Chef Henry Martignago’s WHITE CHOCOLATE CHEESECAKE 1 cup milk 2 egg yolks ¼ oz. gelatin sheets 2 cups heavy cream, whipped 8 oz. cream cheese 8 oz. white chocolate, melted Heat milk, temper yolks, and add dissolved gelatin. Strain, then cool until mixture mounds. Fold in beaten soft cream cheese, and then heavy cream. Pour into sweet dough lined pans.

experience on the nearly 7,000-yard championship course managed by Troon Golf ®, the most respected company in golf course management. Carts are equipped with GPS to help you navigate the course with ease and deliver snacks and refreshments during play. Private lessons are available for individuals and groups from the hotel’s four pros. Recently, golf professional Valeria Ochoa joined the resort as Golf Sales Manager. The Golf Channel personality, who has been hitting the course since the age of 6 and competing since age 7, is a famous face in the golf world and adds another dimension to the golfing experience. In keeping with the brand’s eco-conscious green initiatives, The Diplomat received the Audubon

Cooperative Sanctuary for Golf Certification in September 2012 for its bird sanctuaries along the course, says Jamie West, Director of Golf. In addition, many of the grassy areas were replaced with flowerbeds, reducing the number of mowers that must be used to cut the grass. Fertilizing with natural formulas rather than chemical-based options has also added to the effort. “We keep the greens, tee boxes and fairways in pristine condition for our golfers,” West says. “They can’t get this kind of experience anywhere else but The Diplomat.” To schedule a tee time, call 954-883-4444

The hotel is a designated property by the Florida Green Lodging Program, which recognizes lodging facilities with a commitment to conserve and protect Florida’s natural resources. Tim Duque, the hotel’s Sustainability Champion who is also known as the “Dean of Green,” says: “We are on a mission to reduce our consumption of water using the green initiatives.” Those initiatives include water-conservation measures taken in the guestrooms, such as showerheads that reduce water pressure and result in a savings of nearly a half-million gallons annually. The new balcony furniture is 100 percent recyclable.

Guests can take part in the “Make a Green Choice Program,” which allows them to opt out of housekeeping in exchange for discount cards they can redeem at various outlets throughout the hotel, including the restaurants. Guests even have access to a list of nearby eco-friendly attractions, such as Anne Kolb Nature Center, which offers environmental boat tours along with bicycle and hiking trails through a mangrove preserve. “Doing the right thing for the environment and for our communities is more important than ever,” says Starwood CEO Frits van Paasschen. “Our customers and owners are asking for it. Broadwalk, a 2.5-mile pedestrian-only promenade, hugs the beach to the east. West Lake Park preserves the coastal mangroves to the north. And to the west, the historic downtown celebrates art and culture, food and drink, shopping and entertainment. Hollywood offers intriguing attractions in every direction, and the Hollywood Trolley makes getting to them fun and easy. Although the trolleys have a charming old-fashioned appearance, they feature a very welcome modern convenience: air conditioning. The service runs Wednesday through Sunday from 10 a.m.10 p.m., departing roughly every 30 minutes from more than a dozen stops. Catch the trolley at the beach location of The Diplomat and see the sights on the south, north and downtown line for $1 per ride, though kids 5 and under ride free. All trolleys connect from Johnson Street on Hollywood Beach and are wheelchair accessible.
