonderful Farmers' Market that is held every Monday evening and is focused around community, local businesses and farmers. The Fairwood Farmers' Market in North Spokane is held every Tuesday through October and also offers a diverse array of goods and merchandise to its patrons. Millwood Farmers' market is held in the historic Millwood 60

REAL NORTHWEST LIVING

District and operates every Wednesday through September and provides the neighborhood with educational interactions with the farmers. South Perry District offers a Farmers' Market every Thursday through October and takes pride in offering affordable and high-quality food to its visitors. The Emerson-Garfield Farmers' Market is held every Friday through September and features several children’s activities, cooking demos and even book readings. The Spokane Farmers' Market is held on Wednesdays and Saturdays through October downtown and provides local growers a venue to sell directly to the public. North Idaho offers its share of family friendly markets as well. The Kootenai County Farmers' Market runs every Wednesday in Downtown Coeur d’Alene and every Saturday in Hayden, offering folks in the area a few options to visit. Sandpoint offers its farmers' market twice a week at Farmin Park; Wednesday afternoons and Saturday mornings, though as of press time, the Wednesday market opening had been postponed. In addition to the market, you’ll enjoy a variety of live musical performances throughout the season. These summer markets are filled with a diverse amount of goods and are a great place to support our local farmers, businesses and community members. Please check websites for all market events where you can find info on more locations and hours of operations.

If you’re one that prefers live entertainment, there are plenty of live shows of all kinds all around the area. If you enjoy live comedy shows, the Spokane Comedy Club hosts many shows with big named guests and headliners such as Sean Wayans, Sarah Colona and Pauly Shore. They also host weekly local shows, open mic nights, or you can register for one of their classes and learn the ins-and-outs of live comedy. You can also find live music shows under the newly remodeled Pavilion in Riverfront Park, which offers a whole new nighttime outdoor experience for visitors. For a smaller vibe, but equally as entertaining, check out the Lucky You Lounge for some great local and regional musicians. THEATRE Throughout the year, from Spokane to Coeur d’Alene and the surrounding area, there are an array of local, regional and national theatre productions. First Interstate Center for the Arts in Downtown Spokane is known for bringing in big name productions from The Best of Broadway, though, unfortunately, many of this season's productions have been postponed until later in the year or canceled. For a local vibe with a smaller venue, there are several shows at the Spokane Civic Theatre, where locals are encouraged to get involved volunteering in a production. The Spokane Children’s Theatre, which is the oldest nonprofit theatre in Spokane, offers six shows throughout the year, plus they offer summer camps and classes for kids ages 5 to 18. The Christian Youth Theatre in Coeur d’Alene offers classes as well and holds auditions for their live performances three times a year. They also offer many different workshops such as makeup, improv and song writing, just to name a few. Founded in 2011 and with a completely renovated theatre, Stage Left Theatre brings the big theatre vibe into an intimate and inviting setting. The Blue Door Theatre in the historic Garland District has been bringing hilarious Improv comedy shows to Spokane since 1996. They offer several shows throughout the week as well as an eight-week-long course on how to master live improv. The Lake City Playhouse is a nonprofit community theatre located in Coeur d’Alene and features timeless classics year-round. The Lake City Playhouse also has a community outreach program where they give back locally by offering scholarships and giving back to programs like The Wishing Star Foundation. Ignite! Community Theatre “is a diverse group of volunteers passionate about bringing full staged shows, readers theatre and improv to Spokane Valley,” says Ignite! historian LuRicka Kougl. Ignite! takes pride in serving the community by providing an affordable theatre experience and by also offering affordable advertising for local businesses. And one of the most unique and inspiring theatre organizations you can find in North Idaho is Out of the Shadows. The only theater of its kind in the Pacific Northwest, Out of the Shadows is live theater unlike any other, as the unique nonprofit community theater company brings actors with special needs to the stage. As you can see, live theatre is alive and well in the Inland Northwest, and there are a plethora of options to choose from.

Summer

SKI N CARE YO U R G U I D E TO S TAY I N G S A F E I N T H E S U N By Bri Williams, RN, BSN Refined Aesthetics Med Spa, pllc

W

ith the arrival of summer, many of us are making plans to get the most out of the nice weather. And while summer is a great time to enjoy the outdoors, there are steps you should take to ensure you are safe in the sun.

Many of us already know that we need to be wearing sunscreen every day, and this is especially important in the sunny summer months. Unprotected sun exposure increases your risk for skin cancer and premature aging. When the skin is unprotected from ultraviolet radiation (UVR), our skin cells are damaged. Skin cancers (most commonly melanoma, basal cell and squamous cell carcinomas) and aging occur when this damage affects the DNA of genes that control skin cell growth. One easy way to protect our skin and decrease our risk is to wear sunscreen. What sunscreen do I choose? With dozens of sunscreen choices on the shelf, it can be difficult to know what to look for in a sunscreen. All sunscreens protect against UVB rays, which are the main cause of sunburns and skin cancers, but UVA rays also contribute to skin cancers and premature aging. Having protection from both is crucial. When selecting a sunscreen, be sure it is labeled “broad spectrum,” meaning it blocks both UVA and UVB rays. Choose a sunscreen with a sun protection factor (SPF) of 30 or higher. The higher the SPF the more protection the sunscreen provides against UVB rays. However, there is only a small increase in protection as you go higher. For example, SPF 15 filters out approximately 93 percent of UVB rays, while SPF 30 filters 97 percent and SPF 100 filters 99 percent. Even more important than the strength of the sunscreen is how often you reapply it. Sunscreen should be reapplied at least once every two hours and more frequently after swimming, sweating or towel drying. Don’t forget to apply it on your ears, tops of your feet, neck, chest and scalp. These areas are often overlooked and need protection. Also, a chapstick with SPF is important to protect your lips. Is there more I can be doing? Beyond wearing (and reapplying) sunscreen daily, there are additional steps you can take REALNORTHWESTLIVING.COM

85

to further decrease your risk of skin cancer and premature aging. Look for shade to limit your direct exposure to the sun between the hours of 10am to 4pm, when UV rays are the strongest. Keep your sunroof closed in your car, find a shady tree at the beach or pack an umbrella to make shade, and choose lightweight clothing and wide-brimmed hats to cover as much skin as possible. Be sure to wear sunglasses to protect your eyes. Lastly, avoid tanning beds and sunlamps. A tan today is not worth skin cancer tomorrow. There are a lot of safe self-tanner products that can give a beautiful faux glow. Do I need to change my skin-care routine? The short answer, maybe. There are several things to consider when transitioning from the cold winter to the hot summer. During the winter months, many people experience drier skin due to the lack of moisture in the air outside, and the heat sources indoors that dry out the air. You may have added a heavier moisturizer to combat the dryness, and during the summer months, you more than likely can use a light hydrator versus a heavy moisturizer. Another thing to consider is that certain products in your skin-care routine or medications you take can cause photosensitivity.

86

REAL NORTHWEST LIVING

What is photosensitivity? Photosensitivity is an extreme sensitivity to ultraviolet (UV) rays from the sun and other light sources. UV rays come directly from the sun, but also bounce off water, snow and even sand, causing indirect exposure from the elements around you. Symptoms of photosensitivity vary from mild to severe. The most common symptom is a skin rash or sunburn. In some cases, a sunburn can be so severe that blistering or peeling can occur. Reactions vary, depending on length of exposure and what is in and on your body. What causes photosensitivity? There are many causes of photosensitivity. Medications such as certain antibiotics, diuretics, chemotherapy drugs and oral acne medications can cause photosensitivity. If you are given a prescription with a warning of photosensitivity or “to limit your sun exposure, take it seriously. This means the medication has been known to cause a reaction to UV rays. It is also important to pay attention to ingredients in your skin-care products that may cause sensitivity to the sun. ALWAYS WEAR SUNSCREEN amazing for treating acne and signs of aging (fine lines and dark spots), they cause more damage with prolonged sun exposure. How do we avoid photosensitivity? The best way to prevent symptoms of photosensitivity is to limit the amount of time you spend in the sun. That doesn’t mean you can’t enjoy the outdoors, but be sure to follow our guidelines above. Always wear sunscreen, reapply often, find shade when possible, and wear protective clothing and sunglasses. If you are a sun lover and know you will be exposed regularly, you may consider putting certain skin-care products on the back shelf for the summer. After all, getting a sunburn is counterproductive for anti-aging. The fall is a great time to add these products back into your routine when the sun is much less intense. Remember, don’t discontinue medications without talking to your health-care provider first. With proper skin protection there is no reason you can’t enjoy all that summer has to offer. Check the ingredients on your skin-care products to identify any ingredients that will make you more susceptible to sun damage. Look at your prescription bottles to see if any of your medications cause photosensitivity, and lastly, wear your sunscreen. Rain or shine, you need to protect your skin. The sun’s out; go enjoy it! 88

Sarah, a registered nurse for 25 years, an aesthetics nurse specialist for 18 and a clinical nutritionist, believes it is a privilege to be able to be in a field where she can educate patients. She and her team create long-term plans for patients to achieve their goals, spending time during the initial consultation to discuss skin care, treatments and timelines to ensure each client receives the ultimate desired results. “Empowering women and men to feel and look their best is so rewarding to me,” says Sarah. “As a national trainer and speaker for both Allergan and Galderma (the two main companies in the industry), I love educating patients and colleagues.” Having the opportunity to positively transform lives is where Sarah finds true fulfillment. As one grateful client expresses: “I started to see signs of aging, and I knew it was time to seek some professional advice. I was nervous about getting any treatments done but decided to at least go for a consultation. I am so glad that I did! Sarah and her friendly staff are super knowledgeable and make you feel right at home. They helped me figure out what options were right for me, and I am ecstatic with the results! I always leave feeling confident and rejuvenated. I couldn’t imagine going anywhere else. Thank you, Sarah and team! You’ve got another lifelong client!” Sarah Hamilton Face has six providers on staff, including nurse practitioners, registered nurses and master aestheticians, all of whom have seven to 18 years of experience in the aesthetics field. “You won’t find this caliber of experience anywhere else,” says Sarah. “It sounds cliché, but experience really matters. An Evening Under the Stars TOP SPOTS IN THE INLAND NORTHWEST TO UP YOUR CAMPING GAME THIS SUMMER BY ABIGAIL THORPE

DISCOVER I

t’s summertime, and the many secluded lakes, rivers and vast woodlands around the Inland Northwest are begging to be explored. After a long winter, we’re all ready to grab the camping gear and head out on a weekend adventure far from the crowds and fast pace of usual daily life.

Whether you’re a seasoned camper who can pack it all in and prefers to sleep tentless under the stars, or a first-timer who likes a soft pillow under her head, a bed and the comfort of a running shower, there are options for everyone. From secluded hike or boat access only campsites to luxurious “glamping” tents, here are some of the Northwest’s top spots to enjoy a star-studded night. PRIEST LAKE STATE PARK Priest Lake is known as one of North Idaho’s greatest gems. A beautiful 19-mile-long pristine lake just 30 miles from the Canadian border nestled in the Selkirk Mountains, it is the perfect spot to unplug and reconnect with nature. The lake offers several different campgrounds, though traditional tent or small RV camping is the lay of the land. Lionhead at the north end of the lake is a picturesque location with showers and flush toilets, and there is a convenience store close by just in case you run out of the essentials. Spend your days hiking, swimming, boating and fishing, and settle in for a beautiful night beneath the stars of a clear North Idaho night. Keep in mind camp spots often sell out months in advance, so plan ahead. ParksAndRecreation.idaho.gov/parks/priest-lake

SPEND YOUR DAYS HIKING, SWIMMING, BOATING AND FISHING, AND SETTLE IN FOR A BEAUTIFUL NIGHT BENEATH THE STARS OF A CLEAR NORTH IDAHO NIGHT.

HUCKLEBERRY TENT AND BREAKFAST If you want the serenity and feel of being in the wilderness, without the mess, this glamped-up tent camp in Clark Fork may be just the thing. Situated in the North Idaho wilderness just 30 miles from Sandpoint, each “tent” at Huckleberry includes a queen bed, planked flooring, canvas walls and a wood-burning stove. Awake to the sounds of nature and enjoy a homegrown farm-style breakfast at the homestead. Each private tent site also includes an outdoor shower—so you don’t have to resort to the creek or a water spigot—and there are s’mores to enjoy under the stars each night. HuckleberryTentAndBreakfast.com HEYBURN STATE PARK The oldest state park in the Pacific Northwest, Heyburn was created by an act of Congress in 1908. Today, you can still enjoy the three lakes—Chatcolet, Benewah and Hidden Lake—as well as the acres of meadows and ponderosa pines. There are three campgrounds in the park, located just over 30 miles south of Coeur d’Alene. Hawleys Landing Campground and Chatcolet Campground are available for reservations, and Benewah Campground is first come,

first served for those last-minute campers. The park also offers several cottages and camper cabins for those who want to enjoy the outdoors recreations with indoor accommodations. One of the most unforgettable biking trails in the Western U.S.— the “Trail of the Coeur d’Alenes”—runs directly through the park. Hop on your bike or throw on some hiking shoes and explore the many trails that span the park’s more than 8,000 acres. ParksAndRecreation.idaho.gov/parks/heyburn TREEHOUSE ON LAKE PEND OREILLE It may not be camping, but there are still plenty of stars. For the couple or individual who wants an unusual adventure with familiar luxuries, this three-story Airbnb treehouse on Lake Pend Oreille is the perfect thing. It’s not tucked away in a wood, but you’ll have your own private deck and living quarters (including a kitchenette,) with a great view of the lake and private dock access. Located 2 miles from town, you can easily bike in for an evening meal if getting off the grid isn’t on your summer to-do list. Airbnb.com/rooms/14575801

WENDOVER CAMPGROUND Nestled along the Lochsa River among the woods of the NezPerce Clearwater National Forest, Wendover Campground is located just along the Idaho-Montana border, just outside the town of Lolo. Campsites are all available on a first come, first served basis. This is a fairly primitive campground, with only two vault toilets and water hand pumps, so come prepared for a true camping experience—minus the luxuries, but with plenty of natural beauty and quiet. FS.USDA.gov/recarea/nezperceclearwater/recarea/?recid=80550 LAKE CHELAN STATE PARK This 139-acre campground in Central Washington offers lots of shoreline and activity. You’ll be camping, but with amenities like showers, restrooms and picnic areas. You can rent paddle boards and kayaks, and families return to the lake year after year, making this a fun family adventure without being too remote. Set out to explore the North Cascades or relax by the lakeshore and enjoy some fun in the sun. At night, enjoy s’mores around an open fire while you find the constellations. Parks.State.Wa.us/531/Lake-Chelan

RIVER DANCE LODGE Situated along the Clearwater River south of Coeur d’Alene, River Dance Lodge offers the true glamping experience. Each tent is outfitted with a pillow-top bed, wood floors and a small wood stove. Luxuriate in your own private clawfoot soaking tub located (privately) outside in the back of each cabin after a day hiking, fishing or rafting the river. For those looking for the true camping experience, River Dance also offers a tent campground and some RV spaces, with a showerhouse for guests. RiverDanceLodge.com MAIDEN ROCK Located on the shores of Lake Pend Oreille in Cocolalla, the granite rock known as Maiden Rock rises 300 feet above the shores. At its base is a peaceful, sandy camp spot with picnic tables, campfire rings and a restroom. Because this camp spot is only accessible by boat or by hiking down the trail that starts 1,000 feet above the water, it is secluded and remote—you won’t find a glamping tent here. But there will be lots of stars. IdahoConservation.org/events/plan-your-own-adventure/ maiden-rock 94

Dine and Imbibe Amongst Friends TAKE A SEAT AT HAYDEN LAKE’S GATHERING PLACE

— By Jillian Chandler —

xtraordinary customer service paired with delicious food, good value and great location … The Porch Pubic House in Hayden Lake has you covered.

Since opening its doors in 2003, The Porch has earned the distinct reputation as “Hayden Lake’s gathering place," and owners John Grollmus and Brad Fosseen— the duo behind Moon Time in Coeur d’Alene (and The Elk, El Que, Two Seven and Geno’s in Spokane)—continue to offer diners exceptional food, brews, cocktails and service, all complemented by a beautiful golf-course view. It’s the perfect setting to dine and imbibe with friends, family or co-workers any time of year, no matter what the occasion. “The location is really off the beaten track and quite beautiful, which makes the outside seating truly one-of-a-kind,” notes John. With a large seating area featuring both covered and open-air tables, there’s a spot for everyone, whatever their preference might be. The Porch features many menu items similar to what you will find at Moon Time, with some that are distinct to its locale. From the delicious sandwiches, salads and soups to scratch-made specials, you’ll be treated to great food at even better prices. “We provide new specials every week as well as updating our menus twice per year so that guests can develop new favorites to go along with their old ones,” affirms John. In addition to extensive selection of great regional brews and wines, The Porch offers its customers a full bar, which enables them to provide guests a variety of delicious and creative cocktails to accompany any meal. At The Porch, the values are consistent with those implemented at their other establishments. The owners and staff have a relationship built on mutual respect and friendship, valuing each employee personally. This trickles down to how the staff engages with each guest, bringing the community together while also providing nothing but the best. If you’re looking for a place to gather with friends or treat your out-of-town guests to an unforgettable meal and experience, The Porch Public House has just what you’re looking for. 996. That’s when it all began, when friends John Grollmus and Brad Fosseen sought out to open their first restaurant; a warm and comfortable atmosphere where guests would feel at home and provided an exceptional experience—every time. Twenty-four years later, their philosophy has never wavered, and Moon Time continues to provide their guests with familiar faces, great service, a comfortable atmosphere, and great food and drink at a reasonable price.

“We love becoming a part of our local communities,” smiles John. “One of my favorite things as I go from restaurant to restaurant to work (as John and Brad are also the owners of The Elk, El Que, Two Seven and Geno’s in Spokane; and The Porch in Hayden Lake) is seeing the faces of friends I’ve made over the years and having a chance to chat. It’s not uncommon these days for me to be friends with the adult children of guests who I became friends with at a particular restaurant decades ago.” When you walk into Moon Time, you’ll find a staff that is knowledgeable, friendly, fast, accommodating and efficient, and John credits them for Moon Time’s longtime success: “Our manager, Chris

Schultz, has worked there all but two months of its 24-year existence. He knows more about the place than I will ever know. Additionally, he’s just one of three 20-plus year employees working there, and there are several more who aren’t too far behind. Collectively, the staff there is the best you’ll ever find, and they make the place what it is.” The menu, from the start, has featured creative and upscale pub food, made to order from scratch, bringing a variety of items from many different cultures together, paired with carefully selected 19 beer handles and a wide variety of wines, chosen specifically to complement the food. When it comes to what John finds most rewarding about the family of restaurants they’ve built, he says it’s “providing good jobs to so many people. It’s extremely rewarding to help people be able to live happy and healthy lives, start families and grow roots in their communities.” Community is at the forefront of all that John and Brad do, not only Moon Time but at all of their establishments. As you walk through the door, you are sure to be welcomed with a warm smile and a warm meal, surrounded by the wonderful folks of our community and beyond.

or the past 13 years, Viljo and Autumn Basso have been serving up unique and distinct flavors to North Idaho diners— delighting the taste buds of locals and visitors alike day after day. Offering four distinct dining destinations, the couple is proud to provide each guest a unique—and delicious—meal, no matter where they choose to take a seat. The first in line of their family of restaurants was Syringa Japanese Café and Sushi Bar. Satisfying customers since 2007, Viljo and Autumn have been serving guests the best sushi and modern Japanese cuisine North Idaho has to offer! Using only fresh high-quality ingredients and wonderful flavors in each dish they serve, guests will taste the difference. And with a flair for originality and excellence, Syringa continues to stand apart from the rest. Down the street from Syringa is where you will find The Bluebird, a midtown eatery, which the husband-and-wife team opened in 2016. It quickly gained a large following that continues to flourish. In their endeavor, Viljo and Autumn have delivered a casual neighborhood bistro-style restaurant. The Bluebird is an eclectic Northwest bistro— the menu inspired by the couple’s 25 years of culinary travels and adventures. “Our goal was to open the kind of restaurant we like to dine at and bring more dining variety to Coeur d’Alene,” says Autumn. Seasonal as much as possible, the menu items change frequently with specials offered weekly, allowing diners to try something new each time they visit. Whether you choose to stop in for lunch or dinner, the menu selections are sure to please. Pair your meal with a glass of wine from

their outstanding wine list or something from their great selection of beer, ciders and sours. And for those wine lovers, they invite you to join their monthly wine club. If you’re looking for a strong brew and freshly made baked treats, stop in next door, where you’ll find The White Pine, midtown’s favorite coffee café since 2018. Serving up DOMA Coffee, all syrups are house made with no artificial ingredients, and the delicious fresh pastries are baked in-house daily. From croissants and scones to macarons and more, it’s the perfectly quaint little spot to warm you up on a cool summer morning or brisk fall day. When dining options offered by the couple seemed like they couldn’t get any better, the Bassos added yet another restaurant to the mix— Monarch Ramen + Noodle House. Opened fall of 2019, the intimate and casual 42-seat restaurant features a menu of house-specialty ramen and noodle dishes (including “build-your-own” ramen), as well as a variety of small-plate options. “We are excited to have filled a void and bring new flavors to town,” states Autumn. Whether you take a seat at Syringa, The Bluebird, Monarch or White Pine, Viljo, Autumn and their staff are ready to serve you and help create a dining experience you’ll savor. “We feel so blessed to be a part of this amazing community,” says Autumn.

A FOODIE’S AND SHOPPER’S PARADISE

CENTRALLY LOCATED IN BEAUTIFUL COEUR D’ALENE IS A FOODIE’S AND SHOPPER’S PARADISE better known as The

Culinary Stone. This 5,500-square-foot food gourmet heaven was dreamt up back in 2013 and modeled after an old outdoor market setting. The owner, Sandy Volkar, says they “wanted it to be a place for culinary enthusiasts of all levels.” Offering cooking classes and affordable highquality kitchen gadgets from all over the world make this place a fullon experience when visiting. It’s a place for all to gather, shop, eat and enjoy—a melting pot of all things culinary in just one stop. Dealing with local farmers and suppliers keeps this grassroots-minded company one of the best places to stop—not only in North Idaho but any time you’re in the Northwest. Plan to spend some time while visiting, as this isn’t your typical one-stop shop. Filled with gourmet food, wines and culinary supplies, everyone is sure to find something to take home with them. While visiting you will also notice the eclectic fixtures that adorn the interior setting, which in itself tells a story about how this place came

to be. “The goal is to be able to continue to build upon what we have started,” states Sandy, “to provide an exceptional customer experience and culinary environment for the whole community.” This epicurean paradise of all things delicious also offers a wide selection of fine deli meats and cheeses to go. The deli also offers daily made fresh soups, sandwiches, salads, and made-to-order meat trays and charcuterie boards. The café showcases fresh roasted coffee, cakes, pastries and other yummies, all locally made. The welcoming baristas will offer an assortment of espresso drinks, teas and their famous Golden Milk. Whether it’s food, wine or worldly kitchen gadgets you seek, every bon vivant of the Northwest will be sure to find what they need and what they didn’t know they needed. Be sure to check out the barbecues on Thursday nights in the summer, which offer its goers delicious food while enjoying the warm evenings and live music on the patio—just what summers are all about!

GRATEFUL TO CREATE. PASSIONATE TO DELIVER.

YO U R TA B L E AWA I T S I N T H E HEART OF RIVERSTONE By JILLIAN CHANDLER

“N

ow, more than ever, I’m just grateful to run my own business, for the ability to create and the opportunity to succeed without limitations.”

The spring of 2020 was devastating for restaurants across the nation, and owners here in the Inland Northwest were not immune to its effects. Vine & Olive Eatery and Wine Bar owner Naomi Boutz and her team, with a little creativity, learned quickly how to best adapt to the situation while keeping the restaurant open and profitable. “I have a whole new appreciation for free enterprise,” she states. “Free enterprise is not free, and it’s not something to be taken for granted.” The doors are now open to diners, who have been eagerly awaiting to once again pull out a chair and take a seat at the table. With an atmosphere that is warm and inviting, guests can feel the pride of ownership Naomi exudes of the eatery she created in the heart of Coeur d’Alene’s Riverstone less than three years ago. “We keep things simple and soulful and as consistent as possible,” affirms Naomi. Naomi is joined by Chef Josh Pebbles. An integral part of the V&O family since August of 2019, his philosophy is to highlight the best local ingredients with classic European influences while infusing new-age techniques—creating a memorable experience for each guest who walks through the door. “We are always finding new inspiration in food and wine to share with our customers,” smiles Naomi. “We are passionate about everything we do here at V&O, and customers like being a part of that high energy.” From the staples of Escargot prepared in a classic French execution, to the Pork Shank with Creamy Polenta and the Acorn Squash Frites, the menu never disappoints. In addition, menu offerings change every few months for seasonality, with new popular menu items including The Catch of the Day (served with wild mushroom risotto) and the Niçoise Salad with seared Ahi. It is important for Naomi to not only keep their menu enticing but their pricing competitive, and she says, "You can definitely dine at V&O on a budget.” Love and passion shine through in everything they do at Vine & Olive, where your table awaits in the heart of Riverstone.

Three restaurants all offer a delightful experience

REAL NORTHWEST LIVING

Chef Raci Erdem has been bringing the flavors of the Mediterranean to eager diners at The White House Grill in Post Falls, and guests continue to eat it up! Serving the Inland Northwest since 1996, The White House Grill offers a comfortable and relaxed family friendly environment, where patrons of all ages are invited to take a seat at this fun and noisy restaurant, where Mediterranean music fills the air—as does the aroma of garlic. The menu features seafood, vegetables, pasta and lamb dishes, and is complemented by a full bar showcasing handcrafted cocktails, 12 beers on tap, an extensive wine list and a beautiful scotch list—hand selected by Chef Raci himself. Open for lunch and dinner Sunday through Thursday 11am to 10pm, Friday and Saturday 11am to 11pm, Raci looks forward to guests coming into the restaurant, not just for the food and drink, but to enjoy the overall experience. “Our job is to put you in a great mood with some cool music, delicious food and awesome drinks, all for a great value,” he says. With one successful restaurant under his belt, a decade later, Raci welcomed diners to take a seat at his second Post Falls restaurant—The Oval Office. This American bistro with a foreigner flare provides a different—yet still exceptional—experience from that offered at The White House. At this cozy, romantic

small-seat eatery, patrons can appreciate world flavors with the small-plate and entrée offerings. Guests will be treated to a full bar featuring great beer, wine and specialty cocktails. The martini lists features politically inspired specialty martinis, from The Border Patrol and Fake News to the New Yorker, and the U.S. Mint makes for the perfect post-dinner dessert cocktail. There’s something on the menu for anyone looking for a good martini—and a good time! The community fireplace on the large outside patio can seat 12 around it, and the European-style awning allows patio dining year-round! This is the place to dine on a warm summer day or evening. Known for its happiest of happy hours in the Northwest, offered twice daily, enjoy all martinis and appetizers offered at a fraction of the price! Open Monday through Friday 11am to 11pm and Saturday and Sunday 3 to 11pm, it’s the perfect spot for latenight dining any day of the week. Raci invites you to take a seat at his most recent endeavor—the Pentagon Bistro & Martini Bar in the heart of Liberty Lake. Opened in November 2019, the 120-seat restaurant is warm and inviting yet sophisticated, showcasing an open kitchen concept, a large bar and two cozy dining rooms. Open daily 11am to 11pm, guests will be treated to a delicious and diverse small-plate menu, as well as entrées featuring steak and seafood, and their specialty politically inspired martinis, just like its sister restaurant. Whether you choose to dine at The White House, Oval Office or Pentagon, Raci and his staff can assure you that you’ve made the right choice.

“WE WANTED TO HAVE A GATHERING PLACE THAT FRIENDS CAN GO TO AND RELAX WITH A COCKTAIL OR QUICK LUNCH IN THE AFTERNOON, OR FOR A BEAUTIFUL DINNER OVER A BOTTLE OF WINE,” RACI SAYS.

lifelong love of food was instilled in Scott McCandless starting at a young age, as he watched his mother lovingly devote her time to preparing farm fresh, locally sourced homemade meals “during the time of TV dinners.

With a degree in engineering and economics, Scott began his career in the manufacturing industry as an industrial engineer, but due to the demands and constant relocation that came with the job, and raising a growing family, it was time to pursue his deep-seeded passion for food. Together with his wife Liz, who has degrees in both restaurant management and the culinary arts, they made the perfect team. Many years and business ventures later, today, the couple demonstrates their mission in everything they do. foods—and hope they continue to do so for generations to come, at their beloved Clover. As you step into Clover, you will find walls adorned with photos of the history of the building and owner. The lighting is warm and the colors masculine. The perfect balance. The fixtures and décor are more contemporary and industrial, a reflection of Scott’s history in engineering. The space is intimate and inviting, from the cozy sunroom to the upstairs bungalow. Guests can choose to dine outdoors on the charming patio, which is filled with herbs and edible foliage, as the kitchen crew uses Clover’s landscape to garden. When it comes time to order, the cuisine has Mediterranean influences with a focus and flare on Spanish and Italian fare; though they stay true to their American roots, offering locally purveyed meat dishes, such as lamb and duck. Clover’s menu is always true to the season. The seasonings, vegetables, oils, vinegars, game, seafood, drinks, you name it; the kitchen gets all possible regionally and locally sourced and fresh elements for its dishes as they become available or in season. The bar is thoughtful, taking into account how it couples with the dishes, the season, and even the temperature outside. A “homegrown” chef hailing from Spokane, Executive Chef Bryan Doyle leads the culinary team, bringing 13 years of experience with him to the plate. His journey began as a sauté cook at the Davenport Hotel, and in 2014, an opportunity presented itself at Clover. Two years later, he would take the helm at Durkin’s Liquor Bar as executive chef. But Clover was calling him “home,” and in 2018, he returned with his passion for cooking in the kitchen he loves. “Chef Doyle is consistently challenging himself to balance out dishes with proper acidity, sweetness, salt and spices, and is incredibly open to feedback from a discerning tongue,” affirms Scott. “It is approachable for those who have never tried some of the more uncommon cuisine options out there.” Scott and Liz credit Bryan, their core management staff and operating crew for showing up, working hard and adapting with all aspects that go into creating what is Clover’s reputation in town. “We are proud to provide our unique experience, our culinary expertise and our desire to leave one satisfied,” smiles Scott. Changing the way we eat … one plate at a time. Clover.

or more than two decades, owners John Grollmus and Brad Fosseen have strived for one goal: to serve their guests the best—every time. “The Elk appeals to anyone and everyone,” says John. “Hipsters to grandmothers. Young and old. Professionals from downtown and locals from the neighborhood.” Consistently good food and atmosphere along with friendly service and menu items offered at a reasonable price—these are what appeal to everybody, no matter one’s age or financial status. And whether it’s your first date or 50th anniversary, The Elk Public House will treat you to an experience that won’t soon be forgotten. This is what The Elk, located in the heart of the historic Browne’s Addition neighborhood, has delivered year after year to guests since opening its doors in 1999. Menu favorites among guests include the ever-popular Reuben, the Santa Fe Chicken Sandwich, Mediterranean Grilled Lamb Sandwich and legendary Roasted Corn Pasta. You can also choose from their creative weekly specials and homemade soups, inventive cocktails and great brews, all which can be found online on their website.

From maintaining consistency and low employee turnover, to weekly specials and updating the menu twice a year, to their overall goal of delivering the best experience possible to their guests is what John credits to maintaining The Elk’s popularity year after year. “The number one factor overall is probably just our constant desire and effort to be the best we can,” he says. “Even 21 years into this we are still watching every little detail to be sure we are creating the best possible environment for our guests.”

By Jillian Chandler

QUICKLY GAINING THE STATUS

as one of Spokane’s best-kept secrets, The Two Seven Public House opened to an eager community on the South Hill in April of 2008. For 12 years now, the restaurant continues to fulfill its reputation for great food, great drinks and stellar service. As owner John Grollmus says proudly, “We have maintained consistency and growth year after year.” And there’s a simple, yet important, reason why. The Two Seven follows the same simple concept as its sister restaurants The Elk, El Que and Geno’s in Spokane, Moon Time in Coeur d’Alene and The Porch in Hayden Lake— top-notch service, creative food and drink at reasonable prices, all served up in a comfortable environment. Along with their inventive house-made soups 130 130

and weekly specials, customer favorite menu items include, but are most certainly not limited to, the Salpicon Texas Shredded Beef Tacos, the famous Smash Burger, Crispy Beer-Battered Fish Tacos, and never forget the legendary Roasted Corn Pasta. John loves that he has built a fun and dynamic environment at The Two Seven, and he enjoys the constant interaction with his guests. “I love that on a visit to the restaurant I might run into guests who have been regulars for years, new folks who just discovered us and even the friendly faces of people I went to high school with dining alongside their children.” In addition, at each one of their establishments, John and co-owner Brad Fosseen are proud that they have had the opportunity to create great jobs for their employees—which is why you’ll see the same friendly faces paired with exceptional service every time you visit.

Whether you’re looking for a place to take the whole family or just a great spot for a cold beer and a bite, check out the Two Seven in Spokane’s South Hill, where the friendly staff will ensure you a dining experience with superior service, great food and drink, all offered at a terrific value.

VERACI PIZZA SUMMERTIME CALLS FOR GREAT PIZZA AND A COLD BREW FIRING UP GOURMET PIZZAS SINCE 2009 — BY JILLIAN CHANDLER —

L

aura and Seth Carey are the proud owners of Veraci Pizza in Spokane’s Kendall Yards. What started as a successful restaurant on wheels back in 2009, the husband-and-wife team found a permanent restaurant location in which to serve their delicious wood-fired pizzas, and they opened their doors to Veraci Pizza in the Kendall Yards neighborhood in 2014. And, to no surprise to their customers, they’ve been satisfying diners ever since. In business for more than a decade, Laura says, “In some ways it seems like we just started, and in other ways it feels like a lifetime ago. It’s just so incredible that we have customers who have been with us since the very start!” On the menu, of course, are their wood-fired thin-crust pizzas (with vegetarian and gluten-free options available), fired up in their one-ofa-kind ovens. “Our oven was built by hand and doesn’t have a chimney like most wood-fired ovens do,” according to Laura. This allows them to cook their gourmet pizzas at 800- to 1,000-degree temperatures, which provides a unique—and delicious—product in the end; one you won’t find anywhere else.

Guests can also choose from a selection of salads, appetizers, desserts, beer and wine, as well as a variety of cool cocktails, beer and wine, perfect to enjoy outdoors on the patio overlooking the Spokane city skyline. At the end of the day, Laura and Seth are inspired to continue the work they do each and every day because of the community they serve—their staff, the neighborhood, the lunch crowd and the evening diners. This became even more evident, as restaurants across the state and country had to close their doors earlier this year. “When the dine-in shut down first happened, we were very uncertain on how things would look with only doing takeout,” says Laura. “We have been pleasantly surprised at how the community continued to support us in our new model. We can make this work until times are normal again, and we cannot wait until we are able to serve our customers on our favorite patio with a view again. “We set out to build relationships through this business, and those relationships continue to inspire us!”

DISTILLERS STEP UP IN TIME OF NEED C O M M U N I T Y A LWAYS C O M ES F I RST

By Colin Anderson

D

ry Fly Distilling is well-known across the Inland Northwest. In fact, it was one of the first 25 craft distilleries in the nation when it opened its doors in 2007, and the very first in Washington state post-prohibition. Its gin, vodka and whiskeys have racked up regional and national awards, but Don Poffenroth and Terry Nichols’ best work might just be something they likely never dreamed of distilling. During the COVID-19 outbreak, like so many others, Dry Fly was forced to shutter its tasting room to guests, but its commitment to the local community wouldn’t stop. Dry Fly stepped up to help the surrounding community by using its alcohol to create ‘Spokanitizer.’ Not only did the distillery break from creating its award-winning spirits, but the newly created hand sanitizer was

given out for free to individuals as well as bulk quantities to the Spokane Country Emergency Response Center to be distributed to first responders and health and safety workers all across the region. This act of generosity won’t soon be forgotten. Initially known for vodka, gin and wheat whiskey, Dry Fly’s variety and selection has grown tremendously. As consumers not just in the region but across the country demand a better spirit, Dry Fly was ready to lead the way. “A 6-year-old Triticale, a 6-year-old Port Barrel-Aged Triticale and a DOMA Coffee BarrelFinished Triticale are now available as distillery-only features,” says Terry. A trip to the tasting room is a real treat for those who haven’t

This summer will see a Huckleberry Lemonade added to the lineup! You can pick these up at the tasting room and at local retailers.

Destination Wine! A TOUR THROUGH IDAHO AND WASHINGTON’S FINEST

BY ABIGAIL THORPE

Y ou don’t have to travel far for a summer wine tour— Idaho and Washington continue to make a name for themselves in the world of wine, and there’s no better time to visit than when it’s warm and the days are long.

Wineries in the Columbia Valley AVA—which includes well-known growing regions of Walla Walla, Horse Heaven Hills, Yakima Valley, Wahluke Slope and Rattlesnake Hills—have tripled over the last decade and now cover more than 11 million acres. Extending into Idaho is one of the newest AVAs in Washington and Idaho—the Lewis-Clark Valley—which spans the border between Washington and Idaho, with the Snake and Clearwater Rivers running through. Known as the “banana belt,” this region was once a large wine growing region in the late 1800s and early 1900s, until prohibition shut down production. Now the wineries are back and, dare we say ... better than ever? Warm temperatures, well-draining, nutrient-rich soil and cooler nights in the higher elevations make for wines that are lush, fruit forward and top quality. Take a weekend drive through the warm, lush valleys of Washington and Idaho and sample Cabernet Sauvignons, Merlots, Petit Verdots, Chardonnays, Rieslings, Syrahs and more to your heart’s content. Clearwater Canyon Cellars was named the 2020 Pacific Northwest Winery of the Year by Wine Press Northwest. their Idaho Century Farm in the Lewiston Orchards, where Coco first rented land from her grandfather when she was 21 to start a vineyard. From the first vintage of four barrels to a now wide variety of whites and reds you can find throughout Idaho and Washington, Clearwater Canyon is a must visit in the Lewis-Clark Valley. While you’re in Lewiston, make a stop at Vine 46. A boutique winery focused on delivering interesting and exceptional wines, their mission is simple: “Vine 46 delivers an intriguing wine that invokes conversation and creates opportunities for people to share in the appreciation of a good wine.” Created by a small group of diverse individuals, the winery offers an intriguing collection of reds, and a small sampling of whites. Northwest of Lewiston lies Colter’s Creek Winery. Head just past into Juliaetta, Idaho, for a visit to their tasting room and restaurant. The tasting room serves a variety of reds and whites made from their Arrow Junction Vineyard, as well as a selection of grapes from vineyards in the Sunny Slope region of Idaho and Clarkston, Washington. The winery prides itself on growing quality wines with the least environmental impact possible, and sources fresh local ingredients for its restaurant. Head back toward the Walla Walla region of Washington to Gramercy 142

Cellars, a renowned winery started by Manhattan-based master sommelier Greg Harrington, who tasted Washington wines, fell in love, and started his vineyard in Walla Walla, the name and label a carryover from his New York roots and Manhattan’s Gramercy Park. Specializing in Rhone and Bordeaux blends and producing old-world style with a newworld kick, the winery utilizes minimalist winemaking techniques, and keeps it small—only producing 8,000 cases each year. Try their Columbia Valley Cabernet Sauvignon. Tastings are available Tuesday through Friday by appointment, and Saturdays. Next, up head to Seven Hills Winery. Founder Casey McClellan planted the first grapes with his father in 1982, making it one of the first vineyards in the now-famous wine region of Walla Walla. They operate the only existing historic wine-making facility in Downtown Walla Walla, which offers tastings in the old woodworking mill and a rare education into the wine-making process and the growing history of the region. While you’re there, make sure to try the 2014 Seven Hills Merlot—it’s still made from the original vines planted in 1982. Down the road, Rob Griffin and wife Deborah Barnard started Barnard Griffin in 1983 with a truckload of borrowed fruit and a rented cellar. Now their production facility in Richland boasts some of Washington’s

premier wines sourced from their vineyards throughout the state. The estate features a Wine Bar & Eatery in addition to the production facility, and Deborah houses her fused-glass db Studio & Gallery there as well, with classes available to visitors. Sip on a glass of their Cabernet while you wander the estate, and if you plan in advance, schedule a fused-glass class to go along with the wine and food. You’ll feel miles away from everyday life. Just beyond Walla Walla, located in the Red Mountain region of Columbia Valley, Kiona Winery’s panoramic views from the tasting room overlooking the vineyard almost rival the wines—almost. Started in 1975 by Jim Holmes and John Williams before Red Mountain became known as a premier grape growing region, the vineyard is in its third generation and still family owned and operated. Their mission? “Grow grapes that capture the essence of our place, and release wines of utmost character and purpose that reward the drinker every time a cork is pulled.” Diurnal temperature shifts and well-draining soil make for complex, deep reds like their Estate grown Cabernet Sauvignon and Red Bordeaux Blend Reserve. T

his July, Latah Creek Wine Cellars in Spokane Valley, Wa s h i n g t o n , celebrates their 38th anniversary! Established in 1982 by husband and wife Mike and Ellena Conway, Latah Creek Wine Cellars has been pouring excellence into each glass and continues to bring affordable, award-winning wines to the Inland Northwest. Joined by their winemaker daughter Natalie Barnes, and 39 harvests later, they are continuing that mission. In the fall of 2019, Latah Creek Wine Cellars unveiled their newly remodeled tasting room and gift shop at the winery, where they have created a space that is open and inviting to all who walk through the door. “We have loved the new tasting room and the open space it has given us!” says Natalie. “This space allows for more interaction between friends, other customers, and our knowledgeable and friendly staff. “ When Latah Creek was established in 1982, it was the 35th winery in Washington state, and today, there are more than 1,000 active wineries. Natalie joined her father Mike in 2004 as co-winemaker at Latah Creek, making them the first father/daughter winemaking team in the state. Sixteen years later, she remains passionate about the art of winemaking. “I love tasting the grapes on the vines, the juice as it is fermenting, all the while imagining what the finished wine will be,” Natalie smiles. “I love working with my parents and the interaction with my dad as we taste our wine, make blends, and just do winemaking together. And the most rewarding part of it all is when someone tastes our wine and falls in love with it.”

The father/daughter winemaker team continues to work together to make something exceptional that they both love, and for the past several years, they’ve been experimenting to create unique blends and small lots. “We are crafting these things together, listening to and sharing with one another,” says Natalie. “It is an experience that I can only hope I will be able to have with my own daughters.” They are excited about the brand new release of their award-winning Chenin Blanc, as well as four new Reserve Reds coming down the pipeline; a brand new varietal the winery has never produced before, a Mourvèdre; as well as a new release of their extremely popular Barbera. This fall Latah Creek Wine Cellars will highlight their second release of “A Toast to Best Friends” white blend. During these warmer months, Natalie still enjoys red wines with dinner. “I just love the flavor they add to any meal.” But she recommends chilling them in the refrigerator for 20 to 30 minutes until they reach cellar temperature (55 to 65˚F). She also recommends Latah Creek’s Sangria, and during the afternoon, lighter varietals such as a Rosé, Pinot Gris or their new A Toast to Best Friends white blend. “They all have a crisp, fresh taste to them, making them perfectly enjoyable any day of the week!” Mike, Natalie and Ellena invite you to stop in at the tasting room, open daily 9am to 5pm, where you can shop, taste, visit and enjoy.

RACE SEASON BY TAYLOR SHILLAM

T

he adrenaline of a public race—dynamic, energizing, uniting—is a sensation unlike any that can be produced from a companionless run. And yet, in the name of safety and solidarity, training without the company of others is exactly what local runners found themselves doing earlier this year. In light of the mandates put in place to address the COVID-19 pandemic this past spring, runners local to the Spokane and Coeur d’Alene area have a different season ahead of them. While the Inland Northwest races that so many look forward to each year are not likely to happen on the dates they were planned for, it doesn’t mean we must run alone. It means a time to keep looking forward, and to get creative. This is exactly what organizers of the top local races have been hard at work to accomplish: finding ways to keep the 2020 race season intact, and to keep the community connected. The good news is that despite the uncertain nature of this time resulting in a heightened difficulty to plan large-scale events, organizers of local favorites have taken every step not to cancel their events. The Lilac Bloomsday Run, Windermere Marathon, The Split, Coeur d’Alene Marathon and Hayden Lake Marathon events have all been postponed to late summer and fall, with earnest plans to maintain the high quality each is known for. With a mission of inspiring health and fitness through world-class group training programs and events, Spokane-based Negative Split encourages runners to finish strong—not only in a race but when

faced with life’s challenges. The organization focuses on memorable experiences, community connection and prioritizing health. With the decisions they’ve had to make in light of the pandemic, owner Ryan Hite remains optimistic and committed to the company’s core values. “Events have been flipped upside down by the coronavirus,” Hite said, noting the difficulty the athletic and event industries have faced to adapt their schedules so quickly. He confirmed that Negative Split did the best they could to keep their events intact. Postponing was the best way they could do so, Hite explained, emphasizing their desire to reward local runners’ efforts and progress they’ve made in training for the 2020 season. Not taking lightly that races like the Coeur d’Alene and Windermere marathons were Boston Marathon qualifiers, Negative Split event organizers knew that making those races virtual would take that opportunity away from runners who had been working hard to qualify.

150

REAL NORTHWEST LIVING

“We want to try to make sure to reward their effort and recognize that achievement,” Hite stated. “Organizers are in a tough spot,” as they do their best to shift races and provide flexibility for the local running community as much as possible. If an event could possibly be shifted or rescheduled, rather than canceled or made virtual, that’s what they would do. In the meantime, Negative Split saw a way to keep runners motivated and address a need in the community. They assembled a virtual run fundraiser event in May to keep runners motivated while providing the opportunity to aid local business owners. The strategy was to give back. A virtual race would give back an opportunity to runners who had trained in anticipation for the season to begin—and making it a fundraiser would promote giving back to the community during a difficult time. “Runners still want to be running,” Hite said, who was appreciative of

the immediate positive response from the community. In the first week, they saw 400 registrations, and the numbers continued to climb. “We wanted to create something with a positive light in a hard time for a lot of people.” With the catchphrase, “Make running viral!” Negative Split encouraged runners to join in on their May 15 COVID-19k virtual run, to unite the local running community and help support small businesses. At a time when runners would be on the cusp of seeing their training translate into results, a virtual run offered an opportunity to stay connected despite the requirement to (physically) stay apart. The race was simple. Participants could choose their distance: a full, half or quarter of the 19k total (11.8 miles), run it on any course at any time before May 15, and upload their results online. They would receive a commemorative T-shirt and the chance to win one of the gift card purchases. Nominations were taken for which local businesses to

support with gift card prizes and narrowed down to a top few. While the races of spring and early summer were largely virtually based, there is still a season to look forward to, as the biggest races of the Inland Northwest remain on the schedule for late summer and early fall. Circling the U.K. Train travel makes multiple destinations easy BY COLIN ANDERSON

O

ne of the most advantageous aspects of traveling to Europe is once you’ve landed it’s generally very easy to see multiple cities, countries and destinations during a single trip. Timely train stations make getting from one place to another economical, and for those who prefer to fly, regional carriers can transport you to new destinations typically in about an hour’s time. If you take the time to make the trek across the Atlantic, don’t be afraid to seek out other destinations from your main locale—they might be closer and more accessible than you think. One of my wife’s and my more recent trips included London and the Scottish lowlands. Through some careful planning we were able to stay in four places within eight days, while not being overwhelmed with travel times and location changes. One major advantage to beginning your trip in London is the daily direct flights from Seattle to Heathrow. Just about any day of the week you can

depart for a red eye that puts you down around 11:30am local time in the U.K. (Note: Fewer flights are available at the time of this writing due to airline recovery from COVID-19). We flew Virgin Atlantic and were very impressed. All meals, snacks and beverages, including alcohol, are included with your ticket, and the staff was exceptionally friendly. There are five different classes of traveler with basic coming in between just $400 to $500 for the round trip. The United Kingdom is eight hours ahead of U.S. Pacific time. Whether you are able to sleep or not during the 9.5-hour flight, I recommend you skip the nap after you get off the plane, and force yourself to stay up until your adjusted normal bedtime. You’ll probably still experience some jet lag, but your excitement upon reaching your destination should help keep you awake.

london A bustling city and Europe’s financial capital, London can look overwhelming at first but for a city of its magnitude is easy to navigate. Much of London is laid out in neighborhoods, and accommodations tend to cater more to the character of each neighborhood. Covent Garden is near Piccadilly Circus, The British Museum, Westminster Abbey and Big Ben. Stay here and you can easily walk to all these destinations, but you will pay a lot for a small hotel room. More affordable options lay further out from the main attractions. There is no need to rent a car here, as short taxi rides are generally affordable, and ‘The Tube’ (subway system) connects every part of the city so you can easily bounce across town to various locations. My wife, being a Harry Potter fan, had to make a stop at King’s Cross Station, where you can have your photo taken at Platform 9 ¾, well-known to any Potter fan. If you are staying more than a couple of days, an Oyster Card will save you some money on mass transit costs. Also slightly more expensive but a fun way to see the city is by river ferries, which run seven days a week. London is an amazingly diverse place, and while you can get fish ‘n chips at many a pub, you can also find wonderful Indian, Thai, French and Mediterranean options. While we were here for just a couple of nights we were able to see a show in the Theatre District, tour the British Museum and National Portrait Gallery, stroll through Trafalgar Square, see Parliament and Big Ben, and still take in a few local pubs and great restaurants. The options are truly limitless.

n The bulk of our trip, however, was to be spent in Scotland. There are about 20 trains a day that run from London to Glasgow, and we hopped on one that took about 4.5 hours. The birthplace of the Steam Engine, this city was home to the biggest shipyards and shipbuilders in the world for much of the 18th, 19th and portions of the 20th century. The city hit a downturn in the ‘70s and ‘80s and was more known for brawling than tourism, but a recent resurgence has seen that image start to fade away again, although not entirely. The saying from Glasweigens goes like this: “We have more fun at a Glasgow funeral than people from Edinburgh do at a wedding.” This was evidenced by our first restaurant stop where the waiter/owner asked us how long we’d been in Scotland. As we told him we just arrived his response was, “OK, let’s get ya drunk!” We wandered the first night from pub to pub, sampling local beers and whiskeys. While you can seek out rougher establishments, we never felt unsafe, and there are also a surprisingly large variety of restaurants here as well. In Glasgow, you can check out the Kelvingrove Art Gallery and Museum, Riverside Museum and Glasgow Science Centre.

scottish Nearly half our trip was spent relaxing in the Scottish countryside, and it’s just as it’s portrayed on screen. Whereas the highlands are known for dramatic cliffs and craggy coastlines, the lowlands are a sparsely populated area, much of which is covered by farmlands and sheep. Stone fences draped with centuries-old vines line properties, and the country is immensely green due to the mist and almost daily light showers. We rented a car and drove about 50 minutes out of Glasgow to a cottage with a view of Loch (Lake) Lomond. Driving on the opposite side of the road with the steering wheel also opposite is very foreign, but after about 20 minutes or so it starts to feel more natural. We had dinner in the village of Drymen and unknowingly stumbled into the oldest licensed pub in all of Scotland, The Clachan Inn, which has been operating (legally) since 1734. We took a short day trip out to Stirling Castle, which has an amazing history and overlooks the battlefields made famous in the movie “Braveheart.” And what would a trip to Scotland be without a visit to a distillery? Scotch whiskey enthusiasts will set up entire weeks just to visit the popular distilling regions. We toured Glengoyne Distillery, where we learned the process and sampled 12- and 18-yearold single malts. While the general sense is all Scotch is heavily peated and smoky, different regions and different distillers each have their own signature taste. Many places around the country you can order 25-milliliter (.85 ounce) sizes for between $4 and $6 U.S. This is a great way to try several without breaking the bank—or your liver.

We decided to stay one more night before departing for London again and settled on Edinburgh, the Scottish capital. The train ride was not even an hour, and there are dozens of hotels within walking distance of the main station. While much more touristy than Glasgow, the Royal Mile maintains its charm and history, even if it is filled with souvenir shops and trinkets. This section of Old Town contains most of the major attractions all easily accessed along a single street. The view from Edinburgh Castle is particularly striking as you can see the contrast between Old Town and New Town. Old Town is steep, and some of the most fun is to slip in between narrow alleys and see where you come out.

In a week we were able to see everything from a bustling metropolis to the peace and serenity of the countryside. We took in ancient artifacts and paintings, as well as lakeside sunsets and the laughter of the local pub. If you’re planning a trip to Europe, don’t be afraid to venture outside of London, Paris, Barcelona, Rome or Dublin. You'll be surprised by what you can experience just a short distance away from the main cities, as often these are where you’ll find your favorite memories.

Hard-boiled eggs are boiled long enough for the yolk to solidify. These eggs are the basis for many dishes, such as egg salad, Cobb salad and Scotch eggs, and may be further prepared as deviled eggs.

Soft-boiled eggs may leave the yolk, and sometimes the white, at least partially liquid and raw. These eggs are commonly served in egg cups, where the top of the egg is cut off with a knife. Eat it straight from the shell with some buttered toast for dipping! REALNORTHWESTLIVING.COM
