However, it’s also a time to express our gratitude for the wonderful communities that surround us. Our communities play a crucial role in shaping our lives and experiences. They provide us with support, friendship, and a sense of belonging that is invaluable, especially during the holidays. Being grateful for our community is an important aspect of celebrating the season. One of the most beautiful aspects of this time of year is the way communities come together to support one another. Rachel Lynn Henley was fierce. But she was also sweet. True to most teenagers, she could have an attitude. She loved deeply. She played soccer but also enjoyed cheerleading. Overall, she was just a normal girl who was faced with something that she shouldn’t have had to face. At just 14, Rachel was diagnosed with a rare soft tissue cancer called synovial sarcoma. Five years later, the cancer would spread from her shoulder to her lung and later to an area by her liver. For seven-and-a-half years she gracefully signed off on treatment plans, lost her hair, endured surgeries, and persevered through chemotherapy and radiation.

During that time, she also invested in those whom she loved. Because of the love and support that surrounded her, she also did a lot of things that teenagers do—except with additional challenges. “I think it gave her a different perspective, what she was going through,” says Mary. “She used that perspective to encourage people to live life with those that they loved.” Which is exactly what Rachel did. In June of 2015, Rachel’s battle ended peacefully. Her legacy endures through the lives of those that she loved and loved her, and also through the regular impact of the Rachel Lynn Henley Foundation. The Rachel Lynn Henley Foundation was not only inspired by its namesake but came as a direct result of Rachel’s living wishes. Team Henley had raised $80,000 toward cancer research throughout Rachel’s treatment in various fundraisers and cancer walks. However, Rachel wondered at

a way that those funds might be used more directly toward programs and research areas that she felt lacked in support. She wanted to fund research and programs that directly impact pediatric and young adult care, channeling resources to help others in a way that her experiences inspired her. Rachel knew that she was supported and wanted to provide a means for others to experience that same support. Now after her death, Rachel’s family and friends volunteer to fulfill her wishes. The funds raised through the Rachel Lynn Henley Foundation are primarily focused on building joy, bringing rest, providing for practical needs and creating a sense of normalcy. The foundation puts smiles on individuals experiencing pediatric care for cancer and provides resources that insurance does not cover. Lastly, the foundation funds very specific and intentional pediatric research. Through the Rachel’s Hugs Program, approximately $1,000 (or more) is allocated toward providing something that lifts the spirits of kids and youth experiencing cancer. Sometimes these gifts are for things that are out of budget because of the expense of care, but not always. The true intent is just to provide something that will

bring joy. Many times the money is used for something practical, like a computer, but just as often is used for whatever brings a smile. Many times the caregivers and hospital staff are included in the gift giving, and it is often one of the few times where they are really able to see their patients smile. Another way in which the Rachel Lynn Henley Foundation funds smiles is to partner with Mary Bridge to provide an annual Christmas Party. Santa Claus and all his favorite people attend with gifts, snacks and crafts. In the summer the foundation again partners with Mary Bridge to hold its Summer Water Blaster Party. The foundation provides all the fun stuff that a kid might need to soak their doctor, caregivers and staff in an epic water battle, and the fun takes care of itself from there! This not only brings some positive experiences between doctor and patient, but it’s just pure joy! Smiles are not only brought by these events but by the funds allocated to needs of the hospital that aren’t funded through insurance. The local hospital simply has to call, and the foundation will do its best to provide for the need. Things like additional refrigerators for patient foods, Xboxes to curb boredom, books, band-aids, thermometers, and playpens for babies. Things that not everyone might think of but needed nonetheless. Aside from the fun and the smiles, a contribution not to be underestimated, the Rachel Lynn Henley Foundation also funds research. Monies are entirely focused on pediatric cancer research, for issues specifically impacting kids, teens and young adults. One such area is that of fertility. Pediatric patients experiencing chemo often lose their ability to reproduce should they choose to do so in their future.

The service that the foundation provides for the community is an act of love. First from Rachel, and then from those who loved her. A doctor at Seattle Children’s works to cryo-preserve ovary tissue, which can be re-transplanted once the cancer is in remission to preserve fertility. Funds also go to researching the specific cancer that Rachel experienced: synovial sarcoma, as well as other cutting-edge research related to pediatric cancers. Any treatments that might aid in the recovery and cure of pediatric cancers are carefully reviewed before they are funded by the Rachel Lynn Henley Foundation in accordance with Rachel’s desires. What’s more, all of this, everything from the Rachel’s Hugs Program to the allocation of funds toward pediatric cancer research, the Summer Water Blaster Party to the books, Xboxes and refrigerators gifted to Mary Bridge, are done as a result of devoted volunteers—often volunteers who knew and loved Rachel. This means that virtually all funds donated go directly to bringing kids smiles and pediatric research. The service that the foundation provides for the community is an act of love. tarting a small business can be intimidating, but Glen and Maxine McCallum have the major touch. In their first two years of business, they have established a loyal customer base and won Whisky Magazine’s Icon of Whisky Award as the Best Single Outlet Retailer in the world. Q. Why whisky? What started your passion for spirits? Glen: My relationship with spirits began in the same way it does for many others: lots of Jack and Coke and Jager Bombs in my youth. Along the way I began trying different whiskies neat and developed a liking for the taste and complexity of the spirit. The first bottle of Scotch whisky I ever purchased was Lagavulin 16 year; not your typical starter bottle for people just getting into the hobby, but I loved it and explored from there. My introduction to truly premium whisky came when I noticed that James Bond prefers The Macallan in the films, so I bought a bottle of the 18 Year Sherry Cask. It blew my mind, and I was hooked after that. The inception of the boutique bottle shop came to me when I visited a similar whisky specialty shop during a trip to Dublin in 2013. It was an unforgettable experience—I remember the employee taking time to explain the nuances of the spirit and pointing out different styles and distilleries. I left that shop with a very expensive bottle of very limited whisky. Opening and operating a similar shop remained a dream of mine throughout the rest of my time in the military. In 2021, when I left the Army, and with Maxine’s encouragement, support and design, we built what is now McCallum & Sons Whisky Co. Q. Your shop carries some pretty pricey bottles. The Camus Cognac Jubilee 5.50 lists for $33,000. What makes a Cognac worthy of this price? Glen: World-class brands that make high-quality spirits often have a range of options from entrylevel availability and pricing to ultra-premium expressions that fetch prices into the thousands. As a whisky or a spirit age in a barrel, typically, there is less of it year after year due to evaporation or “Angel’s Share.” When a distillery finally decides to bottle a whisky that has aged for four or five decades, you can expect that bottle to be more expensive not only because of limited quantity but also because of the time, attention and financial cost that went into the care of aging that cask. Often, when a producer does bottle and sell a spirit of this magnitude, they want it prominently presented in bottles, cases and displays that are considered works of art. Hand-blown crystal decanters, hand-carved wooden cases, solid gold plaques and labels, and luxury leather carrying

cases are just a few examples of the attention, detail and cost that goes into these pieces.

Q. Can you share with our readers a cause dear to your heart?

In the case of the Camus Jubilee 5.50, there is a long list of reasons for a $33,000 price tag. The most important of which, of course, is the Cognac itself. Five separate Cognacs were artfully blended by the Cellar Master to recreate a Cognac from the family’s private reserve that was distilled in 1971. The Cognac comes displayed in a case unlike anything else in the industry: An aeronautic-grade aluminum tube marked with designs to celebrate Camus’ global reach houses a Heritage Paraison decanter and comes complete with tasting glasses. The entire package, to include its name, is riddled with subtle details and nods to the Camus family line and empire. In total, only 50 bottles of this Cognac were produced, and of that only 45 come complete with this display—for the entire world.

Maxine: In 2018, we lost a son to stillbirth. It has been our mission every year to host a diaper drive in his honor and to bring diapering supplies to families in need. One in three families struggle with diaper need, and no federal programs assist with this necessity.

Q. McCallum & Sons recently won Whisky Magazine’s Icon of Whisky Award as Best Single Outlet Retailer in the world, bringing international attention to Tacoma. What did it mean to you to win this award? Maxine: To be recognized as the best of anything is pretty special, but to do it in the first year of business really blew our minds. I always say I never do anything by halves; if I am passionate and commit to something, I will give it my all. So, to see our efforts recognized was pretty incredible. We were newcomers to the industry and sort of jumped in—so to go up against businesses that have been going for over 100 years and win is the best feeling.

Year over year we have collected more and more diapers. This past summer, I contacted Greentrike and suggested a partnership wherein the Children’s Museum would operate a diaper bank to encourage families to take their kids to visit the museum. We started the Monarch Diaper Bank in August and are thrilled by its success and the support from the community. We use the store to put the word out and collect diapers and offer incentives of rare and hard-to-find bottles to encourage our customer base to support. Q. Does your business have special plans for the holiday season? Maxine: The holidays are always a special time for us because we opened our doors in December 2021. It will always remind us of those wild first days in business. We will be collecting diapers and wipes for the diaper bank for the holidays as well as putting some specially allocated bottles on the shelves. We will be doing sample pours every Saturday in December, and have planned some special ticketed events. I

t’s that time of year that we celebrate togetherness with family and friends … and our community. As we’ve officially entered the holiday season, it’s time to celebrate the arrival of Thanksgiving and Christmas outdoors among friends. And what better way to warm up during these cooler days than by participating in Metro Parks Tacoma’s Norpoint Classic and Jingle Bell Run. Both presented by PacificSource Health Plans, the annual Norpoint Classic—Tacoma’s original Thanksgiving fun run—offers participants the option of a 5k or 2-mile chip-timed run. The fun takes place Thanksgiving morning (November 23), from 9am to noon at Center at Norpoint. The course begins and ends at the center’s parking lot and winds through Northeast Tacoma, offering mountain and sound views. The cost to register is $30 per person through November 9 (register by this date to ensure your race shirt by race day) and increases to $40 per person November 12 through 23. Registration can be done online, though day-of registration will be available. Children 5 and younger are free to participate but must be accompanied by a registered adult. Runners, walkers, strollers, and dogs on leash are all welcome. Metro Parks will be partnering with the Northeast Healthy Kids Coalition. Please bring any of the following items to donate on race day: Cup O’ Noodles (beef or chicken), juice boxes or pouches,

mac and cheese microwavable cups, individual fruit cups or applesauce pouches. Don’t forget to sign up for Metro Park Tacoma’s Jingle Bell Run, with this year’s run happening 10am to noon Saturday, December 16. Held at Wright Park, this 3-mile walk/run is a family favorite for all ages, and a wonderful way to spend time outdoors together with friends, family and fellow community members. Pre-registration is required online and is $30 per person through December 1; $35 December 2 through 16. Entry fee includes a head warmer and hot chocolate! Once again, Metro Parks will be gathering donations as they partner with Tacoma Rescue Mission. They are looking to collect blankets, coats, sleeping bags, gloves, warm hats and socks, hand warmers, small flashlights, travel-size deodorant and disposable razors, and warm clothing in general. Race participants are asked to donate what they can. Come out for some fun, while showing your support to those in need, at the 2023 Norpoint Classic and Jingle Bell Run. Simple and Delicious Pumpkin Cheesecake Ingredients For the crust: 1 ½ cups graham cracker crumbs ¼ cup granulated sugar ½ cup unsalted butter, melted

For the filling: 3 (8 oz.) packages cream cheese, softened 1 cup granulated sugar 1 tsp. vanilla extract 3 large eggs 1 cup canned pumpkin puree 1 tsp. ground cinnamon ½ tsp. ground nutmeg ¼ tsp. ground cloves

For the topping: 1 cup sour cream 2 tbsp. granulated sugar 1 tsp. vanilla extract

Method • Preheat your oven to 325°F. • In a mixing bowl, combine the graham cracker crumbs, sugar and melted butter. Press the mixture into the bottom of a 9-inch springform pan to create an even crust. You can use the back of a spoon to press it down firmly. • In a large mixing bowl, beat the cream cheese until smooth using an electric mixer. Add the sugar and vanilla extract, and continue beating until the mixture is well combined and creamy. • Add the eggs one at a time, beating well after each addition. Then, add the pumpkin puree, cinnamon, nutmeg and cloves. Mix until everything is fully incorporated and the batter is smooth. • Pour the filling over the crust in the springform pan. Tap the pan gently on the counter to release any air bubbles. Place the pan in the preheated oven and bake for about 50 to 60 minutes, or until the edges are set but the center is slightly jiggly. • While the cheesecake is baking, prepare the topping by mixing together the sour cream, sugar and vanilla extract in a small bowl. • Once the cheesecake is done baking, remove it from the oven and carefully spread the sour cream topping evenly over the surface. Return to the oven and bake for an additional 10 minutes to set the topping. • Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, before serving. This will allow the flavors to meld and the cheesecake to fully set. • Before serving, carefully remove the sides of the springform pan.
