SPIRIT TO SERVE he Fort Lauderdale Marriott Harbor Beach Resort & Spa extends its commitment to service to the local community and beyond. Our volunteer efforts revolve around the S.E.R.V.E. principle (S: Shelter and Food; E: Environment; R: Readiness for Careers; V: Vitality of Children; and E: Embracing Diversity). Hosts from the resort contribute their time and talents to a variety of local charities and events, from volunteering at “Feeding South Florida” to sponsoring National Academy Foundation summer interns to hosting “Hearts 4 Haiti” fundraisers and “Evenings of Engagement” with the South Florida Diversity Council. “The Taste of Harbor Beach” is an annual event hosted by our private membership club to benefit The Children’s Miracle Network/ Miami Children’s Hospital Foundation. This extravaganza draws more than 400 guests and features specialty foods, fine wines, spirits and live and silent auctions. Since 2007 the event has raised $172,000 for the Miami Children’s Hospital, which is the exclusive Children’s Miracle Network Hospital in Miami-Dade, Broward and Monroe counties. Children’s Miracle Network Hospitals® is an international nonprofit organization dedicated to raising funds and awareness for 170 children’s hospitals across North America. Its core philosophy is to keep 100 percent of the donations in the local area in which they are raised. While we have always been proud of our activities that support the local community, four years ago our perspective changed on the boundaries of our community when a catastrophic magnitude 7.0 earthquake struck near Haiti’s capital of Port-Au-Prince. With approximately 250 hosts of Haitian origin working at Harbor Beach, we were all closely affected by this tragedy. What began with counseling and collecting donations to send to Haiti evolved into volunteer trips in the years that followed. Today, Harbor Beach works closely with the Great Commission Alliance (GCA), an organization that has been active in Haiti for more than 15 years. The GCA operates an orphanage, school and church and recently constructed a pharmacy and clinic for the locals in Mirebalais. “Each year we take a team of eight hosts from various resort departments to volunteer for a week in Haiti,” says Lisa Larison, Harbor Beach’s director of human resources. “It is so gratifying to see how the local community has benefited from this commitment.” The Harbor Beach host volunteers help GCA with menu ideas, food sanitation, room cleanliness, engineering projects and general facilities maintenance of the Guest House. The host volunteers also

interact with the children at the orphanage and demonstrate the type of jobs they do at the resort, with the intent of planting the seed for the children to visualize the role they can play in Haiti’s future. “We are most proud of our commitment to a greater-reaching community that will soon support our first Marriott in Haiti,” Lisa says. “Our current Spirit to Serve Our Community strategy is to raise funds for the Children’s Miracle Network, Hearts 4 Haiti and to volunteer time to community partnerships.” To date, Harbor Beach’s Spirit to Serve efforts have used 780 volunteer hours from more than 200 volunteers and have generated nearly $8,000 in cash donations and $100,000 in in-kind donations.

Toes in the Sand, Drink in the Hand The perfect beachside vacation wouldn’t be complete without a tropical beverage sipped in the shade of a thatched-roof tiki hut, and Harbor Beach features the only tiki bar in Fort Lauderdale located right on the sand. Visit the Beach Bar for some shade, a little music, a cool beverage and tasty nibbles from the adjacent grill that serves up hot items, wraps and salads (hours vary by season). If you prefer to keep your toes firmly planted in the sand, simply raise the flag on your beach chair and food and beverage service will be delivered to you.

Mind the Turtle Eggs If you visit Harbor Beach between the months of March and October, you will likely see yellow caution tape marking squared-off areas on the beach. These are endangered sea turtle nesting areas, which are protected by the Department of Environmental Protection, the City of Fort Lauderdale and the Fort Lauderdale Marriott Harbor Beach Resort & Spa. As the most loyal guests of Harbor Beach, the female loggerhead sea turtles make their way to the beach each summer, as they have for ages. Digging a hole with her back flippers, the turtle lays about 100 eggs and covers them with sand before returning to the ocean. In two-months’ time, the eggs will hatch. When the temperature cools in the nighttime, the hatchlings make their way to the sea. Sea turtles are disoriented by artificial light, so the resort’s lighting has been designed to meet Department of Environmental Protection standards. This is also why you will see covers blocking out the beachside of street lamps along A1A. Nearly 40 turtles nested here in 2013. In addition to protecting the nests, the resort conducts “turtle talks” sponsored by the Museum of

Splash and Relax at the Lagoon Pool Towering palms surround Harbor Beach’s 8,000-square-foot lagoon pool, creating a tropical oasis for family fun and relaxation. What’s Up at the Surf Club The Surf Club at the Fort Lauderdale Marriott Harbor Beach Resort & Spa offers a variety of games, events and activities for children ages 5 to 12. A big draw is the Hawaiian Surf Simulator where kids can Hang 10 while

outrunning monster waves on the large video screen. From games to toys for imaginative play to supplies for arts-and-crafts sessions, the Surf Club also offers four iMac computers, two Xbox 360s with Kinect, a Hot Wheels track, two televisions and a theater room with stadium seating. The fully supervised Surf Club also provides a variety of activities each day, from nature hikes and turtle talks to theme days, games and art experiences. “The staff does a great job of engaging each of the kids, especially those who may be shy at first,” says Director of Recreation Steven Woytko. “The activity hosts will engage with all of the children and very soon everyone is making new friends, many of whom become pen pals and form lasting friendships.” Children of all ages will delight in the Surf Club’s exterior Splash Pad, which features a jumping water fountain and bucket-of-water pull. A full-day pass ($40) grants access to the Surf Club and its activities daily from 9 a.m.-4 p.m., while half-day passes ($20) grant access from either 9 a.m.-noon or 1-4 p.m. The Surf Club is closed for lunch between noon and 1 p.m. For more information call 954-765-3029 (internal extension 6735).

Hold Court Like a Pro Whether it’s a competitive set of doubles on the clay tennis courts or a solo basketball free-throw exercise, the outdoor complex at Harbor Beach is designed with the sports-oriented individual in mind. On Fridays, Harbor Beach presents a Tennis Happy Hour from 4:30 p.m.-6 p.m., during which time court fees are waived and a pro is available to give tips and answer questions. Customized Group Activities While Harbor Beach offers a variety of daily activities for guests, including tug-o-war, pool raft races, relay races and sand sculpting on the beach, the resort can also create one-of-kind private structured activities and events for groups. From day-at-the-beach leisure-style set-ups to fully structured events for large groups, such as Beach Olympics or Survivor, the recreation department is at your service to create a one-of-a-kind experience. 20

Smaller groups will love the resort’s “Build a Boat” activity. Competing groups receive random supplies: inner tubes, plastic barrels, zip ties, ropes, PVC cloth, etc., and are then asked to design and build a boat. Points are awarded for teamwork, communication and how much the end result resembles the design. The event doesn’t end here, however. After constructing a vessel, the teams must then test their boat by paddling around a buoy marker while transporting an egg. Points are awarded for race time, staying afloat and keeping the egg intact. Independent leisure activities for groups can also be arranged. These are ideal for downtime between conferences or for company retreats. “We love to entertain people for the afternoon,” Woytko says. Whether it is a big barbecue on the beach with live entertainment, an evening bonfire, volleyball and beach games or any other team-building exercise, Harbor Beach provides the perfect playground for all of the above.

A

pioneer in the farm-to-fork concept, 3030 Ocean’s Executive Chef Paula DaSilva demonstrates a remarkable talent for executing imaginative dishes that highlight the flavors of South Florida’s local ingredients. Nearly 15 years after beginning her career at 3030 Ocean, the native of Brazil has returned to where it all began, bringing with her diverse culinary experiences marked by her own signature soulful cooking style. After moving to the United States, Paula grew up in Massachusetts, where she worked in her family’s Brazilian restaurant peeling garlic and cleaning vegetables. When her family moved to South Florida, her parents opened two restaurants. Paula was involved in all aspects of the operations. Her favorite moments, she says, were spent in the kitchen. After high school, Paula earned her associate’s degree in culinary arts from the Art Institute of Fort Lauderdale. In 2009 Paula appeared on season five of the popular Fox reality cooking show Hell’s Kitchen with Gordon Ramsay and was regularly spared Ramsay’s wrath by virtue of her talent, dedication, passion and lack of drama or attitude, which ultimately led her to a near win. That same year she was named “Best Celebrity Chef ” in the Broward/Palm Beach New Times “Best Of ” issue and later was honored as one of Broward County’s “40 Under 40” by Gold Coast magazine. She was featured in a national commercial for the International Culinary Schools at the Arts Institute and received several awards for her efforts in supporting the local community, including the prestigious Women’s Circle of Excellence. In 2010 Paula was named Executive Chef of 1500° at the Eden Roc Renaissance hotel in Miami Beach, which received rave reviews and national acclaim for its chic farm-to-table concept, stunning location and soulful, seasonal, rustic dishes. Paula was instrumental in creating this concept. She developed relationships with local farmers and fishermen to source the freshest ingredients available. In 2011, 1500° was the only Florida restaurant named among “The Best New Restaurants in America” by Esquire magazine. A seven-time participant in the Epcot International Food and Wine Festival in Orlando, Paula has also served as a guest chef at the James Beard House in New York City, most recently hosting a six-course Chefs & Farmers Celebration dinner featuring an all-star lineup of talented female chefs. “I wanted to assemble a group of my female colleagues who adhere to the same credo of using locally sourced product and artisanal purveyors,” she says of the gathering. Paula says she is delighted to return to 3030 Ocean after several years on her own. “I was part of the opening team at 3030 in 2000 and spent a good portion of my cooking career at the stoves here. SAUTÉED MAINE SCALLOPS, PARSNIP PURÉE, CORN SUCCOTASH Serves 6

Sautéed Maine Scallops 18 ea. U-10 Scallops 1 tbs. olive oil Salt and pepper to taste Rinse the scallops under cold water, remove the muscle on the side and pat dry with paper towels. Season both sides with salt and pepper. Heat cast-iron pan until nearly smoking hot, add the oil and gently put the scallops in the pan. When golden brown, turn the scallops over and finish cooking in a 400° oven for 2 minutes. Remove from the pan and reserve until time to plate.

Parsnip Purée 3 each parsnip 2 cups water 3 cups heavy cream 1 lemon Butter Salt 1 bunch thyme Peel and cut the parsnips down into thirds. Put in a pot and cover with the water and 2 cups of the cream and add the thyme and halved lemon. Cook until tender and drain. Transfer into a blender and add butter, 1 cup cream and season with salt. Purée until very smooth and can pass through a chinois. Chef's note: Reserve drained cooking liquid in case needed to help thin purée while blending.

Succotash 2 each corn 1 carrot ½ cup fava beans ½ cup English peas ½ cup lima beans 1 bunch chives (cut very small) 1 tbs. olive oil Salt and pepper Cut the corn off the cob. Peel and thinly slice the carrots. In a pot of boiling water, blanch separately the fava beans, English peas and lima beans until they are tender. Remove the outer layer of the fava and lima beans. Heat a sauté pan; add the oil, corn and carrots. Cook for about 2 minutes then add the beans and peas. Toss and finish seasoning with the chives, salt and pepper.

Homestead Carambola Sauce 3 each carambola 1 bottle white wine 1 cup sugar 1 each vanilla bean (halved and seeded) 1 cup butter 1 lime Slice the carambola thinly so they look like a star. Put them in a pot with the vanilla beans, sugar and wine. Cook them down on low heat for about 3 hours or until they are nice and tender and wine has reduced by one-third. When ready to serve, add the butter slowly while whisking it. Finish with a squeeze of lime and salt.

Playing With Fire (From the 3030 Sea Bar) Ingredients 2 ounce jalapeño-infused Cabo Wabo tequila ½ ounce agave nectar 2 cucumber slices 1 lime Instructions Muddle two cucumber slices and agave nectar together. Add ice, tequila and squeeze the lime. Shake, strain and serve over ice in a rocks glass. Garnish Float a paper-thin slice of cucumber on top of drink.

“I

’m pretty sure I have the best job in the whole hotel,” says Steven Woytko of his role as Director of Recreation. For the past five years he has been overseeing the amenities in the outdoor complex at Harbor Beach, which include everything from the outdoor lobby and Oceanview Terrace to the pool deck, rental items, private cabanas, Surf Club, tennis and basketball courts, beach operations and umbrellas. Oh, yes, and all group recreation events. Whether it’s a build-a-boat competition, Survivor, beach Olympics or a relaxing day at the beach with games, Woytko and his team of nearly 20 hosts work with corporate group meeting planners or event coordinators from the early stages to custom design an event most appropriate for each group. The recreation team will spend close to five hours setting up each event and then double as team-building facilitators and serve as coaches and referees during the event. An awards ceremony rounds out the day and the first-place winners receive T-shirts that say, “I Won Bragging Rights at Harbor Beach” – a shirt that is, Steven says, rather difficult to obtain. Steven holds a degree in recreation – and his job, he says, is the “Holy Grail.” In 2007 he and his wife moved from Portland, Oregon, to Florida, where he served as Unit Director for the Boys & Girls Clubs of St. Lucie County before moving to Fort Lauderdale to join Harbor Beach. “I was impressed with how highly engaged everyone in the hotel is and how high performing they are,” he says. “Hospitality attracts a certain personality, and in that industry, Marriott is a leader in terms of service and has a great culture. “The number one thing that Harbor Beach offers is its people,” Steven says. “We are one of the top-ranking hotels within Marriott for best pool experience. Other properties may have bigger or better pools, but our people make the difference here. I’m so proud of my recreation staff – I attribute every success we have to the team in this department.”

y family has been in the hotel business a long time,” says Front Desk Agent Jack Hoppe, who was passed the torch from his uncle, a 32year Marriott veteran. Three years ago Jack moved to Florida from Waynesville, N.C., to join the Harbor Beach family, where he enjoys interacting with and anticipating the needs of the guests as they arrive. From the valet, who will radio as a guest is arriving, to Frankie, the lobby host who greets the guests as they walk in and directs them to the front desk, every effort is made to ensure a warm welcome. “At the front desk we can look at the reservations in advance to see what families or business guests are coming in and offer things to improve their stay as soon as they arrive, from offering an upgrade to a larger room to taking care of the Internet,” Jack says. He is also on hand to inform leisure guests about packages such as breakfasts, the Surf Club and the beach – where his brother serves as a recreation host – or to inform business guests about their meetings and registration or places within the hotel where they can use the Internet and have quiet time. Jack especially enjoys working with Club members, frequent guests and Elite members. “We might look into future reservations for some of our regular guests and block their favorite rooms, upgrade them to nicer views, set up their room with their favorite type of wine, or otherwise take the extra step to give them the best experience. “If we see that one of our guests is sick, we might send a bowl of soup to their room,” he says. “We want them to feel like they’re taken care of here.” In fact, that’s what Jack says he enjoys most about the job – the gratification he gets when, “you send someone on their way knowing they are happy and they can start making memories.” But Jack doesn’t spend all of his time at Harbor Beach. At night he’s a student at Palm Beach State College, pursuing a degree in computer science, which he hopes to put toward working on the technical side of Marriott’s training programs.

anquet Server Naccilien “Nash” Maccenat has been working at Harbor Beach for 17 years. “It feels like home,” he says, “because I know every corner of the hotel. You get to know the groups that have been coming here for a long time. You get to know their faces, know their menus.” As a server, Nash works with corporate groups, weddings and events and mostly oversees coffee breaks, a task he thoroughly enjoys. “That’s when you interact with guests the most because if they have a meeting for the day, they may break for coffee four or five times,” he says. “People are happy when they get their coffee too!” Nash and the staff of more than 30 servers have formed lifelong friendships. “The people I work with have become like family,” he says. “You have to make work fun so the day goes faster. “The same goes for the returning groups,” he says. “When you deal with the same group many times you already know their menu in your head. When we give them what they want they feel like they are at home and they love to come back.” “It’s about the memories,” Nash says. “This is something you will always have with you. This is the first place I worked at since I left Haiti and is something I can never take out of my mind. You meet people from all over the world, and in turn you leave an impression with them.”

fter graduating from the great Ohio State University with a degree in marketing, Courtney Hunter bid farewell to long Midwestern winters in favor of the Florida sunshine and joined Sea Level as a server two years ago. “One of my favorite aspects of the job is the people I meet,” she says. “The Club Members are my regulars, but I meet people from all over the world. Of course, if they mention anything Ohio-related I will chat their ear off,” she says, laughing. Courtney worked as a server while in college, but says her art history minor comes into play at Sea Level. “I’ve learned a lot about presentation,” she says. “It’s not just about serving food, it’s an art.” Creativity is at its best when it comes to Sea Level’s specialty drinks, which are continuously being conceived and one of which Courtney is credited with naming. “I actually named the Shark Bite,” she says. “It’s made with jalapeño tequila and has a bite to it." As a Harbor Beach host, Courtney goes above and beyond for guests, giving particular attention to those with children and making sure they are informed about all beach amenities and activities. “I’m always looking out for how I can improve the guest experience,” she says. “We are lucky because we are in a vacation setting and people are in a good mood. The beach is really calming,. ”

20-year Marriott veteran, Charmaine Silvera transferred to Harbor Beach from New York City’s Financial Center 12 years ago. Originally from Jamaica, Charmaine lived in New York for 14 years, but drawn by the weather and the desire to be closer to her mother and sister, she moved to Fort Lauderdale and took a position as a desk clerk at Harbor Beach before quickly moving up to a supervisor position. Charmaine’s role is an important one – when you’re sleeping, the hotel is her responsibility. As the Night Audit Supervisor, Charmaine is responsible for the food and beverage audits from the on-site restaurants, and as the Manager on Duty she and her team of four look after room service, convention services and, of course, any guest complaint or incident. “Oh, I’ve seen it all,” she says. While Charmaine deals with her share of interesting and often comical situations, she also handles some that are more serious. “This past weekend a guest called the front desk and said he was having trouble breathing,” she says. “His wife was woken from her sleep and was disoriented, so I went to help. I helped her get dressed, helped her take care of her husband and saw them into the ambulance. The wife was so grateful, she hugged me and said, ‘You’re a believer, aren’t you? I trust you.’ I told her, ‘I’m here for you.’ ” Taking care of guests in any situation comes naturally to Charmaine, who is a licensed practical nurse and is studying to become a registered nurse. Working the night shift allows her to keep up with her studies, but Charmaine is quick to tell you that’s not the only thing she enjoys about her job. “I like the people I work with and my shift,” she says. “There’s no traffic. I’m able to take my son to school, pick him up, do homework and put him to bed before I leave. My staff is great. I enjoy working with them. At night it’s quiet and I’m able to focus.” Charmaine spends the majority of her free time with her two children, a daughter, 22, and a son, 12, swimming, cooking (Jamaican stew peas is a favorite dish) and traveling as much as possible.

hen a guest mistakenly handed bellman Chris Greene a $100 bill as a tip, Chris quickly called the guest’s driver and had them return so he could give it back. “He was very grateful,” recalls Chris, who says the best part of his job is that he’s able to just “be me.” Originally from Binghamton, N.Y., Chris joined the Marriott 17 years ago at the Westfields property in Chantilly, Va. In 1997 he moved to Harbor Beach to be closer to his father and siblings in Coral Springs and worked security for nearly four years before joining the bellmen staff. “I like the people here – from the workers to the guests to the Club Members. Every year the same groups return. I’ve made connections with them, and when they come back they feel more comfortable with us. “It’s like a small family within a bigger family,” he says of his team. “We’ve worked with each other for a number of years, we go out, have dinner and hang out outside of work. The hosts really make the experience. Many have been here for many years and when new people join they follow in our footsteps, watch what we do and keep the service at the level it should be.” Some days Chris’s little brother, Joseph, 6, comes to visit. “He’s just like me – outgoing, ready to have fun.” In his spare time, Chris enjoys spending time with friends and family – both his extended family in Florida and his son Kyrei, 16, in Virginia. If a game is on television, Chris won’t be far away, regardless of whether it’s baseball, basketball or football. “I try to watch soccer too, but they go back and forth and they never score,” he jokes. “There’s too much running. At least in football and basketball you get a time out.”
