Daylight saving is here.... and so the age old debate starts... do we like it or not?

I am for daylight saving but only for the afternoons, lol, the mornings are a little hard, especially at the start...haha. However something can definitely be said for finishing work, doing your afternoon chores and still having light outside to go for a walk, swim or just lay about enjoying some quiet time. Whether you are for or against it, we can all agree that daylight saving means summer

time and this one is going to be a scorcher if the current weather conditions are anything to go by.

On the cover. He finally said yes!!! We have been chasing Pete for nearly three years to be our cover star and we finally got him. Being the humble man that he is, he didn't want to do it without his team. Pete Cutcliffe, his partner Jen, along with business partners Darren and Carly, not to mention an incredible team are the masterminds behind two fabulous restaurants right here in Port Macquarie, twotriplefour and Bills. To coincide with our October Food Feature we interviewed Pete to get a little insight into these amazing restaurants.

Hthe proud owners of local restaurants Bills Fishhouse + Bar and twotriplefour by Bills and you have an amazing culinary team that work right beside you. Can you introduce them to our readers and their roles in the businesses?

Hi there! Yes, two local restaurants - Bills Fishhouse + Bar is a family business owned by my parents, my partner Jen and myself (and our little boy Ollie!). Twotriplefour by Bills is a joint enterprise with our business partners Darren and Carly.

We are all just one part of the puzzle though and we are very lucky to have some of the most motivated chefs in the region working in our kitchens and producing some of the most amazing food.

The well-oiled kitchen team at Bills Fishhouse + Bar is managed by Sarah Hill, who has been at the helm for about two years. Sarah has an artistic flair and a passion for pushing the boundaries, delivering

consistently evolving and educated plates of fine dining goodness. She is backed up by an all star crew of chefs and trainee chefs, consisting of Matt, Steve, Madjid, Carson and Elka.

Adam Blanks is the creative force behind the team at twotriplefour by Bills, where technique reigns supreme, and the classics are modernised and elevated all the while showcasing produce that puts the Mid North Coast on the map. Adam has been part of the Bills family from its early days and is ‘Kitchen Dad’ to James and Isaac.

Tell us about your restaurants and where the vision and ideas came from to create two very much loved restaurants. The vision for Bills Fishhouse + Bar was started by Chris and Leasa Harris and a lot of the credit deserves to be awarded to them. We have refined and evolved over the last 4 years, but can only thank them for the incredible starting base of a much loved casual venue where good food and good wine align. As the name of the venue suggests, we specialize in seafood and we pride ourselves on our ability to take humble

ingredients and add in the wow factor. We love to experiment with new techniques as well as pay homage to some old school dishes.

twotriplefour by Bills had been a long time in the making, and as the locals would be aware is the postcode for Port Macquarie. The concept behind the paddock-toplate menu was to showcase as many local farmers and producers from the greater Port Macquarie region. The menus were designed to raise awareness and support the amazing people that live and breathe great produce, with a focus on ethical treatment of animals and vegetables every step of the way.

Currently twotriplefour by Bills is operating on a limited capacity via pop-ups at Bills Fishhouse + Bar (Sundays + Mondays).

Although it has definitely been an interesting period for our team, the focus has very much remained unchanged during this transition. How long have you been in the restaurant “game”, and what do you love about it?

I’ve never worked in any other industry, and, as Coral, our Restaurant Manager at Bills Fishhouse + Bar, loves to remind me, she taught me everything I know at Port Macquarie TAFE 23 years ago.

It’s definitely a love/hate relationship in this game, but typically the good times outweigh the bad. Ultimately, I do have a real love of food and wine and I enjoy sharing this passion with others.

As the name of the venue suggests, we specialise in seafood and we pride ourselves on our ability to take humble ingredients and add in the wow factor.

Can you give us a bit of background about how you got started, and where you worked in the past?

I started my apprenticeship in Port Macquarie when I was 16, whilst still in school. I went to school by day, and worked nights and weekends to make up my hours. Once qualified, I moved to the big smoke and spent time working through french bistros, hatted restaurants, five star hotels, wine bars, breweries and gastro pubs with a short training excursion to London to train with Jamie Oliver. With the experience under my belt, it was time to move home to start a family and “have an easier life” - at least that was the plan…

What are the biggest changes you have seen in the hospitality industry and how do you maintain such high levels of customer satisfaction across your two restaurants?

The entire world has changed over the last few years, and with that the hospitality industry has taken a beating. There has been an enormous skill set shortage brought on by a multitude of factors. Thankfully we are finally seeing things return to some form of normal in that regard. Within our businesses, I can’t think of a single person on the team who shies away from hard work and everyone involved in both businesses has such an essential role. The respect runs deep, for and from

highlights over the years; however, most recently, I’m proud of the way we have worked and persevered through the last few years. We have been forced to pivot and shift direction too many times to keep count, but somehow we’ve bounced back stronger each time. The adaptability and mutual support we’ve seen within our team has been incredible and it

has definitely helped drive up the personal energy levels time and time again. Also, the support we’ve received from our community during this latest fork in the road has been overwhelming and we would love to acknowledge the kindness of Paul, Helen and the incredible team at Mansfield Estate, Steve

and his teams at Wicked Elf and Long Point Winery, Scott and Co at Port Fresh Seafood, Stew and the gang at Doppio or Nothing Espresso and Pete at Port Tree Fella. Many others could be mentioned, but we can’t bypass our bridal couples, many of whom allowed us to still be a part of their special days in spite of the recent upheaval.

Can you discuss any exciting projects or plans your business has for the future, such as renovations, expansions, or new

offerings?

As we all know in Port Macquarie it’s extremely hard to keep a secret, and we know a lot of our regular customers have been betting on where we would end up. Saying that, we are excited to begin work on a new home for twotriplefour by Bills. To say we are grateful for this new opportunity does not even come close to how we truly feel; but for the lack of better words, we are thankful and we look forward to sharing our new space with everyone towards the end of the year!

Harmony Haven Festival - tastes, moves and traditions, is a free multicultural festival on Saturday 21 October 2023, set in the grounds of Longworth Park, Laurieton, promising a celebration of regional music, culture, and community.

Featuring a medley of local contributors, attendees can savour the flavours of global cuisine, and immerse themselves in the traditions of far-off lands.

Take a delectable world tour through local multicultural food vendors, including Gulen from ‘Kekik - Turkish Cuisine’ sharing her mother’s traditional Turkish family recipes. Gulen shares her story:

‘From an early age, I spent a lot of time in the kitchen watching her, asking lots of questions and helping prepare meals. I remember making my first meal, a spinach and feta pastry. It didn’t turn out that well but we had a lot of fun together and growing up in the kitchen I learnt from my mistakes.

I have always been a good home-cook. I loved cooking for my friends and family. I was born in a small city in the western part of Turkey, (Izmir) where lots of olive oil and fresh vegetables are used in cooking. The cuisine here is full of healthy meals made with olive oil, fresh vegetables, seafood

and of course red meat and chicken. It is basically Mediterranean cuisine. Turkish cuisine is a melting pot of flavours and culinary techniques. Its origins go back to nomadic Turkic tribes who roamed Central Asia. These tribes brought with them their cooking techniques and ingredients, which laid the foundation of Turkish cuisine. With the expansion of the Ottoman Empire, Turkish cuisine was influenced by other nations’ palates and as a result of this, a complex and delightful cuisine has been developed.

Six years ago, when I moved to Australia, I decided to study commercial cookery and become a chef. After a few years of hard work, I became a cook, and then a chef and have worked at different restaurants, cafes and catering companies during and after my training.

When I am not cooking up a Turkish storm I keep myself busy as a certified English/Turkish translator and this way I manage to travel a lot which is something I love to do.

Now I am in my happy place cooking homemade Turkish meals in my food van using my mother’s recipes and cooking comfort food that Turkish people eat at home. I hope you will enjoy my food as much as I do creating it.’

there. It’s the area we live in, we’re so lucky to have the beaches, mountains, rainforests and bush all within minutes of each other. You really don’t have to travel far to find a view that will take your breath away around here and I’m always looking for the next beautiful spot.

Can you share some of your favourite places you’ve photographed and why they stand out for you?

My favourite rainforests to shoot would be the Rawson Falls Walk and Wilson River Reserve, these National Parks are gorgeous and so well protected.

Hi Cody, how did you first become interested in photography, and what drew you to capturing natural landscapes?

I’d say around the time I became a mother, so over 12 years ago now. Time seems to speed up when we’re at our busiest and I’ve always loved capturing the little big moments to look back on. When my girls were younger, we’d bushwalk and adventure around Wauchope in search of creeks and lookouts or even a clearing with regrowth that looked magical at a certain time of the day. Our walks would often turn into a little photo shoot for them and the local scenery and it’s branched out from

Hiking to the top and taking in the view or bushwalking below is amazing but when that mountain comes into sight when I’m out on the road it means I’m close to home and it’s beautiful any time of the day. Do you usually make a plan when it comes to getting your landscape shots or is it more about capturing in the moment for you?

Capturing in the moment for me. Nature is ever changing and unpredictable and I usually find planning beyond a direction and time leads to missed opportunities along the way. Some of my favourite shots are from the side of roads I’ve driven hundreds of times without taking much interest until the weather or season changes it into something that catches my eye.

What equipment and camera gear do you typically use?

My phone for most of my landscapes surprisingly. I have a Samsung Ultra s21 that’s a few years old now and it’s always in my pocket so when I head out sometimes I’ll only take my charger, haha. My phone has been perfect for those moments that I’d miss collecting equipment but my Sony a3000 has made it out on most hikes too, It’s a lightweight affordable little unit that I’m comfortable pointing and shooting with when out and about. How would you describe your unique style, and are there recurring themes in your photography?

I’m self-taught, so my style has come about naturally over the years but I can’t really name it. We all have our own way of seeing things and many people know my photos at a glance whether it’s nature or family portraits, so I’d say it’s unique. I try to capture a little moment of peace through my photography and I think that comes through. I’m always waiting for that ‘Ahhh’ moment when shooting my landscapes to share with people and to also revisit myself and I tend to find beauty anywhere I go to relax. I’m constantly snapping away while I’m at the beach with my girls or deep in the trees somewhere wandering around, so those scenes are frequently popping up along with the last light of the day somewhere pretty.

Post-processing is an integral part of digital photography. Can you tell us about the process you use to enhance and edit your landscape photos while maintaining their natural beauty?

Most of my edits are just manual light balancing depending on where I shoot and when. With most of my landscapes being taken on my phone I’ll occasionally reach for a filter for warmth or a certain feel but other than that a simple crop or sharpening. I’m currently learning the ropes of Lightroom at the moment and the ease of the presets and other effects has me excited about my future work.

Do you have a favourite time of day or location for taking photos?

I love the afternoons; you can’t beat that golden hour, but I need the whole day to get all the shots I want to take. I rely on the midday sun when I’m in dense rainforests trying to capture the natural beauty of it without having to make any adjustments and the stillness and soft light of the early morning is a great time to shoot before things get too busy.

You have captured quite a diverse range of landscapes, are you generally a pretty outdoorsy person? Do you usually spend a lot of time travelling or out in nature?

I’d much rather be outside than in. If I have a day freed up I’ll usually pick a direction and head that way with a bottle of water and snacks to check out the sights. Sometimes a trip up the road turns into a six hour adventure or a drive to Comboyne somehow turns into an overnight stay in Nowendoc. I just head out to where I think might be pretty and enjoy the whole journey because our area is that beautiful.

Has photography ever been more than a hobby for you? Do you ever sell prints or exhibit your work? Or do you have plans for this in the future?

I’ve occasionally sold prints to people who have approached me, but I’ve mostly shared what I love doing to show off the diversity of nature and the incredible place we live in so people can get out there and enjoy it for themselves. I’ve recently turned my passion into a profession with Coda Road Photography, it’s a work in progress and will focus more on capturing moments for families and friends in our beautiful surrounds. I’m really excited to see where it takes me. Thanks Cody.

It’s been a busy 12 months, and we are excited to announce that Self Seen has expanded! We now have a second location up and running at Rainbow Beach Bonny Hills. Rob Tilling and Greg Clarke have teamed up to offer the men of our community another option to come Sunday mornings at 7am. It’s the same program as we do at Shelley Beach, just another location for those to get to who live further south. Another big game changer for Self Seen has been the addition of John Spokes to our group. John is now employed by Self Seen on a contract basis so we have an actual Mental Health professional on call to triage and assist any of our men who are struggling. As a referral service we advise our men to see their GP, get on a mental health plan which then allows them to access a trained professional and chat through their issues. Unfortunately this process can take months, especially getting in to see a psych. John helps us by providing immediate and short term professional support to our men whilst they navigate this process.

We’re also stoked to represent Self Seen and be part of the Mental Health Matters segment on Strawny’s Brekky Show every Tuesday alongside Lilly from The Millennial Psych. This has been great to be able to get mental wellness on a huge platform via Triple M. What has

been your most rewarding take away for what you have created with Self Seen?

There are so many positives that have come from creating this space that it’s hard to say one specific thing has been the most rewarding. But certainly some of the ones at the top of the list for Greg and I are seeing new men each and every week take the simple step of coming to a Sunday morning BBQ and walk, or joining a men’s circle, and feeling a weight lifted off their shoulders and that they have some true support. The other thing would be seeing the growth in our leadership team by having members step up and volunteer their time to ensure we can maintain this service to our community now and into the future. A couple of guys to mention here are Thom Klein and Josh Hunter. These guys have helped immensely over

the past 12 months and we wouldn’t have achieved what we have without them. There are also a lot of members who have stepped up to do weekly shopping for our BBQ’s or cook a BBQ and all these little things help.

You won the Community Impact Award this year at the Local Business Awards, tell us what that meant to you?

Obviously we don’t do this to win awards but as an organisation it’s very humbling to win this alongside the Hastings Council Community Group of the Year. October is Mental Health Month. What events will Self Seen be holding this month and how can our readers support these events?

- The annual Mental Health Matters Luncheon at Banks Cafe is on October 6th. Hosted and sponsored by our partners Elders Lifestyle Group and Ideal Financial as well as Miedecke Motors and Camp Jordans who are also sponsoring the event. What are Self Seen working towards at the moment and how are you achieving this.

To tell you the truth we are just taking it one day at a time. We all have full time jobs, businesses and families so there isn’t enough time in the day, hahah. But ultimately our goal doesn’t change, we will continue to give hope through our spaces, events, training and through our counsellor.

We would love to continue to expand through the wider communities.

One day hopefully with the right help and funding we can create something amazing for our youth. The vision is there, we just need the manpower and funding.

If we were to catch up again in another 12 months what would you like to be telling us then about Self Seen?

Our goal doesn’t change. We strive to create hope for our men in all our programs. We are nothing without these courageous men showing up every week sending a positive ripple out to the world, so whatever the next 12 months will bring I can guarantee it will be special.

PLAYERS THEATRE

The hilarious comedy musical Me and My Girl opens at Players Theatre Port Macquarie for four weekends from Friday 27 October 2023.

Set in the 1930’s over one long weekend, it is “The rags to riches in tight breeches” story of Bill Snibson a cockney who inherits an Earldom. To receive his inheritance, there are conditions set by Sir John and the Duchess that Bill has to meet. This includes leaving his cockney girlfriend Sally in order to gain the fortune. Bill refuses to accept the title if he cannot keep Sally as his girl and so starts the comical conflict between the upper class and the lower class. Stephen Fry’s revised book brings together this comical story supported by the nostalgic sound of Noel Gay’s music.

We asked the show’s director Adrian Davis to tell us a bit more about it. “I was fortunate to be in two different versions of this show in the UK, so I’m bringing it alive for local audiences. It is a very funny love story entwined with cheeky comedy and a clash of the classes between the lower working class and the aristocrats. The show was revised in 1985 and starred Robert Lyndsay and Emma Thompson. You could describe it as like the Downton Abbey TV series but to music and comedy”. Our version, features the talented Lachan

Fardy who plays Bill (picture) and new to our local theatre circuit is Zoe Yalouris a classically trained mezzo soprano who takes up the role of Sally. The pair are strongly supported by ‘The Family’ a group of upper class principals, colourful characters and an energetic ensemble of servants, guests, and cockneys. Thirteen local musicians contribute to the production, conducted by Sim Berry. It’s looking to be a fun couple of hours of live musical theatre. Can you start by telling us a bit about yourself and your journey as an artist? How did you get started in the world of art?

I first picked up the pencil at the age of 2. Supposedly, “Art” was the first word I ever wrote! I was the kid who would ruin every single marker or pencil in class, because I’d press it so hard into the paper you’d think I was trying to kill it, but art was my craze. Mum always tells this story about how I apparently drew, (scribbled), an almost perfect emu at just 2 years old, but I honestly think she’s exaggerating. You’d always find me drawing somewhere. I remember the piles of printer paper I’d pinch from my parents’ office, and the countless scribbles I’d replace it with. Our family home became its own art gallery. Mum and I would dedicate a specific day every week or so to take down and replace the walls with another 30 scribbles, on pinched printer paper! I had already won my first competition by the time I hit 7, and had begun competing yearly in different art shows in my area. I was lucky to be brought up in a place with so much opportunity to create at such a young age, I think it really gave me a head start. Growing older the challenges of life

got in the way and for a long time I lost my spark and my motivation to create. Ultimately those negatives still inspired ideas and creativity, but it took leaving multiple toxic environments to find the motivation to actually put my inspiration to use.

What mediums and styles of art do you primarily work with, and why do they resonate with you?

I primarily work in graphite portraiture. It’s been my forte since I was very young, and I find I can produce higher quality pieces with it. Shading, blending and contrast, are much easier to achieve. I initially started with graphite about 11 years ago and I took classes in the Hawkesbury for a couple years before moving to Port Macquarie. My teacher was fantastic and I competed in multiple shows and events including the Sydney Royal Easter Show, where I placed 1st at 12 years old in 2017.

I’m a little disadvantaged though as graphite has no colour, but watercolours are an absolutely beautiful alternative. I love to combine them with coloured pencils or fineline inks and there’s

plenty of room to get creative with colours and coupling the two makes it easier to refine smaller details.

Many artists find inspiration in various places. What are some of the key sources of inspiration for your art?

Inspiration in my case flows from emotion; heavily influenced by music, the outdoors, and day-to-day life. There’s a lot of beauty in the natural world. Our plants and animals are so unique, but undoubtedly beautiful. There’s countless creatures that amaze me beyond belief, and to an artist that beauty is a gateway to infinite inspiration. The intricate curl of a fern, the glow of phosphorescence. These things make us feel an emotional response. Awe, love, curiosity.. any emotion felt strong enough will end up on a page, whether that is positive or negative. For example, feelings of hope or breaking free inspire artworks of colour; unshackled explosions of abstract hues, and free formed shapes and lines. I guess in the end it’s how we envision that emotion that inspires what we produce on paper. Art is a form of emotional expression without the necessity for words or an explanation.

Can you share a bit about your creative process? How do you typically approach a new art project or piece?

Well first off I’ll need plenty of previously explained inspiration. I usually have a general vision in my head of what I’d like to produce, something that’ll randomly pop into my mind that I absolutely cannot avoid. It’s usually caused by a random song, quote or something beautiful I took a photo of. Choosing my media; whether that be graphite, inks, etc, is based entirely on the vibe of that vision and how I perceive that emotionally. Colour is something I’m not always fond of, but am trying to introduce into my work a lot more. From then on it’s smooth sailing. I have about 20 different Spotify playlists to pick from and following that, it’s dedicating a couple hours a night to creating something I love. Small pieces, depending on style and size can take under an hour to produce. Larger or more detailed works often take 10-12 hours throughout

the span of multiple days or weeks depending on how busy I am.

The art world can be competitive and challenging to navigate. What have been some of the biggest challenges you've faced as a young artist, and how did you overcome them?

My biggest challenge has been motivation for as long as I can remember, combined with issues on social media. To reach a

large audience on Instagram, Facebook, etc, it’s recommended that creators publish multiple posts a week. For me to be able to reach more people (thus future clients / sales), I should technically be posting at least once a week to start with. However, with each piece generally taking me 8+ hrs, while juggling the responsibilities of life outside of that, it’s almost impossible to produce enough work to keep a steady flow of engagement on social media.

Finding clients is purely through social networking or word of mouth, so it’s tough keeping sales flowing. I haven’t entirely overcome this issue, but with a new series in production

I’m feeling much better prepared to cope with it. I’m feeling refreshed! Motivation likes to run out every now and then. Sometimes it’s better to just wait it out, find your spark again; than trying to force yourself to produce an artwork of lesser standard in your own eyes.

Are there any artists, past or present, who have had a significant influence on your work or artistic philosophy?

Thinking back I never really had any favourite artists all those years ago. I didn’t really connect, nor feel influenced or inspired by the many famous artists I was learning about in primary school. Visiting my grandmother in Coffs was always an opportunity to create. though. She’s an artist herself; no she isn’t famous, but she’s always been skilled in her art. Little me used to paint with her whenever the family could visit and I definitely took a lot of inspiration from her as a kid! Together we’d sit in

our own little works of art, and I’d listen to her stories of the latest brush turkey, possum or tree snake that broke in. Recently though I’ve found interest in artists such as Konstantin Korobov, Jonna Hyttinen, Emerald Barkley and Erik Sherman. They have very unique, but in my opinion gorgeous art styles!

What do you hope viewers take away from your work or feel when they engage with it?

My only hopes are that my pieces can evoke a feeling of contentment. A positive, happy reflection, open to the viewer’s thought and interpretation - the stories behind my works are open for you to build on! Create your own backstory. I’d also like to hope any young artists can view my pieces and come away with plenty of inspiration themselves. Inspiration to create their own beautiful works of art and share the creativity.

Looking ahead, what are your goals and aspirations as an artist? Where do you see your artistic journey taking you in the future?

Looking to the future, I hope to progress

further in skill and reach a wider community of art lovers. Inspire other young or new artists to create for the sake of creatingexpressing themselves. Not to be perfect, but to trust in the emotional journey itself. Art isn’t necessarily about the destination, but more the process you took in reaching it. I’ve created a business in commission work (and other sales), and am slowly trying to get myself further out there, pushing my boundaries! I dream to travel the world one day; to visit famous artworks trapped in time and see the places I take inspiration from with my own eyes. If I can build my business to a higher popularity, my sales will go towards achieving that dream. Is there a particular project or upcoming exhibition you'd like to share with our readers?

I’ve recently started a project dabbling into the cultures of various countries. Mongolia, India, Saudi Arabia, Australia, Kazakhstan, Africa Türkiye, and more! My vision is to create a series of large portraits both greyscale and coloured, expressing connections to their country and animals. It’s only very new, but I’ve made progress on my first piece! A Kusbergi (or Kazakh) Eagle Hunter. I’m super excited to see how these turn out! Possibly even open the opportunity to my first show. Thanks Bethany.

Congratulations Andrew on the new Lexus and Toyota dealership. It must be such a relief to be so close to completion.

Yes – it’s hard to believe that we’re now in the final months of this major project! It has been impressive to see the progress made by everyone involved since the site preparation commenced a little over 12 months ago.

The Plowright family dealership has been in Port Macquarie for over 36 years - tell us what was behind the move to a new location.

With steady growth over the years, we found ourselves in need of more workshop space, more vehicle and parts storage, along with a fresh showroom. With two large sites, we were spoiled for options – whether to

renovate and extend our Toyota facility, or rebuild at our Lexus site. Our region is well established as a growth hub and this population growth has been accelerated over the last few years. With careful consideration, the overwhelmingly attractive choice was to build a new complex. It also presented great options for the future use of our existing dealership location. What are your plans for the space you currently are on?

We’re looking to lease the property through Commercial Collective. Our Toyota space at 10 Hastings River Drive is around 2 acres in size, so whilst we have been bursting at the seams, it provides an

opportunity for one or more businesses needing plenty of space. With a several buildings on such a large area, the site offers a great degree of leasing flexibility.

What are the customer benefits with your new location?

We provide a huge range of motoring solutions with our Toyota and Lexus brands, from our service and parts business to our new and pre-owned vehicles sales. Collaboration from everyone throughout the dealership has been central to our growth. The opportunity to help customers with any of their needs from the one location offers real convenience.

Tell us about your timeline for moving into the new location and how you will still be helping customers during this time?

Whilst the construction phase is now complete, we still have work to do. There’s finalising the interior furnishings, fitting out two large workshops, installing vehicle chargers and of course our new signage. We hope to be operational at the new dealership over the summer. Can you tell us about the Hastings Valley Open Art Prize for 2023? Where will the show be held and what can artists and art enthusiasts expect from this year's event?

The Hastings Valley Open Art Prize is now in its second year. COVID prevented opportunities for artists, but we are back and very excited about our new look. The major art prize, valued at $2,000, kindly donated by Coastline Credit Union is a great result. The exhibition is strongly supported by Port City Bowling Club who have offered a great venue for the exhibition. This year’s judge is a Sydney based artist, Jane Wray. Jane is highly experienced in the arts and she will be challenged with such a high standard of creativity. Art lovers and collectors will be impressed with the quality and variation in this year’s entries.

Who is the event open to and how many artists are expected to participate?

This exhibition is open to local artists and beyond. It is wonderful to offer this

experience to all artists to assist in promoting a great variation of subject and technique to our community. This year, we have 83 entries, with a total of 163 works. Artists will present 2 of their best works and next year, we hope to increase that due to a larger space offered, so, we are growing!

Are there any specific themes or categories for artists to explore in their submissions this year, or any requirements around the type of pieces that can be submitted?

There is no theme for this show, however, artists are offered a variety of sections to enter different mediums; oil/acrylic, any water based medium, pastel/drawing and mixed medium. Each section carries equal prize money, thanks to the wonderful support of our sponsors. Works are to be no larger than one square metre.

How do you envision the Hastings Valley Open Art Prize contributing to the local art community and promoting artistic talent in the region?

This year, we have 83 entries, with a total of 163 works. Artists will present 2 of their best works and next year, we hope to increase that due to a larger space offered.

Our mission is to create a cultural experience for artists, community, visitors to our region and of course our young people. Our marketing invites all to be part of this experience. Our People’s Choice Award enables viewers to select their favourite work in the show. The event is free which gives an opportunity for everyone to attend. Demonstrations will be given by myself on the 1st October at 11am and Brian Barker on the 4th October at 11.30 after the Kids’ Shake and Paint. Bernice Daher and myself have conducted demonstrations already at the Coastline Credit Union, which was a great opportunity to talk with all age groups

Could you share some insights into the selection process for the art prize?

Four sections of entry creates a big job for the judge. The criteria for judging will be based on the artist’s understanding of the media and how creatively it can be used to present a unique piece. Technical skills and original concepts are also as important. An experienced judge such as Jane, will confine the works that satisfy and award accordingly. The major award will then be chosen as the Best In Show.

The society is 40 years old this year, how will you be celebrating this milestone?

Yes. the society has celebrated 40 years of age recently. Some of the original members were in attendance to discuss the history, the yarns and the journey and an exotic afternoon tea was enjoyed by all. Those years have been based on a love of art making, camaraderie and even travelling together to create more subjects to paint. Those bonds are still very

much present today with many of our 180 members working hard to present works at our beautiful gallery in William St. We are also very much supported by The Glasshouse with a biennial art exhibition.

Will there be art for sale as part of the exhibition event this year?

All works will be offered for sale in the exhibition and the Society’s commission supports the Hastings Education Programme as we are a not-for-profit association.

With the event growing each year, what do you hope will continue, and what would you like to see incorporated into next year's show and beyond?

This event is certainly growing and next year, after amazing club renovations, we will be located in a larger space to deliver our best again. The number of artists will increase and perhaps the prize pool. All of the above helps us to become the best artists we can be, have the best relationships with sponsors and especially our community. And lastly, I leave you with a quote from John McDonald, (Sydney Morning Herald, Sept.16th) regarding one of Australia’s best, Elisabeth Cummings. “If happiness could be stored in a jar and spread on a canvas, this is the way it might look.”

How do you and your team maintain such high levels with your menu, food and wine?

For me personally, it just comes down to how much I really love a quality dining/drinking experience, life is too short for sub-standard food and wine. Indeed, even on a budget, and on any ordinary day, with a little bit of TLC, any meal can be a little bit special and simply delicious.

When it comes to our restaurant team and delivery of our service and product there, we are all on the same page when it comes to achieving an impeccable standard of consistency for each and every diner. This starts with sourcing premium ingredients coupled with our obsession for fine wines and ends with the sheer talent and passion of our team that our diners experience at their table.

What do you think is the most important part of running a restaurant?

The glue that holds it all together is most definitely how you manage the human element. It really helps to love bringing people together. It’s called hospitality for a reason. When you genuinely relish interacting with your diners, your suppliers and most importantly your team, you’ve got the best recipe for success.

You can have the world’s best chef plating up in the kitchen, but if you can’t deliver to the table without creating an inviting and organised atmosphere first, it won’t work.

How do you select and source ingredients for your dishes?

We look for producers offering the highest quality product, as well as consistency of supply, which is extremely important. We always strive to use local ingredients and seasonal produce. Suppliers like Ken Little Fruit and Veg and Port Fresh Seafoods deliver the most delicious foundations of our menu every day, and go out of their way to source anything and everything our creative kitchen team requires.

What is your restaurant's most popular dish or signature dish?

Many would say it would have to be our Glacier 51 Toothfish, or perhaps it is our longest standing menu item – the oyster flight? A couple of contenders that we would struggle to remove from the menu…

Can you recommend any must-try dishes or drinks for first-time visitors?

At present, our Moreton Bay Bug (1st course), Tajima Wagyu (2nd course) and finishing off with the Japanese Pepper Gelato (3rd course),

How far in advance should reservations be made, especially for peak dining times?

We recommend planning and booking a visit as early as possible, especially over the peak summer holiday season between Christmas

Eve and the second week of January. We only accept bookings via our website, and all availability is in real time so you can instantly and easily book in at any time before the start of service. Tell us about Flare and how you came about opening the restaurant? It had always been a dream of James’ to own a cafe or restaurant where he could share his enthusiasm for good food and brews (both alcoholic and caffeinated). In 2021 he got the opportunity to make this a reality and with the support of Elissa and John, ran with it! Lockdowns were lifted and the hospitality industry opened back up so timing was perfect and we were able to open to a new climate of people able to dine out again.

Can you introduce us to your team?

John Roods is our Head Chef and has been in the industry for 35 years in many venues across the Hastings. John is loving having the creative ability to cook what we want to eat.

James is our all rounder and has held almost

every position in the hospitality industry. Having grown up working in kitchens with his Dad (John), James has lots of experience crafting cocktails behind the bar or working on delicious specials.  Elissa, James’ wife, has previously worked in cafes and reception and is always happy to greet our customers, both new and regular. Bec is our apprentice who started with John at a previous venue then jumped at the opportunity to come and join us here and continue to learn and develop into a great chef. Keep an eye out for Bec’s creations. What can our readers expect when they dine at Flare? Great food and value for money in a relaxed family run restaurant.

We always have new dishes to try, ever changing specials, cocktails and rotating beer taps featuring local independent breweries. Where do menu ideas come from and what do you consider when putting dishes together?

A number of items were created during lockdown when John and James had time on their hands, namely the low and slow smoking. We pride ourselves on having something for everyone where you can have a cheeseburger or some of the best wagyu steak in the country.

Some stages in life seem to go on forever. When you’re in the midst of it, it seems to be nigh impossible to imagine a different scenario, another way of being, to what is right in the here and now.

As they say, often in relation to caring for small children, “the days are long and the years are short”.

Indeed when you are stuck inside a loop, be it a pleasant or unpleasant one, some days seem to drag on with what’s so familiar and humdrum. Same places, same faces, same stuff, or a variation of, to contend with each and every day. Ho hum…you may sigh and look around for something else, anything really to shake things up a bit.

But careful what you wish for. Sure change is as good as a holiday and all that, but when you think about it there’s a certain beauty in the practised movements of the everyday.

Routine is good for children, animals and turns out for adults as well. With change, chaos often ensues and that, well…sometimes works in our favour and sometimes not.

When it comes to restaurants, as in all successful business models – if it ain’t broke, don’t fix it. The relentless daily routine of a restaurant with its many systems and processes

– ie setting up, packing down, polishing glasses, prepping ingredients, cleaning and yes, even more cleaning, is humdrum yes, but ever so necessary in creating what is magic, within the every day.

Somehow, the routine itself and the lack of change is the very thing that creates true beauty. In this way, we can truly refine and master our art. We can perfect what is imperfect, iron out all flaws so a seamless experience can emerge for our guests.

Of course everything, good or bad will come to an end. Often we only take the time to reflect in those in between times, whilst everything is already in flux – or otherwise only after change has occurred, in retrospect. Maybe we should more actively seek time to appreciate the everyday, the familiar path we are treading right here and now, even though it is sometimes yawn inducing and even if sometimes we just cannot see any light at all at the end of tunnel.

Because in the flow of everyday life, even

when things seem to be just the same, we are still changing. True creativity often stems from those duller moments. For example when in the kitchen a chef may just be playing around with some ingredients and somehow just happen to chance upon an amazing combination. Or it’s not uncommon to make the most wonderful breakthrough on a perplexing problem when you’re doing that most mundane drive to work on the most ordinary of days.

So there you have it… yes as was said before - a change is as good as a holiday, but is a holiday from change just as good? Bit by bit everything around us, including ourselves is changing by increment regardless – we are constantly in flux and morphing into tomorrow’s version of ourselves. This will happen with or without those big things that life tends to throw at us when we least expect it, so why not give wishing those ordinary days away a rest and enjoy them for what they are – an opportunity to live, grow, learn and appreciate….the ordinary and the extraordinary.

Congratulations on Beera, please tell us what inspired you to open the restaurant. Love for hospitality and passion for food! Can you tell me about the type of cuisine and menu you offer?

Keeping in mind the location of our restaurant and the demographics of the area, we wanted to create a menu that meets the needs and tastes of the local population. While keeping some part of the menu unique with a variety of seafood and pasta, we also have everyone’s favourites from the grill - scotch & sirloin fillet, chicken schnitzel, pork belly and also pizzas and burgers.

How did you come up with the restaurant’s name and branding?

We are big BEER lovers and wanted to have a name that could stand for BEER O’Clock at BEERA!!!!

How important is sustainability and sourcing locally to your restaurant?

Sustainability is at the core of our business. We believe it improves the quality of our lives, protects our ecosystem and preserves natural resources for future generation. At BEERA, we aim to minimise waste and cut down on using single use plastic.

produce locally to give back to our community and be there for each other...because that’s the best way to live! Please introduce us to your team and their roles?

We have a passionate team who absolutely love what they do and it reflects in their work.

How long has your head chef been in the industry for and what are his favourite ingredients to cook with and why?

Philip has been in the industry for over 13 years now. He studied Culinary Arts in Dublin, back in 2007 and decided to move to Australia in 2010. Since then he’s been working his

magic on scrumptious meals.

He loves to cook pasta, steaks and seafood. His favourite dish from the menu is Paella Risotto and Honey Mustard Chicken from the Grill. You have a very impressive cocktail list, tell us about it?

Treace, with Rogan’s assistance, is always looking to offer a range of classics and traditional drinks from around the world using high quality ingredients. All our syrups used in mocktails and cocktails are prepared in-house and we prefer using fresh produce over prepacked items resulting in the most delicious drinks.

What can customers expect when they dine in with you?

The restaurant features an open kitchen, allowing guests to witness our talented chef’s crafting culinary masterpieces with finesse. A chic and vibrant bar area beckons guests to unwind and indulge in handcrafted cocktails, Coopers tap beers, and an impressive selection of wines and spirits.

Murphy Dawkins is a promising young skater who has been selected for the first ever North Coast Academy of Sport Skate Team. He’s recently back from a skate trip to the USA and has been killing it in local comps as well.

Hi Murphy. Can you tell us about how long you’ve been skating for and what got you started?

I started skating just over 3 years ago. I started soon after attending a school holiday skate camp with a mate and I learnt how to drop in, from then on, I fell in love with it. During COVID, I had a mini ramp

at home so I spent hours on that. What do you love most about skating?

Landing new tricks and skating with friends and cool people. The skate community is very accepting and inclusive pretty much everywhere you go.

You’ve become quite an accomplished skater, can you tell us about what sort of training you have put in to get to this level?

Hours of practice (which I love) and skating every day has paid off. I have a couple of lessons a week with my skate coach Byron Willis and then practice as much as I can. The North Coast Academy of Sport has put together their first skate team, can you tell us about how you came to be part of the team?

I heard about the NCAS Skate Team through the Mid North Coast Skate Team which I am a member of. I had to submit an application and attend a skate comp where the selectors were watching the kids who had applied for the skate team. One of the eligibility criterias was to demonstrate a dedication to improving performance which appealed to me. Twenty kids applied for the team with eight athletes gaining entry to the program. What does being part of the team involve? Do you train and compete together often?

We train once a month as a team across Northern NSW skateparks with our Head Coach Bevin Newton and Assistant Coach Jimmy Waghorn. Also, once a week we attend skate specific strength and conditioning training plus balance and coordination training with ACE Performance. We have spent time discussing nutrition and sports psychology during the program also. The whole team recently competed in Coffs Harbour at Kobbas Skate Fest, it was great to have encouragement from the team and support each other.

Can you tell us about some of the other members of the team?

There’s a mix of boys and girls from the Mid North Coast and Northern Rivers that have become great friends. It’s always fun to get together and skate.

What comps have you been part of recently and how did they go?

Earlier in the year

I came first in the under-12’s division of Street and Bowl in Ride the Wave and more recently I made the finals in both under-12’s Bowl-A-Nana (Bowl) 2023 Competition and the Koby Mitchell Classic (Street) competition at Kobbas Skate Fest.

You recently went on a trip to the USA to skate, can you tell us about it?

I was lucky enough to have my dream come true and skate some of the most famous skate parks in California including the famous Venice Beach Skate Park and in New York the Les Coleman and Pier 62 Skate Parks amongst others.

I also attended Woodward Skate Summer Camp in Pennsylvania with 7 of my mates. It is 115,000 square feet of skatepark all on one campus. The camp also promotes the “Woodward Way” promoting kindness, sustainably, mindfulness and physical and mental health. It was the best week of my life, skating 11 hours a day with mates. A highlight was skating the 20 Foot Mega Ramp, but it was all amazing. What are some of your hopes or goals for your future in the sport?

To keep pushing myself, have fun and hopefully one day to go to the Olympics. Thanks Murphy.

LET’S CHAT ABOUT THE CONNECTION BETWEEN EXERCISE AND MENTAL HEALTH

Recently I’m noticing that many people are very stressed. Whilst stress can play an important role in our life as it can keep us safe and keep us on our game, when stress is constant and chronic it can cause havoc on our mental well-being. This usually also leads to a lack of motivation resulting in the perfect storm mixing high stress and lack of movement. So how exactly can we break the cycle when motivation and energy are so low?

One of the paradoxes of exercise is that it requires motivation to start, but it’s also a potent source of motivation itself. Many individuals find that engaging in regular physical activity increases their overall motivation in life. Here’s how it works:

Achievement. Setting and reaching fitness goals, whether it’s running a certain distance or lifting heavier weights, fosters a sense of accomplishment. This achievement mindset can often drive you to pursue personal and professional goals with renewed vigour.

Routine. Exercise can provide structure to your day. When you commit to a workout routine, it instils a sense of discipline that can positively affect your approach to daily tasks and responsibilities.

Stress Reduction. Exercise is an excellent stress reliever. When you’re less stressed, you’re more likely to tackle challenges and seize opportunities with a positive attitude.

Social Engagement. Joining group fitness classes or sports teams can lead to social connections and a supportive network, which can be motivating in itself. The camaraderie and accountability of these groups often inspires individuals to stay committed to their fitness routines.

While any form of physical activity can be beneficial for mental health, it’s essential to find one that suits your preferences and lifestyle. Angels Blessing of the

Hi Martie. Could you share with us what Blessing of the Angels is and how it came about?

Blessing of the Angels is a memorial service for babies that were born with their wings. It came about through a support group that met at Port Base Hospital over 20 years ago in relation to having lost a child during pregnancy, or during birth, including where the angels were born with medical issues but didn’t pull through.

How did you come to be involved?

Martie Kuhn has been involved in Blessings of the Angels for a number of years, joining to honour and remember her son Jackson who was born with wings, and to support others who have had similar experiences. The service is held on the 1st Sunday in December at St Thomas Church here in Port Macquarie, and is open to anyone who has experienced losing a baby.

I became involved as I had a still born child, Jackson born 03/04/1999. Through the support group it was felt there was a need for a remembrance service for babies whose lives were short but treasured.

Blessing of the Angels has evolved over the years, can you tell us about some of the rituals you incorporate and what people can expect from the service when they attend?

The Blessing of the Angels is a service that is held on the 1st Sunday in December at St Thomas Church Port Macquarie. During the service the babies names are read out and the parents/grandparents/siblings are invited to light a candle in their angel’s honour and hang an ornament on the Christmas tree. If they have brought a present in memory of their child, they leave it under the Christmas tree and they are distributed through the Salvation Army to those that need assistance during that time. Each year any new names announced through the naming of the angels is then embroidered

How do you feel this service has helped you with your own personal journey?

My child Jackson will always be a part of my family and I feel the service is our way of giving back to those in similar circumstances.

I see the distribution of those presents as a way to help those that are less fortunate than others at that time of year.

What do you hope others might take away from participating?

Knowing that there are other local families and people that have been in similar situations and can understand what they are going through. It’s a way of remembering and honouring your child at this time of year.

You get many different people attend the annual service, could you share with us a little about some of the stories

you’ve heard over the years or the different reasons people have for attending?

The stories and people never cease to amaze me, everyone is different but we are united by the circumstances. We have had older women come to the service to acknowledge the child that they lost so many years ago and may not have even known the sex of the baby as they weren’t told at the time for whatever reason –hospital rules, or just how they did things that long ago. We had an elderly man come one year to celebrate his great grandchild and during the service, he remembered that he and his wife had had a stillborn baby but it was not acknowledged. That baby is now embroidered on the banner as Baby Jones. It’s not only a wonderful way to honour the children families have lost in the community, but also a way to give to those children in

need.

How does the gift giving work and who might benefit from the generosity of those involved in this event?

It is not compulsory, but when sending out the invitation to the Blessing we attach a little request asking if they would like to purchase a gift in memory of their child and it gets donated to those less fortunate. I see it as a twofold process, remembering my angel, and through him, we, (my family) are helping others.

Port Macquarie Tennis club has recently had a new committee formed and has some very experienced tennis professionals who have joined the club and will be offering top notch coaching for our area! We spoke to the new club President Mark Giumelli about plans for the club and local tennis community moving forward.

Hi Mark. Port Macquarie Tennis Club has had some changes to the committee recently, can you tell us about the changes and what this means for the club?

Just a few years ago the club was struggling to form a committee, it was tough times and for a variety of reasons members were looking elsewhere. To their credit a committee was formed at the 11th hour, and they have seen the club through those times, and into a new era. Our AGM in August saw strong numbers nominating for committee positions and

many of those elected have good business minds and plenty to contribute to the club’s future. We are planning for a period of strong growth, both in our membership base and in the quality of the facilities and services we have on offer.

How long have you been a part of the club and what’s your role there?

I first joined the club when I moved to Port 7 years ago, and immediately joined the committee as Treasurer. I had a break from committee duties for a few years, but have rejoined now as President of a strong and committed group. My role as President is to listen to the members, to look forward and

set about implementing some of the plans the club has for the future. I also want to build relationships with local businesses, local members in politics, with our council, and tennis clubs in general. As a united group I believe we can achieve a lot more than as a stand alone club, and I have every intention of supporting those that support us. A key relationship for our club is with Port City Bowling Club, and we have already had positive discussions about working together to improve the facilities in our sporting precinct. There is a tennis professional that is new to Port Macquarie and doing some coaching there, can you tell us about him and his tennis career so far?

There are actually two tennis professionals at Port Macquarie Tennis Club as of January 2024!

Aaron Waters is there now, and Jared Zeeman will be there for the start of the new year. Jared has coached some of the best players in all of Sydney over the last 20 years, and was awarded the Tennis Australia Talent Development Coach honour. He was

also the manager of the 2022 winning Sydney Premier League team, the most prestigious competition in all of NSW.

Aaron has been involved in many tournaments and teams events in the Sydney region over the past few years. Most notable accolades include the prestigious Sydney Premier League winners (2022), Interdistrict Champions (2017, 2019, 2022) where Aaron was both captain of the team and was awarded the Ken Rosewall medal for 2 years in a row (best and fairest of the competition as voted by peers).

Individually Aaron has won numerous events, including the Batemans Bay Open winner (2022, 2023), Rockdale Open winner 2022, and Tennis Macarthur Club Champion 2022.

What coaching will be available with them and what do you think their experience will bring to the club?

There are an array of coaching services with Aaron at present for both juniors and adults of all levels. These include beginner junior hot shots (red, orange and green ball), yellow ball groups and our 2 hour development squad for the more advanced tournament players. Aaron also offers private lessons for both juniors and adults to further their game development.

Aaron has been coaching top level junior players in the Sydney region for the past 6 years and has been a regular hitting partner for world ranked upcoming players such as Jerome Estephan (400 ITF world ranking) and others. His experience, coupled with his playing capabilities, will be an enormous asset for the development of tennis in the Port Macquarie area. Coupled with the experience of Jared we believe we have a coaching group to lead us into the future.

Do you have any particular plans for coaching and the club moving forward?

There will be great efforts to improve the overall experience of all tennis patrons including social comp players, casual hitters, beginners and the more intermediate tournament players. We hope to build this rapport and see tennis grow in the Hastings area. We will also consider alternatives to tennis, including the popular Pickleball.

Can you tell us about some of the players you currently have at the club, is there anyone excelling in the sport at the moment?

The club is catering for players ranging from

4 years of age to some in their 90’s. Without focusing on individual player strength, it is fair to say we cater for all levels and all ages. Our new coaches do have some talented juniors to work with and we look forward to seeing them develop and begin to play competitive tennis both locally and further afield. Our strength is in our diversity and in the opportunity we offer to anyone wanting to participate and improve their tennis and general fitness.

What sort of comps does the club run or participate in?

The club currently runs several comps during the week. These include Monday night singles, Tuesday mixed social competition, Wednesday mixed doubles, Thursday evening ladies and Monday/Thursday morning ladies doubles comp.

There are plans to initiate a junior competition, and also be involved in inter club competitions such as an East vs West Port tournament. We are presently planning and taking nominations for our annual seniors event at the end of October, and also looking to bring back our own club championships as part of the annual calendar of events.

Children’s asthma symptoms & risk factors

Is your child one of the 411,000 Australians under the age of 15 who have asthma? Several factors are associated with the likelihood of

developing asthma in childhood:

• a family history of asthma or allergies;

• premature birth or low birth weight;

• proximity to bushfires, mould, second-hand cigarette smoke.

Did you know that not all children have obvious asthma symptoms? Because of this, all breathing symptoms are worth checking with your doctor, especially:

• a persistent cough • wheezing • stomach “pumping” in and out when they breathe

Having just won a gold medal in the Special Olympics, we chat to Vikki ompson about her passion for ten pin bowling and the wonderful friends she has made on the way.

Hi Vikki, congratulations on your recent success at the Special Olympics!

Can you tell us about your journey in ten-pin bowling and how you got started in the sport?

I started bowling when I was 14 years old. I just tried it for something fun to do and soon realised that I loved it. When I was around 17 years old I played in my first competition and was hooked.

Competing in competitions can be nerve wracking but I try hard to relax and just enjoy the bowling. Keeping it fun is important and being with my friends makes it much easier.

Winning medals at the Special Olympics is a remarkable achievement. What does this accomplishment mean to you personally, and how does it feel to be recognized for your hard work and dedication?

It is a goal that I have been able to achieve

that makes me feel very proud of myself and makes all the hard work feel worthwhile.

Ten-pin bowling is a sport that requires precision and skill. What aspects of the game do you find most challenging, and how have you overcome these challenges to become a medalist?

The hardest part of the game is getting a strike!!! I work on special techniques and train every Friday afternoon. Competing in competitions can be nerve wracking but I try hard to relax and just enjoy the bowling. Keeping it fun is important and being with my friends makes it much easier. Tell us about your favourite memory

from the Special Olympics tournament? Coming first was a huge surprise as I didn’t expect to win. When I heard my name called out it was the best feeling and when I received my medal I couldn’t stop smiling. In addition to the physical aspects of the sport, how has ten-pin bowling positively impacted your life?

I get to meet new people and have made many new friends at the competitions and in training. I have also been to the National tournament in Adelaide so have travelled to places where I would never have travelled without bowling.

The Special Olympics promotes inclusivity and celebrates diversity. What does it mean to you to be a part of such an inclusive and supportive community

of athletes?

Having my friends with me is super important. The fact that everyone can play and is included makes it more fun and creates a real team feeling. It is a safe space and everyone gets on and tries their best. The worst part is when the tournament is over and we all have to go home.

Are there any specific individuals or mentors who have played a significant role in your journey as a ten-pin bowler and an athlete? How have they supported you along the way?

Ralph Mueller was previously my coach and has supported me for many years in my ten pin journey. Even though he no longer coaches me he still provides support and encouragement. There are also many others in the team and the support team who make it possible for us to travel to tournaments and know that everything is taken care of.

Do you have plans to continue to compete? Are there any other sports or activities that you would like to try your hand at in the future?

Absolutely – I love bowling and hope to continue for many years, I may even win some more medals. Bowling is a favourite for me and at this time I do not plan on playing any other sports. I want to spend my time improving and meeting more new people and friends in the bowling world.

A Seniors Hub of Happiness in the

Hastings leads the way.

Imagine a world where everyone flourishes through a sense of connection and belonging. Imagine this world right at your doorstep, right in our own beautiful neighbourhood. We all know the feeling of loneliness, and we all know someone who is suffering from social isolation. Both these issues were concerns long before the 2019/20 bushfires and the COVID-19 pandemic, but unfortunately, they have seen an ongoing increase in subsequent years.

Recent studies have shown that loneliness has become an integral part of our society, with at least one in four Australians feeling or experiencing loneliness. Looking at the cohort of seniors, this number is even higher. They tell us loneliness has been linked to premature death, poor physical and mental health and general dissatisfaction with life. We want to rectify this!

The Omnicare team has been on a mission for several years to combat social isolation within the Hastings, Macleay and Mid Coast communities.

With a broad range of services including dementia day respite centres, meals, home care and home modifications and maintenance, Omnicare enables people to continue to live at home independently for as long as possible. Just like a helpful neighbour.

“Maintaining social interaction has always been a key aspect of our support services. Our passionate team of volunteers and staff are sometimes the only human contact clients have.” Andrea Caldwell, CEO of Omnicare, says.

“Whilst a range of relief measures are available

to community members, they do not specifically address social isolation for seniors.”

In 2022 Omnicare opened its doors to the Seniors Hub at Bain Park Cottage in Wauchope. Thanks to the Black Summer Bushfire Recovery Grants Program, Omnicare built an inclusive space for all seniors to come together, build social connections and feel a sense of belonging. The response so far has been overwhelming with over 100 participants regularly benefitting from daily activities and outings. The attendance is free of charge and has no obligation.

“We have regularly asked participants to complete a wellbeing survey and the results have been outstanding. Over 50% of our seniors hub members felt socially isolated before joining the Hub. The same people now feel a sense of belonging and rate their quality of life as good and very good. All participants told us the Seniors Hub significantly benefitted their wellbeing. Many of them have rediscovered a sense of purpose and have returned to hobbies they had long forgotten about. Others have enjoyed coming out of their ‘comfort zone’ and are now trying and experiencing new things.”

In the heart of Wauchope, Omnicare has not only built a place for seniors to connect and make friends, it has also become an intergenerational space engaging older and younger people together. Thanks to several engaging activities including gardening and Christmas carol singing, these activities have significantly contributed to breaking down age-related silos to building connections they wouldn’t have developed otherwise.

And the mission continues as the Omnicare team is now looking at options to continue post funding period and expanding their Seniors Hub to Port Macquarie. “Our aged population is twice as high as the NSW average. There are many seniors in our community who would benefit from a Seniors Hub in their neighbourhood. It would be great to build a network of local providers, community supporters and movers and shakers, with the goal to end loneliness together. This is our ambition, to bring seniors of all walks of life in our community together.

PUBLIC NOTARY SERVICES

Tasks as simple as proving your identity or signing a document can take on a whole new level of complexity when your documents are not recognised in a foreign jurisdiction. That is where a Public Notary can often assist.

A few months back, I had the honour of being admitted by the Supreme Court of New South Wales as a Public Notary. I am very pleased to now provide Public Notary services to our local community and look forward to assisting those in the community who might need notary services.

What is a Public Notary?

A Notary is essentially an “International Justice of the Peace”. A Notary provides assistance with documentation for use in an overseas jurisdiction. By contrast, documentation for use domestically within Australia can usually be dealt with by a qualified lawyer.

Notaries are appointed by the Supreme Court of New South Wales and must be qualified lawyers of at least 5 years standing who complete the prescribed Notarial Practice Course and are approved by the Legal Profession Admission Board.

What does a Public Notary do?

The most common functions of Notaries within Australia are:

• Authenticating official, government and personal documents and information for use overseas. • Witnessing signatures of individuals to documents and authenticating identity.

• Witnessing Powers of Attorney for use overseas, including from time to time, preparing them. • Certifying true copies of documents for use overseas. • For corporations and businesses, witnessing documents and authenticating status and transactions. • Dealing with documentation for land, property and deceased estates overseas.

A couple of common examples where you will likely require the services of a Public Notary might be:

1. Applying for a job in another country. As part of the application process, your prospective employer will often request that you provide them with notarised copies of your identification, relevant Australian qualifications, and other documents.

2. Your son or daughter wishes to participate in an international school student exchange program in another country. As part of that

process, the overseas school often requires notarised copies of certain identification and other documents to be provided before they will approve the placement.

Once a Public Notary has notarised the documents, many overseas jurisdictions also require the notarised documents to be legalised and authenticated by the appropriate authorities in Australia. In the case of notarised documents for use in a country which is a signatory to the Hague Convention, the further legalisation process is completed by application to the Department of Foreign Affairs and Trade (DFAT) who will affix a further certification onto the notarised document known as an “apostille”. In the case of documents intended to be used in countries who are not signatories to the Hague Convention, a similar process can generally be facilitated through the Australia-based Consulate of that country. We can assist you with that further legalisation process where required.

HI Ashley, congratulations on your recent success at both the Regional Business Awards and the Australian Small Business Champions Awards. Can you tell us about the specific awards you've won and what they mean to you?

Thank you so much. It has certainly been a huge week!

At the Regional Awards, Touchwood Flowers won Excellence in Small Business and I personally won Outstanding Business Leader. Winning Excellence in Small Business was so exciting for our team. It is a true reflection of the dedication and commitment my team have for my shop and our customers.

Being announced as the winner of Outstanding Business Leader came as a huge surprise. The calibre of finalists was nothing short of amazing and being a finalist amongst such incredible women was such

At the Australian Women’s Small Business Champion Awards, we won the Florist Category against 9 other florist finalists from across NSW. All three award wins really reflect the hard work, passion and dedication we have for our industry.

Can you share any insights or tips for aspiring business women who aspire to achieve the same level of success and recognition in their industry?

You have had Touchwood Flowers for such a long time, what is something you have learnt about yourself in this time and what are you still learning when it comes to running a small all business?

I have learnt so much in my 18 years as owner of Touchwood Flowers. I think the biggest thing I have learnt is that I am capable of so much more than I ever imagined. I recently reflected on my journey over the years and realised the stages I have been through. From a young woman going into business with very little knowledge or vision of where the future would take me, to becoming a mother and battling through the baby stages and its challenges, to the crazy time of COVID surrounded by uncertainty,

to now, a more confident and skilled leader with the most fabulous team.

I am learning to embrace all the challenges and opportunities that come my way and to take each one with an open mind. It is easy to stick with what you know, but sometimes you just have to go with it and see where it takes you.

Business is not easy, and I still have so much to learn, but feel that all these stages have helped me develop my skills and grow both as a person and a leader. I now have a much clearer vision and look forward to what the future has to offer.

What’s next for yourself and Touchwood, have you got any more award ceremonies coming up?

Coming off the high of these recent award wins has given myself and the team fresh motivation to continue our pursuit of excellence.

We want to further our knowledge and develop additional ways to become more sustainable. We are also setting new goals and putting plans in place to achieve these. In November we will attend the State Awards in Sydney, so that will be another exciting event… and another fancy dress!!

THE BROKER EFFECT

If you were shopping for a new outfit, would you go into one shop and be happy to be shown one outfit, in one colour at one price? I would guess that the majority of us would like their outfit tailored to them, their body shape and skin tone, as well as at a competitive price. Well, loans aren’t any different. There are a number of different products in the market, with different rates and different features. By going to a broker you have access to diversity of choice and you can be rest assured that you are being recommended a product that is tailored to your needs.

According to the lasted data by Comparator, between April and June 2023 67.2% of all new residential home loans were written by brokers. That’s approximately 7 in 10 homeowners going to a broker for assistance rather then directly into their bank, and this is why:

Brokers are educators in financial literacy. With all the knowledge at our fingertips people can find the home loan journey overwhelming. As a broker it’s up to us to help our clients to make sense of the mountain of information. The more we educate our clients the better off they will be financially. Whether this be to offset their mortgage and save them interest, or to put a plan in place to pay off

their mortgage in a certain time, by building financial knowledge for our clients, they are more likely to succeed and in turn come back to us for additional finance to purchase that next investment property. It’s a win-win. Brokers have the power to turn a cold robotic transaction into a warm and positive experience. Believe it or not, discussing finances and processing applications doesn’t appeal to everyone!! Taking the time to understand the motivation behind a purchase creates a human element of emotion. There are ups and downs throughout the journey and clients often rely on us for emotional support throughout the process. Any other brokers reading this will sympathise with me when I say that I have spent countless hours up in the middle of the night running scenarios through my head of how to get a deal over the line rather then getting much needed z’s.

Convenience and flexibility is a big plus when choosing a broker. Banks are generally open Monday to Friday, 9-5. If you work by this schedule too, it can be hard to find the time to get into the bank in normal business hours. Brokers are generally flexible with appointment times and can come to your workplace or home if it’s more convenient, and who really has the time to shop around to

every bank themselves? Remember the outfit analogy that I started with, well rather then having to sift through 30+ shops for the right outfit, what if you had a shop assistant that you told everything you wanted in an outfit to, and she came back with 3 or 4 options that fit your brief! Same goes for brokers. You tell us what’s important to you and we do all the research to find a product that fits. Every banks policy is different too, so having a broker that understands these policies is important to ensure you have the best chance of approval.

Brokers create lasting relationships that are built on trust and transparency. Existing clients mean just as much as new clients. I often get told that customers feel like a number with their financial institution and that once their loan has settled, they no longer feel valued. As a broker, the lasting relationship is just as important to the success of their business as a new customer. Our business is built on reputation and how the local community sees us, so creating a positive experience for every client is a prime motivation.

What a busy couple of months we have had and as we race to the end of the year it isn’t slowing down!

We had our AGM last week at Business Port Macquarie and said farewell to Board Members Chris Denny, Michael Mowle and Charlie Cull. Thank you all for your time enriching our Board! We welcome new Board members Peter Jones (Harvey Norman Mobile Phones, Computers & Technology), Linda Elbourne (Willing and Able) and Peter Buckland (Macquarie Waters Boutique Apartment Hotel) who will join current Board members Tony Thorne, David Relf, Kellon Beard, Stuart Goodfellow, Angela Frimberger, Kieren Dell, Claire Mathews, Jenny Fraser and myself. As I write this column, we are saying goodbye to Katherine Harris who has been with us for over 12½ years. Katherine has been the friendly voice on the phone and the ‘go to’ person for advice. We thank Katherine for all that she has done over the years and wish her well in her future endeavours. Don’t be a stranger Katherine, you will always be part of the Business Port Macquarie family.

Our new Executive Officer is Malcolm Neale. Malcolm was the former owner of the businesses AusSport Scoreboards and Fuel 4 Business. He brings with him a wealth of business knowledge which will be of great benefit to our members. Malcolm has also been very involved in community work with organisations such as Orange Sky Laundry and Make a Difference PMQ (MAD). He has hit the ground running and

been thrown in the deep end and already proved himself a great asset. I am sure you will all join me in welcoming Malcolm to Business Port Macquarie. Malcolm will carry on the tradition we started of Coffee with Katherine however it will now be called Mal’s Monthly Coffee Catchup with the next one on Wednesday 11 October at 10am at Hastings Coffee Co at the Westport Club. Come and say hi, meet Malcolm and some other business people. You don’t have to be a member to come check us out.

October Tuesday 24 is our Annual Sovereign Hills Update taking place at Rydges, Port Macquarie. This is a wonderful opportunity to find out what is happening with the growth of Sovereign Hills and what is coming up in the future.

RIDE FOR DYSLEXIA

ith a degree in education, I have undertaken diverse positions within the NSW Department of Education, all consistently focused on supporting student wellbeing. Greg and I have often chatted about the idea of facing a cycling challenge together and now it has become a reality.

I have always enjoyed testing my limits including triathlon, kickboxing, cycling the European and New Zealand Alps, attaining my pilot's license and embarking on charitable endeavours such as the Tour de Rocks and the MS Gong Rides. On Saturday 7 October Eddy Godschalk and Greg Linsdell will leave Sydney Opera House to take a 'scenic bike ride' inland to Port Macquarie. They will pedal 820kms over 9 days to raise dyslexia awareness. You can cheer them on at the finish line at Charles Sturt University Port Macquarie on Sunday 15 October!

This 9-day challenge covers some of the rugged and remote parts of the state and will put us both to the test as well as our bikes, which will be laden with our camping equipment and supplies. Like Ed, I am no stranger to challenge, having climbed the highest mountain on every continent (7 summits) and paddled across the Bass Strait in a kayak, but I am not underestimating this one.

Apart from the physical challenges we will have, there are the elements and other forces of nature to contend with as we ride to

raise awareness for dyslexia. Across 820km, on back trails and over 10,000 meters of climbing (more than Everest) I am sure we will have many moments where our resolve is challenged, but I am confident we will prevail for this worthy cause. Having been a university lecturer I have seen the impact of common misperceptions regarding dyslexia.

People who don’t understand this condition sometimes think a person has low intelligence or is lazy, but this simply isn’t true and I hope our ride will shine a light on this simple reality. I also hope that the money we raise can be used to contribute to further research, evidencebased interventions and better resources for individuals of all ages and I am proud to be able to support Dyslexia Mid North Coast during Dyslexia Awareness Month.

ho and/or what inspired the magic and fun within you to take on this business journey creating coffee, themed events and experiences to delight and connect our community? Since I was little my wonderful Mum always encouraged me to chase my dreams. No idea I had or job I wanted was ever deemed silly or too farfetched, and believe me I have had quite a few wild ideas and job aspirations! This resulted in such a magical upbringing, not to mention awesome jobs around the world, travel and connections with so many wonderful people, which I’m so grateful for. Cheers Mum!

You started as a micro business back in 2017 travelling the country with Andy, your partner, your brew cart in tow sharing coffee and treats along the road. What inspired you to take this adventurous leap of faith and what was the most surprising and valuable thing you learned along the way?

Andy and I realised early on that we shared a passion for the great outdoors. We were pretty fed up with the same old routine in

WMelbourne. We wanted a challenge. We wanted a scene change. The road was calling. The desire to escape the mundane, to explore the unknown with no fixed address. This was the inspiration and Round & Round was born. The most surprising and valuable thing I learnt whilst living this nomadic lifestyle was how few possessions you need to be happy. It was so refreshing to close one chapter of our lives in Melbourne and embark on a journey with not much more than some clothes and the essentials fitted out in our campervan that would be our home for the next 15 months.

A er securing the contract with National Parks to trade at Roto House on a more permanent basis, we decided to rebrand and “Home” was born.

In 2019, and after 45,000kms travelled, you chose to call this area home and took up residence in the grounds of Roto House. What inspired you to set down roots and begin the journey that has led to thousands of brews, cakes and conversations served at Roto House, the markets and special events across the region?

Since living on the road, Andy and I were used to a slower paced lifestyle, and quickly realised Melbourne was no longer going to be the perfect fit for us. We also wanted to start a family and do so in a smaller community. We had a soft spot for Port Macquarie, after serving coffee here in 2018. We loved the community, the weather and the lifestyle here and were so thrilled to have found our happy place. By this point I was craving a home. I did forget to mention, that through my 20’s I travelled Australia and Canada for 7 years. I loved this nomadic lifestyle, but I was now ready to lay down my hat and find home. I craved a sense of belonging. I wanted to be a part of something, make a difference, make connections and bring people together. These things were hard to achieve when you’re jumping from town to town. Getting the opportunity to trade at Roto Historic House in August 2019 planted the seed for what has now become far more than just a coffee van.

As a creative and business mind do you subscribe to a firm business plan or move more with energy and flow?

To be a business owner in current times, and to have survived the last four challenging years, I think you have to be flexible and resilient in your business planning and operations. My business plan is constantly evolving and changing. It has its challenges though and I find it hard sometimes to turn off. With my entrepreneurial spirit, I find I’m always thinking about the next great idea, and love juggling a lot at once, which stimulates my mind, however this can sometimes be my biggest downfall.

We felt this was the perfect business name that captured not only the essence of the beautiful house but also our feelings about finally finding our home here in Port Macquarie. How do you envision the impact you will have as a small business in a regional/coastal community?

Our core values are people, passion, creativity and growth. We have proven that our customers are at the centre of everything we do. We have found ways to support them, meet their needs and connect with them through significant challenges. We know it’s about more than

coffee, it’s about community connection. I love bringing people together, and feel we have a special place with limitless potential at Roto House to do just that.

What has been your most effective tool or attribute as a business owner that has enabled you to bring Round and Round to life and make a difference? Inclusivity. We’re so proud of the inclusive buzz we have created around the Roto House precinct. Our view of inclusion is that everyone who comes to Roto House/ Round & Round will feel a strong sense of belonging just like I was craving after my travels. We have created a space that is physically accessible and available for people to express their diversity in a meaningful and authentic way. No matter your abilities, age, gender, gender identity, sexual orientation, carer status, cultural and religious background, you will be welcome at “Home”.

What has been your greatest challenge and greatest achievement during your time as a business owner?

Our biggest challenge was actually our greatest achievement. The pandemic forced a lot of businesses to close. I wasn’t prepared to lose the business momentum I had created so we had to adapt.

When we had received the news that our site would be closed to the public during this time, we launched our new delivery

service. We provided “to your door” coffee and treat service to our community in lockdown. This enabled us to not only stay in business but grow our local customer base and keep people connected…and caffeinated!

How instrumental have sages and critics been in your evolution of your career/ business? What is the most valuable lesson they taught you?

I think it’s important to never stop learning and seek honest feedback and areas for improvement. My partner Andy, is both my sage and critic and is my rock and biggest supporter. He challenges me to always be better and to strive for greatness in our business paving the way for success.

You have curated a passionate and fun team to deliver on the Round & Round dream and along the journey connected our community into the fun – what is the “special sauce” that keeps Round and Round a favourite in the hearts and mind of Port Macquarie?

I’ve been so fortunate to have such a great team that has brought so many fresh ideas, knowledge and skills. We like to have fun at work, are positive and celebrate diversity. I’m so proud of the workplace culture we have, where everyone feels supported and listened to. We are really like family, as are our customers, so I think that’s the “special sauce”.

The University of Newcastle has launched a new Graduate Diploma in Teaching (Secondary) to help provide a much-needed solution to the state’s teacher shortage.

The Graduate Diploma offers a 12-month program for people looking to transition their careers and fast-track their studies to become a high school teacher.

Pro Vice-Chancellor College of Human and Social Futures, Professor John Fischetti, was excited about the new online program that is the quickest qualification to becoming a qualified, classroom-ready teacher.

“We know high schools are experiencing an acute teacher shortage in New South Wales. That’s why we’re excited to introduce the Graduate Diploma. We want anyone who has an existing degree and is considering moving into secondary teaching to know there’s a place for them at our University. They can achieve that dream in just 12 months,” said Professor Fischetti. Delivered online with intensive face-to-face on-campus

experiences, the new Graduate Diploma in Teaching (Secondary) will be open to anyone who has a Bachelor's Degree aligned to an area of secondary teaching and is thinking of starting their high school teaching journey.

The online program is Commonwealth supported, so eligible applicants can save up to 80% on postgrad fees.

After completing the Graduate Diploma in Teaching (Secondary), students would complete a Master of Teaching to become fully accredited. The additional three courses could be achieved within as little as six months but also spread over three years. What is Toastmasters all about?

Toastmasters is a safe place to overcome your fear of public speaking; to hone your communication skills, and to express and share your inner creative self in a friendly supportive environment. New members are slowly encouraged and coached to speak and share their thoughts with a group, and eventually overcome inhibitions and be able to speak as freely to others as they would to a family group at home.

When did you first get involved and what was your motivation to join?

I first got involved approximately 13 years ago, having started performing on stage to present my prize winning poetry to the public. I was

aiming to gain more confidence and overcome the proverbial stage fright! I remember asking the MC at a particular show how he got to be so cool, calm and collected on stage – his immediate reply was that I should go and join Toastmasters! Not only did I improve my performance skills, but I found I developed more confidence in my communication socially and at work.

You have been a part of the club for many years - how has it evolved, and what do you think members get out of being involved?

I was fortunate to arrive at PMQ Toastmasters at a time when there were many old stalwart members in the group who had developed their skills over many years, and have since become legendary in Toastmaster circles. They inspired me greatly and were great mentors to me. I have seen local clubs evolve in more recent

times where many younger people are joining to hone their communication skills, to further their careers, build confidence, and improve personal relationships. Many great friendships are established in this friendly environment, making it an ideal platform for newcomers to the area to meet people, network and establish bonds in a new town.

TM has clubs all over the world – have you ever visited another group and do the clubs interact much?

There are Toastmaster clubs in almost every large city throughout the world, providing a wonderful network for travellers to meet, already sharing a common bond despite differences in ethnicity, culture and language. I have personally been to numerous other clubs, and am always amazed at how easy it is to walk in and immediately establish rapport with fellow members. The common essence to me

is that every member at a meeting gets to speak, to share their thoughts and contribute - always acknowledged and appreciated. In recent years, hybrid meetings with ‘Zoom’ online have evolved, allowing members worldwide to connect in an expanded way, connecting globally on a regular basis.

Could you tell us what you might do at a typical Toastmaster meeting?

Meetings have a standard procedure and agenda worldwide, where an MC is appointed for each meeting, and set roles are allocated. Keynote speakers are selected from within the club to present a short speech to fellow members. Speeches are evaluated by fellow members with commendations and recommendations allowing opportunity for further refinement and self improvement. This is done in an encouraging way to encourage and critique, (without criticism) in a supportive manner. This is the true essence of Toastmasters, which allows members to constantly improve their confidence whilst overcoming any shortcomings in a supportive environment.

To me, the greatest segment of Toastmasters meetings is the ‘Table Topics’ session, which requires quick thinking responses to a question

put to them from a designated member. Speakers are encouraged to stand and speak for up to 2 minutes on this selected topic. This requires quick thinking and trains the speaker to think on their feet which is an invaluable skill to learn in this busy world, as you share your inner thoughts with others without inhibition.

What are some of the skills you learn from taking part?

Many skills are learnt from the Toastmaster meetings: increased confidence to speak in front of others, without fear or inhibition at any social occasion (whether it be a wedding, funeral, family celebration); improved communication skills for the work environment (whatever that may be); to be more at ease in any social setting.

Can you share some success stories you have heard of people using these skills in everyday life?

I have heard numerous stories over the years from fellow members about employees being promoted, having improved their communication skills and being able to truly impress in an interview situation. I have seen socially shy people come out of their shell, beaming with pride as they are supported and

have benefitted immensely in feeling confident now when on stage. I have also seen personal relationships improve as communication skills are developed.

What do you think are some misconceptions that people may have about Toastmasters?

I always thought that Toastmasters was very formal, with everyone wearing bow-ties and conducting extremely officious meeting procedures, but found it to be quite the contrary! I have been involved with many social groups over the years, but have never found a group as friendly and supportive as Toastmasters – and though we have formal meeting procedures, the atmosphere and camaraderie is very informal.

There are actually a couple of different groups in the Port Macquarie area – could you tell us about them and how they differ?

There is a morning club for the early birds who meet at 7am on the 2nd and 4th Tuesdays of the month; an evening club which meets on 1st and 3rd Wednesdays of the month at 7pm; and a Sunday evening group which meets monthly at 5.30pm on the last Sunday of the month. The Sunday group is held at Wauchope. Meetings last 1-2 hours.

What was it that helped you to choose Adenbrook Homes?

Tell us about the plan you choose and why?

So this time, once again, I told the ladies my budget and they helped me stick to it. They weren’t pushy at all by ‘on selling’ me any extras that I didn’t need but I got so much and they gave me a repeat business discount.

In pre-construction, Lani, the customer service officer was busy in the background ordering soil testing reports, contour survey, booking my appointments for tender, contract, colours and kept me updated along the way with where I was up to with council and so forth.

For me the process was so smooth, Next the build started and Brendan my foreman/ site supervisor called and introduced himself. He gave me a printout of the expected timeframe with construction. Of course, things never go to plan, but he called me along the way with any delays and new timeframe dates. Communication is so important.

Honestly to build with Adenbrook again was a no brainer. Design, price, inclusions, no hidden extras and they communicate with me. Why wouldn’t I.

Can you share any tips or best practices for someone considering using Adenbrook for their own construction project?

I have no hesitation in recommending Adenbrook. They have been an absolute dream to work with, I cannot wait to start and complete this next build with them and move onto my third house, of course with the Adenbrook team.
